Welcome to June and the first month of winter. As the days get cooler, we are all set at Hillstone St Lucia with our gorgeous throw rugs and pashminas available for our guests, braziers lit out on the terraces and fire places aglow throughout the venue. In this issue of Hillstone HARVEST we take a look at the first of our Real Wedding couples, Alison and James, after their beautiful celebrations in the Rosewood Room. We have a delicious winter recipe to try as well as an amazing Saturday night event offer at Saint Lucy! Ingredients 3kg peeled pumpkin, boiled 1 brown onion, chopped 1 bunch coriander roots, chopped 4 tins coconut milk 2 tblsp ground ginger 2 cloves garlic
2 tblsp ground cumin 2 tblsp sumac 1 tblsp cayenne pepper 50g fresh tumeric, chopped Olive oil
Method 1. Saute the onion, garlic, tumeric and coriander root in a little olive oil. 2. Once sweated down, add the dry ingredients and cook for 2-3 minutes, stirring so they donâ&#x20AC;&#x2122;t stick. 3. Add pumpkin and coconut milk. 4. Bring to the boil and then process until fine. Season well. 5. Serve with a sprig of coriander for garnish and crusty warm bread.
