These easy oat-filled breakfast flapjacks are chock-full of fruit and nuts. This flapjack recipe combines golden syrup, dried cranberries, oats and banana with a medley of nuts plus sunflower and sesame seeds for added texture. But it’s so simple to make – just mix everything up, smooth into a baking tin and cut into delicious chewy wedges once it comes out of the oven.

Breakfast Flapjack 85 g (3oz) mixed nuts e.g. walnuts, almonds, pecans, roughly chopped
• Serves 12 • Prep Time: 15 minutes • Cooking Time: 20 minutes
200 g (7oz) rolled oats 85 g (3oz) self-raising flour 40 g (1½ oz) dried cranberries 70 g (2½ oz) unrefined demerara sugar 3 tbsp golden syrup 2 bananas , mashed 1 egg 12.5 g (½ oz) sunflower seeds
Method: 1. Pre heat oven to 180°C, 160°C fan, gas mark 4. 2. Place all dry ingredients in a mixing bowl. Stir in the Flora and syrup with the bananas and egg.

Winter Wonderland Viva strawberry andCake spinach salad with ham • Serves 12 • Oven temperature: 160 C • Baking time: 75mins
This salad is perfect as a starter for a romantic dinner or a weekend lunch for two. • Serves 2 • Prep time : 10 minutes • Cook time : 5 minutes Ingredients: for the dressing 2 tbsp light olive oil 1 tbsp raspberry vinegar 1 tsp single cream 1 tsp runny honey ½ tsp freshly ground course black pepper for the salad 1 x 225g bag of baby spinach leaves, washed 2 large slices of Bayonne ham, torn into pieces 12 Viva strawberries, hulled and sliced
Method: 1. Make the dressing by putting all of the ingredients into a small bowl or jug, whisk them all together, adjust the seasoning if necessary and set aside. 2. In a large wok, place half of the spinach leaves into the pan and with a tablespoon of water, sauté over a high heat until just wilted. 3. Arrange the wilted spinach on a serving plate, or two individual plates and add the uncooked spinach leaves. CREATIVE CANAPÉS
1. First, make the dressing by whisking together the egg yolk, lemon juice, anchovies and garlic clove and gradually whisk in the olive oil to thicken the mixture. Add the grated ParmiganoReggiano cheese and gradually whisk in the double cream, followed by the mascarpone cheese. Season to taste 2. Assemble the canapés by taking leaves of the chicory and filling with a little dressing, followed by a few cubes of chorizo and plenty of smoked chicken

Ingredients: 2 bulbs red chicory 30g chorizo, diced 100g smoked chicken, thinly sliced 1 handful basil leaves, roughly chopped 25g Parmigano-Reggiano cheese, to serve
Caesar Dressing: 1 egg yolk Juice of ½ lemon ½ tbsp finely chopped anchovies 1 garlic clove, crushed 3 tbsp olive oil 20g Parmigano-Reggiano cheese, grated 2 tbsp double cream
3. Drizzle a little with more dressing over each canapé and top with chopped basil leaves and shaved Parmigano-Reggiano cheese before serving Cook’s tip: To save some time, try making the dressing in advance, remembering to keep it refrigerated.

Quick and Easy Salmon Lasagne with Västerbottensost Ready in a matter of minutes, this easy recipe is perfect for an elegant mid-week meal or last minute dinner party dish. • Serves 4 Ingredients: 8 fresh lasagne sheets 200g spinach 2 tbsp soured cream 100g gravadlax 12 slices Västerbottensost Zest of ½ lemon, plus 4 thin lemon wedges 2 tbsp dill Freshly ground black pepper

1. Bring a large pan of boiling water to the boil and cook the lasagne sheets for a few minutes until al dente. 2. Wash the spinach and steam in a pan until just wilted, then stir in the soured cream and season well. 3. Fold a sheet of lasagne on each plate and layer up with a little spinach, gravadlax, Västerbottensost, lemon and dill. Then do the same again with the second piece of lasagne, finishing with a generous sprinkling of black pepper. 4. Serve each plate with a lemon wedge on the side.

