There’s just something about food. Sure, we need it for sustenance and survival. But it’s more than that. Food soothes our souls, invites community, and thrills our taste buds—so it just makes sense to devote an entire issue to the topic (especially in Miami, where the food scene is bursting with new tastes and talents). But for some people, food is not easy to access. Still others of us toss food away without hesitation, zealously cleaning out our fridges and pantries the night before trash day. Miami-born artist Reina Noriega is using her talents to help nourish folks experiencing food insecurity in Allapattah with a bespoke community refrigerator bearing her signature faceless women of color. The project, a brainchild of the Buddy System MIA Community Fridge Program, offers food-filled fridges in neighborhoods across the Magic City. Read more about the collab between art and the fight against hunger in “Art with Heart” on page 22. You’ve heard of the farm-to-fork movement, but chef Niven Patel is taking things to the next level. The proprietor of Mamey, Orno, and Ghee Indian Kitchen, Patel is bringing the farm home— literally. Visit his Homestead-based Rancho Patel in “Farm Fresh” on page 62 to learn about his unique approach to transforming homegrown ingredients into delicious dishes. One of the newest trends in food prep and delivery is a phenomenon known as ghost kitchens— professional kitchens that churn out delivery-only meals. Miami Beach’s own DJ Khaled has recently launched Another Wing using the ghost kitchen model, offering chicken wings and tenders in seven saucy flavors for delivery via car (or even Jet Ski). Nature & The Arts Troy Campbell has been behind the lens for more than two decades. He photographs high-end interior design projects and has more than 70 magazine covers to his name. But he credits a “magic moment” for launching his fine art career: A friend referred the curator of the Four Seasons Hotel Miami’s public collection to look at a few of Campbell’s art pieces that he had created to hang in his studio. The meeting resulted in the curator selecting some of his works for the hotel’s collection. Growing up hiking in the Everglades, Campbell says the preserve now lacks wildlife and he hopes his art’s environmental references can help others gain an appreciation for the natural world. “I realized I could use my creativity as a platform not only to express myself but also to help protect the things I’m passionate about, such as the Everglades,” says Campbell, who has a studio in Miami. “Perhaps through appreciation will come conservation.” Read on to learn more about Campbell’s latest works. l AVM: What are the themes in your artwork? Campbell: Obviously nature, not to sound cliché. Right now, I’m crazy about metallics. They give a quiet elegance to a piece. There is something about a metallic look when contrasted with a natural texture that I’m wild about.

l Where do you find inspiration? I try not to look at other artists. I want my expression to remain pure. On my Everglades hikes, there are special spots. I call them “magic areas.” You can hike for miles and then all of a sudden you will come across a cypress dome or orchid hammock that is unlike anything you can imagine.

Tell us about your new works in the Butterfly Specimens and Prosperity collections. Butterfly Specimens are inspired by those glass specimen cases you see butterflies displayed in. I remember there was this giant taxidermy store in Paris [that] had thousands of Prosperity butterflies and moths in these glass cases. It was just amazing. My butterfly studies are like little biotopes of flora and habitat that the specimen may live in. With Prosperity, I wanted to do a modern version of a traditional landscape. I took the silhouettes and shapes from a landscape and filled them with metallic, bronze, gold, and silver textures. Ironically, they ended up looking like an antique Asian room screen with a modern twist. l

GHOST KITCHENS ARE TEAMING UP WITH CELEBS LIKE MIAMI BEACH’S DJ KHALED TO REVOLUTIONIZE FOODIE FARE

ou’ve heard of ghost towns, but there’s a new spectre on the block. Ghost kitchens—though they may sound spooky—are food prep spaces with no waiters, no dining rooms, and no parking lots. And on food delivery apps like UberEats, DoorDash, and Grubhub, you’d better believe they’re alive and kicking. Listings for restaurants operating out of ghost kitchens don’t look any different than those for brick-andmortar operations on food delivery apps. Consider, for example, Miami Beach-based rapper DJ Khaled’s new concept called Another Wing: Miamians can order chicken wings and tenders in a variety of sauces from Khaled’s new venture, but can’t visit an Another Wing storefront in Miami (or in any city for that matter). His wings are made in a ghost kitchen, delivered to hungry people by way of cars (and even via jet ski for those craving wings while on the water). The virtual eatery launched in November 2021, offering a menu featuring wings in seven flavors inspired by some of DJ Khaled’s most notable catchphrases— including (but not limited to) Don’t Quit Nashville Hot, Un Un Un Believable Buffalo, You Loyal! Lemon Pepper, Honey! Honey! Hot Honey Sriracha, and They Don’t Want You to Win Buffalo. Reef Technology and Just Kitchen are the ghost kitchen providers for

