Just a few of the ways Wells Fargo is here for Florida
Wells Fargo and Wachovia share a common legacy of local investment, and now that we’re one team, we’re able to create more economic growth and prosperity for the people we serve. In 2010, we invested $219 million in 19,000 nonprofits nationwide, surpassing $200 million for the third year in a row. That’s an average of $600,000 every single day to nonprofits supporting education, community development, human services, the arts, and the environment. Here in Florida, we are proud to support local nonprofit organizations like the Children’s Home Society, the Y of the Palm Beaches and Treasure Coast, the Florida division of the American Cancer Society, Big Brothers and Big Sisters, and 211 of Palm Beach and the Treasure Coast. Wells Fargo’s contribution to organizations like these is just one of the ways we’re with you in Florida, today and in the future.

v FROM THE PUBLISHER
Read On hen I bought this publishing company in the early 1990s, the media landscape was very different. Newspapers were the dominant source for information, television was primarily about comedies and dramas, and few people beyond university scholars and military personnel had ever heard of the Internet. The only thing that hasn’t substantially changed since then is the role magazines played—and still play—for media consumers, as the ultimate oasis for people who want to be informed and entertained. These days, information comes at you faster than ever before and in larger quantities, even though the methods have changed. Newspapers are struggling but still cover the world. Network television is splintering into hundreds of niche channels. And almost everyone uses the Web on a daily basis now. In fact, half of the U.S. adult population has a social media account. But all of that pales in comparison to the substantial influence magazines enjoy. In an increasingly noisy and crowded media marketplace, magazine readership is growing. Research shows that some 93 percent of American adults—a number that has risen more than 4 percent in the past five years—read magazines, paying equal attention to advertising and editorial content. Magazine subscriptions are up, new magazines are launching, and the median age of magazine readers remains younger than the median age of the U.S. population as a whole. Indeed, 96 percent of adults under age 35 consider themselves magazine readers. Today, as was the case when I got into the publishing business, people still depend on magazines for a few minutes of pleasure, to put their world into perspective and to discover new things that appeal to their interests. At our company, however, we have embraced the best aspects of modern media—our robust multimedia websites and locally intensive Facebook pages are increasingly popular, and many of our team members maintain blogs and Twitter feeds—to connect with more people in different ways. And, from an industry perspective, research shows magazines drive Web searches more than any other medium, inspiring readers to find more information online when they see it on our pages. While mobile “apps” and e-reader subscriptions are growing as technology enables people to approach the ink-on-paper experience, the research says, and buying patterns confirm, magazine readers are not abandoning magazines on paper for iPad, tablet and other digital versions. It may happen someday, but most experts don’t think consumers will give up lavishly illustrated magazines for an on-screen version. Some of our international readers like our digital edition (subscriptions are available on our website) because they get it sooner, but they still want the printed version. (Friend us on Facebook and you can see the digital edition.) Sure, there’s a lot to consume these days and a lot of ways to consume it. But in the end, magazines are stronger than ever, and here’s all the evidence you really need: A few weeks ago, there was an announcement about the impending national launch of a new, monthly printed magazine. It will cover social media sites and technology.

v EDITOR'S LETTER
Be Well n Palm Beach, health and longevity are more than just buzzwords reflecting the collective desire to look and feel one’s best. In our little corner of paradise, getting healthy—and staying that way—is a way of life, and it’s not just because of the year-round bikini weather. Here, there are so many opportunities for enjoying the good life that it makes sense to be in top shape—physically, emotionally and mentally. The focus of our July/August issue is on healthy living and all its benefits. In our annual “Health Report,” beginning on page 63, we cover all aspects of the healthy lifestyle, from fitness trends to medical advances to a new health networking website where you can chat with physicians. This comprehensive guide is full of useful information, whether you are considering options for treating a medical condition or are just plain curious about new developments in the health community. If you are a devoted spa junkie, check out “The Perfect Spa Cocktail” for some “recipes” incorporating spa treatments for individual personality types. If you’re a frazzled mom, for example, your prescription might include treatments like the Sensory Dry Float, which simulates a good night’s sleep in just 10 minutes—and what mom doesn’t need more of that? Check out our lighthearted take on serious rejuvenation, on page 58. And if you’re looking to take your productivity, personal sense of balance, or fitness to a higher plateau, check out “The Next Level” on page 48. We profile a group of experts who are trusted by some of Palm Beach’s most powerful and influential individuals for their motivation and guidance, on both a personal and professional level. What you see in this issue is only part of the wellness picture. On palmbeachillustrated.com, you will find additional health-related content on topics such as living foods, fitness alternatives and boot camps, and even contests for fabulous skin and beauty gear. Have a happy—and healthy—summer.

v NOLAN SOTILLO West Palm Beach’s “boy next door” is now on the silver screen. Just five months after settling in Los Angeles part time, taking acting classes and vocal lessons and auditioning, Nolan Sotillo was in a leading role in Disney’s teen “dramedy” Prom. Sotillo, who graduated from Rosarian Academy in 2009, performed in the school’s theater program, and did stand-up comedy at Standing Tall Comedy/Kids and Teens in Las Vegas and Los Angeles. n How are you like Lucas, the character you play in the movie? Lucas and I both have a strong love of music, but I’m even more passionate by playing guitar, piano, drums, writing songs and, of course, singing. Unlike my character, I am not that much of a geek. n What new acting projects are in the works for you? A new pilot from Disney called Madison High. It is a High School Musical spin-off. It’s a great fit for me because the role involves acting, singing and dancing. I [also would love] to do an action movie, and work with Will Smith. n What do you miss most about West Palm Beach? Of course, my mom and my brother, and also my friends and my dog. I miss riding my bike around, too. I will be in Florida this summer. I plan on hanging with my friends and playing golf; just having fun and relaxing in my hometown. —Lola Thélin

STAR POWER
Greg Hauptner is well versed on how an idea
can snowball. Hauptner started a summer program for kids to learn video production, and it turned into a TV show that ran on PBS for four years. Then he heard about a charter school opening. Despite having no initial knowledge of what a charter school was, he ended up beating out 18 companies, and the G-STAR School of the Arts for Motion Pictures and Broadcasting opened in 2003, with 150 kids. “I started G-STAR from day one with the thought that we have to create an industry to employ our students when they graduate from college,” he says. He lived up to that promise, building something out of nothing by creating a movie studio that he gave away for free to generate an industry. —L.G.S.

first class v Country Comfort On the Dominican Republic’s southeast shore, Casa de Campo blends oceanfront and pastoral extravagance tailored to active lifestyles. By Paul Rubio
Casa de campo is a common term in Spanish, translating literally to “country house” or “cottage,” often referring to a second or third home for the Latin American privileged class. However, in the Dominican Republic this term takes on a much grander meaning. Casa de Campo is a resort, a community, a status symbol and the epitome of Caribbean luxury.

