Insider VIEW MASTER Just nine blocks north of the landmark Naples Pier sits this group of wood pilings jutting up from the coastline into the Gulf. South Florida–based photographer Jerry Rabinowitz has felt compelled to capture the sight on camera, time and time again, after recognizing the contradictory beauty more than a dozen years ago. “I kept seeing an ever-changing color and mood to the pilings, how the light and shadow affected them,” he says. “I was drawn partly because of the nostalgia, how they maintained a beauty even though they were decayed.” The chatter around town was that it must be remnants of an old pier, but it is not. According to the Naples Historical Society, this is part of a collection of pilings strategically placed there in the 1920s, in an effort to keep the sand from shifting and protect against beach erosion. Rabinowitz plans to create a limitededition book with an array of images he has taken of the pilings over the years, calling it his Third Avenue South Series. (jrabinowitz.com) — ­ Teri Evans

LIMITING YOUR VIEW OF WHAT’S POSSIBLE Women often restrict themselves too much when it comes to styles and colors. For example, someone might say they can’t wear certain colors because they’re a “summer” or “winter” type. Boucher-Martin says that idea is simply outdated. “The key is to incorporate small changes into your wardrobe,” she explains. “For example, chartreuse is not the best color for me, but I can wear a black top and a chartreuse necklace, and it looks great.”

Though you may think you can always just buy something off the rack and be done, the experts say not so fast. “You need to keep in mind that designers have fit models, and not everyone’s body is that particular type,” Petersen says. “Tailoring makes all the difference in how an outfit looks; lowering the hem, raising the neckline, taking in the shoulder… altering a garment is what makes it couture, and really made for you.”

Whether you do it yourself or turn to the guidance of a stylist, it’s time to get started.We asked two expert stylists at Marissa Collections, who have been dressing Naples’ fashionistas for more than two decades, to share the biggest fashion faux pas women make and how to avoid them. Buffie Boucher-Martin grew up in town and started her fashion career at the now-closed Maison Blanche in Naples before moving on to Marissa’s. Beth Petersen’s fashion merchandising background led her everywhere from London to Los Angeles before settling in town. “I see so many women wearing outdated glasses that make them look ancient,” Boucher-Martin says. “Your eyewear and other accessories are just as important as your hair when it comes to making a look, and you need to keep them fresh and modern.” Some of the biggest faux pas are buying a new dress, only to pair it with an old shoe, and buying a designer monogram bag to wear with everything. “If you’re at an evening event and bring in a large day bag, it’s better to leave it at home and have no bag at all than to wear the wrong one‚” Boucher-Martin says.

HANGING ONTO EVERYTHING IN YOUR CLOSET Go through your closet and toss out items you no longer wear and update pieces you can’t bear to part with. “I work with several clients, affluent people who can afford to buy new things, but I go into their closets and they have the same old‚ worn-out shoes from years ago‚” Petersen says. “If you have something classic or vintage, like a nice little Chanel jacket you haven’t worn in years, bring it in and alter it a little. Style it, and old becomes new again.”

Luminous, Leigh Herndon

GIVING BACK

A few days of kindness can make a world of difference. Al Greene saw this firsthand with the end-of-life services provided by Avow Hospice to his only son, Jamie. Though 43-year-old Jamie was only in hospice a few days before he died of cancer in 2012, the loving care he received had a profound impact on his family. It prompted Greene to donate $325,000 to Avow Foundation before he passed away earlier this year at age 98. “Al was extremely appreciative of the care Avow provided to his son, so he wanted to include them as part of his legacy,” says Nancy Gibbs, the Greene family’s attorney. “Avow also helped with the last few weeks of his own life.” The donation will help fund the organization’s direct patient care costs and services, with a special focus on Avow’s complementary music therapy program to honor Jamie’s love of music. Scene STEALER

Naples is coming to the small screen. The October 4 episode of CBS’ Criminal Minds will be set in Naples—and feature the work of local artist Leigh Herndon. The set department of the award-winning crime drama, now in its thirteenth season, initially contacted the Naples Art Association in search of works that would help create a realistic setting for the episode. “I picked Leigh’s work because it felt ‘local’ and had the colors and style I was looking for…attractive, spirited, colorful work that felt like it had an emotional base,” says set decorator K.C. Fox, noting that six of Herndon’s paintings were selected for a coffee shop scene. “We were thrilled to be part of the process and are proud to watch our artists shine,” says Aimee Schlehr, CEO and executive director of Naples Art Association. Herndon is an NAA member artist whose unique paintings are made using the process of rozome, a silk-dyeing technique used by Japanese kimono artists. “My paintings reflect my fascination with the fragile and beautiful South Florida environment,” Leigh Herndon Herndon says. “They are intended to tell a story, evoke emotion, or give an impression and lend themselves to metaphor and mystery.” —Savannah Christensen

