These experiences led to a lifelong commitment to give back—a commitment shared by his family. Each generation of Lichtenbergers remembers that others have helped them along the way and feels obligated to pay it forward. Lisa’s interest in philanthropy began at an early age, and today her hands-on approach allows her to personally observe the impact of the family’s generosity. Inspired by both Bill and his own father, Kurt devoted his career to improving education so others can pursue their dreams. As a teenager, Emma chose to spend her birthday with Habitat for Humanity, launching her drive to serve her community. She now helps small nonprofits find grant funding. Like his sister, Blake lives a lesson learned early—the most valuable gift is your time. As he has grown, his gifts of time and money for those less fortunate have grown too. ho doesn’t love a good brunch? Spending a Saturday or Sunday morning with friends enjoying delicious food and bottomless mimosas is always a great way to kick off a lazy weekend day. And while there are endless amazing places to enjoy a stellar brunch (and view) in the area, it’s also sometimes fun to relax and host a gathering at your home. Just ask our cover stars, Georgiana and Kevin Hawken. Back in February, the Stuart couple invited us into their home, where Georgiana hosted a fabulous brunch with some of her girlfriends. Their gorgeous home sits on the St. Lucie River in North River Shores, and the food and drinks were catered by Chef’s Table—perfection. It was so nice meeting the Hawkens and getting to know Georgiana’s girlfriends, all lovely and smart women who know how to have fun! We give you a peek inside their get-together in “The Brunch Bunch,” starting on page 26. If you’re like me and can’t start the day without coffee, I think you’ll enjoy our feature “The Art of the Bean,” beginning on page 32. We spoke to a few local coffee experts to get the lowdown on all things java, focusing on making informed decisions about what you’re consuming, where the beans come from, and doing right by farmers and the environment. ver the years, I have taken on the role of planner of family vacations and couples’ getaways, including making dining reservations. My husband, Keith, and I have had many foodie adventures, the most recent one in February when we traveled to Sea Island, Georgia for Valentine’s Day with some friends. We didn’t have a single bad meal during our trip, and the city was just so magical! Luckily, our friends share the same fondness for delicious food, interesting drinks, and a wonderful atmosphere as we do. My favorite memory of the trip came on the last night. We all went to The Lodge at Sea Island and dined downstairs in the wine cellar. There was a bagpiper playing, which signals the start of happy hour, and the chef did such a phenomenal job. You can see some memorable snapshots from that night below. I always look forward to our annual food-themed issue—who doesn’t love delicious cuisine and yummy drinks? I especially love a good brunch, and I am sure our brunch feature will inspire you to host one yourself—or book one for the weekend. Do you have any favorite spots? he record-breaking number of Florida manatees that were reported dead throughout 2021 is 1,101, largely due to starvation caused by seagrass loss. For environmentalists across the state, the unprecedented mortality event was a call to action. The Treasure Coast Manatee Foundation and Manatee Observation and Education Center (MOEC) in Fort Pierce have met the call, teaming up to bring one acre of seagrass to Moore’s Creek this month, with a half-acre APRIL 2022 | STUART

