February is arguably the best month in Florida. The weather is fabulous (this former New Yorker always appreciates the slight nip in the air), and our area is buzzing with unending social events, art fairs and charity galas. I’m not someone who gives in to “Hallmark holidays” but I am married to a hopeless romantic, so for Valentine’s Day we always celebrate with cards, a nice dinner and perhaps a small token of appreciation. But another special way to celebrate romance this month is to attend the sixtieth anniversary of the Palm Beach Heart Ball, taking place February 13 at The Breakers. The Heart Ball is always a well-attended affair, and there will be plenty of fanfare surrounding the anniversary. Palm Beach Illustrated is among the proud sponsors of this wonderful event. If you’re interested in the art and jewelry scene, The Palm Beach Jewelry, Art and Antique Show will take place February 13-17 at the Palm Beach County Convention Center. A highlight of this year’s show will be the Designer Showcase, curated by interior designer Campion Platt. The exhibit will feature five room vignettes created by Platt and other top designers using fine art, furniture and decorative accessories. Farther south, you can enjoy the South Beach Wine and Food Festival, taking place February 19-22. This year’s festival features intriguing events, including “Culinary Odyssey: An Israeli Dinner,” a retro-themed feast and the ever-popular Amstel Light Burger Bash, hosted by Rachael Ray. As you’re out and about this month, please remember those less fortunate and donate to the many worthy nonprofits in our community. In celebration of this romantic time of the year, perhaps you can find a cause close to your heart.

The Pursuit of Happiness
capehart
There are certain things people can keep close to the vest, but when they are passionate about something—or someone—there is no hiding it. They exude an effervescence, a so-excited-I-could-explode energy that is palpable. I sense this in the presence of this month’s cover subject, Marjorie Gubelmann (“Rebel Yell,” page 78). I’ve known Marjorie for many years and have always adored her bigger-than-life personality—an asset, no doubt, in the high-society circles in which she so effortlessly moves. Though her life has been blessed with glittering people and meaningful moments, from giving birth to her son, Cyrus, now 10, to launching her own business, home-scent atelier Vie Luxe, it’s hard to say when she’s been this charged up about something. It’s the unmistakable mark of one who has found her true calling. To her many roles— mother, society queen, businesswoman, Fashion Week frow fixture—Marjorie has added one rather peculiar one: DJ. And she’s having a ball doing it. “I feel like I’m 15 again,” she confides. “I go home [after a gig] and I’m grinning from ear to ear.” Finding that passion is what life is all about, isn’t it? That’s why we have titled this issue “Passions and Pursuits,” acknowledging that a moment well lived is worth all the effort it took to get there. Passion, of course, can take many forms. For those who get weak in the knees when in the driver’s seat of a powerful vehicle, we offer “Luxury in the Rough” (page 84). These off-roaders—including the coveted Mercedes-Benz 6x6 G63 AMG, which our automotive editor, Howard Walker, calls “the colossus of roads”—are highly sought-after by everyone from outdoorsmen to soccer moms. See our picks for the year’s 10 best. And if food is more your thing, be sure to check out “Loving Spoonfuls.” We challenged five pastry chefs to create bite-sized versions of decadent desserts and place them on a spoon. Get a taste of their creativity on page 96. Here’s to a fabulous February—and to celebrating your own passion, whatever it happens to be. l The reincarnation of the Omphoy as Tideline Ocean Resort and Spa is applause-worthy. We’d expect nothing less of Kimpton, the resort’s new owner.

From the fantastic weather to the seasonal swing in social events, there are plenty of reasons to love February in South Florida. One of the most delicious reasons to love this cooler month is it is peak Apalachicola oyster season. Hailed for their size and mellow flavor, these oysters are best enjoyed slowly. Try this recipe for grilled mignonette butter oysters. Ingredients ½ pound unsalted butter, softened to room temperature ½ cup red wine vinegar 2 tbs. minced shallot ½ tsp. cracked black pepper 1 pinch of finely chopped parsley 3 dozen oysters Light a grill. In a food processor, pulse butter with red wine vinegar, shallot, pepper and parsley until fully blended. Place butter in plastic wrap; form into a log roughly 2 inches thick. Refrigerate until butter firms, then slice into 36 pats. Place oysters flat-side up on hot grill. Cover grill and cook until oysters open, about five minutes. Remove oysters from grill and quickly remove top shell, keeping as much liquid inside as possible, and loosen oyster from bottom shell with oyster shucker. Add pat of butter to each and return to grill. Cover and cook until butter melts and oysters are hot, about one minute. Serve immediately. For more oyster recipes, head to palmbeachillustrated. com/oysterrecipes

When the roads in South Florida get too crowded, Palm Beachers can simply take to the skies. EvoLux Transportation, founded by Florida Atlantic University graduate Ray Leavitt, has made reserving a helicopter as easy as renting a vehicle. The Web-based service allows clients to search for a one-way or round-trip chartered helicopter flight to and from local destinations, then reserve a seat from a list of options. Where in Palm Beach County can you arrive in sky-high style? Land the chopper in these three locales—just make sure to let each know ahead of time to prepare the helipad. From February 13-17, the Palm Beach County Convention Center will be a trove of gorgeous finds from the Palm Beach Jewelry, Art and Antique Show. Bush, is helping lead the Barbara Bush Foundation for Family Literacy, the nonprofit founded by her mother 25 years ago. “She strongly believed that most of society’s other challenges— crime, quality of life, global competitiveness—could be solved through literacy,” Koch says of her mother. The foundation, whose “mission is to make literacy a core value in every home in America,” Koch says, has boosted its involvement in Palm Beach and recently hosted a reception at The Breakers. Beyond the nonprofit’s work, Koch is also doing her part on a personal level: She’s released a new edition of My Doro Bush Koch and Barbara Bush

Insider Will You Marry Me?
With a certain romantic holiday occurring this month, we’re confident engagement announcements will be made around the fourteenth. In celebration, we asked some of our favorite local couples to share how they said yes.
Mac & Kourtney Pulitzer (as told by
Kourtney): “Mac proposed on a jetty off Paradise Island in Nassau, Bahamas. We went for a romantic weekend, and it was out of the storybooks—perfection. We had a romantic lobster dinner (still our go-to celebration dinner), took a long walk on the beach and ended up on the jetty, waves crashing and all. He pulled the ring out of his pocket, got on one knee and the rest is history.”
Lawson & Beth Aschenbach
(as told by Beth): “After Lawson threw me off with an unexpected trip to the Hamptons, we got engaged the following weekend at the Soho Beach House in South Beach. What was supposed to be a quick trip to meet up with his older brother (again … he tricked me!) turned into a pleasant surprise when he got down on one knee as both of our families emerged from the kitchen! It was a night I will never forget as he proposed under the beautiful lit trees and strung lights at Cecconi’s. We all laugh after watching the video because I start to blurt yes before he was able to get the words out!”
Jay & Kelly Cashmere (as told by Jay): “I told Kelly on a Friday to pack a bag—we were going
on a mini vacation to decompress. The next morning, we flew to San Francisco and drove to Half Moon Bay, where I had reserved a room at The Ritz-Carlton. We grabbed a half bottle of Champagne and two flutes and made our way to the ocean. Just as breaks of sunshine pierced through the clouds offshore, I knew my moment had arrived. The joy that overcame us when I hit a knee was overwhelming, and I was so excited to look into her eyes and say, ‘The only thing that would make this moment better is if you would be my wife.’”

Mo Foster & Sally Sevareid: Mo and Sally
got engaged the day before they flew to Norway to broadcast from the 1994 Winter Olympic Games. They were hosting a morning radio show in Roanoke, Virginia at the time. The management of the station did not want them to let their listeners know they were a couple, so they could not talk about it on their show. “Mo wanted to propose at the Olympic games, but he was worried about losing the ring during the long trip to Norway so he popped the question in his home the night before,” Sally says. “And yes, he did get down on one knee.”
Clay & Averill Conley (as told by
Averill): “It was spring 2000; we were living together in Washington, D.C. at the time. The day was a little more romantic than usual but nothing to really clue me in. We packed a picnic basket and had lunch outdoors at the National Mall. It was a gorgeous, cool, sunny day. We then spent the afternoon at the Smithsonian National Zoo, a place I'd been asking to visit since we moved there. It wasn't until we got home in the evening—after carrying the ring around with him the entire day!—that he proposed. Afterward we ordered in our favorite Chinese (shell-on salt-crusted shrimp) and then went out for dessert and Champagne.”

