A RICH HISTORY PASO ROBLES HAS A RICH HISTORY of winemaking and winegrape growing beginning circa 1790 at the Asistencia on Santa Margarita Ranch and in 1815 at the historic Mission San Miguel Archangel. Commercial winemaking was introduced in the late 1870s when Indiana rancher Andrew York began planting vineyards on his 240-acre homestead. Within a few years, he found that the vines were yielding more than he could market, prompting him in 1882, to establish Ascension Winery, known today as Epoch Estate Wines. During the 1920s a flurry of viticultural activity took place as the Martinelli, Busi, Vosi, Bianchi, Pesenti and Dusi vineyards were established. Of any variety, Zinfandel held a strong influence on the early growth and development of the wine industry in Paso Robles. The late 1960s and early 1970s saw a new generation of vineyard pioneers in the Paso Robles area, bringing university training and financial resources for large plantings. Dr. Stanley Hoffman, under the guidance of U.C. Davis and legendary enologist AndrÊ Tchelistcheff, planted some of the region’s first Cabernet Sauvignon, Pinot Noir and Chardonnay on his 1,200acre ranch next to the old Paderewski Ranch in the hills of Adelaida, about five miles west of town. During the late 1970s the first commercial vineyards were planted. Then in 1983 the 612,000-acre Paso Robles American Viticultural Area (AVA) and the adjacent 6,400-acre York Mountain AVA were established.

During the 1990s more international investment took place in Paso Robles, as did the development of various Rhône and Bordeaux varieties. In recent years winery numbers have more than doubled due to an influx of boutique and small, family-owned vineyards and wineries. The region has also attracted a number of winemakers from France, Australia, South Africa, Chile and Switzerland eager to find New World applications for their winemaking skills. Today, Paso Robles is home to more than 200 wineries and 26,000 vineyard acres. A new era of winemakers has begun

These mavericks are making an impression on the wine world by introducing New World wines that can be best described as “Paso Blends.” Tradition is thrown to the wind by blending Bordeaux with Spanish varietals, or Rhône with Zinfandel. THE VINTAGE ASK ANY WINEMAKER and they will tell you – ‘every wine begins in the vineyard.’ No two years are the same and each reflective of what Mother Nature serves up during the growing cycle. To help plan your trip, it might be helpful to know what may be happening during your visit to Paso Robles Wine Country.
SPRING Vines begin to wake as the region warms out of winter. Bud break, which is the first traces of green growth, typically occurs in April. Growers keep a close watch on weather as spring frosts can be detrimental to an entire vineyard. Later in the spring, vines go through flowering and fruit set as the days get warmer and longer. In the winery the bottling season is generally just beginning.
SUMMER Green leaf and cane growth is abundant, creating the large canopies for grapes to grow under and within. Growers manage these canopies by realigning vine direction and the thinning of shoots as the season progresses. Verasion, when green grapes begin to soften and turn color, is the first sign of ripening and an indicator of when harvest may begin. Thinning of the crop to concentrate the plant’s energy on select clusters generally begins after verasion. Bottling in still happening, opening up space for the next vintage. Evaluation of the previous year’s wine that has been in barrels for about nine months and blending trials begin. The wines are being racked and topped before the new harvest begins. Winemaking equipment is being dusted off and readied for the next season’s grapes.
FALL Fall is the most active time of the year since harvest may start as early as September and end by the first week of November. Winemakers are working closely with growers to decide on the perfect harvest point for the grapes. Harvest takes place in the cool morning hours or sometimes even through the night to make sure the grapes get to the winery in the best condition. At the winery the grapes are received