expansion set to be installed at the Fort Pierce Yacht Club later this year. “We’ll install native seagrass planting units in Moore’s Creek, and we’ll be protecting them with herbivory exclusion devices for about a year,” says Ryan Brushwood, lead biologist at Sea & Shoreline, an aquatic-restoration firm contracted by MOEC to install the seagrass. “We’ll be doing routine maintenance and monitoring for three years to make sure the plants have the best chance of survival.” The benefits of seagrass-restoration projects are endless: Seagrass provides food, habitat, and nursery areas for numerous species, and it cleans the surrounding water and helps take carbon dioxide out of the atmosphere. Although vital, seagrass is not always the first thing to come to the public’s mind when advocating for the health of waterways. Luckily, manatees are the perfect mascot for the cause. “Manatees are a charismatic megafauna,” says MOEC Manager Rachel Tennant. “That means humans tend to identify with the species. We’re predisposed to care because we naturally take a liking to them.” Local support for the project shows manatees have stolen the hearts of the Treasure Coast community, with close to $80,000 being donated by individuals and through other efforts such as a seagrass-dedicated cider release by Pierced Ciderworks and a silent auction featuring manatee artwork created by South Florida artists. It’s a reminder that when the community bands together, anything is possible. “There’s a tendency to feel overwhelmed, but there’s always something that can be done,” says Tennant. “We can do this—and we are doing it. embers of Tara Vaughn Baldwin the U.S. military live by a sacred commitment: Leave no one behind. And that mindset carries forward long after the battlefield. For Tara Vaughn Baldwin, the sister of a fallen soldier, fulfilling the promise of “no one left behind” means taking care of the children of fallen service members. Baldwin is the founder of Stuart-based Operation 300, a nonprofit that hosts weekend adventure camps for children who have lost their fathers to military service. Kids are paired up with a male to enjoy activities through the weekend, which may include things like sailing, fishing, bowling, archery, and making bonfires. “One of the biggest things [for these kids] is knowing there’s somebody out there who cares about them, simply because of who their father was and what he did for our country,” says Baldwin. Operation 300, which Baldwin says is almost entirely led by volunteers, celebrates its tenth anniversary in September and remains focused on its impact for the next decade to come. This year, the organization will host seven camps, each of which will benefit 40 to 50 children and their mothers. The next retreat takes place April 22-24 (with upcoming retreats also May 20-22 and July 22-24). In late 2021, programming expanded to include Gold Star Father Retreats, which are aimed at fathers who have lost a child serving in the military. The nonprofit also recently received a generous gift: Pulte Homes donated 20 acres of land in Stuart that will serve as Operation 300’s permanent home base. It is just one example of the generosity the nonprofit has received from community members. “Martin County is one of the most philanthropic and generous communities,” says Baldwin. “The spirit here is that if one person wins, the whole community wins.” op300.org —H.M.

engineering at the University of Pittsburgh. It wasn’t until after she earned her degree that she realized she wasn’t cut out for a cold weather existence. “I came back to Florida to get warm,” says Williams, now 38. She moved to Florida’s west coast, to Sanibel Island, and eventually settled in Stuart two years ago.
She started working remotely for a Pennsylvania-based company, residing in Florida but traveling constantly for the job. Five years later, she needed a change. “I was looking for joy, so I started doing freelance photography,” she says. “I’d shoot mostly landscapes, water-oriented subjects, and underwater scenes.” One day, while paddleboarding Sanibel’s J.N. “Ding” Darling National Wildlife Preserve, she passed a mangrove-lined shoreline and noticed it was littered with fishing lines and lures. Disheartened, she decided to return to the site the next day and clean it up. Nippers in hand, she began freeing all kinds of flashy-colored hooks and rings that were tangled in fishing line along the shore. In the days that followed, she started regularly visiting the Blind Pass waterway between Sanibel Island and Captiva, where a lot of people fish. She was shocked by the debris she encountered. “There was a ton of trash,” recalls Williams. “I saw an ibis skeleton wrapped around a mangrove and fish and other creatures tangled in lines. I hate to see wildlife destroyed.”

ike most people who grow up in South Florida, Marissa Williams has a natural affinity for the outdoors. She spent her youth exploring local waterways— swimming, surfing, and fishing in and around her hometown of Jupiter. In 2013, she moved north to study biomedical

She made it her mission to clean the 100-foot stretch of shoreline anytime she was outside paddleboarding, fishing, or hanging out on the beach. She often took her frustration to social media, posting photos she had taken of the various lures and tangled rope she collected. “When people saw this and asked what I do with the lures, I started giving them away to local artists to use in their work,” she says. Then something clicked: Williams began reworking the discarded lures she gathered with new split rings and hooks. Some resembled dangling earrings, pins, and other jewelry; others looked like colorful pieces of art. And she started selling the repurposed trinkets. Her very first sale was to a charter captain, who bought them for clients he took out on his boat. “I sold him 120 of them,” she says. “He was local and liked what I did. He wanted to educate others on this idea. I think bringing awareness to this issue helps fishermen who are just starting out to avoid picking up the habit [of tossing their gear], where it ends up wrapped around a bird.” Williams donates 50 percent of her profits to local wildlife and conservation efforts, including Loggerhead Marinelife Center in Juno Beach, Clinic for the Rehabilitation of Wildlife in Sanibel Island, and various animal rescues. “I want to do my part and make a difference,” she says. To keep up with the growing demand, Williams launched an online shop in 2019, Salt Collins Lures (lures.saltcollins.com). Her website boasts a rotating inventory of designs, which she sells for between $20 and $27 for a set of four. She is also
branching out to create Christmas ornaments ($10-$15 each). As she continues to clean up local shorelines, one of Williams’ goals in the coming months is to expand her photography business. “Taking photographs makes me
happy,” she says. “I want to continue cleaning up and selling repurposed lures on a much larger scale, and I want to use my photography as education and inspiration so others will get outside, enjoy, and help preserve this beautiful coast.” ❖

