An acquired taste

hen I was a kid, I didn’t like seafood. Well, that’s not entirely true—I loved scallops and, oddly, I also enjoyed these little mollusks called periwinkles, which are basically tiny snails. During summers spent on Cape Cod, I’d pluck them from the rocky shore, stick a toothpick into the shell, and eat the salty snail—raw. Pretty strange thing for a kid who didn’t really like seafood to do.

But as years passed, I developed a taste for all kinds of fish. My family being Portuguese, a big staple in our household (especially on holidays like Christmas Eve), has always been bacalhau— pronounced “bah-kal-YOW”—which is a traditional dish of dried, salted cod, along with ingredients like potatoes and eggs, simmered together for hours in a giant pot. Not my favorite, but being exposed to it so much growing up sort of forced me to be open to the idea of fish, if that makes sense, and today there’s not much in the way of seafood that I don’t love (especially a heaping pile of fried scallops from this place Kelly’s up in Massachusetts—YUM!).

Anyway, seafood reminds me of childhood—and I’m super lucky to live in a place now where I have access to some of the freshest fish around. That’s why I’m so stoked about the feature on page 48, “A Sea-to-Plate Adventure.” We got to tag along with Chef Tim Nickey, of Lucky Shuck Oyster Bar & Taphouse, as he spent the day fishing with his colleague John Share, who manages The Tacklebox. He even let us follow him home to watch him transform the day’s catch into a delicious meal for his family. We’re excited for you to see how it all unfolds.

Spring is in the air, and the chefs featured in another story, “Taste of Spring,” are taking full advantage.

Food for the soul

I

was reminded of the importance of high-quality, nutrientdense foods while on a recent retreat. The intention of the retreat was to learn how to provide yourself with self-care and self-love and be healthier in mind, body, and spirit. What better way to explore this than through organic, healthy, gourmet plantbased foods?

Every dish had a “benefit backstory,” such as “this has tons of vitamins and fiber,” “this will assist with cognitive function,” and “this will boost the immune system.” The experience evoked visceral feelings of being nurtured, loved, and nourished from my stomach right to my very soul. Every meal was delicious, vibrant, balanced, and deeply satisfying. Hippocrates said, “Let food be thy medicine and medicine be thy food,” and our meals served as a modality in keeping us light, alert, mindful, loved, and healthy.

As much as the practical and spiritual lessons I learned will be forever ingrained in my mind, so will the images of the nutrition specialists conceptualizing, creating, and serving revitalizing meals throughout the day. It was one of the highlights of my experience and proved so beneficial to my journey.

We all have very intimate relationships with food. It’s not only a source of nourishment, but it also plays an integral role in celebrations, connections, social gatherings, and fun. Too often, food can negatively serve as a source of comfort, distraction, and addiction. Given its life-giving power and importance, we must maintain a healthy relationship with food and create good habits surrounding what and how we eat.

We celebrate all things epicurean in this April issue and hope you take inspiration from local chefs whose culinary dishes are perfect for spring. Pair them with botanical-infused cocktails and you have a delightful combination. It can’t get any fresher than catching your own meal and lovingly preparing it at home, as one chef did, but while most of us don’t have the luxury of doing that, the next best thing is to eat farm-fresh, locally grown foods that are dense with nutrients.

Spring is the perfect time to check out farmer’s markets and enjoy our local restaurants, as the snowbirds fly back north and the air is still cool and crisp. I hope that this issue whets your appetite and that you are inspired to experiment with nutritional recipes, choose seasonal fruits and vegetables, get creative, and stay healthy—because you truly are what you eat!

exico City–born Kelly Rooney grew up living in different parts of the world with her family, which sparked in her an appreciation for the beautiful, unique goods she discovered throughout her travels. In 2018, her fascination with fashion and culture prompted her to launch Josephine Alexander Collective, a fashion and accessories line named for her three kids. “I started off wanting to showcase the beautiful artisan accessories I grew up with, and it quickly took on more meaning as I went forward,” says the Juno Beach resident. “As I was doing my buying, I saw how grateful the artisans were for my purchases, how proud they were of their work, and their eagerness to keep working with

Best friends Alex Melillo and Roly Nesi describe themselves as “tequila drinkers, serial entrepreneurs, branding lovers, and guys who like to have fun.” They both enjoy a good, portable hard seltzer but found themselves disenchanted with the

ingredients in most brands out there. So during the onset of the pandemic, they decided to create their own. “We felt we could do the category justice,” says Melillo.

