Welcome to the June Edition We all know that charities perform important, often vital work at home and abroad, what we don’t always know is that there are local charities who don’t have the ability to advertise what they do, unlike some of the more well known ones, with this in mind I would ask readers to please see our feature on page 59 as Sussex Pet Rescue and their associated charities really need our help. As summer is well and truly on the way there are plenty of events coming up soon - The Concert Singers have an event on the 7�� June in Rottingdean, however if you miss this you can catch them again in Brighton on the 21�� June, see page 52 for details of both events. There is still time to book tickets for the Matinee Melodies Event on 10�� June - see page 35. For lots of other events please don’t forget to read this magazine! Stef Kerswell I’m a professional photographer living in Saltdean. I’ve always enjoyed taking photos but up until 10 years ago, had never owned a decent camera. Point and shoot was about it for me… I had to ask a friend what the big black cameras were called and she informed me that they were SLRs. I saved up and bought a DSLR (digital) and loved it immediately. Instant art if you got it right. I started taking photos of the local surfers (my husband being one of them) and created my first website which featured different surf sessions at Brighton Marina and other local water sports.

I still enjoy an occasional trip to the Marina (more to catch up with the surfers!) but have moved on to family shoots, portraits, weddings, pets, property developments and anything else that comes my way. I even did a couple of hospital operations which weren’t really for me. Having your photo taken is an experience you should look forward to, not dread. I like my shoots to be fun and sometimes it’s hard to get my clients to look serious when I need them to. I really enjoy portrait shoots and clients often arrive warning me that they aren’t photogenic. I love proving them wrong. It’s very rewarding seeing the expressions of delight when clients view the final results. Living in Saltdean, I’m spoilt for choice with locations. I much prefer natural photos of a family at the beach or in the forest to posing with staged smiles in a studio setting. I’ve often been asked why I don’t specialise in one field. My answer is that I would become complacent and bored doing the same work over and over. I love the variety of the jobs I do and the different challenges that come with them. One day I might be shooting a restaurant and the next a fashion editorial for a

Bridgeford’s Best Bites:
Parsley Parsley (petroselinum crispum) is an important culinary herb belonging to the apiaceae family and originating from the Mediterranean region. It possesses small and dark seeds with volatile oil content. It is now planted throughout the world due to its usage in food industry, perfume manufacturing, soaps, and creams. The word "parsley" is a merger of old English petersilie (identical to contemporary German) and old French peresil, both derived from Medieval Latin petrosilium and Latin petroselinum.
Nutrition: Rich in polyphenolic compounds, flavonoids (apigenin) and alkaloids (antioxidants). Very high in potassium and calcium, rich in sodium, phosphorus and magnesium, contains traces of iron and zinc. Vitamins: highest in C, followed by B3, E, B2, B6, B1, folate with traces of K, A. Contains alpha and beta carotene, lycopene, lutein, zeaxanthin, and a small amount of fatty acids. Folk Medicine: Parsley has been used as anti-inflammatory, carminative, diuretic, gastro tonic, laxative, for menstruation problems amenorrhea, dysmenorrhoea (missing and painful periods), in urinary tract as antiseptic and preventing stone formation; for the treatment of allergy, autoimmune, cardiac disease, diabetes, dermal disease, gastrointestinal disorder, hypertension, otitis (ear inflammation), sniffle and urinary disease. Modern Science Shows a wide range of pharmacological activity: analgesic, anti-anaemic, anti-bacterial, anti-coagulant, anti-diabetic, antifungal, anti-hypertensive, anti-microbial, anti-oxidant, anti-platelet, anti-spasmodic, diuretic, estrogenic, immunosuppressant, laxative; lowering of cholesterol, uric acid, blood sugar; protective of brain, cyto (internal chemicals), gastro, liver and menstrual activities. Anti-Cancer: chemoprotective due to flavone apigenin, abundant in fruit, vegetables, parsley and reaches human circulation; also due to results with anti-inflammatory phytochemical carnosol in prostate, breast, skin, leukaemia, liver, colon cancer, androgen/estrogen receptors. Anti-Microbial: antibacterial against natural microflora, coli forms, yeast and moulds and in Kareish cheese; may contribute to the development of new and safe varieties of Kareish cheese. Anti-Oxidant: due to flavinoids (apigenin), phenolic acids and alkaloids; protects against mitochondrial oxidative damage in mouse brain and DNA damage. Cardiovascular: anti-platelet activity of aglycone flavonoids decrease thrombosis and cardiovascular diseases. Diabetes: anti-oxidant properties of parsley extract protect against liver toxicity in diabetes. Diuretic: rats eliminated more urine from drinking aqueous parsley seed extract than water. Gout: anti-oxidant properties of parsley reduced serum uric acid levels in hyperuricemic rats; not as much as allipurinol drug, which does not change oxidative stress. Immune: parsley essential oil may be a proper suppressant for different applications. Kidney: reduced number of calcium oxalate deposits and stones in rats. Laxative: parsley reduced water absorption from the colon.
