From the Editor The hustle and bustle of the Christmas season always seems to evoke a sense of wonder—and not just in all the children who have an extra skip in their step and sweet twinkle in their eyes. It’s a time of year for many gatherings of family and friends, a time when we reminisce and suddenly become aware of how much faster time ticks by every year—and then vow to enjoy every precious moment. We make memories to savor for a lifetime during the holidays, and create traditions we hope will anchor our families and the generations to come. In this holiday issue, we profile the Johnsons, a Naples couple who have a long-standing hand-stitched holiday tradition that uniquely connects their close-knit family. Learn how they are “Making Spirits Bright,” page 62. It may just inspire you to start a new holiday tradition or resurrect one from generations past. The merry season also means over-the-top delicious dinners with dishes that remind us of home. This year we asked local chefs to share a favorite dessert that brings back wonderful memories of family. See their beautiful homespun dishes and learn about their “Sweet Traditions,” page 68. For you, perhaps the holidays are synonymous with glittering parties, whether you are attending or hosting. In Abode, page 49, you’ll find stylish items for holiday entertaining in our own version of “Winter Wonderland.” Then, when the excitement and busyness of the season turns stressful, turn to Balance, page 111, for a bevy of festive scents that soothe the mind, body, and soul— plus, holiday-themed spa treatments to help you decompress and keep up the holiday spirit. As we all cherish our time with family and friends this season, I am reminded of what E.B. White once said: “May you always be on the lookout for the presence of wonder.”

Preheat oven to 350 degrees. In a large mixing bowl, beat shortening and peanut butter with an electric mixer on medium to high speed for 30 seconds. Beat in granulated sugar, brown sugar, baking powder, salt, and baking soda until combined. Beat in egg, milk, and vanilla. Add cocoa powder and flour and combine. Shape dough into 20 balls and place two inches apart on an ungreased cookie sheet. Bake 9-11 minutes or until edges are just firm. Cool on cookie sheet for 2 minutes, then transfer to a wire rack. Place cooled cookies on a baking sheet lined with wax paper. In a microwave-safe bowl, microwave candy coating for two minutes or until melted and smooth, stirring every 30 seconds. Spoon melted coating over each cookie to resemble snow. While coating is still sticky, add a peanut butter cup for a top hat and decorate with sprinkles to create snowman faces. Let stand until set.

Insider Q&A DANIEL ACUNA
SUZY FAVOR HAMILTON
THE LONG RUN
One-time elite runner, Olympic athlete, and magazine cover girl Suzy Favor Hamilton changed dramatically once her glamorous life as a famous athlete ended. She became a fast-living, high-priced Vegas call girl, despite appearing to live a perfect life with a devoted husband and young daughter. Hamilton says what caused this dangerous 180-degree turn in her behavior was misdiagnosed bipolar disorder and the wrong drug treatment. When news of her double life broke in the media, she was forced to face her illness and start the long journey to recovery. Hamilton tells the story unflinchingly in her book Fast Girl: A Life Spent Running From Madness (2015, Dey Street Books), as well as at speaking engagements. She will share her insights and experiences as the special guest at NAMI of Collier County’s (namicollier.org) Hope Shines Luncheon December 1 at LaPlaya Beach & Golf Resort, Naples. —Kat Smith
NI: Why did you decide to talk publicly about your life? Hamilton: I wasn’t going to let my experience define who I was. I want other people affected by bipolar to understand not to feel shame or embarrassment. There were people who wanted to see me go away, and I wasn’t going to do that. It gave me more determination to be a voice for people who can’t stand up for themselves or silently suffering from mental illness. How did being a famous athlete affect you? Being in the spotlight, I felt a need to be perfect. Winning races was amazing, because you feel all this glory and praise. You are being told how great you are, and that can affect you. When you have that bad race, you feel like such a failure. Later in life you rebel or get into problems, and you don’t have the coping skills. The illness had its negative effects, but it had positives, in that I realize now how the illness drove me to be the success I was. How do you talk about your life with your daughter? My brother, who took his own life, was diagnosed with manic depression, which is now bipolar. At that time, it wasn’t talked about. Now the best thing to do is talk about it, especially in families. My daughter is only 10, but she understands my story completely. It is so important for children to realize it’s not their fault in any way. It’s my brain, I’m getting treatment, and getting healthy. But she has to understand the behaviors—we can’t overlook that and not explain it to her. She understands that 50 percent of people with bipolar suffer with hypersexuality. What can you tell us about your recovery? I use healthy coping mechanisms—exercise, eating right, hiking mountains. I owe a lot to my husband, Mark, who is incredibly strong and stood by me and encouraged me not to feel shame. After I speak, people come up and share their stories. Maybe they start crying; I realize they’ve been holding it in for so long, and they feel safe telling me. That’s when I know I’ve been a success, because that’s the road to recovery, being able to share your story. That’s what I do now; getting out and speaking is therapy for me. The Naples Beach Hotel & Golf Club (naplesbeachhotel.com) just unveiled the fresh face of its popular golf course following months of renovations. Golf icon Jack Nicklaus, who first played the course at age 11 in 1951, helped design the total makeover, along with course architect John Sanford of Sanford Golf Design. The new 18-hole, par-71 course was designed with golfers of all levels in mind—scratch to newbie players will enjoy the challenge. The $9 million project also included a new 300-yard practice-teaching range and new carts with GPS tracking systems. —Kat Smith

