It’s hard to believe it’s May. To all the year-rounders on the Paradise Coast, in years past the month used to signal what we considered the end of the season—and along with it, the longawaited opportunity to drive down Pine Ridge Road in less than an hour, a chance to get in to your hairdresser on a whim and find a parking spot within walking distance of the entrance to your grocery store. What May brings now is just the end of the major events of the social season. There is so much more to this area that has captured the hearts of our visitors that many are increasingly switching their part-time status to become full-time Neapolitans. Many have discovered what we’ve known all along, that Naples and the surrounding area have a great deal to offer when the charity events wind down. All of the fabulous restaurants (several new ones opened just this year), world-renowned golf courses, breathtaking beaches, exclusive art galleries, pristine parks and unlimited access to retail therapy are still here. Why would anyone want to leave? May also brings a very special holiday: a chance to celebrate mothers. As a mother myself, my pride comes with each and every one of my children’s accomplishments. My younger daughter, Alleigh, will graduate from Florida State University this month. And as we watch her accept her diploma, we realize that another phase of her life is about to begin. My husband, Michael, and I could not be more proud of the beautiful, caring and sensitive young lady she has become. As she continues her education in the medical field, we know that she will touch many a life along the way as she has ours. Congratulations to all those parents with graduating children, whether it be from kindergarten, boot camp or college. Every step is an accomplishment to celebrate.

Fast Forward
It is hard to believe this month marks two years since the passing of our beloved publisher
and friend, Ron Woods. Though his absence has left an enormous void, his vision is still very much a part of our culture. Since acquiring this company in 1991, Ron had big plans. Under his guidance, all of our magazines became leaders in their respective markets—thanks to an unyielding commitment to lofty production values, captivating and superbly illustrated content, and successful advertising partnerships—and remain firmly on that track today. Another of Ron’s goals was to continue to grow and to invest in the future—both through our products and our people. Just as he did, we cherish the team of creative individuals
“
who make this company what it is, and we enjoy watching them grow, both personally and professionally. As for our products, they’ve never been better or more prolific. We now publish 12 glossy magazines and three editorial websites and continue to explore new opportunities every day. But perhaps Ron would be proudest of our sustained commitment to the communities we serve. We live by Ron’s mantra that giving back goes hand in hand with success—in fact, in many ways
Words to live by Success is not what you have; it is what you give away.
it defines success. Since establishing the Naples Illustrated charitable program two years ago, we have made meaningful contributions to a variety of causes, from child advocacy to health to animal welfare. We see it as a beautiful, everlasting tribute to the man who gave generously yet quietly, and who touched the lives of so many. When looking to the future, it is imperative to bow to the past and learn from those who came before us. As we chart a course for going forward, Ron’s enduring legacy informs our actions and, more importantly, warms our hearts. Some things will never change.

Don’t let an ugly screen ruin your view of Paradise!
Outdoor Screens at the Touch of a Button!
Automated roll-up screens for residential and commercial applications are the newest technology for large openings. At the touch of a button they provide the ideal environment for insect, sun and/or privacy control. When the screens are lowered there is minimal reduction in ambient light, outward visibility and air flow while keeping out windblown debris, insects, and other pesky critters. When not in use they vanish to leave a completely unobstructed view of nature.

Riding the wave of victory, Hap Fauth, an accomplished sailor and Naples resident, heads back to the sea for the next of several worldwide regatta events planned this year aboard his Maxi 72 yacht, the Bella Mente. In February, Fauth and his international team of 26 sailors were declared the overall champions of the 2015 RORC Caribbean 600, a 600-mile race around 11 Caribbean islands. After tackling Les Voiles de St. Barth in the Caribbean in the spring, Fauth will take Bella Mente to the United Kingdom, where he and his team will set sail on the challenging waters of the Solent, the strait separating the Isle of Wight from England’s mainland, for two more races before starting the world-class Rolex Fastnet Race in August. “We finally have a rig in that is to our satisfaction and a crew that has been put together very carefully in terms of chemistry, ability and commitment, so it should be a good year for us,” Fauth says. “The Fastnet is a particularly hard and unpredictable race with cold-water conditions and a very difficult sea state, so it will take 100 percent of our efforts to be victorious.” —Anna Bjorlin

Steven Leonard
In his far too brief life, Steven Leonard, who perished in a fire in February, created a lasting, positive effect on countless lives in and around Naples. As his good friend and colleague William Boyajian, owner of Port Royal Jewelers, recalls, it was Leonard who initiated a kind of charity dossier years ago, amassing a broad list of local nonprofits that their company would support, from the Humane Society Naples, to the Sunshine Kids, the Naples Zoo, the Guadalupe Center, Opera Naples and many others. “He said, ‘We can’t be the biggest jeweler in town, but we can have the biggest heart,’” Boyajian says. Following Leonard’s tragic death, Boyajian felt the need to make something good out of a very sad situation, so he founded The Steven Leonard Diamond Award Program to honor and remember his friend and continue his community involvement. Each year, the program will award a sizable diamond to a different charity. The first was a 2-carat radiantcut diamond donated to raise money for the Conservancy of Southwest Florida’s Magic Under the Mangroves gala in March. “One of the things he really wanted to do was inspire people to do more in the community,” says Boyajian. “His scope ranged from doing a tiny event for a group that was very small to one that would raise hundreds of thousands of dollars. He never saw a difference. It was always about the charity. In a way, he’s still living through this legacy.” —Kat Smith 36

