Visions of summer

ave you ever met an “influencer”? That’s a rhetorical question of course. I mean, these days it seems everyone fancies themself an influencer to some extent. Don’t get me wrong: It’s absolutely a legitimate career, and I have so much respect for the level of hard work and talent that goes into branding yourself to the point where you can make a living at it. And getting there in 2022 is more difficult than ever with so many people flooding the market with the same aspirations. To be a true influencer today, you have to be a true visionary. Beth Beattie Aschenbach and Danielle Norcross are exactly that. When the sisters started their Palm Beach Lately brand a decade ago, showcasing the South Florida lifestyle at its finest, there weren’t a ton of people outside of major U.S. cities using Instagram as a “business” with such success. They managed to parlay their personal ode to Palm Beach living into a booming brand and have since collaborated with major companies on projects ranging from fashion and interior design to beach products and boats. Their quintessential Palm Beach aesthetic is perfect for summer, which is why we decided to tell their story in this issue. Meet the area’s OG influencers on page 30. You can’t think of summer in South Florida without the ocean coming to mind—paddleboarding, snorkeling, kitesurfing...Whatever floats your boat. And starting on page 42, we highlight 10 cool ways to explore the water to help get you psyched for summer. I’m willing to bet there’s at least one thing on the list you haven’t tried, or even heard of (dragon boat racing, anyone?). And we give you all the info you need to give it a go! I’d like to say a special thank you to local production company BrandStar for inviting us out to the taping of their Military Makeover show in March. The reality series cohosted by Montel Williams does its part to help military veterans by giving their homes a complete makeover—and a recent episode featured the home of a Jupiter Farms family (read their story on page 38). look forward to summer every year—things tend to slow down a bit, especially my calendar, as there are not as many events to attend as there are during season. It’s a time to reset, organize, and read all those books that have piled up, as well as start planning for next season. What are you up to this summer? My husband and I have several trips planned, including two weddings in July. Many of our friends’ children are grown and starting their own lives, and I look forward to celebrating those special moments. Our two kids will join us to visit family and friends at the end of August, but we’ll also be home quite a bit. We are lucky to live in paradise with so much to enjoy in northern Palm Beach County. I will be spending my days paddleboarding (something I haven’t yet tried!), taking a tour of the lighthouse, boating, and playing tennis and golf. I’d also like to take a few staycations to check out some resorts within driving distance for a long weekend getaway. Many Florida resorts have fantastic resident summer rates, and it’s always nice to explore more of our beautiful state when it’s not busy season. I’d like to wish our business owners and readers a lovely summer, and I hope you enjoy our July/August issue. lipping through swatches from Jennifer Paganelli’s collections can’t help but make you smile. Sporting names like Happy Camper, her fabric designs are splashed with brilliant colors and have been crafted into quilts, clothing, and home decor for decades. With her new Lovely Day collection launching this summer and her love of painting blooming into an expanding art collection, Paganelli’s passion is as bright as the fabrics she started designing 40 years ago. She began a career in the textile industry in New York in 1983 and started collecting vintage fabrics on the side. “They were document fabrics, which are fabrics that are 100 years old or older that have been brought back to the market,” she says. trace the designs and recolor them, putting her own spin on things. When she discovered the babysitter she had hired to watch her two kids while she worked was experienced in sewing, the two began working together to create vintage fabrics. Paganelli began selling them out of her home, and in 2001, she launched her company, Sis Boom. Four years later, she introduced her first fabric collection, Girlfriends, with fabrics named after all her best gal pals. Paganelli moved to Jupiter in 2018, bringing with her a newfound love of painting. Her signature colorful flowers now bloom in acrylic paint on canvas as well. Of course, she continues to create fabric patterns, which are sold locally at Red Thread Studio in Palm City and The Inspired Sewist in Jupiter. As she watches crafts like quilting become trendy, Paganelli takes pride in the authenticity of her creations. “I see a lot of prepackaged stuff...but quilts are meant to be made from spare parts, like someone’s old shirt,” she says. “They are not intended to match. n a breezy, sunny Saturday in April, 30 yogis lay down their mats and wait for class to begin. But this isn’t just any yoga class—a herd of baby goats are in on the action too. Goat yoga began trending a few years ago, and now locals can take part in the fun at the Groovy Goat Farm in Jupiter Farms. “This is about reconnecting people with nature through interaction with animals,” says yogi Kim Depasquale, who studies animal therapy. When Depasquale’s father-in-law, John Depasquale, purchased his Jupiter Farms property in 2021, she pitched him the idea of bringing Downward Goat—a local nonprofit that supports veterans, first responders, and other caregivers through therapeutic yoga— to the farm. A Vietnam vet, he knew nothing about goats at the time. “I’m from Brooklyn,” he says. “I knew dogs, cats, and rats.” Today, there are nine goats on his property, among other animals including donkeys. His “best friend” is Peanut, a brown goat who follows him everywhere. “Goats are social, affectionate, and like being around animals and people,” says Despasquale, who has seen firsthand the therapeutic effect his goats have on people. “This is a place where people can leave their stress behind.” Goat yoga provides several benefits including increased focus, laughter, and a general feel-good mood after interacting with the animals. A Life’s Purpose DOLPHIN RESEARCHER NICOLE MADER HAS DEDICATED HER LIFE TO MONITORING AND PROTECTING THE PRECIOUS SEA LIFE IN OUR LOCAL WATERWAYS H O L LY M A R T I N E Z

