Assoluti® and Luigi seafood is comparable in quality to World Dock brand with value products for Italian cuisine locations that also have widespread appeal for all foodservice operations.


WATCH FOR THESE LOGOS TO FURTHER IDENTIFY SPECIALTY ITEMS OFFERED IN OUR SEAFOOD PROGRAM The Wild Caught in the U.S.A. logo is used to identify species that are naturally wild caught, live on a wild diet in the waters of the United States, and are caught using long-line, trawling, purse-seining, or gillnetting methods. Species that are typically wild-caught include Lobster, oysters, shrimp, scallops, crab, salmon, clams, cod, halibut, sablefish, and rockfish. The Farm Raised in the U.S.A. logo is used to identify species that are raised on aquaculture farms throughout the United States. Generally this process starts in a hatchery and the seafood is later released into contained, quality environments. These fish are commonly fed grain diets. Channel catfish, trout, clams, salmon, and mussels are species typically farm-raised in the United States. Performance Foodservice’s Species Verification program utilizes DNA testing to validate commonly mislabeled species such as grouper, red snapper.

SCALLOPS

Performance Foodservice also offers a variety of scallops, including Bay Winds® Dry All-Natural Wild-Caught Sea Scallops from the U.S.A., Bay Winds® Hokkaido All-Natural Wild-Caught Sea Scallops from Japan, Empire’s Treasure® Dry Wild-Caught Sea and Bay Scallops from the U.S.A. or Canada, and World Dock® Wild-Caught Sea and Bay Scallops from the U.S.A. or China. COLD WATER & WARM WATER LOBSTER

For elegant and casual dining, Canadian and Maine cold water lobster tails and lobster meat offer something for everyone. Lobster tails are perfect for fine dining, while lobster meat is perfect for QSR menu applications. Choose from Bay Winds® Maine Lobster, Bay Winds® South African Lobster Tails, Bay Winds® North Australian Lobster Tails, and Bay Winds® West Australian Lobster Tails. Our Bay Winds® Brazilian Lobster Tails and Empire’s Treasure® Warm Water Lobster, also known as rock lobster, come from lobsters with long spiny antenna instead of claws and sharp points across a hard, rounded shell. In addition, rock lobster tails are generally larger than the tails of their cold water lobster counterparts.

HARD-SHELL CLAMS

Steamed clams are a popular appetizer and entrée item. They are mild-flavored, sweet, and briny. Empire’s Treasure® Farm-Raised in the USA clams are conveniently packaged by the dozen in microwavable and boil-in-the-bag packaging. We also carry hard-shell clams imported from Asia packed in one pound packages.


SHELLFISH DUNGENESS AND BLUE SWIMMER CRAB

While being a seafood staple on Pacific Coast menus, the secret of the sweet-tasting Dungeness Crab is out! The clean and sweet tasting crab meat from the crab's leg sections can be found on menus all across America. Our Bay Winds® Wild-Caught Dungeness Crab are wild-caught in the Pacific waters from Alaska's Aleutian Islands to British Columbia and then southward along the coasts of Washington, Oregon and California. Empire's Treasure® Pasteurized Portunus Pelagicus Crab Meat are hand-picked from cooked Blue Swimming Crabs. The delicate and sweet flavor offerings of Colossal Lump, Jumbo Lump Super Lump, Backfin Lump, Special and Claw are perfect ingredients to make impressive appetizers and delicious entrees.

Our Empire’s Treasure® Wild-Caught in the USA Gulf Oysters on the half shell offer convenience and freshness unlike any other frozen oyster. MUSSELS

Our Empire’s Treasure® Black Shell Mussels are so convenient. Whole-shell Black mussels are rope cultured in the cold Antarctic waters of southern Chile. They are immediately cooked and vacuum packed before being quick frozen to lock in the freshness and purity of the sea. Simply heat and serve! FINFISH ALASKAN HALIBUT

Bay Winds® Wild-Caught in the USA Alaskan Halibut is wild and pure; and the largest of all flatfish. Its mild, slightly sweet flavor and unique firm texture have made Alaskan halibut a favorite among chefs and consumers alike. Harvest from Alaska’s icy cold waters, our halibut is caught, processed and packed in St. Paul, a U.S. island between Alaska and Russia. It’s delicious grilled, roasted, sautéed or poached.

