Mindful LIVING
CAPEHART
Even for those who have long prioritized healthy living, the last year has invited a deeper dive into the more complex folds of well-being. Is it enough to go for a daily run, maintain a sensible diet, and make the occasional attempt to meditate? Or is a lifestyle reset warranted? As so many of us rethink what it means to live well and with purpose, it helps to be inspired by the people who have figured it out. Among those are Jennifer and Omer Horev, owners of the Pura Vida healthconscious cafés that have been sprouting across South Florida. The Horevs eat healthfully around the clock but believe strongly that a fortifying breakfast with colorful, nutrient-dense fare is the key to wellness and energy. Jennifer and Omer invited us into their Miami Beach home to illustrate this concept. Jennifer set a welcoming table with spring florals and a fresh green and white motif, while Omer prepared the delicacies their cafés have come to be known for. Some of my favorites: avocado smash toast, chia seed parfaits with granola, and a veggie-packed, kaleidoscopic Israeli salad. See the full spread and read about the Horevs’ philosophy on food and wellness in “Breakfast Bash” on page 46. In this issue, we also contemplate the slow movement and the merits of simplifying and living a truly mindful and sustainable life. From food to fashion and from beauty to home organization, we offer powerful tools to bring more Zen into your days in “Life in the Slow Lane” (page 54). Living well can also mean dressing up and dining out, particularly in a year when restaurants have suffered. In “Feast Your Eyes” (page 60), our model, South Florida influencer Bettina Anderson, visits four restaurants for a stylish takeover. Who wouldn’t want to wear designer dresses while ladling sauce on a pizza or crooning with the piano man? Fashion has never been so much fun. I hope the content in our pages inspires you to take the next step in your own wellness journey. Cheers to your health!

WELLNESS
Melt away stress with a trip to The Now Massage, a new wellness destination in Fort Lauderdale offering spa services without the time commitment and expense of a full-service spot. “The Now reinvents the way people think about and experience a massage by creating a luxury service in a convenient, affordable, and accessible manner,” explains Gara Post, The Now’s co-founder and chief creative officer. Since debuting in Los Angeles, The Now Massage has become known for its natural aesthetic, showcased in design elements like a carefully placed cactus or plant gallery, high ceilings that echo the sound of ocean waves, and custom crystal grid installations, which are intended to draw good energy into the space and invite patrons to set an intention for their time at The Now. The Now offers three table massages: its signature Swedish massage, also dubbed The Now, as well as The Stretch, which aims to stimulate the lymphatic and circulatory systems, and The Healer, which is energybalancing. Spa-goers can take treatments a step further with customized enhancements such as Fresh Eyes, a soothing hydrogel eye mask, and gua sha, a traditional Chinese medicine technique that targets tense areas. As of press time, The Now is set to open in June. Turn the page for more indulgent treatments to try this spring. (the nowmassage.com)

OCEAN ENCHANTMENT ORANGE BLOSSOM FACIAL A beauty-must this spring: booking the Ocean Enchantment ritual with your choice of a Luminescent Marine (antiaging) or Orange Blossom (brightening) Facial. I opted for the latter at The Conrad Fort Lauderdale’s Conrad Spa, known for its use of Repêchage products derived from seaweed sustainably grown and harvested from the Brittany region of France and off the coast of Maine. After I cozied into the heated massage bed, my aesthetician began with a soothing neck and shoulder massage before double-cleansing my skin, applying a glycolic peel, and spritzing my face with a brightening toner. She then applied a skin-correcting serum to

my face and neck, followed by an eye-contour cream to promote lymphatic drainage. While the ingredients soaked in, I received a firming sugar and seaweed eye treatment, which left a cooling sensation, and then it was time for the Repêchage Biolight Brightening Mask and Biolight Brightening Gel. While the mask worked its magic, my aesthetician exfoliated the dry skin on my legs and feet with a mineral salt and seaweed scrub then cocooned them in warm peppermint-infused towels. After removing the mask and unwrapping my legs and feet, she wiped away the excess scrub and ended the treatment with a relaxing foot and leg massage—total bliss. (conradfortlauderdale.com)

GEMSTONE ACUPUNCTURE FACIAL
Whether you’ve been fawning over Dr. Elizabeth Trattner’s gemstone acupuncture facial on social media or have a growing interest in traditional Chinese medicine, book an appointment with her to reap major benefits. Nearly two decades ago, out of her interest in alternative healing methods, Dr. T pioneered this treatment, which features facial rejuvenation (also known as cosmetic acupuncture) and helps treat acne, rosacea, wrinkles, and more. I met up with Dr. T at her new nontoxic North Miami Beach office to try this facial for myself. As I lay on a heated infrared gemstone bed, Dr. T began by covering my body in a crystal grid—meant to get beauty radiating from the inside out—and then it was time to start cupping, which circulates blood and helps stimulate lymphatic drainage.
Next came gua sha, which has recently become a much talkedabout beauty trend and comes from the Chinese word for scraping. A smooth tool, typically made of quartz or jade, essentially scrapes against the skin to improve circulation (don’t worry, it doesn’t hurt!). We ended with the 5,000-year-old practice of acupuncture. After 20 minutes of Zen, Dr. T added her final touch of Swarovski “ear seeds” onto different points of my inner ear. I left glowing and with a deepened knowledge of holistic skin care. STACY RITTER CELEBRATES FIVE YEARS IN A ROLE THAT SHEDS LIGHT ON THE CITY SHE LOVES
FLI: How has Fort Lauderdale changed? Ritter: It was not a diverse destination at all. … [There] really has been a change in the flavor of Broward County. I don’t just mean that from a culinary perspective; the people have made it what it is. That’s what we think makes us special from any other beach community: We have everyone under the sun. If you want to dip your toe in something you might not have experienced before and open your mind, this is where you want to be.
What are some GFLCVB initiatives you’re proud of? [We] have a great campaign called Celebrate You [that] comes out of our LGBT+ department. We were the first CVB to have a dedicated LGBT+ department, which we’re proud of because we recognize that as the community was changing, it was becoming … not just gay-friendly but gay-welcoming and gay-inclusive.
NICK GARCIA
When Stacy Ritter, 60, first moved to Fort Lauderdale in 1974, she says she encountered a city much different from the one we know and love today. She recalls a “sleepy little beach town” with small motels and hotels—and limited dining options. “You could get a club sandwich basically anywhere, but not much else,” she says with a laugh. Now, as president and CEO of the Greater Fort Lauderdale Convention & Visitors Bureau (GFLCVB), Ritter has not only witnessed Fort Lauderdale’s evolution, she’s helped it become a vibrant city with international appeal. Ritter previously led a successful political career—including a stint as mayor of Broward County—before joining the GFLCVB in 2016. In her current role, she enjoys traveling the world to promote the place she’s called home for 47 years. What was once a “predominantly white and very male-dominated” town is now a “diverse and inclusive destination where 180 languages are spoken,” she says. She champions inclusivity via marketing campaigns and hospitality initiatives and led the CVB’s rebrand (officially launching this month), which departs from the “Hello Sunny” tagline—which Ritter considers outdated—in favor of “Everyone Under the Sun.” “We’re not a vanilla destination,” she says. “We are a destination that weaves an incredible tapestry of multicultural fabric, and we want to celebrate that, embrace it, and show the world.” Below, the leader, wife, and mother of two reflects on her life in Laudy. (sunny.org) What do you enjoy doing in your free time? My husband and I have been consistently eating out during the pandemic. It’s part of our obligation as residents of this city to keep businesses afloat as best as we can [with] whatever small contribution we can make. I’m a big fan of the lobster tacos at Quarterdeck on Las Olas, and I love Casablanca Café on the beach. I’m also a big beachgoer. Give me a blanket and a book and I can sit out there for hours.

