In GIA’s history, very few polished diamonds of gem quality have surpassed the 100-carat mark. Already part of an elite group due to its size, the highly transparent nature of this diamond adds to its rarity. This pure diamond is classified as type IIa which scientifically means it is lacking measurable levels of impurities like nitrogen, thus giving this diamond its pure white color.

This diamond was fashioned into a classic old world cushion cut, with its smaller table and open culet. Its faceting bears resemblance to other world-renowned diamonds, such as the 45.52 carat Blue Hope Diamond and the 105 carat Koh-I-Nur.

Palm Beachers, we did it. We got through a remarkably robust season that crammed in every dinner dance, gallery opening, and fashion show that we’d missed out on in the past two years—and emerged fuller for it. For us at Palm Beach Illustrated, it was an especially auspicious year: In addition to all of the above, we packed the calendar with multiple parties and dinners to celebrate our seventieth anniversary. Though some days felt like we couldn’t possibly squeeze in one more thing, it was so good to be able to be among friends and to feel safe again. Now that everything is settling down, it’s fun to look back at some of the accomplishments of last season. Beyond the millions raised for worthy causes, some of our neighbors put the wheels in motion for important, highly visible projects—including the one we spotlight this month. Palm Beach native Kent Anderson, along with his wife and partner, Samantha, and a committee of friends and philanthropists, formed the Project Paradise Film Fund, which distributed a $25,000 grant to shed light on critical conservation issues. The winner of the grant, Brent Fannin, collaborated with the Project Paradise crew to produce the documentary The Water State about preserving Florida’s wild springs. Having viewed the film during one of Project Paradise’s private previews, I can only say “Go see it.” It’s short but effective, and it speaks loudly of the urgency facing our springs and our water supply. Turn to “Focus on Water” on page 60 to learn more about these passionate young people and their call to action. As we wind down from season, we have more time to relax with friends over a great meal or cocktail. For the latter, we have some suggestions. Our team, led by our executive editor and resident foodie Mary Murray, has compiled a killer guide to some of Palm Beach County’s most creative cocktails. If you enjoy unusual flavor profiles and innovative ingredient combinations, turn to page 68 for “Bar None” and plan out your next happy hour. As a bonus, we’ve included how-to videos of the cocktails, so you can see the artistry that goes into each glass. Just scan the QR codes, and you’ll be in the middle of the action. Here’s to more time to chill poolside—with a copy of Palm Beach Illustrated in hand, of course.

Husband-and-wife team Tom and Lisa Bowser of Jupiter started creating custom neon signs in 2016 after Lisa, who had been producing events for decades, came across LED neon and decided to be one of the first to bring this new technology to market. Started out of their garage, Brite Lite now has two offices in Jupiter and sells all over North America. Since launching, they’ve made signs for such A-list events as the Oscars and the Super Bowl, as well as pieces for some of the most recognized brands in the world including Google and Netflix.

West Palm Beacher David Plotkin began “playing with motorcycles” at age 26. “I had moved out of New York and was living in rural Connecticut, bored out of my mind,” he recalls. “I was always curious about antique automobiles, but at the time, I didn’t have the space, time, or money to embark on cars and trucks.” Plotkin caught the motorcycle bug after just one custom build and was soon spending every waking moment on vintage projects. His hobby turned into a business and eventually evolved into Burn Up Company when he relocated to West Palm Beach in 2012. Now, at his 11,000-square-foot facility, he and his team offer service, restorations, custom builds, motorcycle sales, and parts. “Most of our custom builds are sourced for or by our customers and built 100 percent to their specifications,” Plotkin says. “We also have some sidelining shop builds in the works, where our builders are able to showcase their talent. This kind of work combines art, science, and a lot of detective work. It’s not easy, but it’s highly rewarding when you get it right.” His favorite build to date is the Burn-1 Skycycle, for which he and his team combined a fuel tank from a fighter plane with a 1970 Honda CB450 mo-

Daniel and Catherine Moretz became interested in Haitian coffee when they bought I Need Coffee, a beloved coffee shop in Jupiter Town Centre. In their search for something similar to Jamaican Blue Mountain coffee, which they consider the best in the world, they came across Singing Rooster, a social enterprise supporting small coffee and cocoa producers in Haiti, which has a similar coffee-growing climate. They opted to serve Haitian Blue Mountain coffee in their shop and sell Haitian chocolate and art. But things got even more personal when Daniel read about the plight of Gonzalez Seignon, a metal artist in Croix-des-Bouquets who had fallen on tough times. He felt called to donate an entire year’s worth of studio rent to the artist, freeing him up to keep creating with fewer worries. Talk about a cup of coffee you can feel good about drinking. In the valleys between the peaks, Jackie would privately entertain her own second thoughts, but the realities of Colombia during the 1990s went a long way in assuring her of their decision. She was immensely proud of her heritage, but her heart broke for the turmoil rollicking her home country and its citizens. Her beloved homeland faced an uncertain future; which inspired Jackie to redouble her commitment to bettering hers in the U.S.

