Earlier this year, Gallup’s Community Well-being Rankings revealed Naples and our surrounding area took the lead in the nation for happiness and health—for the second straight year. They share at least two things in common: all have opened gyms in Naples, and all have major sports connections. Cover subject Jason Bartlett spent a decade in Major League Baseball as a former Minnesota Twins shortstop who’d also played for the Tampa Bay Rays and San Diego Padres. After deciding to leave baseball in 2014, he and his family chose Naples for their next chapter. GREGORY KUNDE
MASTER VOCALS One of the most talented tenors in the industry, Gregory Kunde has been dazzling audiences for nearly four decades. He discovered his affinity for opera while studying to be a choir conductor at Illinois State University. Kunde traveled the United States performing regional opera before expanding in Europe, where his career has mainly been based for the past 20 years. Honored as the 2016 Male Opera Singer of the Year by the International Opera Awards, Kunde will come to Opera Naples on May 8, where he’ll perform selections from his upcoming CD of tenor arias.

NI: What is your favorite role to perform? Kunde: Otello, the epitome of the tenor repertoire. Every tenor wants to sing Otello, and I’ve been very fortunate to have had the chance to do around 50 performances. It’s an incredible role—the Shakespearean character is so passionate and tormented. He’s a character you can really sink your teeth into. What is the secret to your long-standing success? There are two parts. The first is discipline—you have to take care of your voice and your body, and not push the voice farther than you know it can go. The other is that I really enjoy what I’m doing and I know it’s an incredible privilege to be able to do it. There’s definitely lots of hard work and sacrifices involved— it’s not easy being away from my family for 10 months of the year—but it’s the best job in the world. What is your personal connection to Naples? Ramón Tebar, Opera Naples’ Artistic Director. We met when we did a concert together in Spain and
struck a connection right away. He’s a fantastic musician and like a brother to me, and I jump at any chance I get to work with him. He introduced me to Naples, where I found such warm and inviting people. He’s an incredible pianist as well and will be accompanying me in the concert. What’s next for you? I’m returning to Covent Garden to share the role of Otello this summer, and then I’m off to Israel for Turandot with the Israel Philharmonic. I won’t be back to the states until 2019 when I do L’Africaine in Dallas and then Otello again in Los Angeles. I’m also looking forward to the opening of the opera house in Naples, which I hope to be a part of.

Searching for a new seaside story? Ann Kidd Taylor (annkiddtaylor.com), Marco Island resident and daughter of bestselling novelist Sue Monk Kidd, will release her first novel in June. The Shark Club tells the story of Maeve, a colorful character who grows up on the Florida coast. After being attacked by a blacktip shark, Maeve eventually returns to her childhood home as a passionate marine biologist to take on an illegal shark-finning operation that has moved into her town. Taylor, who co-wrote the best-selling memoir Traveling with Pomegranates with her mother, found inspiration for her novel in her everyday surroundings, from walks around her neighborhood and Tigertail Beach to Rookery Bay volunteer trips through the Ten Thousand Islands, and local dolphin excursions. “The novel is set on an island

very similar to Marco Island, though I gave it a different name,” says Taylor. “It really spoke for the physical environment I wanted to create on my fictitious island, with views of hibiscus flowers, giant birds of paradise, and expansive views of the blue gulf.” Inspired in part by her son’s interest in sea creatures, the idea for the novel was sparked after hearing a radio segment with Dr. Sylvia Earle, a marine scientist oceanographer. “Something kept coming to me about oceans and their wonderful life that needs to be protected. I just knew that one day Maeve was going to be bitten by a shark, and instead of that incident turning into a fear or hatred of sharks, it was going to invoke a great passion for them and a dogged determination to save and protect them.”