Film and art lovers alike are anticipating this month’s Naples International Film Festival, which is now operated by Artis–Naples. The festival, slated for October 26-29, begins with a kick-off party and the opening film screening at Artis—Naples. Shannon Franklin, the festival’s former executive and artistic director, returned as a consultant, and the ninth annual event is expected to follow a similar schedule as previous years. It will include screenings of approximately 50 feature-length and short films, as well as documentaries that will be shown at Silverspot Cinema at Mercato during the festival weekend. DEANNA WALLIN As a former nurse who struggled with eczema and psoriasis, Deanna Wallin was determined to find a natural way to treat her chronic skin problems, which also plagued her daughter. What beauty trends are you embracing this year? Which ones do you wish would go away? Can we just talk about how far natural makeup has come and how much I love it? Before, I avoided being creative with makeup for fear of the repercussions of using products with certain ingredients, but now we’re free to express ourselves with natural mineral makeup, and can rest easy knowing we aren’t harming ourselves in the process. As far as beauty trends going away, I’d say hair extensions. They make your mane brittle and dry. If you want long, luxurious locks, try providing it with the right nutrients rather than tacking on some faux length.

T

he casual, bright, and airy spaces endemic to coastal design are perfect for Southwest Florida’s endless summer. But the interpretation among designers varies wildly, adding layers of expression that ultimately refine the style into a uniquely Paradise Coast signature. One such example is a recent project at Fiddler’s Creek in Naples. Though the home is not waterfront (it backs up to the fifteenth fairway of the Creek Course), the builder, Harbourside Custom Homes, wanted to imbue the 3,093-square-foot space with coastal charm, since the beach was only a five-minute drive away. The Harbourside principals tasked Rebekah Errett-Pikosky and Charlie Hansen of Clive Daniel Home with creating a new iteration of the coastal style that resonated with the natural surroundings as well as Naples’ elegant vibe. “We’ve done coastal for so long, in so many different veins, that we’re always updating it,” Errett-Pikosky says. “This home is a little edgier than New England or cottage coastal.” The designers have employed a traditional palette of ocean and beach colors—soft seaglass, deep teal, and linen—accented with shades of white,

gray, and turquoise and pops of sheen. The smoke-colored, wood-grain porcelain tile throughout the house is reminiscent of driftwood. The entry sets the tone with hues of blue and linen. The 12-foothigh ceilings necessitated two focal points, expressed in split, reverse tray ceilings. On one wall, linen-colored wallpaper adds texture and serves as a backdrop for a mirror grouping arranged in the shape of a beehive and a console with beach coral–inspired legs. “We are big fans of using wallpaper to create a mood in the foyer, to kick off the vibe of the house,” Errett-Pikosky says. Wallpaper also appears in the great room. The watercolorinspired, hand-painted paper anchors the media wall and keeps the surf front of mind. The painted tongue-and-groove ceiling is typical of the coastal style, but interpreted in a modern way with clean lines and sleek beams. The furnishings also are more contemporary in nature, with unfussy shapes and angular edges. A hint of glamour comes via a bi-level coffee table with a highly polished silver-leaf finish. “Everyone wants a comfortable great room,” Hansen says. “Traditional

furniture mixed with modern elements makes it feel comfortable. The highlacquer and high-polish finishes on the accent pieces make the room reflective and glamorous.” Designed with lots of room for friends and family to gather, the kitchen is an open area connected to the family room and outdoor living area. Alabaster pendant lights with chrome bracelets add luster. Smokey Mountain granite countertops echo sand tones, and white cabinets with a white java glaze lend a casual beach house feel. A tray ceiling delineates the kitchen space to give a subtle separation to the dining room. An espresso-colored table contrasts nicely against the jute-colored twill fabric on the chairs. To up the glam factor, the designers have introduced a polished metal chandelier to the open space. One of the triumphs of the house is the outdoor area. Appointed with a summer kitchen, pool, and spa, as well as a linear gas fireplace, the outdoor living room is perfect for entertaining year-round. It’s practical, too: Fashionable Sunbrella fabrics on the seating can handle almost anything. Errett-Pikosky believes outdoor spaces are as important as indoor ones. Her advice to homeowners: “Spend the same budget on outdoor rooms as on the interior so they flow together.” With coastal undertones, elegant accents, and modern lines, the design, inside and out, invites resort-like repose—and that’s the ultimate goal of Southwest Florida living. « NAPLESILLUSTRATED.COM | OCTOBER 2017

jords, glaciers, rolling hills, conical volcanoes, pink-sand beaches, temperate rainforests, and towering Totara forests: New Zealand’s landscapes are powerful and diverse. They’re the fantasy backdrops synonymous with J.R.R. Tolkien’s Middle Earth and the reality of an island nation promising adrenaline-packed adventures, world-class golf, and Napa-style wine country pursuits. While covering the entirety of New Zealand’s glorious 103,737 square miles could never happen in a single trip, American billionaire Julian Robertson has made it possible to experience the best of New Zealand in fewer than 10 days—and do it in high style. Start your five-star Kiwi fast track in the northern reaches of the North Island, high atop Matauri Bay at The Lodge at Kauri Cliffs (kauricliffs.com), a 22-suite property strewn across a 6,000-acre farm with three private beaches, stunning nature trails, and a par 72, David Harman–designed championship golf course. Tucked into a native Totara forest, the well-appointed cottage suites feature expansive terraces that overlook the emerald Cavalli Islands. They’re also within walking distance of communal areas like the infinity swimming pool, the full-service spa, and the main house, where lavish meals are served in an elegant, formal setting (read: pack the haute couture and expect canapés, aperitifs, and at least three courses).