panther rescue
This summer, the Naples Zoo at Caribbean Gardens (239-262-5409, napleszoo.org) will open a new Florida panther exhibit as part of an effort to provide care for injured panthers. Visitors will be able to see a 2-year-old male named Uno, who was blinded by a shotgun blast in Collier County and rescued by Florida Fish & Wildlife Conservation Commission biologists. Since Uno cannot return to the wild, the zoo is creating a permanent home for him that will help expand awareness of Florida panther issues. Courtney Jolly, a spokesperson for the zoo, says, “It’s a great education tool for us to have Uno here, to show people how beautiful an animal he is, and impress on them the fact that something needs to be done to save this endangered species that’s native to our state.” The zoo’s plan also includes a habitat space designed to provide temporary care for injured or orphaned panthers, along with an all-new large animal veterinary clinic. “The goal for our habitat space is to rehabilitate panthers,” Jolly explains. “For instance, if we find dehydrated panthers, they can come here for 24 hours and we’ll take care of them before releasing them back into their natural habitat.” —A.B.

Team Work Amanda and Roy Clark
Great relationships can flourish with a certain degree of tension, as illustrated by husband-and-wife artists Roy and Amanda Clark, who specialize in a unique form of artistic collaboration. Amanda paints vibrant landscapes on sculpted brass, aluminum and stainless steel, and Roy uses a grinder to remove some of the paint to reveal the glimmering metal underneath. The finished work creates the illusion of depth and movement. The two showcase their original works of art in their new gallery, the Clark Art Studio (616260-1533, clarkartstudio.com) in Mercato. Their combined effort creates a dynamic tension that translates to beautiful works. “It’s definitely a challenge,” says Roy, “but there’s also a release in power involved. I trust her to do her thing, and we both empower and encourage each other.” The Clarks moved from Grand Rapids, Michigan, after several people suggested they bring their artwork to Naples. “We took the chance and moved here, and it’s been nothing but success and new opportunities for us,” Amanda says. “I hope Naples continues to embrace our artwork, and I want our marriage to be a testimony that hard work, communication and a common love can create something beautiful that truly affects others.” —A.B.

The Family Experience “Where are you headed this winter?” “Cruising the Caribbean!” “Oh! Where are you leaving the kids?” If this conversation sounds familiar, you’re not alone. A cruise was once considered the escape of choice for romantic interludes or days of peace and quiet at sea. Boarding a megaship with children? Not so much. But as bringing children along on holidays becomes the norm and as cruise ships ramp up their family-friendly offerings, that way of thinking is a thing of the past. Family cruising is a specialty of Princess Cruises, with ships sailing out of Port Everglades in Fort Lauderdale to multiple Caribbean destinations. The newest of the fleet, the Regal Princess, is a gorgeous vessel with such dramatic details as a soaring atrium with gilded accents and a clear glass walkway jutting beyond the top deck, 128 feet above the ocean. (Kids, by the way, love this.) But the experience—especially where children are concerned—goes beyond the ship itself. During Caribbean sailings, famiThe Chef’s Table
lies can bond over activities that bring the generations together in adventure and fun. Among the offerings: swimming with dolphins, horseback riding on the beach (and through waves!), ziplining across tree tops, 4x4 safari tours and sailing an America’s Cup racing yacht. In St. Thomas, for example, a favorite excursion is underwater scooting, which allows adults and children aged 10 and older the opportunity to explore the deep without diving. Participants don a breathing helmet and board a BOSS (Breathing Observation Submersible Scooter), then descend to the dive site for close encounters of the marine kind. In St. Maarten, a great option for families is the lagoon kayaking adventure, which winds through Simpson Bay Lagoon en route to a secluded beach for swimming. It’s a good way to see the scenery and get some exercise. Sea days can be fun, too. The Princess Pelicans program lets kids aged 3 to 7 drop in and hang out for as long as they’d like. It’s not all movies and video games, either. Little sailors can take part in treasure hunts, create crafts and compete in their very own Olympics while Mom and Dad take in an early show or enjoy a rare dinner for two. While the Regal Princess is a big ship, there are ways to make the experience more per-

