A successful entrepreneurial friend of mine recently told me about the best business advice he ever received: “Never stop dreaming.” Back then he’d outlined his idea to a savvy acquaintance who had retired from a similar industry. “He never asked me if I was crazy, never said, ‘Don’t do that’; in fact, he did not say one negative thing,” my friend said. “He just asked me questions and helped me flesh out the idea in my own mind. When the conversation was ending, he encouraged me to never stop dreaming, for dreams are the precursors to success. Those were powerful words for me to hear then, and I remember them every time I think about a new project or advise someone who has one.” Did you know research indicates children who are day-dreamers in school end up being more successful in their chosen fields, whether it’s in science, business or government? That positive thinkers are healthier than negative thinkers? That athletes who visualize their performance more often succeed? When I first entered the magazine business and started this company that now publishes 10 titles and three websites, I dreamed of publishing beautiful photography and interesting and informative stories, with the highest quality printing and paper, and doing it with a talented team for a select audience, at a profit. No kidding; I dreamed all those things as a package. I had been successful in another business, but I dreamed of building a business that would sustain itself publishing national-quality magazines in a remarkable community. That nice dream came true many years ago and continues. I had never before thought of this in my friend’s terms. But now I realize this is what we do in our company every day. We have dreams of how to do what we do even better; we have dreams of how to use the latest technology to produce amazing new products to entertain and inform you like never before. Most importantly, perhaps, we have dreams of helping this community in new ways. We’ve had dreams like these for years (like our Charity Register), and they keep coming true, and we keep adding new ones. So, in a place like Palm Beach, which is full of people whose dreams have come true, add some exclamation points to life: Never stop dreaming. We’ll be right there beside you.

Celebrate! f there is one thing Palm Beachers know well (perhaps better than anyone), it’s how to entertain. Indeed, what would Palm Beach be without its parties? They are the lifeblood of this society, as integral to philanthropy and community building as they are to connecting with friends. Entertaining takes many forms in our little corner of the world and can range from a sublime soirée to an old-fashioned barbecue. But regardless of style, Palm Beach parties are all alike in one regard: They are attended by fascinating, influential and accomplished leaders and tastemakers. In “Riding High,” we take you to an Argentine-inspired barbecue in the western reaches of Lake Worth, a stone’s throw from Wellington. This is no ordinary barbecue. It is a post-practice asado hosted for the polo family of Chris Del Gatto, patrón of the Circa polo team. Del Gatto, the chairman/CEO of Circa, discovered polo quite by chance, but a passion-fueled drive—the same one that keeps him at the top of his professional field—kicked in, making polo a lifestyle as well as an avocation. On page 66, we join Del Gatto and his polo family fieldside for a dinner that is the epitome of rustic elegance. At the heart of every celebration is food and wine, and there is plenty of that in this issue. Our food and wine editor, Mark Spivak, presents his top 10 restaurants in the Palm Beach area, using as his benchmarks the high standards expected by this market in cuisine, service and vibe. See “Top Tables,” on page 78, for his ultimate list. Mark, a wine expert, also writes about the wines to uncork now, choosing the best of the best from a long list of accessible bottles. For those in the know, it is easy to acquire top vintages at auction, but for the casual wine drinker—the connoisseur in the making, so to speak—it is not so easy to separate the wheat from the chaff. “In Good Time” (page 84) is an excellent primer. Rounding out our feature well is a witty look at tired party themes (luau, anyone?). We have asked four party planners to dust off some old classics and reimagine them with a modern twist. The result of their creative genius appears in “Life of the Party,” on page 72. As you contemplate your next soirée, their ideas may just provide that extra jolt of inspiration. Cheers!

v Olivia Newton-John Olivia Newton-John is famous both as an actress in such movies as Grease, and as a singer, with four Grammys and 10 No. 1 hits. The Jupiter resident also is a vocal advocate of breast cancer awareness, having overcome the disease in the early ’90s, and for rainforest preservation and healthy living. n Why are you passionate about the rainforest and the Amazon? My husband, “Amazon John” Easterling, and I have been huge supporters of preserving the Amazon rainforest as it provides so much to the rest of the world—from healing botanicals found there to being the “lungs of the planet,” as it provides more than 30 percent of the earth’s oxygen. n What’s been the highlight of your career? In my life, the highlight is the birth of my daughter. Professionally, Grease really changed my life, but [a career highlight was] singing at the Sydney Olympics Opening Ceremony in 2000. I am also thrilled that after 10 years of raising funds, we will be opening The Olivia NewtonJohn Cancer and Wellness Centre in my hometown of Melbourne, Australia. n What do you do in your spare time? I love spending time with my husband and dog and doing anything in nature or outdoors— walking on the beach, tennis, kayaking. When I am not touring, I love to just be at home in Florida or at my Gaia Retreat and Spa in Australia.

During a two-week volunteerism trip to Malawi, one of Africa’s poorest nations, she was struck by the poverty, the living conditions and the absence of opportunity. She collaborated with the Malawian Council for the Handicapped (MaCoHa), a group established by Norwegian nuns in the 1970s, to launch a social-entrepreneurship initiative: a line of clothing and home goods that could be exported to the United States. While best known for The Godfather films in the United States and Europe, the name Francis Ford Coppola is synonymous with luxury in Belize and Guatemala. Since Coppola unveiled Blancaneaux Lodge in Belize’s Maya Mountains nearly 20 years ago, his Mesoamerican empire has spread to the shores of Belize’s Placencia Peninsula with Turtle Inn and to neighboring Guatemala with La Lancha, situated near the ancient city of Tikal. Conjure up your inner James Bond behind the wheel of the extraordinary Aston Martin V12 Vantage Carbon Black Edition. BY HOWARD WALKER It was hard, really hard, to resist the temptation to suit up in my finest bib ’n tucker—that’s Brit-speak for a dinner jacket— just to slide elegantly behind the wheel. And I admit there were times when the urge to skip my usual beverage of choice and order a vodka martini, shaken, definitely not stirred, did become overwhelming. My wife, however, was far from amused at being subjected to two days of my calling her Pushy Galore, delivered in my finest Sean Connery Scottish brogue. Driving an Aston Martin, any Aston Martin, does that to you. Slot the crystal transmitter key into the ignition—surely a creation of that master British Secret Service gizmo wizard ‘Q’—and you become Bond, James Bond, 007, with a license to thrill. After piloting an Aston DBS in the previous two Bond escapades—Casino Royale and Quantum of Solace—no one is letting on whether Daniel Craig will be back in an Aston in the next 007 episode, called Skyfall, due in theaters November 9. But if the producers have an ounce of sense, it should be the menacing and completely breathtaking Aston Martin V12 Vantage Carbon Black Edition I’ve been driving. The Vantage is the smallest, most compact model in the Aston 50

