A

few years ago, I took up advice about how to use this particular page each month: Inform and entertain, yes, but also include a marketing message to support the magazine. For example, while writing about philanthropy—something near and dear to me—I’d mention the Palm Beach Charity Register, which has become the bible of the social season. I could encourage philanthropy and help the publishing business at the same time. I’ve often cited research data I find fascinating, such as the fact that while the world becomes more digital and more mobile, the number of young people reading printed magazines is increasing. For years, it’s been rather easy to promote the incredible growing readership of our magazines and websites (including weddings illustrated.net, a site you need to navigate to appreciate). Sometimes, however, finding a marketing tie-in takes a bit of the fun out of writing. I remember the phrase a friend always used about his business: “If it’s not fun, why are we doing it?” While not every aspect of business is a rollicking good time, his point was we should enjoy our work because we spend so much time doing it. The sentiment reminds me of the first enterprise I built, a plastics company. I eventually sold the business to an international conglomerate, allowing me to devote most of my time to philanthropy. A few years into that, however, I realized I still loved business. As good as the plastics industry had been to me, I was inspired to build a different firm that incorporated my love of great photography and words and offered a platform to make the community better. Thus, a magazine company was born more than two decades ago. In certain office situations—like while I’m in a cover meeting, or looking over an art director’s shoulder at an incredible page design, or seeing the excited face of one of our advertising account managers who has shown a client how we can grow her business—I realize what a great road we’re traveling. And always, when a new issue of Palm Beach Illustrated reaches my hands, I hear myself saying, “This is really fun.” There is so much about this town, the people I work with, the things we do and the readers we inform that we’ve discovered an endless number of interesting subjects. This is why we produce the best marketing piece there is. I’ll continue writing about the things I find interesting and meaningful and let our great marketing department do what it does. Perhaps, like the homerun hitter who doesn’t try so hard, I’ll knock one out of the park now and then. That, too, will be fun.

eauty abounds in Palm Beach—not only in our natural surroundings, but in the native population as well. Just sit back and observe the parade of gorgeousness and glamour at one of our town’s most popular events—the Preservation gala, say, or the Policemen’s Ball—and you’ll know what I mean. And yet beauty of the obvious kind only tells part of the story. The denizens of the world’s most stylish coastal enclave are lovely in more ways than one. They are accomplished, powerful, generous and, despite oversubscribed schedules, unwaveringly committed to family and friends. In this issue, we have singled out five women who personify the term “beauty” in all its meanings. Our cover subject, Veronica Webb, is a great example. Once a supermodel best known for her Vogue covers and for being the face of Revlon, she now is entertaining her entrepreneurial side with a new, accessible fashion collection, Royalton by Veronica Webb. Veronica, who spends much of the winter in Palm Beach with beau Chris Del Gatto, has enjoyed amazing success and notoriety but is also the kind of woman you love to have a cocktail and a laugh with. Meet her, and four other true “Palm Beach Beauties,” on page 78. A little disclaimer here: Though we only had space for five portraits, the Palm Beach area is a gold mine of subjects who fit the “Palm Beach Beauties” profile. Because of this, we are making it an annual feature appearing in March. Know of someone who is radiant inside and out? For next year’s story, we’ll open nominations to all our readers, so keep checking palmbeach illusrated.com for the opportunity to chime in. Because March also marks our annual style issue, we proudly turn the spotlight on the budding talent of Palm Beach County. We’ve always known the students of the Alexander W. Dreyfoos School of the Arts are brilliantly creative, so we threw them a challenge: Create functioning, wearable clothing out of unusual materials (essentially, anything that’s not fabric). What they produced floored us. I will say no more; I don’t want to spoil the surprise. Turn to “Project Dreyfoos” (page 90) and be proud of our next generation of artists. In fact, the issue is full of fun style coverage. From our fashion feature, “Call of the Wild,” shot at Lion Country Safari (yes, that giraffe really is eating out of the model’s hand; page 96), to our ode to perennially chic serpent motifs (“The Look,” page 49), you’ll find lots of eye candy and fashionable tips you can apply to your own wardrobe. v CARRIE FISHER Even without the signature side hair buns, actress