It’s important work to be sure, as many local dolphins suffer from issues including seriously compromised immune systems, skin disorders (like lobomycosis), and a high mortality rate for newborn calves. And all of that, she says, is a direct result of environmental pollution in the waterways caused by things like discharge from Lake Okeechobee, fertilizer and Nicole Mader photographs the local dolphin population from her 17-foot Mako boat.

stormwater runoff, and plastic trash. “The dolphins don’t leave the Indian River Lagoon,” explains Mader. “They travel 50 miles or so up and down, but they don’t go into the ocean. They stay here. So whatever we do to our waterways, we do to the dolphins. They’re our neighbors, and we need to treat them as such.” Born and raised in Martin County, Mader has been interested in aquatic wildlife since she was a child, attending Jensen Beach’s Environmental Studies Center and spending time on the water with her father, a boat builder. After graduating from the University of Florida, she started her career working as a dolphin trainer in the Keys, where she was eager to work with marine life—if still a bit green. “When I was in the Keys, people there were protesting the collection of wild dolphins for captivity,” she recalls. “At the time, I didn’t fully understand it, but now I’m on the other side doing research and am very against any type of captivity. It’s amazing how far I’ve come.” After migrating back up north in 1991, she volunteered with the Jupiter-based Wild Dolphin Project, studying Atlantic spotted dolphins in the Bahamas and working closely with other organizations as well throughout the years. Now she has returned to her home turf of Martin County. “It was a full-circle moment coming back here and focusing on the

Atlantic bottlenose dolphin population in the southern Indian River Lagoon,” says Mader. “What’s going on with Lake Okeechobee, the discharge, and how it has polluted our waterways, I really wanted to document that over time because the best way to study any population is over the long term.” Mader’s research involves collecting data to monitor the local dolphin population. By photographing their dorsal fins (each dorsal fin is as different as a human fingerprint), she can track them over the years. Her collection of data helps to understand abundance, birth and death rates, home ranges, behaviors, and more. At every dolphin sighting, she checks the water’s salinity, temperature, and turbidity every half hour. She also has a strong passion for educating others on what she has learned about the harm being done to marine life and how locals can make small changes that add up to a big impact. “Dolphins are intelligent beings, and they live in harmony with their environment without destroying it,” she says. “I really want to bring to light what people do to our waterways, like throwing trash away inappropriately. We’ve had many dolphins wash up on the beach that have been stranded or killed by ingesting plastics or getting entangled in monofilament.” Mader is heavily involved with the

