If someone asked you to describe your favorite room at home, how would you answer? For me, it is without a doubt the dining room. Never mind that my 6-year-old daughter has colonized it as her personal crafting space, oblivious to my gripes about glitter on the Oriental carpet. When we’re not making bead bracelets and paper constructions on the dining table, we’re making memories with our nearest and dearest. In my opinion, entertaining is one of the joys of home. There’s no warmth like that of sharing good food, great conversation, and a few laughs with family and friends. For this month’s home-and-design-themed issue, we posed the same question to a handful of local tastemakers—and were delighted, and in some cases amused, with the replies. Mimi McMakin, whose family roots in Palm Beach go back several generations, loves her “big room,” which she calls “a spectacle in itself.” Having been a church nave in a past life, the room is indeed a spectacle—in the most charming way possible. Pink Power In observance of Breast Cancer Awareness Month, we’re raising a glass with one of our favorite pink-colored cocktails, a twist on the classic watermelon gin fizz.

Ingredients (Serves 4) 6 cups of seedless watermelon, cubed 6 oz. of Plymouth Gin 8 tbsp. lime juice 1 1/3 cup soda water (can substitute with ginger ale) 4 rosemary sprigs Place two cups of watermelon cubes onto a baking sheet lined with wax paper. Make sure to evenly space the cubes, and then freeze; these cubes will act as the perfect substitute for ice. Place the remaining four cups of watermelon in a food processor or blender and puree. Strain the juice equally into four Old Fashioned glasses filled with frozen watermelon cubes. Stir in gin (1 1/2 oz.) and lime juice (2 tbs.) and top with soda water (roughly 1/3 cup) per glass; garnish with a rosemary sprig.

What motivates you to tour at this stage in your life? First of all the money, but mainly the adventure. I was thinking of going on the road, and then John asked me to join him and I thought, “That sounds like fun.” I haven’t been to many of the places we’re visiting. The show will include some musical numbers. What will they be like? Will you revive any Monty Python hits? [They’ll be] completely different, since we don’t have 20 singers and dancers and an eight-piece band. It’ll be me and a guitar. Probably some oldies and a few less well known. How do you feel about “Always Look on the Bright Side of Life,” from Monty Python’s Life of Brian, becoming a popular funeral song? It’s wonderful. Of course, I don’t get royalties, but somehow that song seems to have become an anthem that cheers people up, so that makes me feel really good. I was proud to sing it at the London Olympics. In three words, how would you describe yourself? Far too old. In three words, how would you describe John Cleese? Far too tall.

Founded in 2009 by PGA Tour golfer Ernie Els and his wife, Liezl, following their son’s autism diagnosis, the Els for Autism Foundation is dedicated to helping those on the autism spectrum lead positive, productive, and rewarding lives, a mission made all the more possible with the addition of this new facility. The Kennedy family’s famed Palm Beach estate made headlines in May when it sold for a reported $31 million, but it wasn’t the only local landmark frequented by President John F. Kennedy. In addition to his excursions on the presidential yacht the Honey Fitz—available for private use in Palm Beach County—Kennedy visited Peanut Island to greet visiting dignitaries. Peanut Island also houses the Kennedy Bunker, a fall-out shelter for the president in the event of a nuclear attack. the Palm Beach Maritime Museum offers tours of the roughly 1,800-square-foot bunker, which is outfitted with an emergency hatch, a communication center, and several bunk beds. The bunker may not be haunted, but its eerie atmosphere and the promise of what might have been are enough to give anyone goose bumps. (561-723-2028)
Wild at heart Floridians are no strangers to dolphins, but few are as familiar with these intelligent marine mammals as Dr. Denise Herzing. As founder and research director of the Jupiter-based Wild Dolphin Project, Herzing is on a quest to better understand the inner worlds of these remarkable creatures. Established in 1985, the Wild Dolphin Project is conducting field research on roughly 100 Atlantic spotted dolphins living in the Bahamas. “The initial mission was to just plant ourselves in a place where we could observe a wild dolphin society underwater, where you see how they behave and how they communicate,” Herzing says. Herzing and her colleagues spend 90-100 days a year on board a 60-foot catamaran, noninvasively observing the dolphins in their natural habitat. “The idea was to see what they would show us,” she says. “Would they show us their individuality, their society, their communication?” These spotted dolphins, which Herzing describes as a very gregarious species, are doing just that. The Wild Dolphin Project also is attempting to communicate with the animals by mimicking and creating whistles using an underwater computer. “We’re trying to expose them to some of the signals and see how they might try to bridge the gap with us,” Herzing says. These efforts have resulted in hefty discoveries in dolphin communication, intelligence, and sociality. Above all, Herzing hopes her efforts and findings will pave the way for future generations of wildlife researchers. (561-575-5660, wilddolphinproject.org)