Carrie Fisher is most recognizable for playing Princess Leia Organa in the original Star Wars trilogy. She has acted in smaller roles since then and will reprise her iconic character for Disney’s continuation of the science fiction saga, set to hit theaters in 2015. Fisher has also written novels and screenplays; her 1987 semiautobiographical bestseller, Postcards from the Edge, was adapted into a 1990 movie starring Meryl Streep and Shirley MacLaine. Despite her success, Fisher has battled substance abuse and depression and is an outspoken advocate for the mentally ill, usually speaking about her own struggles with candor and biting humor. She will be the keynote speaker of the Center for Family Services’ Old Bags Luncheon, held March 7 at The Breakers. —Jennifer Pfaff n What would Princess Leia be like today? Elderly. She’s in an intergalactic old folks’ home [laughs]. I think she would be just like she was before, only slower and less inclined to be up for the big battle. [She still wears] the bagel buns and the bikini, because probably she has sundowners syndrome. At sundown, she thinks that she’s 20-something. And she puts it on and gets institutionalized. n What do you look forward to? There are still other places I’d like to travel, [like] Tibet. I still haven’t seen the aurora borealis, which is extremely upsetting. I’d like to go to the sing-sings in New Guinea. Those are on my bucket list. n and your life motto? Not to lie. In June 2011, the 45-year-old courts reporter for The Palm Beach Post was diagnosed with amyotrophic lateral sclerosis, or Lou Gehrig’s Disease. Knowing the disease would eventually rob her of her muscle control, the mother of three immediately quit her job and began living her life like an adventure. She saw the Northern Lights, traveled to Budapest with her husband, met her birth mother and shopped for a wedding dress for her teenage daughter, knowing she will never see her wear it. Her incredible memoir about her journey, Until I Say Goodbye: My Year of Living with Joy (HarperCollins), hits shelves March 12. Paradise Found With a thriving New York textile business in the 1980s, Lois Brezinski’s life was full of accomplishments. Yet a trip to the Cayman Islands in 1990 showed her what it was lacking: fun. But nothing—I mean nothing—comes close to this. We are flying in a Eurocopter AStar through the Simien Mountains in remotest Ethiopia, in and out of windswept gorges that make the Grand Canyon look like a gully. The pilot, Ben Simpson, a Briton living in Kenya who bears an uncanny resemblance to Robert Redford in Out of Africa, points to an insanely narrow outcropping and says, “How’s everybody feeling?” For a split second, I think he’s kidding. But then he brings the chopper down on

a strip about 10 feet wide with precipices dropping hundreds of feet on either side, landing dead center. The man is an artist. “Right,” he says as the rest of us exhale. “Coffee?” It’s a hell of a way to start the morning. We eat homemade donuts with Tigrayan smoked honey and sip strong coffee on the rooftop of Ethiopia, surrounded by basalt cliffs sculpted by the eternal winds. The air is vaguely perfumed with thyme, which grows wild in these mountains. A gentle breeze gives lift to the birds hovering above the canyon. We search for the rare Lammergeier vulture that sometimes circles this rock formation, but it is feeling shy today. We are far too awestruck to miss it. This improbable breakfast sums up the experience of a helicopter safari: It takes you to the uninhabited ends of the earth in an adrenaline-fueled flash journey that, paradoxically, seems to unfold in slow motion. A trip such as this one, organized and made seamless by U.K. bespoke travel company Journeys by Design (journeysbydesign.com), is a must in a place like Ethiopia, where the distances are long and there is a vast amount of detail to take in. Traveling the highlands by road is flat

compared to the 3D panorama of being inside the mountain ranges, next to the elemental layers of rock, seeing every fissure and shadow. Before landing for breakfast, we’d spent a day in Gheralta, a high mountain plateau where monks built churches and monasteries into the sandstone caves as early as the fourth century, when Christianity first took hold in Ethiopia. The helicopter can land near eight of these, including Maryam Korkor and Daniel Korkor, nestled so deep within a high cliff they are barely discernible from the air, let alone the ground. Access is not for the faint of heart— think two-hour hike through rocky, vertical terrain—but it has its rewards: The churches have magnificent murals, tombs and architecture, all testaments to the spirit of the men who have tended them for centuries. After a night at the remote Gheralta Lodge (gheraltalodgetigrai.com), built by an Italian couple to mimic a Tigrayan village (but with all the mod cons), the journey takes us to the Simiens and on to Lalibela with its legendary twelfth-century rock churches. Simpson circles above the town to give us an aerial glimpse of Bete Giyorgis, the church of St. George, chiseled of

a single piece of rock in a perfect cruciform shape about 100 feet into the ground. From above, it looks like a jewel dangling in a dark void: a remarkable feat of engineering and masonry. These 11 medieval churches, collectively a UNESCO World Heritage site, are carved with columns, arches and keyhole windows, and decorated with frescoes that remain brilliant to this day. They are connected by a network of trenches and subterranean tunnels, adding to the mystique. No amount of time seems enough in Lalibela, but the next morning we move on. Flying south to Addis Ababa, we make a detour through the Blue Nile Gorge, following the river as it cuts through an arid canyon. As we land on a pebbled shoreline