lineup. It usually comes with a 420-horse V8 providing the magic. But, just because they could, the A-M engineers shoehorned the company’s most potent power plant, the 6.0-liter, 510 horsepower V12 nuclear reactor, beneath the car’s lightweight aluminum hood. This is a little like strapping an Exocet missile to the back of a golf cart. Stomp on the throttle from standstill and 60 mph comes up in a mere 4.4 seconds, and the tsunami of torque doesn’t quit until the speedo needle is kissing the 190 mph mark. And a word here about noise. This V12 Vantage has more voices than Linda Blair in The Exorcist. From the violent rrrrapppp as the engine fires up; to the race car-like scream as the revs pass 4,000; to the burbles, barks and pops as you snap off the throttle. The first time I experienced this blood-curdling aural crescendo, I had to go home and take a cold shower. Believe me, you’d buy this car just to hear it sing. But the V12 isn’t just about a sensuous soundtrack. This is the most agile car in the Aston lineup and a car that rewards the presson driver with the purest of pure handling precision and lightswitch responses. Even compared to the V8 Vantage, its spring rates are 45 percent stiffer and its antiroll bars uprated to give the torsional stiffness of


an I-beam. At each corner, the 19-inch Pirelli PZero Corsa rubberware is as wide as oil drums with the stickiness of flypaper. Of course, in the pursuit of purism, you’ll have to embrace the bone-hard ride—run over a quarter and you’ll know whether it’s the George Washington side. That and the constant pitter-patter and bump-thump of the Pirellis over anything but pool tablesmooth asphalt. A Lexus it’s not. And there’s no fancy dual-clutch automatic on the options list. Here, your only choice is a he-man six-speed manual controlled by a polished billet aluminum shifter so big and beefy it could have come out of a Peterbilt. But even if I never drove this car and instead mounted it on my

living room wall, I’d be a happy man. From every single angle, this is automotive art at its finest. And in its Carbon Black Edition guise, it is even more visually menacing. The $15-grand premium over the $183,535 sticker for the regular V12 Vantage buys you bespoke Carbon Black metallic paint (50 man hours to apply). That, and an interior swathed in fetishist Obsidian Black leather, new lightweight carbon fiber and Kevlar seats, and lashings of carbon fiber and Piano Black trim. If you’ve ever wanted to experience the bowels of a Kentucky coal mine, just climb aboard. Yes, Mr. Bond would love this latest and greatest Aston Martin. No doubt he’d think of it as “From England With Love.” u

Off State Road 441 and Heritage Road, roughly two minutes from Wellington, the sound of horses’ hooves thunders from a field. Classical Spanish guitar melodies float in the air as onlookers sip wine and watch the Circa Polo Team practice. Polo, the oldest team sport in the world, was invented 2,500 years ago by soldiers as a way to prepare for battle. “The game is beautiful. It’s really a ballet, a violent ballet,” says Chris Del Gatto, the team’s owner and captain. On the field, Del Gatto is ambitious but a gentleman; “light but ferocious,” says supermodel Veronica Webb, his girlfriend. His disposition is no different off the field, where he has accepted business challenges with humble confidence, yielding overwhelming success. Polo simply plays to his nature, as the sport’s history, tradition and aesthetic remind him of his industry: jewelry. Both fields are difficult to enter in their own ways, yet Del Gatto has approached each with careful determination— and absolutely no experience. 66

“I like a challenge, yes,” he admits. Del Gatto’s drive in the jewelry industry began when he was 17 years old. Upon graduating high school in the Bronx, he skipped college to become a licensed gemologist, then a diamond cutter a year later. He was a partner in his firm by age 20 and sold his interest when he was 23, a decision that allowed him to retire wealthy as friends his age were graduating college. But Del Gatto had other plans. He traveled the globe for nearly three years, buying and selling large diamonds and fine estate pieces at auctions worldwide before returning to New York to become a partner at MHR Estate and Fine Jewelry. The firm supplied department stores nationwide with estate jewelry purchased at auctions, a method Del Gatto viewed as a broken cycle. 68

“We would sell a fantastic bracelet to Neiman Marcus and not know how to get another one,” he says. Recognizing there had to be a better way, Del Gatto teamed up with another young dealer in the industry, Jeffrey Singer, a third-generation member of the esteemed Singer’s Jewelers supplier. The two hosted public buying events at retail shops under the name MHR until they launched their own business in 2001. Circa, originally called Sell Jewelry, is a global wholesaler and now the world’s largest buyer of diamonds from the public. While the idea of selling or buying secondhand jewelry often conjures up images of sketchy pawnshops and predatory jewelers, Circa has transformed the process into a luxury experience. In each office,

The company prides itself on customer service, promising to educate clients on any piece appraised and to provide a caring point of view, understanding the emotions in letting go of sentimental heirloom jewelry. Del Gatto is particularly proud of Circa’s message of environmental sustainability, touting purchasing secondhand jewelry as a form of upscale recycling. The eco-luxe company has put roughly $500 million worth of diamonds back into the marketplace since its inception, spreading the message that every diamond bought is one fewer that has to be mined. Webb has literally become the face of


Circa’s “Rebirth” campaign, appearing in advertisements and speaking about giving used jewelry a second life. “We’re just pulling the product not from the ground but from the drawers and jewelry boxes of people globally,” Del Gatto says. Del Gatto’s force behind creating a successful company in a multitrilliondollar market is unsurprising to Webb, who serves as fashion director of Italian watch brand Sector, which is distributed by Circa. “He’s so curious and has this motherboard that’s really quick at putting together really different pieces of information to create something new very quickly,” she says. “Everyone talks to him, and everyone takes him in. And likewise, he does that for other people.”

