An Introduction from Franco Scannella, Managing Director of Pelican Procurement Services. Welcome to the summer issue of the Pelican Edge. Our magazine is designed specifically to help you as our clients, to have valuable information at your fingertips. As the current news is dominated by restarting the UK economy, this issue focuses on vital information to help you reopen and run your operation safely. The last few months have required all of us to adapt to thinking and working differently, recognising that what we used to do may no longer work for the future. As businesses start their return to the workplace, we’ll have to adjust again. Returning to work will affect people in very different ways depending on their circumstances - both employers and managers are looking for the best ways to support their teams. Anna-Maria Holt, one of our Mental Health First Aiders, shares five key steps to improve general mental and wellbeing – see page 25. As part of reopening, many organisations are carrying out deep cleans and enhancing their hygiene standards, minimising the risk of contamination, protecting the health and safety of their employees and customers. This isn’t an easy task. Working with leading hygiene expert, Diversey, we provide a number of valuable guides and useful downloads on infection control (page 9). Along with a reopening guide for hospitality operators which you will find on page 4, we hope you’ll have the information you need to reopen safely, but if there’s anything else you need please contact us. The current market conditions are volatile, and product availability and pricing changes on a daily basis. The demand for certain key products
(i.e. PPE, hygiene products, safety products) is extremely high, so to help you, the Pelican procurement team is monitoring stock availability with suppliers and we have put together a list of critical key products that we can source for you – see page 28. Technology has played a huge part in how we’ve managed to communicate and work during lockdown, and will continue to play an even greater role in our lives going forwards. Our Pi system has been vital for our clients in managing their businesses during this time, and the Pi team have done a great job to ensure it’s been continually available when customers needed it most. They’ve also been busy completing the development of our latest module - ‘Picnic’. This new module has been developed in partnership with our NHS clients and provides a big leap forward in solving many problems relating to patient bedside ordering. What’s great about the system is Picnic’s versatility, making it appropriate for care homes, hospices and schools. Matt Ferris, Pi Product Manager, highlights on page 14 how

ADJUSTING YOUR FOOD SERVICE MENU OFFERING Keep it simple ▶ Efficiency is key. Start with a smaller menu to accommodate social distancing and fewer staff in the kitchen. ▶ Keep diners apart 2 metres apart. Mark clearly the seating areas that are available. ▶ To make things cosier and less sterile, use natural barriers such as living walls. tall plants. curtains or bookcases filled with interesting books and artifacts. ▶ If possible, create outside dining space. People feel safer outside - but bear in mind your capacity if the weather changes! ▶ Remove physical items from the table no printed menu, condiments etc. ▶ Provide small cards indicating that tables are sanitised. ▶ Provide free standing sanitation station or hand gel for customers to disinfect their hands before seating. ▶ Regularly disinfect tables and any items customers may have touched. ▶ Some operators are employing ‘Covid-19 Bouncers’ - dedicated staff, to monitor social distancing and regular sanitation.
▶ Because restrooms are characteristically smaller spaces and most do not have circulating air, it is advisable that it is used by one person at a time, and are sanitized after each use. ▶ Introduce contactless towel dispensers, taps, and flushers if possible. ▶ Alternatively hand all guests warm moist towels with tongs, to cleanse their hands.

BACK TO SCHOOL MENU PLANNING CHECKLIST Reduce food provision to a simpler menu which might include packed lunches and cold options
Incorporate dried beans, and pulses which are both nutrient dense and a cost-effective source of protein for all
Go for quick and easy recipes that are scalable – hot options work better for this
Aim to provide a portion of protein, starchy food, vegetable, fruit, and a dairy food item at each mealtime
Offer simple and healthy foods that children at your school recognise
Limit pastry, and fried, batter or breadcrumb-coated food items
Use up any existing stocks of products and ingredients – remember to check these items are still in date Use seasonal produce, where possible

We are excited to tell you that we have launched a new bedside menu ordering module, which we call ‘Picnic’. Picnic has been developed in partnership with three NHS hospitals and provides a big leap forward in solving many problems relating to bedside food and beverage ordering.

