Furthermore it provides you with useful information on the towns of Paphos and Limassol. Our constant commitment to quality excellence and our prominent efforts to exceed guest expectations are reflected in the dedicated teamwork and continuous developments that take place. The recent extensive renovation of the Mediterranean, which has seen the complete refurbishment of the bathrooms of all guest rooms, the major revamp of the suites with the upgrade of the Health Club, has introduced new levels of luxury and wellbeing. At the Elysium the O’Shin Restaurant has seen a major facelift thus adding another dimension to sophisticated Japanese dining. In an atmosphere of true elegance, it offers a unique experience of innovative Fusion Cuisine. The national anthem of the country is known as the Hymn to Liberty, which is also the national anthem of Greece.
Cyprus is the third largest island in the Mediterranean Sea. The country joined the European Union on 1 May 2004. Nine other countries joined the EU on the same date they were: the Czech Republic, Estonia, Latvia, Lithuania, Hungary, Malta, Poland, Slovenia and Slovakia. It has a population of aproximately 788,457 people. The vast majority of Shakespeare’s play, Othello, was set on the island of Cyprus. The play is believed to have been written in 1603 and is still seen by many as being very relevant to today’s world.

AKAMAS
The mythological hero Akamas, son of Theseus, came to the area after the Trojan War and gave the peninsula its name, one of the few wild areas of the island paradise for nature lovers. The area used to be one of the favourite places of the goddess Aphrodite. According to the legend, after she swam in the crystal clear waters of the sea, the goddess climbed the hill and bathed in a cave, within which a pond had formed from mountain spring water dripping inside, spreading over the thick branches of a fig tree. The spot is called the Baths of Aphrodite. It was here that Adonis, while hunting in the Akamas forest, saw the goddess and fell in love with her. The Italian poet Ariosto wrote a poem about the area and the Source of Love, Fontana Amorosa. The myth of Aphrodite and Adonis continued to live on in the Middle Ages and has turned into a love story between legendary Byzantine hero Digenis Akritas and Queen of Cyprus, known as Rigaina. The ruins of an old monastery in a glade in the center of Akamas, set by a huge oak tree and a source are known as the Tower of Rigaina and are related to this love story.

The Akamas peninsula is a unique area, both in terms of geology and physiography and in terms of flora and fauna. Valleys, caves, canyons and islands compose a beautiful backdrop. Both by sea and by land, Akamas’ exploration is a challenge. Get to know the area by walking one of the nature trails, which penetrate the peninsula and bear the names of Venus and Adonis. This will give you the opportunity to see unique landscapes and generally enjoy nature up close. The European path E4, which crosses the island passes through the area. Stop for a rest in the shady picnic area of Smigies where the lovers Digenis and Rigaina once found each other. he Paphos Castle was originally a Byzantine fort built to protect the harbor. During its long history, the castle of Paphos was used for protection and also as a prison, and as a repository of salt during the period when the island was a British colony. In 1935 it was declared an ancient monument and is now regarded as one of the emblems of the province of Paphos. In the square in front of the castle many cultural events take place, such as the Aphrodite festival in September. As part of this festival different operas are held each year, directed by internationally renowned artists. The castle is usually part of the scenery.

aphos counts approximately 4000 years of existence, a fact that makes it essentially a large, open museum. For this reason, UNESCO simply added the town as a whole in the list of world cultural heritage sites. One of the real treasures are the mosaics that were found after excavations in Kato Paphos, the House of Dionysos, the House of Aion and the House of Theseus, which remained in very good condition beneath the earth for 16 centuries until the accidental discovery in the last year and revealed after many years’ excavations. All findings are enrolled in an archaeological park, which covers the area from the harbor up to the tombs of the Kings, and is accessible only to pedestrians. Even today many missions from various foreign universities come to the area to carry out excavations, since a very small percentage of the town has been fully excavated. Given the wide cultural heritage, it is no coincidence that Paphos was selected as 2017 cultural capital of Europe. www.visitpafos.org.cy

CARNIVAL
L
imassol has a long tradition of organizing the carnival parade which has for many years proven long and successful. Celebrations start early and maintain their pace throughout the duration of the carnival. Celebrations begin with the entrance of Carnival King and a procession through the city on March 7, called Tsiknopepti (Smoky Thursday). On the first Sunday (10/03/13) the children’s carnival parade occurs, whilst a week later the celebrations reach a climax with the Grand Parade, which will be held on Sunday 17/03/13. On this weekend, Limassol is considered as the only place to be, offering unparrelled entertainment and nightlife.