Under the waning February sunlight, the Cox Science Center and Aquarium at Dreher Park remained open, exclusively for Club Braman members and their families. Entering past two burnished BMWs, visitors were greeted not by the typical bustle surrounding the exhibits, but by a tranquil atmosphere that nonetheless belied what was to come. Those of age followed the signs to the open bar, while the young and young at heart headed straight to the mini golf course and interactive science exhibits framing the Cox Amphitheater.

toward strings, followed by brass in 2023. “This is a way to open the door for these students to begin to find out if this is what they’re meant to do,” Gottsegen says. “If I can make that happen, that’s great.” Education is one of PBS’s organizational pillars, and the group has impacted the lives of more than 56,000 students in recent years. But up until now, their educational programs have only extended to kids in kindergarten through twelfth grade. The addition of the Mary Hilem Taylor Scholarship Competition is an opportunity to promote the growth of South Florida’s college-age musicians, offering cash prizes and performance opportunities. The 2021 winners will perform in a chamber concert with PBS May 24 at the Norton Museum of Art’s Stiller Auditorium in West Palm Beach. Felicia Taylor Gottsegen remembers hearing her mother, Mary Hilem Taylor, play the flute—but she doesn’t remember watching her perform or even practice. “My mother used to play the flute in her closet because she was too shy to come out and play for anyone else,” Gottsegen recalls. “I would go listen to her just sitting there playing the flute, and it’s a memory I’ll always have of her.” When Taylor passed away in 2009, Gottsegen kept her flutes, even though she wasn’t sure what she might do with them. Then she moved to Palm Beach—a place Taylor had called home for 35 years—and found a new purpose for those beloved instruments. “I was told that the Palm Beach Symphony takes instruments,” Gottsegen says. “So I gave her flutes to the symphony, and they ended up with a fantastic musician.” Gottsegen says she broke into tears the first time she heard one of the symphony’s flautists, Joseph Monticello, play one of her mother’s refurbished flutes. “Joe and I have actually become dear friends,” Gottsegen notes. “He treasures the opportunity to play the flute as much as I appreciate him loving that instrument. It’s given the flute a new life, and that’s exactly what my mother would’ve wanted.” But giving her mother’s flutes a future was just the starting point for Gottsegen’s Joseph Monticello and plans to keep her mother’s music Felicia Taylor Gottsegen alive. In partnership with the Palm Beach Symphony (PBS), she created an annual scholarship to help college-bound musicians follow their dreams. “I wanted to do something in recognition of her because she was such a special person in my life and I want her to have an impact in perpetuity,” Gottsegen says. Last fall, PBS hosted the inaugural Mary Hilem Taylor Music Scholarship Competition, which Gottsegen’s family foundation funds in honor of her mother and to help ease the financial burden for music students across South Florida. The 2021 competition was for woodwind players, while the 2022 event will be geared

The Egyptians brewed beer, the Greeks and Romans were the earliest wine producers, and the Chinese were the first to make spirits, even using alcohol medicinally as a sedative and pain reliever. Throughout history, opinions on the safety of alcohol have ranged from total abstention (think: the

Your stomach lining absorbs everything you ingest and directs it into your bloodstream. The liver then breaks down and filters chemicals, drugs, alcohol, and any other toxins before they’re able to roam throughout your body. It does a very good job, but it can only handle so much. Overload it and these toxins are free to roam, affecting other organs as well as the liver itself. Heavy drinking is where the trouble lies. The liver can safely and effectively handle alcohol in moderation. The Centers for Disease Control and Prevention (CDC) defines drinking in moderation as 1 drink per day for women and 2 per day for men. What constitutes a drink? That would be 12 oz. of beer, 5 oz. of wine, 2 oz. of distilled spirits, and 3 oz. of Sherry or Port.

Here are a few other realistic principles to keep in mind: Cut the sugar. This not only lowers your chance of experiencing a hangover, but it also reduces calories. Opt for fresh citrus and club soda or sparkling mineral water instead of sugary juices and sodas. On the same note, stick to clear booze. The darker the spirit, the more congeners—impurities that are created during the aging process—which cause the liver to work harder and are more likely to cause a hangover. Choose gin, vodka, and 100 percent agave tequila to avoid congeners and additives. Finally, be a wine snob. Drier is better, as it’s lower in sugar and additives. Red wines, especially Pinot Noir, Merlot, Cabernet, and rosé, all contain the heart-healthy antioxidant resveratrol. The best dry white wines are Chardonnay, Sauvignon Blanc, and Pinot Grigio. Remember that the liver is the most regenerative organ in the body, so it’s never too late to improve its function by drinking less and supporting its health.

Combine all ingredients except club soda in a carafe. Allow to chill in the fridge for 4-6 hours. Serve in a tall wine glass and top with club soda.

BEET Hummus with Cruciferous Crudités

Preheat oven to 400 degrees Fahrenheit. Thoroughly wash and dry the beet. Using a parchment-lined baking sheet, drizzle beet with olive oil, sprinkle with salt, and bake for 1 hour. Rinse and strain chickpeas. Using a saucepan, add chickpeas, baking soda, and enough

While your chickpeas are boiling, add your lemon juice, minced garlic, and salt to a blender or food processor and let it sit while the chickpeas boil. This neutralizes the garlic a bit. The texture should be thick and creamy. If it’s too thick, add a little more ice water. Once the beet has cooled, remove skin and cut into cubes. Add chickpeas and the beet to your blender and blend until thick and creamy. Serve with cruciferous crudités such as broccoli, orange cauliflower, watermelon radishes, carrots, and cucumbers.