As long as a woman feels confident and beautiful wearing one of my designs, I am happy.
You designed your first shoe at the age of 12. Do you recall what it looked like? Of course! You never forget your first shoe. It was a pump inspired by the kind of shoes my mother always wore growing up. Coming from a Brazilian family with a shoe empire, was it challenging for you to find your own voice when creating your first signature collection? My family was always so supportive of my own endeavors, so I didn’t ever feel the pressure to distinguish myself. But I do believe that my aesthetic inherently set me apart. Your Spring 2015 collection was inspired from a recent trip to Anguilla. What aspects of the island inspired you most? Undoubtedly, the sea. One is surrounded by the bluest blues imaginable—it would be difficult to not be inspired by a place as beautiful as Anguilla.
&
If Birman wasn’t designing shoes, what would he be doing? Read his answer at palm beachillustrated.com/Birman
What’s the one style from the Spring 2015 collection every woman should buy to update her spring wardrobe? I believe every woman should have the Spring 2015 interpretation of the Clarita (bottom left). It has become somewhat of a signature for our brand—this season, we updated it with Swarovski crystals that lend a luxe yet playful feel. What is your favorite material to work with and why? Python. It’s malleable, versatile and unique. Is there a favorite way you see or envision a woman styling your shoe designs to create her own look? I don’t have a favorite, but I will say that as long as a woman feels confident and beautiful wearing one of my designs, I am happy. What sets apart your distinctive shoe brand from others? The use of exotic skins is certainly something that sets us apart. From python to crocodile to water snake, we do it all. Would you ever be interested in creating a men’s collection? Maybe! The possibilities are endless.

and also strips the distinction from some esteemed stalwarts of the French hotel industry. Breezing through the old and new criteria, Le Bristol Paris remains at the top of the palace scene. On the heels of a six-year, €150 million renovation, Le Bristol has unveiled a bevy of additions and enhancements: redesigned, eighteenth century-inspired room and suite interiors; new restaurant spaces; a seven-story wing; a completely reenvisioned 13,000-square-foot courtyard garden; the Pierre-Yves Rochon-designed Le Bar du Bristol; reimagined signature suites; and the introduction of a more than 2,500-square-foot honeymoon suite facing the Eiffel Tower. While completely refreshed, Le Bristol Paris 2.0 still oozes the classic opulence that made it famous when it opened in 1925. Nips and tucks have only enhanced the distinctly traditional glamour that today converges as the living reality of a “Once Upon a Time in Paris” storybook fantasy. (lebristolparis.com)
2 Thanks to the vision of Georges-Eugène Haussmann and the legacies of rulers like Louis XIV, Louis XV and Napoleon Bonaparte, an unparalleled grandeur is immortalized within the City of Light. But while embracing this historical splendor, Paris has also been swept away by a growing love affair with modernity, fostering a unique phenomenon of looking to the past, present and future to define today’s trends in architecture, design, culture and gastronomy. From history-steeped hotel reinventions to the latest offerings in haute cuisine, what follows is our curated list of the top reasons to revisit Paris now.
1
L’Oiseau Blanc and LiLi at the Peninsula Paris
Following a meticulous reinvention of its nineteenth-century Haussmanian building, the Peninsula Paris opened in August to rave reviews. And its sixth-floor, rooftop L’Oiseau Blanc restaurant and design-savvy LiLi Cantonese restaurant quickly garnered “It” status on the Paris social scene. Dining with a view of the Eiffel Tower at L’Oiseau Blanc.
Le Bristol Paris
Paris’ hotel scene was rocked in 2011 when revamped criteria emerged for designation as an official Parisian “palace” hotel. To prove a hotel excels beyond typical five-star status, it must now meet 38 rigorous standards for excellence. This paves the way for several newcomers to enter the ranks

The 40-seat L’Oiseau Blanc is all about the views, which are eye-level with the rooftops of Paris, in clear view of the Eiffel Tower, immersed in aviation-themed interiors that pay homage to French pilots Charles Nungesser and François Coli, who attempted the first transatlantic flight between Paris and New York (on the plane L’Oiseau Blanc). Downstairs at lobby level, LiLi impresses with bold and seductive interiors that channel the theatrical elegance of the Chinese opera. Helmed by Chef Tang Chi Keung, of Michelin-starred Hei Fung Terrace fame, the restaurant presents the best in authentic Cantonese cuisine, including 15 varieties of dim sum, perfectly executed classics like Sichuan-style braised prawns and numerous Hong Kong favorites with a French twist— think wok-fried blue lobster with ginger and spring onions. kitchen. Executive Chef Stéphanie Le Quellec leads a dance of French gastronomy, choreographing ingredients to unite as art on a plate. Courses are served as “Acts,” and the “Conclusion” comprises decadent desserts such as the Doyenné du Comice Pear, a candied pear over a buttery, soft biscuit topped with homemade sorbet. Adjacent to La Scène, the Bar Les Heures boasts an equally dramatic presentation. Chef Barman Christopher Gaglione takes mixology to the next level with his innovative and interactive 1920s-inspired cocktails served tableside using antique instruments and props. You could call it the ultimate encore. (princedegallesparis.com)

Épicure
French Celebrity Chef Éric Fréchon has yet another accolade under his belt, as his triple Michelin-starred restaurant, Épicure, housed at Le Bristol Paris, was deemed the “Best Hotel Restaurant of the World” 2015 by Saveur magazine. The dining room at La Scène restaurant.
Prince de Galles
Two years after shuttering its doors for an extensive restoration, the Prince de Galles, a Luxury Collection Hotel, has reemerged with the roaring twenties ambience and art deco panache of its original incarnation. Decked out in Makassar ebony, Saint Laurent marble floors and intricate mosaics, the rooms are plush, elegant and perfectly suited for the prestigious Avenue George V neighborhood. True to its moniker, the new Michelinstarred La Scène restaurant presents a grand performance in the form of an intimate open

Picasso Museum
After five years and €52 million, Musée Picasso Paris has reopened in the city’s Marais district. This artistic haven is now triple in size and houses some 5,000 works by the Spanish artist and 200,000 pieces from his personal archives (though a manageable 437 are on display). The museum’s home, the seventeenthcentury Hôtel Salé, has been completely restored and rearranged to parade highlights of the world’s largest Picasso collection, representing the many stages of the artist’s career including his blue, cubist and pop-art periods. The museum also exhibits the apex of Picasso’s personal collection of work by other artists, including paintings by Cézanne, Rousseau, Renoir and Gauguin. In a city where museums err on the side of enormous, the rich but approachable Picasso Museum is a breath of fresh air. (museepicassoparis.fr/en) «
Fréchon, a name synonymous with Parisian haute cuisine, continues to transform personal gastronomic prowess into a gourmand’s paradise. Épicure’s latest menu delivers on its recent designation with experiential delights such as a dish called Leeks from Ile de France, a perfectly caramelized leek in seaweed butter, partitioned by a tartare of petite White Pearl oysters; the simply titled Scallops, pillows of the sweet mollusks simmered in watercress juice with brown butter, topped with slices— not shavings—of white truffle from Alba and served over ratte potato gnocchi; and the Thyme-Lemon Honey, a celebration of honey in all forms, from fresh honeycomb to frozen honey to honey ice cream and the liquid gold

Maine Idea
Perhaps it’s gallery owner Clay Surovek’s eye for art that has kept him returning to the natural beauty of Maine. Growing up, his Palm Beach-based family summered there, endearing Surovek to the area so much he chose to study at Colby College in Waterville. Today, the tradition continues as Surovek, his wife and his three children make a LILA PHOTO
summer sojourn to Rockport, where his father, John, also a Palm Beach gallerist, now owns a home. Far from any pretense or forced structure, Maine has become a relaxing haven perfect for escape.
Vibe: Rugged independence
Hometown good to sample and stockpile: Freeze some of the homemade peanut butter balls from Fresh Off The Farm Market.
Rockport Harbor
Soundtrack: As a kid in the backseat while we explored the state, I was listening to songs like “Stand by Me” and Buddy Holly hits.
Signature Taste: We love Shepherd’s Pie in Rockport (shepherdspierockport.com) or Grace in Portland (restaurantgrace.com), a restaurant that was formerly a church, where the cocktails are infused with locally grown fruits. For a taste of Maine at home, we toss some fresh blueberries into a local microbrew. (mainebrewers guild.org) Best seat in the area: The top of Cadillac Mountain or Mount Katahdin. The early bird who catches a sunrise will find no greater feeling of peace anywhere.