New Name, Same Game The Naples Equestrian Challenge, a longstanding local nonprofit known for its equine-assisted programs for children and adults with special needs, has been renamed the Naples Therapeutic Riding Center to better reflect its mission. After reaching its goal of $4 million for its Barn Raising Capital Campaign, the center will expand its campus with a new therapy center, an 80-foot covered riding arena, and a new stable for four additional therapy horses. With a passion for understanding the complexities and benefits of olive oils and balsamic vinegars, Marie Heiland opened Naples Olive Oil Company about eight years ago, and most recently earned an Olive Oil Sommelier Certification from the International Culinary Center of New York and the Olive Oil Times Education Lab. Part of her mission is to help people learn how to separate fake oils from the true extra-virgin olive oils. For example, she says when you see bright green oil in clear plastic bottles, beware that chlorophyll may have been added to amp up the color. Of course, taste and smell are critical factors in judging a fresh extra-virgin olive oil. “Olive oil is really a fruit juice from the olive fruit,” she says. “It is perishable and must be fresh.”
Perfect Pairs
There are so many intriguing flavors of olive oil and balsamic vinegar available, it can be overwhelming to decide which to pair together, not to mention what to do with them. Heiland shares a few delicious pairings to get started.
FRUITY SENSATION: Pair blackberry-ginger balsamic vinegar with lemon extra-virgin olive oil for a delicious vinaigrette. “Drizzle over everything,” she says.
SPICE IT UP: Pair jalapeño balsamic vinegar with Baklouti green chili pepper, basil, or Persian lime extra-virgin olive oils. “It’s not hot, but it has great flavor,” she says, suggesting that this delicious blend can be added to a stir fry, coleslaw, or jicama. 38
TROPICAL TIMEOUT: The vibrant combination of lime and coconut has long been popular in everything from cocktails to desserts. For a savory spin on this festive flavor, blend coconut balsamic vinegar with lime extravirgin olive oil. “This is great on shrimp,” Heiland says.

STORE WINE LIKE A PRO WITH BRUCE NICHOLS’ GOLDEN RULES
Bruce Nichols, wine consultant for the Naples Winter Wine Festival, owner of Naples Wine Solutions, and creator of the website A Nichols Worth of Wine (anicholsworthofwine.com), shares secrets to wine storage for wine aficionados of every stripe. When should a collector consider a home wine cellar versus a wine refrigerator? While there are a number of good wine refrigerators on the market, once a collector pushes beyond 200-300 bottles, it may make sense to invest in a dedicated wine cellar. But for the average wine aficionado, a single-door 60-72 bottle capacity refrigerator probably works fine. What are the essential things to think about when storing wine? Four “golden rules” for storing wine, all of which are natural enemies: temperature, light, vibration, and position (some
would add humidity). Temperature control, ideally at 55 degrees, is essential. But it’s better to store the wine at a constant 65 or even 70 degrees than to subject it to constant temperature change. Light accelerates the aging process. It’s best to keep your prized collection in as cool and dark a place as possible. Vibration is another enemy. Ever start to feel nauseous on a bumpy plane ride? So does your wine when you store it on, or next to, your refrigerator, air conditioner, etc. It’s best to position a wine bottle on its side. Keeping the cork moist prevents it from shrinking and allowing wine’s chief nemesis, oxygen, to seep into the bottle. What type of consideration should be given to your wine preferences when assembling a collection? Color is entirely preference driven, as is your varietal selection. Unless you’re buying investment-grade wines, buy what you like. For example, it doesn’t make sense to stock up on a lot of white wine if you’re drinking very little of it, especially given the shorter life span of whites over reds. How much space and what conditions are needed to create a successful wine cellar? Cool and dark are the main criteria. As to space, the first question I ask clients is, “How many bottles do you

want to store?” If they tell me “no more than 200 bottles,” I encourage them to build their cellar for 250-300 bottles. As a rule of thumb, a 2’ x 4’ space (the size of a coat closet) can accommodate 150-200 bottles, depending on shelving.«