The dirt on pesticides and the war of organic versus conventional By Ivey Leidy Photography by Kent Anderson Research has long shown that pesticide residue can contribute to health issues. These chemicals act as endocrine disruptors, meaning that when they enter the body they can be mistaken as hormones, mimicking and disrupting the endocrine system. The endocrine system is an intricate network of glands and organs that produce hormones that carry out the majority of our
24
bodily functions. The hormones act as messengers to our brains and the rest of our organs and evoke corresponding responses. The hypothalamus gland, for example, controls water balance, sleep, temperature, appetite, and blood pressure. The thyroid is responsible for our metabolism, while the pancreas takes care of digestion and produces insulin to regulate blood sugar. The endocrine system also includes our reproductive organs, as well as our pituitary, pineal, thymus, and adrenal glands. When faced with disruptors, the signals from our endocrine system can become mixed, affecting everything from metabolism to reproductive health. With chronic exposure, they may cause serious health issues. Pesticides collect over time and are stored in the colon. That one piece of conventional fruit is not the problem, but the buildup is. The best way to limit your exposure to pesticides is to choose organic. Almost 70 percent of produce in the U.S. contains pesticides. Luckily, the Environmental Working Group (EWG) releases two lists every year: the Dirty Dozen and the Clean 15. The Dirty Dozen covers the conventional produce that carries the most pesticide residue. No. 1 on the list is strawberries. Studies show that one strawberry can have residue from 20 different pesticides. The Clean 15 outlines the conventional produce that is least likely to contain pesticides.
The benefits of eating organic don’t end at reduced pesticide exposure. Organic produce has 20 percent more antioxidants than conventional and no GMOs (genetically modified organisms), making them easier to digest and their nutrients easier to absorb. Organic farming also produces less greenhouse gas emissions and better soil quality as it doesn’t result in pollution from run-off pesticides. Eating in season can also help you get the most out of your produce. Because it’s being picked at peak ripeness, in-season produce has better flavor. These items are less expensive, given their abundance. They’re also significantly more nutrient dense as they aren’t being transported for weeks. Remember: The longer a fruit or vegetable sits on a truck or shelf, the more nutrient loss. We, as humans, are designed to eat seasonally. In the fall and winter, fruits and vegetables rich in vitamin C grow to strengthen our immunity. In the spring and summer, moisture-packed fruits and vegetables grow to ensure we are hydrated. Read on for more helpful produce insight by the bite, as well as my recipe for a beautiful seasonal vegetable salad.

SPRING VEGETABLE SALAD THIS IN-SEASON, ORGANIC VEGETABLE SALAD MAXIMIZES NUTRIENTS AND ENHANCES HYDRATION INGREDIENTS 3 large handfuls of baby lettuces (such as, arugula or mixed greens) 1 large zucchini 2 radishes 1 bunch of asparagus, roughly chopped
1 tbsp. olive oil 2 tbsp. water 1/4 cup fresh mint Zest of 1/2 lemon 1/4 cup walnuts
LEMON VINAIGRETTE INGREDIENTS 2 tbsp. lemon juice (1/2 lemon) 1 tbsp. Dijon mustard
1 tsp. raw honey 1/2 shallot, thinly sliced and minced (optional) 1/4 cup olive oil Salt and pepper to taste
Whisk together all ingredients, adding in olive oil last and gradually to emulsify.
SHOPPING TIPS 1. Organic produce is labeled with a five-digit code beginning with nine. 2. Conventional produce is labeled with a four-digit code beginning with a three or four. 3. If the skin/husk is thick and tough like an avocado or a banana, it can be eaten conventionally, as the pesticide sprays are less likely to penetrate that thick skin.

In a lidded sauté pan, add the asparagus, olive oil, and water. Cook on medium for 5 minutes with lid on or until tender but still vibrant and green. Using a vegetable peeler, peel zucchini into ribbons. Using a mandolin or sharp knife, thinly slice the radishes. Arrange salad beginning with baby greens. Add cooked asparagus to the center. Arrange zucchini ribbons and radishes around the asparagus. Garnish with mint leaves, lemon zest. and walnuts. Drizzle with lemon vinaigrette.

Under the HAWAIIAN SUN
From the Big Island to Lanai, delight in Hawaii’s top island-chic accommodations and experiential adventures By Paul Rubio DISCOVER THE RENEWED MAUNA LANI, AUBERGE RESORTS COLLECTION Following a $200-million renovation and rebranding, the grand dame of the Big Island, Mauna Lani, re-emerges as the latest addition to

the Auberge Resorts Collection. Cast across 32 coastal acres in Kalahuipua'a, a sacred space of wide beaches, fishponds, and lush gardens once reserved for Hawaiian royalty, the reimagined resort exudes an understated contemporary
style that heightens the splendor of its historysteeped grounds and builds upon its former open-air design. The resort wows at first sight. A linear entrance framed by elaborate wood paneling and FORTLAUDERDALEILLUSTRATED.COM | MAY/JUNE 2021

whimsical sofa swings leads to a design-forward six-story atrium. At the base shines a single reflection pond, artistically embellished with palm trees, wood slats, and hand-carved outrigger canoes. Vegetation cloaks eco-chic nooks kitted out with sectionals and rockers, accented by floral fabrics and wall paintings. The organic aesthetic extends to the resort’s 333 guestrooms and suites, all of which are draped in earthy tones and textures to recall sweeping mountain or ocean vistas. Refreshed amenities at Mauna Lani also capitalize on Kalahuipua'a’s striking environs. A trio of swimming pools overlook either the Kohola Coast or the ancient saltwater fishponds. A full-service beach setup graces a sandy strip bordered by black lava formations. Facing the Pacific, HaLani restaurant serves locally inspired
breakfasts; think Kona coffee and ube (purple yam) pancakes with griddled pineapple and roasted coconut. Neighboring Ha Bar and Grill and the Surf Shack are two barefoot spots for tossing back a few Lani Tais, the resort’s spin on the Mai Tai. Come late afternoon, oceanfront CanoeHouse offers the island’s most memorable dining experience: a front-row seat to the Big Island’s pastel sunsets paired with elevated Hawaiian cuisine. Noted restaurateur power couple Matt and Yuka Raso’s locavore concept consummates a foodie fantasy. Diners can expect island produce and ocean-to-table assets over dishes like Kahuku corn “ribs,” grilled Big Island hearts of palm, and whole Keahole lobster basted with miso butter. When staying at the Mauna Lani, take advantage of fresh programming spotlighting local culture, folklore, and pride. On an early morning paddle, witness the sun’s ascent over Mauna Kea volcano while learning about Polynesian voyaging and ancestral ties to the land and sea. Go back in time to Kalahuipua'a circa 250 BC with in-house historian Daniel Akaka. At the spa, relax during massage treatments anchored by traditional rhythmic motions and using island ingredients like sandalwood, turmeric, and honey. With its thoughtful redesign and reconceptualization, Mauna Lani advances to a new era of modern luxury while carefully honoring Hawaii’s rich culture and history. Hawaiian Islands, this 4,028-square-mile ecological marvel boasts dramatic landscapes spanning disparate climate zones—from wet tropical and dry temperate, to arid desert and polar tundra—and constitutes nearly 63 percent of the state’s landmass. Shaped from five shield volcanoes of different ages, the Big Island’s topography shifts from steam plumes and molten lava to fertile mountains and valleys underscored by towering waterfalls. It’s a mind-blowing natural phenomenon that’s impossible to grasp—unless hovering above it. On the Big Island Spectacular with Waterfall Landing tour from Blue Hawaiian Helicopters, soar to sights inaccessible by road and zoom out on the island’s volcanic fury and mist-shrouded mountain magic. Beyond the nonstop drone-like vantages, look forward to a descent into the fiery activity of the Kilauea volcano. Then, brace for an epic landing at the base of a waterfall hidden among the Kohala Mountains, before rising above its 1,000-foot counterparts that cascade into the