“It was interesting to have Cilantro’s [cater], because they travel between Argentina and here, and they really make the authentic food of polo,” Webb says. Del Gatto’s quick-study attitude was the same in his decision to take up polo six years ago. At the time, he was building up his business and wanted a relief outside the office. “I needed something unusual,” he says. “And elegant,” Webb adds. An athlete from a family of boxers—his father and grandfather were fighters—Del Gatto picked up sparring again until he came across an article about the Southampton Hunt and Polo Club. He had always viewed polo as a marketing tool, as Circa had sponsored a few matches, but he decided to give it a try as a player after reading the article. Del Gatto went to the club, told the staff he knew how to ride—a lie—and climbed a horse for the first time with a mallet in hand. There was an immediate spark. Polo had the physical demands Del Gatto craved, coupled with the alluring qualities 70

also found in the jewelry industry: beauty, expertise, precision, codes of conduct, a particular lexicon, and a certain appreciation and knowledge. “It was just a beautiful fit,” he says. In his typical zeal, Del Gatto never took an official polo lesson, instead learning how to play the sport by studying DVDs of the Argentine Open and trying to imitate how the players rode. Aiming to become a professional player, he bought horses over the years—he now owns nine—and traveled to Argentina, where polo is the equivalent to what baseball is here in the States. Del Gatto stays there for a month at a time each year, doing nothing but riding. Now, Del Gatto plays high-goal polo on the Circa Polo Team, which is on the Palm Beach-Hamptons-Argentina circuit. The team made it into the finals its first year in the Hamptons, summer 2010, and

returned the following year to win the Hamptons Cup. In Palm Beach, the team had advanced to the semifinals of the Iglehart Cup at press time. Polo has proven to be Circa’s biggest driver in marketing brand awareness and raising the company’s credibility among the right clientele, Del Gatto says. Through relationships formed from the sport, the company has made seven-figure purchases, including acquiring items from European royalty. Worldwide, people stop by Circa offices asking to see “the polo player.” During the polo season, usually in celebration of a tournament win, Del Gatto and Webb host dinner parties with the players, friends and team supporters. A recent one held at the Circa Polo Team’s Palm Beach County facility was based on the concept of the Argentine asado, a Spanish barbecue particular to that region.


The event took place late in the afternoon, beginning with a team practice. As guests arrived, a Spanish classical guitar player performed while a bonfire was set up—the asado cooking method for steak, lamb and short ribs. Dinner was served in a gazebo on the property. Normally an empty structure that serves as a playhouse for Del Gatto’s and Webb’s children, the gazebo this evening was given rustic chic decor reminiscent of Argentina, arranged by Idlewild Furnishing in Wellington. In the middle sat a 21-footlong mahogany table, crafted from a single Hawaiian tree cut in 1954, and surrounded by wooden benches strewn with oversized pillows and Indian blankets. On the table were fluted amber glass plates, wooden serving platters and bowls and sequoia flatware, coupled with burlap napkins, a spray of sage and lavender flown in from California—a nod to the company’s corporate color. The overall look captured Argentina as well as polo’s natural beauty—“beauty without any fuss, which I think is, in many ways, the epitome of class,” Del Gatto says. Wine glasses held red Argentine wines or the cocktail created for the evening, consisting of fresh mango puree, soda water and vodka. The meal, prepared by Cilantro’s in Wellington, began with appetizers of empanadas and stuffed bread—a square, grilled bread filled with ham, genoa salami, provolone cheese and an olive mix. A salad of mozzarella en carroza preceded the asado—the main course of meat—and choripán, homemade sausage with chimichurri sauce. Rounding out the meal were Argentine milhojas, layers of flaky pastry and dulce de leche—“the flavor of Argentina,” Del Gatto says. As the sun set, tiki torches flickered and guests swapped stories sitting on hay bales around the fire. For Del Gatto, the Argentine-inspired evening payed beautiful tribute to the sport that has helped launch Circa’s success as a luxury conglomerate. Polo, he says, has brought to life many of the philosophies of his company. “It’s been an incredible thing for the Circa family to rally around,” he says. u

While they say the classics never go out of style, a vast majority of them could benefit from a little nip and tuck as the years go by. Take party themes, for instance. Adhere to the standard theme template and you’ll be partying like it’s 1999—which hasn’t been cool since 1991. To breathe new life into the old standards, PBI brought together an extreme party makeover team of experts to put a posh, modern twist on four bedraggled classics. MAKEOVER RECIPIENT:

HAWAIIAN LUAU Beth Beattie, Beth Beattie Branding, PR and Events bethbeattie.com Pacific Punch