community’s waterways in other ways as well, including as a board member of the Environmental Studies Center and the Rivers Coalition. For the past 11 years, she has led River Kidz, a Stuart-based nonprofit that teaches children the importance of advocating for clean waterways. She also serves on the board of Massachusettsbased Ocean Alliance. “I’m proud that I have stayed consistent with my deep concern for our local environment and waterways,” says Mader. “I try to spread the word with the kids and by being on various boards…. I have such love for my town. Every little bit counts. If you do the right thing, it draws people to do the same.” ❖

For Will and Alyssa Claunch and their young children, 2-year-old Walker and 1-year-old Reagan, a lifetime of adventure lies ahead on their newly acquired SeaVee 322z center console. one that would offer something to each member of the family—a few conditions would need to be met. For Will, a vessel that was well appointed for serious fishing was important, though not at the expense of his family’s comfort and safety. A large enough center console with adequate freeboard to allow the kids plenty of mobility without fear of anyone climbing out or falling overboard was paramount. A vessel large enough for blue water fishing and Bahama crossings was also a requirement—which meant they needed storage availability and would be challenged by the rising cost of fuel. They decided a boat in the 30- to 34-foot class that could be powered efficiently with just a pair of engines would be perfect. They also agreed to forego permanent forward and aft cockpit seating in favor of adding marine beanbags forward, as well as a removable cockpit bench that would allow for maximum fishing room as needed and the ability to add temporary seating as necessary for family cruising and sandbar days. After careful consideration, the layout of the SeaVee 322z

proved to be ideal for the family. The soft SeaVee ride would be comfortable for the kiddos as they discovered the ocean with their parents. The meticulous rigging and top-quality hardware stood out. Palm Beach Gardens sisters Beth Beattie Aschenbach and Danielle Norcross have taken their personal Palm Beach aesthetic from a personal blog to a successful brand that has led to partnerships with hotels, fashion houses, boat companies, and more. Here’s how the area’s original influencers made their mark.

nyone who spends a few minutes scrolling through the Palm Beach Lately blog or Instagram feed will likely experience an irresistible urge to live in the sunny, pastelhued world created by sisters Beth Beattie Aschenbach and Danielle Norcross. For a decade, the duo behind the Palm Beach Lately brand has been transporting followers into a well-curated lifestyle that exudes the area’s barefoot elegance, with posts featuring breezy fashion and home designs in signature pastel colors of mint green, blush pink, and pale blue set against lush backdrops. More than 100,000 like-minded followers can’t get enough of their content, and the sisters’ enthusiasm, coupled with the quality of the posts, is a siren call to big brands seeking sponsorship opportunities. From its start in 2012, the sisters’ blog was profitable.

But it certainly wasn’t the mature brand it is today—partly because their concept was new at the time. “It took a long time for people to understand what we were doing,” says Norcross. These days, companies sourcing local influencers as part of a targeted marketing strategy is common practice—but 10 years ago, no one was filling the demand in Palm Beach County. “Back then, you had to be in New York or L.A. to do what we’re doing,” says Aschenbach. “We wanted to bring it to Palm Beach.” There was also the challenge of zeroing in on their brand’s corporate identity. “We used to be all over the map,” Norcross confides, before they eventually settled into their sweet spot of travel, home, and fashion and their signature color palette. Since then, the two have been met with a myriad of partnership opportunities that have allowed them to expand

their brand beyond the internet. They have designed capsule clothing collections for Vineyard Vines; for Elizabeth Wilson of Kentucky; and for their latest collaboration, Sail to Sable, which debuted in May. On the home front, they have designed the Sisters Suite by Serena & Lily and Palm Beach Lately at The Colony Hotel in Palm Beach, a vacation rental (since sold) called the Pineapple Pad at the Palm Beach Condominium Hotel, and Endeavor Cottage with Serena & Lily at Harborview Nantucket. They partnered with Business & Pleasure on a line of beach chairs and umbrellas. And they have even entered the boating genre with Palm Yachts, customized and restored 17-foot center console Boston Whaler “picnic boats” in mint green and pastel pink with striped Bimini tops, which they both sell and charter. Eventually, they’d like to add to their portfolio with their own line of home furnishings. “Now that we have our style, we’d like to explore different

