Is it BECAUSE, you offer a unique cuisine, specialty wines, beer, or liquor drinks, special events, or an atmosphere that attracts them to your place of business. Know your target audience, and make it realistic for those patrons within an easy reach of your business. Our three featured customers in this edition have done just that. Pacific Coral established in 1974, is a Family Owned and Operated Seafood Importer, who offers their customers a reliable source of seafood. Quality is always the first priority. All products packed are 100% HACCP Certified. When it comes to commodity, price is usually the number one factor when talking to customers. And that is true in a lot of cases, but when it comes to Pacific Coral, price needs to be the third item on the list. Pacific Coral packs the Empire’s Treasure and Baywinds label products for Performance Foodservice. Quality and the fact that the Baywinds label is all natural with no sodium tripolyphosphates should be the first factor considered. No chemicals, hardly any shrinkage, and it tastes like shrimp! Sampling and cutting the shrimp against the competition will show the real savings to any customer. Selling a 21/25 count peeled and deveined tail on or off that truly is a 21/25 after cooking is the biggest cost savings. CUSTOMER SPOTLIGHT Fresh homemade menu items with weekly specials inspired by the owner himself Bill, a dessert case full of homemade goodies, and diners throughout the day can all be found at Sunshine Grill! Bill and Effie Marvelis, owners of Sunshine Grill met while both owned their own places at Lexington Market. After a few years, they decided to sell the market locations and create a bistro style restaurant together. They found the location, which had previously been the Fork, Deli with only two tables! They remodeled, which took about a year, and the restaurant was ready to open! Over the years, the restaurant and catering both have continued to grow, and they are in need of more space. Catering is about 30% of business

for Sunshine Grill. They do a lot of office lunches, reunions, parties, barbecues, and weddings. All of this growth has necessitated expanding the kitchen and storage space to include a walk in refrigerator and freezer and prep area for all of the increased production. The newly renovated enclosed patio offers an additional 50 seats for indoor/outdoor dining… according to the season. Just two years ago, they brought on Anita as the chef and she has been a wonderful addition! Anita has a lifetime of experience in the restaurant and catering industry, having both her own restaurant and bakery at different times. She said her earliest memory was being in a bakery with her grandmother and her great grandmother when she was two years old. Anita is the driving force behind many of the unique menu offerings such as Lobster Pot Pie and Duck Breast Risotto to name a few. Remember that dessert case? Effie’s dream included adding homemade quality dessert offerings which she makes from scratch daily. Along with those delicious homemade desserts, the weekly and monthly specials are part of what sets them apart. Bill, Effie and Anita together try to come up with very unique specialty items that you can’t find elsewhere, including a new soup weekly, a specialty salad and entrée, as

well as a new beer or specialty drink each week! Bill explained that it is very important to find a catchy way to name all of your specials so that it’s something everyone wants to order. They often bring in live entertainment on Friday nights to help draw a crowd as well as featuring their weekly beer and drink specials. They do a lot of sourcing locally, for example, milk from a creamery down the street and eggs and produce from the local market. Sunshine Grill is located in a small town area. Effie explained that it’s hard to win the hearts of the locals in any small town, but once they get to know you, they are very supportive. Sunshine also has many customers who travel to the restaurant regularly from Towson, Parkville and Fallston. Many of their employees have started with the restaurant when they were in high school and continued to work through college. Even if they went away for school, they would come back during summer, but unfortunately, most of them move on after college to pursue a career, and Bill and Effie are back to looking for employees. Sunshine Grill has been working with Performance Foodservice – Maryland for just

under a year. According to everyone at the restaurant, their sales representative, Jeff Swope, is very dedicated and helpful. Jeff introduces new items as they become available and are relevant to Sunshine’s offerings. Effie added that he doesn’t make mistakes, but even if he does, they understand things happen. Sunshine Grill uses social media, mainly Facebook and Instagram (@sunshine_grille). Bill said it’s a great way for customers to actually see your menu items. They take lots of food photos and post them to entice customers! They also post things happening at the restaurant or events they are catering. Bill and Effie’s advice is people often do not want to work hard and be dedicated to the business, so you have to put a lot more of your time and effort into it than many other jobs. If you have a spouse that is not in the restaurant business, it’s hard for them to understand the time and dedication you will put into the restaurant and that can put a strain on the relationship. And it’s an addictive business to get in to, once you’re in, it’s really hard to get out!