Insider A select group of singers will enjoy the rare opportunity to learn from a legend in Opera Naples’ inaugural Renata Scotto Opera Program. Partnering with Opera Naples Artistic Director Ramón Tebar, the exalted Italian soprano will conduct master classes, each of which will conclude with a public concert at the Wang Opera Center, Naples, January 21 and 25, and March 13 and 18. Scotto’s awardstudded stage career spanned 40 years, 60-plus roles, and worldwide top venues—the Metropolitan, Chicago Lyric Opera, San Francisco, London’s Royal Opera, and many others. During her stage career, she also taught others, and after retiring from performing, Scotto took on directing as well. In addition to this Opera Naples program, Scotto will be the star guest at the gala, An Evening in Monte Carlo, January 20 at The Ritz-Carlton Golf Resort, Naples, and will speak at the Evening With Renata Scotto event at the Wang Opera Center, January 21. (operanaples.org) —Kat Smith
NI: How did you become involved with Opera Naples? Scotto: It was through Ramón Tebar. We were in Miami, working on La Sonnambula, and we became good friends. He had the idea to have courses for young artists in Naples. The reputation of Opera Naples is very good, and Naples is beautiful. So I said yes. Would you characterize your teaching style as steel or velvet? Absolutely like velvet—with some things. I respect the personality. I am looking to have a person who understands how important it is to be in front of an audience. You are a singer, giving your voice. In a soft way, I say your voice is not yours, it’s for someone else. It’s a gift from God and you have to understand how to give the gift the best. I’m strict, though, because I repeat things until I get what I think is good. So I would say I am velvety with steel. How do you see opera’s future? The future is in danger, but not because of singing. There are so many singers. We need directors who understand how to support the beautiful art of music. I directed operas myself, and would think about respect for the composer first, respect for the stage, and respect mainly for the audience. If you are able to do this, opera will have a future.

NEVIS NICE
Alexander Hamilton’s storied homeland is one of the Caribbean’s least known—and most welcoming—destinations

The Villas at Pinney’s Beach (left and top right) come with three- and fourbedroom plans and all the mod cons of home.

efore the musical Hamilton came to Broadway, few people had heard of Nevis. For years, the volcanic Caribbean island had kept a blissfully low profile, known only to a few discerning travelers who, quite frankly, preferred to keep it all to themselves. Lin-Manuel Miranda, who wrote Hamilton and starred in the title role, has brought Nevis, Alexander Hamilton’s birthplace, into the spotlight. Miranda spent extensive time on the island researching its most famous native son and gathering inspiration for the work. It’s hard not to be inspired by Nevis. The 36-square-mile isle comprises one-half of a nation—the other half is St. Kitts—in the Leeward chain of the West Indies and is marked
by its prominent volcano, Nevis Peak, which almost always sits beneath a halo of clouds. The volcanic soil renders the island fertile, so color explodes on the sloping hillsides. Springs dot the landscape, further branding Nevis as the quintessential tropical idyll. It’s the kind of place in which you want to get lost and play out a modern Cast Away fantasy. But why do that when you can stay at a Four Seasons (fourseasons.com/nevis)? The resort proper has been around since 1991 and its charming cottages are beloved by patrons who’ve been coming to the island for years. But those who desire a more exclusive, private experience head straight for the new Villas at Pinney’s Beach, developed by Four Seasons Resort Estates (fsrenevis.com). The three- and four-bedroom villas are

ideal homes away from home, complete with high-end finishes, floor-to-ceiling windows, vaulted ceilings, modern furnishings, and private plunge pools. The plan is equally suited to relaxing and entertaining: The great room, kitchen, and pool area are separated from the two-story bedroom wing by a courtyard. The feeling is residential, down to the golf cart parked in the driveway and reserved for guests’ use. The villas are situated along the golf course and in the shadow of Nevis Peak. Though it seems counterintuitive to not have a beach view, the emerald world beyond the private deck is nuanced with tropical breezes and sunset vistas that more than make up for the lack of sand between your toes. Farther up the hills is a collection of privately owned island homes in the FSRE portfolio, most of which are offered as vacation rentals. This is, perhaps, the ultimate luxury, as these multimillion-dollar estates offer

For most travelers to Nevis, it’s easier to fly into St. Kitts and take a launch to the island. To make the process easier, Four Seasons has partnered with YU Lounge, a chic terminal akin to a private-aviation or first-class lounge. everything a second home does: massive square footage, smarthome features, lush landscaping, pools, and entertaining areas overlooking sprawling hillside and water views. If you happen to fall in love with the lifestyle, FSRE offers several ownership options as well. Villas and estates have the added benefit of Four Seasons housekeeping and resort privileges, such as dining and spa. An enclave of gingerbread cottages, the spa is tucked inside a secret garden that immediately encourages a relaxed vibe. After a treatment (we recommend the Nature’s Getaway, which includes a coconut scrub, a prickle pear wrap, and a warm ginger oil massage) and a long soak in the volcanic stone Jacuzzi, lunch is served alfresco amid verdant surroundings. The spa menu of bento boxes and fresh juices is the perfect mix of delicious and virtuous. The Four Seasons offers several dining experiences worth indulging in, including the beachfront Mango that recalls Saint-Tropez NAPLESILLUSTRATED.COM | DECEMBER 2016