avenues,” says Norcross. With only 20 months separating them in age, Aschenbach and Norcross have always been very close, and their path to co-owners of a business reflects their symbiotic goals. Along with a younger brother, they grew up in Wellington before attending the University of Florida. After graduation, both sisters ended up in New York City for a bit, working separately in related fields—Aschenbach in public relations and event planning and Norcross in luxury travel marketing— before returning home to Florida, where they knew they eventually wanted to raise families. Norcross married her college sweetheart, Jason Norcross, in 2007—with her sister acting as matchmaker. “I had just graduated high school in 2000 and was heading to the University of Florida (where Aschenbach and Jason were already students),” recalls Norcross. “Beth brought my now husband and his friend down to the Keys to vacation with our family before I left for college, and the rest is history.” A year after her sister married, Aschenbach went on

a blind date set up by a friend’s mother and met her future husband, Lawson Aschenbach. They married five years later in 2013. The sisters share an entrepreneurial streak and initially created the Palm Beach Lately blog and Instagram account as a side gig. By 2014, the brand became their full-time focus. The idea for the blog came to them after realizing the untapped treasure trove in their backyard and in their collective memory. Growing up, the two spent countless hours at their grandmother’s house in Palm Beach, gathering memories of walking to Worth Avenue for the annual Christmas tree lighting and stopping by Sandwiches by the Sea to pick up takeout lunches for the beach. When they began mulling over business ideas, says Norcross, “a lightbulb went off.” They would share their love of Palm Beach and its lifestyle with the world. The name they chose for their brand reflects the goal of showing off Palm Beach at its well-manicured best while also chronicling the area’s evolution into a hipper, somewhat younger hot spot, with new restaurants and shops opening seemingly overnight. “Palm Beach had sort of a ‘your grandmother lives here’ vibe, and now look at it,” Aschenbach says. “Everyone is here.” Running a fledgling startup, Aschenbach and Norcross did

everything themselves, including photo shoots. These days, professional photographers are their only staff. “When brands talk to us, it’s authentic,” says Aschenbach. “We don’t have someone answering for us.” Initially, they hadn’t planned to feature themselves in their posts. The nudge into the spotlight came from the companies sponsoring the posts, who urged the photogenic sisters to adopt a more personal approach. Although they were hesitant at first,

there is no denying the power of depicting how to actually live the life they espouse. Their personal style is all over the Palm Beach Lately brand. Both women prefer flowy, feminine dresses in their signature pastel hues. “Having a style means we don’t chase trends,” says Aschenbach. “It just makes it so much easier to get dressed.” Their travels showcase various resorts and rentals in quaint locales fitting their brand, including Boca Grande, Islamorada, Nantucket, and the Bahamas. Recently, Aschenbach and her general contractor father renovated her Palm Beach Gardens home,

and the results—featuring a clean, white background highlighted with lots of wicker and mint green—are documented on the blog. Working so closely hasn’t tarnished the sisters’ close relationship in the least. In fact, it has strengthened it. “Our vision and style are the same, but our personalities complement each other,” says Norcross. “I’m the visionary, and Beth gets it done.” Since their brand has taken off, approximately 75 percent of potential clients approach them to sponsor a post or create a collaboration. They decide together which clients to work with, then diverge in responsibilities.