Khaled’s Another Wing brand, which is making a stir in the saturated world of fried chicken. Industry-wide, ghost kitchens are making a stir of their own. “[COVID-19] definitively has added to our growth,” says Jason Chen, CEO of Just Kitchen. Exactly how much growth is hard to quantify, but with COVIDinduced staffing shortages and the closures of many brick-and-mortar restaurants, tasty food dropped at your doorstep is the new sliced bread. “We hired from many traditional restaurants that suffered due to closures that were temporary or permanent,” says Chen of Just Kitchen’s staffing sources. There isn’t a lot of revenue data yet on ghost kitchens—they’re just that new. But Alp Franko—Europe’s first ghost kitchen franchisee—says he’s seen research that indicates the market may double or triple. There are also reports that predict ghost kitchens will become a one trillion dollar industry over the next decade—music to the ears of Khaled and his partners. As a ghost kitchen concept, Another Wing didn’t require the permitting, build-out, and staff of a traditional restaurant. Still, the coordination involved in launching it during a global pandemic is downright impressive. “It’s the first restaurant concept to ever launch on three continents at the same time, with over 150 locations and growing,” Khaled told Bloomberg, saying Another Wing is “making history in the world of food.”

From the cover of The New Yorker to a community refrigerator in Allapattah, Reyna Noriega’s art offers HOPE and help By Linda Marx Call her Miami-made. “My parents met in Miami,” says artist Reyna Noriega. “My love for the city started with them.” The product of a Cuban father and a Bahamian mother, Noriega’s art celebrates her roots and the city she calls home. Originally, art was a side hustle for Noriega, who taught at Homestead’s Everglades Preparatory Academy by day. But after-hours, Noriega was painting and drawing—showcasing her talents in the form of flyers, T-shirts, and logos. She made a conscious choice to focus on women of color. “We endure a lot, and I want to uplift people,” she says. “I started doing that through my art. I had a passion to motivate and inspire women to find joy in their lives.” Joy, as they say, is contagious—and it wasn’t long before people began to notice Noriega’s joyful pieces. In 2021, she collaborated with Old Navy on a T-shirt for Black History Month. “It was called Aqua Woman and became the No. 1 selling graphic T-shirt for Old Navy,” she says. “I was really excited when I saw the daughter of basketball star LeBron James wearing one.”

The same year, The New Yorker commissioned Noriega to create an illustration for its March magazine cover. It was a full-circle moment; one of her earliest introductions to illustration was seeing a New Yorker cover by Malika Favre and thinking, “I would love to do something like that one day.” Noriega’s art also graces some less famous (but still life-changing) locales—including an Allapattah-based refrigerator that’s part of Miami’s Buddy System MIA Community Fridge program. Not surprisingly, Noriega’s fridge features her signature faceless women. “I don’t use faces,” she explains. “I want women to see their own faces in them.” For Noriega, every artistic choice—even on a fridge door—has a message. “I painted two women and a third at the bottom holding a child,” she says. “Women are the ones in the family who make sure everyone gets fed.” (reynanoriega.com)

Buddy System MIA is on a mission to fight food insecurity in the Magic City—with a little help from a handful of Miami-based artists (like Reyna Noriega) who have added their artistic flair to a phalanx of fridges. Because the fridges are placed in public areas, the food can be shared among a community, with anyone putting food in or taking food out as needed. It’s a plan that’s catching on: In 2021 (its first year of operation),

Adaptogens do for your adrenal glands what exercise does for muscles and bones, strengthening them to protect and defend. As a result, cortisol levels decrease, serotonin (the happy hormone) and melatonin (the sleep hormone) increase, and everything else falls into place: pain relief, improved digestion, cognitive function, and increased immunity. Weeding through the noise and making sure you’re getting real adaptogenic herbs is the main hurdle. Because the FDA classifies these products as dietary supplements, manufacturers may exaggerate how well they work. Avoid packaged snacks and look for the whole form, powder, or liquid versions of the adaptogen itself. Adaptogens are not something you can sprinkle on your coffee every so often and expect results; they need to be a part of your daily routine to really reap the benefits. There are many ways to accomplish this and numerous adaptogens to choose from. Incorporate them into your teas, coffees, or smoothies, or cook adaptogenic mushrooms as a hearty side or entrée. Consume stimulating adaptogens, like maca and ginseng, earlier in the day, before 2 p.m. Calming adaptogens, including holy basil and ashwagandha, are great for the late afternoon or evening. While they may seem like yet another wellness trend, adaptogens have actually been used for centuries in Chinese and Ayurvedic medicine. Coined by Dr. Nikolai V. Lazarev, the term “adaptogen” refers to “a substance that increases nonspecific resistance against multiple stressors.” This powerful group (primarily plants, herbs, and mushrooms) interacts with your brain and nervous system to regulate physiological responses to stress, ensuring your body functions as it should.

Holy Basil: By reducing cortisol production, this plant can alleviate stress and anxiety. It can also balance blood sugar and hormones and promote fertility.

Ashwagandha: Also known as Indian ginseng, this herb can purportedly reduce stress and anxiety.

Ginseng: This root boosts energy and cognitive function.

Cordyceps: These mushrooms boost stamina, increase exercise performance, and reduce inflammation.

Maca: A Peruvian root used by ancient warriors to boost stamina and energy, maca has been found to increase libido, balance hormones, and benefit immunity. Maitake: These mushrooms support healthy blood sugar levels and regulate insulin.

Goji Berries: These berries can boost energy and physical performance and improve sleep. Matcha: This popular plant/tea supports a healthy glucose response, balances hormones, and reduces inflammation.