Waimanu Valley. Though shorter island tours are available from Blue Hawaiian Helicopters, spring for the Spectacular for a true once-in-alifetime experience. (bluehawaiian.com) GO OFF THE GRID AT FOUR SEASONS RESORT LANAI With a resident population around 3,100 and an area of 140.5 square miles, Lanai is Hawaii’s smallest inhabited island—and about as farflung as it gets within the United States. In this remote land, a sole coastal property houses a self-contained world of luxury and serves as an access point to Lanai’s culture and geography. Located along the island’s southernmost reaches near the white sand beach of Hulopo'e Bay, the open-air Four Seasons Resort Lanai features everything one could desire from an upscale tropical vacation. A total of 213 guest rooms—brimming with personality thanks to designer Todd-Avery Lenahan of TAL Studio—are spread throughout heavily landscaped acreage in multiple low-rise structures.
The heart of the resort is a lagoon-style pool overlooking Pacific Ocean blues. Oversized daybeds and cabana cocoons are tiered along the hillside, maximizing privacy. Close by is the Retreat, an adults-only pool and lounge encircled by lava-rock grottos and a waterfall. Big-deal names headline the restaurant offerings, including farm-to-table Malibu Farm (which services poolside food and beverage) and iconic Japanese sensation Nobu. There’s also the fabulous Hawanawana Spa and daily complimentary wellness programs, including restorative morning yoga on the beach. This excess may not sound very off the grid, but that’s where the activities center comes in. Explore Lanai’s interior by horseback or venture through the forest on a guided off-road Polaris tour. Rent a house Jeep and choose your own adventure across endless dirt roads and windswept rocky terrain, likely without encountering another human the entire time; along the journey, discover petroglyphs, storied places, and secluded beaches. Closer to the resort, hike the short cliffside path to

STOP OVER IN RETRO-CHIC WAIKIKI, HONOLULU The Hawaiian Islands are well connected with multiple daily flights, but interisland COVID testing requirements may prescribe an overnight in Honolulu, Oahu, to await results from the state’s main rapid-testing facility (check hawaii tourismauthority.org for the latest information). Even if a layover isn’t mandated, spending a few nights in the Hawaiian capital is worth it to feel the city’s pulse and experience its legendary beach and surf cultures. Stay at Waikiki’s
Kaimana Beach Hotel, a mid-century icon on Honolulu’s most prized stretch of beach that recently removed the bandages from a major facelift courtesy of Hawaii-based interior design firm Henderson Design Group. Embrace its modern boho vibe, most palpable in the colorful lobby festooned with beach-inspired art and hanging surfboards. To go all out, book one of the five top-floor suites to enjoy breathtaking panoramas from an outdoor balcony and dine beachfront under the stars at Hau Tree, a shared-plates concept by James Beard Award–nominated chef Chris Kajioka. It’s currently the hottest table in Honolulu. (kaimana.com) «

Miami Beach BECKONS By Abigail Duffy If sumptuous luxury is the heart of the Faena Hotel Miami Beach, then art is its soul. Faena’s reverence for all things artistic is evident in its entry lobby—affectionately dubbed The Cathedral—which is decked in gold-leaf columns and lush murals by Argentine artist Juan Gatti. Glass doors tease the sight of the hotel’s most coveted art piece: Damien Hirst’s Gone but Not Forgotten, a nearly 10-foot-tall woolly mammoth skeleton gilded in 24-karat gold and encased in an enormous glass vitrine. The installation represents Faena’s penchant for showstoppers and its larger-than-life aura. This sensibility continues in the chandelier-topped Faena Theater, currently home to Tryst: A Lovers’ Rendezvous. This original show marks the return of live performances to the opulent space reminiscent of European opera houses with an edge. The production fuses burlesque, cirque nouveau, and sultry music for a thrilling and cheeky evening of aerial art, magnificent costumes, NIK KOENIG

group dance, and a little flirtation courtesy of headlining emcee Kat Cunning. From the tipples enjoyed by candlelight to the theater’s sexy red glow and the can’t-take-your-eyesoff-it grace of the ensemble, Tryst is a recipe for a spellbinding evening. Take it all in on Thursday, Friday, or Saturday nights beginning at 9 p.m., through the summer. Either before or after the show, wander over for dinner reservations at one of the hotel’s epicurean darlings: Los Fuegos by legendary Argentine grillmaster Francis Mallmann, which pays elegant homage to the traditional asado, or Pao by Paul Qui, which specializes in bold fusions of international cuisines. End the night with a creative cocktail in The Living Room. The spirit of indulgence also permeates Faena’s glamorous suites and rooms. Here, the hotel’s signature red and white motif appears in the form of luxe linens and colorful touchpoints, anchored by gold accents, handcrafted teak furnishings, and Carrara marble. In the morning, settle into a beachside lounger beneath a striped umbrella to savor daydreams of the evening. (faena.com; faenatheater.com) «

Instant KARMA
With its stunning design—and nontrivial $60,000 price cut—Karma Automotive’s new GS-6 is HARD TO RESIST By Howard Walker Forget that this curvy, sinewy-bodied Karma is a plug-in hybrid. Or that there’s a fully electric version around the corner. Or that its dashboard can be made from timber salvaged from California wildfires. No, what will have your head rotating like the gal in The Exorcist is the car’s breathtaking shape. The most beautiful vehicle in the world? This is surely one of them. Maybe it’s all those rollercoaster swoops and sweeps over the giant 22-inch wheels. Or that raked-back windshield or ski-slope-like rear screen. Or the way the body looks like it’s been stretched like a dollop of Play-Doh. Remember, this is a car that’s almost as long as a BMW 7 Series but as low as a Porsche 911. Gaze at it in profile and it resembles a hip-high Italian supercar—with four doors and a trunk. But first, a little history lesson. Back in 2011, the LA-based Danish car-designer-turned-entrepreneur Henrik Fisker began building his
Fisker Karma plug-in hybrid. Before the company went belly-up in 2013, he’d made around 2,450 cars. Enter the Chinese Wanxiang Group, which snapped up the assets, kept the gorgeous design, and renamed the car the Karma Revero. The corporation started producing the modified version at a new factory in Moreno Valley, California, in 2016. Alas, a crazy-ambitious $130,000plus price tag, a punishing safety recall, and constant funding challenges meant the car never really gained traction—or sales. Fast-forward to 2021 and all has changed. After a $100 million cash infusion last summer, a solid business plan, and a ramp-up in dealers—we now have enthusiastic Karma retailers in Boca Raton, Fort Lauderdale, Miami Beach, and Naples—Karma is back. Arguably the biggest news is the smarter pricing. The newly launched Karma GS-6 plug-in hybrid has a starting sticker of $85,700. That’s down