near a farming village, women and children spill down a hillside to see what the commotion is. At first they look at us as if we’ve descended from outer space: five wind-burned creatures stepping out of a noisy craft that raises a frenzy of dust and rock as it touches down. We try to speak to them but they back off, suspicious of our intentions. In the end, it’s technology that binds us. I snap a few photos with my iPhone and show them. Emboldened by

their giggles, I share photos of my children; in a tender gesture, one woman kisses my son’s photo on the phone. Our lives may be worlds apart, but we are both mothers and that connects us on a fundamental level. On one hand, four days on the helicopter pass too quickly; on the other, the experience has been so rich, it feels like weeks have gone by. I’ve never been one to quote poetry in my humble automotive scribblings. Maybe there was the odd bawdy limerick commencing with, “There once was a ... .” But never poetry of the deep and meaningful kind. But then I eased behind the wheel of the fearsome new Mercedes-Benz SLS AMG Roadster, caressed the blood-red starter button, fired up, drove off and spent the better part of a week tumbling head over heels in lust with this road-going, intercontinental ballistic missile. The love affair involved getting down on bended knee in front of the SLS and quoting, with hand on heart, the first line of that sentimental sonnet penned in 1845 by the English poet Elizabeth Barrett Browning: “How do I love thee? Let me count the ways.” There are many, indeed. Here is the canvas-topped version of Mercedes’ thundering gullwing-doored SLS Coupe, a car I loved with equal passion when I first drove it a couple of years back. 70

This is truly the Usain Bolt of convertible tops. Stickerwise, you’ll pay $206,000 for the Roadster, which is $6,500 more than the Coupe. Pick and choose from the laundry list of options that includes everything from the 1,000-watt Bang & Olufsen stereo ($6,400) to the carbon-fiber engine covers ($5,400) and you’ll easily get to the $231,325 price of our test car. But let me count the ways driving this topless SLS will have you quoting Ms. Browning’s second line: “I love thee to the depth and breadth and height my soul can reach.” Here, the love is one of sound. Folding the Merc’s top puts you front row and in direct earshot at one of the greatest rock concerts

ever from the band “SLS and the Atomic Tail Pipes.” Rev the Merc’s hand-built, 6.3-liter, 583-horsepower, aluminum and magnesium V8. Linda Blair in The Exorcist never had this many evil voices. It snaps and snarls, barks and bangs. And that’s just when you fire it up. For the full AC/DC-meets-Guns N’ Roses-meets-Metallica soundtrack, find yourself a curvy country backroad and have at it. As the revs soar, the big V8 emits the most glorious deep, bellowy, NASCAR-esque thunder. This is the sound of Smokey Bear clearing his throat after winter hibernation or Alice Cooper gargling with chicken heads. But for the pièce de résistance, approach a tight curve, pull back once, twice on the steering column-mounted paddle shifters from 70 mph, revel in the 100-millisecond kick-down and listen in wonder to the staccato snap, crackle and pop played through those storm-drain exhausts. As you might expect, it goes like a bat out of hell. Zero to 60 mph is covered in a blistering, head-snapping, knee-trembling 3.6 seconds. Flat out, you’ll see the world go by at a whisker under 200 mph. Those light-switch-quick shifts are delivered from the SLS’s

seven-speed, dual-clutch automatic. Playing tunes using those metallic paddle shifters is one of the great joys of driving this car. But driver, beware; this baby can bite. Get overenthusiastic with the right pedal midcorner, and it’ll happily step out of line. Those 583 horseys break the traction of the almost foot-wide rear tires. A quick flick of the laser-precise, beautifully weighted steering will usually restore the status quo. Usually. There’s nothing nimble or delicate about this droptop SLS. This is no Ferrari, McLaren or Lamborghini. Here is a modern-day, hairy-chested muscle car in the vein of a ’70s big-block Corvette. It’s a blunt instrument in a world of precision supercars. And that’s part of its immense appeal. It’s one of the countless ways I adored driving it and went into mild depression when I handed back the keys. How do I love thee? Simply 583 horsepower ways. And counting. u

veronica webb Veronica Webb, who spends much of the winter in Palm Beach for business and pleasure, has strutted down catwalks and posed as a cover girl for prominent fashion titles such as Vogue and Elle. Now she’s traded in her stilettos for shears with her own fashion line on the shopping website OpenSky. Yet Webb isn’t following in the footsteps of the famous designers who have dressed her,

but rather her mother, a nurse who made her family’s clothes. “My mother was petite, my sister was voluptuous and I was very tall,” Webb says. “So I grew up watching my mother create magic. She knew how to cut things so that we all looked beautiful and chic.” Webb’s line consists of two T-shirts, a cardigan, a floral tunic and a flowy silk blouse. Each piece is perfect for “a lifestyle that’s a tight-