BEFORE: Buried under a mountain of fake flower leis, multicolored hibiscus-adorned tablecloths and grass skirts, the purity of the Hawaiian luau has been lost. AFTER: • Find a way to modernize traditional elements. Beattie’s goal was to incorporate the bamboo element in a fresh way. She found brightly colored chiavari chairs, which have the shape of bamboo without being traditional. The Juliska bamboo-rimmed plates are “a sophisticated, modern version of the classic bamboo.” Even the tiki torches vary from the stereotypical luau cliché with their more diminutive size and pop of color. • “I like layering a table the same way women should dress.” Beattie believes in the transformational power of linen. The idea was to find something complementary to the theme but not traditional to what guests would expect. “You start with the basics and accessorize to a point, but don’t overdo it,” she says. “Just as you wouldn’t wear 13 necklaces, you don’t want your table to look like you’ve put a bunch of stuff on it that doesn’t belong.” • Don’t give up on a good idea. Beattie fell in love with some vintage tiki tumblers, only to discover they were sold out everywhere. Rather than relinquish the idea, she searched for similar tumblers and ultimately found a comparable and much less expensive option on target.com. • Menu. In our opinion, however, disco parties have had a raging case of Saturday Night Fever for far too long. AFTER: • Condense your decor aesthetic into a single phrase. It was the luxe side of disco that entranced Sutka. He recalled the chic, black-tie dinner parties that the famed Studio 54 would host on nights before the general public was granted admission. Using that as his creative spark, Sutka defined his vision as “sparkly sleek,” beginning with a long mirror-top table decadently awash with silver, glitter and shine that never misplaced its sense of elegance. • Create one big effect that will excite people. Mirror balls are one of the most stereotypical and frequently employed elements in disco-themed events. The reflectiveness and glitz was in perfect keeping with his vision, so Sutka used different-sized disco balls to create a standout artistic element suspended from the ceiling. • Make the food a feast for your eyes. Furthering the seamless glitterati effect, Sutka used edible glitter-covered bon-bons and towers of meringues as decorative table accents in lieu of flowers. Admittedly unable to resist going a bit over the top, he also placed cupcakes topped with metallic bon-bons in eyecatching silver skeleton hands. “You’ve always got to do a little bit more than you think because it’s a party and there’s this sense of excitement,” he says. 74

• Mix high-end elements with lower cost accents. “I love finding less expensive versions of really traditional things.” Sutka’s Golden Drop source list includes everywhere from Mary Mahoney to Target. It’s difficult to tell the high from the low, since Sutka created a total vision that far outweighed the sum of its parts. • You don’t always have to outsource. Don’t be afraid to replicate more expensive items using your own creativity or to alter items to fit your theme. Sutka put crystallized glitter on the meringues to create the effect he wanted. He advises that many of the table elements—such as the Swarovski crystal-adorned champagne glasses and silver mesh placemats—could be reproduced with a little artistic vision and willingness to experiment. Weddings & Events itweddings.com BEFORE: In the quest to capture the glitz-laden and adrenalinepacked essence of casino gambling, something invariably goes horribly wrong. The result is a tacky Vegas knock-off with neither the depth nor pizzazz of the real Sin City. AFTER: • Don’t be afraid to let your creative vision diverge. Forget Vegas. Harner was initially inspired by the HBO hit Boardwalk Empire—a series set in Atlantic City during the prohibition. However, once she saw the dining room of this Palm Beach home, her mind went in a different direction. The dining chairs were covered with lavish red and gold fabric, and she found gorgeous nineteenth century Baccarat and Tiffany tableware. Pairing these components immediately created more of an elegant Monte Carlo casino atmosphere for dinner. • Reinforce the event theme in subtle ways. Harner’s primary aim for the dining area was elegance. A multilevel floral centerpiece with hydrangeas, deep red lilies, and orchids added to the room’s sophistication and created a whisper of romance when combined with candles. Nods to the casino night theme could be found in the place cards, menus and cocktail napkins, all with a playing card motif. • Pair the expected with the unexpected. After dinner, the stakes were higher. Guests were handed a Tobacco Kicker as they stepped into the decadent world of gaming. The lure and life of a casino night event are clearly the gaming tables, but that doesn’t have to be the only entertainment element. A Cuban cigar roller added spice to the evening as guests bet on a good time. Heather Lowenthal, Posh Parties and Paper poshpartiesonline.com BEFORE: While childhood tea parties were for fun and giggling, the adult version seems to have misplaced its joviality. Uncertainty regarding how much to crook your pinkie has made it more of an etiquette pop quiz than an enjoyable event. AFTER: • Change the mood. “I felt like the second you walked in to this tea party, you wanted to feel hip, cool and fun in a mingling atmosphere.” Lowenthal selected Pan’s Garden in Palm Beach as the venue for her upbeat event. She believed the outdoor setting would mesh with the lively table decor she had planned and encourage guests to interact with each other and the environment. • Repurpose traditional elements, and introduce the unexpected in its place. What would a tea party be without teapots? Rather than eliminate them, Lowenthal used a collection of white teapots and filled them with flowers for centerpieces. For the actual tea, she created a tea bar. She found large decanters and filled them with contemporary flavors such as Blueberry Kona Pop Tea Blend, Jasmine Strawberry Lemonade Green Tea Blend and Blackberry Mojito Green Tea. • Mix and match. Lowenthal incorporated a modern mix of different colors, materials, sizes and patterns on her table. She paired colorful floral-patterned plates with two cups for tea—one a fleurde-lis green juice glass and the other a hand-painted floral market goblet. • Use market-fresh elements. Lowenthal suggests attempting arrangements on your own. After selecting your vessel, browse the flower selection at Whole Foods or in the coolers at your local florist for options that match the color scheme and vibe of your event. • Menu. Mini turkey burgers and cranberry chutney, avocado fries served in a cone and chocolate-covered cheesecake lollipops. • Envision your event as if you’re a guest. “What’s going to happen when they walk in the door? What are they going to eat? TopTables Our food and spirits critic picks his 10 favorite area restaurants. By Mark Spivak

I began reviewing restaurants for this magazine in March 2001. Coming to restaurant journalism from a background in the restaurant business, I had very high standards. I also had a great deal of empathy for the many factors that cause dining establishments not to function at their peak, but that understanding was always tempered with the realization that customers were reaching into their pockets and forking over hard-earned cash. Here’s what I can tell you: These are the good old days. The standards of food, service and wine selection in Palm Beach County have never been higher than they are right now. Looking back on the “best” restaurants of a decade ago, I realize that many are no longer with us. Those that have survived are called upon to live up to the standards of today. Our best restaurants now are expected to do more with less, and the pressure to perform is constant and unrelenting. In alphabetical order, here’s a snapshot of the current stars of the local culinary landscape:

32 EAST, Delray Beach When 32 East opened, it seemed to defy all the rules: It looked more like the corner pub than an elegant fine-dining establishment, and the menu changed constantly, eliminating the possibility of signature dishes. Fifteen years later, it has completely reshaped the South County restaurant landscape. Chef Nick Morfogen’s daily menu is a fountain of creativity and has inspired a new generation of farm-to-ta

ble eateries. Service is warm and gracious, and the bar scene is the liveliest in the area. This remains a remarkable dining destination. Dishes: Morfogen relies on local seafood, farm-raised produce and free-range meats, with an emphasis on assertive flavors. Wine list: A roll call of the finest small-production California wineries, put together by owner Butch Johnson and General Manager John Bates.