For non-golfers, days are typically spent exploring the Bay of Islands’ great outdoors by foot, bike, or quad bike, with nearly all trails descending to one of three sparkling beaches, each with its own personality. Pink Beach, so named for its pink-shell sand, is ideal for picnics, sunbathing, and relaxation on the titanic wooden swings that dangle from the colorful Pohutukawa trees; goldsand Takou was made for surfing and horseback riding; and white-sand Waiaua offers non-motorized watersports and snorkeling. At some point, you’ll want to detour from the sheep- and cow-dotted pastures and beach trails to see the lodge’s 700-year-old giant Kauri tree, as well as the picturesque waterfall that graces the property’s western perimeter. Next, head southeast some 425-plus miles (by helicopter or plane, preferably) to The Farm at Cape Kidnappers (capekid nappers.com). As Kauri Cliff’s sister farm, it also measures more than 6,000 acres, has 22 suites, and hosts a championship golf course, though this one is a par 71 designed by Tom Doak. Given its location in Hawke’s Bay, New Zealand’s oldest wine-producing region, Cape Kidnappers is a fabulous home base for exploits in wine country, where renowned estates like Elephant Hill and Vidal produce peppery, award-winning Syrahs, rich


Bordeaux blends, and crisp, unoaked Chardonnays. The tastings continue on property in the early evening, when local varietals are served by the main fireplace, followed by a wine-paired dinner starring sophisticated farm-to-table cuisine; prepare to drool over the likes of beetroot-and-goat-cheese macarons, followed by smoked beef tartare and line-caught snapper with sweet potato, bean noodles, and fennel in a beurre blanc. Most of Hawke’s Bay is inaccessible by four wheel-drive vehicles or bicycles, so plan to traverse the property’s immense craggy coastline and rollercoaster-like bayside hills by Can Am ATV, instead. Gawk at the rugged, wave-battered cliffs, laugh at the antics of curious sheep, and ready your camera for the largest mainland colony of gannets on Earth. Nature lovers should also consider a morning or afternoon on the Kiwi Discovery Walk, a guaranteed opportunity to observe endangered, flightless kiwi birds in their native habitat. Though avid golfers will likely opt out of all the above to tee off all day, non-golfers should also check out the coastal course—the vistas from holes 14 and 7 are exactly what New Zealand dreams are made of. For the third and final stop, travel deep into the South Island to the 11-room Matakauri Lodge (matakaurilodge.com) in Queenstown, the country’s adventure capital. Free fall from the original bungee jump platform

or opt for A.J. Hackett’s high-octane sequel, “The Ledge.” Afterward, go for a glide on the world’s highest swing. Spend a day hiking remote trails, heli-skiing on otherworldly slopes, or zipping through narrow canyon rivers aboard jet boats pushed to maximum speed—just don’t be alarmed when fishtailing into 360-degree spins. For a tamer outing, take a helicopter tour over the fjords and waterfalls of Fiordland National Park, specifically Milford Sound, or visit the real-life landscapes that served as scenery for the Lord of the Rings and Hobbit films. With so much to do elsewhere, Matakauri, unlike its sister properties, is more of a place to rest your head than to linger (though the pool is lovely in the summer, as is the spa, year-round). Still, each day here begins and ends with priceless views of Lake Wakatipu and Cecil Peak through floor-to-ceiling windows, and the gourmet meals stand on par with Cape Kidnappers and Kauri Cliffs. But speaking from experience, consider restricting the caloric indulgences to the first two lodges because jumping off a 1,200-foot ledge the morning after a four-course, five-cocktail evening is a guaranteed entrance into Mordor, the darkest part of Middle Earth. «

But this “Ultimate Driving Machine” needs to be driven to be fully appreciated. A press of the start button (again, a pinky will do) and the 3.0-liter turbo-six bursts into life. It packs a 335-horsepower punch, an increase of 35 hp. Coupled to BMW’s divine 8-speed automatic, it can catapult the 540i from standstill to 60 mph in 4.9 seconds. This is one of the world’s great engines: turbine-smooth, eager to respond, and spookily quiet while cruising at 15 or 150 mph. It’s economical, too, averaging 30 miles per gallon at highway speeds. But the argument here is whether this new 5 Series is a true, hardfocused sports sedan like BMW’s 5 Series of old, cars that earned

their “Ultimate Driving Machine” tagline. Short answer: Probably not. Even with the must-have $2,600 M Sport Package that lowers and stiffens the suspension and adds 19-inch alloys and an aero body kit, the 540i is more a luxury liner than a hard-core curve carver. Leave that job to the upcoming M5. Still, it’s a joy to drive. There’s just enough firmness in the ride, precision in the steering, and agility in the handling to make every serpentine back road a thrill for the enthusiast. Yet it won’t intimidate or overwhelm the less intense pilot. BMW draws drivers to its 540i fold with a highly seductive $57,445 base sticker. By the time you’ve added all the option packages, you’ll be looking at around $80,000. Our tester topped out at $81,910. But as Ms. Rowley knows all too well, this is a car that will definitely keep you wrapped around its little finger. «