Originally a golf resort and recreation zone for the executive elite during the 1970s, Casa de Campo’s 7,000 acres have steadily developed to include more than 2,500 villas, homes and hotel suites, as well as a 400-berth marina to complement the award-winning Pete Dye golf courses and the ever-growing list of haute dude ranch amenities. The resort grounds are so large, they’re divided into different neighborhoods, and guests have a designated golf cart for traversing the property. The resort is unique in that it coalesces elements of sophisticated, modern oceanfront living with estancia elegance and endless opportunities for outdoor enthusiasts. It’s not uncommon to divide your days at Casa de Campo among horseback riding, sunbathing on the beach, and sipping tropical cocktails; or sport
shooting, kayaking, playing golf on the Caribbean’s top-rated course, Teeth of the Dog, and then indulging in a sumptuous spa treatment. With such ample acreage, Casa de Campo has perfected the multifaceted vacation destination in a superb location, where temperatures rarely fall below 70 or above 82 degrees. The resort’s 20 restaurants, 15 bars, shopping center, movie theater, equestrian center, three professional golf courses, expansive beaches, 13 Har-Tru tennis courts, colossal marina and clay shooting center are so widely dispersed that Casa de Campo feels like a vacation metropolis. The Casa de Campo experience offers myriad accommodation types. The Classic Villas and several of the Exclusive Villas stand as true country homes, with rustic furnishings that create distinctive home-style coziness. The Contemporary Oceanfront Villas line the rocky coast, and feature airy, open floor plans. The decor emphasizes neutral hues and earth tones to focus attention on the floor-to-ceiling windows that reveal the juxtaposition of the
brilliant blue colors of the infinity pool and the dazzling aquamarine sea. These villas offer pure private decadence with the greater Casa de Campo amenities at your disposal. During last year’s refurbishment of the charming two-story buildings that comprise the hotel portion of the resort, several second-floor units were converted into oversized suites, with the addition of full, modern living and dining areas to the Elite Rooms. These hotel suites offer close proximity to the resort’s two pool areas—one, a quiet area dedicated to lounging and reading, the other to more lively activity—as well as the sensational Cygalle Healing Spa and the bustling main lobby. And Casa’s centerpiece, Minitas Beach, is just a short ride away. The perfect combination of swaying palm trees, downy sands and crystal clear waters, Minitas Beach teems with unadulterated beach bliss. Sunbathers revel in the optimal rays, drinks from the adjacent beach bar in hand.
Clockwise from top left: Villa pool; a villa interior; an Elite Room; hole 7 of the famed Teeth of the Dog course; dining at the Beach Club by Le Cirque.
Watersports enthusiasts choose from a full range of snorkeling gear, Hobie Cats, kayaks and paddleboats. Spa lovers opt for open-air massages enhanced by the sound of crashing waves. Foodies rejoice in a barefoot lunch of fresh salads and seafood at the Beach Club by Le Cirque. For families, Casa de Campo is an ideal tropical retreat that encompasses the likes of the most diametrically opposed personalities, satisfying cravings for pampering or activity for all ages. And for the discerning jet-setter, Casa de Campo offers the greatest breadth of villas in the Caribbean, suiting all architectural and design tastes of the sophisticated vacation palate. casadecampo.com.do u

SLIM DOWN, POWER UP Shedding weight has given Porsche’s latest Cayenne Turbo a real performance boost. BY HOWARD WALKER
We all know the benefits of losing a few pounds. Yes, we’re talking about you, Al Roker. In addition to your waistline feeling a little less like a lump of marshmallow, you tend to move faster, feel fitter and have more energy. So, when the good herr doctors at Porsche were formulating their plans for a midterm facelift for their notoriously porcine Cayenne SUV, instead of ladling on more power to offset the poundage, we’re thinking they called up 1-800-JENNY. They were ruthless. A whopping 145 pounds were shaved from the body, including 86 pounds from the doors alone. Out went a smelting works’ worth of steel, to be replaced by featherweight aluminum, magnesium and exotic composites. Then there were the 73 pounds that were lipoed from the all-wheel drive system. Another 18 pounds were whittled off the 38
PALM BEACH ILLUSTRATED
wheels. I have visions of a fräulein with a Dremel grinding at the Cayenne’s valve-timing adjuster to lighten its load by 3.8 pounds. And the grand tally? An impressive 408 pounds. Or the weight of a small baby elephant. Were the Cayenne a person, he’d be jumping up and down after being crowned the Biggest Loser. In the latest flagship 2011 Cayenne Turbo I’ve been driving, these weight loss benefits instantly are apparent the moment you stomp your size 11 on the right pedal. Now, the whoosh from standstill to 60 mph takes a mere 4.4 seconds—unbelievable, and unthinkable, for a family-toting, speedboattowing, two-and-a-half ton truck. That compares to a still-crazy-fast 4.8 seconds for the last Cayenne Turbo I drove. And all this action doesn’t quit until the speedo needle is kissing the 172 mph mark.
Not only is this less lardy Cayenne Turbo a performance demon, it’s also more thrifty at the pumps. Instead of the 12 mpg city/19 highway of its predecessor, it now returns a slightly more palatable 15 city and 22 highway. Of course, the Cayenne’s facelift story isn’t just about losing weight. Bodywise, everything is changed, from those stunning new 21-inch wheels up. Its dimensions have grown in pretty much every direction; it’s 1.9 inches longer and a tad taller, but the additional inch and a half in the wheelbase provides much-needed extra kneeroom for those in the back. And Porsche’s design team has done a nice job of evolving the original Cayenne Turbo’s bad-boy styling. It’s curvier than before and more tapered at each end, giving it the impression of actually being visually smaller. There’s also a lot of new technology
packed beneath that blunt instrument body, like the new eight-speed Tiptronic S auto transmission, which fires off changes like a Kalashnikov with a stuck trigger. Then there’s the new all-wheel drive system—lifted from Porsche’s Panamera sedan—with its trick torque-vectoring feature to sharpen handling. In the Cayenne, this new 4x4 system results in even higher levels of grip, less scrubby understeer in tight curves and a much greater feeling of agility. If a 4,700-pound SUV could ever be described as nimble, this is it. Powering this beast is the same nuclearreactor-like 4.8-liter twin-turbo, all-aluminum V8 from the last Cayenne Turbo. As before, it packs a massive 500-horsepower and stump-uprooting 516 pound-feet of torque. But with less weight to move, its acceleration seems nothing short of staggering. Pull out to pass slower traffic, squeeze
the throttle and the Cayenne lunges forward like a rocket out of a bottle. You have to keep telling yourself you’re piloting an SUV and not Porsche’s 911 Carrera twoseater, which, incidentally, is slower to 60. Inside, the Cayenne’s cabin has benefited from many of the quality upgrades that went into the four-door Panamera sedan—the Cayenne and Panamera are assembled alongside each other in Germany. The materials look and feel richer and fit together better. This is an SUV that exudes luxury with its heady mix of acres of buttery leather,
sexy, suede-like Alcantara and brushed aluminum. It’s how you imagine Giorgio Armani’s living room to be. The new Cayenne Turbo has a base price of $106,000, though the list of must-have options stretches from here to Nebraska. Our well-loaded test car stickered at $128,610. Back in 2003, Porsche pretty much created the benchmark for the performance SUV with the Cayenne Turbo. Now with less weight giving livelier performance and more agile handling, it has raised the bar even higher. u