Best way to spend a free morning: I love exploring the shore near the Rockport harbor with my children, on the lookout for the perfect piece of driftwood or a flat rock for skipping. (rockportmaine.com)
Meal to dream about: Lunch at McLaughlin’s Lobster Shack in Lincolnville (thelob shack.com). It’s beachside and has huge, fresh lobster rolls and Ipswich clams—perfect with Gritty McDuff’s Maine’s Best IPA (grittys.com). Fashion essentials: L.L. Bean flannels and a Patagonia fleece

Aston Martin has created a brand new car—the DB10—for James Bond’s next high-action romp, Spectre By Howard Walker

Ejector seat readied: check. On-board machine guns at aim: check. Levitating rear bullet-shield raised: check. Driver shaken and stirred? Definitely. It was April 1997 in an auto museum parking lot in Danville, California. I was behind the thin-rimmed wooden wheel of the actual Aston Martin DB5 that James “007” Bond drove in the 1964 film Goldfinger. Talk about one of life’s seminal moments. Here was the car labeled “The Most Famous in the World” with, at the time, an estimated value somewhere north of $4 million. And I was driving it. It didn’t matter the gadgets were make-believe. For a photo shoot, we had to bolt the rear-wheel tire shredders that cinematically extended at the touch of a button. The revolving license plate was turned by hand. But here was an icon, a piece of movie magic. And while Aston Martin built four identical Silver Birch DB5s for EON Productions, this was the so-called “Star Car,” the one with all the gizmos that starred in Goldfinger and Thunderball, with the inimitable Sean Connery behind the wheel. After my drive, the car was shipped back to Florida, where the owner stored it in a hangar at Boca Raton airport. Three months later, according to police, thieves ripped off the hangar doors, dragged out the car using a chain wrapped around its rear axle and spirited it away. It has never been seen or heard of since. It just vanished. Rumor has it that it’s now sitting at the bottom of the Atlantic off the Florida coast or in some secret Dr. No-style lair in the Far East, where it’s gazed upon like a stolen Picasso. Since then, pretty much every Bond flick has been immortalized by its cars. My favorites are the submarining Lotus Esprit in the 1977 Roger Moore caper The Spy Who Loved Me. I still giggle every time I see Bond drive out of the water, lower the side window and eject that rubber fish. Then there was the fabulous Aston Martin DBS V12 driven by Daniel Craig in his debut Bond flick, Casino Royale. It still lists in the Guinness World Records as the car that completed the most cannon

rolls—seven—as Bond swerves to avoid the helpless Vesper Lynd. So what’s going to be the next “most famous” Bond car? I’m betting it’ll be the recently unveiled Aston Martin DB10 specially designed and built for the upcoming Bond romp, Spectre, due for release November 6. Never before has a car been designed solely for a Bond film. Yes, the gorgeous Toyota 2000 GT coupe was transformed into a convertible for You Only Live Twice. But the story goes a drop-top was needed because Sean Connery was just too tall to fit into the slender Japanese coupe. Aston Martin’s chief creative officer, Marek Reichman, designed the muscular DB10 with input from the film’s director, Sam Mendes. Ten cars will be built for the film at Aston’s in-house special projects group, amusingly named Q division after 007’s legendary technical wizard Q. Before you ask, no, none of the 10 will be sold to the public. But wait 10 years and you can bet one or two will find their way on to eBay or go across the block at a Pebble Beach collector car auction. Word has it, however, the dramatic look of the DB10 with its bold front grille design will likely feature on future Aston models. Sadly, details are scarce as to any special features that may come with the model. Just know Mendes isn’t the kind of director to want ejector seats, tireshredders and the grille-mounted rocket launchers featured in the Pierce Brosnan Bond years. I’m just crossing my fingers Bond’s silver Aston DB5, which was blown to smithereens in the closing scenes of Skyfall, will somehow be rebuilt and have a cameo role in Spectre. It’s still the best. «

my family and friends have been so supportive. i could be playing on a milk crate at the back of a dirty pub and they’d be clapping. On the night after Thanksgiving, a group of “modern friends” gathered for a dance party at The Colony Hotel to raise funds for the Preservation Foundation of Palm Beach. The scene was pure high-society bath club, the crowd was beautiful and the music was loud. And people were grooving, hair let way down. At one point, securities mogul Tom Quick walked to the back of the stage, all smiles, and high-fived the DJ. But this was no ordinary DJ. It was Mad Marj, aka Marjorie Gubelmann, a fourth-generation Palm Beacher who’s dominated New York society and landed multiple times on Vanity Fair’s International Best-Dressed List. By all accounts, Gubelmann should be in the crowd, partying with the best of them. But she likes the way the tables have turned, which she admits happened by “happy accident.” “It was one of those things you see in a movie,” she says. “Something amazing that I love to do fell out of the sky. I never knew it could be something I could do as a career.” Spinning professionally may seem iconoclastic for a society queen, but those who truly know Gubelmann could see that coming. “Marjorie was always mad about music,” says longtime friend and Palm Beach Day School classmate Lily Holt Dillon. “In high school, we’d sneak into Heartbreakers, a nightclub off Clematis Street. There wasn’t a DJ at that club Marjorie didn’t know. And when she was living in London, she always knew the best clubs. Running around with her was amazing, because she was so plugged in.” Gubelmann’s own musical memories go back farther than that. Rewind to the late seventies in Palm Beach. Her father, business-machine magnate Billy Gubelmann, was a huge disco lover and would take his young daughter to the roller disco over the bridge to boogie on down. “My aunt and uncle had given me gold sparkling shorts with silver trim and a multicolored sequin boob tube,” recalls Gubelmann, now 45. “I remember wheeling around in the dark, in this outfit, belting out ‘Knock on Wood.’ It’s still so vivid in my mind.” The multicolored sequins were eventually replaced by multicarat jewels, but the passion for music never dissipated. “That part of Marjorie was lying dormant,” Holt Dillon
says, “but it was always there.” It took another friend, Paper Editorial Director Mickey Boardman, to bring it out. “We were at Sunday lunch at my house” in Manhattan’s Upper East Side, Gubelmann says, “and he started talking about his birthday party.” Somehow, the conversation came around to Gubelmann’s college gig as DJ Mad Marj at WNEC in Henniker, New Hampshire. That was music to Boardman’s ears. “Before I knew it, he had asked me to DJ his party,” Gubelmann recalls. “I said, ‘I have no idea what I’m doing.’ And he said, ‘No one knows what they’re doing! Just show up in one of your party dresses, and I’ll have it all arranged.’” Gubelmann reluctantly agreed. “I was going to do it for 15 minutes,” she says. Three hours into her inaugural set, she had found her calling. “I had the best time,” she admits. “My personality is that I like to entertain people, to watch them have a good time. This is a form of that.” Before long, word got out and Gubelmann was offered other gigs, particularly from friends in the fashion industry. To up her game, she took courses at the Scratch DJ Academy, a DJ school in Manhattan. She armed herself with two record players, Pioneer and Rane mixers, Serato software and her laptop. She was ready for action. Since going pro a little more than two years ago, Gubelmann has brought crowds to their feet at glittering parties for Bulgari, Joe Fresh, Longchamp and Kiehl’s, at the world’s hottest nightclubs and at the opening of Tory Burch’s Shanghai boutique. The latter was a big moment for the two friends. “I met Marjorie in the 1990s,” Burch says. “We were really just starting out, which made it especially meaningful to have her be part of our Shanghai celebration, each of us doing what we love.” Like the other female DJs who have exploded onto the party circuit, Mad Marj has a signature look, consisting of slicked-back hair, a fabulous frock and major jewels. If it sounds like her normal Upper East Side uniform, it’s because it is. “When you get Mad Marj, you get Marjorie Gubelmann,” she says with her typical big laugh.

Her mantra: Never go into a party with a planned playlist. “I want to see who’s there and how the crowd is moving,” she says. “My playlist is all over the place, but I always play songs you would know at some point in your life.” That could range from new wave to eighties pop and would generally include some combination of Donna Summer, Adam and the Ants, Pet Shop Boys, Madonna, Rihanna and Duran Duran, among others. “I specialize in songs that have words that people know,” she adds. “Songs you’ve been dancing to in your underpants for the past 30 years while getting ready to go out.” So what do her society friends and family think of all this? Her 10-year-old son, Cyrus, not only is proud of his mom but also feeds her new song recommendations. Her discoloving father, who has called her Mad Marj since her college radio days, has been amused by the reinvention. And there is no doubt her late grandmother, irreverent Palm Beach doyenne Barton Gubelmann, would think it’s a hoot. Friends like interior designer and television personality Nate Berkus have been behind Gubelmann 100 percent. He and his fiancé, Jeremiah Brent, even asked her to spin at their wedding last year. Needless to say, she had guests dancing all night. “My whole family and friends have been so supportive,” Gubelmann says. “They’re my biggest cheering squad. I could be playing on a milk crate at the back of a dirty pub and they’d be clapping.” This second act is “a natural extension of who Marjorie has always been,” Berkus says. “She’s so multifaceted. She’s a fantastic mom but still has a tremendous amount of fun and maintains relationships around the world.” To be sure, straddling the worlds of high society and highoctane nightlife is a delicate balancing act, to be attempted only by those who truly understand how to play the game. Is Gubelmann among them? Count on it. As Berkus wisely notes, “Marjorie is a fourth-generation Palm Beacher with immaculate manners. She knows how to move through the world and knows what the rules are. Because she has that foundation, she also knows when to break them.” «

LUXURY IN
2016 Maserati Levante Go-anywhere Italian Stallion In 2012, Maserati execs raised plenty of eyebrows when they announced the upcoming Maserati sport-utility would be based on—wait for it—a Jeep Grand Cherokee. Thankfully, they came to their senses, and now the ready-for-production Maserati Levante SUV will ride on a modified version of the automaker’s lovely Ghibli sedan platform. Another bit of good news: Instead of a rude-and-crude Jeep V-8 doing the powering, there’ll be a choice of turbocharged 350- or 425-horse turbo V-6s from the Ghibli and Quattroporte sedans. What’s unlikely to change too much, however, are the lovely, flowing lines of Maserati’s original Kubang concept from 2012. This design was the first inkling the Italian automaker and FiatChrysler group member would build an SUV. The plan, if you can ever nail down Maserati to a firm timeline, is the all-wheel drive Levante will go into production sometime this year and go on sale in the United States in late 2015 or early 2016. Size-wise, it’s up there with BMW’s X5 and the Mercedes ML and will likely sticker in the $70,000 to $80,000 range. Right now, an all-wheel drive Ghibli sells for around $77,000. And if the latest Ghibli is anything to go by, expect an interior slathered in handcrafted leather and fine woods and an engine soundtrack that will make grown men weep.
PBI Verdict Una bella machina sportivo utilità indeed.