By Daphne Nikolopoulos Artists have long flocked to Santa Fe for its wide-open spaces and the suffused light brushing its deserts and mountains. This heritage, fostered by the likes of Georgia O’Keeffe and Gustave Baumann, has inspired the city’s modern revolution as a center for culture, inclusiveness, and creative boundary-pushing. For conscious travelers, visiting Santa Fe (santafe.org) can be a mind-expanding experience. The city embraces its First Nations in a big way, and members of Native American tribes are omnipresent, from the museums and galleries dedicated to indigenous arts to the dancers performing in the Spanish Colonial plazas to the pueblos scattered north of the city. Santa Fe’s only Native American–owned hotel, the Hotel Santa Fe (hotelsantafe. com), offers a big dose of regional hospitality with authentic adobe structures, traditional art and crafts, and private dinners in a teepee complete with hides and blankets. Book a room in the Hacienda, the hotel’s butler-served enclave with gorgeous fireplace suites and a dedicated lounge with a rooftop terrace overlooking Santa Fe and the ski mountains beyond. There’s plenty to see in the city, but it’s a good idea to begin with the Santa Fe Plaza in the historic district. This pedestrian-friendly area is home to the famous Indian Market, as well as the Spanish market every July and some of the city’s most visited sites, including the Palace of the Governors, the Cathedral Basilica of St.

There’s a lot to explore, so start the day with huevos rancheros at the historic La Fonda on the Plaza (lafondasantafe.com) and marvel at the eclectic art and painted windows before setting off on a walking tour. Dining is an attraction of its own in Santa Fe. Don’t miss Sazón’s new Mexican cuisine (sazon santafe.com); the mole here is the best north of the border. The Anasazi Restaurant (rosewood hotels.com/en/inn-of-the-anasazi-santa-fe) is another must, as much for its faithful decor as for its innovative menu that respects native agriculture and local farming communities. For all its tradition, Santa Fe also has a hip vibe, nowhere more evident than at the interactive, multi-artist installation Meow Wolf (meowwolf. com). Visitors to this converted warehouse are transported to the surreal worlds of the House of Eternal Return as they seek clues to a mysterious story. It has to be seen to be believed. «

King of the Hill Land Rover goes for minivan-like versatility with the new Discovery
By Howard Walker Land Rover’s sleeker, go-anywhere 2017 Discovery could crawl up the side of Kanchenjunga. It could plough its way through an Amazonian swamp. It could tackle a Sahara sand dune like a determined dromedary. Quite simply, it’s the world’s most luxurious, most capable minivan. Yep, a minivan—because just like those family-friendly carriages, this Discovery comes with three rows of seats that could easily fit seven stretched-out adults. To the squealing delight of every preteen (and their tech-obsessed parents), it also offers a 3G Wi-Fi hot spot that can accommodate up 54
to eight devices. It has nine USB ports and six 12-volt charging outlets. It’s basically a rolling Radio Shack. And like any good minivan, it comes with ample space to stow stuff. The center console can hide four iPads away from prying eyes. It’s right next to the chiller compartment for water bottles and peanut M&Ms. Getting back to seating, this latest Discovery sets a new standard for flexibility. The second row features three pews, and there are two more in the back. Each can power fold, either at the touch of a button, a tap of the touchscreen up front, or from a smartphone app. The only thing missing is a pair of power-sliding side doors—but that would be way too soccer momish. Do all these elements suggest that Rover’s replacement for the much-loved LR4 has gone soft in its tire tracks? Not a chance. Two days of challenging, downright scary, off-road driving through the Zion and Grand Canyon national parks in Utah and Arizona proved the Discovery is even more capable than its square-edged predecessor.

This fifth-generation model has had a pretty comprehensive makeover. Instead of resembling a moving pod on wheels, it has a sleeker, rounder shape that looks a little too much like a pumped-up version of the smaller Discovery Sport. In a quest for better aerodynamics, the rear end has become a tad too tall and pinched. The tailgate is as big as a barn door. But there’s a whole mountain of substance behind this smoother style. The lightweight monocoque body structure is now 85 percent aluminum, allowing the Discovery to shed 1,000 pounds compared to the LR4. Jenny Craig is sending congratulatory notes as we speak. And the improved four-wheel drive system is simply the best and most capable available in any Land Rover or Range Rover model. Couple that with the optional (but must-have) air-suspension and there’s no wall-of-death incline, sandy river bed, or muddy ditch the Discovery can’t tackle. Most mortals will pilot this multitasking SUV on-road, where it’s just as impressive. Choose between the standard 3.0-liter, 340-horsepower, supercharged V-6 or the optional 3.0-liter, turbo-diesel V-6 packing a stumppulling 442 pound-feet of torque. Both are mated to a smooth 8-speed automatic. Both will exceed expectations. Gas or diesel-propelled, this Discovery is a joy to drive. It’s insanely