chic, but the one that can’t be missed is Dive and Dine. During lobster season, scuba-certified guests are encouraged to dive for their own dinner. Nothing tastes finer than a lobster caught earlier that day with the guidance of a Nevisian dive master who truly knows the local waters and grilled to perfection by a Four Seasons chef. Another dining must is Sunshine’s (sunshinesnevis.com). This locally owned, beachside eatery claims to have the best food on the island, and that’s not an exaggeration. Start with a Killer Bee
(emphasis on killer), Sunshine’s famous rum punch, and progress to a family-style dinner with garden salads, barbecued chicken, and the freshest fish, marinated and simply grilled. The vibe is totally relaxed and hyperlocal, and you never know when you might spot a celebrity in the considerable crowd. If Alexander Hamilton is Nevis’ most noteworthy figure, Sunny (short for Sunshine) is probably the most colorful. Sunny and his team surely gave rise to the term “Nevis nice,” which truly describes the attitude throughout this gem of an island. «

The Lodge at Glendorn offers cozy accommodations nestled on 1,500 acres, where guests can enjoy outdoor pursuits like curling, crosscountry skiing, or happy hour around the campfire.
Winter Enchantment This year, skip your favorite ski resort and veer off the beaten path to discover one of North America’s secret winter wonderlands: The Lodge at Glendorn. This luxurious, Relais & Châteaux–pedigree lodge encompasses a whopping 1,500 woodsy acres on the outskirts of Allegheny National Forest (nestled near the New York/Pennsylvania border, 90 minutes south of Buffalo), functioning as a self-contained, activities-driven destination exclusive to 16 cabins and suites. The family estate dates to 1927, when oil titan Clayton Glenville Dorn and his son, Forest, built a single, log and plank–sided cabin overlooking trout-rich Fuller Brook stream. As the Dorn family expanded, new generations built their own sequoia-wood cabins over the vast acreage, each with a design reflective of its respective decade. Now, 16 units (and a fabulous, full-service spa) later, this collection of multigenerational accommodations has been transformed into an upscale resort that tells the story of a single family’s history. Cozy cabins are just one part of the modern-day Glendorn narrative. Outdoor pursuits also play a central role with 18 miles of hiking paths, 4.5 miles of privately owned banks for fly-fishing, and unspoiled surrounds that transform into one massive, snow-blanketed playground come mid-December. As the foot trails transition to extensive networks 58

for cross-country skiing, snowshoeing, sledding, and snowmobiling, the frozen lakes solidify as ice-skating rinks, sporting grounds for curling, and fields for ice fishing. Glendorn is a fantastic four-season destination and, as such, other activities like skeet shooting, sporting clays, and nature tours by jeep are offered year-round. But it is extra special during winter. Whether recharging with hot chocolate, cookies, and hot toddies in one of the estate’s warming cabins, telling stories in the snow around a bonfire, or coming together as a family each evening to discuss the day’s icy adventures over lavish, multicourse meals, Glendorn is the place to pen an unforgettable chapter in your own family’s history. With its heat-reflecting seats, the 2017 MercedesBenz SL550 roadster is one cool customer By Howard Walker Remember that scene in the 1979 romantic comedy 10 ? You know the one I’m talking about: A love-struck Dudley Moore hops across the beach toward a cornrow-braided Bo Derek, barbecuing the soles of his feet on the hot sand in the process. For me, the automotive equivalent is sliding into the leather seat of a convertible that’s been left—top down—stewing in the midday Florida sun. Especially if you happen to be wearing shorts. There are no expletives to adequately express the pain of fricasseed thigh flesh. And grabbing hold of the wheel to provide leverage to extract yourself doesn’t help, not when it’s also as hot as the inside of a lava-spewing Mount Etna. This all-too-common experience is why I’m nominating the 2017 Mercedes-Benz SL550 as the Official Convertible of the Sunshine State. How come? Its hip-caressing seats and thick helm feature heatreflecting leather designed to stay cool when broiled from above.

Apparently, there’s a special pigment added when the hides are being treated that can reflect infrared rays, keeping the leather cooler by as much as 36 degrees. That’s a lot. Think of it as SPF50 for your upholstery. But does it work? You bet. I tested the SL in sweltering conditions, leaving it out in 90-degree heat while I sat inside an air-conditioned Starbucks. When I returned, I braced myself for the inevitable scalding, but while the leather was toasty, it was definitely manageable. After five minutes with the ventilated seats on max, all was pleasant. This solar-resisting leather technology isn’t new, but it’s just one of a million reasons this new-look SL deserves a place in your driveway. The “new look” is the key feature of this latest iteration of Mercedes’ evergreen roadster, now entering its sixty-fourth year of continuous production. For 2017, the Mercedes stylists changed pretty much everything
in front of the windshield, making amends for their less-than-stellar 2013 refresh. This latest SL is sure to turn heads, outfitted with a bolder grille, sexier headlights, and larger bumpers. eapolitans have a way of doing things with a certain je ne sais quoi, as demonstrated so elegantly by Susie and William “Bill” Johnson during the holiday season. Love, artistry, and family tradition come together beginning just before Thanksgiving, when enough beloved ornaments come out of safekeeping to fill five Christmas trees, grace tabletops, and evoke ooohs and aaahs all around. Against the neutral tones and understated elegance of their beachfront home in Naples, each element of the Johnsons’ Christmas decor becomes an objet d’art. At the heart of it all are Susie’s exquisitely designed needlepoint stockings at the hearth, awaiting the arrival of Santa, and her personalized, hand-stitched ornaments celebrating the lives, passions, and passages of every member of the family. Well be
fore a new baby is welcomed into the family, Susie is already stitching a needlepoint frame to await that first newborn photo. “I’ve even made an ornament for each dog that we have been lucky enough to have in our lives,” Susie says. Susie and Bill’s love story began when they were teenagers, and followed them through college days, marriage, two children, and now five grandchildren. The magic Bill experienced as a child during the holidays quickly became magical for Susie early in their marriage. Now the rising anticipation and joy of the season is the same for every member of the family. This Christmas there will be 11 hand-stitched stockings hanging from the mantel, including ones for grandchildren Katherine and Austin. Susie learned the art of needlepoint at age 16 at NAPLESILLUSTRATED.COM | DECEMBER 2016