Turmeric: This root decreases inflammation and regulates glucose and cholesterol.

Reishi: In addition to supporting immunity, reishi mushrooms can lower blood pressure and improve sleep.

Rhodiola Rosea: Incorporate this plant to reduce physical and mental fatigue. Astragalus also targets fatigue. Lion’s Mane: Consume these mushrooms to reduce anxiety and depression and boost brain health.

Blend all ingredients in a high-speed blender until thick and creamy.

SAUTÉED Maitake and Lion’s Mane Mushrooms INGREDIENTS

1 lb. lion’s mane mushrooms

2 tbsp. white wine vinegar

1 lb. maitake mushrooms

2 tbsp. chopped parsley

3 tbsp. olive oil, divided

2 tbsp. lemon juice (half a lemon)

2 cloves of garlic, minced

Flaked sea salt

» Cut mushrooms lengthwise into 1/2-inch-thick

“steaks.” Add 2 tbsp. of olive oil to a cast-iron pan and coat the pan using a paper towel. Over medium heat, cook mushroom steaks for 4 minutes on each side, pressing down with a metal spatula every few minutes to release moisture. Bring heat to low and add the remaining 1 tbsp. of olive oil as well as the minced garlic in the center of the pan. Cook until garlic is fragrant and lightly browned and all mushrooms are golden brown (approximately 1 minute). Finish with white wine vinegar and toss to combine.

almond milk, warmed and frothed (if desired)

» In a coffee cup, combine all ingredients, adding

almond milk last. Garnish with a sprinkle of cinnamon or cacao powder.

with chopped parsley, squeezed lemon, and flaked sea salt.

INGREDIENTS 1 cup almond milk 1/2 tsp. ground

turmeric 1/4 tsp. ground

cinnamon 1/8 tsp. ground ginger 1/2 tsp. raw honey

In a bowl, whisk together all ingredients. Transfer to a small pot on the stove and simmer for 15 minutes. Remove from stove, transfer to a mug, and whisk or froth contents. Garnish with a sprinkle of cinnamon. APRIL 2022

As international travel and cruising slowly reenter the realm of normal, a wide world of river cruises awaits—and one country inviting exploration by water is Portugal. In the years before the pandemic, Viking River Cruises unveiled the Helgrim, one of its baby Longships built to traverse Portugal’s Douro River and navigate its five narrow locks within a 10-day “River of Gold” itinerary. These 262-foot ships are more intimate than Viking’s famed Longships, with 53 staterooms that accommodate just 106 guests. The rooftop pool is a highlight, as is the Aquavit Terrace on the ship’s bow that makes for a convivial alfresco gathering place. A 36-person crew creates a luxury experience with attentive service, informative guides, and enhanced amenities. Viking’s promise to be “the thinking person’s cruise” is in full effect on its “River of Gold” vacation, which starts with two full days in Lisbon. Guests will see the Tower of Belém and enjoy guided tours of the Jerónimos Monastery and the Maritime Museum, where Portugal’s powerful trade history is brought to life with original Indian 40

spices, maps, navigation tools, sunken treasure, and intricately carved royal ships. Walking tours also venture deep into colorful neighborhoods, with stops at tucked-away restaurants for local fare and ever-present Port wine. Lisbon is one of Europe’s most elegant metropolises. Its inlaid stone sidewalks, hand-painted building tiles, and yellow cable cars that climb its eight steep hills create a romantic ambience rarely expressed in capital cities. The second weekend of every month—as well as the fourth weekend from May to October—artisans, cobblers, and antique dealers ply their trades under a canopy of trees on Avenida de Liberdade, the city’s main street directly outside the Tivoli hotel. After your time in Lisbon, you’ll travel to Porto, Portugal’s second largest city and the birthplace of the country’s signature wine. This is also where you’ll officially board the ship at the dock at Vila Nova de Gaia. Here—and daily—Viking passengers must make difficult choices about tours, as each is carefully selected to appeal to outdoor enthusiasts, historians, gastronomes, and curious travelers. Those who embark on the roughly 3.5-mile Porto City Hike will come across medieval streets originally settled by the Romans, stone homes and restaurants built in the seventeenth century, and the Church of Saint Francis with its magnificently gilded interiors. History, food, and Port dominate this Douro Valley sojourn, the only region in the world in which Port is made. Apple, orange, almond, and olive groves decorate the hillsides, and the scent of vineyards and Port cellars permeates the air. Grape harvests run from September 15 to October 15, when travelers can visit grand estates and participate in picking, stomping, and fermenting. Outside of the harvest season, Viking guests can instead head to a nineteenth-century estate

