What efficiency looks like when you close your eyes and wish.

To be frank, best-in-class fuel economy shouldn’t be this captivating. Nor should an EPA-estimated rating of 45 city miles per gallon* stir the soul. But looking back on 90 years of building motorcars, perhaps our greatest achievement has been blurring the line between innovation and beauty. Introducing the highly efficient Lincoln MKZ Hybrid. In showrooms now. *EPA-estimated rating of 45 city/45 hwy/45 combined mpg. Actual mileage will vary. Class is Luxury Midsize Sedans. Optional features shown.

CMYK RONALD J. WOODS v 1935-2013

From left: Ron enjoying an early snow in Montana, signaling time to head home; on his birthday, he threw parties for kids, not himself; the two of us at Palm Beach Illustrated’s 60th anniversary party.

If this was any other summer, Ron Woods would be calling from Siesta Ranch in Montana most mornings about 9 a.m. our time, 7 a.m. Mountain Time, explain what a crisp, beautiful morning it was, and ask, “Anything going on?” If there was another incredible cover, a terrific magazine story or a big advertising contract, he was excited and wanted to convey his congratulations to the individual or the team responsible. If there was an opportunity or a challenge to run past him, he would respond with: “Put it on fast forward.” He wanted to get to town for breakfast. I’d make my point as quickly as possible, tell him what I was going to do, and—almost always—he would respond, “You’re the boss. Talk to you later.” He was, well, pithy that way. And empowering. It was consistent with his words to me a decade ago: “Here are the keys. Don’t screw it up.” He recruited good people and let them do their jobs. He never forgot a number (although sometimes he pretended it was higher than you promised if it was revenue or profit). He could fly through a 70-page financial statement and see exactly what was going on, but he preferred a few key numbers on the back of an envelope over lunch so there was plenty of time to discuss his tennis game, the office football pool, his determination to learn Spanish, a new lady friend, an upcoming trip or a charity he planned to support. We always left a big tip because discussion over coffee lasted twice as long as lunch. I learned to answer his frequent late-night phone calls, “Hello, this is the help desk.” He usually wanted instructions on how to attach a picture to an email or solve some other electronic question. It drove him crazy that Microsoft gives users multiple ways to do something rather than one. He was a chemical engineer and liked the fact that when you add numbers, the answer always is the same. Not so with computers. We had our own running joke, “This will only take five minutes.” Of course, it never did, often because he would move on to an unrelated topic or ask what my wife, Eleanor, and I, were up to or he wanted the latest news on our children and their families. He built two great companies. Thermofil Inc. was a plastics company in Detroit he sold to a Japanese conglomerate in 1988, allowing him to put the entrepreneurial grind behind him and enjoy the considerable fruit of that venture. He moved to Palm Beach and got more involved in philanthropy. But like most entrepreneurs, he found it difficult to sit on the sidelines, so he bought Palm Beach Illustrated and founded Palm Beach Media Group in 1991. Now, we publish 11

magazines. After a number of years, he said, “There; this is a success” and stepped back, but wouldn’t sell the company, even during the media acquisition frenzy of 2004-2007. “Let’s just keep building,” he said. He didn’t just build businesses. Out of his own pocket, he built a high school in Montana, complete with classrooms, a cafeteria, a gymnasium and bunk-house dormitories. He hired administrators and teachers, and paid for disadvantaged young people from cities around the country to get an education and a rural experience. He bounced theological questions off me and his priest, then compared the answers. He complained about politicians who wanted him to pay lower taxes instead of using money wisely and for the right things. He rooted for Michigan and Michigan State even though he graduated from Notre Dame. He was a confirmed bachelor for decades but loved family, and considered the team at PBMG and the large family of his longtime, trusted business manager and confidant, Karen Powell, his family. He went so far as taking control of the TV remote at Karen’s mother’s house in Michigan during holiday game days. If there was a “family” squabble, Corrine Powell would appear, shake her head and say, “Oh, Ron” as if he was her tenth child and return to the kitchen. Back in Florida, he’d leave the Christmas tree up for months. If someone asked why, he’d say, “I like it. Why not?” Sadly, this isn’t any other summer. Ron passed away May 25. The tree was still up, travel to Montana was postponed, there was no rush to town for breakfast. But some of us—including his German Shepherd pal, Cooper—are going to take his ashes there in the fall, spread them one crisp morning and then have a barbecue in his honor. He would have liked that. There will be stories, and we won’t put them on fast forward. There are too many, they are too good and we’ll savor them.

ou’ve heard it before: Health is wealth. Nothing could be truer, for a finely tuned body, spirit and mind is the foundation for happiness and for enjoying life’s gifts. In this issue, we celebrate healthful living in all its dimensions—nutrition, fitness, relaxation and mindfulness. In Palm Beach, where the weather is always perfect and the outdoors figure into everyone’s lifestyle, wellness is a major part of the local culture. And with the addition of scientific research firms like Scripps and Max Planck, and the biomedical research conducted by educational institutions like FAU, health also is a part of the local economy. The medical advances championed by these organizations, as well as a myriad options for living well, are the focus of our annual health report. Our health department, Balance, is expanded this month to include even more information and ideas for ramping up your fitness routine or making more healthful choices. From a local personal trainer accessible via the Internet to mobile apps that put wellness at your fingertips, Balance is a mini-education on all that’s good for you. Turn to page 93 and get inspired. There is no research to back this up, but based on anecdotal evidence, there are probably more salads consumed in Palm Beach than anywhere else in the world. Part of it is the climate and part is the bounty of homegrown produce available here year-round. We’ve asked five chefs to toss their best salads for us, and the results are simply delicious. See their handiwork in “Fresh Perspective,” on page 52. For those who want to take nutrition a step farther and incorporate living (or raw) foods into their diet, we explore the Hippocrates Health Institute, an internationally known resource right here in West Palm Beach. In “Hippocratic Hope” (page 46), we take a look at the institute’s raw/vegan food program as well as its other initiatives to help people gain (or regain) total health. This issue, with its informative, inspirational content and striking photography, is a microcosm of the editorial philosophy of Palm Beach Illustrated, which was introduced by Ron Woods when he bought the magazine in 1991. Ron, who left us in May, was a visionary and a thoughtful leader who wanted— and achieved—the finest magazine in Palm Beach County and the Treasure Coast. He was proud of what Palm Beach Illustrated had become, and we are equally proud to continue his legacy well into the future. This issue, and every issue hereafter, is dedicated in memory of our beloved Ron. Be well.