The Right FORMULA Formula Boats’ SENSATIONAL new 53-foot 500 SSC family cruiser debuts Mercury’s 600-hp V-12 Verado outboard By Howard Walker The ghost of Don Aronow must be smiling at the awe-inspiring sight of Formula Boats’ newest flagship, the 53-foot 500 Super Sport Crossover, spearing across the water at an insane 60-plus mph. Prior to creating such iconic brands as Donzi, Cigarette, and Magnum out of his gritty Thunderboat Row factory on 188th Street in North Miami, Aronow—the undisputed king of go-fast boats—founded Formula Marine in 1962. He sold the company two years later, but not before his groundbreaking 23-foot needle-nosed Formula 233 had dominated the Florida powerboat circuit, winning the 42
grueling Miami-Nassau and Miami-Bimini offshore races. Aronow lived and breathed high horsepower, so the mere sight of this new $2.8 million Formula 500 SSC would have had him salivating. That’s because hanging off the back of this sleek, stylish, XXL-sized bowrider is a quartet of 600-hp Mercury Verado V-12s. The 500 SSC has the distinction of being one of the first boats to not only be designed around these truly revolutionary outboards, but to offer them at all. These V-12s boast two-speed automatic transmission and a steerable gearcase—the en-
gine itself doesn’t turn, just the lower section. Also impressive is that the engine is made to run 200 hours between oil changes and routine servicing, as well as a staggering 1,000 hours (or five years, whichever comes first) before more in-depth maintenance is required. No wonder they each come with an eye-watering $77,000 price tag: They’re a head-turning addition to a boat that already turns heads. “Super Sport Crossover” is a fitting description for this multitasking powerboat. It’s part

dayboat, part luxurious weekender, part grininducing thrill ride. Stretching 53 feet from bow to stern and with a 14-foot-6-inch beam, the SSC offers ample space for entertaining. Formula calls the concept SmartZone; here it totals 40 linear feet of cockpit on one continuous level. The area under that vast hardtop is especially great. To open it, either power back the glass roof or lower the vertical glass sections between the cabin and the rear seating/eating area. And did I mention that the push of a button levitates a 65-inch flat-screen TV out of a cabinet? It’s ideal for watching the game or an after-dinner movie at anchor. While that huge rear swim platform (which totals 71 square feet) kind of looks like an afterthought, it does give easy access to and from the water. It also provides a place to stow a paddleboard or two—or a spot to simply stand and gaze at those mighty Verado V-12s. Stepping through the 500’s slide-open windshield leads you into the party-perfect bow area. There’s room for a crowd of 10 on

wraparound seats. You can also drop the table to create a stretch-out tanning lounge. If you plan to spend the night, the cabin feels more like a posh penthouse. It’s all sexy Corian surfaces, gray hardwood cabinets, and creamy Ultraleather sofas and wall coverings. There’s a spacious aft stateroom with a fixed queen-size bed and large hull windows, plus a 32-inch LED TV and soundbar. Close by is the oversized head with a separate stand-up shower. And speaking of “stand-up,” the 500’s cabin boasts an impressive 6 feet, 7 inches of headroom. Other cool features include the
U-shaped sofa up front that converts from a dining area to a double bed, a built-in Dyson vacuum cleaner system, 16,000 BTUs of air conditioning, and multicolored LED lighting. Regardless of aesthetics, the 500 SSC is all about performance. The hull has Formula’s patented FasTech multistep design that helps lift the boat onto the plane with ease, slice through gnarly whitecaps, and turn on a dime. And the 650-gallon fuel tanks should get you to the Bahamas and back with gas to spare. That would make Don Aronow very happy indeed. «

enowned chef and culinary explorer Anthony Bourdain once asked a simple question: “What nicer thing can you do for somebody than make them breakfast?” For Jennifer and Omer Horev, a healthy breakfast has become a way of life, a business venture, and an opportunity to entertain friends and family. “Breakfast for us is the most important meal of the day,” says Jennifer, who serves as chief brand officer of Pura Vida, the couple’s health-conscious cafés with locations across South Florida. “We sit down with no electronics and enjoy family time in our home.”

IT IS MOST REWARDING TO GET TOGETHER WITH FAMILY AND FRIENDS AND START THE DAY WITH A HEALTHY MEAL.” —Omer Horev
Omer and Jennifer worked together to organize the festivities, with Omer leading the kitchen and Jennifer working with Liz Ryan of Orange & Rose Events on the design. The meal began with passed hors d’oeuvres, including chia seed parfaits with granola (opposite page), and ended with croissants in flavors such as goat cheese, Nutella, and pistachio hazelnut.
046_PuraVida_0521.indd 49
Omer, Pura Vida’s chief executive officer, says that starting with healthy, casual food is at the center of everything—in his restaurants and his home. “It is most rewarding to get together with family and friends and start the day with a healthy meal,” he says. “That is very important to me.” Both Omer and Jennifer grew up in homes filled with food and entertaining. Born and raised in Israel, Omer recalls that, thanks to his mom and grandmother, cooking was everything. “We grew up in the beach town of Netanya near Tel Aviv,” says Omer. “For Friday night Shabbat, we had an open-door policy for neighbors, friends, and my grandparents. So food and hospitality are a natural for me.” Jennifer was born in Chicago (her grandparents owned a restaurant in Skokie) and raised mostly in Weston, Florida.
She learned about hospitality from her mother. “My mom taught me how to create comfortable spaces with a feminine touch and insisted I learn to put things back where they belong,” she says. But food and hospitality wasn’t the first career path that either Omer or Jennifer took. Instead, the Miami real estate market beckoned them. Good thing, too: The pair met when they were realtors working opposite ends of a transaction. Jennifer brought the buyer; Omer was representing the seller. “I believe Omer got the best deal of his life that day,” quips Jennifer. With the sale complete, Jennifer and Omer soon became a couple. But they’d had it with real estate and wanted a new adventure. So they pivoted, pursuing a healthy dining concept Omer had been conceptualizing. “I was looking for a great healthy breakfast place in Miami for myself and could not find one, so I thought about creating my own,” he says. “With the natural colors and vegetables that I loved in Israel, the idea of locally sourced, organic foods in a wellness hub concept was a no-brainer for me.” Omer started Pura Vida Restaurants—serving healthy breakfast options all day—in 2014; Jennifer joined the following year. The first location opened on Washington Avenue in South Beach, followed by outposts at the University of Miami in Coral Gables, Edgewater, the Miami Design FORTLAUDERDALEILLUSTRATED.COM | MAY/JUNE 2021

District, West Avenue in South Beach, and most recently Rosemary Square in West Palm Beach (with new spots in Aventura and Fort Lauderdale coming soon). So when the couple recently invited a small group of friends to their waterfront home for a party, they decided to serve the most important meal of the day: breakfast. While Omer handled the bar, moved the furniture, selected the music, and took care of the dishes, Jen designed the decor, selected the flowers, and whipped up the eggs. Their home is airy and open, an indoor-outdoor masterpiece with whitewashed oak floors, lots of stone, plenty of natural light, and a backyard pool and patio area that overlooks the Intracoastal Waterway. “When we bought this house, our thoughts were about entertaining friends and family here,” says Jennifer. This includes regular visits from Omer’s two children, Emma, 9, and Adam, 7, from a previous marriage. Jennifer and Omer

Guests soon moved on to the pool area, where large black lanterns and vignettes of cool Restoration Hardware lounges created a chic setting. anchor perch was set for eight. The decor pulled the inside neutrals out with pops of color from Japanese blue tweedia, Italian ranunculus, dahlias, tulips, sweet peas, and blackberries. “I picked flowers from Anthology Floristry that speak to spring for the table’s centerpieces,” says designer Liz Ryan of Orange & Rose Events. “Breakfast should always feel bright and fresh.” On the tabletop, pops of green came from the linens by Freshly Set, with natural flatware from Pialisa, dinnerware from A Different Look, patterned green tumblers from Tavola Tabletop, and menu cards by Callie Buck. “To tie everything together, we pulled elements from the table linens onto the menu cards,” says Ryan. The menu of fresh, clean daybreak delights included avocado smash on toasted multigrain sourdough atop a wood board; smoked salmon, soft-boiled eggs, feta cheese, and tomatoes presented on a white ceramic platter; bagels and sliced sourdough in a black wire basket with spreads of

cream cheese and avocado smash; Jennifer’s herb salad, a blend of arugula, walnuts, dried cranberries, scallions, and cilantro with a honey lemon dressing; and an Israeli salad made of diced red onion, cherry tomatoes, Persian cucumbers, cilantro, and green pepper tossed in olive oil and lemon. What’s better than a breakfast party? A breakfast followed by desserts. Devoured by all, the sweet and savory offerings included goat cheese, Nutella, and pistachio hazelnut croissants from Pura Vida served on a threetiered gold stand, as well as a white cake with florals from Earth & Sugar displayed on a marble base. As the breakfast came to a close and Jennifer and Omer’s sated guests said their farewells, Scott Harris, a food entrepreneur and founder of Deliver Lean, summed the event up beautifully. “Omer and Jen are generous hosts who know how to take care of family and friends,” he says. “Real soulmates who work and share a life together, they are a very special couple.” « FORTLAUDERDALEILLUSTRATED.COM | MAY/JUNE 2021

Life in the
SLOW LANE
From our health to our headspace to our homes, the COVID-19 pandemic has changed the way we live. While some of us may look forward to revving the engines on our lives back to full speed, others are seeing the benefits of an unhurried pace. Whether you want to slow down, pare down, or look inward, we’ve got you covered in our guide to going slow.