Brazil cheiro-verde "green aroma" has freshly chopped parsley as the main ingredient. Used as seasoning for meat, chicken, fish, rice, beans, stews, soups, vegetables, salads, condiments, sauces and stocks. English parsley roux-based sauce is served over fish or gammon. French persillade is a mixture of chopped garlic and parsley; parsley is also in bouquet garni. Italian salsa verde, a mixed condiment of parsley (as main ingredient), capers, anchovies, garlic, and bread soaked in vinegar; served with stew or fish. Gremolata, a mixture of parsley, garlic, and lemon zest served with stew. Lebanese tabbouleh has parsley is a key ingredient. We are happy to advise you on your health matters. “Pack up Your Troubles” and other wartime notes
Two brothers, George and Felix Powell, topped the bill as music hall artists in London before World War One. They ran a song and dance troupe called The Harlequinaders. The troupe included both of their wives, who were sisters. The brothers penned the song “Pack up your Troubles in Your Old Kit Bag.” 7 Westmeston Avenue Today.
George wrote the words (under the pen name George Asaf) while Felix wrote the music. They consigned the song to the bin before the war but then re-wrote it in marching time when war broke out. It became the most popular marching song of all. The brothers were very different, George being a conscientious objector, while Felix was extremely patriotic who took an entertainment troupe to the front.
At the outbreak of World War Two there was still no established fire station in Rottingdean due to difficulties in finding a suitable site. With the outbreak of war it was essential to have a fire station and an empty property at 7 Westmeston Avenue was requisitioned as the Rottingdean fire station. It had five full time firemen and was fully equipped with a fire engine. They held practise exercises in The Oval Park, Saltdean. Like many other entertainers, including Gracie Fields and Flora Robson, they moved to the newly developed Peacehaven after the war. George edited The Peacehaven Post and Felix became an estate agent. In their spare time they were involved in dances and shows at the Lureland Hall (now the Bells Club.) They wrote some music to promote Peacehaven including “Come to Peacehaven” and “The Lureland Waltz.”

Felix put on “Primrose Time” at the Theatre Royal Brighton but his attempt to take it to the West End led to financial disaster. Sadly this situation, together with being badly traumatised by the carnage he witnessed during the Great War, caused his suicide in 1942. Changes in the Deans I’m sure many of you are aware that after over a decade serving the communities of Rottingdean, Saltdean and Ovingdean, PCSO Chris Kingswood has been moved to the Withdean and Westdene ward. I know that he will be hugely missed by the community he worked so tirelessly for and he has definitely left some very big boots to fill. As of 4th May, I will be taking over from both PCSO Kingswood and PCSO Harrison who covered Woodingdean for eight years. Whilst I very much look forward to working in The Deans, I'm sure you can appreciate the challenges of covering such a large area previously covered by two very dedicated and committed Police Community Support Officers. I hope that I can continue to provide Woodingdean, Rottingdean, Ovingdean and Saltdean with a high level of service and do the work of my predecessors justice. I have been a PCSO for five years. During this time, I spent three years in the Moulsecoomb team specifically covering the Coombe Road, Tenantry and Bates Estate areas. I then took the opportunity to do a secondment for two years with the ‘Integrated Team for Families’ in Brighton and Hove City Council, who specialize in supporting families that face multiple challenges and disadvantages. This was a fascinating insight into the
world of family work where I worked closely alongside Family Coaches, Social Workers, Schools, Health Visitors, Youth Offending Service and a wealth of other services. I returned to my regular PCSO role in January this year and since then have worked across East Brighton. I look forward to getting to know you and getting to know Woodingean, Saltdean, Rottingdean and Ovingdean. Please do get in touch if there is anything you wish to discuss with me. SOME DENTAL HEALTH TIPS Both adults and children can greatly reduce their risk of cavities and tooth decay by taking some dental hygiene precautions: Filter the Decay You may think drinking filtered water is good for your health, but your oral health would disagree. There are a variety of minerals you need to expose your teeth to, which can help prevent tooth decay. If you drink only filtered water, you may not consume all those minerals, and your teeth could experience decay. Your local water supplier should be able to tell you how much fluoride is present in your water supply. Consider drinking more fluoride filled tap water to help prevent the decay that can harm your teeth. Cheese: The Superfood for your Teeth Cheese has many essential nutrients including high quality proteins, calcium, phosphorous, zinc, vitamin A, riboflavin and vitamin B12. Cheese can also help prevent Osteoporosis and can strengthen bones and tissue. It sounds like cheese is a miracle food, doesn't it? Now there is another reason to eat more dairy. Did you know that cheese just might help prevent tooth decay? According to a recent study eating cheese and other dairy products can help fight cavities. So next time you find yourself in the dairy aisle, consider the benefits to your teeth as you make each selection. In addition, eat plenty of vegetables, fruits, nuts, and seeds, and you will be optimally mineralised and alkalised. School Summer Holidays Approach Your children should follow healthy eating habits and proper dental care all year-round, especially in the summer months. Children will be more likely to get out of routine and snack during the summer. Do not let your child drink a lot of juice or sports drinks during the summer months, because they are full of sugar. If your child wants juice, limit it to one daily cup of pasteurised fruit juice. Make sure your child drinks plenty of water to help wash away food particles and sugars.