to partake in a private Port-blending class. Warning: Math is involved. A local sommelier sets up a tabletop lab within the family villa, where you will create a 750-ml bottle of Tawny Port by blending just the right amount of five-, 10-, and 20-year Ports. As you mix, a memorable science project unfolds, with the serenade of a fountain, the aromas of bougainvillea, and the backdrop of gardens, vineyards, and stone steps setting a fairy-tale scene. Cultural immersion is at the forefront of any Viking river cruise, and one of the most extraordinary tours offered to passengers is in Favaios. An excursion to this tiny village is available on the Pinhão leg of the cruise and includes a breadmaking demonstration, with bakers making their loaves in ovens heated with wood and grapevines. You’ll also visit the Bread and Wine Museum and have lunch at the Quinta da Avessada wine estate. If it sounds like you’re on the move with this trip, you are. When it comes to the paint job, there are 13 colors to choose from, but why would anyone stray from the trademark Alpina Green Metallic of our test car or the equally gorgeous Alpina Metallic Blue? A somewhat odd addition is the laser-etched crystal glass shift knob embossed with the Alpina logo. But it’s the beating heart under the hood that makes this Alpina Gran Coupe so special. While it’s the same twin-turbo 4.4-liter V8 used in the standard 850i Gran Coupe, Alpina ups the horsepower to 612. More importantly, max torque increases to a mighty 590 pound-feet. Grand DESIGN Beneteau’s new Grand Trawler 62 loves taking it easy but has the power to get up and go By Howard Walker You won’t find it listed in The New England Journal of Medicine or even on WebMD, but there’s a condition afflicting buyers of trawler-style motor yachts. It’s called SAS—short for speed anxiety syndrome— and it’s on the rise. These owners know they’ll spend 99 percent of their cruising days watching the world go by at a nice-and-easy 9 or 10 knots, ensuring no rum punch ever spills. And yet, should they need to open the taps and get home fast—say, at the first sign of a thunderhead or the impending arrival of happy hour at the yacht club—they want their vessel to deliver. With the SAS sufferer in mind, French trawler yacht builder Beneteau has introduced a gorgeous new flagship known as the Grand Trawler 62. While it was designed 48

to cruise for days on end at whisperquiet, single-digit speeds, the 62 boasts a pair of 730-hp MAN diesels ready to punch to 20 knots when the need arises. This new Grand Trawler 62 replaces the much-loved Swift Trawler 52 and is the result of numerous conversations with existing Swift Trawler owners. They asked for a softer-riding, wave-cleaving, displacement-style hull for 1,000-miles-on-one-tank passages, but one that could still get up and go. To achieve the desired result, oh-soFrench Beneteau turned to Italy, enlisting Italian naval architects Micad to design the round bilge displacement hull and Nauta Design in Milan to create the interior layout.

Beneteau even built the 62 at the Monfalcone, Italy, yard of Monte Carlo Yachts, now part of Groupe Beneteau. The result is a yacht that offers the best of trawler-style comfort and design. That means a near 18-foot beam that’s carried almost all the way to the bow for massive interior volumes, as well as a reverse-angle windshield and side-deck overhangs. The

Below deck, the standard layout is for three en-suite cabins, including a cavernous owner’s suite amidships, a VIP guest suite in the bow, and a twin-berth guest cabin. The spacious feeling is heightened by 6-and-a-half feet of headroom and that sprawling beam. The superior quality and craftsmanship of this new Grand Trawler 62 are reflected in the price, which starts at just under $3 million. Tax season is upon us, and two proposed changes could impact wealthy filers down the road By Judy Martel For taxpayers, last year was one of much talk but little action. President Joe Biden’s Build Back Better Act proposed an array of tax increases—particularly for individuals earning $400,000 and above—in order to pay for a variety of social and environmental programs in the bill. In the end, the complete plan stalled in Congress, as did many of the proposed tax subsidies to pay for it. But that doesn’t mean all of them are dead, says Jeffrey Rubinger, an adjunct faculty member at the University of Miami School of Law’s graduate program in taxation and a partner at Baker & McKenzie in Miami. “I do think some of the proposals will go through; it’s just a matter of when.” Two of the proposals he believes would have the biggest impact on wealthy individuals are an increase in the long-term capital gains tax and a reduction or elimination of the exclusion of 100 percent of the gain from the sale of a qualified small business (C-corporations with less than $50 million in assets). Taxes on capital gains are imposed when certain assets—such as vacation homes, stocks, bonds, and art owned for at least a year—are sold for more than their purchase price. In 2022, the capital gains rate essentially remains unchanged, with the highest rate set at 20 percent for single filers earning in excess of $459,750 and for married filing jointly earning more than $517,200. An additional surcharge of 3.8 percent is levied on individuals with income exceeding $200,000 for single filers and $250,000 for married filing jointly. In preparation for potentially paying a higher rate of up to 25 percent under the Build Back Better plan, many wealthy individuals sold investments in 2021 to take advantage of the lower rates, Rubinger says. “Essentially they accelerated a lot of income, and it turns out they didn’t have to do that.” But when there is talk of significant changes to the tax laws, it’s not such a bad thing to jump the gun by selling at least some assets while the rate is low, he adds. The other proposal Rubinger thinks Congress will eventually pass will have 50

a “huge impact” on small business owners, he says. Currently, owners who sell their qualified small business can exclude 100 percent of the gain, up to $10 million or 10 times the value of the company’s stock. Historically, successful small business owners who fit the qualifications have been able to amass wealth with this exclusion. One of the most hotly debated proposals was the increase in the top income tax rate from 36 percent to 39.6 percent, but that did not pass last year. “The only change in 2022 is the imposition of an additional 5 percent surcharge on top of the highest rate for those with gross income exceeding $10 million and another 8 percent for incomes exceeding $25 million,” says Rubinger. The Build Back Better plan is “clearly aimed at people making a significant amount of money,” Rubinger says. “The issue is that for many high-net-worth individuals, most of their income is on capital gains, which are taxed at a lower rate than ordinary income.” Taking all this into account, the best defense is to work with a tax professional to devise the strategy that best serves you. «