the side of her beloved Aunt Betty, and it has remained a passion all her life. “She would have been so proud to know how much joy I still receive from her gift of teaching me to stitch,” she says. Susie’s needlepoint artistry extends to other beautiful pieces as well, including tooth-fairy pillows, belts, coasters, and themed items for other holidays. In addition, her talent provided the inspiration for a business in which she created custom totes to carry needlepoint canvasses and yarns, which were sold to customers as far away as Israel. “It gave me great satisfaction to know I could start a business and be successful,” she says. “Mission accomplished! I enjoyed it for several years. I didn’t have to do it forever.” Sports and college are big themes in Susie’s stitchery. During their college years, one of the first needlepoint gifts she made for Bill was a UCLA pillow. Bill’s father, whose nickname was Tiger, played football for the San Francisco 49ers, and later coached for the Cincinnati Bengals, so it’s no surprise to find 49ers and tiger ornaments gracing the branches of one of the Christmas trees. The Johnsons’ son Brad was a good soccer player, so Susie made several soccer ornaments for him over the years. “Now Brad’s son, our grandson Will, is quite the athlete, following in his dad’s footsteps,” Susie says, so the newest soccer ornament is his. Will also is an excellent stitcher, which pleases his mom, and would certainly please

Aunt Betty. “It’s a great form of relaxation,” she adds, “and a good way to hone fine motor skills. Best of all, it gives us time together, which I treasure.” Bill, Susie, Brad, and daughter-in-law Kelly all have earned degrees from the University of Texas, so naturally there are plenty of college-themed ornaments. One year, when daughter Tracy attended Washington and Lee University, Susie stitched a university pennant into her ornament. And there’s at least one ornament for Sewanee: The University of the South, representing Brad’s undergraduate years there. THE HEINZ CONNECTION Bill is the retired CEO of Heinz, so it’s no surprise that the company and its most popular products figure prominently in Susie’s needlepoint and Christmas decorations. Among the most treasured collections is a reproduction of the1880s Heinz Village. The clock tower replicates the clock that once topped the Heinz factory in Pittsburgh, and the domed building was a neighborhood grocery store. The real showpiece of the collection is the Heinz Hitch. The famous delivery wagon, which was

pulled by six Percheron horses (at 2,000 pounds they’re bigger than Clydesdales), was in the Rose Parade, and was in demand for appearances at state fairs and other major events. Each year for many years, Bill says, Heinz commissioned a Waterford crystal sculpture of a Heinz product to be given as Christmas gifts to dignitaries such as ambassadors and heads of state, and occasionally to key executives. Only a limited number of pieces were made, and then the molds were destroyed, so any remaining pieces have significant value. THE JOHNSON CHOCOLATE COOKIE Only at this time of year does the aroma of chocolate cookies waft from the Johnson home on Gordon Drive. Not just any chocolate cookies, these are the result of a highly guarded secret recipe that evokes
memories built over four generations. “Every year, the smell of those first cookies coming out of the oven—and then that first bite— takes me right back to my mother’s kitchen, and to many wonderful Christmases when I was a little boy,” Bill says. “My mother, Dot, made them crunchy, while Susie’s are soft and chewy. Some like them one way, some like them the other.” So what’s in this family recipe—and which does Bill prefer, the crunchy or chewy version? “So sorry,” Bill says with a laugh. “One must be born into this family—or marry into it—to get this recipe. As for the second question: We’re talking about my mother and my wife. There’s no way in the world I’m answering that one.” «

AUDUBON-CERTIFIED COURSES
The Audubon International Signature Sanctuary Program strives to keep developed land use sustainable and environmentally friendly worldwide. Raptor Bay Golf Club (raptorbaygolfclub.com) at the Hyatt Regency Coconut Point Resort & Spa in Bonita Springs holds the distinction of becoming the first course in the world to receive Audubon International’s Gold Signature Sanctuary Certification. Hammock Bay Golf & Country Club, a Marriott Resort Marco Island course (marcoislandmarriott.com), now claims the same gold certification. Nearly 30 courses in the area have earned Audubon golf course certifications.
BERMUDA GRASS
Prevalent on Florida greens and in other warm-weather golfing destinations, Bermuda grass promotes medium-tohigh ball speed, according to the Golf Academy of America (golfacademy.edu). The grass stands up well to heat and low mowing, the latter of which reportedly increases ball speed.
CHARITY COMPETITIONS
Naples has as much a reputation for philanthropy as golf, and the two go hand-in-hand at the Franklin Templeton Shootout (franklintempletonshootout.com) each December at Tiburón Golf Club (tiburongcnaples.com). In its twenty-eighth year, the longest running post-season tourney sanctioned by the PGA Tour, it benefits CureSearch for Children’s Cancer. Equally prestigious, the Chubb Classic (chubbclassic.com) pro-am tourney takes place in February 2017 at TwinEagles Golf Club (twineagles.com). It benefits The First Tee of Naples/Collier (thefirstteenaplescollier.org), a local youth golf development organization, and other Southwest Florida charities. 76