THE NEXT LEVEL Meet a few of the local experts who dedicate themselves to bringing out the best in Palm Beachers. BY jason davis | PHOTOGRAPHY BY ROBERT NELSON
TOTAL AWARENESS Connie Beaudoin, yoga teacher Though yoga is enjoying a contemporary resurgence as an enlightened approach to a healthier body, its roots go back thousands of years as a method to free the mind and spirit. When the physical and spiritual elements are linked together, says certified yoga teacher Connie Beaudoin, the result is achievement of peace and harmony. Beaudoin, owner of the Palm Beach yoga shala Parasutra, says many people initially take up yoga as a unique way to stretch their muscles or lower their blood pressure but ultimately find something deeper— increased awareness as a natural byproduct of the ritualistic movement, breath work and meditation. “The physical practice is just a small part of yoga,” says Beaudoin, who has taught locally for 12 years. “The comprehensive approach allows us to unravel when we’ve tightly wound ourselves up.” This has proved especially beneficial for some of the island’s blue-chip business executives, who rely on yoga for serenity and focus. “The very tools they use to realize success in business are the same tools that are very powerful in their practice of yoga—dedication, commitment, vision,” she says. “I see so many people who begin living a life dedicated to awareness rather than accomplishments or anything else used to gauge
‘success’ in life. I love when their wives come to me and say, ‘Thank you for giving me my husband back.’” parasutra.com
QUESTION AUTHORITY Minx Boren, life coach Books, websites, talk shows … when it comes to shaping and achieving personal and business goals, there’s plenty of advice in today’s marketplace of ideas. Though well-intentioned, most of it is arbitrary at best, says Minx Boren, a Palm Beach Gardens life coach who develops and facilitates programs that support health, balance and achievement. Peak individual performance isn’t a one-size-fits-all proposition: “We live less authentically when we’re following someone else’s advice because, really, we are the ultimate authority of our own lives,” she says. “I always ask, who’s authoring your life?” Boren readily acknowledges she doesn’t offer answers, only provocative questions that enable people to find their own fulfillment. That’s what good coaches do, she says—they see the things others cannot see for themselves, and nurture critical thinking that leads to success. Feeling overwhelmed by demands on your time? Boren might suggest color-coding the obligations on your calendar, which can provide surprising

insight into what you think is important vs. how you actually commit yourself. As an objective sounding board, paired with effective tools and techniques, she tries to foster positive change. “Some of our worst crises can present our best opportunities, and any time we can shine a light on what we’re doing, it’s very eye-opening,” Boren says. “Your best friend won’t challenge you, but a coach will.” coachminx.com
TOUGH LOVE Chris Fix, cycling instructor Most of us have a deep-seated need to suffer, insists Chris Fix, co-founder and chief instructor at the popular Velocity Cycling Studio in West Palm Beach. Not in a bad way, he says—just enough to appreciate when we make progress on the seemingly uphill road toward fitness. Maybe that explains why nearly every workout session (approximately 24 per week) at his studio is packed with Life coach Minx Boren (above); Chris Fix at Velocity Cycling Studio
people eager to pedal the extra mile or two or 10. “Cycling captures so many emotions,” Fix says. “It’s a sport built on suffering on many different levels, and you have to dig deep to make it worthwhile, but you are going to get through it.” He isn’t talking about those low-impact spinning classes so popular at big-box gyms these days; indeed, his group and private classes simulate professional training conditions with climbs, surges and time trials designed especially for goal-oriented, Type-A personalities. Still, he insists, you don’t have to be Lance Armstrong to participate—even novices can benefit from the bike by working at their own pace while being encouraged to test their physical endurance and step beyond their mental comfort zone. “Your mind will get through the body’s suffering,” says Fix, who came down to the area from New York to visit family for Thanksgiving about four years ago and never left, “and you’re left with an incredible sense of accomplishment. It’s absolutely transformational.” vcyclingstudio.com
In Pursuit of Greatness Roy Assad, life coach “A breakthrough only occurs in the space of nothing.” That is one of Roy Assad’s favorite mantras, for it illustrates that human beings can only reach their top potential by letting go—of the past, of expectations, of stresses, of grudges—and becoming blank canvases for the art of living. As a West Palm Beach-based life coach for the Human Capital Group, Assad has taught everyone from housewives to power brokers how to live their best lives. “We teach greatness,” he says. “Forget the date or the raise or the new house. Become great at everything you touch, and all else will follow.” 50
PALM BEACH ILLUSTRATED
Life coach Roy Assad leads a group discussion.
Through seminars and one-on-one sessions, he teaches people how to be present, to be authentic, to lead and to live by their word, among other qualities that seem so attainable and yet are so elusive. He says that, with most clients, his work is done in 10 hours or fewer, and comes with a guaranteed 30- to 50-percent increase in productivity. It seems like a tall order, particularly considering the complexity of most people’s lives, but Assad insists it can be done. “You can live without concerns,” he says. “You just need the vision, the strategy and the tactics for getting there.” Originally from Damascus, Syria, Assad moved to Beirut, Lebanon, when an American sponsored him, the child of a
needy family, for $25 a month. He persevered to get a visa to visit the States and arrived in New York in 1973. Even though he didn’t speak English, he tracked down his sponsor to thank him. That man was so impressed that he gave Assad a job as a filing boy in his insurance agency. That opportunity, combined with an insatiable drive, led him to a career in the insurance industry and he eventually became the No. 1 salesperson in the country for State Farm. His background has taught him tenacity, if nothing else. But it’s also proven to him that anything is possible. “You have to think in terms of possibility versus probability,” he says. “The possibility thinker does not have limits.” hcgnow.com u palmbeachillustrated.com | JULY/AUGUST 2011 51

etting healthier, both physically and mentally, is at the top of most of our “To Do” lists these days. But with the stress of work, family, the economy, worrying about the future or even what will happen tomorrow, those goals end up near the bottom or postponed until the next New Year’s resolution. It’s important for us to take time for ourselves, to get back on track and try to lead a healthier lifestyle. To attain this peace of mind, all you need to do is take a trip down I-95 to the Canyon Ranch Hotel & Spa in Miami Beach. Located in the old Carillon Hotel, this little oasis by the sea is affiliated with the original Canyon Ranch in Tucson, Arizona, founded by Enid and Mel Zuckerman in 1979 as a place where guests can “pursue optimal health,” by working closely with a team of integrative physicians and wellness professionals that focus on all aspects of health, not just the physical.