The Jupiter-based beverage, Chido (pronounced “CHEE-dough”), fuses premium blanco tequila with sparkling water and contains no artificial ingredients; it’s also gluten- and dairy-free. Ellyn Zarek helps promote the art of prose throughout the county

J

upiter Farms resident Ellyn Zarek has contributed to the Chicken Soup for the Soul books, had her short stories read on NPR by local actors, and won Best Fiction Writer in 2016 for her novel Far Town, awarded by The Palm Beach Book Festival (another novel she cowrote with five others, Detours, is set to debut this spring). She also sits on the board for The Cream Literary Alliance, a group of writers in Palm Beach County dedicated to promoting the power of the written and spoken word to effect positive change through education, outreach, and public events. “We came together to offer opportunities for emerging writers as well as seasoned authors to present to a live audience,” says Zarek. “We hold a few public events each year, including readings of prose, essays, and poetry.” Zarek reads and judges submissions from poets during public readings and coordinates coffee shop roundtable discussions.

She is currently planning a poetry reading for the new anthology Black Lives Matter: Poetry for a New World, in honor of National Poetry Month. The April 10 event is free and virtual; a link will be posted on the group’s Facebook page and website. thecreamwpb.org ❖

eality TV changed the life of hometown girl Tiffany Copeland. Born in Jupiter Farms, Copeland fell in love with manatees while kayaking and canoeing on our local waterways. From an early age, she wanted to protect the aquatic mammals, later studying their lives more closely at the Columbus Zoo and Aquarium in Ohio.

“I have had a lifelong passion for manatee rescue and conservation,” says Copeland, 35, who was third stewardess on season one (2016) of Bravo’s popular reality show Below Deck Mediterranean.

“I studied to become a marine biologist at Florida Atlantic University. After I got my degree, I learned that you can’t make any money doing it, so I started looking for other things.”

She worked on dredge boats, got a job as a Marine Endangered Species Observer (which entails monitoring federally protected sea life), and served as a camp instructor in the Florida Keys teaching children marine biology.

“I liked all of it, but I still wasn’t making any money,” she says. “Then, in 2015, I went on a blind date with a guy who worked on Johnny Depp’s boat in Fort Lauderdale, and he convinced me to become a stewardess so I could learn how to be a captain. Soon I began working on a 115foot boat.”

When she heard about the Bravo show, the adventurous and naturally curious Copeland contacted producers in hopes of getting cast as a crew member on a yacht. “I sent a bio and pictures of myself, and they called the next day,” she says. “They said I would be a second or third stewardess. I was so excited about being able to enjoy international travel on the water.”

She was assigned to the Ionian Princess, a 150-foot luxury yacht that would head out all around the Greek islands. But while the experience was certainly thrilling, she says it all became

a bit overwhelming. Naive about what to do on the yacht as part of a television show—which chronicles the crew dealing with personal issues in hopes of improving their professional lives—Copeland butted heads with Chief Stewardess Hannah Ferrier, who she says had issues with her inexperience as a stew.

“It was trial by fire,” she recalls of the grueling month and a half. “I worked 18-hour days for six weeks, lost about 16 pounds, and dealt with constant stress.

I got to see Europe, but I missed being outside.” She ended up writing Ferrier a note explaining that she felt producers were trying to pin them against each other solely to create drama. Eventually, she says, the two became friends.

“We visited island cities like Naxos, Mykonos, and Santorini, and it was wonderful getting to travel,” says Copeland.

“When the season ended, I returned to Florida to get my captain’s license.” She found a job as a mate and spent a season in Italy, followed by a stint on a 41-foot sailboat, before securing another mate gig on a boat in the Bahamas.

In 2017, while in Saint Lucia, she met Evan Jones. They were working on boats docked next to each other and, with a shared love of the water, they would kayak, paddleboard, and party together at beach bars. In 2019, Jones—who is also a marine biologist—proposed. They were married in Asheville, North Carolina this past October, have since settled in Stuart, and are expecting a baby this summer.

While not working now, Copeland hopes to go back into marine biology and to her first love: manatees. “I have enjoyed my travels and filming,” she says. “But conservation and rescuing manatees are my real passions.” ❖

HOW ARE YOU GUIDING YOUR CLIENTS IN TODAY’S VOLATILE ENVIRONMENT?