Using a juicer, juice the pineapple (including the core) and the turmeric. This can also be done in a blender and strained through a mesh sieve. This will yield about 2 cups pineapple turmeric juice.

Using a cocktail shaker, squeeze the lime and orange wedge and discard rinds. Add tequila to the shaker and fill 3/4 full with ice. Shake and strain over an ice-filled glass. Add 4 oz. of pineapple turmeric juice to the glass. You can also top with a splash of club soda, if desired.

hink “bank” and a few images come to mind: vaults, coffered ceilings, teller cages, and acres of dark wood. It’s the design aesthetic of old money, and it’s given even more gravitas when the clients are U.S. presidents. Such is the history of the Riggs Washington DC hotel (riggsdc.com), housed in the 1891 landmarked building that was once home to the capitol’s Riggs National Bank, which handled the finances of 23 presidents. This illustrious heritage did not go unnoted by Lore Group creative director Jacu Strauss, who helmed the property’s reimagining. Strauss preserved many of the original features of the Richardsonian Romanesque Revival building—one of few remaining in the city—including the iconic barrelvaulted lobby and coffered ceilings. Nods to the building’s past life are everywhere: a reception area recalls a teller window; decorative safes house minibars and, well, safes; and a giant medallion of the Goddess of Money looms in the lobby. One can even strike cocktail gold in the original bank vault, now transformed into subterranean bar Silver Lyan (silverlyan.com), undoubtedly one of Riggs’ high points. Mr Lyan (real name Ryan Chetiyawardana), of White Lyan and Dandelyan in London, has to be one of the most creative mixologists on the planet. Mr Lyan interprets a place’s history and culture into concoctions that have to be sipped to be believed. An example: While you wait for your Ceres Joker, the server brings you a

masked-bear figurine holding a helium balloon. The bear sways creepily until the Macallan- and sloe gin– based cocktail arrives. The server sets the string alight and the balloon detonates, releasing the scent of gunpowder into the drink. There are less dramatic ways to deliver a smoky cocktail, but where’s the fun in that? Riggs’ 181 guest rooms are modern interpretations of the early-twentieth-century style that informed the original building. The suites are inspired by first ladies, an inspiration that came to Strauss following a private tour of the White House. “I chose four lesserknown first ladies, but each had strong minds with regards to the atmosphere and culture they wanted to create in the White House,” he says. “I tapped into these legacies in an abstract way, to avoid creating a museum-like interior.” Like all interiors, it’s the small details that, when taken together, make a big statement. For instance, Strauss created “trophy cabinets” in Silver Lyan, displaying trophies women have received for such quirky things as a tractor-driving competition. He reiterated the building’s heritage through framed checks from Riggs National Bank (some more than 120 years old), which he’d collected over the years and installed on the wall behind the reception desk. “Riggs came with a rich history from its time as a bank during the golden ages and the architectural expression that came with it,” Strauss says. “I wanted to contrast this with aspects that were more playful [and] surprising moments throughout the hotel.” «

People—though latecomers in the history of the springs—also depend on the seemingly unlimited supply of fresh water bubbling from the state’s vast underground aquifer as a source of drinking water and a playground for snorkeling, kayaking, swimming, and scuba diving. In a relatively short amount of time, chemical runoff and over-pumping have poisoned some of the springs, rendering them dank, drained pools of algae and muck. The remaining healthier sites are on the same course, according to Brent Fannin, a passionate advocate of the springs and recipient of the inaugural $25,000 Natural Florida Film Grant awarded by the newly formed Project Paradise Film Fund, a Palm Beach nonprofit working in conjunction with the Community Foundation for Palm

Fannin, a resident of Gainesville and frequent visitor to all of the state’s springs, is direct in his pitch to preserve the precious ecosystem. When viewers watch his 10-minute documentary, entitled The Water State, he wants them to “cry, freak out, and be moved to action.” One of the words he focuses on in the film is “extinct,” he adds, “because that’s what will happen to these springs and our drinking water

will be gone. We’ve been abusing our national resources and we will feel the consequences.” Human development is the primary cause of the destruction of the springs, according to a report by the nonprofit Howard T. Odum Florida Springs Institute, which is dedicated to documenting the health of the springs and educating the public. The report notes that while the flow rate, mineral content, and geography of the springs varies from region to region, nearly all the sites are suffering from impacts related to development and increased pollution. The potential damage affects 53 counties and more than 42,000 miles. Fannin created his own nonprofit, Keepers of the Springs, in 2019 with his friend, David Cobiella, to organize clean-up efforts at the

springs. He believes his documentary is another avenue to further increase public awareness statewide. “The first time I saw the springs, I was blown away by how beautiful they are,” he says. “Whenever I take people there, I ask them if they know that Florida has the highest concentration of freshwater springs in the world, and 90 to 95 percent have no idea.” But this interesting fact aside, Fannin says it’s more important to understand that the springs are an indicator of the health of the aquifers, the source of 90 percent of our drinking water. Telling the story through a visual medium like a documentary allows visitors to see the stunning beauty of this necessary resource, as well as the effects of human abuse. Project Paradise Film Fund is the brainchild