Breakfast Flapjack These easy oat-filled breakfast flapjacks are chock-full of fruit and nuts. This flapjack recipe combines golden syrup, dried cranberries, oats and banana with a medley of nuts plus sunflower and sesame seeds for added texture. But it’s so simple to make – just mix everything up, smooth into a baking tin and cut into delicious chewy wedges once it comes out of the oven. Ingredients: 85 g (3oz) mixed nuts e.g. walnuts, almonds, pecans, roughly chopped

200 g (7oz) rolled oats 85 g (3oz) self-raising flour 40 g (1½ oz) dried cranberries 70 g (2½ oz) unrefined demerara sugar 125 g (4oz) melted Flora Buttery 3 tbsp golden syrup 2 bananas , mashed 1 egg 12.5 g (½ oz) sunflower seeds 12.5 g (½ oz) white sesame seeds

Method: 1. Pre heat oven to 180°C, 160°C fan, gas mark 4. 2. Place all dry ingredients in a mixing bowl. Stir in the Flora and syrup with the bananas and egg. 3. Mix well and spoon into a greased shallow 22cm (9 inch) square tin. Smooth the surface and sprinkle with the seeds. 4. Bake in the oven for 20 minutes or until cooked. Mark into 12 slices whilst still warm.

Turkey Curry This delicious recipe uses a variety of flavoursome spices. Win your very own set in the competition below. Ingredients: 1 tbsp olive oil 25g/1oz unsalted butter 1 large onion, peeled and finely chopped 4 garlic cloves, peeled and finely chopped 2.5cm/1in knob of fresh ginger, peeled and grated 1 red chilli, de-seeded and finely chopped 8 Spice Kitchen green cardamom pods, slightly crushed 1 tsp Spice Kitchen ground cumin 1 tbsp Spice Kitchen ground turmeric ½ tsp Spice Kitchen chilli powder 1 tsp Spice Kitchen garam masala 1 tsp Spice Kitchen ground coriander powder 2 large potatoes, peeled and cut into cubes 1 butternut squash, peeled and cubed 570ml/1pt chicken or turkey stock 125ml/4fl oz yoghurt 85ml/3fl oz double cream 1 tbsp lemon juice 6 large handfuls roast turkey, chopped 1 tbsp fresh coriander leaves, chopped
Method: 1. Heat the oil and butter in a large non-stick casserole pot. 2. Add the onions and cook for 2-3 minutes, then add the garlic, ginger, chilli, cardamom, cumin, turmeric, garam masala and ground coriander. Cook over a medium heat until the onion is soft, being careful not to burn the spices. 3. Add the potatoes and butternut squash and cook until the potato begins to stick to the bottom of the pan slightly. 4. Add the stock and bring to the boil. Season, to taste, with salt and freshly ground black pepper. 5. Reduce the heat and simmer for 10-15 minutes, until the potatoes and butternut squash are tender. 6. Stir in the yoghurt and cream, then add the lemon juice.

PUSSER’S RUM
Pusser's is an authentic navy rum, not just a dark rum. The definition of a real navy rum is that is has to be distilled in a wooden still. There are only two production capacity wooden pot stills in the world and both are dedicated to producing Pusser's rum.

Springtime Sandwiches Serves 4 Ingredients: 4 Roberts 50% White 50% Wholemeal rolls Approximately 8 - 10 good-sized strawberries, sliced 1 – 2 tubs Cottage cheese (as much as you like, that will fit in the rolls!) Iceberg lettuce (try to use the whiter, crispier leaves. Although they’re less nutritious, they give more ‘crunch’ in this dish) Freshly ground black pepper Method: Split the rolls and lay some of the lettuce leaves on the bottom layers. Drain the cottage cheese to remove as much of the liquid as possible. Add a generous layer of cottage cheese, and top with strawberry slices. Season with a generous grind of black pepper, then replace the lids of the rolls. ADD A TWIST: Use reduced-fat ricotta, or low fat soft cheese, instead of the cottage