While the specifics of our guidance obviously vary by client, our recurring theme is: investment success is more likely to happen through thoughtful portfolio management. This means risk analysis, evaluating concentration, and leveraging quantitative and qualitative research.

Volatility can muddle investor thinking. In our experience, a basket of investments hastily brought together during market swings can also bring with them unwelcome surprises: tax consequences, increased risk, lower returns and lost opportunity.

WHAT CAUSES MARKET VOLATILITY?

Wide swings in the marketplace can have many causes, and sometimes unknown causes. The field of behavioral economics is devoted to the study of the relationship between emotion and financial decision-making. Numerous studies have shown that investor behavior during periods of marked volatility—following a selloff trend, for example—can result in poor returns. A recent Dalbar study compared the 20year results of an average mutual fund investor to indices: the average investor, who sometimes resorts to market timing or other performancechasing strategies, underperformed based on measures of annualized returns and the growth of $100,000.*

ABOUT GEORGIA When Georgia Heard’s father left home for the Vietnam War, the then 8-year-old used poetry to express her mixed feelings about it. “Poetry gave me clarity,” says the North Palm Beach resident. “When I watched news of the war on TV, I was afraid that my father wouldn’t come home alive. It was difficult to talk about what I was feeling so I started writing instead.”

She earned a Master of Fine Arts in poetry from Columbia University and subsequently published 19 poetry collections for children and adults. Her newest adult collection, A Field Guide to the Heart, will be published this summer.

Heard has given seminars, workshops, and keynotes on writing and poetry in schools and universities all over the world. She also leads online poetry writing workshops through The Poet’s Studio (visit georgiaheard.com for details) and has been a regular at the Palm Beach Poetry Festival and the Poetry-by-the-Sea event at Jupiter Beach Resort and Spa. Through these avenues, the award-winning author helps others use poetry as a tool to endure their own hardships.

“When we don’t pay attention to our inner lives, we become empty,” says Heard. “Poetry can help us nourish that inner space even though sometimes it’s not easy to do. People are often intimidated by poetry because of the way it has been taught, but I believe everyone starts out as a poet. It’s one of our greatest tools for living.”

ABOUT JOE Stuart resident and retired city planner Joe Banfi never set out to write poetry. Rather, he says, the words just came to him. “I was drawn to poetry spontaneously, without any reason or explanation,” he says of the passion he discovered more than 50 years ago. “The words came and fell on paper. It was pure freedom of expression without boundaries or rules.”

Others quickly took note of his talents. Recalls Banfi: “The best compliment I have ever received was from an English professor who said, ‘Joe, you have a unique and interesting way with words.’” Yet he has never felt inclined to publish his work. “It’s strictly a hobby meant for self-reflection and entertainment,” he says of his poetry, which covers a wide range of topics, from human nature to physical nature. “I hope my poetry evokes feelings and thoughts from the depth of the human soul.”

He does share his prose publicly at two monthly poetry events: Howl at the Moon Writers’ Jam in Stuart and Performance Poets of the Palm Beaches, typically held in Lake Worth but currently taking place online.

ABOUT CHRISTIE In 2015, after spending more than 20 years working in the medical field, Port St. Lucie resident Christie Page decided it was time to turn the hobby she’d embraced since childhood into a career. Since then, the poet and author has had her work published in numerous journals and magazines and has been a regular at ArtsFest in Stuart, where she won the ArtsFest Literary Award in 2017 and 2018.

“Poetry has the ability to show that there is beauty in everything— misery, love, loss, grief, elation, and happiness,” she says of her craft, which she hones through writing workshops throughout South Florida.

My favorite thing about Jupiter is the family environment. It has a surprisingly smalltown feel close to big cities and provides access to my favorite outdoor activities, including golf and boating. There is no other city like Jupiter, and I am humbled to be serving our community.

Success is measured by how many patients’ lives I can impact daily, either through standard noninvasive medical care or surgical correction of any underlying deformities acute or chronic.

What is your passion?

My passion is providing the best healthcare that I possibly can by implementing the newest treatments and technologies. Currently, we have an excellent team that performs laser therapies for the foot and ankle along with regenerative medicine to optimize overall foot and ankle lower extremity function.

What do you do to stay motivated?

What keeps me motivated is knowing how I am making a difference on a day-to-day basis with my patients. I strongly encourage patients to do daily activities that contribute to their mental wellbeing and overall health. I also enjoy spending time with my family and friends.

What conditions are typically treated in your practice?