EAGLE
In golfing terminology, it means two under par. In and around Naples, it also means the bald eagles often sighted around golf courses. Eagle Lakes Golf Club (eaglelakesgolfclub.net) actually takes its name from a pair of resident eagles that nests among its abundant bird life. A number of other clubs around the region also take their name from the symbolic American feathered friend.
FASHION
Golf apparel brands follow trends led by PGA Tour golfers. From the 2015-2016 season, expect to see more prints and camo patterns on slacks and polo shirts for men. Moisture-wicking apparel by Under Armour and Nike is also “hot” for the active male Southwest Florida golfer, says Kevin Knapp, co-manager of the PGA Tour Superstore (pgatoursuperstore.com/ naples.jsp) in Naples. In women’s fashion, the skort—skirt-shorts hybrid— still rules, especially in Naples’ warm climes, as does the fitted polo shirt. Fashions by Jamie Sadock will see the lady golfer from course to the clubhouse to Fifth Avenue South, Knapp adds.

GOLF SCHOOL WITH CLOUT
In addition to David Leadbetter, Impact Zone Golf Academy (impact zonegolf.com) at Tiburón is inspired by the teaching philosophy of another famous golf pro, PGA Tour winner Bobby Clampett.
HOLES
It doesn’t get much “holeyer” than Naples. The region ranks No. 1 in the National Golf Foundation’s rankings for golf holes per capita. The 2013 Golf Facilities in the U.S. study counted 1,530 holes. For a population of 324,424, that equates to 212 people per hole.
IAGTO AWARD
More kudos for regional golf: In November 2014, the International Association of Golf Tour Operators named the Paradise Coast as Golf Destination of the Year-North America. IAGTO, the global trade organization for the golf tourism industry, claims more than 2,000 member companies in 95 countries, including more than 500 golf tour operators. The IAGTO Awards are the official annual awards for the golf tourism industry.
JACK NICKLAUS
This golfing legend and Naples go way back. As a child, Nicklaus golfed The Naples Beach Hotel & Golf Club course (naplesbeachhotel.com/golf-tennis/golf), where he broke his personal record in 1951. At age 11, he bested a score of 40 for the first time on nine holes by shooting 37. That history and personal relationship drew Nicklaus to collaborate on the recent renovation of the course, which reopened in November.

It is never too soon to get a club in their hands, even if it’s for a round of mini-golf at Coral Cay Adventure Golf (coralcaygolf.com) in Naples or Golf Safari Minigolf (golfsafariminigolf.com) in Bonita Springs. Glowgolf at Coastland Center (opryglowgolf.com/lo_naples.htm) adds the attraction of playing in the dark with glow-in-the-dark balls and holes. When youngsters start to get serious about the game, the Naples area offers a wide range of camps and programs. The Junior Golf Performance Academy at Quail Creek Country Club (quailcreekcc .com) offers long-term and summer-long programs. The First Tee of Naples/Collier provides a number of youth programs that develop core values along with golf skills.

MEMBERS-ONLY CLUBS
K
The majority of golf clubs in the Naples area are private—either reserved for registered resort guests or members only. In the summerfall off-season, the rules sometimes relax and nonmembers can often get tee times at private clubs. Some, however, remain exclusive yearround. Calusa Pines Golf Club (calusapinesgolfclub.com), the only regional course listed on “100 Greatest Golf Courses in America” by Golf Digest, limits its membership to 275, by invitation only. Likewise, the Country Club of Naples (ccnaples.net) tops off at 290 members. The member-owned club has been in operation since the 1960s.
NIGHT VISION
Links of Naples (linksofnaples.com) takes your game into the after-hours with stadium lighting at its executive course, which stays open until 11 p.m.
O OTTERS
Naples Grande Golf Club (naplesgrandegolf.com), open to guests of the Naples Grande Beach Resort, reports a family of otters living in one of the course’s lakes. The club underwent an $8 million transformation that debuted in June 2016 and includes a new clubhouse with restaurant and golf course improvements.