Bettina Anderson is one of those girls who visits all the right places, with all the right people, wearing all the right things. Last spring, Salvatore Ferragamo selected the model as one of five tastemakers for its Signorina perfume social media campaign. “I love the brand so much, so it was quite an honor,” says Anderson, who contributed posts on thegirlsabouttown.tumblr .com about everything from her favorite music (Lou Reed, The Avett Brothers) to beloved blooms (wildflowers) and food (Curbside Gourmet’s crabcake sliders and mahi tacos) as part of the promotion. “Keep on laughing and loving,”

Anderson wrote. “There is beauty in every moment.” And like any girl about town, Anderson makes the most of each day. When she’s not modeling, she works for a pharmaceutical company and helps build The Paradise Fund, which her brothers co-founded. The group of young Palm Beachers raises money locally for children’s organizations all over the world. “Our parents went to black-tie events, but no one groomed us to take over,” Anderson says of the group, which has expanded to New York, Miami and Los Angeles. “We think to whom much is given, much is expected. We want to make a difference.”

Kara Ross has been there for us at clutch moments, so to speak. For the past 10 years, her handbags, belts and fine jewelry have been among the must-have pieces of every Palm Beach woman’s wardrobe. This year, Ross will open a Manhattan-area retail store, so her devotees won’t have to view her latest creations by appointment only. “The hardest thing for me is juggling everything well,” admits Ross, who has two daughters and two stepdaughters. “For me, family comes first, and then I organize my duties and responsibilities around that. It helps to have a supportive husband who appreciates and respects what I do.” That husband is none other than Stephen M. Ross, a real estate developer and the majority owner of the Miami Dolphins. It’s little wonder he’s so proud of his wife. Not only is she a board member at her alma mater, Georgetown University, but she also counts the First Family among her private clients. Ross hopes to spend more time at the family’s oceanfront home once her youngest daughter starts college this fall. “We’ll be empty nesters,” she says. “So hopefully we can take a Friday off and have a three-day weekend and enjoy it more.”

Is it possible to wrap one’s head around Cornelia Guest’s ever-socharmed life? Forget the fact her mother, the late C.Z. Guest, was one of Truman Capote’s swans and her godparents were the Duke and Duchess of Windsor. Andy Warhol colored with Guest in her bedroom when she was a little girl, and the designer Halston taught her how to walk in an evening dress. Has such a boldface name-laden existence made her an insufferable snob? No. If anything, she is the life of the party, one that includes a pet donkey named Madonna, an African tortoise and nine dogs. “I can’t stand pretension,” she says. “I’m happiest rolling around in the mud with my animals, being in nature. That’s where my heart is.” In recent years, the former equestrian who spends much of the winter in Wellington, has started a catering business, launched a line of vegan handbags and penned Cornelia Guest’s Simple Pleasures: Healthy Seasonal Cooking and Easy Entertaining, a book about elegant entertaining featuring meatless meals. She began 2013 with a stint on the Food Network’s Rachael vs. Guy: Celebrity Cook-Off (she lasted two episodes) and will be writing a new book and expanding her accessories line. What would her mother say about all this? “She’d love it,” Guest says. “And she’d say, ‘Oh my God, she’s adopted more dogs!’”

Two years ago, Kait Parker swept into West Palm Beach like a big bold front from the West, rising through the ranks at WPTV to become primary fillin for chief meteorologist Steve Weagle. “I honestly couldn’t have asked for a better community to come into,” says Parker, who previously worked for a station in Montgomery, Alabama. “I feel like I’ve clicked with everyone really quickly.” When she’s not on the air, Parker emcees an array of charity events, talks to schoolchildren about weather and teaches college-level meteorology and climate classes online. “I was raised by a teacher and a firefighter, so anything having to do with [those disciplines], I’m totally involved,” says Parker, a Texas native. “And any event that involves putting a pie in my face or sitting me in a dunk tank, I say, ‘If this is raising money, then let’s do it.’” South Florida sunshine appeals to the outdoorsy Parker, who kayaks, jogs and plays with her dog, Bruce, in her spare time. This spring, she’ll be the official meteorologist for Roger Dean Stadium in Jupiter.