The clean, icy waters and abundance of natural food give Alaskan wild-caught salmon unparalleled flavor and deep, beautiful colors. Performance Foodservice offers several species of all-natural, premium Alaskan salmon that is wild-caught, processed and packed by native Alaskans in Alaska. Wild Alaskan salmon comes from an extremely well-managed, environmentally responsible and sustainable fishery, resulting in superior quality, taste and eye appeal. Choose from Bay Winds® Wild-Caught in the USA Alaska, All-Natural Sockeye Salmon, Empire’s Treasure® Wild-Caught in the USA Alaska Sockeye Salmon, Empire’s Treasure® Wild-Caught in the USA Alaska Keta Salmon (Chum) and Empire’s Treasure® Wild-Caught in the USA Pink Salmon Loins.

ARCTIC CHAR

In Iceland the locals call the Arctic Char "silfur nal", which can be translated to silver needle. Buyers consider The Fresh Catch Arctic Char as a unique menu offering and are a good substitute for farm-raised salmon because it has a more delicate texture; a clean, mild flavor and high oil content. This sustainable cold-water fish is packed 100% fresh, never frozen, from Iceland.


FINFISH ATLANTIC SALMON

Atlantic salmon once wild caught in the Atlantic is now the most important farmed salmon species. Farming takes place in the Atlantic, Pacific and Indian Oceans. Top producing countries include Chile, Canada, Norway, Scotland, Iceland and the Unites States. First grown in hatcheries from selected broodstock Salmon is farmed in the open ocean. The farming process can vary from 18 to 36 months. For a superior, enchanting menu offer, select Bay Winds® All-Natural Faroe Island Salmon. This super-premium salmon is harvested from the small, remote archipelago island group called the Faroe Islands located in the heart of the Gulf Stream in the North Atlantic between Iceland, Scotland and Norway. The cool and steady sea temperatures of the Faroe Islands provide perfect conditions for raising the ASC certified sustainable Salmon. The Bay Winds® All-Natural Faroe Island Salmon is fully traceable from salmon roe to the final product and is rich in Omega 2 and flavor. BARRAMUNDI

High in Omega 3, loaded with protein, less calories than salmon or many other finfish Empire's Treasure® Barramundi is a favorite for it's versatility and its delicious clean, mild and sweet flavor. A member of the Sea Bass family, Barramundi is native to Australia's northern tropical waters and parts of Southeast Asia and its eco-friendly reputation adds to its menu appeal.


FINFISH CHILEAN SEA BASS

Bay Winds® Wild, Long-Line Caught, All-Natural, Chilean Sea Bass otherwise known as the Patagonian toothfish is one of the most premium fin fish available. With its rich, melt-in-your-mouth flavor, moderately oily meat that is tender, moist, and snow white, sea bass is a must for any premium seafood menu. Bay Winds® Chilean Sea Bass comes from the harbors of Punta Arenas in the southernmost Patago­nia region of Chile. The Bay Winds® Wild, Long-Line Caught, All-Natural, Chilean Sea Bass are harvested in the stormy, harsh seas near the northern shelf of Antarctica during hundred day journeys at sea.

COD, HADDOCK AND POLLOCK

These very similar, yet different, groundfish all offer a lean, tender texture and abundant flaky, white meat with a mild taste. Bay Winds® Wild-Caught in the USA Alaska Sablefish (Black Cod) is rich, buttery and fairly oily, possessing a steak-like texture and a beautiful white flake that is sweet, delicate and intensely flavorful. Bay Winds® All-Natural Wild-Caught in the USA Alaska Cod & All-Natural Wild-Caught Icelandic Cod are both wild caught, frozen at sea and offer moist, firm fillets, with a distinctive large flake and a slightly sweet flavor. Empire’s Treasure® Wild-Caught in the USA Cod Loins feature Alaska cod loins that are wild caught with outstanding and consistent quality, and World Dock® Wild-Caught Cod Loins feature cod loins that are lightly processed and are inspected for quality, consistency and sizing. Bay Winds® All-Natural Wild-Caught Icelandic Haddock is all natural, frozen at sea within hours of the catch in Iceland. World Dock® Wild-Caught Haddock quick frozen fillets with a beautiful white color, low moisture, and a mild, slightly sweeter taste than Cod or Pollock.