quiet and refined. It’s zippy, too; think zero to 60 mph in 6.9 seconds for the gas V-6. What’s more, its cabin now oozes luxury from every pore. The quality of the leathers and cloths, not to mention the fit, finish, and tactile beauty of the controls, made me question if I was driving a top-end Range Rover. While the base SE kicks off at $49,900, the loaded First Edition launch models are sold for a whisker under $74,000—and there are only 500 to be had. Beyond the cost, just think of this amazing Discovery as the new, official vehicle of the all-action American family. Taking the kids to summer camp is going to be so much fun. «

Meet three fitness couples, with major league sports connections, who are married in life and business. These gym owners practice what they preach and inspire others with their approach to balancing mind, body, and spirit. BY REBECCA REHM | PHOTOGRAPHY BY VANESSA ROGERS
Jason and Kelly Bartlett At first glance, former Minnesota Twins shortstop Jason Bartlett and Kelly, his wife of nearly 10 years, seem like polar opposites; he’s quiet and dry-humored, while she’s outgoing and bubbly. Despite their contrasting personalities, the two share a deep passion for each other, fitness, and helping others live their healthiest lives. When Jason retired from Major League Baseball in 2014 after 10 years, the Bartletts fell in love with high-intensity interval training (HIIT)—high-intensity exercises alternated with shorter periods of low-intensity movement or short rest periods. In May 2016, they opened their Naples gym, Six4Three HIIT Room (six4threehiitroom.com), named after a baseball term describing a double play where the ball is hit to the shortstop, then thrown to the second baseman, and then to the first baseman. The Bartletts train their clients with the same kind of intensity. “When the baseball chapter of our lives closed, we thought this was something we’d love to be able to do together,” says Kelly, also a trainer and former Division 1 lacrosse player for St. Bonaventure University. Their lives are an exercise in showing their clients and their sons—Jayden, 8, and Jagger, 5—what pursuing good health looks like. Between their 4 a.m. wake up call and 10 p.m. bedtime, the couple’s days are packed with teaching at the gym, shuttling the kids to and from school and activities, diligent weekly food prep, and fitting in their own training. On an average week, Jason and Kelly make time for two days of cardio and three days of strength training; Jason generally focuses on push-ups, sit-ups, squats, and lunges with cardio movements, while Kelly hits the gym for a fullbody circuit before they get their boys ready for school. “We are a great balance for each other,” Kelly says. “He makes me take a deep breath and keeps me laughing. I feel like I keep him wild and pushing for more.” Best fitness advice: “Have fun,” Jason says. “It’s a marathon, not a sprint. Remember why you started this journey.”

Staying motivated on a tough day: “Redirecting the focus off myself and onto others helps,” Kelly says. “Serving others makes anyone’s stresses seem minuscule. Reading my devotional helps refocus my heart, quickly picks me up, and gets me ready for the rest of my day. Never let five minutes of a bad day ruin the remaining 23 hours and 55 minutes.”