The Theatre of Kourion was constructed at the end of the 2nd century BC but acquired its present dimensions in the second century AD. The south aspect of the theatre was previously closed as far as the backstage, although today only the foundations survive. It consists of a semicircular orchestra surrounded by seats. During subsequent reconstructions, it was transformed so that it could host animal fights.

The wine list of the Mediterranean Hotel which was carefully developed by Anastasios will satisfy even the most demanding customers and includes wines from around the world including Europe (France, Italy, Greece), Chile, Australia, South Africa, Argentina and California. The wine list also includes Cypriot labels, indigenous varieties and traditional Cypriot drinks. According to Anastasios, Cyprus wine tasting should undoubtedly include the white ‘Petrites Xynisteri’ and a Red Cabernet Sauvignon from the winery Kyperounta. Xynisteri and Maratheftiko are two local varieties that already gained the trust of Mediterranean Hotel clientele - no wonder why. Anastasios strongly votes for Commandaria and Zivania. “Commandaria is considered one of the oldest wines - if not the oldest kind of wine in the world. At first it was given the designation Appellation d’ Origin. As for Zivania it is part of daily life of Cypriots and accompanies all phases of their lives. This is an everyday luxury”. Cheers!

n Cyprus, they used vines to appease the God Dionysus and THE European kings. Myth and history created a wonderful mix which corresponded to an array of exceptional Cypriot wines. Native varieties such as white and red Xynisteri and the rare Maretheftiko are equally enjoyable to the wines produced by Cypriots who cultivate varieties known abroad such as Chardonnay, Sauvignon Blanc, Cabernet Sauvignon, etc. A trip to experience the Cyprus wine making is only considered complete if it includes the tasting of Commandaria and Zivania. The Cypriot Commandaria is a delicious, pure, and sweet wine, produced without the need for foreign sweeteners or colour additives, and is produced from the combination of the indigenous grape black and white Xynisteri or separately with only black or only white grapes. The main features of Commandaria, usually offered as a dessert wine, is the exceptional flavor and wonderful aroma. Zivania is a traditional spirit produced from the residue of the grapes which were pressed during the winemaking process, and distilled with specific traditional stills.

he word science, epistimi, is derived from the ancient Greek verb ‘epistamai’, meaning ‘know something very well’. Thus ‘scientist’ is someone who knows something well enough. Mediterranean Hotel Sous Chef Tassos Nikou is indeed a scientist – and is a hidden gem in the kitchen of Mediterranean Hotel. As he aptly observes “the love for food and cooking is magic. It is a science, for which every day I discover new things”. At 32 years old, Tassos has already devoted 15 years to the profession, a family tradition, and his dishes have already won prizes in competitions throughout Cyprus. In 2012 he won a gold medal in two categories (Lamb and Italian cooking / pasta / fish) and a silver medal in ‘Group Participation’, where he was the team chef. Tassos believes that success lies in simple things, enough though to make a chef distinguish “raw materials, fresh natural ingredients and a chef ’s love for his work are the ingredients of success”. The materials not ever missing from the kitchen of Tassos are gourmet peppercorns and sea-salts. The evolution, the quality and the originality are features of his work that have won prizes in competitions all over Cyprus. Tassos has carefully selected the cuisine of the Mediterranean Hotel to be enriched with aromas, flavors, traditions and new dishes to offer the most interesting taste. The menu was prepared based on Cypriot culture. Both dishes and their preparation based on the tradition of Cyprus, the Mediterranean culture and European specifications. he Mediterranean diet is one of the most delicious and worthy representations of
life in Cyprus. Cured meats and sausages such as ‘Lountza’, created using traditional methods without the need for preservatives and using only salt, wine and natural spices. Dairy products which are created from free-range animals give exceptional flavor cheeses. ‘Halloumi’ and ‘Anari’ are delicious examples which offer a traditional Cypriot flavor. Sweets are made from fruits and vegetables, preserved in syrup so that they keep their nutritional value for a long time after preservation. For centuries now, sweet preserves have been graciously welcomed in any Cypriot household. They can be served as dessert, or as an accompaniment for the Cypriot coffee. ‘Soutzoukos’ is a traditional sweet made from a thick, creamy mixture made from grape juice, rosewater, cinnamon and mastic, and also contains nuts. It is delicious, and healthy, and considered to truly represent the taste of Cyprus. ‘Trahanas’ is made by combining wheat and yogurt. By boiling it in water and in combination with halloumi, you can enjoy the most popular traditional Cypriot soup.