The path to making a lifestyle change starts when guests book their stay. Members of the staff conduct “pre-arrival” interviews to get to know the guest in advance. Also, a list of the lectures and exercise programs offered during their stay is sent out a week before guests check in. There are several packages available at Canyon Ranch, some that focus on fitness in general, and some with specific focuses on, for example, stress management, which integrates education on stress-reducing food and nutrition with exercises and ways of thinking to help better control life’s stresses, or healthy weight, which guides guests through new approaches in diagnosing and treating weight problems through hormone balance and chemistry. Huh? Hormones? Chemistry? Yes. But not artificial hormones and fad pill chemistry. Canyon Ranch helps balance the hormones and chemistry in your body to make you a healthier you. Upon arrival, each guest receives several cutting-edge biomedical and diagnostic tests from the physicians on staff. Medical Director Dr. Karen Koffler says, “We might do genetic testing on you to see what you are at risk for, and that includes genetic testing on things like your liver function to see how well you are able to detoxify. We do a lot of very sophisticated hormonal testing. We do testing on your gut function that lets us see how well you are breaking down and absorbing nutrients, whether or not the bacterial population in your gut is optimized or has been somehow compromised by [something like] antibiotic exposure or too much sugar in your diet. We do food sensitivity testing that helps to see if your diet is a core source of inflammation that’s provoking your migraines, your arthritis, your depression or bloating. A lot of things that people ‘live with,’ we’ve identified as being correctable problems.” Armed with this information, as well as through interviews, the staff at Canyon Ranch can customize a program to meet that guest’s specific needs. “A lot of what we do is education,” Koffler says. “It’s not the traditional medicine, saying ‘you need to do this, you need to do
Canyon Ranch also offers a full menu of luxurious spa treatments.
“They get to experience a greater sense of energy and vitality [and feel] more hopeful, more optimistic. All of that helps to make it more real.” —Dr. Karen Koffler this.’ Instead, we spend a lot of time getting to know who they are, what their lifestyle is like, what their preferences are, and we work within that. By getting to know people and personalizing the plan, it’s much more practical and able to be reinforced.” She adds, “First, we help people realize that for everybody, change is a process. We appreciate that people might take two steps forward, one step back; so first, when they choose to do a health package, regardless of what their emphasis is, they’re seen by multiple members of the team. So they end up hearing, through our different lenses, some of the same information, spoken in a different way, which helps them to get why it’s important to make those changes.” Don’t get the impression, however, that Canyon Ranch is a sterile, hospital-like environment. All of this happens under the roof of a luxury hotel right on the ocean, with 150 guest suites complete with HDTV, Internet access, kitchens with KitchenAid and Miele appliances, spa-like bathrooms with deep soaking tubs, and comfortable beds made with 400-thread-count sheets. All guests have access to the wellness spa and state-of-the-art fitness center, with more than 40 fitness classes and wellness lectures offered daily. Workouts range from beach walks and yoga to boxer training and boot camp. Lectures are hosted by the ranch’s staff or visiting experts. Topics run the gamut from diet and nutrition led by nutritionist Larisa Alonso, proper exercise techniques, breast and heart health, and Chinese medicine and acupressure, to improving your energy flow and creativity with energy healer Michelle Maniaci. The Aquavana experiences also are open to all guests to enjoy the many therapeutic benefits of water in all its forms. Whether 56

you choose the Hydrospa, where jets offer a gentle water massage, a steam or sauna experience, or the Experiential Rains shower, finish up your experience in the Igloo, where three varieties of Arctic mist surround you in an invigorating yet soothing way. What spa would be complete without a full selection of massages, facials and specialty treatments? An add-on to the Canyon Ranch experience, the spa features massage therapies from all over the world, including Thailand, India (Abhyanga) and Japan (Shiatsu and Ashiatsu). Healthy skin is a necessity for a healthy body, so signature treatments, such as the Your Transformation Facial, a restorative anti-aging treatment that boosts the skin’s moisture retention and free-radical defense, and the Marine Facial, which is perfect for all skin types, are popular with guests. A full-service salon also is on site. Working out or getting worked over builds up quite an appetite. Guests are in luck, as the Canyon Ranch features gourmet meals that also are healthy. Alonso works directly with Executive Chef Giovanni Arias and within Canyon Ranch’s philosophy to create the menus. “The emphasis is on whole, organic [ingredients] as much as possible, local and sustainable,” Alonso says. “We follow very specific guidelines in terms of calorie count, grams of carbs and fat, and then just emphasize healthy food in

general, foods that are high in omega 3 fatty acids, high antioxidants, nutritionally dense foods.” The items on the varied menu in the Canyon Ranch Grill are broken down to show the calorie count as well as the grams of carbs, protein, fat and fiber of each dish. And just because it’s all healthy does not mean it’s “rabbit food” or that it tastes like cardboard. While there are vegan and gluten-free items available, there also are dishes made with lean cuts of meat, poultry and fish. And, the Miami location is the only Canyon Ranch that does offer a selection of wine and cocktails. “I think that’s one of the biggest surprises for most people who come here: that it’s delicious,” says Alonso. “And they’re satisfied by the portion size. They look at the portion size and think, ‘I’m never going to feel full,’ and they do.” With all there is to learn at Canyon Ranch, guests may feel overwhelmed when it’s time to leave. Koffler meets with them, to prepare them for their new and improved lifestyle.
“When they sit with me before they leave,” she says, “I have them walk through the recommendations that we made, so that they can see and actually visualize their day-to-day life and how it might look integrating these changes. And certainly living here for several days, you get to eat the food we want you to eat, you get to do the exercises we want you to do, so they are actually living what it is we want them to bring home with them. And they get to experience a greater sense of energy and vitality [and feel] more hopeful, more optimistic. All of that helps to make it much more real.” In addition to giving guests literature and menu ideas to take home, staff members also follow up with guests to find out if they are getting along, and if they can tweak any problems that might come up. “Just because they leave doesn’t mean our relationship ends with them,” Koffler says. “We invest a lot of time getting to know them, and they feel connected to us.” After experiencing all that Canyon Ranch has to offer, don’t be surprised if you also feel more connected to yourself. u palmbeachillustrated.com | JULY/AUGUST 2011 57