Rick and Amy Lademann The pursuit of fitness has long played a prominent role in the marriage of Rick and Amy Lademann, who opened Beyond Motion (go2be yondmotion.com) in North Naples in 2009. Rick spent many years training high-level athletes, including Olympic hopefuls—weightlifters to figure skaters—and prominent Major League Baseball player Larry Walker of the Colorado Rockies. Amy started her training career at age 16 and is certified in yoga, the Nia Technique, Pilates, and an array of dance fitness styles. The couple showcase their complementary styles in the studio and follow a consistent training schedule for themselves, just as they suggest for clients. For Rick, the major focus is weight training, and he does sprint work a few times a week. Amy also weight trains for strength, and teaches Barre Motion classes—a cardio barre program she created for their studio. Their diet is carefully portioned, includes limited meat, and is minimally processed. The Lademanns tend to eat simply, opting for salads with nuts, fruits, and vegetables, or dishes with lentils, beans, quinoa, and black or wild rice. On Sundays, they prepare meals for the entire 58
week. “Preparation is the key. It helps you feel more in control and able to make better choices,” Amy says. At the grocery store: Shop on the outside fringes of the market, where you’ll find fewer processed foods and more fresh fruits and vegetables. “It’s where 90 percent of the foods you consume should come from,” Rick says. Meal prep tip: “I want clients to measure out an actual portion of something and then put it on their plate,” says Amy, who suggests using measuring cups, a food scale, and lunch plates instead of dinner plates for portion control. “It’s important to see how much you’re really eating.” On reaching your goals: Set your intention and then tell people you trust about it. “Whether it’s weight loss, a 5K, or just living a healthier lifestyle, declaring what you’re working toward so your spouse or family know is important,” Amy says. You’ll not only have their support, but it also holds you accountable, making you more likely to achieve your target.

Devan and Morgan Kline From childhood friends to fitness power couple, Devan and Morgan Kline have always shared a great enthusiasm for health and fitness. In 2012, after Devan’s baseball career ended with the San Francisco Giants, the married couple moved to Naples and developed the idea for Burn Boot Camp based on their own group training program. Within two years, they franchised the concept and Burn Boot Camp (burnbootcamp.com) now operates 251 locations, including Naples, across 29 states. Camp sessions use speed, agility, and something Devan picked up in his professional baseball days: burst training. He explains it as an exercise performed with 20 seconds of maximum intensity effort, followed by 20 seconds of active rest. “During my time with the San Francisco Giants I was surrounded by some of the best athletes and coaches in the world,” says Devan. “I soaked up everything I could.” Today, Devan wakes up at 3 a.m. on most days to fit in his own workout before training clients at the headquarters of Burn Boot Camp in Charlotte, North Carolina, where the Klines now live with their 1-year-old daughter, Cameron. They still travel quite often to Southwest Florida, so much so that they are currently looking to purchase a condo in Naples to stay when they’re in town. “As we grow and create a stronger infrastructure, I’d like to see more of the Gulf,” Devan says. On health fads: “I think juice cleanses need to go away,” Devan says. “Our bodies need to be well-balanced and juice diets deprive us of essential proteins and fats our body needs.” Go-to meal: A sweet potato casserole made with diced sweet potatoes and ground turkey, cooked first and placed together in a baking dish. Pour egg whites over the top and bake for 45 minutes at 350 degrees. You can add other proteins and veggies—such as peppers, mushrooms, bacon, ham, goat cheese—for variety. “This has been a staple of ours for years,” Morgan says. 60 NAPLES ILLUSTRATED

RECIPE BY BRIAN ROLAND, CRAVE CULINAIRE Nothing says summer quite like a tall glass of raspberry lemonade, and this recipe puts a twist on the traditional flavors with a splash of prosecco and elderflower liqueur. (craveculinaire.com) Ingredients: (yields 8 glasses) 1 bottle prosecco 3 oz. elderflower liqueur 3 oz. sugar ½ cup pomegranate seeds 2 oz. triple sec 24 raspberries 14 whole lemons Opal basil and fresh mint for garnish Fresh mint 3 cups filtered water Ice In a small saucepan, combine elderflower liqueur, six raspberries, and sugar and bring to a boil. Lower heat slightly and reduce to a syrupy consistency. Strain, cool, and reserve. Squeeze the juice of 12 lemons and slice the remaining lemons for garnish. Combine the lemon juice, water, triple sec, and elderflower liqueur in a beverage dispenser or punch bowl. Add pomegranate seeds, raspberries, lemon slices, mint, basil, and ice. Garnish each Champagne flute with a slice of lemon, two raspberries, fresh mint, opal basil, and pomegranate seeds. Pour 4 oz. of raspberry lemonade in each glass and top with prosecco.

