(Don’t pack it too tight.) Mix together 1 cup of milk, 1/2 teaspoon vanilla and 1/2 cup sugar. Stir this until the sugar dissolves. or a child with learning disabilities, school can be a daunting place. The challenges of meeting standardized academic goals while trying to maneuver through the emotional and physical environment of school, can create havoc with a student’s educational progress. Many students have different styles of learning and struggle with attention and distractibility issues. In a traditional school setting, these issues may cause loneliness, low self esteem and a defeated attitude. Because 4 out of 10 students in our country struggle with some form of learning disability, many children would benefit from an alternative to a traditional school environment. The Academy of St. Louis in Chesterfield serves students grades kindergarten through twelfth grade. For those who don’t, the Eagle is their symbol.” Eagle watchers are best served by cruising 14 areas along the Mississippi and Illinois rivers from the Chain of Rocks bridge to a point a little north of Louisiana, Missouri. You’ll want to wear layered clothing accented with binoculars.

Plan your viewing time to accommodate the eagles feeding schedules, usually between the hours of sunrise and 11 AM. Be sure to look for what veteran eagle watchers call “baseballs in the trees” (due to the eagles white head),

Bring an extra dose of patience. Eagles move about in their own time. Also, new eagle watchers should be aware of the Eagle Protection Act in combination with the Criminal Fines Improvement Act of 1987 prohibiting possession of anything eagle, from a dead body to a mere feather. Instead, just listen for the shrill, high pitched, twittering cry eagles make and be happy with viewing or picture taking. Photo enthusiasts are encouraged to use a tripod, telephoto lens and a film rating of 400 ASA, or the equivalent with a digital camera. Eagles can also be viewed 363 days a year, 8 to 5 at the World Bird Sanctuary in Valley Park, Missouri as well as the Alton Visitor’s Center in Alton, Illinois. A Guide to “UnCorking” Fees

I

f you are thinking about taking that special bottle of wine with you to dinner at your favorite restaurant; you might want to get a little Wine Ed 101 before you go. Many eateries in this area are now charging a minimal “corkage fee” for each bottle that a patron brings into the establishment. This fee basically covers the servers time (not gratuity), use of stemware and of course, the loss of a sale of a bottle from their own cellar. Take this as it is meant-a courtesy to customers, not a punishment! It is a privilege to BYOB but there are a few simple rules to follow that will keep you from embarrassment and the restaurant management happy. 1. Never assume that your package will be welcomed. Call ahead to check the policies (sometimes it is expected that you bring a wine that is not on their list)-and be sure to ask if it is acceptable to bring more than one bottle. 2. Inquire about the fee-it’s best not to be surprised. 3. Never bring a wine that is less expensive than the restaurants least expensive bottle on the list. 4. wine cellar & tapas bar

I

n an atmosphere of joie de vivre with conversation often flowing between tables of strangers, the flavors of France, Spain and Italy weave through the contemporary American menu at Balaban’s wine cellar & tapas bar. Aside from Mediterranean influences, Balaban’s adheres to a credo of seasonal and local—what fits best with the time of year, what ingredients peak during that season and, for added freshness, what comes to market from the local area. Currently, Executive Chef Kevin Sthair features a boneless braised lamb shank underpinned with three varieties of lentils stirred into a perfectly seasoned and herbed ragout. Laced with sautéed spinach and finished with Manchego cheese slivers and pomegranate seeds, one diner described the lamb as succulent, falling off the bone. “When the dish first came, it did not look like lamb usually does; it was not cut in slices. After a few moments I saw the spinach, flavored and sautéed in the lamb juices. I didn’t need the huge steak knife, only my fork.” Besides a daily meat and a daily fish special, Sthair continues to produce his popular paella, lobster ravioli and the empanadas, which anchor a menu of small plate interpretations of new and classic recipes. Sthair trained at the original Café Balaban in the Central West End. He plans a beef stew soup with substantial

The Jan. 29 Chateau Montelena Wine Dinner of Bottle Shock 2008 movie fame pairs five wines from the vineyard which hoisted Napa into the wine world’s consciousness with Nantucket Bay scallops, roasted squab in a port wine reduction, braised veal cheeks set off by gnocchi and roasted garlic, and chocolate pate. Precursor to the wine dinner, a Jan. 9 Bottle Shock wine class will sample six top varietals from the producer. Saturday afternoon tastings from 1 to 3 p.m. open multiple bottles to foster education, interest and taste in wines from this cellar which earned an award of excellence from Wine Spectator this year and from a kitchen named one of the Best New Restaurants by St. Louis Magazine.