Living and giving in beautiful South Florida Your friends and neighbors who work at Wells Fargo love it here as much as you do, so we asked each of our South Florida banking stores and business banking offices to select a local nonprofit or school to receive a grant from our Community Partners Program. That way, we can help financially, and our team members can stay engaged and volunteer with their favorite organizations all year long. We believe we can only be as strong as the communities in which we live and work. That’s why in 2012 Wells Fargo contributed more than $16 million to nonprofits in Florida. Wells Fargo is proud to support local nonprofit organizations and their work to make our community a better place.

After attending Boston College and working on Capitol Hill, the third-generation Palm Beacher returned to his hometown looking for an advocacy-driven opportunity that would impact the community. He found it as executive director of the Preservation Foundation of Palm Beach. Ives thrives in what he feels is an excit-

Sister Act While Palm Beach has always spoken with style, sisters Beth Beattie and Danielle Norcross were the first ones to propel the town’s voice into cyberspace. With Beattie’s background in public relations and Norcross’ in concierge services, the two launched Palm Beach Lately, a blog that started as a modern guide to the area and morphed into a life“We saw a big gap in the modern generation of Palm Beach. People had visions of Palm Beach as not hip, but in reality there are so many inspirational people in our area,” Norcross says.

The site provides insight into local beauty, living, society, style and weekend trips while engaging readers with peeks into the creators’ lives (Beattie is planning her upcoming wedding, while Norcross recently welcomed her second daughter). “I feel like we’ve made Palm Beach more accessible,” Beattie says. —L.G.S.

“It used to be that in historic preservation, you were trying to save old buildings. Now we have moved into the advanced end of preservation, where it’s about inspiring new designs and new planning,” Ives says.

Camera flashes erupted like fireworks among the glittering gamut of polo and fashion royalty. Designers Jason Wu and Valentino Garavani and supermodels Karolina Kurkova, Stephanie Seymour and Hana Soukupova posed and mingled with guests under VIP tents, sipping generous pours of Royal Salute Scotch whiskey, fine French wines and fresh-squeezed lemonade. Haute couture has solidified its role in the sport of kings—which, this day, was ruled by a prince.

Prince Harry of Wales rides for Land Rover Sentebale during the Sentebale Royal Salute Polo Cup.

On May 15, Prince Harry of Wales and Argentine polo legend Ignacio “Nacho” Figueras launched the summer polo season with the Sentebale Royal Salute Polo Cup at Connecticut’s Greenwich Polo Club (greenwichpoloclub.com). White-knuckled spectators watched an hour-long spirited match that nearly culminated in a dead heat between Prince Harry’s Land Rover Sentebale team and Figueras’ St. Regis team. In the final chukker, the Sentebale team landed the winning goal, taking the match 4-3. The real thrill, however, was the luxurious polo adventure offered by the St. Regis resort line (stregis.com/polo)—complete with deluxe wheels, pampering matchside, afternoon tea and, of course, decadent accommodations to savor long after the match. St. Regis’ polo history dates back more than a century. The hotel’s founding family, the Astors, were often seen at polo matches on Governors Island just off Manhattan. Today, the brand is ex34

panding its polo presence globally, hosting matches and marquee events in London, Mexico City, Abu Dhabi, Bangkok and Beijing— along with VIP treatment for the most discerning attendees. The lavish experience at the Sentebale Royal Salute Polo Cup began long before the 3 p.m. match. After a dreamy sleep at the iconic St. Regis New York property, guests were transported via Bentley at 10 a.m. to the woodsy Connecticut suburbs 45 minutes away. Attendees were treated to a seated lunch, during which Prince Harry delivered a poignant speech on the plight of children in Lesotho, Africa. The day’s polo match benefited his Sentebale charity, whose mission is to improve the health, welfare and education of these forgotten children. Domestic polo circuit devotees can look forward to other matches at Greenwich on July 14, September 1 and September 8 as well as at New York’s Bridgehampton Polo Club (bridgehamptonpolollc.com)

Hot-ticket matches overseas include the Veuve Clicquot Gold Cup Finals on July 21 at Cowdray Park Polo Club in West Sussex, United Kingdom, and an August 16 match in Abu Dhabi that will support breast cancer awareness and mark the debut of the St. Regis Abu Dhabi. Those traveling with the St. Regis circuit can expect the same royal treatment seen at the Greenwich match. Burning desire Jaguar’s sensational new F-Type V8 S delivers hard-core sports car thrills.