sonalized and intimate. Suites come with access to a private concierge lounge, where you can relax away from the crowds—and have the benefit of a dedicated concierge to book excursions, dinner reservations or spa appointments. For dinner, specialty restaurants Crown Grill and Sabatini’s offer a fine-dining experience in spaces that don’t feel cavernous. For foodies, the Chef’s Table is a must. After a galley tour to watch the chefs prepare dinner for about 3,000 people, dinner is served on a special table separated from the rest of the dining room by a light curtain. The Chef’s Table menu is not offered anywhere else on the ship—and neither is the personal interaction with the chef. The dining experience onboard Princess ships has been elevated further by the addition of Chocolate Journeys by Southwest Floridabased chocolatier Norman Love. Aside from savoring the chocolate confections, guests can partake in chocolate cooking demos and chocolate spa treatments. Or, simply sip a chocolate chili margarita. Now that’s sweet. The luxury yacht La Pinta (left) cruises through the Galapagos year-round. Two of the cruise’s essential Galapagos experiences are visiting Pinnacle Rock (right) and swimming with the sea lions (below right).
La Pinta
Voyage of Discovery More than 600 nautical miles west of Ecuador in the Pacific Ocean, the Galapagos Islands remain one of the Earth’s final untouched frontiers. The archipelago of 13 volcanic islands and 17 islets comprises a living museum of evolutionary biology—a land where plants and animals have evolved for centuries without human interference. Whether travelers were inspired by Darwin from high-school textbooks, intrigued by the pages of National Geographic or captivated by the stunning cinematography on Discov-
ery Channel, the Galapagos Islands have topped bucket lists since the advent of leisure travel. And even in today’s search for the next great “it” destination, the Galapagos prevail as a must-see. With human populations contained to a few pockets of select islands and strict rules governing visitation of National Park lands, cruising is the principal method for exploring the Galapagos. A carefully controlled inventory of small ships and yachts is permitted to island-hop the region on preselected routes. Notably, the luxury yacht La Pinta, a premium ship from Ecuador’s superlative tour operator, Metropolitan Touring, travels the eastern, northern and western circuits in three-, four- and seven-night programs, re-
spectively, all of which may be combined for longer cruise experiences. Cruising through Darwin’s diverse island funhouse is at once adventurous and exhilarating. With two island stops daily, each hour is an ambush of the senses. A single morning commingles a hike to the iconic Pinnacle

Rock on Bartolomé Island for sensational snorkeling among penguins, sea lions, tropical fish and stingrays followed by an afternoon traversing lava fields on Sullivan Bay with frigate birds overhead and marine iguanas below. Another day yields encounters with land tortoises and extended ambles along picturesque white-sand beaches where the red-and blue-footed boobies rule. Professional naturalists guide visitors step-by-step through their immersion in this natural selection. The “Choose You Own Adventure” experience grows even more bespoke, as travelers choose from panga (dinghy) rides, hikes, underwater adventures, photographic safaris and beach lounging against the Galapagos’ largerthan-life backdrops. The yacht buffers the twice-daily rite of passage with excellent meals, libations and cozy spaces—like a library, a bar and a rooftop hot tub and lounge—idyllic for soaking in the surrounds and swapping stories among fellow jet-setters. Twenty-four spacious and brightly decorated cabins provide a welcome respite from the action, each with an elongated, panoramic window maintaining an endless island or ocean view. By no means is La Pinta the ultimate in rest, relaxation or glamour, but nobody comes to the Galapagos with haute couture in tow or late mornings in mind. This is the realization of a true once-in-a-lifetime experience, sprinkled with modern luxuries to make this sojourn a rather comfortable one. ou’ll love the hot-rocks massage. Penetrating digits pummel your lower sacrum while you “ooh” and “ahh” as the world scythes by at 155 mph. You recline at 43.5 hedonistic degrees, your calves supported by levitating foot rests and your head buried in pillows stuffed with feathers surely plucked from the wings of angels. This is life in the cavernous rear compartment of Mercedes-Benz’s exquisite 2016 Mercedes-Maybach S600 über-luxury limousine. To call it a mere sedan is like saying Celine Dion has a pretty voice. No, this is the closest you’ll get to a biz jet on wheels. Yes, this is a Maybach—the manufacturer that built cars way back when. If you discount the 1930s, when Rolls-Royce-sized Maybach Zeppelins rumbled around Germany, Mercedes assembled Maybach 52s and 62s as recently as 2013. Not that anyone bought them: Between 2003 and 2013, Maybach sold an abysmal 3,200 cars worldwide. Maybe the low sales had something to do with the fact that they looked like stretched Hyundais or that the last-of-the-line 62s stickered for a jaw-

dropping half a million dollars. It just didn’t seem right spending that kind of loot and not having a Rolls-Royce Flying Lady or a Bentley Flying B on the bonnet. But rather than let the brand wither and die, Mercedes has taken a different and far-more businesslike approach: It’s offering value for money. True, you couldn’t exactly describe a car costing $190,275 base (and just less than $200,000 nicely loaded) as a good value. But when a regular Mercedes S65 AMG costs almost $210,000 and a long-wheelbase Range Rover Autobiography Black sells for $200,995, the Mercedes-Maybach appears quite the steal. Such competitive pricing has been made possible by basing this new Mercedes-Maybach on the greasy bits of Mercedes’ successful S-Class lineup. The body is stretched by 8.1 inches, all of which is given to the rear cabin. While there’s no mistaking the Mercedes-Maybach’s origins, Mercedes designers have given the car its own distinctive character. Up front, it’s very much S-Class. But at the rear, there’s more substance, elegance and visual gravitas. Wheels don’t come more distinctive and