he Elysium has a long tradition of distinctions both in local as well as in international competitions. Since 2002 it has been receiving awards, and has for the last ten years managed to renew the ‘harvest’ each year. It is worth noting that the Elysium has been selected by the Sunday Times as one of the three new best hotels of the world on 7/7/02. It has also been recognized with the award of ‘the best leisure project in Europe’ on 18/11/02, an award given once every four years by the European Leisure Property Forum. Another prestigious accolade awarded to the Elysium is that of the ‘best leisure hotel’ at the annual MIPIM exhibition, the largest real estate exhibition in the world. Over 600 hotels were considered and the Elysium was amongst the three final nominees. The high standards of genuine hospitality are renewed each year in order to offer enhanced services to visitors. In 2012 the long list of achievements was further updated as the Elysium was given the Zoover Award as the Best Hotel in Paphos 2012 (award was given to the Elysium in 2011, 2010, 2009), while Trip advisor acknowledged the high quality services of the hotel, and awarded the Certificate of Excellence for 2012. Distinctions for the Elysium are not occasional. They have continuity and consistency, but specifically the insistence of the staff to provide the best service for the guests resulted in the Thomson Gold Medal for Best á la Carte Accommodation 2011, 2010 and Thomas Cook Award for Excellence 2011, 2010, 2009. The most important distinction however remains the preference of our visitors.

Mediterranean BEACH Hotel n the 2nd – 4th 2012, the Mediterranean Beach Hotel participated in this year’s ‘Gastronomia – Gastrognosia’ exhibition. The exhibition is a popular annual event that aims at showcasing the latest culinary developments and innovations. This was the first time that the Mediterranean Beach Hotel took part in the culinary competition, which is held during the event. The people representing the hotel received outstanding feedback and prestigious awards of excellence in a number of categories. The team was comprised of talented Cooks and Chefs that participated in five categories of the competition, achieving notable success. In the Pasta Category, Michele Muletti received the highest ratings and the gold medal amongst 28 other competitors, each representing a different hotel. The Risotto, Fish, and Lamb Categories saw the participation of 30 hotels; Demetris Giakos, Theofanis Kyriakou, and Lazaros Gkouranis also received the highest ratings, and were awarded the gold medal for each category respectively. It is notable that the Mediterranean also excelled in the Grand Prix Category, in which hotel representatives competed in teams. The team finished in second place and was awarded the silver medal. Limassol Wine Villages Despite the fact that the Limassol wine region is relatively bound by the sea, the surrounding areas of Troodos mountains rise in places up to 1100 meters high, shaping a unique landscape which varies from coastal flora to pine-rich forest! The region clearly favours the cultivation of Cypriot varieties ‘Mavro’ and ‘Xynisteri.’ Leaving behind Limassol and Kolossi, if you take the exit to Kantou you will reach Ayios Amvrosios, one of the twenty wine villages of Limassol. Zampartas Winery (www.zambartaswineries.com) opened in 2006 in Omodos and was then transferred to where it is housed today. Although the smell of rosé will enchant you, try the ‘Epicurean’, a balanced merlot, which is a label unique to Greece. The ‘Epicure’ wine is the sixth in the series. You can also purchase the award-winning Xinisteri, Semillon Sauvignon Blanc, Rosé, Maratheftiko, Shiraz-Lefkada. The Shiraz-Lefkada was previously awarded a gold medal in the Cyprus Wine Competition in 2007. In 2011, with four entries, the winery won three gold metals! What’s important to the Zambartas Winery is to feel the ‘pride for the vineyard called Cyprus’. In doing so, the winery saves water by using specific pressing systems and recycled paper, while its solid by-products are available on farms. There are daily

