Welcome! Hello everyone, Firstly, I would like to introduce myself. I’m Paula and I’ve worked on various Prize Magazines titles over the last 12 years. This is my first issue as editor of Tasty and, I have to admit, I’ve loved every minute of it!

SEASONAL BAKING

Winter Wonderland Cake Ingredients: 300g packet tropical fruit medley 115g (4 oz) dried cranberries 85g (3 oz) dried sour cherries Finely grated rind and juice of 1 large orange 225g (8 oz) Stork tub 225g (8 oz) golden caster sugar 4 medium eggs 90g (3 oz) ground almonds 225g (8 oz) plain flour 1 ¼ level teaspoon baking powder Icing and to decorate: 65g (2 ½ oz) whole almonds 65g (2 ½ oz) caster sugar 275g( 10 oz) icing sugar, sieved 115g (4 oz) Stork spread 1 tablespoon milk 30cm (12 in) cake board

A simple but impressive centrepiece to wow your friends and family. • Serves 12 • Oven temperature: 160 C • Baking time: 75mins

Method: 1. Chop all the dried fruits into small (cranberry-size) pieces. Combine these in a bowl with the orange rind and juice and mix well. Leave to soak for approximately 30 minutes. 2. Put the Stork, sugar, eggs and almonds in a mixing bowl and sieve the flour and baking powder over. Beat until well mixed then fold in the fruit mixture. 3. Spoon into a greased and bottom-lined 20cm (8 inch) deep round cake tin. 4. Bake in a preheated oven at 170°C, 160°C fan, Gas mark 4 for 1 – 1¼ hours or until cooked through (a fine skewer inserted in the centre should come out clean). Leave to cool before removing the cake from the tin. 5. Place the almonds and sugar in a heavy based pan and place over a moderate heat until the sugar melts and turns a golden caramel colour shaking the pan from time to time. Pour onto parchment paper and leave till cold. Place in polythene bag and bash with rolling pin until roughly ground. 6. Beat the icing sugar, Stork and milk together and spread half over sides of cake. Spread remaining icing over top and sprinkle with the praline mix. 7. To decorate the base board, roll out some of the sugar paste until very thin and lay it over the board. Roll it firmly into the surface of the board and use the rolling pin to smooth paste off the edges. Place the cake on top secured with a little royal icing to stop it moving. 9. If you’d like to add gingerbread houses, bake them in varying sizes using your favourite recipe. Spread a little royal icing on the back of each house and gently push onto the side of the cake so that the bottom of each one rests on the cake board. Try not to allow any gaps between the houses.

SIMPLE SNACKS

Parma Ham Rarebit So much more than a glorified cheese on toast! Ingredients: 8 slices sourdough bread 2 tbsp ale 2 tsp whole-grain mustard 2 eggs, beaten 150g grated Caerphilly 1 tbsp crème fraîche 8 slices Parma Ham

Method: 1. Slice the bread in half if you prefer. Preheat the grill and toast the bread on both sides. Leave to cool.

2. Combine ale, mustard, eggs, Caerphilly, crème fraîche and a little seasoning and spread a layer on top of each slice of toast. 3. Transfer to a large grill pan or baking sheet and cook under the grill for 2-4 minutes until the topping is golden and bubbling. Cool slightly before serving, topped with slices of Parma Ham.

Crispy Winter Fenland Celery and Fennel Salad with Cranberries and Orange A perfect crunchy and varied salad for a winter buffet, serve with cold meats and baked potatoes to bring out the array of wonderful flavours.

• Serves 4 • Preparation time: 20mins • Cooking time: n/a Ingredients: 6 sticks Fenland celery, thinly sliced, reserve green leaves 1 large fennel bulb, thinly sliced 1 red onion, peeled, halved and thinly sliced 1 Pink Lady apple, thinly sliced 2 oranges, remove zest before cutting away the skin, thinly sliced

Chocolate Gingerbread Men Ingredients: 85g (3 oz) Stork packet 85g (3 oz) soft brown sugar 85g (3 oz) golden syrup 200g (7 oz) plain flour 25g (1 oz) cocoa powder 1 teaspoon baking powder 1-2 teaspoon ground ginger ½ teaspoon bicarbonate of soda Decoration Icing sugar Red and white fondant icing

Method: 1. Cream together the Stork, sugar and syrup. 2. Blend in the dry ingredients and knead thoroughly. Roll out the dough until about 75mm (¼ inch) thick. 3. Cut into shapes or use a cutter. Lift onto lightly greased baking sheets and bake in centre of preheated oven 210°C, 190°C fan, Gas mark 7 for 8-10 minutes. 4. Add either water or food colouring to the icing sugar to make glace icing. Decorate biscuits with the icing and use the fondant icing for hats, scarves etc.

STUDENT COOK OF THE YEAR

Forget beans on toast and frozen pizzas, today’s student has a more sophisticated palate and they know how to cook a decent meal! To celebrate our country’s culinary undergraduates, Bacofoil has launched its first ever Student Cook of the Year competition and entry is now open. Until the 31st December 2014, foodie students can enter the competition by posting a picture on Twitter or Facebook of a dish they have created, along with its name and the hashtag #BacofoilStudentCook. Entries will be judged on their presentation skills and the creativity of the dish’s name. There are some fab judges lined up, including celebrity chef Sam Stern, and a grand "cook-off" finale for the finalists, a high-pressure culinary contest in which they will need to prepare their dish for the panel. The winning cook will receive £1,000 worth of groceries! Entrants can be of any age but must be currently studying at a UK university.