FINFISH FLOUNDER

Our Empire’s Treasure® Brand features both Skin On and Skinless Wild-Caught in the USA Alaska Flounder Fillets. The delicate flavor, flaky white meat, and fine texture are very versatile for all menu applications. Flounder is durable, holds flavors well, not competing with culinary preparations you may utilize. This product features consistent sizing.

GROUPER

Empire’s Treasure® Wild-Caught Grouper is part of our DNA species verification program, assuring that the Epinephelus species is packaged at our source in Indonesia. Empire’s Treasure® grouper are all hand-line wild caught. Grouper has a sweet, mild flavor very similar to bass. It features a very firm and flaky lean white meat, which retains moisture when cooked.

MAHI MAHI

Empire’s Treasure® Wild-Caught Mahi Mahi is sourced from the prime fishing grounds of South America. Mahi Mahi has become a favorite in a number of dining establishments. It is plentiful, relatively inexpensive, and appealing in flavor and texture. The mild flavor is ideal for chefs wishing to add a signature sauce to a flaky fish recipe.

MEDITERRANEAN SEABASS

The sweet-flavored, semi-firm white meat of the Bronzini tastes somewhat like a red snapper and is often marketed as Bronzini, Branzini, and European Seabass. Empire’s Treasure® Farm-Raised Mediterranean Seabass comes from the waters of Turkey and is similar in appearance, size and preparation to a medium size trout.


FINFISH PANGASIUS

World Dock® Farm-Raised Pangasius, commonly farm-raised in Vietnam, is an economical white fish that is very popular in the United States due to its year-round availability and very mild flavor that accepts sauces and breading very well. While it is one of the 300 species of the catfish family, it is not the same species as the American Channel Catfish.

RAINBOW TROUT

Bay Winds® All-Natural Farm-Raised Rainbow Trout are raised in Lake Titicaca, located above 12,000 feet elevation in the remote Inca region of Peru's Andes Mountains. From the orange colored flesh and the mild and buttery taste Bay Winds® All-Natural Farm-Raised Rainbow Trout will rejuvenate any menu.

SABLEFISH

Sablefish is the only officially approved name for this species, but it is widely known as black cod, especially along the west coast. Bay Winds® Wild-Caught in the USA Alaska Sablefish (Black Cod) is rich and buttery, fairly oily, and possesses a steak-like texture with a beautiful white flake that is sweet, delicate and intensely flavorful. Bay Winds® Alaska Sablefish is harvested by longline and pots from March through mid-November. Sablefish is considered a delicacy by most seafood connoisseurs. Compare to Chilean Sea Bass.

SNAPPER

Empire's Treasure® Wild-Caught Snapper is featured as a signature dish on many restaurant menus from coast to coast as its popularity continues to grow. Snapper is very versatile as it can be baked, broiled, grilled or fried. This mild-flavored fish always delivers excellent results with whatever cooking method you use to prepare evidenced by the number of other types of fish masquerading as Snapper. FINFISH SMOKED TROUT AND SMOKED SALMON

Farm-raised hot smoked trout and cold smoked Atlantic salmon are an excellent way to preserve the delicate flavors of each finfish, with each fillet trimmed by hand with superior craftsmanship. Bay Winds® offers genuine Scottish Smoked Fresh Salmon that is soaked in spices, brown sugar and sea salt, then cold smoked over hardwood chips. During this process the fish is not cooked, but develops a signature smoky flavor. Empire’s Treasure® Smoked Fresh Salmon and Trout deliver extraordinary flavor along with a host of nutritional benefits. Both are naturally smoked using native Maine fruitwoods and hardwoods. Kosher certified salmon is pre-sliced with pin bone out, skinless, and belly trimmed. Empire’s Treasure Smoked Salmon and Trout are conveniently ready to use from a thawed state. Silver Source® Smoked Salmon is carefully brined to ensure the best flavor, then smoked using a combination of fruitwoods and hardwoods. This product is quality assured and trimmed of excess nape and belly material.