Since 1989, West Palm Beach’s Alexander W. Dreyfoos School of the Arts has nurtured the next generation of Floridian artists, dancers, actors and singers. We asked a few of the costume design students, under the leadership of instructor Penny Williams, to create garments from recyclable material. The result: upcycled fashion. 90

Front Page If Ayla Mejia’s outfit looks like it belongs in magazines, that’s because it’s made out of them. After fashioning a corset-inspired top out of issues of Palm Beach Illustrated, she paused to come up with a design for the bottom. “I really wanted something out there for the skirt,” says the 17-year-old senior. Mejia folded pages and created a fan effect for a separate piece with a lot of volume. Mejia says the dress could be worn to a cocktail party or fashion show—something

that’s the ticket Molly Bockmeyer, an 18-yearold senior, wanted to challenge herself by creating a cocktail dress out of admit-one tickets. “They’re so difficult to handle,” she says. Bockmeyer stitched the base of her skirt before gluing on more tickets and curling them with her finger to create volume. “The stitching for the tickets [was a problem] because as soon as it crinkled a little bit, the shape was blown and I had to restart,” she says. Bockmeyer attached a zipper in the back by carefully running the tickets through a sewing machine.

Bridal Brew Coffee filters aren’t exactly the material a bride wants to wear on her big day. But that didn’t stop 18-year-old Shanley Mitchell from creating a grand bridal ball gown. “It took a long time to get down a good process for how I was going to attach the coffee filters and make them into a dress,” she says. After sketching out a few ideas, Mitchell folded them in half and layered them to create a ruffle effect. All told, she estimates she used around 2,000 pieces.

Burn Rubber For 18-year-old Taylor Hull, recyclable fashion design presents an opportunity for self-expression. “I love how I can take anything and turn it into a garment and make it my own style,” she says. Surgical gloves appealed to her for practical as well as aesthetic reasons: The elastic material easily passes through a sewing machine, while the cream color reminds her of vintage lace, a detail to which she gravitates. “I’d wear it anywhere, honestly,” she says of her dress. “It’s just me.”

Leaf Couture Something about the leaves on the reusable Barnes & Noble shopping bags spoke to Elianise Jean-Louis. The 19-year-old visual arts major had one goal: to make it look as if the leaves were climbing onto the body. After cutting out the foliage, she created an asymmetrical design, paying attention to the architecture of the back. Jean-Louis believes it’s the perfect dress for someone confident who wants to get noticed. She wants the GLOVE LOVE: Amanda Hull proudly models sister Taylor Hull’s surgical-glove design. 94

ultimate hosts Mark and Mary Freitas open their home for a foodie extravaganza to benefit children’s home society. By Paige Bowers PHOTOGRAPHY BY JERRY RABINOWITZ

e are often told we can’t have it both ways. And yet, Mark and Mary Freitas have gained a certain amount of notoriety for hosting dinner parties that are as elegant and well-considered as they are fun and seemingly effortless. “Mark and I tend to entertain on a more formal level in the way that we decorate,” Mary says. “But we also like to have our guests feel at ease. So we’re always mixing it up a little bit, because it depends on what the group calls for. You’re probably not going to come to my house and see fire blowers or people on stilts. And while fire blowers and people on stilts are fine and fun, we tend to entertain in a more classic, traditional way.” Case in point: the mid-November dinner for 16 they hosted to benefit Children’s Home Society. The evening was part of CHS’s annual Ultimate Dinner Party, which begins with a cocktail party, followed by multicourse dinners 114 PALM BEACH ILLUSTRATED

prepared by professional chefs at various Palm Beach homes. Some hostesses might have fretted the details for one of the social season’s signature kickoff events, but Mary was not one of them. The Freitases have hosted the Ultimate Dinner Party at their home for the past few years. To alleviate any party-planning stress, they teamed up with The Breakers Executive Chef Jeff Simms and special event planner Tom Mathieu, two professionals who know Mary well and can anticipate her vision for an evening of this scope. Mary has previously worked with Simms on events such as the Jingle Bell Ball and trusts his palate and imagination. She’s also collaborated with Mathieu both on the social scene and in her own home, knowing he has a sixth sense for the things she likes, such as her preference for peonies over calla lilies. “It’s important to have a rapport with people when they’re coming into your

home because it’s so personal,” Mary says. Mark adds, “That’s not to say that other people on the island aren’t any good, because there are plenty of good people on the island. It’s just that when you give parties like this, they can be very stressful. But if you have people you know, like and trust, it eliminates a lot of that stuff. There’s no fuss, no muss.” Just how fuss-free was it? Simms submitted a menu that blended some of The Breakers’ new dishes with fresh, seasonal items. Having served as her Ultimate Dinner Party chef last year, Simms was familiar with Mary’s china, so 116 PALM BEACH ILLUSTRATED

he planned the presentation of each course to accommodate the size of her plates and bowls. He asked for Mary’s input on the menu, but she says she changed nothing, believing it would be “like going to Van Gogh and telling him to use more blue.” Meanwhile, Mark delved into his wine cellar to select bottles Simms could pair with the meal. Wine is “a passion of his, so I turn it over to him, always,” Mary says. Mark drew from his large collection of drinkable French and California wines, impressing Simms along the way. “Mark is quite knowledgeable about wine,”


