» Master Inventory

Inventory is what allows you to make money, so it’s important to have a firm grasp on what yours looks like at all times. Take time at the end of the year to do a complete, thorough inventory of all perishable and nonperishable items. Make sure staff are trained to complete inventory checks to your specs, and put a plan in place for regular checks.

After you’ve created or refined your inventory system, you can begin to look at the details within your numbers, such as yield and profitability of certain items. It’s also a good opportunity to standardize your recipes and address proper portion sizing among all BOH staff. Waste is another huge issue when it comes to inventory management. As you create a system, make sure it accounts for waste. Staff should be properly trained in FIFO (first in, first out), safe handling, and labeling to help mitigate loss, whether from spoilage or theft.

» Streamline Menus

Look for areas where you can improve profitability, especially by examining COGS (cost of goods sold) and looking for opportunities to make improvements. Use your numbers from 2024 to determine your highest selling and most profitable menu items as well as those items that could be taken off the menu due to lackluster performance. Think about seasonality throughout 2025 to identify potential specials or longterm menu items that will raise ticket averages while keeping customers happy.