If you’re a food lover who spends any time on Instagram, you’ve likely seen posts on your feed from Miami foodie queen Samantha Schnur. Better known online as The Naughty Fork, Schnur is the founder of a lifestyle, food, and beverage brand that’s been heating things up on social media with her accounts on Instagram (@thenaughty fork) and TikTok (@naughtyfork), offering posts chock-full of original foodie content. Like many accounts, the 28-year-old’s page came to fruition out of fun. She was a student at Florida State University, studying biology and chemistry, with plans to go to Samantha Schnur is not afraid to play with her food. medical school when friends suggested she create a separate Instagram account to post her food pics. “It started growing and growing,” recalls the Miami Beach native, who is now a full-time influencer. “People love food. It’s something people love to talk about and see. [My page] was something so different because no one was really using the platform for that at the time.” Soon, Miami restaurants were jockeying to land a spot in Schnur’s posts. Riding the wave of Buzzfeed’s then-popular “Tasty” videos, she began creating recipes, recording them from start to finish, and posting them to her followers. Her account began growing so rapidly that she took a semester off from school to launch a website and build her brand before transferring to and graduating from the University of Miami. Since then, Schnur has focused on nurturing The Naughty Fork (her Instagram account boasts more than one million followers). Her content landed her on Forbes’ 30 Under 30 Food & Drink list in 2019, garnering serious national attention. Next up? Schnur is bringing her culinary visions to a larger audience with the opening of three concepts at Oasis in Wynwood. In partnership with Poke OG founder Andrew Mayer and influencer Yanni Georgoulakis of @foodyfetish, it marks the first Miami restaurant to feature two influencers as partners. Fans of The Naughty Fork will be able to enjoy selections like Papi Churro (offering churros and soft serve), Miss Crispy Rice (the first upscale crispy rice bar in the world), and Sushi OG (a fast-casual sushi spot). Schnur says the food scene in Miami has grown in recent years and isn’t just for tourists anymore. “What I love about the food scene now is that people are appreciating it and people are saying, ‘You know what? Find natural light. It's more relatable

when you avoid using artificial light. I don't bring huge lighting setups. That looks very commercial to me. I know everyone thinks that direct sunlight is good, but the lighting on an overcast day is perfect. I usually take photos or videos outside for natural light or I sit by a window inside of a restaurant.

Use an actual camera. I use a Canon, but you can use a Sony or Nikon DSLR camera. In my opinion, you get better-quality photos (as opposed to using a phone) that are still relatable. In terms of taking videos, I find that shooting them at restaurants is easier and more relatable when you use a phone.

After cooking up an alfresco feast made using ingredients grown on his Homestead farm, chef Niven Patel sits down to enjoy the fruits of his labor with his wife, Shivani, his daughters, Ari and Aya, and his business partner, Mohamed “Mo” Alkassar.

It’s 5 a.m. and chef Niven Patel’s favorite part of the day. He’s on a walkabout around Rancho Patel, the two-acre farm surrounding his family’s Homestead residence. He inspects his crops—from turnips to tatsoi. It’s a peaceful time, he says—a creative outlet that inspires him to dream up new dishes and drinks. On most days, he’s shadowed by

his twin toddler daughters, Ari and Aya. He guides them as they pick fresh flowers that are nestled in bright clusters between the rows of crops. Later, these petite bouquets will end up on the tables of his trio of restaurants: Ghee Indian Kitchen with its two Miami locations, plus a pair of offerings inside Coral Gables’ Thesis Hotel: Mamey and Orno.

By 9 a.m., though, Patel trades his farmer’s hat for a chef’s apron. Each of his concepts is as unique as the ingredients he grows on his farm. Ghee pays homage to Patel’s Indian roots; its constantly changing menu is inspired by his love of Indian street food, which has brought him national acclaim. Mamey (named after a tropically grown fruit) offers dishes full of APRIL 2022

organically grown fruits and vegetables. And these are not your garden-variety produce picks; each item in Rancho Patel’s crop rotation is curated from a collection of seeds and saplings the chef has amassed during his trips around the world. It’s extra work, for sure, and often means 14-to-16hour days, but Patel says his brand of organic farming makes for better meals. “I want top-notch quality and a menu that changes daily,” he says. “I love the farm-to-table renaissance and I work hard on it.”