Simms says. “Some of the wines I got to taste were amazing.” Mathieu met with Mary briefly before creating two beautiful, but not overdone, tables that used the couple’s existing china, silver, table linens and crystal. “We don’t use our dining room as much as we should, and it looks so pretty at night with the candlelight and the mirrors,” Mary says. Keeping this in mind, Mathieu limited the color scheme to soft whites, with splashes of pastels and gold accents that complemented the china and chairs. Each centerpiece was a

romantic arrangement of anemones, ranunculus, peonies, parrot tulips and garden roses. “When I put the flowers down, I just thought it was a beautiful table,” Mathieu says. The Freitases opened their dining room doors, letting in the evening air and trickling sounds of their backyard fountain. A pianist played as guests arrived for cocktails and hors d’oeuvres in the living room. Among the bites in Simms’ repertoire were an Echo kama roll with wasabi cream, cherry wood-smoked organic salmon flatbread, prime peppered New York sirloin and porcini hollandaise served with a tater tot, seared foie gras with fig marmalade on a cracked pepper biscuit, and lobster wontons with lemongrass yuzu butter. “For cocktails, we served what anyone wanted,” Mark says. “Plus we served a Cristal 2004 that people could stick with during dinner, a Pouilly Fuisse 2007 and a Mondavi Reserve Cabernet from 1997.” Dinner began at 8 p.m. Although Mary worried how the group would fare at two separate

tables, the food, wine and conversation kept things lively. “Mary was at one table, and I was at the other,” Mark says. “We were surrounded by our good friends, and so it was a very warm environment.” Mary adds, “Our friends really helped us make this a more personal, more intimate dinner. And it was wonderful with the doors open, because it was such a pretty evening.” One by one, tuxedoed staff from Tim Edwards Services presented the dishes: lobster bisque with sweet corn and chanterelle flan; pan-seared Florida pompano with heirloom tomato carpaccio and farro salad; a lamb tasting; a cheese course featuring poached pears, Point Reyes bleu, Beemster and Manchego gran reserva; and a dessert trio of tropical fruit trifle, chocolate-dipped red velvet whoopie palmbeachillustrated.com | March 2013 119

pie and gianduja hazelnut parfait. Guests could sip either an Opus One from 1997 or a Ladoucette from 2008. Outside of Simms’ menu and Mark’s thoughtful wine selection, the stimulating dinner conversation helped make the evening. “Jeff’s dishes give the meal such a personality, so that was exciting to talk about,” Mary says. “But it was also the beginning of the season and one of the first events, so people were just getting back to town and excited to be catching up. They were fresh and excited; it wasn’t March and their fortieth dinner. Plus, the presidential election was over and all that talk had ended, so we could move on to bigger and better things.” Near the end of the meal, Mark thanked everyone for coming and toasted his wife for organizing such a memorable night. “Of course, we were thankful that we were able to host this event for another year, because it’s a great cause and we’re happy to support it,” Mark says. By all accounts, the Freitases’ Ultimate Dinner was a total success. “We heard back from every single person who came,” Mary says. “Everyone said they had a great time and loved the wonderful food. DISH v Bagel Bites With the plethora of bagel haunts dotting South Florida, one question rises with the yeast: Who bakes the best? We decided to load up on carbs and find out, so we put five neighborhood favorites to the test. Using a scale of 1-5 (low to high), our tasting committee assessed plain bagels from the Original Brooklyn Water Bagel Co., Bagel Boyz, Makeb’s, Way Beyond Bagels and Bagel City South on six important qualities: appearance; crust composition (perhaps the most crucial aspect of the bagel anatomy); dough density (Chewy? Hard? Sticky? Perfect?); where it fell on the savory index; and how well it stood up to the schmear. So where is the best baker’s dozen? Turn to page 132 to find out.