guided tours (10.00.-18.00), but it is recommended that you call before your visit. Staying in Ayios Amvrosios, we find Oinotechniki Gaia, the first green winery that opened in 1988 (www.gaia.com.cy). Gaia currently supplies the Cyprus market with six labels to the quantity of 120,000 bottles; the award-winning ‘Ampelida’ in white (awarded gold in 2010, Cyprus Wine Competition) and red version, the ‘Oinanthi’ in white, red and rosé (all three produced by organic farming), and the ‘Agravani’ red. Try ‘Oinanthi’ rosé, which is a variety of Grenache. You will love its intense aroma and rich taste; it is no wonder that within the preceding years the sales have gone up. Recently released is the third ‘Ampelida’, a Shiraz-Lefkada, along with other grape products of the company like grape dragees (stafilokoufeta) and wine jelly, an accompaniment to cheese. This is an ecological winery (First Environmental Management Award 2007-2009), and is female-lead. The landlady, Mrs. Ioanna Panayiotou, is aware that she is working in what is a predominantly male-dominated market, but is keen to think beyond the confines of wine, whilst maintaining her respect for the people and the nature of the region. ‘Gaia’ is very much interested in the development of organic cosmetics from grape! We are looking forward to the results! Following the road north, we arrive in the picturesque village of Vouni. Walk through the cobblestone streets and capture the memories of this beautiful village. As you continue driving you will reach the Cyprus Donkey sanctuary, where you can stop before you continue forwards with the exploration of the Cyprus wines. Before you reach Kilani, stop to take in the view of 40 acres of green vineyard, part
of 140 acres in total which constitutes the estate of Vlassidi (www.vlassideswinery.com). The winery, founded in 1998, provides the market with six labels (white and red). Depending on the circulation, additional ‘experimental’ labels are produced, which always originate from the ‘passion for quality that comes from the vineyard,’ according to Sophocles Vlassidis. Sophocles can usually be found at the winery, ready to welcome individuals and groups for visits. Try the most successful label of the winery, the Shiraz, a ‘full’, mature and powerful red, which was awarded the gold medal at the Cyprus Wine Competition in 2006. Yiannos Constantinou knows something that places him among the best (www. cypruswinepages.com)! Every year the production of bottles increases significantly, with the number reaching 110,000 in 2012, almost double that of 2010! In Kilani, wander around the square and the church of the Panayia Eleousa and walk up to the winery of Ayia Mavri (www.ayiamavri. com). Operating since 1983, it took its name from the church just outside of the village. Mr. John who works at the winery is always available to guide you, and will do so with pleasure! The winery is one of the most traditional and offers the visitor an opportunity to see many old traditional tools, which were preserved by the owner Mr. Ioannides. In addition, the winery is very neat and atmospheric with beautifully lit cellars, maintaining production (60,000 per year) of 10 tags, most recently the ‘Nostimon Imar’ (2008), which has already performed well at a contest in Thessaloniki. Do not miss the sweet white wine in the characteristic indigo blue bottle and of course the famous Muscat, a dessert wine abundant with the aroma of local fruits and flowers. This wine is one

Continue to Mandria, Kato Platres and from there descend to Omodos, which is rather the most touristic village of the region. Mr. Savvas will serve Kalamata’s black olives and tomatoes, bread and cheese, and will gladly offer you whichever wine you wish to taste from a selection of 11 labels, with the most popular choices ‘Koralli’ (white and red) ‘Kelaidonis’ (white, red, rosé) and ‘Mayoklima’, an incredible merlot. The ‘Koralli’ offers a very rich taste for a red wine, while the ‘Kelaidonis’ rosé has a light and atmospheric flavour, like the
old winery. Despite its reputation and distribution of 300,000 bottles annually (including export to America) production still occurs only at the winery,because according to Mr. Hercules, “there should be good cooperation and care for the raw material, the grape, and genuine love for wine”. Saint Onoufrios, a red, and Vasilikon, an award winning white, which according to Yiannis Konstantinou (www.cypruswinepages.com) took the ‘Xynisteri’ out from the shadows, are perhaps the most decent Cypriot wines of mass consumption. Try ‘Methyl’, which took the gold medal in Bordeaux (Les Citadelles du Vin, 2011), with its stunning bottle sealed with red wax and a portrait of Andreas Charalambides, a Cabernet dark red in colour, with aromas of green pepper, capers, and red fruit set against a background of oak.