ANGLE, The Ritz-Carlton Palm Beach The second incarnation of Angle is even better than the original, which is no small feat. Much of the credit is due to the talent of Executive Chef Ryan Artim, who has been at the hotel since 2006. He uses market-fresh ingredients to create a subtle, intriguing blend of Florida and Mediterranean cuisine, changing the menu with the seasons. The plates are carefully conceived and beautifully presented, with no detail overlooked or out of place. The room is striking, with warm earth tones and gold accents, and offers something for everyone. Intimate banquettes line the walls; if you need to make new friends, head for the communal Onyx Table that dominates the center of the room. Service, in a word, is charming—relaxed, cheerful and unhurried. Dishes: The menu changes frequently but generally features fresh local shellfish, line-caught fish, several pastas (try the sheep’s milk ricotta gnocchi, when available) and a selection of carefully sourced meats (don’t miss the lamb ribeye). Nicole. What makes this a great restaurant is its consistency. Have the Dover sole tonight, come back in several years and the dish will be flawlessly executed and seem to be virtually identical. Despite the restaurant’s enormous popularity (weekend nights in season, book two or three weeks ahead), customers are treated even-handedly and without affectation. Dishes: Homemade boudin blanc and duck foie gras terrine; Dover sole meuniere; lobster fricassee with lime and Sauternes sauce; roast duck with thyme and honey. Wine list: More than 300 selections compiled by David Leverrier, focused on wines from France and California.

BUCCAN, Palm Beach

BISTRO CHEZ JEAN-PIERRE, Palm Beach Jean-Pierre Leverrier began his restaurant apprenticeship at 16 in his native Normandy and worked in some of the leading eateries in Montreal before coming to South Florida. He opened his own establishment in Palm Beach in 1991. Chez Jean-Pierre is the quintessential family restaurant. Son Guillaume assists his father in the kitchen; his brother, David, runs the front of the house with his mother, 80

The buzz began when Chef Clay Conley announced he was leaving Miami’s Mandarin Oriental to come north, and it continues to this day. Conley’s culinary interests are farflung and eclectic, blending touches of South America, the Caribbean and Asia with innovative American cuisine. His seasonally changing menu places emphasis on small plates, and diners are encouraged to experiment and share. With the open kitchen, crowded bar, boisterous atmosphere and cutting-edge fare, you may think you’re in Manhattan or San Francisco rather than Palm Beach. Dishes: Hamachi sashimi; shortrib empanadas; mushroom pizza; head-on U7 shrimp. Wine list: Carefully crafted, with slightly more than 100 selections.

a complex medley of sound that is almost overwhelming. Buonasera is a soprano, rendering a clear, precise and pure message that is resonant and memorable. Buonasera is the sister restaurant of Paradiso in Lake Worth, and both are owned jointly by Chef Angelo Romano and Antonio Tasca. Much of the credit in Jupiter goes to Leonardo Cuomo, a protegée of Romano’s, who believes in sourcing the best possible ingredients and treating them with “respect and love.” The wait staff is formal and gracious in the Old World manner, and a meal here is a delight. Dishes: Portugese octopus; fettucine with a veal and tomato ragout; milk-fed veal chop; American bison prepared two ways. Wine list: 600 classics from all regions of Italy, with a strong California section.

CAFÉ BOULUD, Palm Beach

CASA D’ANGELO, BOCA RATON

As it approaches its tenth anniversary, Café Boulud is better than ever. Jim Leiken has taken over from Zach Bell as chef de cuisine and brought a fresh and refined sensibility to the menu. It still changes regularly and is divided into four categories: La Tradition (classic and country cooking), La Saison (rhythm of the seasons), Le Potager (inspired by the farmer’s market) and Le Voyage (world cuisine). This allows Leiken to juxtapose a torchon of foie gras with a grilled, feather-light fillet of loup de mer and to place a lobster and lemongrass vichyssoise on the same menu as steak frites. Dining outside in the courtyard of the Brazilian Court hotel remains one of Palm Beach’s grand experiences. Dishes: Daniel Boulud’s smoked salmon; peekytoe crab salad; duo of prime New York strip and wagyu short ribs.

Exactly how good a chef is Angelo Elia? For one thing, he’s good enough to maintain two of the best Italian restaurants in the area at separate locations (Boca Raton and Fort Lauderdale), not to mention a newly opened, Romanstyle trattoria in Delray Beach. For another thing, his organizational and training skills are so rarified that you won’t be able to determine if he’s at the range on any given evening. His Boca outpost is in the capable hands of Americanborn Rickie Piper, who grew up in Rome and attended culinary school there. The ingredients are fresh, the execution is nearly flawless and the remarkable food is served by a corps of gracious Old World waiters. Piper focuses on “quality, regardless of food cost,” and the menu is augmented by a substantial list of daily specials.

ECHO, Palm Beach In The Breakers’ collection of world-class restaurants, Echo is the jewel of the Orient. The Pan-Asian menu blends elements from China, Japan, Thailand and Vietnam. Normally, it’s hard to do a good job on more than one of these cuisines at the same time, but you won’t find a misstep at Echo. The restaurant bills itself as serving “resounding Asian cuisine,” an excellent and truthful description. Service is under the watchful eye of David Thall, who has managed the place since its opening in 2000. As a bonus, Charles Steadman, one of the area’s top mixologists, plies his trade at the Dragonfly Lounge. Dishes: Sushi and sashimi; dim sum; Cantonese black cod; Thai roast duck; Echo fried rice. Wine list: A balanced and well-chosen selection compiled by Virginia Philip, master sommelier for The Breakers.