of Palm Beach native Kent Anderson. After working with GEOS Foundation to produce a short film in Mozambique about rhinoceros counter-poaching operations, he began thinking about pairing his skills in filmmaking with philanthropy and conservation. “When I met with this group of like-minded individuals here in Palm Beach [including sister Bettina Anderson], I realized we have our own conservation needs and stories in our backyard that need to be told,” Anderson says. “I pitched the idea to do these film grants and we started Project Paradise.” The eight members of the film fund committee jointly select the winning stories they think will make the most effective documentaries highlighting the state’s environmental PALMBEACHILLUSTRATED.COM | MAY 2022

concerns. Together, they narrowed down the initial 60 submissions for the inaugural grant. “It was close,” says Anderson. “We had so many great pitches and we hope these applicants will apply again because we want to eventually produce several films a year.” A few factors tipped the scale in Fannin’s favor. “It was achievable,” Anderson notes, because it didn’t involve waiting for a particular season or hunting for a rare species. But it was the strength of Fannin’s conviction that stood out in the final group of five finalists. “He was very passionate and knowledgeable and had a clear vision about what he wanted to do,” Anderson says. “He also had a fantastic story.”

Kilo Content, founded by Anderson and his partner (and now wife) Samantha Cerny, provided production assistance, but Fannin wrote the script and directed the documentary. He also tapped Gainesville freelance underwater cinematographer and photographer Tessa Skiles to film it. She served as director of photography and operated the camera for all of the underwater shots, while Palm Beacher Will Fritz operated the camera for aboveground shots. With the team complete, they set out for a marathon three-day session last December, visiting and filming at 10 of the state’s springs, ranging from relatively healthy to what Fannin calls “dead.”

Skiles went into each spring, opting to free dive instead of using scuba gear for two reasons. First, traveling without gear meant the team could move quickly without encumbrances. Second, free diving creates a smaller underwater profile, so there is less risk of disturbing the wildlife. In the healthier springs, Skiles says she saw incredible biodiversity. But appearances are deceiving. “Just because the water is clear doesn’t mean it’s good quality,” she adds. Nitrogen and other unseen chemicals are still present. Sometimes, Skiles says, she emerged “very itchy” after being underwater. “I also got an ear infection that I still haven’t recovered from.” A few of the springs were

downright nasty. “Methane gas is trapped underneath the layers of mud and algae, and the smell is unbelievable,” she says. Skiles has her own history with conservation, something she says she was born to do. Her father, renowned underwater cinematographer and photographer Wes Skiles, was filming bull sharks for National Geographic in 2010 off the coast of Boynton Beach when he was found dead on the reef. “From a very young age, I had the drive to educate people about the environment,” she says. “When my father died, I was 17 and the need to carry on his legacy increased; it fueled the fire.” She reinstated her father’s production company,

Karst, and now operates it as her own. Equally passionate about the worsening condition of the springs, she and Fannin agree that change ultimately has to come from state government and voters need to make their voice heard at the ballot box. “I would love the governor to see this,” Fannin says. “I’d be honored if state representatives took 10 minutes to watch it. If it doesn’t move them, then I either didn’t do my job or they have hearts of steel.” Anderson plans to debut the documentary at a screening in Palm Beach, followed by several screenings around the state. “When we have more films, I’d love to have a film festival in Palm Beach,” he says. help Fannin distribute and promote the film via YouTube, social media, and other film festivals and also make it available on the Project Paradise Film Fund YouTube channel. “We’re not trying to make money. We’re just trying to get as many eyes as possible on the film,” he adds. “Eventually, we want to tell hundreds of short stories to provide a bigger picture of what’s going on in the state.” Short documentaries are the most effective way to accomplish this, Anderson believes, because people don’t want to take the time to watch longer educational films. “If you can’t make your point in 10 minutes, you risk losing people’s interest.” Anderson, Fannin, and Skiles are not blind to the fact that Florida development has been fast-tracked for decades and the state’s population only continues to grow, presenting them with an uphill battle against corporate interests and profit. But they believe improved farming methods, along with individual and corporate responsibility are all possible. “I’m putting all my heart and soul into this,” Fannin says. “2022 is our opportunity because it’s an insanely big voting year in the state.” Promoting public awareness through education is a start, Anderson says, but ultimately seeing is believing. He hopes the powerful and direct message of the documentary will inspire people to do just that. “For people who have never been to the springs, I hope they go, because if you see them, you want to preserve them.” «

SASSAFRAS Alex Protzer serves up a Southern Sour in the Avalon, an easy-drinking cocktail that celebrates the root beer flavors of sassafras. She infused Redemption Bourbon with sassafras bark, clove, star anise, and cinnamon sticks before combining it with house-made sour mix, sassafras simple syrup, bitters, some brûléed peach, and egg white. She reverse dry shakes everything before double-straining into a coupe glass and garnishing with sassafras bark, a peach slice, and edible flowers from Swank Farm. These aromatic garnishes set you up for that first taste, notes Protzer. Her colleague, Gabriel Prado, also utilized fragrant finishes in his Indigo Fairy, a lavender martini that he enjoys making for serious gin drinkers. Two Palm Beach newcomers host a charitable dinner party aboard their yacht and share their passion for the water with guests BY MICHELE MEYER PHOTOGRAPHY BY JERRY RABINOWITZ

Marsha Serlin and Jerry Sloan await the arrival of their Ultimate Dinner Party guests on board their yacht, the MTL.