Slice blood oranges, lemons, limes, and grapefruit into rounds. Chop pineapple half and marinate fruit in simple syrup overnight. When ready to serve, put mixture in serving bowl and add Herradura Añejo and Grand Marnier. Add jalapeños, sliced into rounds, ice, and top with Fresca.

Technically, Sicyonia breviorstris is a local shrimp, but the sweet, firm meat of the rock shrimp—named after its sturdy shell—bears comparison to lobster. Chef Bill Zimmer from Coast restaurant at Edgewater Beach Hotel, Naples, puts rock on a roll with this Rock Shrimp Bruschetta, featuring sauteed shrimp with avocado, red onion, and roasted heirloom tomatoes on toasted ciabatta with a balsamic drizzle. “I love working with rock shrimp,” Zimmer says. “The sweet flavor and small size make it ideal for a variety of recipes, and because it is so underutilized it is always a bit of a nice surprise.”

CHEF JASON MALLON Self-taught chef Jason Mallon runs the kitchen at Ocean Prime the way he lives his life—with optimism, pride, and unassailable respect for fellow workers and guests. Having grown up in Florida’s Jacksonville area, he has been working in restaurants for 15 years. Through his brother’s connection as a cook for the company, he moved to Tampa’s Ocean Prime restaurant as a broil cook in 2009. In fewer than five years, he was wearing the executive chef toque. He opened the Naples branch with the same title last December. Turning point: In my mid-20s, I was sort of a wild child. I always thought I had to be right and prove it in the kitchen. I decided to stop doing that and listen and learn. Literally overnight my attitude changed. I got the chef mentality. I thought I’d have to quit and go to culinary school, but my mentors told me I already knew what they teach you there. Pet peeve: I want things done the way they should be done, no matter what— neat and organized all the time. Inspiration for new dishes: Sometimes I just start chopping veggies and see where it goes. Kitchen philosophy: Nothing really matters as long as the guest leaves happy. Restaurants are all the same as far as the front of the house versus the back of the house skirmishes. How you treat people is the big difference [between other houses and Ocean Prime]. Cooking for himself: I eat like a 5-yearold—kinda picky. I love burgers and goulash-y stuff all mixed together. Here, I make myself a burger topped with the pancetta-tomato-clam reduction we use with our redfish dish. Topped with cheese. It’s crazy, but delicious. Fresh approach: Everything but the ketchup and chocolate sauce is made from scratch.

Peruvians have their ceviche, Japanese their sashimi. In Hawaii, the iconic raw fish dish is “poke” (pronounced PO-kay or PO-kee), which means “chunked.” Wildly popular in Los Angeles restaurants where light and healthy dishes are the norm, poke is also showing up on menus at restaurants in the Greater Naples area. Typically, sushi-grade tuna lies at the heart of the dish, a salad in its purest form. Sakura Hawaiian Grill’s (sakurana ples.com) version is classic: Asian marinated fish with onions, scallions, sesame, and ginger. But the fish is atypical—it uses bigeye tuna, rather than the more common yellowfin, or Hawaiian nairaga (aka striped marlin), an oilier fish. Chef Paul Chen also prepares poke on flatbread with Asian slaw and a drizzle of house cilantro-wasabi aioli. Stir Crazy (stircrazy.com) in Estero goes vertical with its presentation: stacked crispy wontons layered with tuna, red onion, avocado, sesame seeds, and ginger-lime and sriracha sauces. The new Catch 41 Bar & Grill (catch41naples.com) also incorporates wonton chips to create poke nachos with grilled scallions, seaweed salad, wasabi, and spicy mayo. Poke bowls, too, are all the rage, and Paradise Wine (paradisewinellc.com) co-owner Leigh Benoliel, a California transplant, made it part of the restaurant’s new menus. Chef Julio Morejon features tuna, baby greens, house slaw, pickled veggies, and avocado nestled in brown rice with spicy mayo and crispy wontons. AZN Azian Cuizine (aznrestaurant.com) adds textures and taste sensations to its bowl with tuna, cucumber, salmon, avocado, grilled pineapple, edamame, and a quail egg, served on a bed of sushi rice with avocado cream and garlic chili tamarind sauce (left).