You believe life is a game, so you may as well play. You exude sport from the tip of your sunburned nose to the toes on your exhausted and shockingly white feet. Be Fit One way or another, most people have experienced the yo-yo fitness effect, trying one fitness fad after another and never reaching one’s ultimate goal. “The truth is most fitness programs do not deliver the level of results that keep people encouraged to maintain the two most important facts for long-term success—consistency and dedication,” says Marissa Lysaght, owner of Fitness Re-defined. Lysaght suggests a functional, circuit resistance training, a method that involves total body movements and interval-based cardio training; but before you commit, she suggests asking yourself one question: “‘Can I picture myself doing this for a long time?’ If the answer is no, the program is not for you.” Jupiter (561-904-6262, fitnessredefined.com) Boxing is an esoteric sport, but 9Round has found a way to make it accessible to the everyday athlete. Founded by professional kickboxer Shannon Hudson, 9Round is a gym that breaks down boxing and kickboxing fitness into nine trainer-supervised workout stations for three minutes apiece. The full-body circuit training, which lasts only 30 minutes, focuses on cardio, anaerobic and resistance training. The constant change in exercises eliminates workout boredom and helps burn up to 500 calories. Boynton Beach (561-732-9889); Boca Raton (561-482-9899, 9round.com) Cycling classes have long been a cult in Manhattan, and when Ruth Zukerman opened Flywheel in the city, the studio immediately took off. When it was time to expand, Zukerman chose Boca Raton. Flywheel’s 45 bikes are stationed on an amphitheater-style arrangement, which is both curved and tiered so that every rider can properly see the instructor. Each bike is equipped with monitors displaying performance data, which is stored into the rider’s account so that he or she can track individual performance and goals. “Over the course of our signature 45-minute ride, you get an efficient, full-body workout that includes a high-repetition upper-body series using a weighted bar,” explains Zukerman. Be sure to try Fly ’n Flex, a 45-minute ride with a half-hour of Vinyasa yoga. (561-368-3246, flywheelsports.com) For a cool way to get in shape, consider Palm Beach Ice Works. The $15-million facility boasts an Olympic sheet ice surface, which is the international ice size for hockey and figure skating. There is a plethora of classes available year-round, including group skates, jump, spin and spiral classes and competitive tracks for aspiring figure skaters. For hockey enthusiasts, there are clinics, open hockey sessions and private instruction, as well as youth and adult hockey leagues. Kickboxing at 9ROund (top), bikes at Flywheel (below left) and hitting the ice—the newest ways to get in shape.

SUPER JUPITER Jupiter Medical Center is making a strong impression in the world of medicine. U.S. News & World Report ranked the hospital ninth out of 69 hospitals in the Miami/Fort Lauderdale Metro Area. It also was recognized as high-performing in five specialty areas: cancer; ear, nose and throat; gynecology; kidney disorders; and neurology and neurosurgery. Earlier in the year, it also became the only hospital in the county to receive national accreditation of its breast health program by the American College of Surgeons’ National Accreditation Program for Breast Cancers. The program, which was named after local news anchor Kristin Hoke, who lost her battle against cancer last summer, is a comprehensive breast health program offering screening and diagnosis, treatment, rehabilitation and survivorship support services. Jupiter Medical Center’s Ella Milbank Foshay Cancer Center offers some of the most effective and new treatments. In 2008, the center received the $3.3-million Varian Trilogy Linear Accelerator, an advanced image-guided radiotherapy and radiosurgery system for cancer and neurological lesions. Most recently, RapidArc was added, making the Trilogy system even more effective. RapidArc delivers a complete radiotherapeutic session in less than two minutes. Because the machine acts quickly, doctors can more accurately deliver radiation to the intended target. Earlier this year, the hospital announced a $50-million capital campaign to fund an ambitious but necessary expansion. The campaign hopes to raise funds for a three-story, 75,000-squarefoot building, which will add 45 patient rooms, with one floor dedicated to an orthopedic and spine center and another to the Women’s and Children’s Healthcare Services with a Level II Neo-Natal Intensive Care Unit. The ground floor will be dedicated to administrative offices, a chapel, cafeteria and other needs. (561747-2234, jupitermed.com)
Say What Hearing properly is an afterthought for many people, but for those with a form of hearing loss, it can be a constant struggle. Luckily, technology is advancing to the rescue. “The development of using Bluetooth technology to wirelessly connect the patient to the TV, cell phone, landline phone and long distance microphones has increased the patient’s ability to hear and understand clearly in difficult listening situations,” explains Dr. Dana Luzon of Audiology & Hearing Aids of the Palm Beaches. Luzon is an Audigy certified professional. Oticon, an international hearing aid manufacturer, has created ConnectLine, which enables a high-fidelity connection to any TV or landline phone by plugging adaptors into the devices. The patient, who wears Streamer, the companion hearing device, pushes a ConnectLine’s tools include (clockwise from top left) adaptors, Streamers and the Microphone.
button to connect to the system wirelessly. The adaptor has a range of up to 30 feet. Another creation is the ConnectLine Microphone, which is a discreet aid that connects wirelessly to the Streamer. “Users can improve their understanding of speech at a distance. Likely uses include communication in a meeting or a religious service, or when a companion is not facing them, like in a car,” says Luzon. Palm Beach Gardens (561-627-3552, hearingcarefl.com)
Enjoy better health and wellness with these tools, tips and advice
Easy Contacts Despite the adage “There are no stupid questions,” many people are too shy to ask their physician medical questions or state their concerns. Yet many are very comfortable about sharing personal stories behind a computer or laptop screen. Using those two principles, Ryan El-Hosseiny developed AntiAgingSpace.com, a social and health networking website. El-Hosseiny, who also serves as the vice-president of Access Medical Laboratories in Jupiter, saw that many patients were interested in antiaging, bio-identical hormones and aesthetics, but didn’t know where to go for information and whom to speak to. The website offers an open forum on health and wellness with physicians, who are thoroughly checked out before being approved to chat on the site. While the website is geared toward antiaging through preventive, holistic, alternative and integrative medicine, El-Hosseiny says any type of wellness can be discussed as long as it helps better someone’s life. “There is a multitude of specialists; you are not getting one doctor or institute. The general public has the ability to comment, blog, rate and communicate with each other about the product, service or doctor,” says El-Hosseiny. “AntiAgingSpace.com is a place to come to find and research ways to look and feel better without facing the standard obstacles of geography, insurance coverage or wealth.”

Custom Cataract Surgery with Lifestyle Lenses For most patients over 40, life without reading glasses or bifocals is a distant memory. Custom cataract surgery can now enhance your vision to extraordinary new levels. With this procedure, good distance and near vision can usually be obtained without glasses. The vast majority of patients who chose custom cataract surgery report that they can read, work on a computer, drive (day and night!), and play golf or tennis with an increased freedom from glasses.

IN THE FIELD at a time, to lengthen them. The patient uses a wrench to make small daily rotations on the device. “The bone is a living substance. As soon as you break it, it tries to heal itself by making new bone to glue itself together. If you pull the bone apart very slowly, that extra new bone it grows fills in the gap that you create. As long as you don’t go too fast, you can create quite a large gap within the bone, which is lengthening,” says Paley. Patients see the doctor every few weeks but attend therapy daily because the muscles, nerves and arteries all need to be stretched while the bone grows. Paley performs an estimated 650 surgeries a year and the success rate is 98 percent, if not higher. “There are very few patients that we can’t achieve what we set out to do,” he says. “We have complications along the way but the complications can be fixed.” (561-844-5255, limblengtheningdoc.org)
According to the American Academy of Orthopedic Surgeons, approximately 270,000 knee replacement surgeries are performed in the United States each year. The knee surgery removes damaged knee cartilage and bone and replaces them with new metal and plastic joint surfaces. Good Samaritan Medical Center and orthopedic surgeons Drs. Harvey Montijo and Andrew Noble are participating in a training program for a new intelligent instrument that automatically positions a computer-guided bone cutting device exactly as planned by the surgeons. The new system, iBlock, allows the doctors to perform fast and accurate bone cuts that improve implant alignment. “It’s a computer navigational system with a robotic arm,” explains Montijo. “There is excellent alignment, which minimizes the risk of embolism, and there’s longevity. This will definitely affect how we do total knees in the future.” By using iBlock, there is less chance of trauma to the bone and surrounding
muscle tissue, improving the alignment of the implant for better use of the joint and increased flexibility. Dr. Kathy Schilling, medical director of breast imaging and intervention at the hospital’s Christine E. Lynn Women’s Health and Wellness Institute, is the principal investigator at the local level. Approximately 40 percent of women have dense breast tissue, which causes limits in visualization of cancer. The study will help determine if using ABUS and mammography together improves the accuracy of screenings with women with dense breast tissue compared to mammography alone. (561-955-7100, brrh.com)