“B

arefoot is best,” the invite for Marsha Serlin and Jerry Sloan’s Ultimate Dinner Party suggested. Yet shod or not, nothing was ordinary for the couple’s elegant evening to support Children’s Home Society of Florida (CHS) aboard MTL, their 112-foot, tri-deck Ocean Alexander 34R. Their gathering was one of many taking place that night, with funds benefiting the organization’s mission to help keep families safe, strong, and together. Serlin—who serves as CEO of United Scrap Metal, a top industrial recycling company she launched in 1978 with $200 and a rental truck—says the “barefoot is best” prompt was born out of practicality and safety. “We didn’t want anyone falling down, and they all listened,” she says. “The women wore beautiful dresses, but no shoes. We had so much fun.” Indeed, Serlin, Sloan, and their 10 guests—none of whom they’d met before—were laughing so hard by dinner’s end that they remained in the yacht’s dining room despite musical lures of the band Euphoria performing covers from Van Halen to Frank Sinatra on the upper deck, where dessert finally was served. Delray Sands Resort in Highland Beach, crafted the four-course meal. King began with a mixed seafood ceviche and progressed to calabaza squash gnocchi, followed by Texas Wagyu and Caribbean lobster. The meal concluded with a trio of desserts. The three-hour affair would’ve lasted even longer if rough waves hadn’t doused the hosts’ plan to take the yacht on a short cruise. But the evening’s quickly forged friendships have endured. “I cannot wait until the next time we have dinner together,” Serlin says. “They were all adventurous and willing to do something different.” So were Serlin and Sloan, for whom this was their first “fancy schmancy” affair hosted on their five-year-old yacht, MTL, which Serlin named for the lucrative business that enabled her to buy it. “We’re down-to-earth and no fuss,” Serlin notes. “We’d never had waiters in tuxedos on the boat before.” Their leap began with an invite from Jim and Gaye Engel, longtime friends and honorary chairs for the Ultimate Dinner Party. Over dinner at the Chicago luxury high-rise where they both live, the Engels made a case for Serlin and Sloan to get involved with CHS and this beloved event. “Jimmy knew how to twist my arm,” Serlin says of his pitch for the charity. The Engels also knew of Serlin’s largesse for other child-related causes, including the Ronald McDonald House Charities, After School Matters, and the Children at the Crossroads Foundation. She also gives to the Lyric Opera of Chicago and the United Way/ 90

Since that night, Serlin has donated generously to Children’s Home Society of Florida, too. “We help families in crisis before they’re forced to relinquish their children to foster care,” says Loren Young, CHS’s special events manager. Among the charity’s biggest fundraisers, the annual Ultimate Dinner Party has raised more than $4.5 million over the past 29 years. For the 2021 event, nine homes, including MTL, were matched with top-tier chefs from local country clubs and restaurants. All of the guests started at one private residence for pre-dinner cocktails before splintering off into their smaller groups. Serlin and Sloan moved to Palm Beach two years ago, drawn by its beautiful surroundings, fine eateries, and “very giving people.” The couple still have two smaller yachts—Thumbs Up and Two Thumbs Up—that are docked in Chicago for cruising the Great Lakes. MTL is their only home in Florida, and the charity’s first yacht in many years was a hot ticket, Young says. “People are amazed we have a dining room that seats 10,” Serlin says of the five-bedroom, 10-bath “boat” where they live seven to eight months out of the year. “It’s like having a luxurious apartment on the water. The only difference is that it moves, so if you don’t like your neighbors, you just leave.” While Serlin credits “a lot of wine and a dry sense of humor” as secrets to an event’s success, she and Sloan proved to be consummate hosts. Their oval dining table was conducive to conversation and featured centerpieces of 8-inch-high red roses from Love’s Flower Shop

of West Palm Beach. “I love color but also wanted people to see the person across from them,” Serlin says. Porcelain pagoda napkin holders were used as ornamentation on each plate, and the ship’s “detailoriented” chief steward created the origami napkin arrangements. jumped into the Jacuzzi with their clothes on.” Boats have long been a shared love for Serlin and Sloan, who met through Serlin’s sister and brother-in-law (a boyhood pal of Sloan’s) in Chicago in 1993. “One of the first things I asked was, ‘How big is your boat?’” Serlin recalls. When she learned it was only 22 feet, she informed him that wouldn’t do. “I’m a water baby, and if he wasn’t, we couldn’t be together.” Sloan pointed to a boat at a bridge and said, “Will that be big enough?” Serlin replied that yes, that would work. “A beautiful blonde, you can’t mess that up,” says Sloan, a retired motor fuel distributor. “But as we got to know each other, we learned of our mutual interests. I was a water baby when she told me I was.” Beyond his willingness to dive into a floating lifestyle, “a man who keeps you laughing is awesome,” Serlin says of Sloan. “He’s also smart, has good instincts, and feels at home in the engine room. He fills in my blanks and I do the same for him.” Like Sloan, Serlin is a Chicago native. She grew up the daughter of a men’s neckwear manufacturer and only discovered boating 94

