Wisdom comes with winters - Oscar Wilde If you think winter is all about pulling the shutters and hibernating, it’s time to reconsider. The cooler months see James St turn up the heat, thanks to clear days and the anticipation of a new season to inspire and excite you. This winter compendium is designed to encourage you to shake off the urge to hunker down, and instead of making best friends with the doona,
help you make the most of the season ahead. We have tapped into the wisdom and collective conscious of James St’s local talent to bring you a round-up of tips and tricks to get you through winter in style. We meet with stylist extraordinaire Sarah Birchley to discuss her winter fashion advice, go behind-the-scenes on a whirlwind buying trip to Hong
Kong with Molten Store’s Jessy Cameron, swap foodie tips with the James St Market’s Michael Dean and learn the tricks of the trade from Outshine’s Meaghan South. In James St, there is no shortage of antidotes to the cold weather blues, so explore with us this winter and continue to support local businesses.

WINTER WELLBEING Meaghan South, Director & Owner of Outshine Beauty MediSpa, reveals the secrets to making you shine more brightly this winter, inside & out • Avoid
sugar and processed foods, white breads, flours, pasta and rice. It is proven that an excess of sugar can be detrimental to your immune system and most of us will experience a rebound drop in energy after eating these foods. There are lots of great alternatives for sugar - I have recently embraced the Paleo way and am enjoying a clearer head and more sustained energy.
• Nourish your skin. Add a cosmeceutical grade hydrating serum into your daily skin regime. Cooler temperatures and central heating drain the skin of water that should be retained in the lower layers.
• Reprogramme your skin. As the
sun conditions are less harsh, the cooler months are the perfect time to undertake a programme to address any concerns, so your skin will shine in spring.
• Bone broth has many secret anti-aging benefits. I make a pot of soul-satisfying chicken broth every week and enjoy a cup each day. It’s full of nutrients and minerals, fills you up and warms you down to your toes, so you’re never tempted to overeat or snack on junk that ages your body and lowers your immunity.
• Start the day with a hot shower, and before you get out, switch to cold for 15 seconds. This revitalises the skin by stimulating the flow of blood through the body. Trust me… It’s invigorating!
• Exfoliate at least twice a week to
remove dead cells and allow the skin to absorb extra moisture and help your skin to feel refreshed and glowing.
• Take time for a massage at least fortnightly. This can often be the difference between a sluggish lymphatic system – and an efficient cleaning system that remains vigilant to the onslaught of seasonal changes, environmental contamination and stress.
Cooler temperatures and central heating drain the skin of water that should be retained in the lower layers.
”
• Take a daily dose of “Jungle Juice”
with boiled water, fresh grated ginger, turmeric, honey, lemon and a splash of apple cider vinegar. Add all ingredients and let it sit for five minutes. It tastes great and combats viral and bacterial infections - I make a concentrated version and add it to my water throughout the day as a mini booster. - Wishing you a healthy, happy and warm winter. 16