When Bill and Joan Martin bought their eighteenth house last year—just eight months after their last move—their son, Scott, couldn’t believe it. But believing is how the Martins have approached life over 52 years of marriage, 11 of which they have spent living in Naples, where their current residence is a waterfront home in Naples Bay. Whether it’s remaking a home or creating their beloved Brahmin handbags, when this dynamic duo has a vision, they embrace it and dive in. Thirty-five years ago, the Martins launched their designer handbag company from their basement, with little cash and no access to loans. But the couple stitched it together with grit, and that they had in spades. Today, Brahmin remains 100-percent family-owned and continues to grow its luxury brand, no small feat in a fickle fashion industry.

Such determination is what got Bill through college—admittedly, on the sixyear plan—despite having dyslexia. But after 15 years of rising through the ranks at footwear industry leaders like Florsheim, Stride Rite, and Dexter, Bill was fired in 1980 from a company that sold handbags and shoes. His first thought was, “I’m ruined. The economy was bad, and I worried that I’d never get a job again.” It was a turning point that happened early in his marriage to Joan, and he says her optimism helped him see the setback as an opportunity to launch their own accessories company. When deciding on what to sell, they knew it would not be shoes, in part because Bill was well aware of the pitfalls in that category, including inventory considerations when you have to carry multiple sizes and widths for each style. “Handbags it is!” Bill told Joan. “They don’t have to fit—and what woman doesn’t like them?” Joan had no experience “other than good taste, good looks, and the ability to razzle dazzle people,” says Bill. But he had faith.

“She’s artistic and clever, and I hire the contractors and handle the bills.” Time has done nothing to erode the couple’s affection, admiration, and faith in each other. “I remember the first time I saw him and thought ‘Cute!’” says Joan, who spotted Bill in their high school corridor one morning. “He wore a blazer, which was unusual for public schools back then. He was much more interesting and worldly than most boys because he flew his own airplane and gave cool parties on his family’s farm.” While it may be hard to conceive of Bill as anything but confident, when he first noticed the effervescent, fair-haired Joan, she says he became tongue-tied. “He’d have a mutual friend call me and ask if I’d go out with him,” Joan recalls. “I’d say, ‘If he’d like a date he needs to call me himself!’ It took him several years.” When Bill and Joan married, she focused on raising their family. With a penchant for fashion and design, she would make clothes for their children, Scott and Sandy. As for Bill, he applied his discipline and affinity for order to manufacturing—first shoes, now handbags.

In October 1982, they converted their basement playroom into Joan’s design studio and the barn into a factory, where Bill would cut her patterns in Italian leather. Then living in Hingham, Massachusetts, the Martins chose the name Brahmin to reflect their deep Boston roots and their target audience: the elite with discerning taste. For three years, Joan flew across the country trying to court department stores. Not a nibble. Undeterred, she studied chains’ wares, asked questions to expand her skills, and drew patterns on flights home. “I learned on the job,” adds Joan, who would tear apart handbags to figure out how to assemble them. Despite Joan’s devotion, the Martins were on their own; the recession and their inexperience yielded no bank loans. “We sold everything but the children for financing,” Joan says jokingly. They kept Brahmin afloat by hosting Tupperware-style sales parties in friends’ homes, while Bill’s mom in Naples sold handbags out of the back of her car. Those were lean years. “My travel budget was less than $50 a day for hotel and food,” Joan recalls. “I was thrilled when I was invited to seminars, because they had coffee and doughnuts.” In hindsight, the lack of a financial cushion was a blessing. Today, the Fairhaven, Massachusetts–based Brahmin handbags are sold at more than 750 retail locations across the country and staff has grown from a family of four to approximately 250. The popularity of the bags appears to stem from the Martins’ focus on function as much as fashion. Brahmin bags stand out with a blend of crocodile and snakeskin textures in nuanced gradations of colors. But what truly sets them apart are the details. Bag interiors are light-hued. “If they’re dark it’s like looking into a dungeon,” Joan says. A backside pocket fits a boarding pass, straps adjust by pressing a button (avoiding long tongues), and the interior has pen slots and pockets sized for sunglasses, cocktail rings, or credit cards. on a long inner strap, so you can open doors without detaching it from the bag. And tote handles have a squishy interior—neoprene tubing used by auto shops—so they don’t dig. The Martins’ homes, as with their purses, show a focus not just on style, but also function. Their new Naples home can fête many charities and accommodate their two children and six grandchildren, ages 6 to 18. The couple also host charity dinners aboard their Horizon luxury catamaran, named Lil after Joan’s mother, to benefit the Naples Winter Wine Festival (NWWF). The annual festival is the primary fundraising vehicle for the Naples Children and Education Foundation, one of the Martins’ favorite causes. The couple recently became honorary trustees of the nonprofit organization, which supports many programs that serve the neediest children in Collier County. “Naples is such a giving community,” Joan says. “We love to entertain and are committed to charities that help Collier County’s underprivileged and at-risk children.” All couples attending the NWWF’s live auctions are gifted Brahmin handbags. This year alone the Martins donated 350—one for each female guest—amounting to a total of 1,400 handbags over four years. Those stylish purses also take center stage in Joan’s custom finishing room, next to their master bedroom. The 8-by-8-foot closet flaunts 40 of the latest and greatest Brahmin bags on 12-inch deep shelves with individual LED accent lights. Shoes are displayed beneath, while jewelry, wraps, and cardigans are hidden behind adjustable mirrors. “My goal was to make it easy for me to coordinate my final look,” she says. “I try to keep only current bags because my friends watch me and want to order them. So I wear a different bag almost every day.” Making waves down the hall from her collection is Bill’s upstairs man cave. “Everything’s heavy, dark, and eclectic Bill,” Joan says. His love of boating extends to the home itself. He bought two 62