Mercedes-Benz 6x6 G63 AMG The Colossus of Roads When four-wheel drive just isn’t enough to extract you from that muddy polo field parking lot, behold the mighty Mercedes-Benz G63 AMG 6x6. That’s right, six-wheel drive. To create this $600,000 goliath, Mercedes’ AMG division stretched the regular G-Class by a whopping 43 inches, providing enough space to add another axle and turn it into a six-wheel drive. As expected, its off-road ability—whether sploshing through mud or punching across sand dunes— is otherworldy. Rolling on 37-inch wheels shod with tires the size of blimps, the Merc has 18 inches of ground clearance and can wade through water 39 inches deep. Power comes from a 5.5-liter, 536-hp, AMG-built V-8 delivering 560 pound-feet of torque. Despite weighing four and a half tons, it can sprint from standstill to 60 in 7.8 seconds. Inside, it’s all quilted diamond-stitched leather and AMG hip-hugging sports seats front and rear. Even the pick-up bed is lined with handcrafted bamboo. Mercedes plans to build just 30 G63 6x6s a year, each costing € €456,000, which converts to around $590,000. While the 6x6 isn’t sold in the United States yet, word is it could be available by 2016.

Range Rover Autobiography Black LWB The $200,000 Range Rover Luxuriating in the back of Range Rover’s Autobiography Black edition feels like you’re stretching out in a Gulfstream G450. Caviar and Cristal, anyone? Over the years, Land Rover has been inching the Range Rover lineup further upmarket, pitching it as an alternative to a Bentley Flying Spur or top-end Mercedes-Benz S-Class. This long-wheelbase Autobiography Black edition—at $186,000 base or $199,500 for one of the first 25 editions to come to America—is designed to see how far that upward movement can go. In keeping with the elevated sticker, the craftsmanship and quality is simply remarkable. Rear passengers kick back in individual Barcalounger-style leather armchairs that can recline, massage, cool and calm their occupants. The right-rear passenger seat—the place where the owner will chill while being chauffeured—also has a levitating footrest. Need to work? Each rear-seat rider gets an iPad-sized leather and polished aluminum table. To distinguish this Autobiography Black, there’s a unique front grille and 21-inch wheels. Like all Autobiography models, the Black features a potent 510-horsepower supercharged 5-liter V-8 coupled to PBI verdict an 8-speed automatic. Performance is nothing short of breathtaking. 2015 Cadillac Escalade ESV Platinum The new King of Bling Rappers and rock stars, rejoice: Cadillac has refreshed the mighty Escalade for 2015, and it’s as big, bad and blingy as ever. The new range includes a super-luxury line, called the Platinum Collection, sporting more black leather than the crowd at a Guns N’ Roses concert. If anything, the design is even squarer and boxier than before; the edges are so sharp you’ll risk flesh wounds every time you give it a wash. Powering this 2015 ’Slade is GM’s stump-pulling 6.2-liter V-8, cranking out 420 horses and 460 pound-feet of torque. That’s enough power to haul 8,200 pounds. If you could get the QE2 on a trailer, this puppy would pull it. The real advancements, however, are heightened luxury details. The interior, for example, features cut-and-sewn trim like those on Bentleys and Rolls-Royces. This Escalade also offers cool features like Bose Active Noise Cancellation technology and Magnetic Ride Control suspension that smooths out lumps and bumps and tames body roll. In-car Wi-Fi is available, too. While prices start at around $73,000 for the standard wheelbase model, a stretched wheelbase, all-wheel-drive ESV Platinum will set you back more than $90,000.

2015 Infiniti QX80 Limited When XL feels like XXXL You’ve got to love a vehicle that offers a Plasmacluster air purifier. It’s just one of the seemingly never-ending features shoehorned into the significant bulk of the 2015 Infiniti QX80. What the Infiniti lacks in technical sophistication—its chassis sticks with a crude, body-on-frame layout—it makes up for in sheer, hedonistic luxury. Just about the entire interior is lined with glove-soft leather. If you want to see leather-wrapped speaker grilles, look no further. But perhaps the biggest feature of the latest QX80, which boasts a price tag starting at $62,000, is literally its size. This truck is huge, in not only its dimensions but its physical presence as well. Its front end is so vast you could park a Smart car underneath its hood. Inside, there’s stretch-out comfort for eight over three rows and, with the back two rows folded flat, there’s a staggering 95 cubic feet of space. There are New York City apartments that measure less. Powering this brute is Infiniti’s silky-smooth, 400-horse, 5.6-liter V-8 capable of towing an impressive 8,500 pounds without breaking a sweat. And if you do happen to sweat, that Plasmacluster purifier will be there to make everything smell sweeter.

Range Rover Sport SVR
One very wild Rover.
As in Supremely Versatile Rocketship Zero to 60 in 4.5 seconds. A top speed of 162 mph. Max power: an impressive 550 hp. Base Camp to the top of Everest? Probably in less than a couple of minutes. You’re looking at Land Rover’s insanely rapid 2015 Range Rover Sport SVR. For a while now, the folks at Land Rover have been salivating at the huge profits Porsche and Mercedes have made with their high-performance SUVs. So Land Rover’s parent, Jaguar Land Rover in England, has just created its own high-performance division called SVO—short for Special Vehicle Operations. Think of it as a mini AMG. Its first serious production model is this Range Rover Sport SVR, which lands in showrooms this year with prices starting at $110,475. Powering comes from the same 5-liter supercharged V-8 that motivates Jaguar’s latest F-Type R Coupe. All that power is channeled to the four wheels through a ZF eight-speed automatic with shift times reduced by 50 percent. Design-wise, it looks like a track star. There are gorgeous 21-inch alloys at each corner, an aggressive-looking front-end treatment, a high-mounted rear spoiler and a rear bumper with diffuser. And even though it can wade through water 33 inches deep, don’t even think of getting something this cool splattered with mud.
PBI verdict One hot, peppery Cayenne.
2015 Porsche Cayenne Turbo The Speeding Bullet of SUVs In 1986, Porsche’s mighty 911 Turbo coupe was one of the ultimate supercars of its time. It could explode from standstill to 60 mph in just 4.9 seconds. Kids pinned posters of it on their bedroom walls. Fast-forward to the present, and Porsche’s latest off-roading, mud-plugging Cayenne Turbo sport-ute can reach 60 in 4.2 seconds. Talk about progress. Until the souped-up Cayenne Turbo S lands, this resculpted 2015 Turbo is one of the world’s fastest SUVs, with a top speed of 173 mph. That power comes from Porsche’s 4.8-liter twin-turbo V-8, which delivers a potent 520 hp and 553 pound-feet of torque. Mack trucks make less. There is something otherworldly in the way this 4,800-pound leviathan launches itself towards the horizon. An F-16 on takeoff isn’t as exhilarating. For 2015, the designers have been tinkering with the lines to convince current owners they need to upgrade. There’s a reshaped hood and front fenders, plus front intakes with new air blades to guide air more efficiently to the intercoolers. The Cayenne Turbo stickers for $113,600 but by the time you’ve added the must-have Chrono Package and simple things like floor mats, you’ll be closer to $130,000. 88
2016 Bentley SUV The 200-mph off-roader SUV makers talk about injecting luxury into their sportutes. A little diamond-quilted leather here, a few trims of glossy walnut there. But if you’re on the hunt for the ultimate in 4x4 luxury, hang on—there’s a Bentley off-roader coming. Thankfully, we’re told it will look considerably different from the garish, chrome-laden EXP 9 F concept model Bentley unveiled to universal smirks back in 2012. The thinly disguised development cars clocking up miles around Bentley’s Crewe, England headquarters are akin to a raised-up fivedoor wagon version of a Continental GT coupe. Word is it will ride on the same advanced all-wheel drive chassis that will underpin the next-generation Audi Q7, Porsche Cayenne and upcoming Lamborghini Urus SUV. With Bentley execs openly talking about a 200 mph top speed for the yet-unnamed Bentley 4x4, it’s going to require quite a powertrain—most likely the current 6-liter twin-turbo W-2 or maybe a plug-in hybrid version with electric assist. What’s certain is this new sport-ute is set to become Bentley’s best-selling model ever. As for the price, with a top Range Rover now costing $200,000, don’t be surprised if this new Bentley SUV starts at $240,000-plus.