What role does food play in maintaining a strong immune system? Nutrition is protective, reparative, and restorative for the body. Consuming a variety of nutrient-dense foods and adequate energy is beneficial for immune health. Inadequate intake can stress the body and make it more susceptible to illness.

What are some of the “hero” nutrients? Macronutrients are fats, carbohydrates, and protein. Fats aid the body in the absorption of fat-soluble vitamins such as D, E, A, and K. Carbs are the main source of energy in the body. Protein is essential for repair and recovery, as well as for growth and development. Micronutrients are all of the vitamins and minerals, which play a role in many aspects of health.
[serves four] Ingredients: 1 sweet potato, diced into 1-inch cubes 1 diced red bell pepper 1 cup sliced mushrooms 1 cup diced red onion 3 leeks, chopped 2 garlic cloves, peeled and halved Red pepper flakes (to taste) 1 tbsp. extra virgin olive oil � cup uncooked quinoa 1 cup water
� cup mint leaves 2 cups arugula � cup crumbled feta cheese 1 lemon (juiced) 4 10 oz. oven-baked salmon filets (optional)
Directions: If you are using salmon, cook your filets ahead of time in the oven seasoned with oil, pepper, and lemon juice. Preheat oven to 415 degrees Fahrenheit. Combine sweet potato, red bell pepper, mushrooms, red onion, leeks, and garlic cloves in a large mixing bowl. Toss well with red pepper flakes and olive oil. Place veggies on a foil-lined baking sheet and cook for about 30 minutes or until golden. In the meantime, add quinoa and water to a small saucepan and bring to a boil over medium-high heat. Cover pot and reduce heat; let simmer for 12 minutes. Remove from heat and fluff with a fork. When your veggies are finished roasting, put them in a large mixing bowl. Add quinoa, mint, arugula, and feta. Sprinkle with lemon juice. Serve alone or with oven-baked salmon filets on the side.

Which nutrients do you recommend? Some foods that research indicates are beneficial to immune health include foods that contain vitamin D, zinc, and vitamin C. Some excellent sources of vitamin D include wild-caught fish, mushrooms, and eggs. Vitamin C foods include citrus, red peppers, and berries. Zinc-rich foods include pumpkin seeds, legumes, and even dark chocolate. What about probiotics? Probiotic and

or Stephen and Ellen Tabor, the boating lifestyle isn’t a foreign concept. Previous owners of both a jet-powered boat and a pair of Sea-Doo personal watercraft—along with a Sea Ray 240 that was claimed by Hurricane Sandy at their northern home on Manahawkin Bay, New Jersey—the Tabors had already dipped their toes into the boating lifestyle. During a scouting trip to the Fort Lauderdale Boat Show last year, they found themselves admiring a beautiful 33-foot dual console by Southport Boats. A few factors appealed to them about this design. The company is based in Gardiner, Maine, and since Stephen’s mother grew up in Down East Maine, there was a sentimental aspect at play. There was also some practicality involved: The layout of a dual console was perfect for their growing interest in partaking in some extended cruises with their local boating club.

ew Orleans boasts a unique charm as diverse as its dialects. Nowhere else will you find street corners radiating with jazz ensembles and dotted with people waiting in line to indulge in fried dough. It’s upbeat and steeped in tradition, with culture aplenty. And now the new Four Seasons Hotel New Orleans stands at the ready to enhance your visit to the Crescent City. Like much of the city, the property has survived and thrived over the years. Before evolving into the crown jewel it is today, the structure housed the former World Trade Center. A