of two, she juggled three jobs, couldn’t always pay her bills, and had her car repossessed and her house foreclosed. “Life wasn’t good, but those times make you stronger. You take care of yourself no matter what—a gift I got without knowing it.” Serlin remade herself via recycling after finding she could support her young children by gathering scrap from alleys and manufacturers. “I just fell into the scrap metal business and built my wealth by knocking on doors,” she says. Her philanthropy stems from that drive. “I had a hard start to my career, so I want to help others with similar challenges.” Following a successful first go, Serlin and Sloan would be open to hosting another Ultimate Dinner Party in the future. But there are other benefits, too. Their dinner aboard the MTL “not only made people into boaters, but now they want to go on trips with us,” says Serlin. The Palm Beach newcomers are fitting right in. After all, as Serlin notes, “the only difference between boaters and non-boaters is we wear different shoes.” Or, perhaps, none at all. «

while dating post-divorce in the late 1970s. “I love the water,” she says. “No matter how hard I worked, from Saturday afternoon till Sunday night I’d be on vacation, just a half hour from the office. The water is so peaceful and serene, and if the boat rocks it puts you to sleep.” Now the couple lives on water almost year-round. She says they love not only traveling but never having to unpack. “We’ll wake up the next day at the most beautiful island in the Bahamas. It’s magical.” Work is still a priority for Serlin, who takes Zoom calls and more from her floating office, reporting everywhere from Maine to the Bahamas, Chicago to Canada. “I never see myself not working,” she says. “I created the company, so it’s my baby, and I can’t ever abandon it.” A natural leader, Serlin graduated high school at 15 and went on to serve as president of many college groups and sororities. “I was someone you could count on,” she says. Craving Grandma’s Sunday sauce? What about a tried-and-true tiramisu or some bliss-inducing burrata? The flavors of Southern Italy can now be found in Manalapan, at Polpo Palm Beach inside the Eau Palm Beach Resort & Spa. Polpo, which translates to octopus, is the creation of Ron Rosa, a native of Calabria, Italy, who operates the original Polpo in Greenwich, Connecticut. The Palm Beach outpost pairs some of the eatery’s most lauded dishes with local seafood gems and seasonal specials. “The ingredients speak for themselves,” says Tito Rodriguez, the Eau’s assistant general manager and vice president of food and beverage. Rodriguez notes that Polpo is upscale yet approachable, a spot where families can come together to experience highend dining in a relaxed setting. Menu highlights range from the namesake grilled octopus with cannellini beans and arugula to pastas such as linguine con vongole and classics like chicken Milanese. CRAFT YOUR OWN liqueurs and cordials at home

friend of mine who worked in the liquor industry was fond of saying that all spirits were basically flavored vodka. While this statement is a gross exaggeration, it contains a grain of truth when it comes to liqueurs and cordials. The infusion process is so simple that it’s easy to concoct your own at home. Why would you want to make your own liqueurs? One reason is that you can avoid the staggering amount of sugar in some commercial brands. On the low end of the scale, Amaretto contains 3 grams per ounce—roughly the same amount as orange juice. Cointreau comes in at 7.4 and Kahlúa at 11.2. By contrast, most table wines are below 1 gram per ounce. Another benefit of liqueurs and cordials is their lower alcohol level.

Most brands of vodka, gin, and whiskey are bottled at a minimum of 80 proof, or 40 percent alcohol by volume (ABV). Some liqueurs are that high, but many popular brands are not. Baileys Original Irish Cream contains 17 percent, and both Kahlúa and Frangelico weigh in at 20 percent. When you do it yourself, you can control how much alcohol you want in the finished product. Perhaps the best reason to go solo is that your favorite flavor may be difficult to find or not commercially available. Here are some to try now. LIMONCELLO: After Campari, limoncello is the most popular liqueur in Italy, and a great deal of it is produced at home according to family recipes. Making it couldn’t be simpler: Infuse the zest from 1012 lemons (without pith) in a liter of vodka and leave it all to marinate

for three weeks. Add simple syrup to reach the desired sweetness and cut with distilled water for your preferred alcoholic strength. The result is a perfect afterdinner digestivo. KAHLÚA: The commercial Concocting liqueurs and cordials at home is a great way to scale back on excess sugar. version is made with Arabica beans, but coffee nerds will want to use their favorite espresso or roasted brew. Most recipes call for first making a simple syrup with coffee and sugar, then adding vanilla extract and your spirit of choice (vodka, white rum, or neutral grain alcohol). Once finished and bottled, it should steep for about a month before drinking. IRISH CREAM: If you don’t mind the calories, this is the quickest and simplest liqueur to make. Pour heavy cream, sweetened condensed milk, Irish whiskey, a shot of espresso, and several tablespoons of chocolate syrup into a food processor and blend until fully mixed. It will keep well in the refrigerator for several months. LYCHEE: Lychees come into season later in May and can be picked or purchased at several local farms. You can make a liqueur by steeping the fruit in vodka with lime juice and simple syrup for three to four weeks.