healthy, says farmer Scott Hayes. One of his secrets? He “finishes off” his Berkshire, Ossabaw Island, and hybrid hogs with the organic carambola and lychee fruit he grows at the farm. His laying hens, too, get treated to fruit—tomatoes and papayas that give their eggs a rich yolk that is more orange than traditional yellow. All livestock on the farm are pasture-fed and free-range. “Our chickens live on a diet of all-natural corn, milo, millet, oats, and rye,” says Hayes. The eggs, he claims, contain one-third less cholesterol and one-quarter less saturated fat, but more beta carotene, vitamins, and omega-3 fatty acids than regular store-bought eggs. The Ossabaw hog, a rare breed descended from Spanish colonial pigs and molecularly dwarfed by isolation on a Georgia island, has a reputation as the “olive oil pig.” “The [dwarfing] effect on the fat in the hog was remarkable,” says Hayes, who renders its lard for sale. “It results in polyunsaturated 88
meat that has super-high oleic acid and omega-3 fatty acids. The lard is creamy and buttery. It is the rarest pig in the United States, and we are registered with the Livestock Conservancy.” Hayes sells his livestock products—as well as organic fruits and vegetables—to the public by advance order, and he offers a tour of the farm by appointment only. “A lot of people do good,” says Hayes, who is also a trained chef. “I don’t want to do just good. And the end product is only as good as what you’re putting in. Incredible ingredients produce incredible food.”

Tea is not just for sipping. Many chefs are using teas as an ingredient for cooking and baking. The flavor characteristics of teas—woodsy, sweet, astringent or perfumed—can add depth to a variety of sweet and savory dishes. Asif Syed, owner of 21 Spices by Chef Asif in Naples, has long cooked with teas. In one creative entrée, he steeps Indian chai tea in a butter sauce for his Grilled Sweet Water Prawns, which won the grand championship award at the 2015 Tampa Bay International Curry Festival. “I’ve also used Darjeeling tea in a reduction sauce for grilled salmon, a raspberry herbal tea for ice-cream pops, and greentea infused yellow tail snapper with pine nut pilaf and brussels sprouts,” he says. Alana Sugar, a certified nutritionist with Whole Foods Market, suggests grinding tea leaves in a spice or coffee grinder and adding it to other spices and herbs to create a rub for meats or tofu. There’s comfort in the word “diner” and all the Americana it connotes. “It’s good home-cooking in a relaxed atmosphere with traditional diner fare like meatloaf, pot roast, and everything breakfast,” says Brian Smith, managing partner of the Metro Diner (metrodiner.com) at Naples Walk. “And always a hot cup of coffee and a friendly face.” Diner popularity has surged in the past decade, thanks in part to Guy Fieri and the Food Network’s Diners, Drive-Ins, and Dives show. After being featured on the show, Metro Diner has grown from an obscure Jacksonville, Florida outpost to the 22-restaurant franchise it is today. The Naples location opened in January, following in the footsteps of a strong Naples diner tradition. One of the oldest, Joe’s Diner (joesdiners.com) in North Naples abides by other unwritten diner rules: counter seating, memorabilia-laden walls, and being on a first-name basis with guests. Susie’s Diner on Marco Island, Teri’s Diner (terisdiner.net) in Bonita Springs, and Bernie’s City Diner (berniescitydinernaples.com) in Naples, also abide by the counter and first-name-basis traditions. Winemakers in this South American region excel at more than Malbec Argentine wine has had success on the world stage for the past several decades. A large part of its popularity is due to Malbec, a grape variety native to the Bordeaux region where it seldom ripened properly. Transplanted to the warm climate of Argentina, the grape blossomed to create a full-bodied, ripe, and satisfying wine. Many Americans came to rely on Malbec as their go-to red, due to the reasonable price and lack of vintage variation. Even so, few connoisseurs welcomed the idea of spending $100 or more on a bottle of Argentine wine. Triple-digit price tags were traditionally reserved for Bordeaux, Burgundy, or California Cabernet. In recent years, a cluster of high-end bottlings has convinced consumers that wine from Argentina can compete with the best on the planet, and the focus has expanded beyond Malbec into white wine varieties. Bodega Catena Zapata, Adrianna Vineyard: Although Nicolás Catena planted Malbec near Mendoza when he established his winery in 1902, his descendants perfected the art of growing the grape at high altitudes. The Adrianna Vineyard is situated at nearly 5,000 feet, in a cool climate with limestone soil from an ancient riverbed. The Fortuna Terrae Malbec ($140) is a formidable offering; flavors of black raspberry, plum, and black Stillhouse, Maker’s Mark currant sparkle on the palate, framed by supple tannins and the 94
vineyard’s signature mineral base. While Chardonnay isn’t normally associated with Argentina, Catena Zapata is changing that perception. The Adrianna Vineyard White Bones ($100) is complex and distinctive, with mouth-watering acidity and a memorable palate imprint. The same can be said for White Stones ($100), which displays richly concentrated flavors of lemon and stone fruits. Either wine might easily be mistaken for a top-flight white Burgundy. wine that could compete with the world’s best-known Achaval-Ferrer’s brands. Working with select vineyards in the Perdriel Finca Altamira, region of Luján de Cuyo, Hobbs has achieved that goal. BEAT THE HEAT Despite the blazing heat and humidity of summer, there are still many local races for runners of all levels to participate in. Sounds like fun but it can also be dangerous if you’re not prepared. “Running when you’re not used to this kind of heat can easily lead to collapse,” says Mitch Norgart, president of Gulf Coast Runners (gcrunner.org). He shares his best tips for running in the Southwest Florida sun. –Anna Bjorlin