Picnic tracks the meal order by ward and bed and enables the kitchen staff to see choices as they are made,
in real time! This information helps catering teams to fulfil orders as efficiently as possible. Picnic enables hospitals to create a range of menus with fully costed recipes, which integrates with the organisations’ overall Pi procurement system. This means they can automatically track budgets, stock, meal preferences and importantly provide complete nutritional and allergen information on every ingredient used in each dish. MANAGING MALNUTRITION IN CARE HOMES DURING COVID-19: A PRACTICAL GUIDE FOR CATERERS
Care workers and catering staff in residential care homes are facing challenges affecting their residents’ nutritional status. The way food is prepared, served and eaten in care homes has changed because of social distancing, pressures on carers and a lack of additional mealtime support from outside helpers e.g. visiting family. Identifying malnutrition Malnutrition is poor nutrition; described as a lack of energy, protein, and nutrient intake. Malnutrition affects every system in our body including the immune system, temperature regulation and other major organs. It is recommended practice for all residents to be screened for malnutrition on admission into a residential care home, and monthly after that. The MUST tool is usually used to assess nutritional status but during these challenging times, this may not always be possible. An alternative tool, the Patients Association Nutrition Checklist
can be used to identify the potential risk of malnutrition. Care homes should follow local guidance for managing residents at risk of malnutrition and put actions into place to address weight loss. This will often be in the form of a person-centred nutrition care plan. Malnutrition and Covid-19 Malnutrition has been a concern in care homes during better times but is a bigger issue in the current pandemic climate. Care home residents are likely to be eating and drinking less during the pandemic for the following reasons:
▶ Social isolation – residents now eat alone in their rooms ▶ Less support around mealtimes due to stretched staffing levels and risk management ▶ Supporting family members not currently visiting to help during mealtimes ▶ Distress, fear, and anxiety associated with developing symptoms of Covid-19 ▶ Less will be known about new residents’ food likes and preferences ▶ Reduced menus and less access to a variety of foods ▶ Limited social interaction with other residents, carers, and family

Food for residents who are unwell with Covid-19 There is a definite increase of risk of malnutrition in people with Covid-19 due to: ▶ Poorer appetites ▶ Increase in energy required to fight the virus ▶ If short of breath, the body uses up more energy to breathe Residents who develop Covid-19 symptoms and become unwell will have specific food and nutrition needs. 5 TOP TIPS TO STAY WELL 1. No magic bullet Firstly, be aware that there are no magic bullets. Supplements, herbal extracts, special diets, nutrients or superfoods are not going to boost your immune system or protect you from getting Covid-19. The best thing you can do is to eat a varied diet over time. This will look different for everyone as it depends on food likes, budgets, religious and cultural needs. The Eatwell Guide remains the recommended balance of food groups to eat over a period of weeks and months.

3. Feed your gut bacteria We don’t yet know how gut health affects how people experience and recover from Covid-19, but the science is beginning to tell us that our gut bacteria may play some role in immunity.
Increasing the amount and variety of plant foods across the week to about 30 different types can help with feeding your gut bacteria and increasing the diversity of these gut residents. Eating fermented foods (e.g. kefir and sauerkraut), adopting relaxation techniques, and exercise can also help your gut stay healthy.
4. Take your Vitamin D
Go for fresh and seasonal, if you can get it. But don’t forget that frozen, dried, and tinned ALL count and are good for you. Include a variety of other plant foods too
5. Be kind to yourself During these challenging times, it is important to be kind to yourself and not to feel guilty about what you eat or don’t eat. Try to avoid unnecessary restrictions such as “crash diets” or limited meal plans. Instead focus on practising mindful eating.
2. Eat a rainbow We all know eating 5 fruit and vegetables is good for us, right? But do you know that it’s getting the variety that is important? Ordinary fruit and veg like apples, bananas, broccoli, carrots, and tomatoes are as good as any other new imported varieties.
Vitamin D is needed for bone health and it could help our mental health too. We can take Vitamin D in tablet form or as a spray and we can buy from health shops, supermarkets, pharmacies and online. Look for 10 micrograms (μg) doses and take this daily.
We have all been told that it is a good idea to take vitamin D supplements during lock down. This is because many of us will be spending less time outdoors and may not be getting enough sunlight on our skin to produce the right amounts of this vitamin in our body.
When eating a snack or meal, give that your full attention and take your time. Allow yourself treats and saviour the taste and eating experience. If you can portion out what you are going to eat beforehand, that can help avoid overeating. Stay active and draw up a list of things to do that you enjoy that can replace boredom eating. Staying hydrated, exercising and staying connected are just as important as what you are eating during this time.