LA SIRENA, West Palm Beach More than a decade ago, Marcello and Diane Fiorentino took charge of the restaurant established by Marcello’s parents in 1986. Marcello has distinguished himself by his prodigious work ethic, his careful sourcing of the best and freshest raw materials and his profound respect for the past—not just his family’s culinary traditions but also the repertoire of classic Italian cooking. Diane has distinguished herself as well, presiding over a dining room that combines precision and warmth. A meal 82

here is a return to the standards of formal dining, with every dish prepared to order and impeccably served. Dishes: Fettucine Bolognese; yellowtail snapper; Veal Zingara; ricotta di bufala cheesecake. Wine list: 800 of the great wines of Italy, along with gems from France and California.

LITTLE MOIR’S FOOD SHACK, Jupiter This is the only local restaurant where I would actually wait for a table. To be fair, I’d probably have to, because on any given evening the line is out the door and around the block. Chef/owner Mike Moir, formerly of the Reef Grill, serves some of the best seafood around. The menu is influenced by his travels in Asia and exudes a strong Caribbean, down-island vibe. Decor is casual and funky, service is friendly and one bite of this screamingly fresh food will reveal why the 50-seat room is packed from open to close. Dishes: Lobster eggrolls; Cajun seafood bowl; sweet potato-crusted fish; chocolate whosiwhatzit. Wine list: Is overshadowed by the fine selection of craft beers. u

Determining the perfect moment to drink a bottle of wine can be one of trickiest endeavors on Earth. The wild cards are almost endless—region, producer, vintage and style are all factors, and storage conditions also play a key role. As a result, both amateurs and connoisseurs frequently make mistakes. Sometimes our curiosity gets the better of us, and we consume wines in their infant stage; just as often, we hang on to our favorites too long and drink them past their peak. Assuming proper handling and storage, the following wines should be showing their best right now. Some are current releases, while others are classics that have matured over time. In selecting the older vintages, a major criterion was that the wines had to be available at a range of retailers, either locally or by mail order. Price also was a factor. Although 1982 Château Latour may be superlative at the moment, few of us are going to pay $2,500 per bottle for the privilege of experiencing it. Littorai Pinot Noir, Cerise Vineyard, Anderson Valley, 2006 ($75) Ted Lemon of Littorai just might be making the

best Chardonnay and Pinot Noir in California. Lemon apprenticed at Domaine Dujac, became the first American to work as a vineyard manager in Burgundy, and then came home to start his own winery. The Cerise is medium-bodied and rich, with unctuous flavors of black fruits and kirsch offset by excellent acidity. Like many of Littorai’s offerings, it only shows its best after five or six years in the bottle. Hidden Ridge Cabernet Sauvignon, Sonoma, 2007 ($40) Hidden Ridge is an exercise in “extreme winemaking.” The vineyard is located off Spring Mountain Road in the Mayacamas Mountains at an elevation of 2,400 feet and a slope of 55 degrees. It only is accessible by four-wheel drive vehicle and helicopter. It’s a powerful expression of mountaingrown Cabernet, with tart blackberry fruit, dusty tannins and sweet notes of powdered cocoa emerging on the long finish. Te Koko Sauvignon Blanc, Cloudy Bay, Marlborough, New Zealand, 2009 ($50) At first glance, Te Koko breaks all the rules. malolactic fermentation, and even aged for 18 months in barrels before release. The result is an amazing style of New Zealand Sauvignon Blanc—full-bodied and spicy, explosively aromatic, bursting with bright acidity and juicy citrus. It’s a wine with an Old World soul and all the exuberance we’ve come to expect from New Zealand’s signature grape. Charles Heidsieck Blanc des Millénaires, 1995 ($200) Blanc des Millénaires is a blanc de blancs, or a Champagne made exclusively from Chardonnay. Only four vintages have been produced in the modern era (1985, 1990, 1995 and 1999). It displays scents of vanilla and citrus on the nose, along with whiffs of brioche. It is ripe and fullbodied on the palate, with terrific acidity and mineral backbone; flavors of lemon, quince and bitter almond

linger on the finish. Decant this for the best results, and you will be rewarded. Clos de la Siete, Argentina, 2008 ($18) Craving flavor? Looking for a chewy and extremely well-made red at a remarkably reasonable price? Pick up a bottle of Clos de la Siete, an estate (really a collection of wineries) overseen by superstar winemaker Michel Rolland in Tunuyan, 50 miles south of Mendoza. Densely concentrated, filled with flavors of dark berry fruit and hints of plum, leather and chocolate, it makes a perfect match for grass-fed beef, lamb and slow-cooked stews. Kistler Sonoma Mountain Chardonnay, 2009 ($65) Steve Kistler first gained fame as a Pinot Noir producer, but this Chardonnay will take your breath away. It explodes in the mouth with bursts of citrus, yet the acidity is high, the texture is tight and bracing, and the mineral core is firm. In a blind tasting, this could pass for a top white Burgundy. Château des Jacques Moulin-à-Vent, 2009 ($25) Think all Beaujolais is Nouveau? Think again. The 10 crus are remarkably age-worthy, and a good Moulinà-Vent can last nearly a decade. When Louis Jadot expanded into Beaujolais with its purchase of Château des Jacques, it brought the respectability of a great Burgundy producer to one of the world’s most underrated wines. Bursting with flavors of strawberry, raspberry and tart red currant, the 2009 will be satisfying for years to come.