dramatic than the 20-inch dished and polished alloys at each corner. Ben-Hur’s chariot didn’t have rims this cool. Powering the 18-foot-long leviathan is Mercedes’ thundering 523-horse twin-turbo V-12. But of course, nothing thunders in this car. As it spears from standstill to 60 mph in five seconds, the only real sensation of speed drivers feel is their bodies being squeezed into the seatback. Road noise? Wind noise? They don’t exist. Mercedes claims this is the world’s quietest production sedan. I wouldn’t argue. This also isn’t a wallowy, overstuffed Town Car-on-steroids. In its transformation to a Mercedes-Maybach, it hasn’t lost any of its S-Class handling precision or pedigree. Like the S-Class, it comes with the truly magical Magic Body Control adaptive suspension. Using a camera to digitally scan the road ahead, the car can instantly adjust the dampers to soak up lumps and bumps, delivering a practically perfect flat ride. It’s scarily efficient. If anything puzzled me, it was trying to work out who, exactly, would buy this impressive new Mercedes-Maybach. Every time I got behind the wheel, I felt I should be donning a peaked cap and gloves, which makes me think prospective customers are likely wealthy families with a driver on call or companies with chauffeurs on staff. More than 50 percent of the cars produced are earmarked for China, where the wealthy just don’t drive. Of course, owners could always just use the mighty MercedesMaybach as a relaxation chamber on their driveway and turn the hotrocks massager up to max. «

Mother’s Nature Mothers know the challenges of their role do not make for an attractive job listing, and recognition for their hard work can be rare. This Mother’s Day, we wanted to give a handful of neapolitan moms welldeserved applause. We asked readers to tell us how their moms became their role models. What follows are the inspiring stories of five Neapolitan moms, complete with defining attributes thoughtfully chosen by the child who nominated them.

Simone Lutgert Genuine, spunky, strong Daughter: Heather Dockweiler
With three children, four stepchildren and eight grandchildren, Simone Lutgert has her hands full as a parent. But she is also known for going above and beyond when it comes to helping those less fortunate in the Naples community, which she considers an extended family. “I feel it is important to give kids in this community the same opportunities I give to my own kids and grandkids,” she says. To accomplish this, Lutgert packs her calendar with commitments to support a wide array of nonprofits, such as the Golisano Children’s Museum of Naples and the Naples Children & Education Foundation. And while evidence of her philanthropy can be seen at many charitable events, what doesn’t make the society pages is her unwavering dedication to family. “She will do anything and everything, bend over backwards, for any one of us at any time,” Dockweiler says. “Even if we are driving her crazy or her schedule doesn’t permit, she makes it work.” Where Lutgert once provided hands-on help with her children’s school projects, Dockweiler sees her mom now extending the same unconditional support to the newest generation. Today, she is a permanent fixture at her grandchildren’s sporting events and dance performances, and acts as a party planner for family weddings, birthday parties and other celebrations. Lutgert jokingly asserts she handles it all with “a bit of craziness” and a lack of sleep. With her focus squarely on family, treasuring all the milestones and everyday moments, she encourages her children to always keep both feet firmly on the ground. “What I’m trying to instill in my kids is to be a real person who cares about other people,” she says. “It’s not about the clothes or the car you drive. To me, it’s who you are deep down, your essence, that matters in the end.”

From the outside, 34-year-old Emily Bua had a perfect life. She was married to a successful man, lived in a new home with her four children and dog, and had even started a local chapter of the National Parent Teacher Association. Behind the scenes, however, was a different story. Her marriage, Bua now admits, was extremely unhealthy. Friends and neighbors were shocked when she filed for divorce, and many in the community shunned the family, recalls daughter Tade, age 9 at the time and the oldest of Bua’s four children. It was the late 1970s, when divorce was not generally accepted, and the Buas were the only divorced family in Tade’s school district. The isolation and financial demand Bua felt as a single mother was compounded by the fact that her parents were no longer alive. Life felt like a constant uphill battle, but Bua knew she made the right decision. “I wanted to set an example as to how you should live your life,” she says. “I felt my children, particularly my daughters, should understand that you are entitled to be in a positive relationship.” Bua ultimately moved to Naples, where she built a successful real estate career. As she embraced her independence, a trait she encouraged in her children, she also embodied generosity towards others. Seats at the Thanksgiving table were often reserved for guests who didn’t have another place to go, whether it was a homeless person or the gentleman who worked in her office’s parking garage. “She always wanted others to believe that there were still good people out in the world,” Tade says. Bua’s decision to lead and parent by example inspired the next generation in her family: Tade’s siblings pursued careers in service-related fields—one is a guidance counselor, another a physician and the third a Los Angeles police officer—while Tade works side by side with her mother as a successful real-estate team. “My experience of being a mother is to enable your children to become adults, live a joyous life and do the things they want to do,” Bua says.