three-year, half-billion-dollar renovation has turned the skyscraper into a modern marvel spanning 34 stories and topped by an observation deck with panoramic views of the city and the Mississippi River. Lead designer Bill Rooney transformed the interiors to reflect New Orleans’ historic architecture. colonial streets. Two Presidential Suites, themed in crimson red and cobalt blue, include a fitness room and butler’s pantry. And the hotel is brimming with local art. Of note is New Orleans–based artist Dawn Dedeaux’s Water Markers New Orleans: A City Below the Sea, which stands in the lobby as a reminder of the post-Katrina floods. The two on-site restaurants—both helmed by James Beard Award–winning chefs—capture the state’s cuisine and spirit in distinct ways. At his 1920s-inspired Miss River, Chef Alon Shaya pens a “love letter to Louisiana.” Signature dishes range from a whole carved buttermilk fried chicken to a clay pot of dirty rice with duck breast, duck egg yolk, and scallions. Head up to the fifth floor to dine at Chemin à la Mer, which translates to “pathway to the sea.” Chef Donald Link’s upbringing along the waterways of Southwest Louisiana inform the offerings at this sophisticated steak house, which folds in flavors from the West Indies and neighboring regions. Here, specialty steaks reign supreme, including an immaculate côte de boeuf for two carved tableside. And what’s a trip to New
Orleans without some fresh seafood? Order from the grand oyster bar or dig into Ora King salmon accompanied by French lentils. t’s late morning in Stuart in February, and the weather is typical South Florida ambiguity. The sun is shining, then suddenly the sky is overcast and a mist of rain spouts only to end a few minutes later. Inside her home in North River Shores, Georgiana Hawken is sipping a mimosa and putting finishing touches on the decor, as Carra Crehan, general manager of Chef’s Table, is busy setting up the food and drinks the restaurant has catered for the day’s festivities. It’s brunch day with the girls, and Hawken is ready for her friends to arrive. This isn’t her first rodeo. In the 10 years she has lived in the neighborhood with her husband, Kevin, Hawken has hosted many events at their home, including a 200-guest Kentucky Derby party to benefit the Juvenile Diabetes Research Foundation, youth events for Young Life Martin County, an annual Fourth of July party for family and friends, Halloween parties, and college football watch parties. “I have always loved entertaining!” she says. “When I was younger, I used to love to help my mother prepare for hosting her bridge clubs or whatever social event was happening that day. Of course, I always got assigned the undesirable

task of polishing silver or ironing linens, but I enjoyed the excitement and formality of it all.” Throughout her college years at the University of Mississippi, she worked at a bed and breakfast. “We would host everything from holiday parties to weddings to baby showers,” she says. “That’s where my love for creating tablescapes started.” Her passion for entertaining is apparent. She created all of the stunning flower arrangements herself, which include hydrangeas, garden roses, Queen Anne’s lace, succulents, and white tulips. The table setting is equally impressive, with Pickard fine china placed atop gold chargers and antique sterling silver Gorham flatware. “I like to mix the old and the trendy together,” she says, noting that the Camellia-pattern silver belonged to her

grandmother. The water and wine glasses are Waterford Crystal; the fun gold stemless Champagne flutes were purchased from Bed Bath & Beyond. Originally from Mississippi, the self-employed mom of two boys moved to Stuart for love. She was studying business at Ole Miss in the 1990s when she met Stuart native Kevin Hawken. Kevin grew up in North River Shores, where the couple lives now, and attended Martin County High School. Now president of Stuart Web Printing, a local business founded by his late father in 1981, he was also a business student at Ole Miss in the ’90s when he and Georgiana met. The two lost touch after graduating, but they reconnected in 2010 at a college football game at their alma mater. Georgiana was living in Jackson at the time; Kevin had moved

Her friends are arriving now, and Hawken greets each woman enthusiastically and escorts them straight to the mimosa bar. The ladies sip and chat, as the soothing sound of jazz fills the air. The music selection, says Hawken, was a no-brainer: “Growing up, my family spent a lot of time in New Orleans visiting family and friends. Jazz brunches are a big part of the culture there, so I’ve always associated jazz music with brunch.

