11th Annual Gumbo Flats 5K/10K Pumpkin Run/Walk and Children’s Fun Run Hundreds of community members will lace up their running shoes for the 11th Annual Chesterfield Chamber of Commerce Gumbo Flats Pumpkin Run/Walk. The 5k (3.1 mile) and 10k (6.2) runs are out and back courses. The Chamber hosts a .5 mile Children's Fun Run for ages 8 and under. Costumes are encouraged, for kids and adults alike! The first 1,000 registered participants to pick up their race packets receive a classic long sleeve t-shirt. Tasty Tidbits from Eateries in and Around Chesterfield Screwcaps vs. Corks... There are a dozen reasons why sealing a bottle of wine with a screw cap is better than wine sealed with a cork. There is only ONE reason sealing a bottle with a cork is better than a screw cap. There is a sense of “ceremony" invoked in opening a bottle of wine sealed with a cork. THAT'S IT! That is the only advantage a cork has over a screw cap. Realistically, screw caps make more sense. This is not the screw cap that sealed your Boone's Farm when you were young. The screw cap today is called a Stelvin Closure. The design of this closure was prompted because more and more wines were becoming tainted by a chemical called T.C.A. This chemical affects wine mainly through the corks that seal the bottle. T.C.A. can also taint or "cork" a wine through infected wood barrels, pesticides and preservatives. A "corked" bottle of wine has similar characteristics to smells such as moldy newspapers, wet dog or a damp basement. Screw caps protect the wine from becoming tainted more than a cork. Studies by Wine Spectator in 2005, tasting 2800 wines, found 7% of bottles sealed with a cork were tainted with T.C.A. Less than 1% of wine sealed with a Stelvin Closure were corked. Between 2001 and 2004 all wines from Australia and New Zealand sealed with a screw cap went from 1% to 70%. Some of the most expensive wines in California are now sealed with a Stelvin Closure; i.e. the 1997 Plumpjack Reserve Cabernet. Finally, a lot of customers misunderstand the reason why a server at a restaurant brings you the bottle you ordered, opens it in front of you, hands you the cork and pours you a small taste. You are to feel the cork for moisture to assure you of proper storage. You smell and taste the pour to make sure the wine isn't corked. The server isn't concerned whether you like the wine or not. In the Mood for Pasta? Pasta Ligurian • 1 lb. pasta, linguine or fettuccine • 4 oz. extra virgin olive oil • 4 cloves or 2 heaping tbs. of minced garlic • 5 oz. small cubed feta cheese • 3 1/2 oz. diced sun-dried tomatoes, oil drained • 5 oz. coarsely chopped parsley • 1 lb. peeled deveined shrimp Bring a large saucepan of salted boiling water to a rolling boil. Add pasta and cook until al dente, approx. 5-7 minutes. Drain. In a large skillet heat the oil with red pepper flakes over medium heat so that the flakes flavor the oil. Add the shrimp and saute 1-2 minutes. Reserve the parsley. Add all remaining ingredients and heat until hot. Add pasta and toss. Season to taste. Garnish with chopped parsely. Serves four.