Heel pain, ankle replacements, bunions, sports injuries, foot and ankle trauma, fungal nail infections and treatment of varicose veins of the leg.

What are the current treatments for patients living with heel pain?

Shockwave Therapy, Amniotic Stem Cell Therapy and Radiofrequency Therapy.

How often does your practice perform procedures in ambulatory surgery center setting?

We perform 90% of my procedures in an ambulatory surgery setting. The only procedures that we perform in a hospital setting are major reconstructive surgeries or procedures on patients with restrictive co-morbidities, such as obesity.

What role do PRP injections play in foot and ankle surgery?

We have done many PRP injections in our practice.

These injections mainly play a role in the regeneration of soft tissue. After three to six months, the human body will decrease the inflammatory healing process.

In patients with a chronic injury, one of the best options is to increase blood supply to the area. We have had very positive results with PRP injections.

In the ASC setting, we have used PRP injections to augment many of our soft tissue procedures, such as ligament repair. We are also using these injections to promote bone healing. In the surgical setting, we have seen the injections lead to quicker recovery times.

ew destinations capture the charm and refinement of Southern living quite like Sea Island. Upon entering this resort, nestled on the southeastern coast of Georgia, one becomes enchanted with an abundance of native flora and fauna, all of which is complemented by an array of accommodations. Spanish moss drapes across the serpentine branches of Southern live oaks, resurrection ferns crawling up the historic trees’ trunks. Brown marsh rabbits hop along the water’s banks as eagles soar high overhead. All of this sets

the scene for languid days of sunbathing, adventurous excursions amid nature, and rigorous rounds on the golf course, among other pursuits.

To be close to it all, book a room at The Cloister. Although the original Mediterranean-style building conceived by architect Addison Mizner no longer remains, the new iteration of The Cloister carries on its legacy, complete with a Spanish Lounge that features a ceiling, chandeliers, and stainedglass windows saved from the circa 1928 design. the solarium, where the chirps of peachfaced and yellow-collared lovebirds fill the sundrenched space. On the upper floors, arcades give way to plush guest rooms and suites outfitted with hardwood floors, Turkish rugs, and beamed ceilings.

From The Cloister, it’s a short saunter to the spa or the Beach Club, where guests can savor fresh seafood at Southern Tide or hit the bowling lanes at Sea Strike & Pub. Here, you can also peruse the Nature Center or embark on an outing with a resident naturalist. To learn even more about Sea Island and its inhabitants—both past and present, animal and human—reserve a bike tour with a historian, who will give you the inside scoop on a few of the 600 or so private cottages dotting the property, some of which are available to rent.

Perhaps the best thing about a Sea Island vacation is that there truly is never a dull

moment (unless that’s what you’re into). From tennis to squash, falconry to horseback riding, there’s an activity to suit every interest. Over at The Lodge, golf reigns supreme. In addition to an 18-hole putting course, visitors can choose from three courses and work on their swing at the Golf Performance Center. The Lodge also houses on-site guest rooms as well as cottages nestled along the greens. Each evening, a bagpiper makes an appearance, upholding the Scottish tradition of playing the golf courses “to sleep.”

And while it may be their bedtime, it doesn’t have to be yours. Head to the Oak Room to tuck into Southern comfort food with a twist. Think charred buffalo cauliflower in a tangy hot sauce; fried chicken that has been brined, sous

vide, and flash-fried to perfection; and Georgia shrimp and grits served with a lemon beurre blanc and lobster oil. Finish the evening with a nightcap from the playful cocktail menu. F

or years, the owners of a charming mid-century home in Jupiter used the compact cinder-block cottage as an easy-to-access vacation home while raising their three sons in Fort Lauderdale. But after their children grew up and moved out of the family residence to the south, they decided the time was right to make their Jupiter getaway a full-time dwelling. “When our sons moved into their own homes, our Fort Lauderdale house felt way too big, and we were living in only part of it,” they say. “We loved the community around our vacation home, and we wanted to be closer to the water, so we opted to make the Jupiter home our primary residence.”

There was only one problem with their plan: The 1,600-square-foot weekend home wasn’t quite large enough for the entertainment-oriented lifestyle the couple was accustomed to. So they tapped their college friend James Rill, principal of Rill Architects,

to help them renovate and enlarge the single-story residence to make it viable for full-time use. Thanks to Rill’s astute alterations and additions, the understated home is now a comfy, easy-care, beach-inspired haven that is ideally scaled for everyday living for the couple and their black Lab, Charlie. Yet it is also large enough to accommodate their three sons and daughters-in-law, as well as a growing brood of grandchildren, when the whole family gathers on weekends or special occasions.