Places to Minimize
Pare Down and Style Up
Minimalism:
Want to minimize and organize but need a starting point (and some inspiration)? Belock suggests starting with one or more of these clutter-collecting spaces.
2
The CLOSET Your closet should be organized like your favorite boutique, so you can showcase and “shop” your clothing. The overall goal is to make the space both functional with organizing systems and stylish with design elements. Hang clothing on matching hangers and organize by type, then color. You’ll be able to see what you own so you can put together fabulous outfits.
Less is more
054_SLOWLANE_0421.indd 55
following these basic decluttering steps can help even the most precocious packrat pare down. Step 1: Define it. Minimalism means intentionally living with only the things you need. As you try to discern which items in your home you truly need, ask yourself: • Is this item useful to me? • Is it the only one I own? • Does this item bring me joy, usefulness, or meaning? A “yes” means the item can stay. A “no” means it’s time to let it go. Step 2: Organize it. Once you decide which items you would like to keep, organize them in a way that works best for you. Step 3: Maintain it. Belock warns clients of seeing their newly decluttered spaces as opportunities to acquire more stuff. Once you’ve done the work of paring down, it’s time to maintain it. “Be cognizant of your purchases and how you would like to invest your time, energy, and money,” Belock advises. “Minimize the clutter to maximize your quality of life.”
3 SHEA CHRISTINE PHOTOGRAPHY
Minimalism is about living with less—things, expenses, waste, stress. Sure, you can read Marie Kondo’s classic tome, The Life-Changing Magic of Tidying Up, to make your space look like something out of a Zen photo shoot. But Korinne Kubena Belock, founder and owner of Urban Simplicity, an organizing service based in Palm Beach and New York City (urbansimplicity. co), says the philosophy behind minimalism is even more valuable than the visual reward. For Belock, minimalism is also about finding more in life beyond material goods. “Adopting this lifestyle can help foster healthy relationships with the people who are most important to you and help you focus on experiences and relationships,” she says. “When you eliminate the clutter that surrounds you, you can focus on doing more with your time and life.” So how do you become a minimalist? Belock says the process looks different for everyone, but
The KITCHEN Every member of the family uses the pantry, which means it tends to get disorganized quickly. Pull everything out and eliminate any dishes that are chipped, mismatched, or no longer used. Highlight what you love. Maybe baking or entertaining is your passion. Figure out what’s important to you, group all related items together, and make space for them. When in doubt, look up. Utilize vertical space inside cabinets with stacking bins or tiered shelves.

The Playroom Use open-top bins to sort larger toys. Labeled, stackable, clear plastic bins can keep sets of smaller things in order. If you can clean up toys in 10 minutes, your system is working. Keep categories of toys broad so children can help with clean up. To maintain organization, especially in a playroom, use the one in, one out rule: For each new item you buy, decide to let one go.

Mindfulness & Meditation:
Mindfulness is being aware. It’s noticing and paying attention to everything you’re experiencing—from your thoughts to your feelings to your behavior. It’s the kind of thing you can practice not only anywhere, but at any time. Just show up, engage yourself fully in the here and now, and you’re practicing mindfulness. But it takes more to achieve mindfulness on a deep level. Gigi Falk, who runs the Art of Human Being (liveahb.com) with her sister Kayla— offering workshops and classes based on their training with mindfulness master Shinzen Young—says true mindfulness means being free of the 56
past and future, the what if’s and what maybe’s, the judgment of right or wrong so that we can be totally present in our lives without distraction. It’s worth the effort: Research shows that mindfulness releases “happy” chemicals like serotonin in the brain. It can also lower blood pressure, improve digestion, and increase pain tolerance. The Falk sisters say that a frequent meditation practice can help you develop the state of mind and being that makes mindfulness possible. And the two practices, they say, go hand in hand. “They’re like mirror reflections of each other,” Gigi says. “Mindfulness is a quality of mind. It’s a capacity

for awareness. It supports and enriches meditation. Mindfulness training is where you get to apply what you’ve learned in your practice of meditation.” While mindfulness can be applied to any situation throughout your day, meditation is usually practiced for a specific amount of time in a specific location. Another way to think of it? “Mindfulness is the awareness of ‘something,’” Gigi says. “Meditation is the awareness of ‘no-thing.’” “Mindfulness is a cultivated quality of mind,” says Kayla. “A lot of people tend to see mindfulness as something they have or don’t have. It’s a skill you build like anything else. Every time you practice your meditation, you’re improving your capacity to be a mindful human being.”

The Slow Movement: The slow living concept is all about embracing a natural flow—and eschewing the waste and stress that accompanies “faster” lifestyles filled with reflexive multitasking, breakneck pacing, and competitive consumerism. First given a name in journalist Carl Honoré’s 2004 book, In Praise of Slow, the movement doesn’t ask us to chuck our overly speedy lives and start from scratch. Instead, it suggests that we take the time to be present in our daily activities, enriching our lives by savoring what matters most (thrills over things, health over hurry, planet over profit) and not trying to impress ourselves or others with what we can buy or achieve. To hop on the slow-moving bandwagon, try adopting a slower pace in one or more aspects of your life. From the food you eat to the clothes you wear to your daily beauty rituals, options abound to consciously slow your roll.

Deliciously Deliberate Thirty years ago, a group of Italians gathered in Rome to protest a fastfood franchise opening at the base of the city’s iconic Spanish Steps. “We don’t want fast food,” the protestors chanted. “We want slow food!” That was the start of the Slow Food moveGrilled Wianno oysters at 3030 Ocean at the Harbor Beach Marriott Resort and Spa ment—which today spans 160 countries, with 150 chapters in the United States. Aim for #30Wears: Coined by Livia Firth, founder of sustainability consultancy Eco-Age, #30wears is a benchmark to extend the lifespan of your clothes. Before buying anything, ask yourself: Will I wear this at least 30 times? If the answer is no, put it back on the rack. Pass It On: Got a quality item (or items) that you just don’t wear anymore? Consider consignment. You’ll make room in your closet, keep an item from the landfill, and make a little money in the process. Go for Seconds: Before buying anything new, try to find it secondhand. This could mean rummaging in a consignment or vintage shop, buying from an online resale platform, or even borrowing something from a friend. Choosing quality secondhand clothing reduces the demand for manufacturing and waste in landfills.