antique Russian naval binoculars, one of which overlooks the bay. Nautical nods also include British colonial–style sconces at the fireplace and hanging lanterns in the ground floor halls. A smattering of sailboat prints and models on the Italian buffet buoy the boating theme. “Yachting is part of Bill’s DNA,” says Joan of her husband, who grew up boating with his parents and three older brothers. Every summer, his dad would charter a cruising sailboat in Maine or Cape Cod for two weeks. A portrait of Bill’s great-great-great-great grandfather, Ambrose Bowen Martin, hung over his childhood fireplace—and has been in each of their homes since. It joins a watercolor of Ambrose’s schooner, The Raven, and mounted plates from the ship. A silhouette of The Raven is

part of Brahmin’s logo—a reminder of the longstanding success that has allowed the Martins to retire in Naples, which they grew to love during visits to Bill’s parents, who moved here nearly 50 years ago. Coming full circle, as the Martins entered their 70s they were ready to coast, too—and saw a need for fresh ideas. “We didn’t want to be the owners who won’t let go, to the detriment of the company,” Joan says. While it was hard to hand over the wheel after being involved so heavily for so many years, Bill promoted Susan Thacker to chief executive officer in 2014. “We found someone in the company with extraordinary leadership and good taste—and who said, ‘I’m ready, coach, send me in!’’ For the Martins, the commitment to women in leadership is woven NAPLESILLUSTRATED.COM | OCTOBER 2017

into the fabric of their company. “We make handbags for women, designed by women, and sold by women. When I go into our conference room, I see one guy and 25 women. At Brahmin, there is no glass ceiling,” says Bill, who sails from Naples to Nantucket for a monthly check-in at headquarters. “Taking over a business they built from the ground up is a huge responsibility as a non-family member,” Thacker says. “I confer with Joan on creative development and with Bill, but ultimately the business decisions are mine.” Those include adding a casual soft-sided, smooth leather line along with accessories like bangles, smart phone covers, coasters, and luggage tags. With such changes, Thacker appears to be proving the Martins’ instincts correct. Sales have increased 60 percent since 2013, according to the company. By the end of the year, Brahmin is expected to launch a program that will extend its reach around the globe. Thacker still calls Joan “the inspiration” for the brand. “She has a talent for understanding what customers will want,” Thacker says. “The Martins also have very high integrity. They never cut quality or craftsmanship. That’s why customers are so loyal.” It’s also why the Martins may never truly retire. “I cannot go past a store I know carries our bags without checking them out,” Joan says. “Brahmin is our third child.” « 64 NAPLES ILLUSTRATED

COOKING UP A PLAN Whether remodeling the kitchen or starting from scratch, the process can be as overwhelming as it is exciting. We turned to the experts for their best advice on what to consider first. Here are three questions to ask before taking the first step.

HOW WILL YOU USE THE KITCHEN ON A DAILY BASIS? It’s easy to be dazzled by beautiful dream kitchens, but designers say you also have to focus on how it will work for you and best suit your lifestyle. For example, if you love to cook and entertain in the kitchen, it’s important to plan for that. “Having extra seating or a second island, room to add sous chefs, or friends having a glass of wine while you prepare dinner is something to consider,” says Lisa Kahn of Lisa Kahn Designs. And when you envision cooking dinner, think about how much room you’ll need In this open kitchen, Koastal Design Group added a custom-cast concrete to move around in the work zones of a kitchen. island countertop embedded with shells. “Spacing between the island and perimeter needs to be larger than it used to, as we are now sharing our cooking with others,” says Faith Fix of Freestyle Interiors. “Outlet placement should also be well thought out in the backsplash and islands.” Make sure you account for the amount of space needed between counters as well. “Too much [space] and the travel distance with a hot pot, for example, is too far,” adds Jenny Provost of K2 Design Group. “Too little space and two people cannot work back to back.” Four feet is a safe default, she says, but it really depends on the unique functions of each kitchen. How much storage will You need? Once the basic kitchen layout is complete, make a list of all the equipment you use to cook, such as pots, pans, and other accoutrements, that will need storage. Experts say think carefully about each area of the kitchen when deciding what to place where, so it’s all easily accessed when preparing a meal. “One thing people will often overlook is the height of their pots and the depth of their kitchen drawers,” says Judith Liegeois of Judith Liegeois Designs, noting that she likes to place spice racks in a convenient slim drawer right next to the oven. Calculating the proper refrigerated storage is glossed over as well, says Provost. “Instead of a single massive refrigerator, consider specific types, such as Miele’s beautiful tall wine cooler.” Before selecting the size of refrigerator and freezer columns, assess how frequently you shop, and whether you buy more fresh food or load up on frozen goods. “And if you can’t decide,” Provost says, “just choose the CoolDrawer from Fisher & Paykel, which is one large appliance drawer that with the touch of a control pad can change from wine cooler to meat storage all the way to freezer.”