“The primary goal was to open up and enlarge the house to make it conducive to family living and entertaining,” says Rill. To give the home more gravitas as a primary residence, Rill sought to enrich both the interior and exterior with more character and elegance. One of his first moves was to create a front exterior courtyard by repositioning the garage and adding built-in window boxes and a trellis at the entry to create a sense of warmth upon arrival. “The garden wall and planters give the home the feeling that it’s opening its arms to you as you enter and creates the air of an outdoor room from the inside,” says Rill. Working with local builder Mercurio Construction, he also added a new standing-seam metal roof with outrigger brackets under the eaves and new windows and shutters as character-building exterior elements. An added bonus: A brand new patio, pergola, and lap pool—elements the home lacked in its previous incarnation—enable the easy living to extend seamlessly outdoors.

The home itself was also reconfigured to allow for an expanded and more family-friendly layout. On the couple’s wish list was to transform the three-bedroom-two-bath house into one with four bedrooms and three baths. They also wanted to add a mudroom and laundry area, open the kitchen to the living/dining spaces, and expand the master bedroom with additional wardrobe and closet space. While initially the owners and

primary sunroom/living space that opens to the pool; and expanded the master suite to make room for larger closets and dressing areas as well as a laundry room. In all, the additions and improvements increased the size of the home by roughly 40 percent, to 2,700 square feet.

Rill also tended to details that add substance and make the home worthy of primary-dwelling status.

Among the upgrades that contribute to a newfound sense of elegance: a cedar ceiling in the lofty sunroom; new V-groove paneling in the sunroom and kitchen; and millwork on the tray ceiling of the dining room, where a new table from Restoration Hardware surrounded by slipcovered chairs from Ballard anchor the space with contemporary flair. Working closely with the owners on every aspect of the interiors, Rill helped shape the rooms to reflect their personal style by mixing cherished pieces from their previous home with new furnishings and accents that suit the home’s new size.

the architect talked about adding another floor to accommodate these spaces, Rill strongly encouraged them to expand laterally instead to retain a lower profile, in keeping with the scale and proportion of other homes in the area. With the owners’ consent, he added an extra bedroom and bath on one side of the house, making the overall plan more symmetrical, then moved the garage closer to the street and added a mudroom to the other side of the home. He also opened the kitchen to the former modest living area and adjoining dining room; converted a former screened-in porch into an expansive, light-filled

delicate lantern from Lumens Light in the dining room—brighten the home with classic modern flavor. Wide-plank wood and ceramic flooring underfoot keeps the home easy to maintain, and fresh coats of Farrow & Ball paint in a diverse palette inject richness and warmth.

Now that the renovation is complete and the owners have had a chance to enjoy the home’s expanded and updated form with the entire family, they see the dwelling as an ideal setting for their latest stage in life. “It’s cozy and functional, and we use the whole house,” they say. “It’s the perfect size—we love it.” ❖

otoring a 27-foot fishing boat out of the Jupiter Inlet, past stately homes, morning exercisers in the park, and sightseers on the jetty, the boat’s captain, John Share, and Tim Nickey are engrossed in plotting the morning’s strategy, comparing notes on what’s running (kingfish, wahoo, cobia, and mahi-mahi) and where to drop their lines. The two have more than a passing interest in reeling in a big catch: Share is the manager of The Tacklebox, and Nickey is the executive chef at Lucky Shuck Oyster Bar & Taphouse, two of the eateries at the new Charlie & Joe’s at Love Street complex in Jupiter. They are headed out to sea for a little offshore action. On this lovely Wednesday morning, the duo has agreed to spend a rare day off of work

catching some fresh fish, which Nickey will then turn into a tasty meal at his Palm City home.

It’s clear they enjoy any excuse to indulge their love of fishing.

Excitement ramps up as the boat plows through 3- to 5-foot Atlantic swells and powers a few miles east, to the edge of the Gulf Stream.

“Okay, time to get serious now,” Share says, as he and Nickey bait the lines.