SEAN KENNIFF, MD
Neurologist by day; artist, author, philosopher by night Dr. Sean Kenniff is a dedicated Memorial Healthcare System neurologist with an effervescent enthusiasm for his profession, patients, and students that belie his 25-year career. But when he saw an ad in TIME magazine for a new reality show in 1999 (and subsequently landed a spot on season 1 of the now-hit-show Survivor), the talented neurologist put his promising career trajectory on hold. He lasted until nearly the final round of the show. “I’m apolitical and happiest when everyone is at peace,” explains Kenniff about his Survivor strategy, subsequently interrupting medicine for a William Morris agent and a yearlong whirlwind schedule of media appearances. Through it all, the son of a New York City firefighter remains humble and committed to returning to neurology, a profession he says is a privilege. “I think any doctor who graduates with an MD or DO cares for patients, but what patients really want is for you to care about them,” says Dr. Kenniff. “When you’re invested in their future, you become that doctor; every day you’re given the opportunity to be that person and two decades from now, they’ll remember you,” he says. The dedicated family man keeps a self-described “List of Smart Things,” a collection of 200 sayings, including: “Anytime you’re broken, pick up the pieces and be a winner.” He often tells his wife, “If you don’t watch it, I’ll turn it into a book.” He’s made good on that promise three times—his first novel, Mad, was published in 2001, followed by Stop Effing Yourself and Etre the Cow, in 2010. A lifelong artist, Kenniff paints on canvas, concrete, and wood. Unlike his books, he says that his art “says things that words can’t” about the world around him. “Our electronic lives are disproportionate, our money is electronic, our relationships are electronic. Are they even real?” poses Kenniff about the impetus for his art, which begs to be seen, but as yet remains hidden. Except for that one time in 2018 when he awoke at 4 am to crash a Banksy exhibit, chaining his spray-paint-on-concrete Magritte pipe and “No
MEMORIAL HEALTHCARE SYSTEM
selfies” art to a stop sign. Look for more outrageous stunts in the future. Says the neurologist/author/philosopher/artist, “I have a lot of crazy stuff planned and I’m 51.” —Michelle Payer

JACQUELINE LARSON, MD
Pediatric Gastroenterologist leads with an empathetic ear As a seven-year-old diagnosed with Crohn’s disease, Dr. Jacqueline Larson’s mother told her, “You’re blessed to have this disease. You have it because you can deal with it and someday will change others’ lives.” Larson’s 35-year journey with Crohn’s disease—including seven abdominal surgeries to remove her colon and part of her small intestine—led her to enter medical school at age 32 and dedicate her professional career to pediatric gastroenterology. Diagnosed with Celiac disease in medical school, “GIJax,” as her colleagues dubbed her, began altering recipes into gluten-free versions and sharing them with fellow students and residents. When they encouraged her to write a cookbook, she spent the next 10 years transcribing her favorites, from gluten-free baked goods to appetizers, soups, and entrees. Reflecting the nationalities of her med school and hospital colleagues, the more than 100 recipes reference Portuguese, Indian, Cuban, and Filipino traditions and flavors. Gluten-tolerant friends used regular flour and the recipes became smash hits. When Larson moved to Joe DiMaggio Children’s Hospital, the recipes were relegated to a box, still used by friends or to cook for an appreciative boyfriend. While the good doctor zeroed in on treating often-frightened pediatric patients, she made it a priority to spend time relating to them, coax symptoms out of them, and establish trust. “I come in and talk to them as a child or adolescent,” says Larson, “My hope is to empower patients to take control of their disease, find their own courage and strength, provide them a foundation to succeed and guide them with my experience as both a patient and a physician,” she says. “I can give them any recipe, tell them in which grocery stores to shop and how they can find glutenfree alternatives,” she says. What she can also give patients are recipes. One hundred of them to be precise. Rather than creating a cookbook, Larson is making them available on

ALEJANDRA ERGLE, MD
Being of service is foremost for this teacherturned-breast cancer specialist Nearly 15 years ago and a world away from her current profession, Dr. Alejandra Ergle was Rookie Teacher of the Year at Ronald Reagan/Doral Senior High School. She still says, “Call me Alejandra,” though now the Venezuela native is a hematologist/oncologist specializing in breast cancer. With a love of teaching still running through her veins, Ergle says, “Oncology provides an excellent platform to build rapport with and educate patients, two important aspects that make this job fulfilling for me.” Though she initially thought pursuing a career in medicine was “idealistic,” two seminal moments convinced her otherwise: one was seeing the limited resources in Cantaura, Venezuela’s public hospital as a child. The other was lifesaving care given to her sister in a rural hospital after they were in a head-on collision. “It was a small town that otherwise wouldn’t have had a physician if it weren’t for a volunteer doctor from Uruguay,” she says. The combination of experiences reignited her interest in global health. While still in medical school, Ergle began participating in outreach programs to Ecuador and India with a personal pledge to create sustainable practices. “We’d diagnose and treat parasites, but the anti-parasitic is only going to work for a month, she says. “To avoid parasites next month, they have to wash their hands, so it becomes a matter of teaching the principles of public health and hygiene.” While in residency and fellowship, Ergle worked with Innovating Health International to open a clinic in Port au Prince, Haiti addressing women’s health—including breast cancer—which Ergle says comprises most of the clinic’s cases. With no little oncology training available locally, medical students, residents, and some practicing physicians at the clinic relied on Ergle to answer questions and share her knowledge. Her dream is to create a virtual teaching program for Haitian trainees. “It’s luck or a blessing that my passion within medicine is oncology and specifically breast oncology,

that it goes hand-in-hand with what’s needed in Haiti and that I can marry the two from an educational point of view,” she says. —Michelle Payer

MATTHEW R. MOORE, MD FAANS, FACS Honored as a “Top Doctor in Neurosurgery” every year since 1999, Dr. Matthew R. Moore is a leading neurosurgical specialist in South Florida for complex neck, low back, and brain problems which may ultimately require surgery. An honors graduate of Harvard College, Dr. Moore then earned his Doctor of Medicine from Yale School of Medicine, where he received an honor and award for his thesis on neuroregeneration. Following Yale, he completed his training through Harvard Medical School’s neurosurgery residency program at Brigham and Women’s Hospital in Boston, where he served as chief resident and the Harvey Cushing Fellow. Dr. Moore has expertise in a wide variety of both benign and malignant brain and spine tumors. He also commonly performs the latest microscopic surgeries for neck and lower back pain caused by herniated discs and arthritis. He was the first CyberKnife-trained neurosurgeon in Broward County and frequently can offer this cutting-edge treatment, as well as the use of laser surgery, over traditional operations. Using these techniques, Dr. Moore has found that most neck and back surgery patients are up and walking
the same day without pain. Dr. Moore was also the founding director of the first Joint Commission on Accreditation of Healthcare Organizationsapproved spine care center in South Florida. For more than 10 years, Dr. Moore’s surgical group, Neurological Surgery Associates, served as the “team physician” for the Miami Dolphins and the local NHL Players’ Association. In addition to his clinical surgical practice, Dr. Moore frequently provides expert witness consultation, testimony, and independent medical examinations for accident and malpractice cases throughout the United States through his consultation company, Florida Neurosurgical Experts. Most importantly, as a highly skilled board-certified neurosurgeon, Dr. Moore carefully evaluates treatment options for each patient and strives to choose the most appropriate plan for each individual guided by question this in mind, “What would I do if this patient was my family member, my mother, father, or child?” Dr. Moore’s office is conveniently located in mid-Broward County east of I-95: 1821 N. E. 25th St., Lighthouse Point, FL 33064

She was one of the first physicians in the United States and the first in Cleveland to perform endovenous laser ablation of varicose veins. Dr. Fox has been on the forefront of vein therapy for the past two decades and continues to offer cutting-edge, minimally invasive therapies with little to no scarring or down time. She and her team have developed and mastered their own vein techniques. Dr. Fox trained at the Cleveland Clinic in Cleveland, served as a professor at Case Western Reserve University, and opened Cleveland’s first vein center in 2002. In addition, Dr. Fox has served as a physician educator for many corporations. She has lectured locally and nationally in English and Spanish on various vein therapies and treatments. Dr. Fox is the owner and manager of Fox Vein and Laser Experts. Her clinical team are leaders in vein care and have expanded to incorporate skin and body treatments. These treatments began with
offering tattoo removal and laser vein removal to get rid of small leg veins and discolorations. The machines utilized also offer many other options, including skin rejuvenation, hair removal, and acne and spot treatments. We now have a full-time staff that specializes in hair restoration, micro-needling with radiofrequency, peels, facials, and much more. We offer the newest and best treatments. Dr. Fox has partnered with various corporations on ongoing studies, most recently, a funded hair restoration study using microneedling and stem cell therapy to help regrow thinning hair. She is one of the first in the United Sates to offer Physiq, the newest and best in body contouring using muscle stimulation and laser lipolysis. “Patients would often laugh and ask if we could treat their fatty legs,” Dr. Fox says. “What started out as a funny commentary encouraged us to expand into the world of non- invasive body contouring.” Dr. Fox has been practicing for decades and is always learning new techniques and educating others in various aspects of her field.