2015 Lincoln Navigator Throwing a six Contrary to popular opinion, Lincoln has not abandoned its flagship Navigator. Its updated 2015 Navigator has just gone on sale. And while it doesn’t look too different from the outgoing version, it comes with one fairly major surprise: The wheezy, gas-guzzling V-8 is history. The only motor on offer is Ford’s twin-turbo 3.5-liter V-6 EcoBoost packing 380hp. That’s a bold move by Lincoln. This refresh to the Navigator is more an interim face-lift than a fullblown new model—that’s due in 2016. This latest ’Gator is still very much a gussied-up Ford Expedition. Yet there are plenty of changes, the most visual of which is the redesigned front featuring Lincoln’s new signature split-wing grille. Open the doors and discover a major step up in the quality of materials as well as fit and finish. The hand-wrapped leather instrument panel with contrast stitching is just gorgeous. While this latest Navigator is no Caddy Escalade, it’s a great value at $62,475. Even the high-zoot Reserve package model will only set you back less than $73,000.

The good news is there’s a terrific new Volvo XC90 sport-ute landing at U.S. dealerships this spring. The bad news is the 1,927 fully loaded first-edition models, priced at $65,900, were all sold. Within 47 hours. And only online. Why 1,927? That’s the year the trusty Volvo Car Corp. was founded. This new XC90 is a huge deal for Volvo’s new parent company, China’s Zhejiang Geely Holding Group. It’s actually the first product totally developed by Volvo since Ford sold the automaker in 2010. Design-wise, it’s not a radical departure from the previous and much-loved three-row, seven-passenger XC90. But the front grille—the new “face” of Volvo—is more upright and dramatic, the lines softer and curvier. Inside is where the real innovation takes place. The most headturning feature is the 12-inch vertical touchscreen display, the industry’s second largest, just behind the 17-inch whopper in the Tesla. Under the hood, driving all four wheels, is a supercharged and turbocharged four-cylinder-packing 316 hp. Down the road, there’ll be a plug-in hybrid version with an 80-horse electric motor taking the tally up to around 400 hp. Being a Volvo, it’s expected to be supersafe. Innovations include two firsts: a system to keep you safe if you run off the road and autobrake-at-intersection capability. «

BOCA A Perfect Day in
Skillet from farmer’s table
By Jennifer Pfaff
Boca Raton is known for its beauty, sophisticated flair and sought-after lifestyle. And in recent years, the city has upped the ante with on-trend restaurants, must-have shopping and cultural gems. explore the city’s new hot spots using our curated itinerary.
8 a.m.
With a variety of clean-eating options popping up, Boca Raton is quickly becoming the leader in healthy living in Palm Beach County. Start the day with a fresh cleanse at one of the area’s juice shops. Raw Juce offers a variety of tasty smoothies, bottled cold-pressed juices and organic coffee as well as raw food options, like acai bowls (561424-5823, rawjuce.com). Newly opened Apura Juicery and Coffeehouse also prepares plant-based cuisine—including hand-pressed nut “mylks”—in a chic, sleek space (561-430-3596, apurajuicery.com). For something heartier, take a seat at Farmer’s Table, where Executive Chef Wilson Wieggel serves organic teas and cuisine made from whole, local ingredients (561-417-5836, farmerstableboca.com). If you’re looking for an early brunch vibe, join the crowd at Another Broken Egg Café for creative egg benedicts, skillets and, of course, mimosas and Bloody Marys (561-405-6940, anotherbrokenegg.com).
9:30 a.m.
On any given weekend, the most popular place to be in Boca isn’t on land but water. Catch some early rays with Boca’s favorite activity: boating. Lake Boca is the go-to spot on a sunny day, and the waterway can get crowded. Before you head out, check the action on the live feed at lakebocacam.com. If you’ve left your boat at home, relax on a private vessel from Biscayne Lady Yacht Charters. Reserve your choice from the luxury fleet, including sport yachts and catamarans, and board at the Boca Raton Resort and Club. The company offers full- and half-day charters as well as dining and entertainment options (305-379-5119, biscaynelady.com). In Boca, “hitting the beach” means indulging in the luxurious amenities from one of the many beach clubs that line A1A. While residents have plenty of options, our top choice is the Boca Beach Club. Membership grants access to a half-mile private beach and three swimming

pools, along with serious upgrades: Reserve a private cabana, which includes a personal butler to cater to your every whim, including lunch. When not lounging in the sun, take surf lessons on the club’s new wave simulator or participate in watersport activities like paddleboarding or jetskiing (561-447-3000, bocabeachclub.com).
Noon
For lunch, you’ll want to think out of the (bento) box. The best place to grab a bite and people watch is The Cheese Course in Mizner Park. The bistro menu includes baguette sandwiches made with artisan meats and cheeses, refreshing salads and a customizable meal of cheeses with accompaniments—chosen from more than 100 offerings with the help of the shop’s cheese steward (561-395-4354, thecheesecourse.com).

The cash-only restaurant serves home-style comfort food like large salads, chicken potpie and its signature order, a hearty chicken salad sandwich. Insider’s tip: Don’t leave without checking out the restroom (561-392-9446). For confirmed shopaholics, the best choice is a power lunch and glass of wine at Mariposa at Neiman Marcus in the Town Center Mall— where, conveniently, you’ll be ready to jump on the next activity on your agenda: retail therapy (561-544-2320, neimanmarcus.com).

Boca shoppers don’t waste time sifting through the racks. At Neiman’s and at Saks Fifth Avenue, request the department stores’ complimentary personal shopper programs, in which a private consultant will present perfect-outfit options according to your specifications (561-393-9100, saksfifthavenue.com). Before you leave the Town Center mall, take a peek in Intermix, which is always stocked with coveted brands like Rag & Bone, Helmut Lang and Derek Lam (561-393-6942, intermixonline.com). Shopping bags in hand, continue your hunt at Mizner Park and seek the help of the personal shopper at Lord and Taylor—the retail chain’s only location in Florida (561-394-5656, lordandtaylor.com).

Of course, shopping doesn’t have to be all about you. Pick up something for a little one in your life at Elegant Child, an adorable children’s boutique carefully curated with fine, traditional clothes for fashionistas in training (561-416-0152, elegantchildboca.com).
3 p.m.
Get your culture on! It’s time to check out Boca’s art scene. First stop: the Boca Raton Museum of Art, an artsy staple for the past 60 years. In addition to the museum’s renowned permanent pre-Columbian art collection, view two temporary exhibits on display this month: “Surrealism and Magic” and “Izhar Patkin: The Wandering Veil,” featuring Patkin’s mural-sized paintings on tulle (561-392-2500, bocamuseum.org). Next, venture to Rosenbaum Contemporary, which houses quality abstract works in a variety of mediums by artists like Robert Indiana, Joan Miro and Frank Stella (561-994-9180, rosenbaumcontemporary.com). End your museum tour at Boca Raton’s Gallery Center, home to diverse local galleries. Browse the vast contemporary collection at the spacious Baker Sponder Gallery, where colorful works by Patrick Hughes, Jun Kaneko, Jeff Koons and other artists pop against the space’s white walls (561-241-3050, bakerspondergallery.com). Walk past the Dale Chihuly chandelier to examine the dazzling studio glasswork at Stewart Fine Art, showcasing American artists (561-995-2760, sfaglass.com). Lastly, explore the artifacts at Griffin Gallery Ancient Art. These pieces are more than art; they are authentic ancient finds like pottery and other handiwork from civilizations dating back to 1000 BCE (561-994-0811, griffingallery.net).
4:30 p.m.
Your feet must be tired from all this walking—you totally need a spa treatment! While there’s no shortage of spas in Boca, a standout is the Maui Spa and Wellness Center, which practices therapeutic Hawaiian rehabilitation. Today, you’ll have time for The Great Escape: an aromatherapy foot soak, a copper tub and a massage or a facial. At an hour-and-a-half long, this much-deserved relaxation session will ensure you are pampered just in time for your next activity: happy hour (561-393-7733, themauispa.com).