insight into Patel’s travels throughout Asia, Polynesia, and the Caribbean. Orno (a play on the word horno, which means “oven” in Spanish) serves new American cuisine that revolves around locally sourced vegetables, high-quality meats, and sustainably caught seafood—all cooked to perfection using a wood-fire grill. CREATIVE CROPS For Patel, everything starts and ends with ingredients—including the decision to purchase the land that houses Rancho Patel. He fell in love with the Homestead farm in 2014 after discovering an outcrop of lychee trees in full bloom on the property. “I love lychees; there is nothing better than lychee on ice,” says Patel, who has been named a James Beard Award nominee and Food & Wine Magazine’s Best New Chef of 2020. Since then, Patel has added to the farm, which now boasts more than 35 types of APRIL 2022

Patel selects the fruits, vegetables, and herbs for each season based on what he wants to serve in his restaurants. In winter, he uses flowers, herbs, and vegetables; summers are for exotic fruits. His gamut of farm-to-fork ingredients—many discovered during in his years of cooking in Florence, Italy; the Grand Cayman Islands; Baltimore, Maryland; and the Florida Keys—includes exotic delights like makrut lime, jackfruit, seedless white guava, mamey, starfruit, papaya, okra, curry, and cucamelons, as well as more traditional ingredients like ginger, eggplant, carrots, romano beans, and heirloom tomatoes. With the help of farmer Laura Sutton, crops are harvested at their peak—and then the magic begins, as they make their way onto menus in Patel’s restaurants. DOWN ON THE FARM FARMING IN FLORIDA DOESN’T HAVE TO BE HARD. CREATE YOUR OWN FARM-TO-FORK EXPERIENCE WITH CHEF NIVEN PATEL’S TIPS.

Soil is Everything: Nourishing the soil at Rancho Patel starts with mushrooms from Sublicious Farms. “It’s full of great nutrients,” Patel says. ● Not Too Wet, Not Too Dry: When you’re starting seeds, Patel advises, do overhead watering. As your crops grow, though, you’ll want to convert to a drip system. “When you water the leaves, it brings more pests,” Patel says. “Drip irrigation also conserves water.” ● Pests be Gone: Patel eschews the use of pesticides, preferring to apply neem oil to keep insects at bay. ● Eat (and Plant) Your Veggies: When it comes to tomatoes, Patel grows two varieties: Everglades tomatoes (larger) and Sun Gold tomatoes (smaller). ● Get Fruity: “I would recommend starting with papaya and mangoes,” Patel says. “They grow really well in South Florida.” ● Find Power in Flowers: To keep things low maintenance, Patel suggests new gardeners try growing sunflowers and marigolds. They attract bees and other pollinators, and are great companion plants for many fruits and vegetables. ●

A dish of roasted carrots—picked fresh just before cooking—is dressed with a simple mixture of salt, pepper, and olive oil, and served atop a bed of sumac yogurt. Patel adds leaves from the tops of the carrots as a verdant garnish.

cheese, cucumber, radish, pickled fresnos, tamarind, peanuts, and mint, or in a sofrito atop his yellowfin tuna tostones. Carrots are some of Patel’s favorite farm yields. At Orno, he uses them to make wood-fired heirloom carrots. He starts with freshly harvested carrots bathed in olive oil and a healthy dash of salt, and roasts it all in a wood-fired oven. When the carrots are softened, Patel adds a cilantro chutney, a cumin yogurt sauce, and crispy chickpea noodles. He brings it all together with chopped tomatoes and onions, tossing in the roasted carrots and topping it with the two sauces. He adds pomegranate seeds and herbs to finish it all off, resulting in a bold and bright plate that’s filled with homegrown vegetables. Patel relishes using ingredients he considers “underAPRIL 2022

utilized.” Take papaya, for example. At Ghee Indian Kitchen, Patel aims for diners to see the fruit’s savory side in his spicy papaya salad, comprising his homegrown papaya, cucumber, green mango, onion, tomato, peanuts, kashmiri chilis, and lime. “It is amazing,” he says. EARTH-FRIENDLY EATS Ingredients, menus, and flavor profiles aside, environmental sustainability has been meaningful to Patel since the early part of his career. “Sustainability has changed my life,” he says. “It is better for carbon emissions. You don’t have to ship all over the world, and at

the same time small farmers are helped. One farmer grew cucumbers just for me. Sustainability has such personal impact, and it supports small farmers with opportunities.” Patel admits that even with three successful restaurants, he’s always dreaming up his next concept—especially alongside partner Mohamed “Mo” Alkassar, a founding member of Alpareno Restaurant Group. But for now, he’s focused on nurturing the sustainability measures he’s worked so hard to put into place in his kitchens and at Rancho Patel. “Some people don’t do it right because it takes more work. I do it and love it,” he says. “Sustainability resulting in fine farm-to-table fare has become a lifestyle for me.” It’s a lifestyle that suits Patel perfectly. “I never intended to have a farm,” he admits. “But I take great pains with everything I grow. I control the quality and how the final product ends. It is so gratifying for me to see a seed grow and then to give our dining guests the best experience.” « APRIL 2022

n the outside, he’s the typical Miami Beach resident: a professional with a great tan and a muscled physique. But every summer, Ander Etxanobe travels to Spain—where he has become one of the premier American bull runners in Pamplona’s famed Running of the Bulls. In the process, he’s rediscovered his own cultural heritage. Etxanobe’s family’s Basque roots run deep in the Spanish soil. Decades ago, his parents’ families immigrated to the U.S., where they found work as shepherds. But eventually Etxanobe’s