He is board-certified by the American Board of Dermatology and is a prestigious Fellow of the American Academy of Dermatology. His affiliations include the American Society for Dermatologic Surgery, American Society for Mohs Surgery, and the American Society for Laser Medicine and Surgery. The NaturaMD line includes serums, replenishing cleansers, skinbrightening and age-spot lifting creams, sunscreens, and other products. Over the last two months, “the brand has gone through a facelift” with an updated website, logo, and a newly renovated office, Dr. Richardson explains. “Our patients always have been key to our success, and we make sure to go above and beyond to make sure each patient has the best experience.” The renovated Las Olas location has reopened on East Broward Boulevard. “The team is excited for our patients to experience the new “Lux Experience,” Dr. Richardson said. “Natura Dermatology & Cosmetics is also launching a new LuxVIP Membership Program that offers patients exclusive tier-based pricing on all of the services we offer.” In addition to his medical expertise, Dr. Richardson is an international author and a professional development coach. JESSICA RITCH, MD JENNIFER POLLAK, MD The dynamic team of Dr. Jennifer Pollak and Dr. Jessica Ritch return to the “Top Physicians” list in 2021. They lead the womancentered Florida Center for Urogynecology (FCU), the only practice in South Florida to combine the expertise and experience of both a fellowship-trained urogynecologist and minimally invasive gynecologist to deliver highly specialized, benign gynecology care. Even through the devastating COVID-19 pandemic, these expert surgeons keep moving forward by incorporating the time-honored traditions of patient-centered care with innovative strategies and techniques to improve women’s lives. Their practice is enriched with outstanding pelvic floor physical therapists and physician assistants to ensure that every patient’s needs are met in a compassionate and timely manner. FCU specializes in the treatment of benign gynecologic conditions, including abnormal bleeding, urinary incontinence, pelvic organ prolapse, sexual dysfunction, and complex pelvic pain. They offer telemedicine and in-office consultation, advanced medical treatments, and office-based procedures, pelvic floor physical therapy, and continued advances in minimally invasive surgical approaches including vaginal surgery, hysteroscopy,
laparoscopy, and robotic surgery. Dr. Pollak and Dr. Ritch are often sought out by their peers for their thoughtful and comprehensive approach to the most challenging gynecologic problems, but the majority of their referrals come from the friends and family members of their satisfied patients. Dr. Pollak has been the leading board-certified urogynecologist in South Florida for more than a decade. After completing residency training at the University of Miami, she pursued a fellowship in female pelvic and reconstructive surgery at the Cleveland Clinic Florida. Recognizing a need in the community, Dr. Pollak founded FCU to provide expert evaluation and treatment of pelvic floor disorders, combining the fields of gynecology and urology. As one of the only fellowship-trained minimally invasive gynecologists in South Florida, Dr. Ritch has broadened gynecologic treatment in the community. After residency at Columbia University, she completed advanced fellowship training at Vanderbilt University. Dr. Ritch is a pioneer in performing incisionless fibroid surgery and was the first to offer this procedure to women in South Florida. She specializes in the treatment of abnormal bleeding, fibroids, pelvic pain, endometriosis, and other complex gynecologic conditions.

ALAN J. BAUMAN, MD, ABHRS Alan J. Bauman, MD, is a full-time, board-certified hair restoration physician who has treated more than 30,000 patients and performed more than 10,000 hair transplant and more than 7,000 platelet-rich plasma procedures since starting his medical hair loss practice, Bauman Medical, in 1997. Bauman Medical is a nearly 12,000 square-foot, state-of-the-art “hair hospital” located in Boca Raton. Bauman is one of only 200 physicians worldwide to achieve certification from the esteemed American Board of Hair Restoration Surgery (ABHRS), is a member of the International Alliance of Hair Restoration Surgeons and is recommended by the American Hair Loss Association. Bauman is a coveted Fellow of the International Society of Hair Restoration Surgery and is frequently invited as a faculty member for international scientific meetings and live surgery workshops. Bauman has been extensively featured as a medical expert in leading media outlets internationally and for pioneering
numerous technologies in the field of hair restoration, including minimally invasive Follicular Unit Extraction (FUE), VIP|FUE, LowLevel Laser Therapy, Platelet-Rich Plasma (PRP), PDOgro, and eyelash transplants. Bauman’s latest breakthrough transplant procedure — the “NoShave Long-Hair Preview” VIP|FUE — allows Bauman and his surgical team to extract hair follicles directly from the donor area without trimming or shaving, a significant bonus for patients looking to discreetly treat their hair loss. VIP|FUE also allows patients to see the results of what their transplant will look like right after the transplant, instead of having to wait until the follicles grow back. Bauman was recently voted “Top Hair Restoration Surgeon” by Aesthetic Everything for the fifth consecutive year and “Top Hair Restoration Surgeon of the Decade,” and has been named by Forbes as a “Top 5 Transformational CEO” and one of “10 CEOs Transforming Healthcare in America.”

COURTESY EATAPAS
EAT DRINK
By Melissa Puppo
Paellas and small plates reign supreme at Eatapas.
OPENINGS
Tapas Tour! If you love the cuisine of Spain or long for the day when you can resume travel to your favorite Spanish city, satisfy both wanderlust and those culinary cravings at Eatapas. The new Spanish kitchen in Fort Lauderdale is reminiscent of the authentic taverns you’d find during a tapas crawl on Calle Cava Baja, in the heart of Madrid. Old-school commonalities are aplenty, like live guitar music most nights of the week. Fridays and weekends are reserved for flamenco shows when dancers impress with their colorful ensembles. The new outpost boasts a menu curated by chef Alberto Roche and is underscored by more than 30 diverse tapas. Kick off your meal with tableside sangria before moving on to small plates ranging from Gali
000_EatDrinkOpen_0521.indd 103
cian-style octopus to tender calamari dressed in squid ink to tortilla de chorizo, a traditional Spanish omelet with chorizo and potatoes. Eatapas’ paella is everything you’d expect and more: a sizzling castiron pan with calamari, shrimp, scallops, mussels, and clams poking through fluffy rice like hidden treasures. End your tour by digging into the tarta de Santiago con helado, a specialty almond cake served with a refreshing scoop of ice cream. (eatapasfl.com) FORTLAUDERDALEILLUSTRATED.COM | MAY/JUNE 2021 103