BY HOWARD WALKER

“I drive fast, wind in my hair. I push you to the limits, ’cause I just don’t care. I’ve got a burning desire for you, baby.” The words are sung hushed, almost whispered, in the sexy, steamy way only sultry American singer-songwriter Lana Del Rey can deliver. I have to admit, every time I hear her haunting rendition of Burning Desire, I feel the need to rush off and take a cold shower. Yet Ms. Del Rey’s burning desire isn’t channeled at some swarthy, tousle-haired Romeo with a Florida tan and abs of steel. No, it’s a desire for an automobile. And after having just driven it, I wholeheartedly share her burning desire to drive fast and push it to the limits. Lana and I are talking about Jaguar’s sensational new F-Type two-seat roadster—especially the flagship V8 S version, which has 495 supercharged horses, the ability to scythe from standstill to 60 in 4.2 seconds and an exhaust note that verges on R-rated. How obscene is it? Search on YouTube for Jaguar’s new short film called Desire. It stars Damian Lewis of Homeland fame, with Del Rey’s hit song as its soundtrack. The storyline is pretty dumb and the acting as wooden as Pinocchio. Yet the Chilean scenery is gorgeous and some of the car action is top notch. 36

But the F-Type’s hellfire-and-brimstone roar steals the show. The noise from those quad tailpipes is so deep, so throaty, you can only think it’s been dubbed-in during post-production. Not so. Drop down a gear, floor the throttle and listen in awe as the aural crescendo builds from 2,000 rpm to the red line. Godzilla with a migraine, the raptor in Jurassic Park and Jack Nicholson screaming, “You can’t handle the truth!” didn’t sound this scary and intense. This is Jaguar’s spiritual successor to the legendary E-Type and its first true sports car in 50 years. Much more hard-core and driver-focused than its XK sibling, the F has its crosshairs squarely set on the speedsters from Stuttgart—Porsche’s Boxster S and 911 Carrera Cabriolet. It boasts all the right sporting credentials: light yet stiff aluminum architecture, a potent 5-liter V-8, eight-speed Quickshift automatic, brakes that could stop time and arguably the most precise steering this side of a go-kart. Of course, life’s too short to own an ugly sports car, and here the F-Type steals your breath. It’s not drop-dead gorgeous in the way the original E-Type was; it’s too wide and stubby for that (it’s actually 4.5 inches wider than a 911). But there’s a blunt instrument beauty in its gaping, chrome-edged grille; swept-back headlights; and muscular rump. Inside, this new F is all business, with its driver-centric cockpit. After all the wood and leather cabins of Jaguars of olde, some may think this a little cold and stark. It’s tight, too, in a way that almost feels like you’re wearing the car when you slide behind the thickrimmed wheel.

At the press of a button, the canvas top can drop or levitate in a mere 12 seconds and as fast as 30 mph—perfect for when you’re caught as a red light turns to green. But to drive it is to share Ms. Del Rey’s burning desire. The FType has a wonderful dual personality: It can be smooth and refined when you want it to be, yet insanely fast, hyper-responsive and rewarding when called upon. On a twisty backroad, it is breathtaking beyond belief. The car spears from corner to corner, remaining poised and bal-

anced through every turn. The transmission shifts with speed and intuition. And, of course, that roaring soundtrack never fails to thrill. The MSRP for the entry-level 340-horse supercharged V6 FType starts at $69,000 and the 380-horse version goes for $81,000, but you’ll definitely want this flagship 495-horsepower V8 S—even at a rather ambitious $92,000. But when it comes to delivering a burning desire, this car is simply priceless. u

tivist, opened the Red Schoolhouse, which offered natural healing services and cleansing detox programs out of her farm in Stoneham. She teamed up with Viktoras Kluvinskas, a fellow Lithuanian who sought Wigmore’s services to treat an autoimmune disorder. In 1961, they moved the operation nine miles south to Boston, where it officially opened as the Hippocrates Health Institute. More than a decade later, Brian Clement, a proponent of raw veganism, made the trek from his home in Maine to the Hippocrates Health Institute. Clement worked closely with Wigmore to fine-tune the institute’s mission and, in 1980, he became its director. Seven years later, he and his wife and co-director, Anna, moved Hippocrates to West Palm Beach.

02

The Greek physician Hippocrates urged ancient man to “let food be thy medicine and medicine be thy food.” More than 2,000 years later, the Hippocrates Health Institute is taking those words to heart. Located in West Palm Beach, the institute is a nonprofit complementary health center spanning 50 acres. Tuxedo cats bask in sunbeams. The aroma of freshly cut wheatgrass wafts through the air. Eclectic art and loving reminders to “let there be peace on Earth” dot hidden pathways. It sits less than one mile from the chaos of Okeechobee Boulevard. Though the institute has grown in South Florida, its seeds were planted in Massachusetts. In 1956, Ann Wigmore, a Lithuanian immigrant and raw food ac-

vanced cancers, diabetes, heart disease— you name it.” Participants can either stay onsite (Hippocrates offers accommodations ranging from luxury villas to cozy cottages) or commute daily. Upon arrival, they undergo a series of blood work and similar tests and are given a health program based on their individual needs. “the end goal Dr. Steven Lemof the program berg, one of the mediis to achieve a cal consultants on healthier staff, explained durlifestyle being a recent lecture at Hippocrates that he cause most aims to bridge the gap people, unforbetween conventional tunately, aren’t medicine and natural taught this.” healing. “Guests come —Tom fisher, r.n. to Hippocrates and not only do they get a lot of hope, but they get a lot of healing,” he said. Certain components of the program are steadfast, starting with the food. The cornerstone of the institute’s philosophy is a raw, vegan diet that promotes detoxification and has anti-inflammatory properties. Breakfast is optional but might include a raw cereal like buckwheat groats, affectionately called Buck Wheaties. Lunch and dinner is a buffet of sprouts (all grown onsite), veggies and a side dish that reflects some variety, like vegan Pad Thai or raw tacos.