How will you light the kitchen? Lighting is a critical part of any kitchen design, yet experts say it’s commonly left as an afterthought. “Most kitchens are too dark,” Provost says. “Large recessed light fixtures with wide beam spreads are not ideal. Kitchen lighting should be targeted for specific tasks.” Designers say never underestimate the power of a perfectly lit room. As an alternative to pendant lights, which are now commonplace in the kitchen, Liegeois suggests placing lamps on large islands. “You can wire them in so no cords show,” Liegeois says. Decorative light fixtures also make a statement and help set the tone. “A carefully selected fixture that reflects [your] personal style can dramatically change the overall aesthetic of the kitchen,” says Jenifer Davison of Collins & DuPont Design Group. Looking for an immediate mood booster? If there’s not much natural light, consider adding a window. “The importance of natural light in a kitchen is paramount,” says Kahn. “Cooking can be a joyful experience if you’re in an environment that is uplifting, and an abundance of natural light can truly elevate your experience.” For another soft layer of light, add a pair of sconces that flank the upper cabinets, suggests Bethany O’Neil of Bethany O’Neil Interior Design. “I love the accent lighting it provides along with the added dimension of materials,” O’Neil says. “They become the second focal point in the room after the cooktop hood.” NAPLESILLUSTRATED.COM | OCTOBER 2017

hile granite countertops had long been considered a must when designing a dream kitchen, experts say they have been falling out of favor. The latest trends report by the National Kitchen & Bath Association, which surveyed more than 450 designers, shows waning interest in granite, while quartz has been gaining popularity. In 2010, 73 percent of designers reported

using quartz in their kitchen projects. By 2015, that number rose to 89 percent, with 67 percent expected to use quartz in even more projects in 2016, according to the national survey. The shift toward quartz appears to hold true among Southwest Florida designers as well, as many are opting for a mix of natural and engineered surfaces. “It seems that everyone wants the quartz countertops because they

are indestructible,” says Mercedes Courland of MC Interiors. “The man-made solutions are now being offered in marble looks that are extremely convincing. Sometimes I use a natural slab for the island to give some drama, and then use the man-made for the heavy work areas.” Lisa Kahn of Lisa Kahn Designs points to slabs of natural quartzite as being on trend. “They are harder than granite, don’t have the black speckling of many granites, and some of the colorations and stone patterns are remarkably similar to marble,” Kahn says. But the challenge with natural quartzite is finding it in shades of white, adds Bethany O’Neil of Bethany O’Neil Interior Design. “When white is the ultimate goal, I look toward calcite which is a member of the marble family—only crystallized

While the trend in cabinets has swung to a modern approach, Shari Summers of Summerfields Interior Design says traditional raised panel or shaker styles are still acceptable and timeless. “Recently, in my own kitchen, we designed the base cabinets to be more furniture-like, as they are finished in wood stain. The upper cabinets are simply painted white. The center island is painted an ocean blue with wood-stained frame, sitting on a furniture base. The mix of finishes makes the room more livable.” «

Chef Asif Syed recently added sardines to his menu at 21 Spices in Naples. “Indians use sardines in all coast regions,” he says. “They use them fresh, pickled, and sun-dried. Sardines go very well with Indian spices and curries.” Syed stuffs South American fresh sardines with fennel and other herbs before baking them.

Mac and Cheese Timeless Interior

CHEF DAVID NELSON A native of Minnesota, chef David Nelson attributes restlessness for steering him in a culinary direction. Easily bored by unchallenging jobs, he found the stimulation he needed in the restaurant business. After a stint in the Army, he earned his culinary arts degree from the Art Institute of Seattle, which eventually led his career to Naples. In 2006, Nelson started as developmental chef for Truluck’s Seafood, Steak & Crab House, and later oversaw the kitchen at Avenue5 before it closed. Nelson's latest position as the executive chef of Timeless—An MHK Eatery, which opened in August, is his “dream job.” The architecturally stunning, glass-wrapped restaurant features a display kitchen, pizzeria, and a bar, which together offer diverse styles of dining. Nelson says he’s excited about creating a new brand of pizza using imported flour and introducing even more progressive techniques, such as sous vide and other modern cooking methods, to Timeless.