FLYING HIGH WHAT YOU WEAR MATTERS. Choose light and comfortable performance fabrics that will wick away perspiration, such as Lycra or Coolmax. Norgart also recommends lightweight running shoes. “Ditch the bigger, heavier training shoes unless you’re a really competitive 5K runner,” he says. “The lighter racing shoes are good for the summer.” PROTECT YOUR SKIN. Consider using a sunscreen specifically geared for sports. “Those kinds of sunscreen won’t burn as much if you sweat and it gets in your eyes,” Norgart says, noting that you should always make sure to protect your ears and nose. STAY HYDRATED. Drink 16 to 20 ounces of water or a sports beverage, which helps replenish your body’s store of electrolytes and sodium levels, half an hour to an hour before a race. RACE-PREP REMINDERS: Train consistently. Go for a run or jog two or three times a week, and set aside another day for speed-focused workouts to condition your body for the challenge. Warm up. On race day, loosen up your muscles by going for a light jog of a half mile or less before you stretch. Don’t race on an empty stomach. For example, eating a banana an hour beforehand will give you potassium and enough energy to run on, plus it’s easy on the stomach.

1. Bucket list topper: Seeing the Pyramid and Sphinx in Egypt. 2. Revered fashion designer: Salvatore Ferragamo. The quality, style, and tailoring is amazing. The men’s collections are always on point and very wearable. 3. Favorite band: My absolute favorite since college is Blondie. 4. Signature tipple: Mojito, with real sugar cane and mint. 5. Favorite artist: Henri de Toulouse-Lautrec. I Best advice: Listen to love old advertising posters as art and there is amazing animated use of 3 your thoughts, but also color and shape in his works. follow your heart. 6. Go-to scent: Masculin Pluriel by Maison Francis Kurkdjian Paris. I get compliments every time I wear it. Favorite beach: Black 7. Beloved charities: Humane Society Naples. , marketing director at Philip Douglas Beauty and 27-year Naples resident, is known around town for his impeccable style and taste. He is perhaps most beloved, though, for his fervent support of animals through the Humane Society Naples. Olsen and husband Philip Douglas co-chair HSN’s annual tea and luncheon and have been honored for their long-standing volunteer service. They currently have four adopted pups of their own.
Best local cultural attraction: The Baker Museum at Artis—Naples.