With winter knocking on our door, these tasty delights are best served with thick jumpers and wooly beanies
WINTER IN THE KITCHEN We caught up with Michael Dean, Product Procurement & Operations Manager at the James St Market to talk about all things food and winter. colder months? If you own a BBQ
What is the one item that should be on everyone’s grocery list this winter? When fresh home-grown
with a lid, experiment with an accurate thermometer and use your BBQ to slow cook dishes at lower temperatures. This can enhance the flavour, particularly when cooking on lump wood charcoal, and help with the tenderization. Use a pizza stone on your BBQ for perfect pizzas. I personally only cook on natural lump wood charcoal at low temperatures - I love it, even the smell of the slow smouldering charcoal on a cold night.
tomatoes are not in season, make liberal use of canned tomatoes and my favourite variety is San Marzano, great for soups, paella dishes and pasta sauces.
What is your tip for breaking up the monotony of winter dishes such as bangers and mash? Nothing quite beats a Dutch cream potato in winter however I love le puy style green lentils, cabbage (loaded with vitamins and minerals), celeriac (delicious), kale and brussel sprouts. Try a slow cooked spiced rib of beef, celeriac mash and brussel sprouts blanched and then sautéed in French unsalted butter, tossed with toasted almonds and small pieces of slow roasted belly bacon.
How has the food scene in Brisbane evolved in the last decade? We have seen Brisbane restaurateurs and chefs alike starting to find their own sort of identity. There is real originality coming through with many new different styles of venue and food. There are more dedicated festivals and food markets also offering a wider selection of food and introduction of new cuisines.
Who is an up and coming local producer that we should keep on our radar? Woombye Cheese, Lirah vinegar and New Farm Confectionery.
What would we find on a perfect winter cheeseboard? A fromage des Clarines studded with blanched garlic or truffle (see recipe), raclette and comte gruyere.
What is your one foolproof winter dish? Risotto. Simply obey the basic rules and use a good rice; Carnaroli is my favourite as it produces a creamy risotto. A quick tip: at the end of cooking, fold in plenty of unsalted French butter and heaps of finely grated Reggiano parmesan.
What elements of Brisbane food culture are you most passionate about and why? I love the multiculturalism that brings us such a beautiful blend of many cuisines. I love how fresh produce, particularly local, is gaining a place in many Brisbane eateries and home kitchens and these producers are being recognised for their commitment.

What is the best way to enjoy a winter meal in Brisbane? We are pretty lucky to have a dry winter, so the best way to enjoy it is rugged up and sitting in the sun.

METHOD: In a heavy-based pot sweat the onion and garlic in the oil until very soft. Turn up the heat and add the cinnamon, caraway, cumin and ground coriander. Sauté until fragrant then add the tomatoes, saffron, puréed red pepper and dried mint. Cook out for 30mins until thick and sweet. Adjust seasoning with salt or raw sugar if necessary. In two cast iron skillets, colour the broken merguez and then add the tomato base. When boiling, crack the eggs into it and stir in carefully, trying not to break the yolks until well distributed. Eat this while enjoying the Brisbane blue skies, warm days and crisp nights of winter.

JAMES ST WINTER WISDOMS
Duck confit
JAMES ST COOKING SCHOOL
Duck confit was traditionally made in France, particularly in the south west region. It was used as a method of preserving duck or goose for the winter months, before refrigeration was available. The process starts with the marylands (leg and thigh) salted with the bone in, for up to 30 hours. Salting removes moisture from the raw poultry, in the same way that salt
is used to cure other proteins such as a fresh side of Atlantic salmon. The salt is next rinsed off and the meat is patted dry and then completely covered in the relevant fat i.e. duck in duck fat, goose in goose fat. The cooking process is similar to a braising or slow cook method with at least 2.5-3 hours of cooking at around 140-150°C in the oven. Some variations include cooking the meat for up to 6 hours at 110°C or until the meat falls from the bone and melts in the mouth. When preserving, the meat is cooked and then transferred into preserving jars and completely covered with fat. It is then stored in a wine or root cellar for months at a time. From a modern perspective the protein would be stored in the fridge. To finish, remove the duck confit JAMESST.COM.AU | #JamesSt
from the fat and allow to warm slightly. Heat a heavy-based frypan and add the duck skin-side down and allow the skin to get golden brown and crispy. Turn over and repeat on the other side, then finish in an 180°C oven until the duck is hot through. This dish is often served with braised cabbage, fennel or witlof with either a red wine or other vinegar, providing a sharp flavour to contrast the richness of the duck. John Meredith, Owner & Head Chef

TWO MINUTES WITH SARAH BIRCHLEY We sat down with Sarah Birchley, a Brisbane based stylist who is making waves across the nation, to pick her brains on all things fashion Where would we find you hiding out on a winter’s day? Afternoon window shopping followed by a wine and charcuterie at Gerard's Bar.
What are your three style tips for surviving Brisbane’s winter? In-
vest in a great pair of boots or a bag that you can wear every day to update your wardrobe for the new season. We can still enjoy heavier textiles such as fur, shearling and wool in QLD - just remember to purchase in silhouettes that make sense for our climate e.g. a shorter length jacket or vest. Inexpensive layering pieces such as a scarf or stockings can be a good way to revisit pieces in your wardrobe from autumn.

