Farm & Food Directory! This directory is your guide to locating food grown, raised and processed in the Central Kootenay. Whether you are an area resident who wishes to learn more about local food, a processor who wants to source organic ingredients, a restaurateur who wishes to feature the bounty of the Central Kootenay on your menu, a tourist who wants to sample local fare, or a farmer who wants to know what the market opportunities are, this directory is for you. Among the nooks and crannies of the Central Kootenay is a diversity of farms, big and small, as well as numerous processors. From strawberries to onions, from bone broth to fine gin, our region
benefits from a host of dedicated, passionate and creative entrepreneurs who bring their great food to our tables. This annual print directory will help you learn about the wide range of foods produced here. Explore the offerings in the different areas of the Central Kootenay or narrow in on a few favourite products and find out who has them and where they can be found. Each business entry includes information on when and where their products are available and how to contact them. And if you are not certain when things may be ready, check out the Seasonal Guide on page 35. The map on the centre pages will inspire you to explore the wide range of food choices in the Central Kootenay.

About the CKFPC The Central Kootenay Food Policy Council brings together people, organizations local government and businesses from across the Central Kootenay. We work together to foster a vibrant, health food economy for the region that also provides healthy food for all who need it. We seek to connect and co-ordinate initiatives across the region, reduce redundancy and enhance the impact of human and
financial resources invested in the food systems and communities of the Central Kootenay. Our focus is on improving the policy environment for food production and access in the region. We work directly with local businesses and government to make it easier to navigate the policy maze in which our food systems are embedded. Skimmerhorn Organic Garlic Randal Penner 250-402-2068 PO Box 871, Lister e: elisabethannep@gmail.com www.facebook.com/elisabeth.penner.5 e: charlabeaulieu@gmail.com Organic Farm MISSION STATEMENT: To be the leading producer of Organic Gourmet Garlic by continuing to use the highest organic standards and practices and a curing process which maximizes the integrity of the garlic’s healing properties, taste, and shelf-life. The Skimmerhorn garlic stands out because of the curing process employed. The garlic is hung with long stems (16 inches), in small bunches, after harvest, for 3 to 5 weeks. During the curing process, the garlic bulb is still drawing a lot of nutrients from the stem. It allows the garlic to receive optimum nutrients, maximize its healing properties, its taste and extends the garlic shelf-life. The garlic will keep, in proper storage conditions, at least 9-10 months. This curing process is very labour intensive and requires a lot of storage space which is why the large garlic farms do not practice it and cut the garlic stem close to the bulb before harvesting it. At Skimmerhorn Organic Garlic, we are committed to quality over quantity and that is why Skimmerhorn Garlic farm provides the highest quality garlic possible. Frank grew up in Creston orchards while Barb married into the operation in 1980. Together, they owned and operated a fruit stand in Creston for 16 years while raising their family. During that time, many mistakes were made and lessons were learned. Then 10 years expat work/travel was followed by a return to the Creston Valley and 5 years of cherry harvesting (about 400,000 lbs annually). In 2012 the land was purchased at the corner of 36th Ave and Hwy #3. Planted to a mixed orchard, it became the base for the fruit stand which opened in 2014. The fruit stand is hard work, yes. Long hours, yes. But rewarding in every way. Frank, Barb and staff work about 25 acres of market garden and 18 acres of orchard - enough produce that 98% of what is sold in the stand is grown by Wloka Farms. I started my business because I wanted to buy food from local farmers and create food that promotes them! I produce soups and sauerkrauts in my 200 square foot commercial kitchen. When I began in 2011, the company was known as Soups in Season, but I have since changed the name to reflect my expanded product selection. I offer 3 different flavours of sauerkraut sold at retail outlets and 30 different soups that I sell to restaurants. Also on our property is the Uphill Bakery run by my husband. As well as supporting local food systems and organics, we try to use sustainable practices wherever we can. We minimize our energy use in a variety of ways, are exploring the use of electric vehicles for our deliveries and consider the environmental impact of our packaging. Our Chicken People are well loved, moved every day onto fresh green pastures, and are raised & dispatched with respect. They live on the fields 100% of the time after the tender brooding stage, doing what chickens do and getting micro nutrients from the fields and the insect people. They are also fed a corn-free certified organic diet. A 2013 study commissioned by the American Pastured Poultry Producers Association found pastured poultry was higher in vitamins E and D3 and had a 69% lower ratio of Omega 6 to 3 compared to non pastured poultry. And the taste is like no other. This type of chicken farming is more labour intensive than regular organic chicken farming, but we think it is the right thing to do. Owner and Artist Melanie Dawn started the gardens in an attempt to restore the land to its former mountain beauty. Long before the silver rush, before the people, before the hustle and bustle in the late 1800s, the land was carved from the sacred confluence of three rivers. It is here that a cathedral of pine trees swayed to the songs of the water. Birds, wildlife, flora, and fauna thrived and lived in beauty. While observing the grounds one warm August day, Melanie noticed a wildflower had taken up residence in her garden. “A volunteer we call them.” It was from that wild seed that she first caught a glimpse of what the land would look like crowned with flowers and herbs once again. “And so, I planted a field of flowers, and a hill of lavender.” Now, the Farm Flora Shop is open during the summer months on weekends, providing historic insights and farm fresh flowers to visitors. POLICY 101 So just what is food policy? Policy is made up of the values and goals the body in question wants to see guide activities. They guide our activities whether or not we are explicitly aware of them. Each of us draws on our personal food policy every time we eat or procure food. The top diagram captures some of the values, in the form of questions, that may guide people’s food choices. The answers to these questions and others form the personal food policy of an individual. Governments also operate from the basis of values and goals that determine their policy. For local government, one of the goals they wish to achieve is to manage activities so that neighbours can peacefully co-exist. Zoning and business licences are some of the tools they have to achieve that. The provincial government’s connection to food policy has a lot to do with describing and monitoring appropriate procedures and standards that encourage activities that, for instance, will protect the environment, and ensure livestock are humanely treated. The federal government’s food policy, like other levels of government, is embedded in many different departments and covers matters like ensuring that labels on food accurately reflect what is in the product. The bottom diagram captures some of the policy questions each level of government is tasked with answering. The fact that all levels of government are involved in food systems often results in a maze of requirements for any individual farm or food processing business. The Central Kootenay Food Policy Council provides education to area residents and local government on food policy. We also support food business owners based in the Central Kootenay in navigating the policy landscape within which their business must operate.