or the countless masses who stumble out of bed bleary-eyed and make a beeline to their coffeepots every morning, the journey that coffee has undertaken along the way may never cross their minds. That morning cup of joe is a drop in the cup of a $102 billion worldwide industry. Next to water and tea, coffee is the most consumed beverage in the world. In the United States alone, we drink about 400 million cups of coffee a day. As with any industry of such a massive size, abusive business practices are an unfortunate reality. Over the past few years, consumers have become more aware of the manufacturing of their coffee and now look for certifications that ensure the coffee is produced sustainably. Sustainable farming means the coffee is grown with eco-friendly agricultural practices such as better crop-management and water-use practices, substituting harmful pesticides with pheromone boxes to ward away insects, using composted coffee bean waste as fertilizer, making coffee hulls into fuel instead of cutting

learn the process,” he says. He started roasting his own coffee at home, but he couldn’t drink much of it—he only drinks about a half cup a day—so he started giving it away. Soon people were asking for more. So, in 2017, he poured his newfound knowledge into opening The Roasted Record in Stuart. Mann learned early on about the importance of sourcing the right beans. “I concentrate on buying from people I know,” he says. “We know the producer and the farm, and we know how they grow their beans.” He sources his beans from growers in Sumatra, Ethiopia, Brazil, and Colombia among other countries, and he focuses on single origin beans. “We buy directly from one farm, and our labels usually include the name of the farmer,” he says. Michael Mann of Single origin coffee means the beans were The Roasted Record grown in the same crop, which helps preserve the unique flavor profile of the beans. Blended coffees combine various beans that may be similar but not all from the same origin. Single origins are more authentic to the coffee’s individual flavor, and a bean’s authenticity is an important quality to many roasters. Like Mann, Dimitar Blangev is particular about where he sources his coffee from. The owner of 3 Baristas in Stuart, Blangev focuses on finding ethical growers in countries such as Brazil, Jamaica, Costa Rica, Ethiopia, and Honduras. “Sourcing from ethical, fairtrade growers is very important,” he says. “Farmers who grow fair-trade coffee receive fair prices, which leads to a better life for the farming families.” To be labeled as fair trade, a coffee must be certified by a fairtrade organization and meet rigorous standards, ensuring the coffee was produced in an ethical manner that supports farmers and their communities while also protecting the environment. Blangev’s passion for coffee also started early. “I opened my

In addition, sustainable practices focus on garnering higher profits for the coffee farmers, who are largely located in impoverished areas. To the dedicated coffee roasters around Stuart, the journey is the most important ingredient in brewing a great cup of coffee. Michael Mann, owner of The Roasted Record, has been passionate about coffee since he was 9 years old. “My parents would go for a cup of coffee and send me next door to Ben and Jerry’s,” he recalls. “One day, I tasted their iced cappuccino and liked that much better!” An accomplished golfer, Mann turned pro at 17, then went to Appalachian State University in Boone, North Carolina, where he met Don Cox of Bald Guy Brew. Cox introduced him to the world of coffee roasting, and Mann became an avid student, connecting with other roasters and industry experts to learn everything he could about coffee. “I was pretty geeky and really wanted to

words, unlike today’s on-demand music, records require attention. When one side finishes playing, you have to get up and flip the record over. Ultimately, it’s the consumers who have the final say. “I let customers taste the coffee, then adjust it,” says Mann. Blangev also fine-tunes his coffee selections by encouraging customers to sample various roasts. “Before we introduce a new coffee, we share it with customers,” he says. In addition to roasting his regular coffees, Blangev micro-roasts, creating unique profiles for individual customers so they can have the exact taste they like. “I’m here to make your coffee the way you like it,” he says. Both agree that in order to enjoy the full flavor of coffee, the pour-over method is ideal. However, it requires patience from customers, as a good pour-over can take up to five minutes. “It’s like a meditation,” says Blangev. With so many types of coffee to choose from, consumers often have a hard time deciding which to select. Mann has some simple advice when shopping for your next bag of beans: “Look for information on the label. The more specific it is, the better the coffee. If the producer is printed on the label, you know the coffee is going to be good.” STEVEN MARTINE