Grilled Summer Veggie Pasta Salad VINAIGRETTE: 2 tablespoons sherry vinegar 1 tablespoon extra virgin olive oil 1/2 teaspoon kosher salt 1 1/2 teaspoons honey 1/2 teaspoon Dijon mustard 1/4 teaspoon freshly ground black pepper SALAD: 1 LB. ASSOLUTI PASTA PENNE RIGATE 233367 8 ounces asparagus, trimmed 2 (4-inch) portobello mushroom caps (about 6 ounces) 1 medium zucchini, cut lengthwise into 1/4-inch-thick slices 1 yellow squash, cut lengthwise into 1/4-inch-thick slices 1 small red onion, cut into 1/4-inch-thick slices 1 red bell pepper, halved and seeded Cooking spray 2 tablespoons chopped fresh basil 1 tablespoon chopped fresh chives 1 tablespoon chopped fresh parsley 6 tablespoons crumbled queso fresco

PREPARATION 1. Prepare grill to medium-high heat. 2. To prepare vinaigrette, combine first 6 ingredients in a large bowl; set aside. 3. To prepare salad, coat asparagus, mushrooms, zucchini, squash, onion, and bell pepper with cooking spray. Place vegetables on grill rack; grill 4 minutes on each side or until slightly blackened. Remove vegetables from grill; cool slightly. Cut vegetables into 1-inch pieces. 4. Cook ziti in boiling salted water approximately 6 min or until aldente 5. Add vegetables, basil, chives, and parsley to vinaigrette; toss gently with ziti to coat. Sprinkle with cheese. Note: serve as a side or top with grilled shrimp, chicken or beef. Salad can be served warm, room temperature or chilled.


Tomato Gazpacho INGREDIENTS 2 cups West Creek Diced Tomatoes 878218 46 ounces West Creek Tomato Juice 878196 1 small onion, minced 1 cup bell pepper, minced 1 medium cucumber, peeled and diced 1 scallions, chopped Juice of 1/2 lemon Juice of 1 lime 2 tablespoons red wine vinegar 1/4 cup fresh parsley, chopped 2 tablespoons olive oil 2 cloves fresh garlic, crushed 2 teaspoons honey 1 teaspoon tarragon 1 tsp basil dash of ground cumin dash of tabsco sauce salt and pepper to taste

PREPARATION Combine all ingredients and chill for at least two hours. Top with diced avocado or croutons if desired.

For Justin Nicholson, working in the restaurant business is in his blood. He grew up with his parents always being in the business. Justin owns River House Bar & Grill in Middletown, PA, which he describes as an American Grill, serving a variety of burgers to salads and seafood, lots of seafood! Shaun Fink is the chef, and one of Justin’s grade school friends. As Justin tells the story, he developed the idea of the restaurant and knew what he wanted to do. They had a school reunion coming up and he knew Shaun would be there, so he showed up with the prints and plans in hand and Shaun was right on board! Shaun has also been in the restaurant business most of his life, starting off washing dishes at age 14. He went to culinary school in Pittsburg and did an internship at Disney before becoming head chef at multiple restaurants.

Justin said they put together a 400 page business plan to get everything figured out and make it work. They gutted the building and completely started over with everything new from the wiring and plumbing to the furniture and the kitchen. The restaurant first opened in February 2008 as Portabella’s Sports Bar and Grill, but in July 2013 they changed the name to be more in tune with the area where they are located, and to get out of the night life style. In 2012, they opened the deck for additional seating, but it took a couple more years for business to take off. In 2014, business quickly picked up, even before customers could sit outside. And once the deck was open for the season, business took off! Currently, River House can seat almost 250 people and they are looking to continue to expand for additional seating. Justin and Shaun said the made to order food, combined with the atmosphere sets them apart from the competition. Everything served in the restaurant is made to order, which means a lot of prep cannot be done in advance. That makes it a little more difficult to keep up when the restaurant gets really busy, but keeping the food fresh and made to order is important to them.

Since changing the name in 2013, Justin has worked hard to create the right atmosphere for an “American Grill.” They always have light music playing and televisions throughout the bar with sports and other events for those that want to watch. The patio being open and available during the warmer months of the year has also helped to create the ideal atmosphere. For Justin and River House, like many others in the industry, the workforce available today can be a challenge. It’s hard to find good people and to get them to stay long term. Every customer experience is very important, and any employee they interact with can make it or break it. Justin started working with Performance Foodservice – Maryland a year ago, and it has been a great experience from the District Manager, Randy Grassmyer to the rest of the team. Justin appreciates the honesty and the team keeping him up to date with information. He said they are great about sharing information in advance so he can prepare, such as market trends and price increases, but also with showing him new items

or items coming into season so he can keep the menus new and exciting! He also likes the consistency that he sees in the numbers and the Performance Foodservice website, which he said is very intuitive and provides a lot of information. Justin’s advice if you’re thinking about jumping into the restaurant business is to be prepared to work a lot of hours and not see your family a lot. He also said once you’re in it, you can’t seem to get away with it. You might leave for a change, but you always come back to it.