Easy Roast Duck
deliciousness . . .
Duck Soup
Take your frozen Forrest Farm duck out of the bag, place in a large pot and fully submerge in cold water. Slice a whole orange and put it in the water with the duck; leave to thaw overnight. Take your duck out of the water, pat dry, stuff with fresh orange slices and
place in a dutch oven. Preheat oven to 350ºF. Melt some raw honey and combine with some freshly squeezed orange juice. Pour honey mixture over your Forrest Farm duck, then put in oven. Baste frequently. As the duck cooks the duck fat will mix with your honey mixture.
Use this lovely fat to baste your duck and it will always come out tender, juicy and full of flavour. What you will need: • 1 Forrest Farm duck • 3 Tbs raw honey • 3 organic oranges Forrest Farm Salmo
First Make Duck Stock Take any remaining duck meat from your roast duck and save for later. Rough chop onion, garlic, celery and add to a large stock pot. Add sesame oil and salt, and over medium high heat stirfry veg until translucent. Add duck bones and cover with water. Let water come to a boil, then reduce to your lowest setting and leave to sim-
mer overnight. In the morning strain the stock and let it cool. Once it’s cool you can skim the fat off the top. Now we can make soup. Chop onion, garlic, ginger and fresh chilli pepper and slice daikon. Add to a medium soup pot. Turn stove to a high heat. Saute veg with sesame oil and salt. Once the vegetables are translucent add the remaining
roast duck meat and fill the pot with duck stock. Bring to a boil, then reduce heat to a simmer. Let simmer while you boil your rice vermicelli noodles (follow instructions on the package). Portion the soup into bowls, then add the already cooked noodles. Garnish with green onions, cilantro and hard boiled quail eggs... Forrest Farm Salmo
Raspberry White Chocolate Luxury Muffins We choose organic for all the ingredients whenever possible, and this gives both a nutritious and delicious product that our post wedding Sunday brunch crowd LOVES!
Fabulous Quail Eggs (Perfect for summer potlucks) Take one dozen Forrest Farm quail eggs and crack them open in o a lightly buttered mini muffin tin. Place the mini muffin tin in a slightly bigger casserole pan or whatever you have on hand. Put some hot water in the bottom of the casserole dish. Cover with aluminum foil or use the lid if it has one to create a steam effect. Then put it in the oven at 350ºF for 3 minutes, or less for softer eggs.
Take the eggs out of the pan and dip half the egg in a mixture of salt, freshly cracked pepper and paprika. Put the egg on top of a thinly sliced local vegetable e.g.: radish, cherry tomato, cucumber, zucchini, asparagus. Best to use whatever is in season at the time. Then you can garnish the whole thing with Happy Hills Farm macro greens. These are so easy! It takes less then 10 minutes to prepare and can be served cold. You will be a hit at any party. Dry ingredients; 2 and 1/2 cups white flour 2 tbsp baking powder 1 tsp sea salt 1/2 cup cane sugar 1/2 tsp nutmeg (fresh ground from the whole nut is best!) 200 grams coarsely chopped good white chocolate (Pick your fav, about 2 bars) And then later… 1 package fresh (6 oz) Hummingbird Farm raspberries Wet ingredients; 2 fresh farm eggs 1 and 1/4 cup milk (at least 2%) 1/2 cup oil (like organic sesame) 1 tsp vanilla You can do it, this is really easy! Of course the first step - turn on the oven, 350ºF. Then grease well with oil or butter (or use paper muffin cups) a large 12 cup muffin tin.
In a large bowl mix all of the DRY ingredients together well. (not the raspberries yet!) In a smaller bowl mix all of the WET ingredients really well! Get those eggs well mixed in with a whisk. Is the oven hot yet? If not, wait… When it is, then toss the Hummingbird Farm raspberries with the DRY ingredients, then VERY gently and just the tiniest bit, fold the WET and DRY together. Do not overwork, my friend, or you will get flat muffins. The very second they are BARELY mixed, scoop (I like to use a measuring cup) into the prepared muffin tins. Pop in the oven for 20 minutes. Trust me, you will not remember, so set a timer! Might need another 5.. Let set for at least 10 minutes before trying to remove from the from the tin. Enjoy!