Circle of influence: My grandmother was a major cook in a small town in Wisconsin. She had her own garden, and it was amazing what kind of food she could put out The Vanmeter of this tiny kitchen. Childhood craving: Definitely pasta with a cream sauce. I think I was 16 years old when I made my first fettucine alfredo, trying to impress a girl. It worked! Aha moment: While in the military, I worked in kitchens. When I was 23, I took the Army’s advanced culinary course and made consommé and chicken cordon bleu. I was fascinated by the process. His muse: I need music while I’m working. Silence drives me mad. I like to listen to bluesy R&B women when I’m prepping, and more aggressive music like Green Day or Foo Fighters when I’m cooking. At Timeless we have an open kitchen, so we’ll be listening to whatever is playing in the dining room. What inspires him: I’m a big cookbook nerd. I also like to go out to eat to see what other chefs are doing. But having great ingredients at hand is the best inspiration. Favorite ingredient: Citrus. I use it in just about everything, even if it’s just a squeeze of lemon juice. It can bring out flavors so much better than salt or anything else.

Designed not only to appeal to vegans but also to help save the planet, the new generation of plant-based burgers strives to “trick” omnivores’ senses into a meaty state of mind. Brands such as the Beyond Burger and Impossible Burger simulate meat using beet juice to create the pink in a medium or mediumrare cook, plus ground legumes and coconut and vegetable oils to add the fatty-protein mouth feel. Available at Whole Foods and some Publix stores, frozen Beyond patties can be grilled or pan-fried for a cholesterolfree alternative to ground beef. In July, the Florida-based BurgerFi franchise announced that eight of its locations added Beyond Burger to their menu. At press time, Naples locations also were expected to be taking that step. How realistically meaty is the Beyond Burger? I decided to find out. Frozen in a package of two, the Beyond Burgers looked more or less hamburger-like, but the real surprise came when I cut open the package and was engulfed by an immediate aroma of raw meat. I was encouraged. I had read on vegan Facebook pages to follow instructions and not to overcook. I pan-sauteed

one patty and the smell of cooking beef made my mouth water. To further the illusion, I dressed it with a bun, ketchup, and mustard as I normally would and, with great anticipation, took a big bite. Not terrible. Then I tried it sans condiments. Let's just say it did not trick my senses. For the second patty, I broke it apart, fried it, and added it to a spaghetti sauce, thinking that would make it taste more meat-like. Verdict: Despite how much I wanted to like this healthy burger alternative, it just didn’t convert an Iowa farm-raised girl like myself.

Many Americans are aware Thomas Jefferson was a wine connoisseur, but few realize George Washington was a distiller. In fact, the father of our country was the eighteenth-century equivalent of Jack Daniels or Jim Beam. By 1799, the year of Washington’s death, his distillery produced 11,000 gallons, making it the largest in the country. The grist mill and distillation facility at Mount Vernon have been reconstructed and today turn out small batches of limitededition whiskey. Despite living in Virginia, Washington made rye whiskey, the northern states’ favorite drink. (The South was more passionate about corn whiskey, which eventually morphed into moonshine.) Reportedly, the most popular recipe at Mount Vernon was 60 percent rye, 35 percent corn, and 5 percent malted barley. There was a ready market for it: The average adult in the 1790s consumed 6 gallons of whiskey annually, nearly twice the current amount. Rye remained popular until Prohibition, when it practically vanished from the landscape.

It came roaring back during the cocktail culture revival of the later twentieth century. Bartenders were looking for spirits that made a dramatic statement on the palate, and the dry, spicy quality of rye was perfect. In addition, many of the classic pre-Prohibition cocktails called for rye, notably the Manhattan, the Sazerac, and the Old Fashioned. American distillers were caught flat-footed by the sudden demand for rye, and many spent a decade or more catching up. Today’s consumer has different styles to choose from, ranging from sturdy cocktail mixers to luxury brands. Here are some favorites: SAZERAC ($35): Famous as the main component of New Orleans’ official cocktail, Sazerac Rye is made at the Buffalo Trace distillery in Frankfort, Kentucky. Crisp and fragrant, with overtones of bitter orange and chocolate, it also makes an excellent Manhattan. It’s hard to find, simply because the bulk of the supply gets shipped directly to the Big Easy. WHISTLE PIG: Entrepreneur Raj Peter Bhakta bought a 500-acre farm in Vermont, hired former Maker’s Mark master distiller Dave Pickerell, and set out to create the country’s

years later. Composed of 95 percent rye and 5 percent malted barley, Bulleit mixes well in a variety of cocktails and constitutes an exceptional value. RITTENHOUSE ($30): Another notable bargain, Rittenhouse started in Pennsylvania and is currently made by Heaven Hill in Bardstown, Kentucky. Despite coming in at 100 proof (50 percent alcohol), the whiskey is flavorful and balanced, becoming sweeter and more mellow when used in cocktails. «

best rye. Early versions, such as the 10-yearold ($80), were blended and aged from purchased spirits, but the recently released Farmstock ($90) is made from organic rye grown on property. At the high end of the scale, Bhakta sells the 12-year-old Boss Hog ($325) and an 11-year-old version bottled at 111 proof ($700). ANGEL’S ENVY ($85): The late, legendary Lincoln Henderson, creator of Woodford Reserve and Gentleman Jack, came out of retirement to establish the Angel’s Envy brand. This rye finishes its aging process with 18 months in rum casks, giving a rich overlay to its smooth and spicy texture. Only 2,500 cases were made, but a bottle can be secured with a bit of effort. BULLEIT SMALL BATCH ($28): In 1987, Thomas E. Bulleit Jr. revived the recipe of his great-great-grandfather Augustus, a tavern keeper in 1830s Louisville who made “frontier whiskey.” As with Angel’s Envy, Bulleit bourbon came first and rye was added a few