If you find it too sweet, don’t fret—you can also use the liqueur to make any number of delicious cocktails, from martinis to tropical drinks. CRÈME DE MENTHE: Making your own crème de menthe allows you to avoid the artificial flavorings and colorings that plague commercial brands. In a sealed mason jar, infuse vodka with fresh mint leaves for 48 hours. Concoct a basic simple syrup with water and granulated sugar, add it to the infusion, and let it sit for another day. Strain out the mint through a cheesecloth, bottle the liqueur, and store it under a tight seal in a cool, dark place. It should last up to a year and provide pleasure as a cocktail component or an after-dinner libation. «

Jennifer Arteaga, principal designer of Jennifer Lynn Interior Design, did the only thing she could when she ran into a wall while renovating this Jupiter kitchen—she knocked it down. Removing the wall between the living room and kitchen instantly made the space feel more open and left room for the installation of a chic and functional island. That functionality was paramount to Arteaga, but it never came at the expense of aesthetic appeal. The end result is an updated look

with timeless design elements and exciting touches, like the glass cabinet underneath the island. These alfresco architectural gems shine amid lush foliage or against ocean backdrops

Palm Beach architects love designing on a grand scale. While there is no shortage of fine estates on the island, what better way to showcase your design capabilities than with a small stand-alone structure? Pavilions are not only aesthetically pleasing, but they also serve a myriad of functions such as providing shade, privacy, and space for outdoor leisure. The pavilions featured here by three prominent Palm Beach architects showcase a variety of styles and exemplify how residents have long immersed themselves within the area’s glorious landscape.

1. MARION SIMS WYETH: NORTON GARDEN HOUSE Before Marion Sims Wyeth designed the Norton Museum of Art, he transformed Ralph and Elizabeth Norton’s house on Barcelona Road in West Palm Beach into a Monterey-style home (now the Ann Norton Sculpture Gardens). As part of his 1935 renovation of the home—which was originally designed by Maurice Fatio in 1925—Wyeth added a garden house with the same lacy cast-iron detailing found on the canopy of the terrace.

2. HENRY HARDING: LOVE TEMPLE Henry Harding drew inspiration from Hubert Robert’s painting The Bathing Pool when he designed the iconic Love Temple at Villa Artemis on North County Road in the 1950s. The classicalmeets-mid-century temple visually connects the pool to the ocean and originally featured a sculpture of the Greek goddess Artemis.

2 3. JOHN VOLK: POPPY PAVILION In 1967, John Volk designed this twentiethcentury chinoiserie-style pool pavilion for Mrs. Tyson Lykes on her Polmer Park property overlooking the Intracoastal. The roof is in the shape of an inverted tulip made of solid lead, and the structure includes other luxe materials such as Italian marble, teak, ebony, and gold leaf. Rocco’s Tacos and Tequila Bar co-founder Rocco Mangel became the local face of the fight against multiple sclerosis (MS) in 2017, the year after he was formally diagnosed with the disease. A lot has happened since, but for Mangel, 2022 is about exciting new beginnings and an ongoing pursuit of good health. In February, Team Rocco raised more than $90,000 for the National Multiple Sclerosis Society at its annual Walk MS event in West Palm Beach, putting Mangel’s team at more than $1 million over six years, funds that are earmarked for treatment research and the search for a cure. “Medication for MS has increased significantly since I was diagnosed in 2016 because of research the MS Society funded,” says Mangel, 48, whose relapsing-remitting MS is the most common type. —Heather Graulich Turn the page to read more about Mangel’s inspiring journey.

When he was first diagnosed, Mangel experienced weakness and paralysis, especially on his right side, but has not in recent years. He gets MRIs every year to look for new lesions that indicate a relapse. He also receives an infusion of the drug Tysabri every 30 days. Mangel doesn’t let MS deter him from a full life, spending quality time with his daughter Charley, 9, and wife, Celeste. He and Celeste are expecting a baby this year. “Just because you have something that affects your life doesn’t mean you have to change it,” he says. “Life goes on and I’m enjoying it.” Mangel credits his positivity to his commitment to healthy living. He stopped drinking and smoking, and he actively pursues

a healthy, clean lifestyle. He now exercises nearly every day—climbing 100 or more flights of stairs on his home machine—and likes to eat clean without overindulging. “I take 15 minutes out of my morning and evening and I put my thoughts together, in a spiritual way, so I can reflect on things,” he says. “I’m not saying this results in perfection, but it calms me.” Still, he allows for one indulgent habit: “I don’t like ice cream, I love ice cream.” Crank & Boom’s Cookies & Cream flavor is a particular favorite.

Business at Rocco’s Tacos is booming. A Sarasota location is slated to open in December and three more are planned for Florida, with long-range goals of opening restaurants statewide and focusing on expansion in the southeastern United States. Known for his intensity in the demanding restaurant world, Mangel’s other keys to optimal wellness are letting go and giving back. “You have to give to get,” he says. He finds joy by spreading a philanthropic mindset and spirit, and he supports a number of other causes, including breast cancer research, Toys for Tots, the American Heart Association, and Girl Scouts of America. He also seeks to be a resource for those newly diagnosed with MS or their loved ones. While Mangel can’t speak for everyone and their experience with MS, he shares: “MS comes with what is probably the most misunderstood stigma in medicine. We are very fortunate to be living in the era we are in, where medical advancements have risen in 15 years. Once people get past the shock, they’ll learn about the medical advances we have today, which helps lessen the impact.” Mangel welcomes anyone with questions about MS to reach out to him directly at rocco@roccostacos.com. “MS is a ‘snowflake’ disease—I’ve never met two people who have the same exact illness. QUEEN OF CLEAN According to the National Multiple Sclerosis Society, nearly a million Americans live with the nerve-damaging disease; 74 percent are women. Ivy Larson, a North Palm Beach resident, nutritionist, and author of the Clean Cuisine Cookbook, was diagnosed 24 years ago. Larson says she’s kept her symptoms at bay by following two principles: “reduce inflammation and optimize nutrition.” Larson’s lifestyle is consistent with research by Dr. Roy Swank, who discovered that MS patients experienced fewer flare-ups on an anti-inflammatory nutrition plan. The Clean Cuisine plan—developed with Larson’s co-author and husband, Andy, a physician and surgeon—focuses on “food in its 122