Anne Fleming can pinpoint the exact moment she fell apart. A neurologist had just informed her that her 2½-year-old adopted son, Sasha, would never speak, read or write. She walked out of his office, stood in the hallway and felt her knees buckle. While this is a moment she will never forget, everything that followed is what would ultimately define her. “I either had to deal with it and find the courage to face it head on, or give up and feel like a victim,” Fleming recalls. Unwilling to play the role of the victim, Fleming was determined to prove the doctors wrong. Drawing on skills she honed as a businesswoman in the luxury brands segment—like negotiating, holding others accountable, formulating and refining strategies and establishing goals—she channeled them into her new job as a mother. She took several years off work to be a full-time mother, and Sasha was a constant companion everywhere Fleming went. “I decided that I could either live in a cave and hide him or expose him in a way that could benefit us,” she says. Most of Sasha’s milestones happened later than other children’s, but they were even more significant because they were never expected to occur. He first spoke when he was 6. His first two-way conversation happened when he was 9. Fleming remembers fondly when Sasha was 12 and laughed for the first time when he really understood a joke. Today, Sasha attends Naples High School, an achievement that once seemed so distant. “My disability makes me different,” Sasha wrote in his nomination about his mother, “but Mom refuses to allow my differences to get in the way of us having a full and joyful life.” Fleming returned to work after 10 years and is now the general manager for Waterside Shops. She continues to make new goals and strategies for Sasha. “The best parents give their children both roots and wings,” she says. “At this point in Sasha’s life, the greatest gift I could give him is to help him become independent. We work on that every single day: how to do a load of laundry, pick out your own clothes—there are a million things that people take for granted. I want to give him enough confidence and self-esteem that he feels rooted and to allow him the independence to be free.”

Mitzi Metcalf
Compassionate, charismatic, courageous Son: Jeremy Nicholas Life’s toughest challenges often have a way of bringing people together. For Mitzi Metcalf and Jeremy Nicholas, the hardships they experienced only strengthened their mother-son bond, even when they least expected it. Metcalf came from an alcoholic family and lost her mother at a young age. Years later, Jeremy’s father, whom Metcalf had divorced when her son was 2, died in a plane crash when Jeremy was 5. Challenges such as these had the potential to negatively impact the way Metcalf viewed life, but she took an opposite approach. “We could sit back and have pity parties all day, but you just can’t,” she says. “You have to put your best foot forward, have a positive attitude and strong faith.” With perseverance, she sculpted a successful career in the male-dominated furniture world, remarried and created a new life for Jeremy in North Carolina. The two faced their own troubles when a college-aged Jeremy started making bad decisions. To teach him a lesson, Metcalf withdrew financial support. Her son responded by packing a U-Haul and moving out West. “As hard as it was, and as much as I wanted to run after him and say, ‘I don’t mean it—Mom will be here forever,’ I had to bite my lip and turn away,” Metcalf recalls. “You don’t stop worrying, but I knew he had to figure this out and climb his mountain.” The two also gained inspiration from one another. After her employer filed bankruptcy and she was experiencing marital problems, Metcalf bravely left the life she created, which included her husband, family, friends and reputation, to pursue a new career opportunity in Naples. Both mother and son succeeded on their new paths and now find themselves closer than ever. Today, Metcalf always carries a Mother’s Day card Jeremy gave her eight years ago. Inside he wrote, “You’re my inspiration, guiding light and motivating personification of success.” She admits, “The hardest thing I’ve ever been in my life is a parent, but it is also the most rewarding thing. It will be my legacy.”

Pilar Montes
Generous, independent, stylish Daughter: Lili Montes Pilar Montes had a comfortable life in Cuba with a thriving business and surrounded by loving friends and family. But everything changed at age 30, when she and her husband—just newlyweds—were forced to flee the country as political refugees. They came to Florida as an interim refuge, but the temporary situation turned into a permanent decision, and the couple was tasked with rebuilding their life from scratch. Initially, the two settled in Miami, where Montes earned a small income using her artistic skills while her husband learned English. Once he was employed, they relocated to Fort Myers and then, in 1963, to Naples. Montes recalls feeling moved by how the community welcomed the immigrants with open arms and made them feel at home. “This inspired me to pay [it] forward through service,” she says. That single resolution has led Montes to make a substantial footprint in the Naples community with decades of service. She founded the Golden Gate Gazette newspaper, was president of the Mental Health Association of Southwest Florida, served on the Florida Real Estate Commission and was a driving force in the efforts to erect the Veterans Memorial at Cambier Park. Still, she humbly downplays her role: “Today, the people in Naples continue to be our most invaluable resource,” she says. Throughout her initiatives, Montes has maintained a sense of decorum, grace and style that have become her trademarks. Now 86 and the mother of two daughters, Lillian (“Lili”) and Lourdes, she remains a fixture in the Naples community and a living testament to the power of hard work and dedication. “She’s my most influential role model and has taught me everything is possible and anything can be accomplished with an education, determination and hard work,” says Lili Montes. For Pilar Montes, unconditional love defines motherhood. “Lillian and Lourdes are my pride and joy and have grown to become contributing adults and loving others who share my dedication for community service,” she says. «

Taste Mexican Fiesta
NOAH WOLF
Celebrations commemorating the Battle of Puebla have become nearly as popular in the States as they are in the Mexican city itself. And why not? Americans not only appreciate the bravery of Mexico’s resistance to France’s occupation on May 5,1862, we also love a great party. One way to celebrate: Toast Cinco de Mayo with hand-crafted cocktails at MASA in Mercato (masa-restaurant.com). We love the Margarita de Diabolita, which begins with an initial spark of heat from pepper-infused tequila and ginger that’s cooled off by a blood orange, pomegranate and passion fruit puree. Or try La Paloma, a citrusy concoction of fresh grapefruit and lime, reposado tequila, grapefruit soda and a light touch of salt. ¡Viva México! —Kat Smith