For the first hour, the fish aren’t biting. Share points the boat toward shallower water, and everything changes. At about 70 feet, Nickey hooks a 30- to 35-pound kingfish almost as soon as his live bait hits the water. “We must have been right on top of him!” Share shouts, as they synchronize their movements around the boat,

Nickey reeling and Share moving things out of the way to clear a path. The fish swims toward, then away from, then parallel to the boat before Share gaffs it and pulls it aboard. “I’ll make this into smoked fish dip,” decides Nickey without missing a beat.

Nickey stows the kingfish in the cooler, but he still wants a mahi-mahi or cobia for the main meal, so the hunt goes on. With heavy rain in the forecast and already visible off the coast, Share and Nickey decide to troll off the back of the boat on the way back to the inlet and hope for the best. Luck is on their side today: They pull in a 22-inch mahi-mahi.

Back at the dock, the two ice the kingfish and, with the mahi-mahi in the cooler, Nickey heads home to prepare dinner for his family. After a quick shower, he’s ready to get to work. His wife, Lenia, and sons Christian, 10, and Michael, 8, act as assistants and sous-chefs—Christian, in particular, likes to help, remaining by his father’s side throughout the process clad in a matching apron.

Guiding his son’s hands while giving him careful instructions, Nickey lets Christian chop an heirloom tomato. Nickey is making a fattoush salad, using fresh vegetables and herbs he pulls out of a bin from the bonus fridge in the laundry room. “How much olive oil, Dad?” Christian asks, his hands

hovering over the bottle of oil and measuring cup. Squeezing fresh lemons for the dressing attracts both boys to the action.

Nickey’s manual citrus squeezer is at the restaurant, and the new one he recently ordered hasn’t been delivered yet, so he uses hinged metal tongs as a makeshift squeezer. Both boys get a set of tongs, place the lemon halves between them, and go about extracting juice into a bowl.

Meanwhile, Lenia is busy keeping the family’s new Labrador puppy, Stella, out of the way, pulling plates from various cupboards and cleaning up the occasional pan.

An accomplished cook in her own right, especially proficient at Greek recipes handed down through her father’s side of the family, she prefers to let her chef hubby take charge when he’s home.

Married for 13 years, the two went to the same high school in Bucks County, Pennsylvania but didn’t start dating until, by coincidence, they both moved to South Florida in 2000. They were introduced by friends and began comparing notes on their shared past. “My mother was his fifth-grade teacher,” says Lenia. “We didn’t figure that out until we got together.” They lived in Miami at first but eventually moved to Martin County so their sons could grow up with plenty of land and a slower pace of life.

Nickey began working in the restaurant business as a teenager in Pennsylvania. “I was in high school, and I needed a job,” he says.

“I started as a dishwasher at Isaac Newton’s, and six months later I moved to prep cook, then line cook. I met a lot of great people I still keep in touch with today. We had a lot of fun.” A graduate of the prestigious culinary school Johnson & Wales, Nickey says he

learned even more about the trade on the job. Over the years, he perfected his skills at various eateries in South Florida—including Abe & Louie’s, Morton’s The Steakhouse, and Kapow! Noodle Bar—before being recruited for the top job at Lucky Shuck.

As Nickey methodically and neatly prepares the night’s meal, he explains his techniques. The salad vegetables and herbs are chopped and ready to mix with the dressing, so he moves on to the mahi-mahi, efficiently cleaning it at the kitchen sink and slicing off fillets. “Tonight, I’m doing a crust of garlic, panko, and Thai basil,” he says. “I’m a big fan of crusting fish because it keeps it moist and preserves the flavor.” To make the panko mixture stick to the fish, he mixes mayonnaise with sambal (a spicy Indonesian chili sauce) and spreads it on the fillets before sprinkling on the panko.

Fish is often on the menu at the Nickey residence when Chef is in the kitchen. Both boys are “adventurous eaters,” says Lenia.

“They’ll definitely try everything.” But comfort food is also a big hit with the family. “I make braised short ribs, a pot of chili once in a while, meatloaf, things like that,” says Nickey.

Not unlike many families with active lives, meal planning often happens “on the fly,” says Nickey. “I’ll call Lenia and say, ‘What do you want for dinner?’ Then I’ll swing by Publix on my way home.”

When things are really hectic, Nickey gets innovative, always managing to pull a rabbit out of the hat. “A lot of nights, it’s like, we know we have chicken thighs, but what will we do with them?” he says.

“So I just start going through the refrigerator.” Adds Lenia: “He’ll make things that are delicious, and I won’t understand how because we had nothing in the fridge. He always adds so much flavor and is so creative. I would never think to pair certain things together or add certain sauces, but it always works.”