Good Friends, Great Food & the Pursuit of Happiness ~ this is what Founders Tavern & Grille is all about. An allAmerican modern day tavern that serves all fresh food with locally sourced ingredients, a good old fashioned American scratch kitchen, homemade fresh craft cocktails with a historic friendly neighborhood atmosphere; this is what you find at Founders Tavern & Grille in Pasadena, Maryland. Their own founding father Steve Sumner, passionate about both food and history, envisioned his restaurant to be a place to bring people together with great meals, a gathering place for friends & families; an old world neighborhood tavern. Steve’s desire was to bring back to the people fresh food (no freezer on site at Founders), slow cooked, old world basics of cooking. Gourmet Americana style food are on the menu like Shrimp & Grits, Pork Chops, Hanger Steak, Homemade Fried Chicken, Shepherd’s Pie, Williamsburg Honey Glazed Half Chicken, Fresh Homemade Pizza, & Fried Green Tomatoes to name a few. They are recognizable items, but elevated from the normal expectation; these are made with high quality, fresh ingredients. All sauces are made to order, and dressings all homemade. “We have regulars that come in just to get a container of dressing or sauce; that is a proud moment every time,” said Steve. Founders also makes their own fresh bread and pizza dough daily. This includes their rustic table bread and sandwich rolls, which all come from Steve’s ten years operating a commercial bakery down in Baltimore’s Little Italy. His homemade rustic loaves were on the tables of most of the restaurants in Little Italy at the time. Founders uses locally

sourced ingredients as often as possible by getting products from the farmer’s market, local butchers and serving beer from local breweries. They also offer hand crafted cocktails made with premium liquor, fresh fruit and herbs. Steve and his wife Janet Sumner are the heart and soul of Founders. They came up with the name in honor of the basic principles of the Founding Fathers that corresponds with their theme. If you look closely, Thomas Jefferson’s silhouette is at the end of the quill in their logo! Steve and Janet created this entire structure from scratch. They took the space down to a complete shell and redesigned everything. Such unique items like homemade Mason jar lights, detailed items on walls and tables, bucket sinks in the restrooms, down to the Zinc bar top. Janet did all of the interior design work herself, “it has always been a passion of mine.” She designed the décor and manages the branding of the restaurant. When you visit, you will see that Steve’s love for American history was the inspiration. There is a huge ten foot wide wooden American Flag that separates the tavern from the restaurant seating, this is a replica of the U.S. Cowpen Flag that was flown by soldiers of Anne Arundel County during the Revolutionary War. There are a few maps printed and hung in the restaurant from the Library of Congress. “We wanted our customers to feel like they were walking into an old Williamsburg tavern, something you’d see in Baltimore or Annapolis. We are very proud of that and what we have accomplished. The best complement is that our place is cozy and a step back in time. I just love that,” said Janet. Janet is also very involved with the restaurant. She manages business operations including all of the marketing, the human resources, branding, and also designs each new drink menu as well. The restaurant opened at the end of 2013 after Steve was able to find the right location, and a core group of the “right” people, who believed in his vision. For Steve, it’s very important to stay true to the brand, staying with fresh, American cuisine and not jumping in to everything that’s new and hot, and having a team that understands that. They pride themselves in being different, being the first to offer this cuisine in their area. There are a lot of chain restaurants nearby Founders, but not many independents and no other American Tavern style restaurants close by. Steve would like to attract more families to the restaurant – moms and dads along with their kids in their soccer uniforms. They will be announcing weekly specials for families this summer. They keep the television turned down, and have easy listening light rock American folk music in the background. They try their best to make it more of a family oriented atmosphere; a comfortable, cozy candlelit environment that makes it easy to carry on a conversation. This is very much a family feeling among all the staff as well, a lot of regulars