Taste kitchen confidential
chef Jack Raben Jack Raben has a culinary split personality of the best kind: He’s equally at home in a restaurant kitchen or supervising catering events of all sizes. The toques he wears include executive chef at the Fogg Café in Naples Botanical Garden and executive chef at Lurcat Catering, a division of D’Amico Catering that operates the Fogg Cafe. Lurcat Catering, which is the exclusive caterer of Naples Botanical Garden, also offers catering services for a wide array of private events for the general public. “My goal is to deliver restaurant-quality food in a catering setting,” Raben says. “I want to go outside the norm, and create something that didn’t exist previously.” After studying at the Art Institutes of Arizona and Minnesota, he worked under the legendary Jean-Georges Vongerichten in Minneapolis before coming to Naples. —Mark Spivak
First cooking job: I started in junior high school at a horse track with a huge kitchen. They had a full-service banquet facility as well as a restaurant, so I was trained in both. Greatest influence: Working with JeanGeorges exposed me to technique, balance and execution at the highest level. It was like boot camp, but he was a great guy. We worked hard, but he’d go out to a bar with us afterwards. Most spectacular catering event: Before I left Minneapolis I helped prepare dinner for 5,000 people the night before the Major League Baseball All-Star Game. We had 18 trucks and a dozen food outlets, and served dishes in a range of different styles. What makes Fogg Café unique: We use ingredients from the garden itself, so we have a range of aromatics, chilies and fruits that change with the seasons. It is all woven into dishes that encompass Asian, Caribbean, Floridian and Brazilian influences. Dishes he is most proud of: I put a banh mi on the lunch menu, which is a Vietnamese sandwich with BBQ short ribs and pickled vegetables. On the catering side, we have an unusual take on surf and turf: We combine a filet with lobster risotto flavored with smoked chili oil. 92
Citrus-cured arctic char, Florida orange, pickled Fresno pepper, fried lotus root
Pet peeve: People who don’t have the passion to be in the kitchen; someone who thinks it’s just a job and doesn’t understand or respect the quality of the ingredients they’re working with. Most unusual item in his home fridge: Headcheese, definitely. We always have a lot of fun stuff: Spanish chorizo, Camembert and lots of field greens. Most memorable meal: I was in New York last year and went to the Momofuku Noodle Bar. The dinner was amazing, but what really impressed me was the atmosphere, the fact that you could have that quality of food in such a relaxed setting. I’d most like to cook for: Any or all of the chefs I worked under for 16 years, just to demonstrate how much I actually learned from them.

Artful Dining Chez Böet’s tagine
A stroll among the shops and art galleries of Crayton Cove, perched on the edge of Naples Bay, is delightful any evening, of course. May 5, though, is an exceptionally good night to peruse this charming section of Old Naples. The Palette to Palate restaurant-gallery walk starts with a welcome reception at the Cove Inn, where guests can sip wine while getting an overview of the festivities. The Cove’s restaurants—Bleu Provence, Chez Boët and The Dock—will fortify visitors with dining and drink specials. Between dining courses, guests can view recent works of art at the galleries of some of Naples’ most popular artists, including Paul Arsenault, Lynne B. Wilcox and Karen Stone of ArtGallery OldNaples2, Nora Butler, Phil Fisher and Natalie Guess. It’s a feast for both the eyes and taste buds. (discovercraytoncove.com) —Kat Smith

Late Night Beckons Night owls are welcoming a new restaurant and bar to downtown Naples. The recently opened 7th Avenue Social (7thavenuesocial.com) is looking to liven up the local nightlife scene with a bar open until 2 a.m. every evening, and handcrafted cocktails served in a cozy ambience. There are also plans for live entertainment. But one of the standouts of this newcomer is the creative Southern cooking with Latin influences, such as Chicken “n” Waffs, including a savory corn-muffin and sage waffle with harissa maple butter, and Aye Papardelle, featuring spicy chorizo bolognese and cotijo crumbles. The menu varies weekly with ingredients culled from local farmers and suppliers. The restaurant is the latest culinary venture from Colin and Kitsi Estrem, who also operate Avenue Wine Café on Fifth Avenue South.