02

Under the leadership of the Clements, the institute has gained national attention for its signature Life Transformation Program. This three-week program, which runs year-round Sunday through Saturday, aims to transform the mind, body and spirit through a raw food diet, lectures, classes, psychotherapy, detoxifying treatments such as colonics, exercise and meditation. “The end goal of the program is to achieve a healthier lifestyle because most people, unfortunately, aren’t taught this,” says Tom Fisher, a registered nurse at Hippocrates. Fisher first came to the institute 12 years ago as a guest. At the time, he was recovering from stage 4 lymphoma, for which he received chemotherapy. The treatments left him feeling weak; he suffered from low energy as well as thinking and memory problems associated with “chemo brain.” Following extensive research, Fisher attended a lecture by Clement and decided to give the Hippocrates Health Institute a go. Fisher now works with guests in the Life Transformation Program. Before committing to the program, guests discuss their specific goals with one of the institute’s consultants. “People come here from all over the world and for an array of different concerns,” Fisher says. “Some will come to relax or maybe lose a couple of pounds [while others come] with very ad-

The Hippocrates Health Institute promotes a raw, vegan diet rich in antioxidants, vitamins and minerals. In addition to fresh sprout and vegetable juices, guests enjoy a variety of vegan “comfort foods,” including pizza, walnut tacos and avocado sushi rolls, as well as fermented foods like sauerkraut.

The institute’s own green juice is ubiquitous. Composed of sprouts of celery, cucumber, sunflower and pea, the green juice is a complete protein packed with amino acids and phytonutrients. Wheatgrass juice is also pervasive. It contains nine essential amino acids, B vitamins, chlorophyll and phytonutrients. Guests drink two ounces in the morning and two ounces at night in the hopes of increasing red blood cell counts and cleansing the body of toxins, among other benefits. On Wednesdays, some guests choose to fast—meaning they abstain from solid foods, opting instead for only the wheatgrass and green juices—and participate in a day of silence. While the fasting detoxifies the body, the silence detoxifies the mind. Fisher describes the silence as an escape from today’s fast-paced lifestyle. “It helps to destress and [allows guests to] self-reflect and have time to themselves,” he says. In addition to the raw diet, the Life Transformation Program employs detoxification therapies, including infrared saunas, ozonated pools and hot tubs, weekly Swedish massages and bio-energy treatments, as well as exercise classes and yoga. Hippocrates also houses a public spa, and guests may choose to add certain treatments, such as reflexology and Chi Nei Tsang massages, to their schedules. Chi Nei Tsang is a therapeutic organ massage that works with the five major systems of the body to release physical and emotional blocks. Dr. Keith Cini, a certified acupuncture physician and Chi Nei Tsang practitioner, explains that certain organs are tied to specific emotions: the liver with anger and frustration; the heart with joy, love and passion; the spleen with worry and anxiety; the lungs with grief and sadness; and the kidneys with fear and shock. “The body doesn’t lie,” Cini says. By stimulating these organs, Cini introduces a fresh supply of oxygen and releases subconscious emotions.

available to the public. “The services at the salon complement the work being done in the Transformation Program,” says salon director Marty Landau. The salon only uses certified organic, allnatural and vegan products, including its own line of shampoo. Guests can stop by for a quick trim, hair color or scalp treatment, which is composed of exfoliates, essential oils, clay and (of course) wheatgrass. At the end of the Life Transformation Program, participants undergo a series of tests to evaluate their progress and attend a graduation ceremony. Graduates are armed with the necessary knowledge to lead a healthier life, which, as Tom Fisher notes, makes it all worth it: “It’s about living life at the fullest and allowing the body to heal in a natural way.” u

02

Emotional releases and psychotherapy are other key components of the Life Transformation Program, as they help the mind and spirit adjust with the body changes. Hippocrates has two psychotherapists on staff, and guests see one at least once during their stays. “Psychology is a huge part of the healing process,” Fisher says. In addition, Hippocrates encourages guests to meditate as often as possible and offers daily lectures on subjects such as meditation, sprouting and growing wheatgrass, raw food preparation, skin care and holistic principles of health and healing, among others. With all this work being done on the inside, it’s only natural guests would want to improve the outside. The Hippocrates Re New Organic Salon and Image Center opened in late 2011 and is

ing bohemian sect inspired by chic jet-setters like Jade Jagger and Alice Temperley. The release of her newest tome, Gypset Travel, the guide to traveling like a gypsetter, was celebrated with an intimate gathering in Palm Beach. Rule No. 1: Gypsetters don’t vacation. “I’m not into the idea of vacation; I call them residencies,” she says. “I’m more interested in immersing into the local culture, whatever that might be.”

90

Julia Chaplin is gypset by birth. Growing up with hippie parents, she lived a nomadic lifestyle. “We had a VW van and drove around, never living anywhere for very long,” says the travel writer currently based in New York. She first introduced the term gypset (noun; an unconventional, bohemian approach to life) to the lifestyle lexicon in her 2009 book, Gypset Style, in which she outlines the basics of this burgeon-

 What is Gypset...

User Name: olga

Chaplin describes the gypset lifestyle as a marriage of the nomadic wile of a gypsy and the global sophistication of the jet set. “Jet set is accessible to anyone who can afford it. Gypset is not about buying luxury; you have to create it,” she says. What makes a location gypset: “It should be three hours from an international airport, should be hard to reach—a combination of dirt roads or having to take a ferry or really bad traffic,” Chaplin says. “With the Internet and Google Maps, everyone knows about everything. But getting there is another story.” A surfer at heart, Chaplin prefers equatorial, seaside areas, though there are gypset locations in other terrains. Top gypset spots: Manhattanitegetaway Montauk, English hippie haven West Country and the sunbaked Kenyan island Lamu are some of the locales featured in Gypset Travel.