says Norcross, who has four children (ages 11, 9, 6, and an infant). “We jump in and do what needs to be done.” They don’t have nannies, adds Aschenbach, who has two children (ages 6 and 2), so they often have various kids in tow while they work. But there’s an upside to involving the children in the business, Norcross says: “We want them to see what we do for a living. My older kids are into photography and design and have made their own vision boards.” The sisters live right around the corner from each other in Palm Beach Gardens. Aschenbach’s husband, Lawson, is a championship racecar driver who owns BizCar and also co-owns LaMuse Jewelers on Worth Avenue with the sisters’ brother, Greg Beattie. Norcross’ husband, Jason, is a broker with HMY Yachts in West Palm Beach. “Our husbands are a huge part of our success,” Aschenbach says. “They believe in us and support us. When we had the idea to design boats, they both just said, ‘Let’s do it.’” Work doesn’t feel like work because they have managed to accomplish what might seem impossible to so many others by seamlessly blending a busy home life with a growing and evolving business. “Our life is our work is our family,” says Norcross. n 2003, Kristie and Justin Ziegler were newly wedded high school sweethearts who both enlisted to fight in the war against Afghanistan and Iraq. “We were 18 and had no idea what we were doing,” says Kristie, who grew up with Justin in nearby Loxahatchee. “Recruiters feed you this stuff about the G.I. Bill and the housing, but that’s the good stuff. They didn’t tell us the realities of going to war in Afghanistan.” For the Zieglers, reality meant being separated from each other for long periods of time as they witnessed everything from car accidents and house bombings to severely wounded children and suicides by fellow troop members. Although memories of working as wartime first responders took an emotional toll on the couple, that did not prevent them from returning to Florida after their service was complete to start a family and a new life. After purchasing a home in Broward County, they welcomed one son (Jack, now 11) and then a second (Kohl, 10) into the world before adding a dog to the mix. As their boys grew and became more rambunctious, Justin began daydreaming about a possible move to Jupiter, where he had often surfed before the war.

“We honestly weren’t ready to buy a house because we thought the market was kind of crazy,” recalls Justin, who now works as a volunteer firefighter and co-owns a gym franchise in Coral Springs with Kristie. But then the perfect opportunity presented itself. An elderly woman was selling her 30-year-old home in Jupiter Farms, but it would need some work before it was market ready. Justin offered to purchase the home and then spend two months after the sale was final renovating the land-rich property before his family moved in. It was a deal.

When the seller passed away before the paperwork could be signed, the Zieglers had to wait out the probate process. By the time they moved into the three-bedroom home in August 2021, they came to accept that their dreamed-about renovations would now have to be done bit by bit. Then one day in early October, a coworker told Justin about Military Makeover with Montel, a home improvement television show on Lifetime that gives veterans comprehensive home makeovers in gratitude for their service to the United States. Cohosted by talk show legend and U.S. Navy and Marine Corps veteran Montel Williams, along with Art Edmonds, the BrandStar original series enlists an array of home contractors to transform each veteran’s home and life. “It takes all walks of life to help a human being,” says Edmonds, adding that the Jupiter community came out in force to support the family throughout filming. “Viewers see how important it is in this polarized time to put differences aside to help deserving U.S. citizens.” Justin and Kristie applied to be on the program through the show’s website, not expecting much to come of it. “We honestly didn’t want to get our hopes up,” says Justin. “And to be honest,

we didn’t feel deserving of it. We’re very blessed and fortunate in our lives overall. Anytime something good happens to us, I feel like, ‘Why us?’” But they learned three weeks later that they had in fact been selected. “Honestly, our story is cool,” Justin reflects. “How many high school sweethearts do you know who got married and joined the military together and are still together?” Earlier this year, Williams started interviewing them for the show. “They are really nice people,” Williams says of the Zieglers. “So many other veterans are living the same way they are, with their post-traumatic stress just below the surface. To be able to share their story and show how they’re coping gives others a sense of what they’ve been through.”