4:30 P.m. 6 p.m.
Have a seat at the bar at Rebel House, which boasts an urban, underground feel with eclectic furniture and edgy artwork. Don’t let the offbeat vibe fool you; the cuisine here is first-rate, some of it made with the help of a sous vide machine. Craft cocktails dominate the bar menu and are served with popcorn, flavored differently every day. If you’re hungry for more, order the hefty charcuterie plate (561-3535888, lifetastesbetter.com). Beer lovers, march to the Sybarite Pig. An assortment of mostly Florida beers is on tap, and more hard-to-find brews are available by the bottle. The hops are paired with a meat-heavy food menu that consists largely of unique sausage and burger varieties; while vegetarians will want to stay away, the menu proves beer drinkers are foodies, too (561-883-3200, sybaritepig.com). Only in its second season, the Wick Theatre and Costume Museum is helping to revitalize Boca Raton’s entertainment industry. Catch an evening performance here (showing this month is La Cage aux Folles and, later, Man of La Mancha), and don’t leave without touring the venue’s impressive costume museum, home to recognizable garments worn in dozens of Broadway shows (561-995-2333, thewick.org). Live music fans will want to head to Jazziz Nightlife, a hotspot in Mizner Park. Past crooners who have taken the stage here include Molly Ringwald and David Cassidy (561-300-0730, jazziz.com). Florida Atlantic University houses one of the area’s best entertainment gems: Living Room Theaters, which plays local and international independent films typically only screened at festivals (561-549-2600, fau.livingroomtheaters.com). But if mainstream is more your thing, you’ll get the best seat in the house at iPic Theaters. The chairs here are roomy recliners, and at the push of a button a personal server will appear to take your order from a specialty menu offered by Tanzy, the venue’s in-house restaurant (561-299-3000, ipictheaters.com).

In recent years, Boca’s dining scene has become overwhelming—in a good way. Creative, independent eateries have emerged alongside established chains, making the decision of where to dine out a difficult one. A must-try among the newer restos is 13 American Table. One of the draws here is the kitchen’s Josper, a combination of an oven and a grill that uses charcoal to cook all types of food. You’ll have to taste it to notice the difference, and you will—in everything from chicken, pork and vegetables to the grilled octopus, served over greens with hummus and chickpeas. The worldly cuisine will turn even the pickiest eater into a foodie (561-409-2061, 13americantable-hub.com). Another buzzworthy restaurant is the Gluttonous Goat, a Caribbean-American gastropub. Dishes like braised short rib, sharable empanadas and goat potpie pair well with the assortment of craft beer on tap (561-923-9457, gluttonousgoat.com).

You can’t end the night without a little dessert, right? Make a quick stop into Le Macaron in Mizner Park for gluten-free versions of the heavenly pastry. You’ll find traditional and unique flavors, from pistachio and rose to basil white chocolate, passion mango and orangechocolate Grand Marnier (561-245-7281, lemacaron-us.com).

There’s no better way to end a quintessential day in Boca than by spending the night at the Boca Raton Resort and Club, A Waldorf Astoria Resort. The recognizable pink hotel, designed by Addison Mizner, remains a city icon, boasting modern amenities with glamorous history in more than 1,000 rooms. The apartment-style Boca Bunaglows are ideal for families, while The Tower offers breathtaking views as the tallest building for miles. One thing’s for sure: Wherever you lay your head to rest on the grounds, you’ll fall asleep and wake up in pure, luxurious Boca bliss (561-447-3000, bocaresort.com). «

Spoonfuls PHOTOGRAPHY BY ROSE E. MARTIN
Sometimes, all you need is one bite. Five local chefs took on the challenge of creating a delicious, haute dessert—on a spoon. sweet-tart Executive Chef Eric Snow, pastry chef at Cafe Boulud in Palm Beach, reimagined a Florida favorite: Key lime pie. Starting with the graham-cracker streusel “crust,” each spoon holds Key lime panna cotta, lime-vanilla caviar and meringue and mojito sorbet, and is garnished with edible flowers.

Grandberry began with quenelle ice cream in three flavors: confetti cake, chocolate and red velvet. After being placed on a spoon, each was dipped in chocolate, frozen and decorated individually. 98

ROSE E. MARTIN
Valentine’s Day calls for the ultimate romantic dessert. Our hearts went pitter-patter for this three-dimensional “Kiss” dacquoise by pastry chef Stephanie Steliga, owner of Artful Desserts Inc., whose creations can be found at La Nouvelle Maison in Boca Raton. Bursting with heart-shaped edible adornments and words of affection, the cake consists of almond and hazelnut meringue layered between mocha and orange-chocolate truffle cream. Taste Honey Nature’s nectar contains oron, which boosts energy and regulates estrogen and testosterone levels.
Chili pepper This hot produce increases circulation, which gets the blood pumping, and awakens endorphins, which speed up heart rate and cause sweat—similar to the effects of arousal.
Love Bites
Dim the lights, play the romantic music and … set the table? Aphrodisiacs are one of life’s greatest rumors—Can food really put you in the mood?—but there is some science behind the claims of love-inducing meals. Share these five delights with your Valentine. —J.P.
Red wine Because it contains the antioxidant resveratrol, a glass can stimulate blood flow and improve circulation.
Dark chocolate This sweet indulgence causes a spike in dopamine, which creates feelings of pleasure. It also contains tryptophan, which increases happiness, and phenethylamine, a brain stimulant induced when we fall in love.
Oysters Perhaps the most well-known aphrodisiac, oysters are loaded with zinc, which boosts testosterone.
2 Tastes in One Place F. Scott Fitzgerald said there were no second acts in American lives, but he didn’t live long enough to visit the Waterstone Resort and Marina. Formerly The Bridge Hotel and now part of the Doubletree chain, the resort resembles a sophisticated slice of South Beach. The Intracoastal view is as compelling as ever, but the food has received a dramatic makeover. Under Chef Steven Zobel, the Boca Landing restaurant and Waterstone Bar and Grill serve dishes that are light and exciting. On a recent evening, Zobel’s tasting menu began with a marinated ceviche of rock shrimp, studded with avocado and garnished with plantain chips. Next, he moved on to a giant, pan-roasted sea scallop brushed with porcini butter; torchio pasta with chicken, crimini mushrooms and pesto; a chipotle-rubbed salmon with creamed corn and pico de gallo; and lamb crusted with coriander and napped with a port wine reduction. The wine program, accurately described by the house as innovative and value-based, features small-production wines by the glass. (561-368-9500, waterstoneboca.com) —Mark Spivak.

The Long, Slow Burn Delray Beach entrepreneur Eddie Dovner had just finished a round of golf at Trump International in West Palm Beach when he got a whiff of the cigar the gentleman next to him was smoking. It smelled so good, Dovner asked for one. “It was smooth and creamy,” he recalls, “and blew away any Cuban cigar I ever had.” After that inhale of Buho Cigars, Dover ended up flying to the Dominican Republic, touring the factory and providing working capital for the company’s expansion. Buhos are available in five shapes (Corona, Torpedo, Robusto, Double Toro and Churchill) and are hand-rolled from premium Dominican tobacco by four generations of master Cuban cigar makers. Dovner swears they are so smooth you can wake up the next morning and not even know you smoked a cigar. They cost $10-12 apiece, far lower than their more famous competitors. “There are cigars people are paying $50 for that don’t compare to ours,” he says. “A lot of manufacturers rely on name recognition, advertising and reputation. Sometimes, quality trumps all that.” (buhocigars.com) —M.S.

Reality Check
We examine the myths surrounding sulfites in wine to uncork the truth in the controversy
Rob Sinskey
By Mark SPivak
Whether organic or from Europe, all wine contains sulfites. The bubbles in the fermenting grapes, below, are from the presence of sulfur dioxide.
The issue of sulfites is one of the most contentious among wine connoisseurs—particularly in recent years, when consumers have been demanding a more natural style of wine. Do sulfites really pose a health risk? Here are some of the commonly held myths, along with a dose of reality. Myth: Not all wines contain sulfites. Reality: In fact, they do. Sulfites are present on the skins of grapes, and sulfur dioxide (SO2) is a natural byproduct of fermentation, so all wine will have at least a small amount of sulfur. For many wine drinkers, the problem (if there is one) is added sulfur during the wine-making process. Myth: If you get headaches after drinking wine, you must be allergic to sulfites. Reality: The only way to know for sure is
to undergo allergy testing, which tends to be time-consuming and expensive. You could easily be having a reaction to histamines or to the tannin in red wine. If you are allergic to sulfites, remember they are present in dozens of food products—everything from pie crust to vegetable juice, not to mention antibiotics and cardiovascular drugs. In some cases, the sulfite levels in these items are actually higher than in wine. Myth: European wines contain less sulfur than wines made in America because only American wines carry a label that says “Contains Sulfites.” Plus, you never seem to get the bad headaches while drinking wine on vacation in Europe.
A wine low in sulfur content is Michel Chapoutier La Bernadine.