You must pack lightly. “You need a good pair of flip-flops, a bikini, some type of poncho or sarong you can use to wear at night or as a towel and one good party dress,” Chaplin says. For the best in gypset style, check out Chaplin’s clothing collection, available on her website, gypset.com. Lodging accommodations: Chaplin prefers to stay at a fellow gypsetter’s home or in artisan boutique hotels and inns. “You can find something really luxurious without it being a five-star hotel,” she says. “It must have an effort by the owners, or whoever designed it, of some type of transporting aesthetic. It’s something groovy, not just a bunk bed.” While trekking through northern Peru, she stayed at a small inn adjacent to the beach in a room built from palm fronds and bamboo. Dining: Like lodging, gypset dining should “have an acknowledgment of the local culture, wherever you might be, but then some conceptual attempt to elevate the experience in some way,” Chaplin says.

The destinations in Gypset Travel were selected, in part, based on historical and social migrations, including the ancient Silk Road trade route, the Grand Tour during the Victorian Era and the Hippie Trail of the 1970s. Gypsetters today still follow similar paths. “You’re rotating with this same social group, all migrating around in a circle almost,” Chaplin says. Identifying fellow gypsetters: Each destination has a network of gypsetters, though they’re not necessarily organized. “Often they own boutiques or art galleries or restaurants. They’re the public figures in these towns,” she says. Making friends: First and foremost, you have to put yourself in a place where you can meet people. Cultural immersion and a commitment to creativity separate the gypsetters from the vacationers. For starters: Always sit at the bar. “You’re having a drink, you’re open to meeting people. That’s the key,” Chaplin says. “Just be very open and sociable, and [the people you meet] will tell you where to go.”

This summer, add a Brazilian flavor to the American pastime with rodizio recipes from Pampas Grille at CityPlace in West Palm Beach. Throughout July and August, the restaurant is offering mouthwatering barbecue-style items like grilled baby-back ribs with watermelon barbecue sauce, homemade biscuits and strawberry tallcake. Drink Fresh

For laid-back summer soirees, pop a userfriendly Italian wine that’s frizzante and festive. By Mark Spivak

Don’t get us wrong; we’re deeply devoted to French bubbly and always will be. Yet according to industry sources, Champagne shipments last year declined worldwide by more than 14 million bottles—that’s about 1.2 million cases and roughly 5 percent of the region’s total production. Could drinking fizzy wine be falling out of favor? Certainly not in America, where the popularity of alternative sparklers has exploded over the past few years. We like to think of these varieties as “recreational sparkling wines.” Leading the field is Prosecco, the seemingly omnipresent sparkling wine from Italy’s Veneto region. Made from the grape variety of the same name, Proscecco is packed with refreshing citrus and melon fruit. It was traditionally served in Northern Italy as an aperitivo and offered to welcome guests in a restaurant or private home but was nearly unknown in the States until about five years ago. One of the main reasons for its current vogue is the appealing price point. Like other recreational bubbles, Prosecco is a super value—three to six bottles can be had for the price of a single bottle of the French stuff. Unlike Champagne, it doesn’t undergo a second fermenta74

PALM BEACH ILLUSTRATED

tion in the bottle or a long period of aging, so it costs less to produce. Another big reason for the Prosecco craze is lifestyle. It is fresh, forward and easy drinking, so it fits quite well in the casual side of life. It’s perfect for picnics, outdoor receptions and sipping around the pool. It also goes great with a variety of hors d’oeuvres, fish and shellfish— a platter of sushi and a cool crab salad come to mind. Champagne, a more serious wine by virtue of its higher acidity and a complex structure, is an impeccable foil for appetizers and desserts, of course, but bottles with a high percentage of Pinot Noir or Pinot Meunier are also well matched with white meat and game dishes. Modern Americans don’t sit down to a formal meal in an elegant restaurant very often, which also helps make Prosecco

Italian bubblies rival Champagne for the drink of summer.

from the Brachetto grape, it is sometimes referred to as the red version of Moscato d’Asti. The nose is floral and the wine is replete with flavors of fresh red berries. Like Moscato, it ranges from off-dry to sweet, and gets along splendidly with tapas or desserts, depending on the style of the producer. Braida’s Brachetto is well worth trying (perhaps with some chocolate and cherries?), as is the ruby-hued, pink-foamed Rosa Regale from Banfi. Brachetto is sometimes compared to that infamous recreational sparkler, Lambrusco. The grape and wine native of the Emilia-

Romagna region got a bad rap in this country as a result of the early popularity of brands such as Cella and Riunite, candy-sweet sips favored by the ’70s and ’80s college crowd. As in many other instances in the wine world, perception is evolving. Thanks to the efforts of producers such as Lini and Medici Ermete, lively, fresh, foamy Lambrusco is being recognized as worthy in its own right. So ignore any preconceptions and stock up for the season. These are ideal vinos to pack in the cooler for all those alfresco parties and outings. u

de rigueur for life in the twenty-first century. Consider serving guests bubbles from one of these leading brands: Mionetto, Nino Franco, Adami and Zardetto. Another Italian wine of the moment is Moscato, both still and sparkling. Bubbly Moscatos are low in alcohol and span a range from slightly off-dry to semisweet. The best-known wines are Moscato d’Asti, grown and bottled near the town of Asti in the Piedmont region. The drier versions pair well with cheeses, charcuterie and other savory bites. The sweeter ones burst with flavors of ripe, fresh-cut melon and are a natural fit with desserts—especially fruit tarts, cobblers and meringues. Look for bottles from Paolo Saracco, La Spinetta and Ceretto. And do not miss out on the luscious Nivole from Michele Chiarlo. For the drinker who craves novelty, Piedmont is also home to Brachetto d’Acqui. Made

The people’s Choice

For 22 years, Max’s Grille has been attracting a wide legion of fans.