Austrian Waltz

American palates dance to the notes of the landlocked country’s unique varietals. By Mark Spivak Thanks to the splash Austria’s signature white, Grüner Veltliner, made on this side of the Atlantic some years back, the country’s wines are gradually claiming their rightful place in the American market. Grüner established a firm foothold in the United States in the late 1990s when it became a trendy fixture on wine lists in Las Vegas, where many of the country’s top sommeliers are located. At one point, Aureole in Mandalay Bay reportedly had 150 of them on its list of 4,000 selections. The trend has since receded, but Grüner is now part of our wine landscape. Much of its appeal is centered on its versatility with food. Grüner is a charm with fish and shellfish and is one of the few wines that plays well with vegetables—even wineunfriendly ones, such as asparagus and artichokes. The wine comes in a variety of styles: The steep vineyards of the picturesque Wachau region produce a firm, mineral-based bottling, while the versions grown in Kremstal and Kamptal display spiciness and richer fruit. Grüner accounts for nearly one-third of vineyard plantings in Austria, although most of the wine is consumed locally when young. Leading producers include Hirsch, Willi Bründlmayer, Lenz Moser and Schloss Gobelsburg. While some bottles can fetch $35$40, the Hirsch Veltliner #1 is widely available for $18. Connoisseurs will tell you Austrian Riesling is even better than Grüner, and this may be true. The grape thrives in the terraced vineyards of Wachau, where the soil and climate are similar to the Rhine Valley in many ways. The wine tends to be rich in texture, with intriguing hints of white pepper, and pairs well with fish in substantial sauces, as well as with white meats. Many of the wineries that make Grüner produce Riesling as well. Excellent examples can be had from Loimer, Proidl and F.X. Pichler; prices begin at $10 and soar up to $65 for the best wines. When it comes to reds, most Americans are on unfamiliar ground, probably because the names of the grape varieties are somewhat unwieldy. Blaufränkisch (otherwise known as Lemberger) is capturing the attention of the public with a fresh, medium-bodied and juicy texture similar

to Pinot Noir. Good versions available in the States include Walter Glatzer, Sepp Moser and Weninger, all selling for less than $20. By far the most widely planted red wine grape is Zweigelt, which is actually a cross between Blaufränkisch and St. Laurent. Racy and lively, packed with crisp acidity, red fruits and spice, Zweigelt is similar to Grüner in that it is so friendly to food. Most bottles are in the $10 to $15 range and match up very well with white and red meats, stews and game dishes. Historically Austria was known for dessert wines, but the market for those collapsed after the 1985 scandal in which a handful of producers were found to be add-

ing diethylene glycol to make the wines taste sweeter. The industry shifted to dry white wines in the wake of that controversy, and the popularity of sweeter Austrian wine has only returned in the past decade. The best of these wines come from the eastern region of Lake Neusiedl (or Neusiedlersee), where climate conditions favor the incidence of botrytis, or “noble rot.” Producers such as Kracher and Hans Schwarz have been instrumental in returning the reputation of Austria’s dessert wine to its former glory, and the bottles are bargains compared to their German counterparts. That’s certainly a development worth yodeling over. u

Globetrotting gourmets were astonished when The Breakers closed L’Escalier, an award-winning dining destination, and began work on a new concept. The hotel hired famed restaurant designer Adam Tihany to revamp the room that once housed L’Escalier and the Tapestry Bar—a place Tihany called “the historical heart of the hotel.” The result was HMF, which opened in November. Named for Henry Morrison Flagler, the pioneer who built The Breakers and established tourism in South Florida, HMF pays homage to the glamorous, golden era of Palm Beach entertaining, with a mission to restore and refresh the rituals of the cocktail culture. The space is inviting and welcoming. A combination of comfortable chairs, sofas and loveseats makes for intimate groupings around the large room, setting the stage for socializing, romance, business or whatever your agenda calls for. A stunning glassed-in wine cellar anchors one end, and the space

is punctuated by both a cocktail and a sushi bar. HMF is at once traditional and modern, a place where everyone can feel at home. The menu is composed of nearly five dozen small plates that rotate on a regular basis. The restaurant’s culinary wingspan is impressive but more so is the faithful and passionate execution. Under Nibbles and Bites, begin with warm Low Country crab dip ($17), rich and velvety, served with homemade potato chips. A bowl of shrimp fried rice ($17) is pleasantly greasy and dotted with tofu, bean sprouts and fresh peas, far superior to what you would find in the best Chinese restaurants. In the Food Truck section, spiced Greek lamb sliders ($20) are the gyros of your dreams: tender and flavorful, topped with yogurt and sandwiched between rounds of pita bread. The delights go on and on. Whatever you do, don’t miss something from the robata grill, which uses traditional bichotan char-

coal to sear the flavors into an assortment of meat, fish, vegetables and pizzas. Wild salmon yakitori ($24) emerges fresh, moist and medium-rare, enhanced with a light brushing of teriyaki—simple yet satisfying. There also is an impressive assortment of sushi, including wahoo tiraditos ($20) and a live sea scallop ($21) with yuzu and smoked salt. The cocktail selection is evenly split between classics and house creations. Among the HMF Originals, The Redhead (Ketel One Citron, blood orange liqueur, cranberry juice and lime foam, $14) is slightly sweet, a nice change for habitual Cosmo drinkers.