When Sira Garib searched the aisles of her local grocery stores for vegan cakes, she found no exciting options and was left with one question: “Who is going to make all my daughter’s cool, custom kiddie cakes?” The answer came several months later when her husband, Roshan, surprised her with an introductory cake decorating class. Now the owner of Pure Vegan Cakes in West Palm Beach, Garib bakes cakes for her daughter, Kaliya, and also serves South Florida clients with dietary restrictions and allergies. “I’m blessed to bake for people who have never been able to eat a cake,” Garib says. Garib knows food is central to any celebration, so she wants everybody to feel special, but it’s also more than that. As Mother’s Day approaches, sharing her kitchen with 4-year-old sous-chef Kaliya is one of Garib’s greatest joys. The mother-daughter duo plans party themes and molds fondant into delicious masterpieces for clients, who quickly become like family. Tears slid down Garib’s cheeks as she reflected on how special it is that Kaliya, her “smart cookie,” gets to witness these meaningful moments with her. “It’s that innocent joy in her,” shares Garib. Whether it’s for a tenth birthday or a final lap around the sun, Kaliya approaches each baking project with a first-timer’s delight, which becomes apparent as she joins the conversation.

“I make vegan cupcakes and cakes,” she exclaims, then shares her favorite recipes—red velvet and pistachio. Not yet enrolled in school, Kaliya already has big dreams for herself: Kids Baking Championship, a reality show on the Food Network. “When we’re in the kitchen, she pretends she’s on the show, running across the kitchen to put something in the fridge,” Garib says, with a laugh. Adashah, a lentilbased vegan protein source created by Taylor Osin Cohen, is a triple threat, delivering on taste, dietary and ingredient concerns, and nutrients. Cohen was diagnosed with colitis at age 18. Frustrated with the diet her doctors prescribed to treat the condition— which included white grains and canned produce—she looked for an alternative. Shattering Stereotypes The Morikami Museum and Japanese Gardens in Delray Beach will unveil “Beyond the Wall: Visions of the Asian Experience in America” May 7. The exhibition features works by five dynamic, internationally renowned Asian American contemporary artists: Juuri, Hiromi Moneyhun, Elena Øhlander, Boy Kong, and Casey Kawaguchi. Using large-scale murals as their medium, the artists spotlight the Asian diaspora and immigrant experience through vivid, moving representations of resilience, reverence for cultural heritage, and individual explorations of identity. When creating these site-specific works, the artists drew upon a vast array of inspiration, including Japanese ukiyo-e (pictures of the floating world), folk art, the psychology of color, kirigami (cut paper), and bijinga (images of beautiful women). always had an attachment to Old Hollywood and the tropics. Many of the pieces I’ve made recently have included petrified palm tree and natural pearls. I think that show is a great setting for some of the materials I like to use.

What’s a favorite nontraditional material you like to work with? The two stones that I use most are natural pearls and agate (I would consider those to be nontraditional). They appear in the vast majority of my recent work. We also work with chicken eggshells that I source from my own chickens on my farm in Dutchess County, New York. If you could design a piece of jewelry for anyone, who would it be? In the real world, I have created pieces of jewelry for my godmother, Barbara Eden. She’s a wonderful model and inspiration, such a kind and beautiful woman. I was able to play upon the theme of Ali Baba and the 40 thieves in the pieces that I’ve made for her. Beyond that, Ginger from Gilligan’s Island would be a favorite because I’ve

When and where did your love of jewelry design begin? On a trip to Gstaad, Switzerland, when I was 11 years old. My father and I went through that beautiful town and bought a ring for my mother that he ultimately gave her on Christmas morning. The combination of travel, grand luxury, and the loving environment that it engendered was a very strong hook for me.

Which design icons have influenced your work? I wouldn’t say David Bowie is necessarily a design icon, but he’s a theater icon, and the way I see it, theater and design are interchangeable. Bob Fosse as well. The way he changed the

perception of the human body on stage is a major influence. Really, iconoclasts in general. Miles Davis and his unique ability to put sensuality and romance in jazz music was a revelation to me. What do you like most about living and working in Palm Beach? Palm Beach, to me, is the center of glamour in the United States. Where so much of our aesthetic is going toward socialism and industrial design, Palm Beach is a reprieve from that. I feel that in many cases, Palm Beach tends to look backward for inspiration as opposed to forward. I share that sentiment, [and] that’s the aesthetic that I gravitate toward. It’s the one I grew up with and the one I love most.