Can a restaurant be all things to all people? Max’s Grille tries and, for the most part, succeeds. Launched in 1991 in Boca Raton’s newly opened Mizner Park, Max’s Grille was not intended to be the most revolutionary or inspirational restaurant in the Max Group family. It was created to be a safe harbor, a place where people could go for comfort food with a twist. It has survived for more than two decades, flourishing in a tough South Florida environment that doomed its more avantgarde siblings one by one. The restaurant went through a total makeover last year, although you have to look closely to see the results. The kitchen is still open, the dining room still composed of a mix of tables and booths, and an alfresco bar has augmented the outdoor terrace. While the interior has been spiffed up, the decor is what it has always been—a cross between a steak house and a sports bar, a place that informs customers they can relax while they eat. Begin with a flatbread such as the roasted mushroom pizzette ($14), a thin and crispy crust layered with melted fontina cheese and Parmesan-garlic cream, braised leeks, a trio of wild mushrooms and a sprinkling of truffle oil. The shrimp mac-n-cheese ($8) is equally rich and satisfying, composed of baby shrimp, ditalini pasta and Parmesan breadcrumbs baked into a casserole. You won’t want to order either dish if you are on a diet, but you’ll likely remember both for some time. Among the entrees from the wood-fired grille, the maple-bourbon glazed baby back ribs ($27) are memorable. The meat is suc76

culent, tender and falling off the bone. The maple-bourbon glaze is distinctive but not overpowering, permeating the meat and enhancing the flavor; the dish is garnished with remarkable sweet potato fries. My companion pronounced them to be the best ribs she had ever eaten. A daily special of branzini ($28), or Mediterranean sea bass, is carefully prepared. The thin fillets are artfully grilled, remaining moist and juicy, accompanied by toasted orzo and wild mushrooms. For those watching their weight (this is Boca Raton, after all), there is a selection of main-plate salads such as the Southwestern cobb and oak-grilled chicken Caesar. The Asian-glazed Scottish salmon ($19) is crunchy and appetizing, with baby greens amplified by cabbage, scallions and toasted cashews. The wine list is as comforting as the menu, featuring a roll call

of familiar names: Sonoma-Cutrer, Franciscan, Beringer and Cakebread. You won’t have a life-changing wine experience here, but you won’t be disappointed, either. In addition, there is a respectable list of cocktails and craft beers. Service is friendly and accommodating; staff members know the menu inside out, offer recommendations willingly and are eager to please. But this is a very busy place, and the pace of the restaurant sometimes overwhelms them. Things are forgotten, orders misfire and mistakes are made. Fortunately, the watchful management team has their backs and is on hand to resolve issues and smooth over problems. Given the broad appeal of Max’s Grille, it attracts a wide cross-

section of humanity on any given evening—everything from texting 20-somethings to octogenarians who have difficulty walking to their table. This makes for interesting people watching, provided you have a reservation. You’ll need one. u

Last year, Chef Daniel Boulud brought his New York-based Boulud Sud restaurant to Palm Beach, offering the Mediterranean-inspired fare as an additional menu at Café Boulud during the summer. That was just the practice run. This year, the concept has been refined for its second season in Palm Beach, operating as a true pop-up with its own dedicated space. Open for dinner from July 3 to September 2, Boulud Sud serves guests on the terrace of the Brazilian Court, in an air-conditioned enclosure outfitted with clear drapes and fans. Small olive trees, green glassware and tables topped with potted herbs evoke the spirit of Provence—or Sud, the South. “Last year, we were more off Broadway. This year, we’re more on Broadway,” Boulud says. Many Sud ingredients are sourced from Swank Farms to create colorful and fresh dishes like cucumber gazpacho; grilled octopus flavored with Marcona almonds, arugula and Jerez vinegar; and roasted lubina with romesco, arugula and grilled baby summer squash. Don’t hesitate to order the

grapefruit givré—a dessert of frozen grapefruit carved open and brimming with sorbet. Boulud Sud will serve an à la carte menu daily and a $35 three-course prix fixe menu on weekends. Diners at Café Boulud may also order from the Sud menu. Between Sud’s welcome return as a standalone and the café’s tenth year in Palm Beach, Boulud is proving practice makes perfect. What We’re Craving Cool and refreshing, the mojito is our summertime drink of choice. Dada in Delray Beach devotes a page of its menu to 18 variations of the rum-based cocktail, offering everything from the tried-andtrue mint recipe to fruit-based alternatives. The common denominator in each? A sugar cane stick—the mark of an authentic, quality mojito. (561-330-3232, sub-culture.org/dada)

Lunch Bite Just as a garden grows beneath the sky, Buddha Garden has settled roots on the lower level of Buddha Sky Bar. The Garden isn’t a separate restaurant but rather an extended oasis of the Sky Bar, complete with a cherry blossom tree in the center of a red and chocolate dining room—an altogether lovely and hip place to escape for lunch. Popular specials are now mainstays on the new summer menu, including inventive sushi like the Buddha Rainbow: tempura salmon paired with borsin cheese and avocado and topped with Aji Amarillo cream and chives. For a quick and cooked lunch, go with the pineapple fried rice (but don’t pass your plate around—there won’t be any left). (561-4507557, buddhagardendelraybeach.com)