n Friday September 14 th 2012, Paphos witnessed one of the most important days in its modern history, as it was honoured by winning the acclaimed title of European Capital of Culture for 2017!
The Institution The ‘Cultural Capital of Europe’ institution was inspired and created to bring together the people of Europe. Based on this rationale and on the initiative of Melina Mercouri, it was ratified and established by the Council of Ministers of the European Union in June 1985. Since then the institution has attracted many visitors, enjoying increasing success among Europeans. Over the years, the institution has evolved without losing its original goal: the display of the wealth of diversity of European cultures and yet also their common characteristics, to nurture an improved mutual understanding of European citizens, and the consolidation of the consciousness that we belong to the same ‘European’ community.
Worthy Capital Paphos willingly and proudly claimed the accolade of the Cultural Capital of Europe for 2017. The choice of Paphos served as recognition to what the city represents, its success and momentum, and the example that it can set. The reasons behind the

selection of Paphos, are many and worthy of reference. First of all, “the whole city is a cradle of civilization that is on the list of World Heritage Sites of UNESCO”. The nature exudes a primal beauty, its people preserve the purity and simplicity, and in every corner revive the ancient values and preserved the lore as highlighted features. Having people as a core, and with a contemporary multicultural reality, Paphos has managed to deliver brilliant development and a dynamic presence, which will be evident in 2017 in many ways. Tourism and development in this area will increase, as it will attract thousands of visitors from every corner of Europe. The institution gives an extra incentive and greater pace in the development and modernization of the awarded city, with the creation of modern infrastructure that will improve the image and enhance its aesthetics. The people of Cyprus will take great joy in the significant and interesting cultural events, and the image that the city will present to the modern European world will help Paphos gain wider recognition. he second largest town in Cyprus and the most prominent port of the island in the Mediterranean transit trade,
Limassol enjoys an unparalleled location, an exceptional culture, and a unique reputation as a tourism and trade centre. ‘Limassol Marathon GSO’ is the official marathon of Cyprus, accredited by the international federations of AIMS and IAAF. The event which will take place on the March 24, includes a Marathon, Half Marathon, Health Race, Corporate Race and a Children / Student Race. The Tombs of the Kings in Paphos, a large necropolis dating back to the 4th Century BC, is a UNESCO World Heritage Site. Carved out of solid rock, the tombs are the burial sites of many local aristocrats and high officials. The Paphos Mosaics, some of the best examples of Roman floor mosaics discovered in the world, are located in the Archaeological Park of the town. Dating back to the 5th Century AD, the mosaics grace five separate houses that include the popular Houses of Dionysus and Theseus, which derive their names from the scenes depicted in the works.

The remains of the ancient city of Amathus in Limassol include the Acropolis, the Temple of Aphrodite, the market, the basilica, the port and the walls of the city. An abundance of archaeological objects found at Amathus are on display at the Cyprus Museum in Nicosia, the Limassol District Archaeological Museum, the Metropolitan Museum of Art in New York City, and the British Museum.

Near the harbours The picturesque harbour of Paphos provides shelter to fishing boats and larger vessels. At the edge of the harbour, the imposing castle of the town is one of the most-recognised landmarks of Paphos. Built initially as a Byzantine fort to protect the area, it was later rebuilt by the Lusignans, dismantled by the Venetians, and rebuilt by the Ottomans in

the 16th Century. Over the years, the castle has served as a fortress, a prison and a warehouse in which salt was stored.

The area surrounding the harbour is always buzzing with life. The numerous cafeterias, traditional taverns and shops are visited by both locals and foreigners throughout the day, whereas street artists are sure to entertain everyone. An abundance of cultural events are held in the square in front of the castle throughout the year, which also hosts the world-famous Paphos Aphrodite Festival every September.
The area around the harbour is known as the old town, the main landmark of which is the Medieval Castle, in which Richard the Lionheart’s marriage to Princess Berengaria of Navarre is believed to have taken place. Visitors can enter the castle and walk through its chambers during the day, rest at one of the nearby cafeterias and taverns, or explore the surrounding souvenir and art & craft shops.