I’ve always been stuck between two idenities. To Americans, I was this Basque guy. But when I got to Mañaria, they didn’t accept me either; they thought of me as an American.”

father decided to move the family back to the town of Mañaria in Basque Country. So at the age of 10, Etxanobe voyaged into a foreign world—a place where he knew little about the culture and less about the language. The local Basque school children bullied him; he tried to pick up the notoriously difficult language but struggled to master it. “I’ve always been stuck between two identities,” Etxanobe says. “To Americans, I was this Basque guy. But when I got to Mañaria, they didn’t accept me either; they thought of me as an American.” Eventually the family split. An international custody battle ensued, ending with Etxanobe returning to the U.S. with his mother, and his father remaining in Spain after losing his green card. “From the ages of 12 to 17, I never saw my dad,” Etxanobe says. “I had a chip on my shoulder and didn’t want to talk about it.” Over time, Etxanobe says he lost his sense of his cultural heritage. He went to school stateside, landed a finance job for a California-based firm, and bought a condo in Miami Beach. Minus a few trips to the motherland, Etxanobe says he left his Basque roots behind him. “It was kind of like The Lion King,” he says. “Simba’s dad dies, and he goes off and lives his hakuna matata.” Still, something was missing. “I was out here on the beach in Miami relaxing. But that calling to go back started rolling over the waves,” Etxanobe says. “It was telling me to come back, to my rightful home you know, the kingdom of Navarra, Pamplona.” Being Basque When Etxanobe thinks about what it means to be Basque, he thinks of his grandfather, Martin Iturri, who grew up in the town of Urdaniz, just north of Pamplona. “My grandfather’s family was so poor that if they by chance were able to buy a few slices of jamón, my great-grandfather would tell the children, ‘You all eat the red part, the meat, and leave me just the fat.’” Iturri was poor but talented. “He was mesmerized by the accordion, but his family couldn’t afford to buy him one,” Etxanobe says. Family legend has it that Iturri watched local accordion players and took note of their techniques. When he was 17, a neighbor loaned him an accordion which he played so beautifully that a bar owner offered to pay him $100 to perform at the town’s annual fiesta. Iturri agreed, running home to tell his family; the money would help put food on the table. Iturri played for three days. People packed the bar, dancing and buying food and drinks. Yet, when the fiesta ended, the bar owner refused to pay him. “[He] said that the music was for the whole town and the town should have to pay for it,” Etxanobe says. Iturri returned home to break the news to his family: the $100 and the full slices of jamón he dreamed of giving his father were not coming. APRIL 2022

Homeward Bound In 2017, Etxanobe began to feel the pull of his grandfather’s family roots. He returned to Spain for the Fiesta de San Fermín—more famously known as Pamplona’s Running of the Bulls. As he posted pictures to his social media accounts, Etxanobe’s cousin, Javier Iturri, saw the posts and reached out to meet up with him. “This time around in Spain was different,” Etxanobe says. “I felt more welcome, almost like I was home.” As any experienced bull runner will tell you, the art of the run is to join the herd harmoniously and guide the bulls up the streets to the arena. The very best runners do this by running directly in front of the horns—in the very face of the bull. When a bull sees a runner in front of it, one of two things can happen: The bull will either reject the runner, or it will accept the runner as a sort of guide. When a bull accepts a runner, it will lock onto that individual, following him or her up the street. Legendary runners—like Aitor Aristregui and David Rodriguez—can lead a bull from a position just a few inches in front of its horns for 400 yards (nearly half the course). But bulls don’t always choose to be guided. Sometimes a bull falls away from the pack, becoming what’s known as a suelto (or “lone one”). It’s a dangerous situation, because lone bulls become combative. That’s when great runners are needed to step in and use their skills to attract a suelto up the street. When Etxanobe arrived in the Santo Domingo section of the run on the first day of the Fiesta de San Fermín, he sang the prayer to the patron saint that all bull runners sing and clutched a local newspaper—a tool that participants shake in reverence at the figure of San Fermín in his niche on the wall opposite the bull corral. But when the rocket went off to signify the release of the bulls, Etxanobe raised his newspaper and looked to the sky thinking of his grandfather and his Basque heritage. “It was like my newspaper was this torch they passed to me,” he says. “My family lit this torch for me, they gave me this gift of unconditional love, of work ethic, of passion, of sacrifice.” A nearby runner tapped Etxanobe on the shoulder and pointed as the herd of bulls galloped directly toward them. Etxanobe flattened himself against a wall. Soon, he spotted a black suelto galloping through the streets with a second suelto following several yards behind. Etxanobe pulled himself off the wall and ran between the two bulls. “I didn’t even think about it,” he recalls. “I waved my paper with all my might, then he was on me. I felt him focused on me. He was so close. I dove to the side and his horn reached for me.” Then the bulls 74