Even better is the Railcar #91 ($14), named for Flagler’s private car, a blend of Courvoisier VSOP, fresh lemon juice, local honey and orange foam. The Breakers’ list of 1,600 wines is at your disposal, spearheaded by an interesting group of wines by the glass. Servers are primarily female, attired in elegant cocktail dresses and looking like they are ready for a night on the town themselves. They are unfailingly polite, friendly and efficient. The dining room is supervised by Michael Ignatowicz, a veteran manager who is constantly circulating, chatting and smiling. HMF is revolutionary in that it places the

customer in charge of the experience, whether you stop in for a drink or a quick espresso or whether you stay and indulge for several hours. Like the era it seeks to recreate, it is sleek, perfectly coifed and thrilling. u

palate v dining out ethnic diversity Quick: What country is known for its pizza? Brazil probably wasn’t the first answer, but it’s giving Italy a run for its money at Ovenella in Boca Raton. While Italian-based, the cuisine here has Mediterranean and Brazilian influences—and is intended to be so authentic that Executive Chef Mennan Tekeli, a former Dennis Max star, traveled to Brazil to study the art of pizza making. The trip was worth it. We loved the quattro formaggi pizza, which has Gorgonzola, mozzarella, Parmigiano Reggiano and creamy Stracchino cheeses. It is topped with plum tomatoes; add prosciutto to further elevate the flavor profile. The pies are cooked in a wood-fired brick oven, which gives them a smoky undertone. Before Michael Phelps, there was Shannon Miller. A star Olympian in the ’90s, Miller remains the most decorated American gymnast, holding 108 medals from international and national competitions. Yet perhaps her biggest victory occurred more than a decade after she retired from gymnastics. In January 2011, Miller was diagnosed with ovarian cancer. Today, after undergoing surgery and chemotherapy, Miller is cancer-free and has become an advocate for early detection. On March 12, she’ll speak at the YMCA of South Palm Beach County’s 11th Annual Prayer Breakfast. She opened up to PBI about her journey with cancer. n Was there anything you learned from your years of competing as a gymnast that helped you during your battle with cancer? I fell back on the lessons that I had learned during training. I focused on goal setting. I set my goal of getting through chemo and then set small goals for each day so that I had something to achieve each day. It may have been something as simple as drinking enough water or taking a 10-minute walk, but it empowered me to keep going. n Was there anything surprising you learned about yourself during your recovery? I learned that I’m a stronger person than I thought. I grew up very shy, never wanting to disappoint anyone. I was always very confident in gymnastics, but outside of the sport I had fairly low self-esteem. After losing my hair and facing my own mortality, there wasn’t much left to be embarrassed about. I feel like a stronger, more empowered woman after cancer. I also feel like my priorities are much easier to identify. n What’s the best advice you were ever given? The best advice I was given during cancer was from a friend of mine who said, “Shannon, this is just like the balance beam. You’re going to fall off. You just have to get back up and keep moving forward.”

On a Mission to Remission More than 25 million Americans live with diabetes, according to the Centers for Disease Control and Prevention. While complete remission of Type 2 diabetes is rare, a new study completed by the CDC and published in the Journal of the American Medical Association found that, with changes in diet and exercise, patients can see partial remission. Participants decreased daily caloric intake to between 1,200 and 1,800 calories a day and increased physical activity to around three hours per week. She was known for taking control of her film costumes and often worked with designers to determine her outfits. 1. What changes are you seeing in the market? In today’s market, headlines can be deceiving. Are home prices up, or are more homes being sold? Is this occurring in one area or the whole county? We are seeing an increase in the number of homes being sold and a decrease in inventory. Selling prices have stabilized and, in some cases, increased. Generally, this upswing is positive for area homeowners and sellers. 2. What does this mean for me? It’s a great time to jump into the game. If you are thinking about buying, interest rates are still low and prices have stabilized, which indicates the bottom has been reached for now. If you wait and inventory remains low, prices will continue to rise and interest rates might increase as well. If you are considering selling, the inventory in most areas is low. Compared to last year, eager buyers have less of a selection. 3. Why do I need an agent if people are shopping on the Internet? With real estate websites available 24/7, many people wonder if an agent is necessary. Home buying and selling is a complicated process and can be personal. An agent can bring an objective perspective and look out for your best interests. Good agents know how to best leverage pricing negotiations, market your home and navigate the complicated process of closing. Many website listings are out of date.