and promote local so they often post about what happened on certain days in history, or what local farmers are promoting, about being a member of the True Blue Crab program, or an article on the health of the oyster population, etc. The restaurant frequently hosts parties, Rehearsal Dinners, Birthday Celebrations, club gatherings, weekly lunch meetings, and has plans on the books to host more sponsored events. They recently held a Bourbon & Cigar Night this past spring, where they had a representative from a local bourbon distillery come for the evening and educate their patrons on bourbon. They paired food with each bourbon and the rep discussed each one’s distinct flavors, along with the history of bourbon, how it became an American tradition and why. It was a huge success. Customers loved it and all enjoyed a cigar and coffee on the Porch at the end of the evening. Founders is looking to continue this event at least twice a year. They are also planning similar events to highlight local breweries and wineries. They also have a U Paint It night set up for Tuesday, August 28th, where patrons join together and paint their own wine glass. Stay tuned for more details! Windows line the front and side of the dining room so there is always a great view. They also have The Porch out front where patrons can dine and enjoy the beautiful weather outside. Steve wants people to know, “We are a neighborhood tavern, a restaurant with a bar, not a bar with food.” Founders has been working with Performance Foodservice – Maryland since the very beginning. Steve has a great relationship with his sales rep, Jim Eldridge, and says it was a game changer finding Jim. He said Jim is very knowledgeable and knows what works for Founders, “He understands what we are trying to do here and cares about us and our business model.” Steve likes the breadth of products available through Performance Foodservice. Working with other members of the Performance Foodservice team like Chef Jack Walker, our Corporate Chef have been beneficial for Founders as Jack understands their concept as well and can offer suggestions for Jim to bring to them. Also, Ed Orlando, Business Development Manager has been very helpful to Steve and the restaurant for menu planning, pricing, and purchasing miscellaneous disposable items. Founders advertises through various forms of media, but has found that the best advertising is word of mouth. They believe they are only as good as their last plate of food served. They say customer satisfaction is the most important factor to them. Janet said, “We have a huge following of regulars and wonderful customers who have become such good friends, and our own family and friends come in; we never want to disappoint any of them”. They also have over 2500 followers on Facebook. Facebook is a main source of communication with their customers. Steve said they will post about current food specials, they call “offerings”, whiskey flights, and other upcoming events. Marketing posts on Facebook and Twitter are all done by Janet, so the Sumners are very hands on with communicating with their customers and handle any and all customer complaints and praise personally. Another thing they also love to do is educate

1/2 Rack BBQ Back Ribs Ingredients 3 Racks Back Ribs 1/2 cup cold vinegar 12 oz lager beer West Creek Sweet BBQ Sauce RUB: (combine the following ingredients) 1/4 cup garlic powder 1/4 cup onion powder 2 tbsp cayenne 2 tbsp cracked black pepper 1/4 cup smoked paprika 1/4 cup brown sugar 1/4 cup kosher salt

Method 1: 1. Score the back of the ribs with a sharp knife. 2. Liberally coat ribs with rub. 3. Place ribs in a smoker and cook approximately three hours between 250 and 300 degrees. 4. Evenly place ribs in aluminum pan and pour in cider vinegar and beer. 5. Wrap tightly with foil. 6. Place back in hot smoker or oven for two hours at 250 degrees. 7. Coat with sauce (unless you want dry ribs) and smoke for one hour at 250 degrees.

ASSOCIATE SPOTLIGHT Sonya Leister Customer Service Manager

Sonya Leister has been part of the Performance Foodservice family for 18 years, and she is currently our Inside Sales Manager. She has a very close immediate family with a strong farming background. Her parents continue to operate a working farm and she helps a lot as well. Sonya is one of the primary caregivers for Cassidy Flynn, who she is proud to say graduated this year from Manchester Valley High School! Cassidy plans to attend Goucher College and will play for the women’s lacrosse team! She also has her yellow lab Sugar Magnolia (Maggie) who is a very important part of the family! In her spare time, she enjoys supporting Cassidy as well as her niece and nephew in the local sporting events, attending concerts and Maryland Terrapins athletic events (and Goucher lacrosse games in the future)! She also spends a lot of time with her family on the farm and at the pool. Sonya said working at Performance Foodservice - Maryland, it’s a new adventure every day and there is never a dull moment. The rewards come by helping an appreciative customer solve a problem, through successful selling, completing a long awaited first time ship, and working with her teammates. She has a few favorite quotes to share: “You get what you give,” “Make the most of today, for tomorrow is promised to no one,” and “Choose to associate yourself with those that lift you up rather than pull you under,” which has been a big once since Cassidy’s graduation this year!