Nestled on 12 acres in a sleepy fishing village, Cape Weligama boasts such luxuries as openair pavilions, well-appointed suites, and a crescent-shaped infinity pool.
Beachfront Beauties Sri Lanka’s south coast epitomizes wild beauty, and such allure has prompted hoteliers to stake a claim in this newfound paradise. In 2004, Aman Resorts hedged its bets on this unknown tract of exotica when it tasked celebrated Sri Lankan architect Geoffrey Bawa to develop the region’s pioneering resort, Amanwella (amanresorts.com), on a prime swathe in the town of Tangalle. In the last year, however, Sri Lanka’s luxury scene has exploded, relatively speaking, with three posh newcomers longing to steal the spotlight from the coast’s original five-star showstopper. In October 2014, the fishing village of Weligama woke up to big changes
when Cape Weligama (capeweligama.com), a cliff-top estate strewn with 39 mega-villas and open-air pavilions, debuted to a groundswell of rave reviews. Ani Villas Sri Lanka (anivillas.com/srilanka) arrived next in August. Composed of a pair of private-hire estates along Dickwella Beach, Ani Villas is the ultimate in luxury travel. Each compound has either seven or eight mammoth Reda Amalou–designed bedrooms as well as an oceanfront infinity pool, a private wine cellar, and a personal staff. Most recently, the growing Anantara brand expanded its portfolio into Sri Lanka with the 152-key Anantara Tangalle Peace Haven Resort (tangalle.anantara.com), capturing all the
hallmarks one would expect from a property on par with Ritz-Carlton or the Four Seasons. Regardless of which of these four resorts you choose, each will deliver its own incarnation of paradise, fostering the ultimate settings for languid days of rest and relaxation.

Amid Palm Beach’s sprawling Mediterranean estates, an assemblage of smaller historic homes populate the midtown area, filling the coveted “Sea” streets: Seabreeze, Seaspray, and Seaview avenues. It is here that retired financier and philanthropist Tom Quick found the perfect cottage to serve as a charming guesthouse for his outof-town visitors. The yellow-shingled home, on Seabreeze Avenue, presents an appealing contrast in
style and size to Quick’s British Colonial estate a few blocks away. Whereas his main home is elegant and formal—the perfect platform for large-scale entertaining—this new residence has become a charming little sister of sorts. Although the flavor of the “Sea” streets has been changing, as some of the older cottages are being replaced with larger homes, this was not the direction Quick wanted to take for renovating his prop-
erty. Built in 1910, the cottage represents an important era gone by and was once the home of Lou Gropp, the former editor-in-chief of House and Garden, Elle, and House Beautiful magazines. Quick intended to recapture and modernize its original magic. “My goal was to maintain the integrity of the house and yet update it somewhat to what people are looking for in homes today,” he says.

It was not an easy transformation. In fact, the cottage was almost torn down and remodeled because of its weathered age and significant hurricane damage that was never repaired. Quick has built model homes before but had never attempted something as bold as this project. And he relished the challenge. With a goal of creating a warm and inviting design, Quick set about implementing architectural details that would transform the home into a reimagined version of its original self. The simple yet impactful trim work of the mouldings, as well as the beadboard ceilings and paneled walls, created a classic Florida feel and helped establish a pervasive theme of understated elegance. This set a gentle, gracious tone for the charming cottage. Among all of the home’s appealing elements, the enclosed porch captured