The walls of the coffee shop in the Monterey Shopping Plaza are adorned with pictures of coffee beans, and Blangev is quick to educate customers on the nuances of picking the right beans. He points out beans of different colors and sizes and explains how the altitude where they are grown affects them. As a rule of thumb, adds Mann, beans grown at lower altitudes tend to be oilier with lots of body, while higher-altitude beans produce sweeter, floral brews. Says Mann: “Coffee has 160 types of flavors, so I keep myself adventurous.” The beans are only part of the equation though. How they are roasted has just as much to do with the final taste. “There is a lot of science involved,” Mann says about his roasting process, which he does by hand. He explains the air and gas controls, which allow him to adjust variables such as inner and outer temperatures, airflow, and cycle time to achieve the perfect roast. In Florida, roasters must adjust for humidity as well, and Mann incorporates that factor into the data he keeps on his roasting processes. He compares his process to the collection of vinyl he stocks on a rack along a wall in the seating area, the namesake of the coffee shop. “It’s the analog approach,” he says. “It takes time.” In other

ARABICA
ROBUSTA

EXCELSA
Arabica is one of the most popular and well-known types of coffee bean, comprising more than 60 percent of the coffee in the world. Grown at high altitudes in areas that have a steady rainfall and plenty of shade, it has a sweeter, more delicate flavor, and the coffee tends to be less acidic.
The next most popular bean is Robusta, frequently found in instant coffee and often used in blends. This bean grows best in hot climates with irregular rainfall and can grow at different altitudes. Robusta has double the caffeine as Arabica and, as the name implies, a strong flavor profile.
This is one of the most difficult types of coffee beans to source. The Liberica bean is grown in specific climates, and production is too small to market globally. Larger than most other beans in size with an irregular shape, Liberica beans give coffee a smoky taste.
Excelsa beans represent less than 10 percent of coffee production. Grown primarily in Southeast Asia, Excelsa is closely related to Liberica but has its own distinct taste. These beans are often used in blends to increase the complexity of the flavor. —Valerie Staggs

SHADE GROWN Perhaps the most ecologically impactful designation, shade-grown Arabica coffee is grown responsibly under a canopy of trees, preserving the area’s ecological biodiversity. According to the Smithsonian Migratory Bird Center, “shade-grown coffee production is the next best thing to a natural forest” in terms of attracting avian species. In turn, the birds keep pests away from the precious beans. SUN GROWN Accounting for 20 percent of coffee production, sun-grown Robusta beans can contribute to deforestation, as the protective layer of shade trees is removed. Consequently, pest-eating birds disappear, leading to increased pesticide use. Because of the decreased natural growth, farmers can plant sun-grown coffee crops in higher densities, which depletes the ecosystem and encourages deforestation. FAIR TRADE CERTIFIED This stamp bodes well for those involved in bringing beans to your store’s shelves. The designation guarantees that the coffee was grown on a small, sustainable scale in safe working conditions, had minimal impact on the environment, and that workers were paid fair wages. FAIR TRADE Although coffee bearing this stamp indicates that it was grown on large coffee plots, it does take workers into account, ensuring a standard of safe working conditions and a guaranteed local minimum wage. DIRECT TRADE As the name implies, farmers sell their coffee directly to roasters. USDA ORGANIC Coffees with this designation are grown without synthetic fertilizers or pesticides that harm farmers and the environment. The producers, exporters, importers, and roasters on this supply chain are all certified organic.

FOR THE BODY Combine half a cup of wet grounds with equal parts brown sugar and coconut oil for a luscious and invigorating body and scalp scrub.
FOR PLANTS Wet grounds can be a great “greens” addition to compost bins, upping the mix’s nitrogen content to grow happy flora, especially acidloving varieties like azalea and rhododendrons. They can also be used to ward off pests and insects—just sprinkle some grounds from your next brew on top of houseplant soil.

FIND A CONTINUUM OF CARE FOR BRAIN HEALTH AT THE KANE CENTER Brain health is one of the most important aspects of healthy aging. A variety of factors can contribute to keeping the brain strong and active including diet, exercise and taking the time to engage in mentally stimulating activities like puzzles word games, or learning a new skill. Unfortunately, even after “doing everything right” people may face living with a memory disorder. Since opening the Kane Center in 2011, the Council on Aging of Martin County has implemented a strategy to create a continuum of care and support for individuals in every point of the process, from mild cognitive impairment through late stages of dementia. “Memory loss affects a larger swath of our population than many people realize,” said Karen Ripper, the Council’s President and CEO. “As we continue to live longer, the prevalence of dementia increases. At the Kane Center, we are committed to being the trusted resource for dementia care and are continually developing new strategies to Karen Ripper, meet the needs of our community.” President and CEO