fixtures, and bedrooms that suit both parents and kids. While crews tore out the old and brought in the new, Edmonds entertained the family with some local fun including jet-skiing and paddleboarding at the Jupiter Inlet, all of which was taped for the TV show. “You don’t realize how exhausting shoots like this are until you are in the middle of it,” says Kristie. “It was fun, but there’s a lot being asked of you, and the schedule was really full.” When the makeover was complete, the Zieglers were escorted to the big reveal. As their car approached the home on March 22, they were greeted by the television crew and dozens of family members, friends, and supportive locals lining the driveway and applauding their arrival. Many were waving American flags. Kristie remembers sobbing as soon as she saw the brand-new black steel gate outside of their property. When they toured the inside, they were wowed. “Anything would have made it better than what we had,” Justin says. “But the personal touches were what really made it for me. Jennifer knew we would love a gallery wall of family portraits. And we’ve never had a couch that we’ve liked, and now we have a large, comfy sectional.” After hours spent filming, giving interviews, and posing for photographs, when the cameras and crowds finally left, the family got to work setting up their kitchen and unpacking boxes. “It took some time for us to get organized and purge,” says Justin. Now that they’re settled in, it’s time to enjoy their new home— and maybe start planning the honeymoon they never had, as one generous show sponsor gifted them a ski trip to Colorado. Just six months after moving into their Jupiter Farms home, the Ziegler family found themselves packing up and handing the keys over to a crew of well-intentioned strangers. “Our boys were like, ‘We have to move again?’” Kristie recalls. “But we kept a grateful heart about everything because it was all really exciting.” In early March, the family was sent to live in a nearby Airbnb for the eight-day duration of the home makeover. The end result would be a total surprise, though the Zieglers were able to relay their wants and needs to designer and television personality Jennifer Bertrand, who sent the couple a design questionnaire to gauge their likes and dislikes and viewed their Pinterest board to get a further sense of their style. Bertrand set out to create an abode that felt as open and vibrant as the young family. “The kitchen was closed off and didn’t work for a family with two young boys,” the designer says of the original space. “It had no storage. Some of the finishes were pickled oak, but not in a good way. There was the standard Florida tile, but not the good kind. It had builder-grade lighting, which can impact how a space feels. We wanted to bring in sunshine and light and create zones full of flow and function.” Working with Jupiter-based Paradigm One Contractors, Bertrand infused the home with clean and modern California coastal chic while giving the Zieglers a new kitchen, new flooring, new bathrooms and tile, new furniture and lighting

In the short film Rebirth, French free diving champion Guillaume Néry reflects on the positive benefits of breath-holding. “When we stop breathing, whether it’s for 10 seconds or 7 minutes, we stop thinking and get in harmony with ourselves,” he says. “It’s a feeling of rebirth.” At Florida Freedivers in North Palm Beach, first-level students learn to suspend their breathing safely and correctly. “We have a technique designed to lower your heart rate, saturate your bloodstream with oxygen, and remove CO2,” says training director Matt Pasa. “We usually get a two- to three-minute breath hold from people just starting out.” Once students have mastered skills like kicking in a pool, they practice diving with a rope in open water approximately two miles from shore. explorer’s delight: CAVE DIVING The ultimate thrill seeker’s sport, cave diving provides passage to some of the most inaccessible sites on Earth—and Florida ranks high on a short list of cave diving havens. Nestled along the Santa Fe River about two hours north of Orlando, Ginnie Springs has been dubbed the world’s top freshwater dive. The site’s Devil’s Spring System comprises three springs including Devil Spring, with 30,000-feet of complex passages. About an hour south of there is the state’s largest freshwater cavern, the Blue Grotto in Williston. A guided rope system leads divers to a 50-foot demarcation; more advanced divers can go to depths of 100 feet. Make a pit stop at the air bell, a submerged chamber with compressed air that allows divers to talk or take a breather—and be sure to wave hello to the grotto’s resident turtle, Virgil. Also in Williston is Devil’s Den, an ancient spring that dates back to 75,000 B.C., where remains of prehistoric man and extinct animals have been discovered. In Volusia County, Blue Spring State Park features a maze of cave passages stretching beneath a first-magnitude spring and manatee refuge. And Peacock Springs in Live Oaks is ideal for divers with stamina; it boasts one of the longest underwater cave systems in the country and nearly 33,000 feet of surveyed passages sheltering American eel and other aquatic life. winging it: WING FOILING Avid winger Gwen Le Tutour and champion kitesurfer Damien LeRoy are the duo behind a mega-popular YouTube channel that offers educational videos on wing foiling and other water sports. Currently, youtube.com/ damienleroyyoutube boasts more than 21,000 subscribers. “It’s probably the biggest YouTube channel in the wing foiling industry,” says Le Tutour (pictured here). “When we started, winging was exploding, and a lot of people were trying to learn the sport. But because it was so new, there weren’t many resources.” The Jensen Beach resident has even passed on his passion to his sister-in-law Kelly Adams, owner of Bunkhouse Coffee Bar in Jensen Beach. A combination of prone foiling and windsurfing, wing foiling (or “winging”) uses a handheld, inflatable wing to create enough momentum to push a foil board with a separate wing beneath it. Once it reaches a certain number of knots, the foil’s wing elevates the board above the water. Compared to some water sports, winging is relatively simple to become proficient at and mixes in a low-impact workout that strengthens your buns and back. Another advantage is you can sail in light winds and when waves are soft. Le Tutour says Jupiter’s beaches are great for