The gastropub phenomenon has been invading South Florida for the past few years. Offbeat and original, these establishments are becoming a restaurant genre in their own right. What exactly is a gastropub? It’s a bar that sells upscale cuisine—no bowls of pretzels to be found. The menus typically feature reinvented pub grub, and the drinks are often as diverse as the food. Delray Beach and West Palm Beach in particular seem to be breeding grounds for gastros. Here are a few of our favorites:

Delray Beach: Tryst was possibly the county’s first gastropub when Rodney Mayo and Scott Frielich opened it on Atlantic Avenue in 2009. Mom with a Mission When Boca Raton resident Michelle Rubin’s autistic son, Scott, turned 18 three years ago, she began researching options for him once he graduated high school. “It dawned on me that I was going to have to start looking around for what was out there for him when he left the school district, and I quickly discovered that there wasn’t really anything,” she says. Disgruntled with her findings, Michelle founded the nonprofit Autism After 21 in October 2011 with the goal of imbuing adults on the autism spectrum with practical life skills for independent living. Though the infant organization is still in the development stages, it is already making an impact. In April, it hosted a public symposium at Florida Atlantic University focused on school transition issues and is coordinating a second one for the fall that will cover employment topics. Michelle has been reaching out to employers in the community, asking 94

to train adults with autism, and is looking to offer daytime programs at Autism After 21. “We would develop a center where you could get continued job training, have a job coach, some recreation opportunities and also ongoing therapies [such as] social speech groups, music therapy and technology training,” she says. By providing those on the autism spectrum with the necessary tools to succeed, young adults like Scott can share their unique gifts with the world. “He has had a tremendous impact on so many people,” Michelle says. “My other two boys would not be the wonderful, empathetic men that they are without him.” autism after21.org

The Internet has changed nearly every aspect of our lives, even how we exercise. Nobody knows this better than Delray Beach personal trainer Franklin Antoian. In 2006, he launched iBodyFit.com, a video exercise website, to keep in contact with his seasonal clients. Seven years later, his business has grown, attracting clients from London to Dubai, Palm Beach to Cape Town. “It allows me to work with my seasonal clients when they go out of town. But it also allows me to work basically all over the world,” Antoian says. Here’s how it works: iBodyFit hosts a number of free workout videos; those looking for Antoian’s personal touch can sign up for online personal training. Clients fill out a questionnaire regarding fitness goals and preferences, available equipment and starting stats (i.e. weight, cholesterol, blood pressure). Antoian then uses that information to create exercise videos that demonstrate a personalized workout routine. The number of videos can range from one to four a week, depending on the client’s goals. Clients keep Antoian abreast of their progress through the website as well as social media and email. Antoian attributes the success of iBodyFit to the growing prevalence of online fitness as well as the comfort of being able to work out at home. “Don’t be afraid and think that the gym is where you need to be,” he says. “You can work out anywhere.” (561420-2959, ibodyfit.com)

When part-time Lake Worth resident Hal Spielman lost his wife of more than 30 years, he had to adjust to a life alone. Between learning how to do laundry and reentering the dating scene, Spielman decided he needed help. So, armed with years of market research experience, he surveyed more than 1,000 men and 600 women older than 55 to determine what his age group wants in a companion. His findings, along with tips for everyday living, are featured in his new book, Suddenly Solo, as well as his website, suddenlysolo.org. Spielman spoke with PBI about the suddenly solo social scene. What are people looking for in a companion at this stage in their lives? Comfort. Most mature men want to date women that are in their own age range. They’re more concerned about being in a setting with people they’re comfortable with. How or where are the suddenly solo meeting people? There are two primary ones. They meet and date someone they have known in the past. That represents 23-24 percent of those surveyed. The other big category is online dating. What do you recommend as a first-date spot? I’ll give you a don’t: Don’t go to the movies. Not on a first date. You want to go somewhere you can talk. Go to a restaurant you know to be relatively quiet so you’re not shouting at each other. Go to a nice coffee shop if that’s your disposition. Does dating etiquette change at this age? Ninety percent of men believe they should pay on a first date but, interestingly, 19 percent of women say they should “go Dutch.” There are a couple of reasons for that. One, they don’t want to feel an obligation to have a second date. The other reason—and I think this is really reflective of our new culture—is the woman is establishing her equality. She has her own income, so she’s prepared to pay her way. Certainly, that independence is a reflection of that baby boomer culture. What do you see as the key component to enjoying life once you’re suddenly solo? Getting out there. That’s the key. Participate in your local political scene, participate in the do-good activities that go on in your community. These are also good ways to meet people, and it’s not just meeting a woman. It’s expanding your range of friendships.

Gerber Gym Who says only adults can break a sweat at the gym? For the past 30 years, My Gym Children’s Fitness Centers have provided introductory gymnastics and sports classes at more than 260 locations nationwide, including Royal Palm Beach and Jupiter. My Gym offers a wide range of programs—developed through medical and psychological research—specifically geared towards building self-esteem and designed for children as young as 7 months. mygym.com

Expanding in Jupiter In March, the Jupiter Medical Center broke ground for the new Florence A. De George Pavilion. This 81,000-squarefoot extension, scheduled to open by February 2015, will include 44 patient rooms, an expanded obstetrics unit and a floor dedicated to the Anderson Family Orthopedic and Spine Center, which will house 15 additional private patient rooms, a gym and a dining facility. With an extra six labor rooms, 12 post-partum rooms and two operating rooms, Jupiter Medical Center will be able to grow from assisting 1,200 births annually to 2,000. (561263-5728, jupitermed.com)