Dental Sealants Dental sealants are an excellent way to help prevent cavities. This is a protective coating that’s applied to the surface of the back teeth. One of the most susceptible surfaces of a tooth to decay is the biting surface, where grooves, pits and fissures exist. It is very difficult to thoroughly clean plaque and bacteria, especially when the grooves are deeper. By sealing this part of the tooth with a flowable resin material, it prevents bacteria from being able to access, grow, and cause tooth decay Teeth Grinding One of the worst things you can do to your teeth is, ironically, out of your control! Teeth grinding happens at night, usually when we are deep in sleep. Wearing a mouth guard every night can help eliminate this problem. Myofascial Release Penny Koster, Holistic Pain Therapist Myofascial Release - the gentle release of connective tissue, I have a beautiful log cabin in my garden where I work from, it is an incredibly relaxing and gentle space. I have been a therapist for many years, I have a lot of different qualifications and training, but the therapy I am most passionate about and know first‐hand works completely is myofascial release, Myofascial is the connective tissue which joins everything together, covers everything, fills all the gaps holds you together, it has the memory of your life, it relays messages to your brain faster than the nervous System, every single thing that happens to you in your life whether it be good or bad is stored in your subconscious and your fascial system, The fascia is like a giant web made up of collagen, elastin and ground substance it covers you from top to toe with no orifices unlike your skin, it moves constantly within your body, it penetrates, covers, protects every organ, muscle, ligament, tendon, bones everything- we are fascia, scar tissue is damaged fascia that has gone hard and dehydrated, that is why generally women get more lower back problems then men because they have hysterectomies, C-sections and end up with fascia that is damaged, dehydrated and hard (scar tissue) so no longer moves and consequently pulls on areas like the lower back, fascia can become hardened dehydrated and stop moving and therefore cause problems, discomfort, pain, disease for many many different reasons I generally call it life. Another example because we are one complete unit everything is connected you could have a pain in your shoulder and the pain could possibly originate in your lower back, or maybe your neck or both. Myofascial release is being called the missing link and I passionately believe this to be true, I believe in the not too distant future everyone will be having these treatments, The cause of discomfort, pain is the collagen layer of the fascia, this is the layer that has to be released from its stuck, dehydrated, no longer moving position! An Analogy if you step on a hosepipe the flow is impaired. I am highly
trained in myofascial release, I am trained to Body read to know where the problem is and then to un-stick it.. The whole world needs to know about this treatment! I feel very passionately that everyone should understand how it works, and as much as possible be able to do it to themselves and each other. There is no such thing as 'I have that pain because I'm getting old' No-one needs to have pain! Exceptions being if you break a leg or have an accident et cetera, I give these treatments which are extremely powerful but at the Same time very gentle, I also educate people so that they can self-care in the future and when they have a pain they understand why it's happening, and what they can do about it, ABSOLUTELY NO ONE HAS TO BE IN PAIN. Everyone is different sometimes it takes longer than others, IT IS WORTH THE WAIT! Lion’s events June’s update on the busy Lion’s calendar of events. The Lions Swimathon – Trophy Award The sister fundraising event to our new fundraising initiative entitled the Deans Charity Challenge - a sponsored run or walk over either a 9 mile or 5.5 mile course – is the Swimathon that is held every October in Roedean School’s swimming pool. Teams swim for one hour and the group that raises the most money for charity win the Lions Swimathon Trophy for one year. I am pleased to say that the Sackville Swans were the winners for the 2014 event and were awarded the trophy recently by Lion President Peter Silvey and Swimathon organiser Lion Ian Christie. The Sackville Swans were helped a little by a new member of their team this year but my natural modesty forbids me from mentioning him. We wish them well for this year’s event on 11th October along with all the other teams that take part. Incidentally, last year’s event raised a total of £1,894 for Lion’s and participating group’s charities and the Lions donated their share of £1,000 to Chestnut Tree House Children’s Hospice.

The traditional Lions Fayre has been running in Rottingdean for well over forty years, and as a regular event has grown significantly in stature with it becoming one of the highlights of the summer season in Rottingdean. It is held on the green in the village and, as has always been the case, entry is free. At the Fayre you will find a book stall, Punch and Judy, bouncy castles and a coconut shy. You will find other games and stalls along with a bar and the world famous - in Rottingdean at least - Lions barbeque.