Before entering the water, all dogs receive balance training and are fitted with canine life jackets with coiled leashes attached to the paddleboard. Samantha Dishman, Salty Dog Paddle’s national development director, recommends renting a paddleboard before the lesson and having your pup practice sitting and lying on it at home to get used to the board. Salty Dog also offers kayaking lessons with your furry friend and rents doggy surfboards too.

indsay Autry is a well-known figure in South Florida food culture. As former executive chef of the Sundy House in Delray Beach and co-partner and founder of The Regional in West Palm Beach, she has garnered three nominations for James Beard Awards—more than any other female chef in the area. In February, she brought her talents to Jupiter and opened Honeybelle at PGA National Resort & Spa. “I had done events at the resort over the years, and when I saw the renovations they were doing to the property, I realized what an exciting opportunity it would be,” she says. “I thought there was a need in

North County for an approachable, family-friendly restaurant that reflected some of my culinary interests.” A North Carolina native, Autry began cooking at 9 years old, influenced by her Greek grandmother. “All the women in my family were tremendous cooks,” she says. After graduating from Johnson & Wales University, Autry spent 13 years working with Michelle Bernstein in Miami, Palm Beach, and Cancún. She describes her cooking style as an amalgam of Mediterranean influences and her Southern roots. Honeybelle is open for breakfast, lunch, and dinner and offers a diverse menu with something for everyone. The main menu features salads and burgers as well as a tuna poke bowl; a selection of wood-fired pizzas including The Classic (San Marzano tomato sauce, basil, and mozzarella) and The Hot Pie with pepperoni, pickled peppers, and hot honey; and handhelds like