Chameleon Cocktail Add spice to your life with a splash of vermouth By Mark Spivak Origins: Carpano Antica
Italian classics include Cocchi and Punt e Mes, while France’s Noilly Prat served as the prototype for pale and dry vermouth.
98
For some, it’s a mere addition to a favorite cocktail; for others, it’s a stand-alone drink with both character and charm. When vermouth was invented towards the end of the seventeenth century, it was an immediate sensation. The creation is generally credited to Antonio Benedetto Carpano, who enhanced the coarse wine of the period with a blend of 30 herbs and spices. The sweetness of Carpano’s potion appealed to many segments of the population (particularly to the ladies), and became a favorite of the Turin royal court. In time, a second style—pale and dry—was introduced in France by Joseph Noilly in the early 1800s. The invention of the cocktail in the late nineteenth century was the agent that launched vermouth into hyperspace. Virtually every classic drink used it to add balance and serve as a buffer to enhance or contrast the taste of the primary spirit. Artisanal vermouth producers flourished, each with their own distinctive flavor profile. Italy remained the mother ship of vermouth, and the house of Carpano bottled its original creation as Antica Formula ($30): rich, sweet and unctuous without being cloying. Although the company eventually began to manufacture two
white versions (Bianco and dry), red vermouth became its specialty. The most interesting vermouth on the planet might just be Punt e Mes ($22), invented by Carpano in 1870. The name translates to “point and a half”—one point of sweetness and a half-point of bitters. Another top name is Cocchi, founded in 1891, making white Americano ($20) and the distinctive, perfectly balanced Vermouth di Torino ($22). The third producer in the triumvirate is Contratto, also founded in the 1890s, known for both red and white versions ($30), as well as Fernet ($35), the famous potable bitter. In France, Joseph Noilly’s potion morphed into Noilly Prat ($12), which became the prototype of the pale and dry style. Its production method has been basically unchanged since the 1850s; the white wine is aged in large oak casks for eight months then transferred to smaller barrels, which are left outdoors for one year to season the contents. In the Alpine village of Chambéry, Dolin became celebrated for making vermouth unlike any other. It was fresher and drier than its competitors, herbal without being bitter, filled with elegance and finesse. And while technically not vermouth, no discussion of the category would be

complete without mentioning Lillet ($20), a blend of dry white Bordeaux wine and macerated citrus, kicked up with a dose of quinine liqueur. The American craft cocktail boom of the past few decades has reawakened interest in vermouth, so it’s not surprising to see some interesting examples emerging stateside. California’s Andrew Quady, who gained fame making dessert wines, is infusing Orange Muscat grapes grown in the San Joaquin Valley with 17 aromatic herbs for his Vya Sweet and Dry Vermouth ($24). Oregon is the domestic equivalent of eighteenth-century Turin, playing host to an assortment of artisan producers, including: Caption xxx ● Portland-based Patrick Taylor’s Hammer xx x xx x xx xx x x x x xx & Tongs, offering the white Sac’Résine and x xx x x xx red L’Afrique ($35). x xx xx xx ● Imbue Bittersweet Vermouth ($28), with a base of Pinot Gris fortified with Clear Creek brandy. Still doubtful that vermouth can be a great drink? Mix some Carpano or Contratto Bianco with tonic, add ice and a sprig of fresh rosemary, and your perception is likely to be instantly transformed. «

Super Seed Flaxseed has long been known for its many health benefits. Now, there may be another possible reason to savor the nutrient-dense seed, which is rich in fiber, omega-3 essential fatty acids and lignans, a plant hormone that mimics estrogen and may have antioxidant properties. After a review of 11 studies and 14 trials, researchers found that eating flaxseeds, also known as linseeds, may help lower blood pressure slightly, according to findings published in The Journal of Nutrition. Researchers also noted the benefits may increase when consuming whole flaxseeds over a period of more than three months. At the same time, ground flaxseeds are easier for the body to digest and absorb all the nutrients locked inside, according to the Mayo Clinic. Popular ways to enjoy the seed's light, nutty taste is to sprinkle the ground seeds on yogurt or add to salads and soups—and a little goes a long way. Like all foods high in fiber, flaxseeds should be taken with plenty of water or other fluids.

Olive My
Lemon
Ripened lemons have aromatically refined this oil. Try: Add it to citrus salad dressings, chickpea recipes or pasta.
Rosemary
Wherever rosemary is indispensable as a Mediterranean seasoning, this intense olive oil is just right. Try: Pair it with lamb or add it to fried potatoes for a worthy finish.
Love
Olive oil has long been known as a “good fat,” thanks to its high concentration of monounsaturated fatty acids, which can help lower cholesterol levels—and may help lower your risk of heart disease, according to the Mayo Clinic. Olive oil is available in a number of deliciously aromatic varieties, each with its own unique flavor to enhance a wide variety of foods. Vicky Budynsky, marketing manager at gourmet food store VOM FASS Naples, breaks down several popular infusions and how to best use them in the most flavorful ways. —Liza Grant Smith
Porcini
The delicate, natural mushroom essence provides a subtle layer of flavoring when added just before serving. Try: Drizzle over steak with freshly cracked pepper and tarragon or over sautéed or grilled vegetables.
Basil
The taste of the fresh herb gives this olive oil its elegant flavor. Try: Mix into a Caprese salad, pasta or risotto.
Orange
The aroma of juicy oranges gives this oil its citrus taste and makes it particularly suitable for enhancing fish, fruity salads or desserts. Try: Use it in place of cooking oil when baking.
OLIVE BRANCHES
Tomato
Tomato-infused olive oil is a delicious way to enhance pasta, bruschetta and bread croutons. Try: Rub a fresh peeled clove of garlic over toasted bread, and drizzle with this savory oil.
Find the right bottle of infused olive oil at a Naples supplier: VOM FASS Naples (239-513-0103, naples.vomfassusa.com) Naples Olive Oil Co. (239-596-3000, naplesoliveoilcompany.com) Florida Olive Oil Co. (239-403-0735, floridaoliveoil.com)
Oregano
A delicate aroma, woody character and grassy overtones make this a delightful addition to many dishes, particularly Italian cuisine. Try: Use it as a base for aioli, reach for it when marinating vegetables, drizzle over pizza or add a dash to a cold pasta salad.