The future of the facial has arrived at SiSpa at the Palm Beach Marriott Singer Island Beach Resort and Spa. The HydraFacial is a noninvasive treatment—with a touch as light as a paintbrush—that nourishes and moisturizes the skin. This combination of cleansing, exfoliation, extraction and hydration is designed for all skin types and is available in 20-, 50- and 80-minute sessions. (561-340-1755, marriott.com)

Essential Vitamin Whether it comes in a juice glass or a fruit salad, vitamin C is key to any well-balanced diet. It’s also valuable to your skin. Vitamin C, also known as ascorbic acid, plays a major role in producing collagen, the protein that makes skin strong and firm. In addition to eating Florida citrus fruit, consider adding skincare products rich in vitamin C to your daily beauty regimen. Palm Beachbased Image Skincare offers a Vital C line of products packed with the essential vitamin. Pair your morning glass of OJ with Image Skincare’s hydrating facial cleanser, anti-aging serum or intense moisturizer, among others, for an extra punch of vitamin C. Keep It Cool Given the high temperatures of the Florida summer, kids often retreat to air-conditioned living rooms for the duration of their vacations. But there are many fun ways for kids to get active and stay cool at the same time. On July 6 and August 3, the Jupiter Inlet Lighthouse and Museum hosts Hike through History from 8-10 a.m., the perfect time to enjoy the outdoors before the sun reaches its peak. Discover natural flora and fauna as well as historic points on this two-mile walk through the 120-acre Jupiter Inlet Lighthouse Outstanding Natural Area. Cap off the walk with a kayak tour, a great workout with a cool water breeze. (561-747-8380, jupiterlighthouse.org) If being outdoors is just too hot, kids can hit the ice in one of Palm Beach Skate Zone’s ice-skating or hockey camps. These weeklong sessions run through midAugust and are suitable for children as young as 5 and for all skill levels. The ice-skating camp is designed for skill development and has two divisions: recreational and competitive. The ice hockey camp teaches the basics of the game through organized drills, off-ice conditioning and Friday scrimmages. (561-963-5900, pbskatezone.com)

Research Roundup Palm Beach County is a hotbed for scientific breakthroughs. Here’s a look at what’s being discovered in some of South Florida’s leading research institutes. Florida Atlantic University is taking steps toward treating certain crippling neurological impairments. The university has joined forces with Eco Neurologics Inc., a start-up company headquartered on campus, to develop drugs to treat epilepsy, migraines and stroke. Dr. Ken Dawson-Scully, an assistant professor in biological studies, received a $353,000 grant towards the research and will act as the lead scientific consultant. (561-297-0777, fau.edu) In 2014, the Obama administration will roll out a $100 million research initiative to develop a comprehensive map of the brain’s activity. The project, titled Brain Research Through Advancing Innovative Neurotechnologies, or BRAIN, has earned the support of the Max Planck Florida Institute for Neuroscience, which already employs nine research groups focused on unearthing the mysteries of the brain. In a statement, Dr. David 98

Fitzpatrick, the scientific director and CEO of the Jupiter institute, aligned his organization’s work with the BRAIN project: “Our mission focuses on the development and implementation of new technologies that allow us to visualize the structure, function and development of the neural circuits. These research efforts are exactly what the BRAIN initiative aims to achieve.” (561-972-9000, maxplanckflorida.org) Scientists at the Scripps Research Institute in Jupiter are making headlines for their research in anti-addiction medication. Using a grant from the National Institute of Neurological Disorders and Stroke, Paul Kenny is overseeing a study to develop drugs that will help people break their addiction to nicotine. For help developing the drug, the scientists are consulting with a panel of industry experts; the working relationships could eventually lead to a marketable medication. Though far less common than the scourge of tobacco, diseases caused by misfolded proteins called prions are terrifying ailments, resulting in symptoms such as dementia, personality shifts and hallucinations. A group of Scripps scientists, led by Corinne Lasmézas, has identified a pair of drugs that show promise in the treatment of prion disorders. Published in the journal Proceedings of the National Academy of Sciences, the study focused on the drugs tacrolimus and astemizole, which are already approved for human use for other purposes. Esthetic and self-ligating braces as well as invisalign treatment, which straightens the teeth without the need for conventional braces. What differentiates your practice from other specialists in the field? I am a firm believer that orthodontics involve far more than just straightening teeth. What are the latest developments/ innovations in your field? The trend in all surgery is noninvasive procedures. Plastic surgery is no exception. There have been significant advances in minimally invasive techniques for both facelift and body contouring. We are now using sound and light technology for body contouring. Fillers and implants also are rapidly growing sciences. These technologies are constantly improving as well with new products coming to market almost weekly. What differentiates your practice from other specialists in the field? Our practice is a boutique practice, and I consider my role to be as much advisor as it is surgeon. I take the time to study and research emerging technologies. I only select those that are going to offer reproducible, longlasting results for my patients. What do you do for fun? I have three children, ages 7 years, 5 years and 14 months. When I am not working, I am spending time with them. I also enjoy flats fishing in the Everglades. Ponce De Leon was right 窶認lorida is paradise. Office Contact: Terry Snyder 1500 N. Dixie Hwy., Suite 304 West Palm Beach, FL 33401 561.833.4022 drdanielkapp.com

When selecting a specialist in Dermatology, what are the key criteria? When selecting a Cosmetic Dermatologist or Plastic Surgeon, one must always look for their board certification specialty. Credentials and awards are also a good sign that the doctor “has the eye”. Find a practice that is always busy and you can be fairly certain that they have a clientele of satisfied, repeat patients. Check that the cosmetic physician offers top technologies and the most natural looking artistry. What are the latest developments/ innovations in your field? I have added several new instant fillers as well as laser and cosmetic technologies to my arsenal of age reversing programs.