The final test of Nickey’s skill comes when everyone gathers at the large, white wooden kitchen table to sample the goods. The boys have a hard time sitting still and finish quickly, but they are more than happy with the meal. “It’s good, Dad,” says Michael, before bolting off to play with Stella. Lenia agrees: “I love eating like this because it’s light. It’s simple, but so fresh and flavorful.” ❖

nyone who has traveled in Spain is familiar with the tapas crawl: As mealtime approaches, diners wander from one bar to another, consuming a snack and a glass of wine or sherry

at each. Over the past decade, the popularity of small plates has exploded here in the States as well, and they can now be found everywhere from gastropubs to fine dining establishments.

The Mendez family is on a mission to bring authentic Spanish tapas to South Florida. Juan Carlos, along with his brother Benito and his son Carlos James, were partners in Tapeo Restaurant in West Palm Beach before opening Andalucia Tapas Bar & Restaurant in Tequesta last December. “We’re re-creating the traditional flavors of Spain,” says Chef Benito, who hails from Galicia in Spain’s northwest corner. He uses recipes inherited from his mother and has studied specialized regional dishes throughout the country. “We make all of our stocks from scratch, use Calasparra rice from Murcia, and flavor our paella with saffron.”

of octopus. Even so, paella stands out as the restaurant’s signature dish and has its roots in Benito’s childhood on a rural farm.

“My mother grew all of our produce—we never went shopping,” he says. “People took whatever they had on hand, threw it in a pot with rice, and stirred it frequently with a wooden spoon. We offer three different versions [of paella], which we simmer slowly for 30-35 minutes so the seafood, chicken, or sausage gradually infuses the dish with flavor.”

Carlos James, who runs the front of the house, grew up in the restaurant business. “I started working for my father at age 14 as a busboy,” he recalls. “We strive for culinary excellence, but we also want to offer an intimate, family-style experience.

When you enter the restaurant, you immediately sense the warmth. We want you to feel like you’re in Spain.”

That feeling carries over to the wine list, where guests can order full-bodied reds from Rioja, Ribera del Duero, Toro, or Priorat, and crisp whites from Rueda and Rías Baixas. Sangria is available by the glass or pitcher, and craft cocktails include the Andalucia (Oxley gin, Campari, honey syrup, pineapple and lime juice) and the Spanish Spritz (Grey Goose vodka, agave, pineapple and lemon juice, muddled kiwi, and basil).

“Spanish tapas have had an influence on global cuisine,” says Carlos James. “Many of our customers have heard about them but have never had a chance to try them. We want to bring something to the community that no one else has.”

Here, he shares how to make one of his favorite dishes, chicken schnitzel and arugula salad with lemon-balsamic dressing. kitchenpb.com (Serves 4) INGREDIENTS: 4 8-oz. chicken breasts 3 lemons 1 cup flour ½ cup grated Parmesan cheese 3 eggs ½ cup water

4 cups panko bread crumbs Salt and pepper 4 jumbo eggs 2 tbsp. clarified butter 2 tbsp. extra virgin olive oil

PREPARATION: Place chicken breasts between two sheets of plastic wrap and pound until evenly thin. Season well with salt and pepper. Zest two lemons and set aside; save juice for dressing. In a mixing bowl, mix flour and grated cheese. In another bowl, mix three eggs and water. In a third bowl, mix bread crumbs and lemon zest. Dredge chicken first in flour-cheese mix, then in egg mix to coat, then dredge in bread crumb mixture. Set aside in refrigerator. When ready to cook: Fry four jumbo eggs sunny-side up. Set aside and keep warm. Over medium heat, pan-fry the schnitzel in clarified butter and extra virgin olive oil. Cook about three minutes on the first side, until golden brown. Turn and finish cooking for an additional two or three minutes, until golden brown.

DRESSING AND SALAD INGREDIENTS: Lemon juice Salt and pepper 1 cup balsamic vinegar 1 lb. mushrooms 1 ½ cups extra virgin olive oil 8 radishes 2 cloves garlic 1 medium sweet onion 1 oz. sriracha 1 lb. baby arugula PREPARATION: Slice mushrooms, radishes (thin, using a mandolin) and onion (thin).

Toss all ingredients in a large bowl. In a blender, combine remaining ingredients and blend until smooth and creamy to make lemon-balsamic dressing. Drizzle over salad.