What do you think is the number one Brisbane winter fashion faux pas? Ugg boots - keep them at home please!
What trends are you embracing this season, and what trends will you be avoiding? I love the 1970's influence which was seen on the runway at Lanvin, Chloe and Gucci to name a few and will definitely be channelling these silhouettes throughout winter. I am not inclined to wear layered accessories so will be opting for a great handbag and shoes with an outfit instead of lots of jewellery.
What item of clothing would turn an average Brisbane dude into a gentleman? A well tailored suit is an absolute must have for any gentleman's wardrobe. 38

TREASURE HUNTING Local accessories mecca Molten Store celebrates the reveal of its flagship trove on James Street this month. A week before she opened the doors, Director Jessy Cameron took to the skies for Hong Kong to seek new treasures for her glittering utopia.
For winter SS16, we’re channeling Sir John Everett Millais’ moody painting, ‘Ophelia.’ Botanical elements such as leaf motifs and earthy textures are softened with muted blush tones and crystal embellishment. The Botanist earrings were among my favourite finds on this strip. I love the way the champagne crystals catch the light.
Whenever I travel, I always carry a little notebook just in case inspiration strikes. I collected a bundle of beautiful leather notebooks on my first day of treasure hunting; more market finds. Hairpieces like The Luminary Crown are an exciting new direction for us. This style is a definite hero accessory for winter. 56
Assemble a collection of wild things; you are the company you keep – Jessy Cameron
If possible, I’ll opt for a night flight on my return journey. There’s something romantic about waking up to watch the sunrise from above the clouds.
The night markets in Hong Kong are an endless source of inspiration. I came across a seller specialising in curious wares and fell in love with this antique Chinese Abacus. JAMES ST WINTER WISDOMS

Create a cosy and inviting space to hide away from the winter chills
WINTER LIGHT There is nothing like a brisk wind and dropping mercury to prove there is no place like home. We spoke with the design masters at Stylecraft and found out that adding winter warmth to your home is as easy as the flick of a switch. Winter Trends. The trend this sea-
son for finishes in metallic, timber and glass are the key to creating a raw but luxurious statement in a contemporary space. Australian designed and manufactured, the mouth blown Softscape lighting range by Helen Kontouris offers a pendant and free-standing floor lamp that casts downward directional light in winter tones of amber, watermelon and charcoal glass which are striking in a single form or in a cluster. For more natural warmth, the Oak Pendant by Ross Gardam is hand crafted from oak timber and is the perfect high impact piece for large areas. For the ultimate statement piece, the Glaze Pendant in the bold metallic gold will not disappoint.
Mood Lighting. Lighting can help
brighten the mood and shine the best light on both your home and your office space. By layering lighting with pendants, table lamps and floor lamps you will be able to create a warm and inviting ambience. MARTIN BROTHERS LANDSCAPING - MAINTENANCE What are the best plants to grow during winter? Winter is a great time to grow vegetables in Brisbane as the weather is perfect. Most of the pests and disease that plague our veggies during the summer are dormant in the cooler months of the year. Veggies such as tomatoes, silverbeet, kale, cabbage and broccoli are our pick of the bunch.
What is the secret to making sure gardens make it through winter? Fertilise - people forget that we have a 12-month growing season here in Brisbane. Many gardeners follow a North62
ern Hemisphere regime where plants go to sleep during winter and don’t require feeding for optimal health and vitality. Mulch is the other great material that many people don’t have in their garden but should. Use a high nitrogen mulch to feed the soil and retain moisture.

ST BARTS Advice for creating a snug home in winter? Take cue
from the Danes who are reportedly the happiest nation in the world and yet live for a large part of the year in deep, dark winter! The secret of their well-being is attributed to their philosophy of “hygge” - loosely translated as a feeling of warmth and cosiness. This includes creating a joyful and inviting atmosphere in the home through things like thick pile rugs, candles and books. In a deeper sense it implies taking delight in simple things and finding happiness in the small moments of joy that make a life.
One item every home should have? I don’t believe 68