and processed. White grapes are pressed off their skins and fermented in tanks or barrels. Red grapes are stemmed and placed in fermentation vessels with skins for fermentation. Yeast and nutrients are added to aid the fermentation. Fermentations are monitored and maintained until complete.
WINTER The vines are dormant after expending all their energy through the fall harvest and succumbing to a hard freeze from the onset of winter. Toward the end of winter, growers begin the painstaking task of pruning, which sets up the growth cycle for the next vintage. In the winery the winemakers are topping all the barrels, checking to make sure all the new vintage wines are through primary and secondary fermentations and sulfuring the wine and putting them to bed to begin their aging process. Following the holiday season, Paso Robles Wine Country slows its pace and becomes the wine enthusiast’s retreat from the mundane. A VISIT TO PASO ROBLES WINE COUNTRY at any time of the year is a unique experience and even more memorable during one of our four marquee wine country events featuring the area’s premium wines:
Zinfandel first found its way to Paso Robles via European settlers in the 1920s. Over the years this delicate grape of elusive lineage became known as an American heritage varietal and endeared as Paso Robles’ own when the first recognized wines of the region were made of Zinfandel. Today, we celebrate this variety with its own festival every March. More than 150 wineries (whether or not they produce Zinfandel) offer special tastings, musical events, winemaker dinners, and other unique events. The highlight of the weekend is Saturday’s Grand Tasting where more than 50 wineries come together to showcase their Zinfandel and Zinfandel blend wines complemented by local cuisine. A silent auction gives guests the opportunity to take home their favorite Paso Robles verticals, large formats and signed bottles.
This May celebration of everything Paso Robles began in 1983 when the Paso Robles American Viticultural Area (AVA) was first designated. The AVA’s first 17 wineries laid wood planks over barrels in the Downtown Park and poured wines for all in attendance throughout a Saturday afternoon. The festival is now 30 years old, one of the largest outdoor wine festivals in California, and features more than 60 of the region’s finest wineries. Along with world class wines, great food, and local music, guests enjoy the Friday evening

RESERVE event and Futures Auction offering cases of unreleased wine. More than 150 wineries host individual events over the three days, further accentuating the fun to be had during a celebration weekend in Paso Robles.
Let the bidding wars begin! High stakes bidders, collectors, winemakers and faithful auction goers enjoy the annual Wine Country Auction in August. An auction preview and wine tasting precede a delicious gourmet brunch, featuring the area’s best chefs and a seasonal farm-to-table menu. Guests will raise their paddles to bid on a range of soughtafter lifestyle and wine country items including signed, large format bottles, exclusive wine country getaways and luxurious international excursions. Funds raised through the Wine Country Auction help to support charities providing health care, education, scholarships and other services that benefit the community.
Harvest is the busiest time in wine country, when the year’s hard work culminates and the fruits of labor are realized. Every agricultural community has a celebration of harvest, in Paso Robles it’s all about the wine grape. Harvest Wine Weekend annually takes place the third weekend in October when Paso Robles wineries coordinate to hold winemaker dinners, exclusive barrel samples, seminars, barbeques, live music, winery tours and even some grape stomping. Get into the vineyard and onto the crush pad during Harvest Wine Weekend.

In order to make the most of your perfect Paso Robles Wine Country getaway it is important that you plan ahead. While spontaneity is encouraged, below are a few tips and tricks to help you plan your next visit to Paso. Paso Robles Wine Country Alliance Event Weekends – It is highly recommended that you plan in advance when attending special events in Paso Robles. Refunds are not given after you purchase tickets so make sure that you plan ahead.
EVENT WEEKEND CHECKLIST Make hotel accommodations up-to one year in advance. Purchase marquee event tickets two months in advance at pasowine.com. Plan your itinerary for the weekend. Wineries host various special events throughout the weekend. Be sure to book your selected activities in advance. Book Lodging Accommodations in Advance – This is important, especially when you are planning for a three day weekend or an event weekend, as Hotels, Motels, Guest Cottages, Inns and Bed & Breakfasts fill up fast. See the Visitor’s Guide for a list of accommodations. Plan for the Weather – Paso Robles often experiences warm days and cool nights during the months of May – October. Beginning in November, the weather will begin to cool down and much needed rain will begin to fall and nourish the vines. Remember that barrel rooms and cellars are temperature controlled, so bring a sweater; even in mid July! Hydrate Yourself – Drink plenty of water! You will be doing a lot of walking and the weather can be quite warm, especially in the summer months. Make an Appointment for a Tour – Call 24 - 48 hours in advance to set up a special tour and tasting. This will make your visit unforgettable! Most wineries, vineyards and tasting rooms will accommodate you and this is highly recommended when you have groups of seven or more. Taste the Town – Be sure to complement the wine you taste by visiting one of the many restaurants and specialty shops found in this brochure. Tantalize your taste buds with dinner, hors d’oervres, dessert, or take home specialty items to share with your family and friends. See the Visitor’s Guide for a list of restaurants and specialty shops. Transportation – Always remember to designate a driver or plan for tour transportation, limo or a taxi to take you through Paso Robles Wine Country. See the Visitor’s Guide for a list of touring companies. Remember the 4 Ss of Responsible Tasting – Swirl, Smell, Sip and Spit. This method is great way to sample a lot of different wines and will also allow you to enjoy and taste your wine during lunch and dinner.
