Apart from the dolls house I was given when I was ten, I still love my Tiffany ‘circle’ ring that I got from my husband a few years ago.

ceived a call from my husband, Philippe, who had been sailing solo for 40 days in the most dangerous seas in the world. I was alone in Argentina with our daughter Emma who was 5 at the time. SLOW ROASTED WAGYU BRISKET Ingredients 2kg wagyu point end brisket (cut into four 500g pieces with a thin cap of fat left on top) 100g smoked paprika 125g ras el hanout 50g quality sea salt 50g brown sugar 12 pieces Lebanese flatbread (saj) 200ml vegetable oil Method Combine the dry rub ingredients and mix well. Toss the brisket in the dry-rub and massage in thoroughly. Refrigerate for at least an hour to allow the flavours to penetrate. Pre-heat the oven to 95 degrees Celsius. Pack the brisket tightly into a high-sided roasting tray with the fat cap facing up. Roast for 8 to 10 hours or until completely tender (as it cooks the juices released should come ž of the way up the sides of the brisket, which keeps the flesh moist while the cap of fat both renders down and gains a nice crust.) Drain and discard juices. Either serve immediately or heat the vegetable oil until smoking moderately, place the room temperature or warmed brisket on a tray with a rack and carefully pour over to both heat and crust the brisket. Prawn Salad Ingredients 1kg whole cooked prawns (peeled and de-veined) 100g bean shoots 1 medium carrot, cut in the julienne style 1 green mango, peel and julienne ¼ continental cucumber, julienne 1 tblsp pickled ginger, julienne ½ cup Vietnamese mint (rau ram) ½ cup coriander

½ cup mint 1 long red chilli, julienne ½ packet vermicelli or mung bean thread noodles Dressing: 2 long red chillies, de-seeded & rough chopped (for extra spice, leave some of the seeds in) Juice of 2 limes Palm sugar to taste Fish sauce to taste

Preparing the noodles: Using the hottest water from the tap, fill a bowl and immerse the noodles and allow to stand until soft. Remove from the water, rinse and allow to cool. Preparing the vegetables: Julienne (thin matchsticks) and chiffonade (thin strips) the vegetables. Tear the mint and the coriander leaves (do not use a knife). Combine all the ingredients, add to platter and place cooked prawns on top. Preparing the dressing: Place chillies in a mortar amd pestle, add other ingredients and mix well.