SWORDFISH

Bay Winds® Wild-Caught, All-Natural Swordfish is caught in the North Atlantic Ocean north and west of Spain. Also known as the Broadbill, Emperado and Espada, it is frozen at sea within 6 hours of being longline caught. Its natural cold-water habitat and wild diet provides a higher fat content with moderately high oil content. This produces it’s moist, flavorful, slightly sweet, firm meaty texture.


FINFISH TILAPIA

Americans ate over 175 million pounds of tilapia last year. It is one of the most popular imported farm-raised fish. Empire’s Treasure® All-Natural Farm-Raised Tilapia is cage-raised in fresh water lakes on our certified sustainable farms in Indonesia and Mexico. The fish consumes a high quality diet, with no antibiotics, growth hormones, polyphosphates and no carbon monoxide. Our World Dock® Farm-Raised Tilapia offers high quality, deep-skinned fillets in five carefully graded sizes that are farmed in China, raised under rigorous controls, and processed in a state-of-the-art facility. To ensure consistent quality and food safety, our fish are inspected by on-site Quality Assurance professionals. Not only is our facility fully HACCP compliant, we also comply with the Aquaculture Certification Council’s Best Aquaculture Practices.

U.S. FARM RAISED CATFISH

Empire’s Treasure® Farm-Raised in the USA Catfish is not only a Southern staple, but is popular on menus across the country. This grain-fed, farmed fish has a consistently sweet, mild taste. The moist, dense meat is firm and has less flake than the typical whitefish. World Dock® U.S. Farm-Raised catfish features all of the benefits of Empire’s Treasure® with irregular sizing.

WALLEYE

Wild-caught in the Canadian area of the Great Lakes, this MSC certified fishery is where the Empire's Treasure® Wild-Caught Walleye is sourced. The largest number of the Perch family, also commonly called Yellow Pike, Pickerel and Dory, it can be considered one of the best tasting freshwater fish available. The fine flaked walleye fillets are prized for their thickness and succulent, sweet, mild flavor and its popularity has spread throughout the country.


FINFISH YELLOWFIN

Empires Treasure® Wild-Caught Sashimi Grade Yellowfin Tuna is harvested using hook and line methods (safe for dolphins, and better for the fish meat), which target large tuna and naturally encourage sustainability. Empire’s Treasure® Yellowfin Tuna is pre-portioned and packaged at the source to ensure quality and consistent size.

Roma® Anchovies are conveniently canned and packed in multiple size options. BREADED AND BATTERED SEAFOOD

We offer a wide variety of breaded and battered seafood items across our seafood brands, including Cod, Haddock, Pollock, Rockfish, Shrimp, Catfish, Clams, Flounder, Scallops, Calamari and Crab. Choose from various coatings like Southern Style, Coconut, Beer Batter, Panko, Lightly Dusted, and Hush Puppy-style. Empire's Treasure® has partnered with Marine based Shipyard Brewing Company® and introduces their award-winning Shipyard Brewing Company® Export American Golden Ale for our select Empire's Treasure® Handcrafted Beer Battered Seafood. SQUID

Roma® Wild-Caught in the USA Squid is wild caught in Point Judith, Rhode Island. Fully cleaned with consistent quality Our Roma Wild-Caught in the USA Squid is prized for its tenderness. This superior squid has a light and almost buttery flavor that will keep customers coming back for more. Roma Asian® Loligo Squid is fully cleaned and similar to domestic in quality and features excellent flavor and tenderness. Roma® Chef-Ready Fresh Squid is ready for preparation, no thawing needed. This fully cleaned premier squid that has been previously frozen arrives packed in 10 lb. styrofoam packages and features


ADDITIONAL TYPES OF SEAFOOD SURIMI

Wild-caught Alaskan Pollock from the Bering Sea and wild-caught Pacific whiting from the coasts of Washington and Oregon are used to create imitation crabmeat, which simulates the taste and appearance of natural chunks of crab at a value price.