Quick’s fascination most. Capitalizing on the area as a livable space for relaxing and socializing, he introduced wide-plank mahogany floors, installed paddle fans, and dressed up the area with strong white trim details around the openings. As a final touch, he introduced the quintessential accessory: an oldfashioned screen door. Given Palm Beach’s penchant for grand loggias, this single touch is refreshing in its simplicity. Altogether, these efforts conjure up a definite nostalgia. “With the ceiling fans and beadboard, it all goes back to what was used at the turn of the century,” Quick says. “You can imagine yourself sitting there, all those years ago.” With this groundwork laid, Quick enlisted the talents of local designer Gil Walsh to continue his vision in
the interior, incorporating elements from Quick’s massive cultivated home goods collection. An assortment Walsh nicknamed “Tommy’s warehouse,” the curated lot consists of a wealth of furniture and artwork that had spoken to Quick over the years and that he hoped would one day find the perfect home. Thanks to the Seabreeze property, many finally have. Given the diminutive size of the cottage and the graceful hand Quick had taken with the classic detailing, Walsh knew restraint was key in appointing the interior. “I made sure that those architectural details were kept intact and were shown off with his collection and additional furnishings,” she says. Walsh’s selections highlight the stunning bones of the home, never competing with or obstructing their brilliance. She avoided the clichés of

tropical interior design by approaching the project with a light hand, peppering the interior with Quick’s treasures. Coastal touches are whispers and suggestions, rather than loud, statement-making pieces. For instance, the living room features old Wicker Works furniture, which Quick had purchased in a Palm Beach estate sale, covered in a colorful, tropical vintage fabric. The green and deep purple hues play off a painting by renowned artist Hunt Slonem that hangs above the fireplace. A
friend of Quick, Slonem is known for his Neo-Expressionist painting of tropical birds; this piece is one of numerous Slonem works Quick has acquired in his perennial pursuit of fine art. “I’ve never had a wall that hasn’t been covered by things,” he admits. For the dining room decor, Walsh was inspired by the recently released lettuce ware plates from the collaboration between Dodie Thayer and Tory Burch. The preppy plates, steeped in Palm Beach tra-
dition thanks to Thayer’s local reputation, add an uplifting color element to the room and, along with red accent pillows, brighten the earth tones of the McGuire dining furniture. Upstairs, two bedrooms serve as a study in contrast. The first evidences a classic Hollywood glam feel with a mirrored chest, Venetian mirrors, and a wheel-backed chair covered in leopard spots, all from Quick’s cache. The second bedroom is more traditional and tailored, evidenced by a patchwork cov-

As one last important element, Walsh selected simple blinds, which remain open most of the time. The infusion of natural light adds an ironically youthful glow to the historic home. While Quick was delighted with the results of the project, the true test of the cottage’s success came in the end of January, when the

house welcomed its first guests. Of course, the home’s simple grace won everyone over. “They were having such a good time, I finally had to tell them, ‘The inn is going to be closed Monday afternoon at 3:00. Don’t get too comfortable,’” Quick laughs. But when it is filled with visitors, who enjoy iced tea on the porch and quiet, sunny afternoons in the well-lit interior, the historic cottage becomes a quaint, cozy haven glowing with seemingly effortless authenticity. «

Mimi McMakin
Mimi McMakin, principal at Kemble Interiors, believes a home should be an extension of the person who resides there. “We look at interior design as a way to create a home that reflects the personality of its owner,” she says. “All people are different, so every house we do is different.” Her own Palm Beach home inhabits the Old Bethesdaby-the-Sea Episcopal Church, and her great room reflects her sense of sentimentality, flair for drama, and knack for accumulation. “I am extremely sentimental and sometimes dramatic,” she says. “This room houses generations of treasures and is a spectacle in itself.” Regardless of whether she’s eating, vacuuming, or blowing bubbles, McMakin loves to lose herself in the layers of knickknacks, only to find herself again under the playful glow of the parasols. 62

Close for Comfort Joseph Pubillones
Joseph Pubillones has called West Palm Beach home for 20 years and finds his own piece of paradise in the most-used room in his house. “My great room is my haven,” Pubillones says. “It is my living room, dining room, library, and family room all rolled into one.” His goal for the space was to form distinct areas so his family could accomplish separate tasks while still spending time together. When alone, Pubillones takes in the room’s view of treetops, a golf course, and lakes and peruses his custom-built shelves packed with design books and a growing Cuban art collection. More than anything, he enjoys basking in his cozy surrounds. “Comfort is the ultimate luxury,” he quips.