Going Beyond Maintaining a healthy body is much more than simply losing weight and controlling your food portions. It is about achieving homeostasis, the state of balance in the body. “We want to know why it isn’t happening to a patient,” explains Penny Lynch, executive director of Palm Beach Weight & Wellness, which uses advanced antiaging and medical weight loss treatments to customize personal health plans. “Then we want to know how to find homeostasis for each patient. We look at their intercellular nutrition level to find what are the missing nutrients.”
Palm Beach Weight and WelLness offers fitness training, the Halo breast pap test and nutritional tools to improve your health.
Drs. Gloria Hakkarainen and Glenn Chapman conduct specialty tests to better comprehend the patient’s body. Micronutrient testing shows what vitamin, mineral and antioxidant deficiencies there are in the body, which thereby could affect the function of the immune system. Hormone testing offers insight into thyroid levels and estrogen, as well as cholesterol, sugar and liver enzymes. The center consults about reduced-calorie diets, fitness needs based on the abilities of the patient, and understanding nutrition labels. Nutritional plans help to encourage positive eating habits and give the body the essential nutrients it needs. Nutrition counseling is available to understand the relationship between food and eating and using diet to improve medical conditions.

NEW IN SCIENCE The wheels of medical research are always turning in Palm Beach County. By receiving grants for groundbreaking work and conducting research studies, local scientists are pushing the limits and knowledge of diseases and their impact on the body. A study conducted by Scripps Research Institute in Jupiter about the formation and progression of prostate cancer recently received a $2-million grant to be shared with Tampa’s Moffitt Cancer Center. Prostate cancer is the second leading cause of death in American men. The grant will be spent on researching the origins of prostate cancer and the role that inflammation plays in its development, and the development of novel therapeutic strategies for treatment and prevention. Another discovery is a new class of highly selective compounds that suppresses the severity of multiple sclerosis in animal models. This recent discovery could be put to use in provid-
ing new therapeutic approaches to multiple sclerosis and other autoimmune disorders. Current treatments affect the patient’s entire immune system but the new compound only blocks the actions of a specific cell type, which appears to avoid widespread side effects. More studies are also in the works, including a recent study that has shown that DNA can fine-tune the activity of certain proteins known as nuclear receptors. This discovery could help design therapies that highly target specific genes in diseases such as osteoporosis, autoimmune disease and cancer. Another finding is a compound that has shown to block brain cell destruction in Parkinson’s disease in animal models of the disease. (561228-2000, scripps.edu/florida)

Chin up Wanting to look better and more youthful is a natural desire. There were 13.1 million cosmetic procedures performed in 2010, according to the American Society of Plastic Surgeons. That same year, facelifts experienced significant growth with nearly 113,000 procedures, up 9 percent from 2009. It’s a meaningful number, since facelifts have not experienced growth since 2007. With the recent surge in facelifts, doctors are looking toward newer procedures that offer similar results, are minimally invasive and have little downtime. At Bafitis Plastic Surgery, Dr. Harold Bafitis is offering the Silhouette Lift. The procedure, which has been used in Europe for the past five years, uses innovative sutures with absorbable cones that attach themselves to deep tissue, thereby creating a tension that lifts the sagging tissue. “It’s a youthful direction cheek lift. Athletes, especially those who play on a team, learn important lessons at an early age and how to apply them to life. Building character and teaching these life lessons are the main goals at Step It Up in Boca Raton, a basketball program conceptualized by Yogev Berdugo. “We’re big on developing self-confidence and a positive self-esteem. We’re big on mental strength,” says Berdugo, a basketball player who played two years at both Hofstra and Brandeis universities and professionally in Israel. “There are certain core values that help define what we do at Step It Up. With a lot of will, a bit of skill and a vision, you can accomplish anything.” First and foremost, Step It Up is a basketball program, offering students training from experienced pros in building endurance, balance and mental strength and strengthening proprioceptor sensors to help stabilize the legs and be more in tune with the body. Off the court, the sky is the limit. Most of the young athletes arrive with a certain lack of confidence and are easily triggered by negatives like criticism and bad sportsmanship. “As they start training with us, they learn how to handle these situations, which are going to come up for the rest of their lives, inside and outside of sports,” says Berdugo. “Our athletes have a newfound confidence about them, and a stronger sense of selfrespect, respect for others and discipline. All of these are valuable life lessons that can be used now and in the future.” The program prides itself on a 5:1 player to coach ratio to ensure every athlete receives personal attention. It’s taken longer to be FDA-approved here because of political reasons.” Jupiter (561-795-3787, bafitis.com), Wellington (561-422-1117) Similar to the Silhouette Lift, the Whisper Lift was developed in 2007 by board-certified plastic surgeon Dr. Anita Mandal. “It is the next generation of quick recovery facelifts,” says Mandal. “Designed for patients who want convenient procedures with minimal downtime, the Whisper Lift tightens sagging jowls and neck without the prolonged recovery and extensive anesthesia associated with more aggressive facelifts.” Mandal performs the operation in 90 minutes with local anesthesia, and most patients return to their daily routines within four to seven days. The end result is five to 15 years off your face, she says. Palm Beach Gardens (561-238-0040, mandalplasticsurgery.com)