Organic certification in America focuses on grape growing, not wine making. Another low-sulfur wine to seek out is Chappellet Signature Cabernet.
Reality: First, sulfur has been used as a preservative for thousands of years. Adding a small amount of sulfur or sulfur dioxide is common in wines made around the world, though you may not have known it because many countries do not require that it be disclosed on the label. When in Europe, vacationers are also often drinking the local wine. This is likely a product made in small batches for local consumption, with no need to add additional preservatives. In America, every bottle of wine sold must carry the “Contains Sulfites” label, regardless of where it was made. The legislation authorizing the sulfite warning label was passed in 1986. The primary congressional booster for the bill was the late Senator Strom Thurmond of South Carolina, a confirmed teetotaler. Thurmond was convinced the label language would dissuade a number of people from consuming wine, and he was apparently correct. Myth: Organic wines contain less sulfites. Reality: Organic certification in the States focuses on grape growing, not wine making.
Any amount of sulfur can be added to organically grown grapes during the aging process. Myth: Cheaper wines contain more sulfites than expensive bottles. Reality: Large, mass-production wineries tend to use more sulfur than smaller operations, so this is sometimes true. Myth: It’s difficult to find good bottles of commercially available wine with low levels of sulfites. Reality: They are available; you just may have to search for them. On the lower end of the price scale, Fetzer has been producing organically grown, low-sulfur wine for decades. In the mid-priced range, Chappellet’s Signature Cabernet ($60) and entry-level Mountain Cuvée ($30) are carefully made in relatively small batches from organic grapes; Robert Sinskey’s wines are in the same category, and the Los Carneros Pinot Noir ($40) is well worth checking out. On the high end, try the wines of Michel Chapoutier in the Rhône Valley, particularly his two Chateauneuf-du-Pape: La Bernadine ($55) and Barbe-Rac ($105). «

Chic Casa
For this Ocean Ridge home, Lori Deeds Carlton of Kemble Interiors reimagined a Bermuda-style residence into a Spanish mission house and then imbued the design with the homeowners’ unique style. “After discovering my clients’ love of world travel and their enchantment with the Florida lifestyle, we wanted to create a space for all of their treasured finds and a private place for them to relax during the winter months,” Deeds Carlton says. To begin, 8-foot-high, flat ceilings were renovated into vaulted, 12-foot ceilings with handpainted pecky cypress beams and trusses. The interior cased openings became softened arches, like those common in Mediterranean architecture. The floors are a combination of Mexican shellstone and terra-cotta, and hand-painted terra-cotta tiles are also used throughout as baseboards as well as on the fireplace. The space is made home with the addition of embroidered textiles, woven linen rugs and bright design accents. Kemble Interiors, Palm Beach (561659-5556, kembleinteriors.com)

Flower Power
Choosing the right flower for your event can be a difficult task, so we asked an expert to help. Below, Darines Castro, owner of Simply Flowers in Palm Beach Gardens, dishes on the attributes of popular party petals. (561-630-4478, simplyflowerspbfl.com) By Mary Murray
Orchids Peonies Description: One of the most popular party flowers of recent years, “peonies are considered a lush, romantic flower,” Castro says. Fit for Events: Castro says peonies are best suited for a traditional gathering: “for the event in which lush elegance and softness is desired.” How to Display: “One of my favorite ways of displaying this flower is arranged low in a simple glass container using a solid color of the flower with little to no greenery.” Pair With: As peonies are rather large flowers, Castro suggests complementing them with delicate blooms like sweet pea. In addition, “ranunculus and tulips make lovely pairings.”
Description: “I’d describe orchids as exotic and simplistic, elegant flowers.” Fit for Events: Castro likes to use orchids for elegant events that need an edge. “It provides exotic accents while keeping a level of clean lines.” How to Display: A contemporary display works best for the orchid. Castro says to use “a few blossoms or stems arranged asymmetrically with accents of tropical foliage, intricately placed.” Pair With: “Tropical flowers and foliage seem to best complement orchid flowers.”
Roses Description: “Roses are the ultimate traditional flower, as they have been around for centuries.” Fit for Events: “Depending on its pairing and arrangement, a rose can be very versatile in its use. Due to its vast color selection and sizes, roses may be a suitable choice from contemporary to traditional events.” How to Display: Castro likes to arrange roses in mass quantities: “two to three dozen with nothing but slight greenery as accent, arranged in a simple cylinder vase.” Pair With: Again, given its versatility, the rose may be paired with many different flowers. “It particularly pairs well with other round focal flowers to complement its shape, i.e. hydrangeas, gerberas, ranunculus.”
Anemones Tulips Description: Tulips stand out for their unique shape and variety of colors. “Tulips are the ultimate spring flower. They are delicate, elegant and fun.” Fit for events: “Tulips are best suited for events looking for a minimal, elegant yet casual feel. It’s a fantastic choice for a brunch or springtime soirée.” How to Display: “I love arranging tulips, particularly white ones, with no greenery in large mounds inside a simple, low vase.” Pair With: “Other spring blossoms work wonderfully with tulips, such as hyacinths, hydrangeas and ranunculus.”
Description: “Anemones, particularly dark-centered ones, are incredibly trendy and fashion-forward.” Fit for Events: These stems work best at hip cocktail parties or evening gatherings. “Anemones are best used in events looking to make a statement with delicacy and stylish accents.” How to Display: Anemones are “lovely when used in bold-colored containers that complement the very rare, dark-centered flowers.” Pair With: “Other delicate blossoms or round focal flowers complement the anemone well, but it is its vibrant color selection and dark center that make a statement on this particular flower. It is best when paired with contrasting colors or flowers within the same color scheme.”
Hydrangeas Description: Known for their full size and vibrant colorings, “hydrangeas are lush, spring-like statement flowers.” Fit for Events: “Hydrangeas are a great choice for any event looking for a lush, fresh and springlike feel.” How to Display: “Many people use hydrangeas as a filler, as it is easy to work other blossoms throughout due to its size. When in an arrangement or centerpiece, I prefer to display hydrangeas as what they are: a beautiful flower.” Pair With: Hydrangeas can stand on their own. Good accents include greenery to fill or “other spring-like blossoms such as hyacinths, tulips.”

Change Someone’s Life! Tree of Life Foundation International is a 501(C)(3) global fundraiser organization that advocates on behalf of the underserved. We connect gifts, talents and resources from individuals and worldwide organizations to the people and places who need them most. Each branch of the organization is supported through the unique visions of the founder, Amanda Schumacher, who works to raise awareness and relief efforts for those who are struggling, both domestically and abroad. Tree of Life Foundation International powerfully impacts the needs of individuals and communities locally and abroad through its dedicated areas of service and focus. Known as our “Branches”, Tree of Life Foundation International leverages its vast network of concerned volunteers and donors in the areas of Addiction and Substance Abuse, Ambassador, Animals, Arts, Clothing, Energy, Education, Environment, Food, Global Challenges, Homeless, Housing, Human Rights, Logistics, Media, Medical, Orphanage, Philanthropist, Professionals, Science and Technology, Sports and Volunteers. The Foundation’s branches are proactive with many organizations in the areas of: EDUCATION The Tree of Life Foundation International is 100% committed to the education of our children contributing to the organizations below with monetary donations, talents and resources to help grow their programs and projects. The AaBbCc Barbara Bush Foundation for Family Literacy: Their Mission is to establish literacy as a value in every home in America. The Foundation’s believe literacy is a right that provides equal opportunity to achieving the American dream, which every child deserves. If we help the nation’s precious children get on the path to learning in the earliest years, even before they enter kindergarten, they are far more likely to succeed in school and life. They also believe in investing in low-literate parents who are unable to provide the stimulating learning environment that young children need to jumpstart their education. The Center for Creative Education (CCE) brings learning to life by engaging children in hands on, multi-dimensional learning. They use visual, performing and language arts to enhance student’s knowledge of traditional subjects. So painting, music and dance are used to increase mastery of literacy, math and science. It’s creative and it works! HUMAN RIGHTS Puresa Humanitarian mission is to save lives, to reach, to rescue, and restore children and women from the horrors of human trafficking and sexual servitude by creating new pathways and a way out from slavery, that these innocent victims and survivors may now have hope and a future and live the life that God intended for them. ARTS Supporting young local musicians, being instrumental in connecting them with local radio stations to empower their songs to be heard locally and nationally.
Local musicians like Eddy Rawsrvnt Puyol Grammy recognized Artist and Musicians Periko and Jessi Leon which were nominated to the 2014 Latin Grammy Awards were able to accomplish their goals and have their dreams came true with the help and support of the Tree of Life Foundation International. ADDICTION AND SUBSTANCE Tree of Life Center is a restoration house for men providing housing, food, clothing, medical, education and work, helping rehabilitate and restore lives that have been destroyed by drugs, alcohol addiction and homelessness. The program is offered to men from every race, culture, and socio-economic level. Men who are accepted into the program must have a desire to change their lives. ANIMALS Our Horn is NOT medicine Campaign This campaigns goal is to educate the public on the plight of the Rhino, and to raise funds for the SANParks Counter-poaching efforts. To celebrate the achievements of organizations and individuals that have led transformational change connected to the twenty two branches, Tree of Life Foundation International presents an annual Global Heart Award at the national and international level. An Annual Global Summit promotes collaborative partnerships by connecting and highlighting individuals that serve as ambassadors, champions, or changemakers around the world. Strategic plans for the next phase of Tree of Life Foundation International’s impact include the establishment of Tree of Life Resource Centers, that provide structural bases of operations for NGO’s and for those advocating and working to support the Branches efforts around the world. Tree of Life Resource Centers will also inspire new visions and collaborative partnerships that grow and strengthen the Branches. Tree of Life Foundation’s administrative and operating expenses are completely funded by the Schumacher Family Foundation. This allows Tree of Life Foundation International to allocate 100% of all donations to the individuals and organizations.
We all can “give a gift of hope” that will make a positive impact in someone’s life. Please help us give hope, food, housing and love to so many animals, children, men and women throughout the world.