QUAFFING
Nothing sparks a thirst like 18 holes on a balmy Southwest Florida day. Here are a couple of suggestions for celebrating a hole-in-one or drowning your slicing sorrows. A bucket of beer will do the job at The Pub at Arrowhead (arrowheadgolfnaples.com). At Braxton’s Bar & Grill at Raptor Bay (raptorbaygolfclub.com), they like to say that the Transfusion cocktail works miracles on a golfer’s handicap.
RESTAURANTS FOR LUNCH
Whether or not you’re a golfer, lunch overlooking the fairways makes for the most pleasant—and often entertaining—repast. The Pub at ArrowHead Golf Course has a view of the ninth green and tenth tee for entertainment value. Don’t be fooled by the name of the Junior Clubhouse; it’ll feed a major appetite. Sam Snead’s Oak Grill & Tavern (samsneadslely.com) at Lely Resort Golf & Country Club (lely resortgolfandcountryclub.com) overlooks two golf courses and claims it serves “Naples’ best burgers.”
SHOPPING
Most golf clubs have their own pro shops, and many golfers prefer them for the best selection, style, and prices on golfing apparel. Other favorites: For the Love of Golf (fortheloveof golfinc.com) in Naples for apparel and The Golf Guys in Bonita Springs (golfboni taspringsfl.com) for clothing and both new and used equipment. V TENNIS
Often golf’s sidekick at Naples-area country clubs, tennis courts and other sporting pastimes widen the appeal. The private Collier Reserve County Club (colliersreserve.com) boasts four Har-Tru courts. For public golfing with tennis facilities, Cypress Woods Golf & Country Club (cypresswoodsgolf.com) has four lighted courts, plus a swimming pool and bocce court.
UNCLUTTERED VIEWS
Most golf courses these days are part of a housing development or resort, meaning that buildings of one sort or another hold the greens in their clutches. A precious few, however, keep the Old Florida feel with native landscape surroundings. Olde Florida Golf Club (239-353-7667) is one such private club with no homes, tennis courts, or swimming pools. Old Corkscrew Golf Club (oldcorkscrew. com), east of Estero, too, keeps its natural wetlands, scrub, and pinelands intact. 80 NAPLES ILLUSTRATED

WATER, WATER EVERYWHERE
One defining characteristic of Naples’ regional golf courses, ponds and lakes beautify the greens while presenting a challenge to the golfer. Some have more water than others. Take TPC Treviso Bay (tpctrevisobay.com), for instance, where “finishing the round with the same ball is quite an accomplishment,” according to golfadvisor.com, a golf course rating and review website. Water is in play on all 18 holes at Cedar Hammock Golf & Country Club (cedarhammockgolf. com).
XTRA SANDY
Sand, naturally, also prevails on local golf courses. In the form of sand traps, it is less welcome here than on the beaches, however. Hammock Bay Golf & Country Club (marcoislandmarriott.com) near Marco Island has a reputation for its pretty, but tricky, wide sand dunes. Tiburón is also known for its ball-nabbing sand traps.
YEAR-ROUND
The beauty of golf in Southwest Florida: It’s a 365-day sport. Granted, summer months drive golfers out in the early morning to beat the midday heat. Some courses close for a portion of the summer to do repair work, but you can always find somewhere to golf year-round in Naples.

MICHAEL CARONCHI
The Greater Naples area boasts a buzzworthy collection of celebrity chefs, highprofile eateries, and well-publicized dining destinations both uptown and down. However, there are also a number of foodie favorites flying under the radar in less-traveled strip malls and side streets. One such venue worth seeking out is Côte d’Azur (cotedazurrestaurant.com) in the Riverchase Plaza on Immokalee Road. Chef Claudio Scaduto has been tantalizing taste buds with award-winning, innovative French cuisine since 2000. Case in point: this pretty presentation of jumbo lump crab salad with chuka wakame seaweed, cauliflower, zucchini, cucumber, cilantro, and wasabi ginger lime dressing, finished with trout roe caviar and microgreens. CHEF MASSIMO PUGLIELLI Massimo Puglielli started cooking at the age of 5 in his family home in Pescara, Italy. He likes to joke that he graduated from Nonna Francesa’s Culinary School of Abruzzo, otherwise known as his grandmother’s kitchen. After making a living in other careers, which included professional golfer and musician, as well as spending three decades as a private chef, he opened his first restaurant in Naples. Mino, which bears his childhood nickname, is a casual, friendly eatery specializing in pizza and trattoria dishes, such as freshly made pasta and fritto misto. —Mark Spivak

Italian versus Italian-American food: In Italy, the cooking is very simple. The ingredients are fresh and tend to be better than they are here. I want to taste every individual ingredient in a dish. When you overload ingredients, you lose the essence of each one. On finding inspiration: I’m cooking the dishes I grew up with, recipes my aunt and grandmother taught me, but many people have inspired me. I’m continuing the tradition now, having my brother and two sons working with me in the restaurant. My goal is to maintain the food I grew up with 50 years ago. Why Naples: I grew up in a beach town. One day about 20 years ago, I visited Naples, and it reminded me of Pescara. I walked to the edge of the water in Lowdermilk Park, dug in the sand, and found tellina [a species of bivalves]. I called my then-wife and told her I’d found the place we’d move to. If he could eat only one meal: There’s a dish from the Abruzzo called spaghetti alla chitarra. The pasta is literally cut on guitar strings. I’d have it in a simple red sauce with authentic scampi, the small, hardshelled crustaceans native to my region. Whom he’d most like to cook for: Someone who has never tried my food. I’ve cooked for many famous people, but I treat everyone identically, no matter who they are. The art of the pizza: The first thing you’ll notice when you walk into Mino is our Italian-built, rotating pizza oven. My personal preference is wood, which I use at home, but we seat 150 guests at the restaurant and have to use gas to keep up with the demand. The pizza bakes at 800 degrees, and is completely cooked in one rotation of around 90 seconds. Words to live by: Whatever you do, do it with passion and love. That way, it doesn’t seem like work.