Northstar Merlot, Columbia Valley, 2007 ($50) This is a Merlot for Cabernet Sauvignon drinkers— concentrated and powerful, yet elegant and balanced at the same time. Flavors are intensified during the growing season by as much as a 40-degree swing between hot days and cool nights. It’s so good that even Miles from Sideways would like it. Bertani Amarone, 2003 ($110) Expensive? Sure, but consider this: This Italian beauty is only made in exceptional vintages, using the best grapes of the harvest, and spends up to eight years in cask before release. The reward is a wine both rich and bone-dry, infused with seductive hints of walnut husks and dried plums, equally at home with game dishes or strong cheeses. Joseph Drouhin, Beaune Clos des Mouches Blanc, 2009 ($80) Despite a widespread and necessary level of commercialization, every major Burgundy négociant has at least one wine that aspires to greatness. In Drouhin’s case, it’s the white Clos des Mouches. Profound minerality, striking acidity and sumptuous flavors of citrus and stone fruits make it distinctive from the moment of release. It can last and improve up to 10 years in a good vintage. Lemelson Pinot Noir, Thea’s Selection, Willamette Valley, 2009 ($30) Silky and smooth, this wine exhibits flavors of black cherry, raspberry and red plum against a solid mineral backbone. It goes equally well with salmon and white or red meats, and is an absolute pleasure to drink. If you’ve heard people raving about 2009 in Oregon, find out what all the fuss is about.

Casanova di Neri Brunello, Tenuta Nuova, 2005 ($75) Giacomo Neri inherited his father’s wine estate in 1991 and took it to a higher level, combining traditional techniques and modern innovation. The Tenuta Nuova, from a vineyard planted in 1985, is a riveting expression of Brunello di Montalcino—full-bodied yet seamless, with soft tannins and beautiful fruit. Domaine Sigalas Assyrtiko-Athiri, Santorini, 2010 ($20) This is definitely not your father’s retsina. The Sigalas winery was founded on the island of Santorini in 1991 and has become one of the leaders in the Greek wine renaissance. This white blend is richly concentrated, with a great deal of ripe citrus, palate weight and character. Château de Beaucastel, Châteauneuf-duPape, 2001 ($150) Beaucastel is the benchmark in Châteauneuf-duPape, as well as one of the world’s greatest wine estates. Dating to the sixteenth century, the vineyard produces wines with a high percentage of Mourvèdre and the capability for long-term aging. The 1989 and 1998 were classics, but the 2001 is not far behind: full-bodied and powerful, crammed with flavors of

blackberries, cherries, Provençal herbs, truffles and earth, it is a magnificent wine when paired with game, beef and slow-cooked stews. Les Tourelles de Longueville, Pauillac, 2007 ($45) Sometimes pedigree counts for everything. If you didn’t know that this was the second label of Château Pichon-Baron, you’d certainly figure out quickly that it was the product of well-placed vineyards and impeccable winemaking. Primarily Merlot, it is elegant and beautifully proportioned, with ripe blackberry flavors balanced against chalky tannins and toasty oak. Turnbull Cabernet Sauvignon, Oakville, Napa Valley, 2008 ($40) Turnbull is a remarkable bargain, considering that it comes from Oakville and its illustrious neighbors include Far Niente, Plumpjack and Dalla Valle. The 2008 is soft and supple, with spicy black fruit flavor packaged in an approachable style. Nicolas Feuillatte, Brut Champagne Cuvée Palmes D’Or, 1990 ($225) This luxury cuvée from Nicolas Feuillatte is a 50/50 blend of Chardonnay and Pinot Noir. It is produced only from the best wines in exceptional vintages and

is the ultimate expression of the house style. Full-bodied and vibrant with a featherlight texture accented by hints of sherry, it is a stunning Champagne at the peak of perfection. Liberty School Cabernet Sauvignon, Paso Robles, 2009 ($15) Cynics say that there’s no inexpensive California Cabernet worth drinking, but Liberty School proves them wrong. Grown and bottled by the Hope family, it is brimming with blackberry essence, crushed fresh herbs, bright acidity and integrated tannins. It’s delicious by itself or as an accompaniment to steaks, chops and grilled meats of all sorts. Pascal Jolivet Sancerre, 2010 ($25) Jolivet is the gold standard in Sancerre and the benchmark for unoaked Sauvignon Blanc—from the Loire Valley or anywhere else. The product of natural winemaking, it is filled with brilliant acidity and luscious citrus flavors; it’s a perfect match with creamy goat cheese, river or lake fish, and all types of shellfish. Marquis D’Angerville, Volnay Champans, 2008 ($90) Yes, Burgundy is a minefield—it is expensive, unpredictable and difficult to understand—but when you find a producer you like and trust, all will be revealed. The wines from D’Angerville are consistent and reliable, even in marginal vintages. In good years, they exemplify the combination of power and delicacy that makes Volnay so intriguing. This 2008 contains bright flavors of red fruits and earthy hints of mushroom and truffle that will amplify as the wine ages. u

North stars A quality revolution burnishes the image of Washington State wines. By Mark Spivak

Although Oregon seems to get most of the attention in the Pacific Northwest, Washington State in recent years has emerged as one of the most exciting wine regions in the country—if not the world. A majority of the state’s 700 wineries are located in the rain shadow of the Cascade Range. They benefit from consistent temperatures, long sunny days and a latitude very close to that of Bordeaux, and they are turning out wines ranging from everyday bargains to world-class collectibles. Washington’s largest producer is Ste. Michelle Wine Estates, a collection of properties including Columbia Crest, Erath, Red Diamond, Snoqualmie, 14 Hands and Northstar. Founded in 1934, Chateau Ste. Michelle itself is the state’s oldest winery. While Chateau Ste. Michelle makes fine single-vineyard offerings such as Canoe Ridge, Cold Creek and Horse Heaven, it is also known for terrific entry-level wines, such as its Riesling ($10), dry Pinot Gris ($13) and powerful yet balanced Cabernet Sauvignon ($15). The quality revolution in Washington really started in the 1970s with Quilceda Creek. Alex Golitzin, nephew of legendary California winemaker Andre Tchelistcheff, began making wine at home, and bottled his first commercial vintage in 1979. Today, Golitzin produces about 5,000 cases of a Cabernet Sauvignon that has been de94

scribed as opulent, multidimensional and awe-inspiring—which is hard to find, even with a $200 price tag. Continuing that tradition is Leonetti Cellar, founded by Gary and Nancy Figgins in 1977. Leonetti is now the most famous winery in Walla Walla, best known for concentrated reds that reflect their Italian heritage. Chris Camarda established his tiny Andrew Will Winery in 1989, naming it for his son Will and nephew Andrew. He works with nine carefully selected sites in the Columbia Valley, crafting blends of Cabernet Sauvignon, Cabernet Franc and Merlot, including Two Blondes ($60) and Sorella ($75). Like Andrew Will, Cadence was born of a passionate belief in the land. The husband-and-wife team of Benjamin Smith