the FL Catch sandwich and a traditional Maine lobster roll. “I wanted the menu to be interesting enough so that people could spend a week in the resort and dine [at Honeybelle] every day,” says Autry. The dish that most vividly reflects the chef’s Southern background is the Honeybelle fried chicken, designed to be shared by families or groups. The half bird is lightly brined with citrus and rosemary, breaded with Autry’s proprietary blend of flour and buttermilk, and served with mashed potatoes, pan gravy, hot honey, and buttermilk biscuits. Honeybelle’s beverage program includes a carefully curated wine list as well as a selection of signature cocktails. Guests may begin their meal with creations such as the Honeybelle (Goslings gold rum, passion fruit, lemon, and honey), the Peachy Keen (Redemption whiskey, peach nectar, almond sugar, and a red wine float), or the Southbound (Sombra mezcal, Espolòn tequila, blended citrus, bell pepper, and agave). hile teaching English and living in a dorm-style apartment in Montevideo, Uruguay, Jupiter native Caroline McGinley earned the nickname “La Gringuita,” Spanish for “little American girl,” from her fellow roommates. She also realized that a lifelong hobby of baking cookies had some economic benefits while abroad. “Cookies were a way for me to make some extra money, but they were also a vehicle to express myself,” she says. “I ended up starting an informal business and introducing American-style cookies to Uruguay.” Her inspiration was the traditional Uruguayan confection known as an alfajor, which is essentially a pair of butter cookies sandwiched with dulce de leche. McGinley experimented and came up with her own signature recipe and launched her brand, La Gringuita, upon her return to the United States, right around the start of the pandemic. “I really enjoy the artistic aspect of baking,” she says. “But the key thing for me is connecting with other people. Baking made me realize I had hidden talents and I could have an effect on others by sharing things I make.” Her frozen cookie dough is currently sold at nine local stores including Cod & Capers Seafood in North Palm Beach, and she interacts with customers weekly at the Abacoa Green Market, The Gardens GreenMarket, and Swank Farmers Market in Loxahatchee. Her cookies are stuffed with berry jam (The Jammy), Ghirardelli chocolate (Brown Buttah), dulce de leche (El Churro), or a dark chocolate souffle (Chocolate Souffle). She uses natural ingredients with no preservatives, and the frozen dough has a six-month shelf life; the format allows customers to bake batches or single cookies. Says McGinley of her plans for the company: “The dream is to have my own facility and to be in every frozen section of every store.” gringuita-cookies.com

Flavor Palm Beach has helped diners explore and experience the best food in Palm Beach County since 2007, and after many wonderful years, the program is under new leadership. Kerri Paizzi is the new owner and CEO of Flavor Palm Beach. Originally from Long Island, New York, Kerri has worked and lived in South Florida since 2010. Kerri has nearly 20 years of fine dining experience, and she is the Founder and CEO of Monarch Marketing and Design, a boutique marketing firm specializing in creative social media strategies and digital marketing. Kerri is excited to use her combined talents to build on the success of Flavor Palm Beach, and to lead Flavor into the next chapter. “Flavor Palm Beach has an incredible reputation, among diners and restaurants alike, and it was important to us that we preserve what people have grown to love over the last 15 years. It is my honor to continue the great work put in by Briana (the founder of Flavor Palm Beach). That being said, we’ve made a few tweaks to this year’s program to create more opportunities for our restaurants and to create even more culinary adventures for our dinners.” - Kerri Paizzi, Flavor Palm Beach CEO Dozens of Palm Beach County eateries are participating in Flavor Palm Beach 2022, which runs through the month of September. Dinners can expect the classic prix fixe lunch and dinner options, as well as a few other unique dining experiences. What can locals expect from this year’s program? As always, diners will have the classic Flavor experience of three courses for a set price for lunch and diner. But this year, we wanted to give our restaurants more room to be creative and the opportunity to offer expanded menus. Diners will see prix-fixe menus ranging from $35 to $65, some including wine pairings, and even some restaurants hosting curated small group culinary experiences. Any new restaurants participating this year? Yes! Crosby Kitchen and Bar, Blue Pointe Bar & Grill, Honeybelle, The Butcher Club are all new this year. One of the amazing things about Flavor Palm Beach is the number of restaurants who participate year after year. Some of the favorites diners can expect to see from last year are Evo Italian, La Masseria, Raindancer Steakhouse, La Goulue, The Atlantic Grill, Cafe Centro, The Parisian, and Table 26, just to name a few. What makes this year special? This is a really unique year for restaurants, who are still trying to find a new normal coming out of the pandemic. Additionally, we are beyond excited about our newly founded partnership with Cheney Brothers, which has allowed us to offer additional benefits to participating restaurants. We recognize that these are challenging times for many. In our mind, programs like Flavor Palm Beach can create an occasion for diners to treat themselves, to experience a new restaurant, and really, to celebrate!