Sebastien Maillard and Juan Camarena had a busy summer. The partners have been toiling away on renovating neighborhood mainstay Le Lafayette, just off Third Street South, a restaurant helmed by chef Maillard since 2001. Reopened earlier this fall, the restaurant has a new outdoor bar called Lafayette 375 that offers a spot for relaxed lounging with a more casual menu than the traditional French fare served inside. The interior features all new colors, flooring, window coverings, fixtures, and seating with an elegant, modern tone to complement the classic as well as newly added dishes. Camarena and Maillard have also been working on a second Southwest Florida location of the Candy Grandy confection shop at Coastland Center. It is planned to open at Coconut Point mall this month, with 3,600 square feet of all things sweet, plus wine, Champers, coffee, and tea. The shop will include seating where guests may enjoy the fine chocolates, drinks, and pastries, as well as a separate room for small parties. —K.S.

Chef Vincenzo Betulia will soon launch another authentic European experience near his popular Osteria Tulia and Bar Tulia on Fifth Avenue South with his latest project, The French. He imagined a traditional brasserie that will transport guests to Paris. The decor replicates a classic café with high tin ceilings, black-and-white mosaic floors, red banquettes, an indoor/outdoor patio, glass-enclosed kitchen, and brass fixtures. As with Tulia, his goal is to create an authentic experience to connect customers with food in the way Europeans relate to it, focusing closely on the ingredients and taking time to savor, says Betulia. He felt Fifth Avenue South lacked a French bistro experience where one could wander in at, say, 2:30 in the afternoon for a bowl of mussels and linger over the meal. Diners will find classics like steak tartare, escargot, grilled artichokes, tarte Tatin, and crème brûlée accompanied by a well-chosen list of wines from every region and appellation in France. “I’m building a neighborhood restaurant,” Betulia says, where customers will want to come regularly, “not a hot-destination, special-occasion restaurant.” —K.S.

ATheBGreenest RU Z Z O Region in Europe Most of us probably would be unable to answer when asked about the Abruzzo region in Italy. But that’s a shame- it’s called the greenest region in Europe as 1/3 of its area is set aside as national parks, helping to ensure the survival of 75% of Europe’s living species. Only in Abruzzo can you still see wolves and bears. The tallest peak in the Apennines, Gran Sasso, is to be found here as well. Bordered to the east by the Adriatic Sea, seafood is important to the region. You’re sure to find brodetti (broths) cooked with fish, tomatoes, herbs and pepperoncino in an earthernware pot. Across the region, lamb is very popular as well with agnello cacio e ovo
(a type of lamb fricassee) featured on many restaurant menus. What to drink with all these delightful foods? Well, Montepulciano d’Abruzzo, of course! Arguably one of the best known wines in all of Italy, Montepulciano (the grape, not the town of the same name), is a spicy bold red that will partner well with many of the local dishes. If white wine is more to your taste, try Trebbiano d’Abruzzo, a citrusy zesty white. At Angelina’s Ristorante, we source the freshest local ingredients from local farms and fishing fleets, paired with beautiful wines kept in our three story wine tower. We invite you to join us and see for yourself why Angelina’s makes any occasion special!

Festive BUBBLES
Find a Champagne style to tickle your taste buds BY MARK SPIVAK
Few wine preferences are as personal as Champagne, and with good reason. Most major producers have a distinct house style that runs through their product line. Some makers will emphasize either Chardonnay or black grapes (Pinot Noir and Pinot Meunier), while others will be light or heavy on dosage (sweetness), but that individual style will cause consumers to consistently reach for a particular make of bubbly. The following recommendations are based on tastings done in the past year, with a few personal favorites thrown in. Your palate may differ, but remember, if you’re drinking Champagne, life is good. NONVINTAGE BRUT These Champagnes offer the best introduction to a house style and are the easiest bottles to find on a retail shelf. Most contain reserve wine from a number of older vintages, and sometimes have more complexity than their vintage counterparts. Top Picks: Laurent-Perrier Brut ($45) contains nearly 50 percent Chardonnay. Crisp and focused with vanilla accents and lilting lemon flavors enhanced by mouthwatering acidity, it pairs well with a variety of fish and shellfish dishes. At the other end of the scale, Philipponnat Royale Réserve Brut ($45) weighs in with 45 percent Pinot Noir and 25 percent Pinot Meunier. The black grapes provide a rich, creamy texture along with considerable ripeness and depth, making it a good match with more substantial entrées. VINTAGE BRUT If we compare NV to a choral arrangement, vintage Champagne is an aria sung by a soprano—there is no room for error, and both the potential pitfalls and rewards are significant. Top Pick: Champagne production in 2005 had all the requirements for a vintage year—a hot summer, moderate rainfall, and an early harvest. Charles Heidsieck Brut 2005 ($95) is full-bodied, tart yet generous, with a faint 108 NAPLES ILLUSTRATED
suggestion of red fruits paired with flavors of honey, vanilla, and citrus. The wine cries out for Dover sole. BLANC DE BLANCS When properly made from exceptional grapes, Champagnes composed exclusively of Chardonnay can fairly be described as voluptuous. They stand out in a blind tasting for their opulence, generosity, and richness of fruit. Top Pick: Comtes de Champagne Blanc de Blancs 2006 ($160) is the flagship of the Taittinger range and it is nothing short of luscious. The creamy flavors of citrus and melon coat the tongue, giving way to a complex and layered mid palate that entices you to take another sip. ROSÉ Rosé Champagne has traditionally been a rarity, and not by accident. Most houses have kept production intentionally low, resulting in short supply and higher prices. Top Picks: Nonvintage Perrier-Jouët Blason Rosé ($75) is dry and well-balanced with a haunting flavor of wild raspberry. The finish is long and succulent, with good acidity highlighting the red
berry flavors. For a special experience, try Moët & Chandon Grand Vintage Rosé 2008 ($90); it is rich, ripe, and meaty with a range of earthy red fruits, a perfect match for salmon, tuna, poultry, and game. LUXURY CUVÉES The tête de cuvée is the ultimate expression of house’s style, and is a wine to be savored on special occasions. Top Picks: Forego the familiar names in favor of a pair of sleepers from the 2002 vintage still widely available: Nicolas Feuillatte Palmes d’Or ($105) and Pommery Cuvée Louise ($140). Palmes D’Or, a 50-50 blend of Chardonnay and Pinot Noir, is rich and full enough to stand up to a wide range of foods. The Pommery is refined and elegant, with just a touch of tropical fruit to separate it from the pack. «