and Gaye McNutt purchased land on Red Mountain in 1997 and make Bordeaux-style blends of remarkable depth and intensity. On the more reasonable end of the price scale, Charles Smith is one of the most exciting new winemakers in the state. While he has received accolades and high ratings for his pricey single-vineyard Syrahs, his basic offerings are both food-friendly and delicious. Start with his Kung Fu Girl Riesling or Velvet Devil Merlot (both $13), and move on

to his more substantial Chateau Smith Cabernet and Boom Boom Syrah (each around $16). Another notable new winery is Mercer Estates, founded by the Mercer family in partnership with Mike Hogue after he left Hogue Cellars. The Mercer wines are carefully crafted and affordable, ranging from the crisp Sauvignon Blanc and Pinot Gris ($13) to the well-made Cabernet and Merlot ($21). Visiting Washington State is a delight and sometimes resembles a journey through

the Napa Valley of 30 or 40 years ago. The Columbia Valley AVA (American Viticultural Area) covers nearly one-third of the state, with five subregions: Walla Walla Valley, Horse Heaven Hills, Wahluke Slope, Lake Chelan and the Yakima Valley. Unlike the Napa Valley of today, most wineries are small operations that don’t offer commercial tours. Plan your route and make appointments, and your experience will more than make up for any lost spontaneity. u

Hawaiian fusion restaurants in South Florida historically have been as rare as exotic dining venues in Wellington. Now, all these elements come together at the Pangea Bistro. The peaceful interior of this 60-seat oasis contrasts sharply with the bland decor of The Mall at Wellington Green. Glass-topped tables and wicker-backed chairs rest on a black slate floor, framed by walls of beige wood. An inviting bar anchors one corner of the room, and there’s plenty of terrace seating for diners to relax in fine weather. Chef Ryan Vargas is a graduate of the Culinary Institute of America and has done stints in Hawaii, Las Vegas and Palm Beach. He brings a daring sensibility to ingredients and dishes that have become standard in the hands of many of the area’s chefs. Using artful technique, creative presentation and a carefully controlled zest for spices, he brings another dimension to the dining experience. This is obvious from the beginning with complimentary tos-

tones (plantain fritters) served with a spicy mayonnaise, or the rolls accompanied by what our server dubbed “kim chee cream cheese”—a fluffy, whipped spread enhanced with Korean spices. For starters, don’t miss the Hawaiian ahi poke ($16), cubes of pristine raw tuna drizzled with a reduction of balsamic vinegar and soy sauce. Enlivened by a wasabi aioli, they are placed on crunchy flatbread with a layer of Asian slaw. Equally satisfying are the samosa ($10), a stuffed pastry native to India. Vargas fills them with curried potatoes and vegetable masala, and serves them with a cool, refreshing mixture of yogurt and cilantro.

Don’t confuse this with the coffee liqueur—a kalua is a Hawaiian cooking method that uses an underground oven; the meat is usually salted and wrapped in banana leaves. The result at Pangea is duck with crisp skin and a soft, luscious texture to the meat, served with wok-fried vegetables in a sweet and sour pomegranate sauce. The Hawaiian-style snapper ($26), delicately cooked and served on a bed of baby bok choy, is dressed in a light ginger broth and accompanied by jasmine rice. The conventional dessert selection includes standards such as Key lime tart ($8), chocolate mousse ($8) and tres leches ($8). We finish up with the strawberry shortcake trifle ($8), which arrives in a glass layered with a Grand Marnier and vanilla bean-inflected mascarpone. Roughly 30 wines are featured on the list, mostly mass-market bottles offered at reasonable prices. A bottle of Villa Maria Sauvignon Blanc from New Zealand ($30) provides the acidity to stand up to the range of assertive flavors in the food. Many of the wines are offered by the glass, and there’s a full bar with an interesting selection of designer martinis. Service is delightful. The staff clearly enjoys their work, and they have the confidence of a first-class product to back up their enthusiasm. They are adept in guiding customers through an unfamiliar menu and willingly offer personal recommendations on their favorite dishes. Open since December of 2010, Pangea Bistro amplifies the local dining scene. Designed to be a casual gathering spot of locals and visitors alike, the menu features comfort food, all created in house using locally sourced ingredients from places like Swank Specialty Produce and McCoy’s Sunny South Apiaries in Loxahatchee, Palmetto Creek Farms in Avon Park and Heritage Farms in Lake Worth. The result is a menu that changes seasonally, offering guests fresh flavors throughout the year. Current menu standouts include clambake chowder using Florida clams and shrimp, shepherd’s pie, and housemade spaghetti and meatballs. The dark interior features a Chicago brick wall and elements created from reclaimed wood to give it a warm yet classic feel. The front is dominated by patio seating, which, set back from the street, provides a nice place for dinner, drinks and people watching. Behind the bar, there are around 50 wines available by the glass and 150 by the bottle, craft beers, and creative house cocktails featuring fresh fruit infusions and new takes on classic favorites. Boca Raton has a new taste of the Old Country with the opening of Josef’s Table in the Polo Shoppes. Headed up by Chef Josef Schibanetz, the menu is “European fusion” but leans toward Austria in its influences, thanks to the Viennese-born chef, who started working in kitchens with an apprenticeship when he was 15 years old. Menu highlights include Wiener Salon Goulash with a Hungarian paprika sauce and fresh herb spaetzle, as well as the roasted half duck with a fig and port wine sauce. Daily specials also are offered. To pair with the food, there are 29 wines offered by the glass, and the whole wine list is made up of small batch wineries and hidden gems. Cod and Capers Seafood, the popular Palm Beach Gardens seafood market, has moved to a new location on U.S. Highway One in North Palm Beach.