For Luba King of LK Design, the kitchen is truly the spirit of her Delray Beach home. “Kitchens have always been perceived to be the heart and soul of the family home, where family and friends gather to be together,” she says. Her kitchen reflects her home’s overall aesthetic and also embraces functionality. “First and foremost, I love to cook in my kitchen,” she says. “It was important to have a design that could also incorporate more than one person when preparing meals; this allows for having family members be part of the preparation and for enjoying each other’s company.” In quiet moments, King has a cup of coffee and reads the newspaper at the table or sits at her island bar to watch boats glide along the Intracoastal.

Exotic Escape SEAN RUSH When not working at his atelier on Antique Row, designer and fine artist Sean Rush centers himself in the living room of his 1927 Spanish Colonial home in West Palm Beach. “My home is my sanctuary,” he says. “[This room is] where I relax after a long day, draw in the morning with a cup of coffee, and curl up with a friend for a great conversation and a glass of wine.” Influenced by his trips to Morocco, Rush wanted his living room to convey masculinity, a sense of travel, and relaxation. He achieved this by marrying simple and organic pieces, like Phillip Jeffries wallpaper and a Ralph Lauren sofa, with exotic elements including the Moroccan brick fireplace, Moucharabieh screens on the windows, and goatskin shades for the original Mizner factory light fixtures. Above all, the space exudes Rush’s tastes and experiences. “My homes have always been deeply personal, reflecting who I am,” he says. “I believe your home is an extension of your personality.”

Susan Lachance Boca Raton interior designer Susan Lachance spends her free time in this immaculate version of the great outdoors. “There is nothing better than relaxing in my covered loggia with a glass of wine, letting my mind wander and watching the golfers play the seventeenth hole,” Lachance says. When conceptualizing this sanctuary, she aimed to create a Palm Beach villa in Boca Raton. “My background is architectural, so I tend to think in terms of how I can improve the architectural envelope,” she says. She accomplished that by using limestone columns and crowns as opposed to the typical faux stone, creating warmth via cypress ceilings, and installing a negative-edge pool. Just how much time does Lachance spend in her haven? “Not enough,” she says.

In western Delray Beach, not far from shopping centers and residential developments, is a 50-acre ecosystem with water so rich, birds flock to feed and roost. The man-made Wakodahatchee Wetlands was designed as a filtration facility for reclaimed water, which was further cleansed by wetlands and used for irrigation. As a bonus, the created habitat attracted an abundance of wildlife, including 140 species of birds. Captivated by the sanctuary, Delray Beach-based photographer Jerry Rabinowitz began shooting there a year ago. “The experience at Wakodahatchee is very intimate,” he says. “We are privileged to peek into this community, where birds build their nests, feed their families, and grow from hatchlings to adolescents to adults.” Rabinowitz intends to parlay the close encounters into a monograph featuring black-and-white images, which focus the eye on form rather than color. King Claw Named after their industrial-strength shells, stone crabs have become a seasonal, not-to-be-missed staple in southern coastal communities. Between October and mid-May, Floridians consume mountains of this compact crustacean, enamored by the sweet treasure trapped within their black-tipped claws (the crab’s only edible protrusion). Once caught, crab claws should be boiled immediately and then served (or frozen); otherwise, the meat attaches to the inner shell, making it difficult to remove. Know when a stone crab is past its due date? “You can determine its freshness by the way the shell separates from the meat,” says Anthony Sicignano, executive chef at The Breakers in Palm Beach. “It should fall away easily, without sticking.” Turn the page for a quick primer about the Sunshine State’s most edible symbol. Season: October 15 through May 15. Crabbers can drop their traps on October 5 but must wait 10 days to start retrieving them. The season kicks off with the annual parade of boats and blessing of the fleet in Everglades City. Many connoisseurs believe the most succulent crabs are harvested before January 1. Size: Stone crabs are classified according to the size of the immovable part of their claw. Standard sizes are medium (five to eight claws per pound), large (four to five), jumbo (three), and colossal (one to two). As with lobster, opinion is divided on whether the smaller claws are sweeter. Serve: Chilled with a spritz of lemon or lime, or with a traditional mustard sauce (cocktail sauce is also acceptable). “Use a good quality mayonnaise and Dijon mustard, in 50/50 proportions,” Sicignano says. “Add salt and pepper to taste and a dash of Tabasco if you prefer. The secret ingredient is a teaspoon or two of Coleman’s dry mustard. You’re aiming for a pale yellow or golden color.”