were gone, heading down the street toward the arena. Afterward, Etxanobe met up with his cousin and extended family. When he recounted the story of his run, the consensus was clear: pictures of such a run would surely end up in the local newspapers. Etxanobe searched the internet on his cell phone, and tears filled his eyes as a photo of him running on the horns of the suelto appeared on the screen. He passed the phone around to family members who just weeks ago had seemed so distant. Now they circled around him, leaning in to see the photo of their kinsman having the run of a lifetime— and exemplifying the heart of Basque culture. “When I first came to Spain, I felt so rejected by my Basque heritage,” Etxanobe says. “But in that moment, I felt like I was finally home. In the years since Etxanobe’s first run on the horns, he has gone to the other great bull runs in Spain. In San Sebastian de los Reyes outside of Madrid, Etxanobe ran shoulder-to-shoulder with Aristregui. Later, he voyaged to Ciudad Rodrigo just before COVID-19 hit. There, Etxanobe led sueltos up the streets of the city over several days. Eventually, he

Together, they led a suelto up the street. When they couldn’t get the animal to budge, Rodriguez asked Etxanobe if he could use his newspaper. Rodriguez tossed it toward the bull. It landed at his feet igniting a charge that ended with Rodriguez and Etxanobe luring the suelto into the arena—and Etxanobe earning his crown among the next generation of great bull runners. Family Bonds For Etxanobe, the success of that moment was sweet. But sometimes, success only means something when you see it reflected in the lives of those you love. In the days following his accordion playing during the town fiesta so many years ago, Etxanobe’s grandfather sat in the center of town—hungry and feeling sorry for himself—when the mayor approached him. “Are you the one who was playing the accordion so beautifully during our fiesta?” the mayor asked. “I heard the bar owner didn’t pay you.” He handed Iturri $100, and asked him to play during the town’s next fiesta. Iturri knew just what to do with the money: He went to the butcher and purchased full slices of jamón for this father. Back in Miami Beach, Etxanobe knows that same sense of family pride. He’s still working in finance, still traveling to Spain as a top-tier bull runner. But he has also sponsored his father to get his green card back. Define the Wine

We debunk some of the most common labels on bottles today By Mark Spivak

For those of us focused on healthy living and social responsibility, the content of what we consume is becoming more and more important. Grape growing and wine production— two areas traditionally not subjected to much scrutiny—are suddenly being examined for practices that are beneficial to both individuals and the community. Terms such as organic, biodynamic, sustainable, and natural are appearing on wine labels, without any explanation of what they mean. Here, we provide a brief guide. ORGANIC: To be certified as organic by either the USDA or CCOF (California Certified Organic Farmers), producers must pass a lengthy examination of both their vineyard and cellar practices. If a wine is labeled as certified organic, it has been grown without synthetic pesticides, herbicides, or fertilizers and it does not contain any added sulfites. However, a label may proclaim that the grapes were “organically grown,” which allows the use of certain processing additives, or it may list a percentage of organically grown grapes. Does an organic wine taste better? Not necessarily. Consumers should also be aware that the low sulfite content of these wines translates to a shorter shelf life, so plan on drinking them sooner rather than later. BIODYNAMIC: A wine labeled as biodynamic has been certified by either Demeter or Biodyvin; the grapes are grown without synthetic fertilizers, pesticides, or chemicals, and they are free of GMOs and sulfites during the winemaking process. The biodynamic movement 94

strives to regard the entire vineyard as a single organism and requires that vintners time their planting schedules with lunar cycles to ensure the best agricultural health. A wine can also be labeled as “made with biodynamic grapes,” meaning that the grapes were grown according to Demeter standards, but the cellar practices have not been verified. Generally, you can assume that a biodynamic wine is made with the lowest possible intervention standards. Like organic wine, though, the low sulfite levels may affect the shelf life. SUSTAINABLE: Here’s where it gets complicated. In general, a sustainable wine may be grown with vineyard biodiversity, water

conservation, and renewable energy such as solar—or it may not. It’s important to remember that a certified sustainable wine isn’t necessarily made with organic grapes or without additives. Of the many third-party certifications, these are the major ones: ● Certified Sustainable, administered by the California Sustainable Winegrowing Alliance, uses a complicated set of metrics including greenhouse gas emissions and water, energy, and nitrogen use. ● SIP (Sustainability in Practice) has a rigorous set of practices including canopy management, cultivation of cover crops, energyefficient equipment, packaging reuse to prevent waste, and employee safety. ● LIVE (Low Input Viticulture and Enology), based in the Pacific Northwest, enforces a strict checklist of requirements for both the vineyard and the cellar. ● Napa Green certifies both vineyards and wineries in a soil-to-bottle stewardship program for Napa Valley wine estates. ● Salmon-Safe promotes farming practices in California and the Pacific Northwest that protect water quality and safeguard the marine habitat.

NATURAL: This is the murkiest category of all since there is no certifying body and no official definition of what the term means. In general, it refers to a movement among winegrowers to revert to simpler, more traditional methods, which may or may not include growing grapes without pesticides and chemical fertilizers and making wine without additives. You can assume that your natural wine is likely produced by a small grower from organically or sustainably grown grapes, fermented with no added yeast, and made with little or no added sulfites. «