EAT DRINK CRAVINGS
Between the Bun
In honor of National Burger Month in May, we’ve rounded up some of Fort Lauderdale’s BEST BURGERS «
«
PROHIBITION BURGER A mainstay in Lauderdale’s kitchen and bar scene is Tap 42, and its Prohibition burger is a no-brainer when it comes to must-try burgers. This American beauty features a special patty blend that’s piled high with white cheddar cheese, applewood bacon, lettuce, tomato, and onions, plus a secret sauce and Dijonnaise. Enjoy this monster any day of the week or on Mondays when it is half-off at all locations from 4 to 11 p.m. (tap42.com)
BREAKFAST ALL DAY BURGER Who said you can’t enjoy breakfast at any hour? Order the Breakfast All Day burger at BurgerFi locations for a stacked mouthful of all the morning’s favorite bites. A crispy hashbrown sets the foundation for a patty topped with American cheese, a fried egg, bacon, grilled onions, and ketchup. BurgerFi promises its burgers are all made with 100-percent natural Angus beef free of steroids, antibiotics, growth hormones, chemicals, and additives. (burgerfi.com)
THE NOBL BURGER Non-meat-eaters, this one’s for you. Delicious Raw’s vegan burger, dubbed the Nobl burger, is a plant-based charmer complemented with scratch-made pickles, smoked aioli, truffleinfused garlic Dijon, baby spinach, roasted tomato, portobello, and Bermuda onions. All of that is stacked between a house-made vegan brioche bun and served alongside a root salad. (delraw.com)

TOP ROUND MELT One burger that will creep back into your thoughts when cravings hit is the Top Round Melt. Top Round has a reputation for outstanding slow-roasted roast beef sandwiches, but we must give credit to its sister sandwich. Think: buttery bread housing a center of Provel and cheddar cheeses, an Angus patty, chef’s sauce, and caramelized onions. Finish off an indulgent meal withTop Round’s key lime pie ice cream custard—it’s a match made in heaven. (eattopround.com)

LOCAL BITES
MEET UP FOR MEXICAN Tulio’s nachos
GIO CELONA
GIO CELONA
GIO CELONA
Lauderdale is fully embracing its Mexican cuisine kick, and we’re not complaining. Farther north in the heart of Wilton Manors lies the newest south-of-the-border outpost specializing in chips, guac, tacos, and margs. Tulio’s Tacos & Tequila is a spunky, youthful concept developed by longtime friends Brian Parenteau, Doug Herbst, and El Salvador native chef Tulio Alas, for whom the restaurant is named. Take a seat in the indoor living room, with interiors awash in vibrant murals and artwork from an array of local artists, or relax on the expansive patio and nosh on chips and salsa or the ceviche rojo, with heaping bites of marinated shrimp and grouper presented in a massive schooner glass. The crispy grouper tacos and chicken burrito are equally delicious when paired with the Shirtless Margarita, which is bursting with flavors of muddled serrano, spicy honey, lime, and Hawaiian chili sea salt. (tuliostacos.com)

TAYLOR AMOS
As spring continues its bloom, we celebrate the season’s bounty with a refreshing riff on the mojito. This low-alcohol version—which can also be found in my latest book, Low-Proof Happy Hour— splits the difference between the traditional rum with a dry vermouth, plus a medley of jasmine and honey, accented with mint and basil. It all comes together to form a delightful bouquet that will send your senses into a spring awakening of their own. —Jules Aron

SPIRITS
SAVOR the State Discover FLORIDA’S homegrown craft distillers
By Mark Spivak If you want to visit a distillery, there’s no need to hop on a plane to Louisville and drive across the Bourbon Trail. Around 40 distillers currently belong to the Florida Craft Spirits Association, and they produce everything from rum and vodka made with local ingredients to aged expressions of whiskey. Here, we present a subjective list of the best. Florida Farm Distillers: Marti and Dick Waters craft their awardwinning Palm Ridge Reserve whiskey on a small cattle farm outside Umatilla. This bourbon-style spirit is handmade in small quantities, aged in charred-oak barrels, and bottled at 90 proof (“whiskey the way it’s supposed to be,” according to Dick). Despite the low production, Palm Ridge Reserve is available at select Florida retailers. (palmridgereserve.com) Manifest Distilling: Located in downtown Jacksonville’s Sports District, Manifest is a full-scale organic distillery producing regular and barreled gin, potato and Florida citrus vodka, rye whiskey, coffee liqueur, and fernet. The facility includes a bar and tasting room. Tours are offered, as well as a monthly Discovery Series that allows consumers to get hands-on experience in the blending and formulation of spirits. Steel Tie Spirits (above) are crafted in a hand-built still. St. Augustine Distillery (left) is located in an old ice plant built by FPL in 1907.
Kozuba & Sons Distillery: Zbigniew Kozuba began making cordials and single malts in the Polish village of Jablonka. In 2014, he relocated the business to St. Petersburg with his sons, Matthias and Jacob. The family still makes cordials (ratafia, triple sec, quince, and cranberry) along with vodka, straight bourbon, and high-wheat rye whiskeys. Visitors may observe the production of spirits in the copper stills brought from Poland. (kozubadistillery.com) Loggerhead Distillery: Named for Florida’s endangered sea turtle species, this Sanford distillery draws on local sugarcane, citrus, grains, and botanicals to create three varieties of moonshine, regular and sweet tea vodka, a key lime gin, bourbon, rum, and single-malt whiskey. Visitors are welcome every afternoon except Monday. (loggerheaddistillery.com) St. Augustine Distillery: Situated in a historic FPL ice plant originally built in 1907, St. Augustine Distillery is committed to community preservation as well as sustainability: They source Florida-grown agricultural products to make their vodka, gin, bourbon, and pot-distilled rum. Free tours and tastings are available, and the distillery is a stop on St. Augustine’s Old Town Trolley Tours. (staugustinedistillery.com)

Steel Tie Spirits Company: The Etheridge family has lived in West Palm Beach since the late 1800s and helped lay the tracks next to the distillery (hence the name). Steel Tie’s non-GMO, pesticide-free, and locally sourced spirits include vodka and three Black Coral rums, all made in a still hand-built by Ben Etheridge. (steeltiespirits.com) Tarpon Springs Distillery: Where else can you find ouzo but in the largest community of Greek Americans in the country? In addition to Papou’s Ouzo, the distillery produces Gramling Woods High Rye Moonshine, Anclote Very Small Batch Gin, and Claresso, an espresso-based spirit. (tarponspringsdistillery.net) Wicked Dolphin: Founded in 2012 in Cape Coral, a few miles from the sugarcane fields, Wicked Dolphin distills local ingredients in southern Florida’s largest copper pot still. Their Reserve rums (spiced, silver, and gold) are aged for a minimum of three years in barrels that once held Kentucky bourbon. Free distillery tours are offered by reservation. (wickeddolphinrum.com) Winter Park Distilling Company: Hometown natives Paul Twyford and Andrew Asher make everything from vodka and white corn whiskey to beer-barrel-aged rum and Florida’s first single-barrel bourbon. Tours may be reserved on the website, and aficionados can mash bourbon with the distiller and “adopt” their own five-gallon barrel, whose contents are bottled for them when ready. PARTING SHOT Artwork by Ben Hicks
FOLLOW THE SUN Artwork by Paris Zepeda
In collaboration with Twenty6North Productions, Fort Lauderdale’s B Ocean Resort has unveiled a new fine art expansion under its “B Artistic” initiative. Inspired by sea turtle hatchlings’ journey to the ocean, the exhibition showcases three local artists’ interpretations of the theme “Follow the Sun.” The artists include photographer Ben Hicks, street artist Mark Bulks, and fine artist Paris Zepeda. “As a photographer who literally follows light whenever I pick up a camera, ‘Follow the Sun’ is the essence of my work,” shares Hicks. The artworks are available for purchase and can be viewed inside B Ocean’s lobby. A portion of funds will be donated to the hotel’s charity partner, Broward County Sea Turtle Conservation Program, which monitors all sea turtle nests along more than 24 miles of Broward County beaches. —Melissa Puppo