And we’re developing a steak-house-style, pop-up restaurant concept for AB&G on Saturday nights. What additions do you plan to introduce at Graze, AB&G, and Jové Kitchen & Bar? We’ve created some great handmade short pasta specials at Jové and three rubs for AB&G’s pop-up steak menu, including one we call “Coco Pops,” which is made with cocoa. At Graze, the dishes will remain casual, but this is where I think a lot of my California and Caribbean experience is going to create some great, flavorful casual cuisine. Local farms and food providers will also be the backbone to the new food ideas developing there. You’re known for your gardening and farm-totable focus. Very excited. We have a wax apple tree, which I haven’t seen since I was in the Caribbean, and there’s a smaller garden by Jové that will grow everything a mixologist could dream of. The future for hydroponics looks bright and I hope to bring my friends from Urban Cultivator into the building and to get a microgreen grower. What Palm Beach restaurants are you excited to try? I am still unfamiliar with many of the restaurants in Palm Beach. I attended the Taste of the Nation event in West Palm Beach my first week and Buccan and Meat Market caught my eye. Café Boulud also served a phenomenal porcetta, so I want to try that restaurant, too. When you aren’t in the kitchen, where can we find you? I am an avid fly fisherman and a hobby glass artist. I’m also learning how to make chef knives. I was a goalie in the old timers’ league in Whistler so I’ll be checking out the local hockey offerings, but mostly I will be cruising about with my family—when Dad’s off, we always make the best of it. —Kerry Shorr

A Brewing Battle
The foam on the heady craft beer craze loses some of its fizz

Is the American love affair with craft beer starting to fade? A number of indicators point in that direction. While the top craft brews are still in great demand, the competition is fierce. There are nearly 3,000 craft brewers in the United States today (including brewpubs and microbreweries). In 1978, there were 42 breweries in the entire country. Not only is the category crowded, brewers also are resorting to more bizarre flavors to capture the attention of the public. It’s now possible to find avocado-honey ale, banana-split chocolate stout, and coconut IPA as well as beer that tastes like bacon, coffee, Key lime pie, or pizza. This cornucopia of taste sensations runs counter to the retooled image of beer that brewers have been trying to project. Beer was supposed to be the new wine. Other beverages have been touted as such—coffee and spirits come to mind, and both of those have spawned flavors that defy the imagination (witness the PB&J vodka released in 2012 by Van Gogh). Regardless of how hard you search, though, you won’t find wine flavored to taste like bacon, Key lime pie, or avocado, although you’ll come across many wines that complement those foods to perfection. Craft beer has failed to establish a place for itself in America’s finest restaurants for one simple reason: It’s not expensive enough. Yes, there are beers that cost $100–$1,000 per bottle, but these are Since the 1970s, rarities. Palm Beach County is now home to a plethora of craft breweries and craft brew festivals, including the Jupiter Craft Beer Festival.
Texas; Red Stripe (Jamaican) in Latrobe, Pennsylvania; and Beck’s (German) is brewed in St. Louis. It might be that the very idea of craft beer doesn’t fit in with the lifestyle of most Americans. David Chang, just about everyone’s favorite twenty-first century fusion chef, created quite a stir when he wrote a piece for GQ magazine last year explaining that he always drinks the worst and cheapest beer he can find. When you’re at the ballpark or you’ve just finished mowing the lawn on a hot day, nothing beats an ice-cold Miller or Bud. Regardless of any perceived trends, craft brewing is expanding in Palm Beach County. Successful start-ups include the Tequesta Brewing Company and its Palm Beach Gardens affiliate, Twisted Trunk; Funky Buddha (a Boca brewpub that morphed into a full-blown brewery in Oakland Park); Due South in Boynton Beach; and Saltwater in Delray Beach. To sample the best of both local and national brews, plan on attending the Jupiter Craft Beer Festival, held in January at Roger Dean Stadium. «