Summer Kid Adventures Wherever you are in Naples, practically all you have to do is head west and soon you’ll be wiggling your toes in the sand, building sand castles and picking up pretty shells. We all love our beach time, but there is so much more for families to explore on the Paradise Coast. This summer, try these three adventures tailored to kids of varying interests and ages. Turn over a new leaf. At the Conservancy of Southwest Florida, youngsters can join the Little Explorers program (conservancy.org/littleexplorers), which is best for children 18 months to 5 years old. They can build a creature tunnel called a burrow, have fun with nature crafts, listen to stories and participate in other activities. The Conservancy’s Dalton Discovery Center also has more than 100 animals and interactive exhibits. Discover scuba. Kids aged 10 and older can get scuba-certified in five days or less at Naples Marina & Excursions. Not 10 yet? Start with the Bubblemaker class, where kids as young as 8 are taught diving basics and supervised while swimming in the pool using scuba gear. (cruisefishdive .com/diving-certification-classes.php) Chart a new path. Feel like taking a bike ride? Check out the new Gordon River Greenway. The paved nature trail follows the Gordon River alongside the Naples Zoo and the Conservancy. Watch for a great horned owl, bald eagle, raccoon or even a fox! Rent a bike at one of Naples’ bicycle shops, or join a group with Naples Bicycle Tours (naplesbicycletours.com), which is open to ages 12 and up. Helmets, water and snacks are included.

Progressively flattening arches is a sign of severe tendon tears. Crusty, yellow nails are a sign of infection. Feeling of a pebble in your foot can be a nerve tumor. Melanoma starting from feet are one of the most deadly. Diabetes remains the #1 reason for nontraumatic amputations. If you are a diabetic you must see us Now.

(App for thAT!) As locals know, Florida’s nickname, “The Sunshine State,” couldn’t be more accurate. This summer, download an app that will help you protect your skin from the sun’s harsh rays. The UV Index app from the U.S. Environmental Protection Agency uses GPS capabilities to provide up-to-date forecasts of the solar ultraviolet radiation in the area. The UV Index runs on a scale of one to 11+, and higher numbers mean more intense rays. In addition to providing data, the app also offers suggestions on protective measures, such as what times of the day to avoid and what SPF sunscreen to apply. (epa.gov/sunwise)

Afternoon Crowd at Coney Island, Brooklyn, July 21, 1940, Weegee (Arthur Fellig)
Dark, stark and brutal are words often associated with the black and white pictures shot by Arthur Fellig—a.k.a. Weegee—the pioneering twentieth-century photographer whose gritty photos captured scenes of crime, life and death in New York. His art, which later influenced many photographers’ work as well as movies (including the recent film Nightcrawler), fascinates with an unblinking look at often seamy subjects. The exhibit “Weegee by Weegee” invites viewers to feel what it would be like to spend a night with the photographer, moving through images from fires, murders and accidents, to entertainment, to streets in the dead of night. The exhibit runs May 2 through July 26 at The Baker Museum in Artis— Naples. Parents note: It includes graphic images not suitable for children. (artisnaples.org) —Kat Smith

Blessed RESPITE To many local families with someone stricken by cancer, Fred Klaucke is a blessing. But Klaucke insists he is the one who feels blessed to help those struggling to make ends meet while they fight for their lives. Klaucke left the corporate world in 2000, after World of Science, the retail chain he founded and later went public, was sold. He and his wife started their self-funded Lion and The Lamb Foundation in New York before moving to Naples full-time in 2004. Just four years later, devastatingly, his wife, Laura, passed away from lung and brain cancer. He discovered Cancer Alliance of Naples shortly afterwards and was immediately drawn in. “I thought, what a wonderful organization, because they really provide hands-on, caring help,” Klaucke says. “The staff devotes so much time, energy and passion to helping people.” Klaucke has joined that effort in part by taking low-income families served by CAN on shopping trips to their local Wal-Mart Supercenter to buy whatever they need, including food, household supplies, clothing and more. He has financially supported the organization in a myriad of ways, but is quick to underscore that it’s not just about the money. “The disease affects the family, your ability to pay the rent when you can’t work any longer, and you lose selfesteem,” says Klaucke, who is also a board member of CAN. “I don’t want to just write a check and say, ‘Go get what you need.’ I feel my calling is to also spend time with the families, listen to what the issues are in their lives, and show them how worthwhile and wonderful they are.” At the end of each shopping trip, he buys flowers for the ladies. From the many who never received a bouquet before, there are often tears of happiness. “If a husband is along, or if the children are old enough, I will ask them to pick out the flowers,” he adds. Through Cancer Alliance of Naples and a variety of other local nonprofits, Klaucke has helped about 500 families through these shopping trips over the last few years. He has also sponsored CAN’s retreat program, which pays for 10 families to enjoy a three-day vacation at The Naples Beach Hotel & Golf Club, that serves as a brief respite from the challenges of the disease. “The more you give, the more you receive,” Klaucke says. “Everyone can do something. It doesn’t matter if we’re rich or poor, there’s always someone who needs help more than we do.” «