The deliciously cool taste and scent of peppermint is synonymous with the holiday season. The bonus twist is its healing properties, mainly known to help alleviate nausea and a fussy stomach, among other ailments. Looking to lift your spirits and de-stress during the seasonal hustle and bustle? Help & Hope Ensure your donation after a disaster does the most good By Judy Martel Whether man-made or natural, disasters like the mass shooting at the Pulse nightclub in Orlando or the earthquake in Ecuador trigger a visceral reaction to donate money. Using websites like gofundme.com, organizations can instantly solicit money following a tragedy. Before you “click and give,” make sure you know where your money is going.
FOLLOW THE MONEY Twelve days after the Pulse shooting, the Miami Herald reported that more than $6 million was raised through a GoFundMe campaign, but Eileen Heisman, president and CEO of National Philanthropic Trust, says it pays to be cautious of any website set up to respond to a specific crisis. “You have pop-up restaurants, but there’s no such thing as a pop-up charity,” she says. “Many are legitimate, but you want to know who’s at the other end of the site and what they are doing with the money.” With no way to really verify where the funds go when using a crowdfunding site, Heisman recommends donating to tried-andtrue community foundations like the Red Cross or Doctors Without Borders instead. Unlike websites, established charitable organizations have to be accountable: They must file tax returns and be transparent with how the money is spent. “Transparency and clarity are very important,” Heisman says. While these organizations might not be able to tell you exactly what your $50 or $100 donation was spent on, they can specify the types of activities they support and provide information regarding their general budget. If you’ve chosen an organization with goals that match yours and is equipped to deal with the 116 NAPLES ILLUSTRATED
specific type of disaster, then you can be confident your money is being spent well.
MAXIMIZE YOUR CONTRIBUTION Heisman offers a few tips for giving in response to a disaster that will protect you and make the most of your contribution: Don’t give immediately. It may seem counterintuitive, especially because the need is urgent, but the best way to maximize your donation is to do nothing right away. “Don’t respond in the first 24 or even 48 hours,” Heisman says. Allow yourself time to determine what type of help is needed and research the possibilities. “I don’t blame people for wanting to do something immediately, but I think the most important thing at first is to just pause,” she says. Do a little research. The Internet, along with most community foundations and local newspapers, are great resources for sleuthing information about charities so you can separate the legitimate from the ineffective or fake. “I would kick the tires of any charity I was considering,” says Heisman. Check out charitystar.org and charitynavigator.org, both of which specifically track and evaluate charities. Consider staying local. Community foundations will often set up a fund to respond to a local disaster, so not only do you know they’re legitimate but they are often
the most informed about the availability of resources and also have an established network. “They know the number of hospitals and clinics and other resources in the community and have the staff in place to direct victims’ families and make the phone calls,” she says. Divide and conquer. Breaking your gift into two or more smaller donations is sometimes more effective than giving all at once. Heisman recommends donating shortly after the disaster and then waiting 10 days or longer. Given some time, you’ll be able to determine if the initial charity spent your money appropriately and also assess whether another organization has stepped in to solve some of the longer-term issues related to the disaster. Listen to your gut. Finally, if you have any doubts or questions, don’t make the gift. “Step back and do more research to make sure your money is going to a legitimate organization,” she says. “Otherwise, you’re throwing it away.” At the end of the day, it comes down to whether or not you can trust the charity. “I think people care about how their money is spent, but most give impulsively and feel better immediately but don’t think about the outcome of their gift until later,” Heisman says. “People want to help and, as a whole, we feel responsible for each other as a community.” «

CLASSIC
A nutcracker doll, dancing snowflakes, mischievous mice, and a Christmas tree that grows like Jack’s beanstalk. The Miami City Ballet brings to life George Balanchine’s The Nutcracker December 3 and 4 on stage at Artis—Naples. After winning an epic battle against the dastardly Rat King, Marie and her nutcracker prince set off on an adventure to the Land of Sweets, where they’re treated to majestic balletic sequences set to Tchaikovsky’s iconic score. No holiday season would be complete without reveling in this lavish spectacle. (artisnaples.org)

The philanthropic Neapolitan becomes inspired in part by changing her environment through travel and taking classes on divergent topics. Her shelves are filled with books on cognitive change and conflict resolution, yet she notes that she also spends “a fair amount of time in horse barns with my grandchildren.” Here, Nettles shares her favorite places, things, and experiences in Naples.