Despite the popularity of craft beer in recent years, few drinkers seem to understand what it really is. According to The Brewers Association, craft brewers may produce as many as six million barrels annually. In an attempt to retain market share, large brewers have contributed to this confusion by releasing beers that look like craft brews. Earlier this year, a consumer in California filed a class-action lawsuit against MillerCoors for marketing Blue Moon as a craft beer. MillerCoors turns out 76 million barrels each year, and none of its eight brands qualify as craft brews. “Imported” beers can be just as befuddling. Foster’s Lager (touted as Australian) is made in Fort Worth,

Well, the sense organ associated with that feeling might have farreaching implications for the treatment of pain. As outlined in a paper published in the journal Nature, the wasabi receptor, or TRPA1, is a crucial molecule in the pain pathway. These receptors send distress signals to the brain when they encounter wasabi and other sharp chemical odors like tear gas and air pollution caused by fires. Researchers recently recreated the receptor’s structure—a vital advancement that allows pharmaceutical companies to better understand its mechanics. These drugs could result in fewer side effects, such as addiction, and stop chronic itch, as the wasabi molecule activates itch sensations. (nature.com)

Women come into my studio and purchase activewear for traveling; it makes sense—it’s fashionable, doesn’t wrinkle, and so easy to pack, taking up almost no space in your luggage. What are some common materials used in activewear, and how should people care for them? Whether it’s a Supplex Lycra blend, recycled plastic bottles (as with our Teeki leggings), or organic cotton, it’s always best to wash with like
materials in a gentle cycle and hang to dry. Wash all and only your workout attire in one load. Never use bleach or fabric softeners. The fabric softener will defeat the dry-fit odor-reducing properties, and bleach will destroy elasticity. What are your favorite activewear trends? I love the loose, flowing tops and open backs. The sports bras are made to be seen, with weaved straps and unique design elements that we haven’t seen in the past. Gone are the days of trying to hide your bra straps. Yoga mats are important purchases. What should people look for when purchasing one? Always look for closed-cell construction; it prevents moisture and bacteria from absorbing into the mat, and it cleans easily. Secondly, you want to ensure it has the right amount of cushion to support your spine and joints. Too much cushion will compromise your balance, which could lead to poor alignment and injury. Lastly, you want to consider the surface. If you’re sweating a lot on your mat, you want to make sure you choose a mat that prevents slipping. Be careful not to get a mat that is too sticky, or it will be hard to move freely through certain poses. I cannot live without my Manduka Black Mat Pro; it’s my best-selling mat for all of these reasons, and it’s backed by a lifetime warranty. The rest of the toppings are up to you; some healthy options are bean sprouts, radish slices, almonds, or tomatoes.

The work of Japanese-American artist Jimmy Tsutomu Mirikitani can be described in three words: indomitable, pragmatic, and playful. Born in Sacramento, California, and raised in Hiroshima, Japan, Mirikitani returned to the United States at 18 with the dream of becoming an artist, but was forced to stay at an internment center during World War II. Throughout this and other tumultuous life events, Mirikitani found solace in art. Beginning October 6, the Morikami Museum and Japanese Gardens in Delray Beach showcases the late artist’s work and spirit in the exhibition “Jimmy Tsutomu Mirikitani.” The 30 mixedmedia creations on display undercut powerful themes, such as war and racial discrimination, with the healing effects of hope, forgiveness, and cats. Halloween Happenings Many Palm Beach County organizations are hosting spooktacular events throughout October, and three in particular will leave you screaming with glee. First up on October 10, the Historical Society of Palm Beach County hosts its annual Scarecrow Festival, which pokes fun at the Halloween icon with scarecrow competitions, haystack hunts, pumpkin decorating, and a pie-eating contest. How did breast cancer impact you as a musician? Music brought me great comfort and tranquility. When my emotions were gathering up and would not come out, nothing was as efficient as music to launch the tears. What advice would you give to young, rising talent? Let your instrument speak from the heart. You owe it to the public to share your music through your emotions. Any plans for your visit? This is not my first time in Florida, but I always try to extend my trips so I can enjoy the scenery and the warmth. I have friends who live in West Palm Beach, and we’ll spend a week celebrating friendship with good food, sun, and lots of golf.