Balance Anyone who has been under love’s spell knows it comes with a myriad of physical and psychological effects. Just with any other human condition, there’s biological science behind every stage of love, from first lust to forever after. Before that big Valentine’s Day date, discover what’s really causing the butterflies in your stomach: Attraction: According to psychological studies, it takes between 90 seconds and four minutes to decide if you’re attracted to someone, and that attraction depends primarily on body language and the speed and tone of voice. Coupling: Falling in love causes a release of feel-good chemicals, including dopamine, adrenaline and norepinephrine. It also lowers serotonin; low levels of this chemical are linked to obsessive-compulsive behavior—which explains why it’s difficult to think of anything else when you’re in love. Commitment: Following the falling-in-love stage, attachment is formed. During this phase, the nervous system releases oxytocin, which is also present in women during childbirth and helps forge bonds between individuals.
Feeling Spicy
Healthy food choices fortify healthy bodies—but did you know spices are just as beneficial? Whether you use a dash or a dollop, these spices will lend flavor and medicinal benefits.
What it contains Cinnamon
Manganese, calcium and fiber, along with antibacterial and clotpreventing properties.
What it does Just a teaspoon of cinnamon can help keep blood-sugar levels in check. Cinnamon can also aid in digestion.
Crushed Red Pepper
Capsaicin, the chemical that gives peppers their fiery pep, which has long been used to ease pain and prevent inflammation.
In addition to its painfighting qualities, capsaicin can also boost metabolism and suppress hunger.
Garlic
Selenium, flavonoids and nutrients, plus antiinflammatory properties.
Garlic is a potent immunesystem booster; it can help fight colds and boost heart health by lowering cholesterol and triglycerides.
Ginger
Anti-inflammatory properties and elements to block neural pathways that process pain.
Steep ginger in your tea to fight an upset stomach, morning sickness or pain.
Oregano
Vitamin K and fiber as well as an abundance of antioxidants and antibacterial properties.
Turmeric
The polyphenol curcumin, which has potent anti-inflammatory and antioxidant properties and gives the spice its orange-yellow color.
In addition to potentially protecting against a variety of cancers, oregano is an antibacterial and anti-septic agent. Curcumin relieves arthritic pain and has the potential to prevent conditions such as cancer, Alzheimer’s disease and heart disease.
Easy Raw
Laura-Jane, The Rawtarian
The Science of Love
The Super Bowl is February 1, and when the game rolls around, snacking reigns supreme. Many dips—like guacamole and salsa—are innately raw, but what can do the dipping? Raw dieters can dip with the best of them thanks to a plethora of raw cracker and chip options. Lydia’s Organics makes raw crackers and chips, including ginger nori crackers and carrot chips. If you prefer to make your dippers at home, try this basic raw cracker recipe from Laura-Jane of The Rawtarian blog. (lydiasorganics.com; therawtarian.com)
Ingredients 2 cups ground flax seeds 2∕3 cup whole flax seeds 1 tsp. sea salt 1 tsp. Italian spices (such as basil or oregano) 22∕3 cups water 11∕3 cups sunflower seeds 1∕2 cup sesame seeds
Method Mix everything together in a mixing bowl. Line two dehydrator trays with parchment paper. Spread batter evenly on trays using the back of a spoon. Start dehydrating the crackers. Laura-Jane suggests dehydrating at 120 degrees for the first hour and then reducing the temperature to 105 degrees for the remainder of the cooking time. Once the crackers begin to harden (roughly four hours into the process), use a knife to score the crackers along wherever you want the crackers to separate. Once the crackers are holding their shape (roughly eight hours total), break them apart along the score lines. Remove the parchment paper and place the crackers directly on the dehydrator tray. Finish dehydrating to your preferred consistency. If you plan on keeping them for a few weeks or more in storage, ensure there is no moisture left.

Happy Hearts Heart talk is in abundance in February—and not just because of Valentine’s Day. February is American Heart Month, a time to reflect on the importance of heart health and raise awareness of heart disease, which is the number one cause of death in America. February 6 is National Wear Red Day, so sport your rouge in support of healthy hearts. What steps can you take to ensure long-term heart health? PBI teamed up with AHA and Dr. Brian Bethea (above), the Tenet Florida regional medical director of cardiovascular surgery, to discuss heart health. Below, Bethea outlines ways to live heart healthy. (561-697-6600, heart.org)

Can’t make it, don’t eat it. I stand by the ideology that if you can’t make it in your own kitchen, then don’t eat it! Processed foods lack nutritional value—period. If you make a conscious effort to fill half of your plate with fruits and vegetables and the other half with whole foods, there will be no room left for processed foods.
2
Drop and give me two. Thirty minutes is literally 2 percent of your day. Step up to the challenge and commit to dedicating just 2 percent of your day to physical activity. Not only will it reduce your risk of cardiovascular diseases and stroke, but it will also improve your self-image, give you more energy and increase your immunity.

(App for thAT!)
With so many food, household and personal-care products on the market, it’s hard to determine which ones excel in health, safety and environmental impact. The GoodGuide app takes the guesswork out of finding ethical products for yourself and your family. Scan barcodes or search a database of more than 120,000 products, covering everything from baby shampoos to bathroom cleaners to dog foods. Each item is scored from one to 10 in the areas of health, environment and social impact and is also given an overall score based on the average of the three criteria. (goodguide.com)
3
Just say no to salt. AHA recommends you intake 1,500 to 1,800 milligrams of salt per day, and the average American consumes double that. Be conscious of what you’re consuming at restaurants, and read nutrition facts at the grocery store.
4
Not being sweet can be good. We all need to decrease simple-sugar intake. Replacing it with artificial sweeteners is not the answer, either. Start by cutting sugar-sweetened beverages, such as sodas and juices, out of your diet and replace them with infused water.

Balance Physical Fitness
In November, the Palm Beach Orthopaedic Institute added a 38,000-square-foot location in Palm Beach Gardens to its three other facilities in Jupiter, West Palm Beach and Wellington. The institute’s new branch houses an MRI facility, a pharmacy, a rehabilitation center and modern exam rooms as well as offerings unique to the location. Leading the pack is the D1 Sports Training Complex, a nationally recognized program that marries athletic training practices with physical therapy. D1 offers training for students, adults and professional athletes in an energetic and supportive environment. Skills and therapies taught at D1 include warm-up, speed, agility and conditioning training as well as strength, core and flexibility training. This new complex will allow PBOI to engage with scholastic and adult sports training in the area and also provide patients with a more comprehensive approach to physical therapy. If you’re looking for a private and intimate 376-resident golf course community set apart from the rest, Orchid Island Golf & Beach Club is the community for you. This one-of-a-kind gem is located in the town of Orchid, which sits just north of the charming seaside town of Vero Beach, between the peaceful Indian River Lagoon and majestic Atlantic Ocean. “With its British West Indies-styled homes, Orchid Island has a relaxed and understated feel,” shares Bob Niederpruem, president/broker of Orchid Island Realty. “There is simply no other Orchid Island. It has an indescribable beauty offering a range of luxury home options, including gracious estate residences, luxurious oceanfront condominiums and maintenancefree cottages.”
Why choose Orchid Island Golf & beach Club? John Barrett Irish-born John Barrett got his start in the beauty industry as a teenage hairdressing apprentice in London. When he moved to Los Angeles in the 1980s, his natural talent and vibrant flair helped him garner a clientele of celebrities, and his reputation has only grown since. After settling in New York 25 years ago, Barrett opened the first and only salon at Bergdorf Goodman, where he styles the tresses of Beyoncé, Hilary Clinton, Katie Holmes and other well-known clients. His line of salons is expanding, including a location in Palm Beach that opened in December.
Claridge’s Hotel
TRAVEL SPOT London. My first stop is generally Claridge’s hotel—it’s my home away from home— then lunch at The Wolseley. BEAUTY ESSENTIALS I never leave home without my Tammy Fender Quintessential Serum. It helps restore the skin and is packed with healthy oils. FAVORITE SONG “Clair de Lune,” by Debussy GUILTY PLEASURE Dark chocolate from La Maison du Chocolat DRINK OF CHOICE Perrier the next big HAIR TREND Rising hair is on the rise. For years, we have had flat hair with no movement. I am predicting much more glam, big and sexy hair. #1 HAIR CARE TIP Apply Shu Uemura Essence Absolue Nourishing Protective Oil to the ends of your hair every day. It is an excellent way to nourish the hair. WORTH THE SPLURGE The Linkage Meu hair treatment. This is a treatment for dry, weak or moderately damaged hair. It’s composed of amino acids, collagen and various essential oils intended to help moisturize and protect your hair.