a-peeling experience Classic Cointreau’s twenty-first century revolution By Mark Spivak
88
PALM BEACH ILLUSTRATED
The search for the perfect orange liqueur began in the Caribbean and culminated in Angers, a small town outside of Paris. The Cointreau brothers set up their distillery in 1849. Curaçao was very popular in Europe at the time; Adolphe and Edouard-Jean Cointreau set out to make something drier and more aromatic. They called their initial efforts Triple Sec, since it was three times drier than Curaçao. Eventually they refined the recipe, using a combination of sweet and bitter oranges sourced from around the world, and Cointreau was born. “The brothers were masters of distillation,” says Richard Lambert, Cointreau’s brand ambassador for Europe, Asia and the United States, “but they were also masters of marketing. They were friends of [filmmaking pioneers] the Lumière brothers, and saw the potential in movies immediately. In 1889, Cointreau was the first liquor to be the subject of a commercial.
They also became involved with the Tour de France early on.” Today, the distinctive orange spirit is made with the same original recipe, using 19 alembic stills specially designed for Cointreau. An estimated 50 million bottles are sold annually, and 60 percent of the cocktails made worldwide involve Cointreau. It has become a key component of the margarita, sidecar, white lady and cosmopolitan. Of course, bartenders frequently use Triple Sec to cut costs, but Lambert does not approve. “Using a top-shelf tequila in a margarita and substituting Triple Sec for Cointreau is like asking your wife to go out in a beautiful gown and a pair of old slippers,” he says. Cointreau is on the cutting edge of the current cocktail culture, evidenced by the recent invention of Cointreau Pearls, or “caviar of Cointreau.” Inspired by the revolutionary techniques of chef Ferran Adrià, the company hired
expert mixologist Fernando Castellon to transform liquid Cointreau into solid spheres. Lambert began by dissolving 5 grams of Spherigel, a lactate of calcium, in 50 grams of Evian water, using a mechanical agitator. He then added edible 24-karat gold flakes, and followed that with 150 grams of Cointreau to comprise the molecular mix. In a separate beaker, he mixed 100 grams of Evian with a substance called Calci+; using a syringe, he then injected the Spherigel solution into the Calci+ to form perfect, spherical Cointreau Pearls. Sixty restaurants around the world have been selected to serve the Cointreau Pearls, with a mere six in the United States. They have been featured at venues such as Daniel and the Waldorf-Astoria in Manhattan, Stix Restaurant & Lounge in Boston and the St. Regis in Washington, D.C. The Breakers here in Palm Beach serves a cocktail called the Cointreaurita, which consists of 3 ounces of Patrón Silver tequila, one ounce sweet and sour mix, half an ounce of freshly squeezed yuzu juice and one ounce of Cointreau. The finished drink is garnished with salty foam in lieu of the traditional salt-rimmed cocktail glass, and decorated with Cointreau Pearls. In molecular bartending, as in so many other things, simplicity is sometimes best. If you find yourself at The Tapestry Bar, order a glass of dry Champagne infused with Cointreau Pearls, and savor the taste of orange liqueur exploding in your mouth as you sip the bubbly. u

local haunt City Cellar is a CityPlace favorite for good reason. By MARK SPIVAK

PALM BEACH ILLUSTRATED
In South Florida, restaurants that survive for more than a decade are as rare as courteous drivers or successful blind dates. Yet City Cellar Wine Bar and Grill has both survived and prospered. Much of the credit is due to the philosophy of their parent company, Big Time Restaurant Group, which focuses on appealing to a broad range of customers “by offering a wide variety of items in a stylish, relaxed dining atmosphere. In other words, they offer something for everyone and do most of it well. The decor was arresting 10 years ago and remains interesting today. Located on the mezzanine level of CityPlace, with a view of the pedestrian square below, the restaurant offers both indoor and terrace seating. The interior space is dramatic, highlighted by towering industrial ceilings, a long curving
bar, a glassed-in wine cellar and an abundance of dark, polished wood. An open kitchen dominates one end of the room, flanked by a wood-burning pizza oven. The specials change daily and the main menu, which is revamped every six months, is conceived by Corporate Chef Lisabet Summa and executed by Executive Chef David Hagan. On a recent visit, a starter of Mediterranean hummus and flatbread ($11.50) turns out to be a platter of delights that includes feta cheese, eggplant caponata, Kalamata olives and mixed greens. Handmade ricotta gnocchi ($11) are light and fluffy, served in a creamy vodka sauce augmented with Asiago and mozzarella cheeses. Among the entrees, the grilled Kurobuta pork chop ($27) is tender, flavorful and cooked to perfection, served with creamed
goat-cheese-infused polenta, crisp, garlicky broccolini and a sherry demiglace that provide a perfect foil for the meat. A daily special of pan-seared pompano ($27) is moist and delicate, served on a bed of Israeli couscous and enhanced by a ginger-miso broth. The long, substantial wine list adds another dimension to dining at City Cellar. There are nearly 60 selections by the glass, along with a range of bottles heavily weighted toward the wines of California. Commercial, mass-market selections are side by side with rare, artisanal products—like the food menu, the list offers something for everyone. Glasses of Château de Sancerre ($12.50) and a half-bottle of Honig Sauvignon Blanc ($26) are graceful complements to our chosen dishes. Desserts tend toward conventional offerings such as New York cheesecake, Key lime pie, crème brûlée and ice cream sundaes, but there is an interesting selection of
sweet wines to accompany them. Also, City Cellar is one of the few places where you can get a carefully selected platter of artisanal farmhouse cheeses, served at the correct temperature. Service is delightful. The staff is young, enthusiastic and committed to guest satisfaction; all are familiar with the preparation of the dishes, and willingly offer suggestions. Managers patrol the floor, and General Manager Michael “Iggy” Ignatowicz works as an expediter, inspecting each dish before it goes out to the tables. City Cellar has become a fixture of the CityPlace dining scene (“we’re grandfathered in,” as our server cheerfully put it). It’s a place to meet and congregate, to socialize and watch the passing parade. Despite the sizable amount of seating space, the restaurant is generally full at both lunch and dinner, and the restaurant handles the crowds with grace and style. u

America has always been a melting pot of cultures, and “New American” cuisine is a reflection of that. The notion of blending flavors from around the globe comes to life at Piñon Grill in Boca Raton. Open for a little less than a year, this restaurant has seen great success in its location adjacent to Town Center. The menu is a variety of flavors and influences, all tied back to simple dishes everyone can recognize and enjoy, and all made fresh inhouse daily. An interesting starter is the crispy crab fritters. Not really traditional fritters at all, these are crab and shrimp balls rolled in shredded phyllo dough and fried. The phyllo creates a crispy yet light coating for the crab, and the lobster ginger sauce is just the right tang of flavor. Salads range in size from “side” salads to entrée salads. Piñon’s goat cheese salad is a wonderful accompaniment to a meal, with spring greens, spicy candied pecans and sun-dried cranberries topped with a piece of seared goat cheese. The seared tuna salad (shown above) consists of seared slices of sushi-grade tuna served with a blend of lo mein