TRAINING 101

Basic obedience training can help build trust and respect between owners and their canine companions, as well as allow for easier, more effective communication. “Preventing bad behavior is much better than bringing [trainers] in to fix bigger problems later,” says Bekah Coffing, Humane Society Naples’ resident behavior specialist, who teaches classes ranging from basic puppy manners to more advanced private sessions (hsnaples.org/services). To get started, Coffing shares three simple training tips anyone can practice at home. –A.B. Set boundaries. Rules help dogs know what to expect from life. Coffing suggests using baby gates to block certain areas, such as the kitchen while you’re cooking. You can also tether pets in another room when you don’t want them to approach the dinner table while you’re eating. Use mark and reward training. Similar to Pavlov’s dogs, which were conditioned to salivate when they heard a bell ring, use a word like “yes” to mark positive behavior and

show pets they are doing something right. Then, anchor the mark word by offering a treat after you say it. Whenever they exhibit that behavior, always reinforce it with a “yes” followed by a treat, repeating the sequence until your pooch links the word to the positive behavior. Establish a release word. If you teach a dog the sit or stay command, use a release word like “free” or “release” and follow it with a treat. If you don’t, dogs can get bored and start moving around. Coffing says it’s important to be consistent and use the release word every single time, so pooches know to stay put until they hear it.

Pickleball courts are common in community parks across Southwest Florida. You can practice on 25 courts at East Naples Community Park, while Fleischmann Park and Veterans Community Park feature outdoor courts as well. Many local YMCAs have indoor and outdoor courts, and the YMCA in Bonita Springs expanded with another eight courts over the summer. On hot or rainy days, reserve one of the air-conditioned courts at Pickle Pro’s mega-center. The indoor courts have concrete surfaces, like those found outdoors, instead of the typical gym surface that can be more slippery, according to Tom Watson, operations manager at Pickle Pro.

WHERE TO PLAY

Naples is a hot spot for pickleball, which has exploded in popularity across the U.S., growing from about 250 thousand players five years ago to 2.5 million players today. Similar to ping-pong and tennis, with elements of badminton and racquetball mixed in, pickleball is played on a badminton-sized court with paddles and a plastic ball similar to a wiffle ball. The game started on an island in Washington state around 50 years ago, when a congressman and a senator created a version of badminton for their families to play with ping-pong paddles, a perforated plastic ball, and a small net. The sport’s creators were active rowers, so they named it after the last boat to come in during a rowing competition—the pickle boat. A pickleball mega-center recently opened in Naples, which is also where the U.S. Open Pickleball Championship is held each year. Here’s how you can get in on the action. —A.B.

The October 28 class consists of a 30-minute session in the Ritz-Carlton Naples’ butterfly garden, where attendees will receive one-on-one instruction from the Dale Chihuly–trained glass artist. With cooler fall temperatures on the way, it’s time to hit the ground running in these local races that challenge runners at every level. The Marco Island Triathlon kicks off at 8 a.m. on October 1 at the Marco Island Marriott Resort and Spa and includes a quarter-mile swim, a 15-mile bike ride, and a 3.1-mile run across hills and beaches. “It’s a great race for first timers and still offers a challenge to the competitive athlete,” says race director Linda Hill Gregory. Go-to scent: Tuberose Gardenia, part of Estée Lauder’s private collection. At home, it’s dozens of fresh lemons to scent the air naturally and beautifully. 4. Entertaining must-haves: My collection of antique dewdrop tumblers and knife rests. 5. Guilty pleasure: Kringle from Racine, Wisconsin—the official pastry of the state. 3 6. What few people know about her: My family has been farming produce in Salinas Valley and Imperial Valley, California, for four generations. A highlight of every spring is the crate of sweet onions that arrives from my cousin during harvest. 7. Best locally made product: Royal Scoop ice cream. 9 8. Craveable local bite: True Food Kitchen’s Charred Cauliflower. 9. Go-to hostess gift: Jo Malone Candles. 10. On her playlist: Baroque music, especially the chorale works of Bach and Handel.

, general manager of Waterside Shops, moved to Naples in 2013. She grew up in Salinas Valley, an agricultural region of central California known as the “Salad Bowl of the World.” Jovial by nature, Fleming 1 attends various charitable and social events in town during season, where her smiling blue eyes always stand out in a crowd. “I live life as if everything is rigged in my favor,” she says. One of her daily rituals is to rise at dawn to journal and pray; she finds serenity at the Garden of Hope & Courage, which she calls Naples’ best-kept secret.