noodles, Napa cabbage, broccoli, charred corn, mango and edamame with a sesame soy dressing. Entrées run the gamut from N.Y. strip steak, braised short ribs and roast chicken to a delicious pecan-crusted trout in a citrus Chardonnay sauce and a Chilean sea bass topped with pesto and served on top of shredded Parmesan au gratin potatoes. The desserts are a high point. The white chocolate bread pudding, served warm on macerated berries with homemade whipped cream, is a little piece of heaven. Piñon Grill’s decor has a Southwestern feel, but not overwhelmingly so. It’s a blend of prairie and modern, with original Native American art sharing wall space with the restaurant’s innovative wine storage. (561-391-7770, pinongrill.com)
On the Beach For being a seaside town, there are very few restaurants that actually are on the beach. One of the newest is 3800 Ocean at the Palm Beach Marriott Singer Island Beach Resort & Spa. Opened in the former home of Solu, this modern seafood restaurant is under the watchful eyes of Chef/Owner Dean James Max and Executive Chef Larry LaValley. This is Max’s sixth restaurant and his second in South Florida. He also helms 3030 Ocean in Fort Lauderdale. The menu changes frequently, in order to provide guests with the freshest ingredients possible, the majority of which are sourced locally, including produce from Swank Farms in Loxahatchee. Max and LaValley focus on these fresh and simple ingredients to create their dishes, which are unique and flavorful. A recent chef’s tasting dinner started out with the ahi coconut tuna ceviche, a refreshing treat from the restaurant’s raw bar that is flavored with cilantro, Serrano peppers, green onion and coconut sauce, served in a coconut shell. This was followed with a crisp heirloom beet salad with arugula, shallots and basil vinaigrette, topped with creamy Coach Farm goat cheese. In the entrée category, Ingrid’s pan-roasted diver scallops with wild mushrooms, Swiss chard,
lobster nage and truffle crème was a perfect harmony of flavor and texture. Dessert was a decadent duo of Key lime tart with coconut cream and Florida strawberry jam, and a sticky toffee cake with Georgia pecans and bourbon pecan ice cream. In addition to modern American seafood, the menu also features freerange chicken and beef dishes. The decor of 3800 Ocean is as simple and elegant as the ingredients, with the focus on the fabulous ocean views. There is live music on Fridays and Saturdays, either in the lounge area or on the outdoor patio. Singer Island (561-3401795, 3800oceanrestaurant.com)

Joseph Pubillones designed this midcentury modern dining room in a renovation. The double-sided, marble-clad fireplace acts as the anchor of this informal space. Above the fireplace, a Sputnik sculpture adds a unique dimension, while a redwood root table base with a glass top creates an organic focal point. The chairs are a simplified version of a classic balloon-back chair. Joseph Pubillones Inc., Palm Beach (561-655-1717, jp-interiors.com)

Read more about the DDA and Mendieta’s mural project at palmbeachillustrated.com/mendieta
Eduardo Mendieta is beautifying downtown West Palm Beach, one mural at a time. The Downtown Development Authority gave the self-taught New Jersey artist creative control of the murals that have popped up over the past year on the sides of buildings in the neighborhood. Completed after the BP spill, the first mural features portraits of his daughter Amira, and represents hope and disappointment in the state of the planet left for the next generation. Another mural of banyan trees was inspired by his daughter Maya, and is a mix of graffiti and child’s storybook. A third mural of 1960s cars was designed during the auto bailout and depicts the “Big Three”—Ford, Chevy and Chrysler. “It’s always been a dream of mine to work in this kind of scale,” says Mendieta. “I believe in public art. Art should be out for the public to see, not only in museums or high-end galleries.” eduardomendieta.com —Lola Thélina palmbeachillustrated.com | july/august 2011 111

The Colony Hotel is planning another sizzling, song-filled summer with performers straight from Manhattan’s leading cabarets to celebrate the Royal Room’s tenth anniversary season. At only 22, Ariana Savalas is a seasoned recording artist and live performer specializing in songs from the 1930s to 1950s. After Ariana a successful tour in Savalas Europe, Savalas landed the title role of the feature film Miriam in 2007. Savalas will make her Royal Room debut August 19-20, 26-27 and September 2-3. Don’t fool yourself…
Science Fiction Meets Modern-day Science The use of adipocyte-derived stem cells and regenerative medicine in the United States is just beginning with this FDAcompliant protocol that has finally arrived in South Florida via Medical Director Dr. Harold Bafitis and IntelliCell BioSciences
•
of Palm Beach, a division of IntelliCell BioSciences Inc. WHAT IS STEM CELL THERAPY AND REGENERATIVE MEDICINE?
DR. HAROLD BAFITIS, DOUBLE BOARD CERTIFIED PLASTIC SURGEON & MEDICAL DIRECTOR
FOR
INTELLICELL BIOSCIENCES OF
PALM BEACH
Stem cells are cells that have the ability to change into other cells of the body (pluripotential cells). Most stem cells do NOT come from embryos or bone marrow; they come from your own fat cells (adipocytes). These adipose-derived stem cells from your own body can restore function by enabling the body to repair, replace, and regenerate damaged, aging, or diseased cells, tissues and organs. This has been proven clinically in Europe, India, and Japan where adiposederived stem cells are being used.
HOW IS DR. BAFITIS INVOLVED IN THIS EXCITING FIELD? Dr. Bafitis has been chosen as Medical Director for IntelliCell Biosciences of Palm Beach, Inc., because of his experience. Bafitis has been utilizing fat transfer in reconstruction ADVERTISEMENT
for more than 10 years. He has led national meetings in regard to fat transfer, and holds regular teaching classes for other plastic surgeons in awake liposculpture and specifically the jet lavage system. Dr. Bafitis has embraced this new field of regenerative medicine and realizes his work as well as the work of other physicians, with adipocytederived stem cells will literally provide the foundation for evidence-based protocols for stem cell therapy in the United States.
HOW ARE STEM CELLS HARVESTED? The fat-derived stem cells to which we are referring are harvested from your own body. Double Board Certified plastic surgeon Dr. Harold Bafitis, utilizing the latest technique to provide the most viable fat cells, the “jet lavage liposuction system” harvests these cells. This technique allows you to be fully

awake without any pain, and produces the most fat cells for the best yield of stem cells. You can choose to have oral sedation or even IV sedation, but most patients prefer minimal to no sedation. Some patients prefer to have areas of their body, i.e. abdomen, hip rolls, and saddle bags, liposculpted at the same time they would be donating some of their fat cells “adipocytes” for stem cell harvest and same-day use.
WHAT CONDITIONS HAVE BEEN TREATED BY ADIPOSE-DERIVED STEM CELLS? The United States has been slightly behind in the clinical use of stem cells, but veterinarians have been using equine stem cells derived from fat to correct aging or damaged tendons in horses for over seven years with amazing results! In humans, stem cells have been utilized as follows in the United States: • Dermal injections for dermal regeneration with improved lines and wrinkles. • Dermal injections for acne scars. • Dermal injections for burns and ulcerated wounds. • Addition of stem cells to harvested fat for greater take, regeneration, and volumizing of the face and body. • These cells have also been successfully utilized in the knee, elbow, and hands in terms of injections for arthritis. • Knee injections for cartilage repair or improvement for cartilage loss/damage. There are physicians who have also utilized stem cells via IV drip for osteoarthritis and improvement in pain from inoperable joint/spine disease. BE INFORMED . GET EDUCATED . CHOOSE WISELY.

WHAT HAPPENS AFTER THE STEM CELLS ARE HARVESTED? Dr. Bafitis and his staff prepare the fat for immediate stem cell separation. IntelliCell BioSciences of Palm Beach picks up the adipocytes at the time of harvest and it is taken to their medical processing center. The separation of the stromal vascular fraction from the adipose tissue is performed within an hour. The stromal vascular fraction, which has adult stem cells, pre-adipocytes, fibroblasts, and growth factors, will be transported back to Dr. Bafitis, within 1-1/2 to 2 hours with a detailed report on the viability and number of stem cells produced.

She is the founder and designer of ElizaGray, a collection of accessories and wicker, straw and leather handbags and clutches.
