It is for that passion that Valnerina Tartufi was born, and for us this is much more than a simple business. It is ambition that allows us to create a place where the original spirit of the conservation of Umbrian agricultural traditions meets the innovation of the competitive and latest production and logistic processes. The love we have for our job shows us that we are taking the right path. The union of ambition, humbleness, care, willingness, moral values and propensity for risk represents the strength and the support we want to transfer into our activity. Into our Diamond. But the whole basis of our activity lays on the sense of endless research of the fruit, authentic taste and flavour masterpiece, that our land gives to us: the truffle. The firm Valnerina Tartufi was born on April 2007, from the strong desire of Elisabetta and Leonardo. Nevertheless, our business would not have existed without the more than fiftyyear-old experience of the entire Matteucci family, without the fundamental contribution of dozens of truffle hunters who consider us the benchmark that makes the most of their wise and methodical work. Our truffles, the result of nature’s hard work, grow in the luxuriant area of Valnerina, the green heart of Italy, in the shade of oaks, poplars and lime trees that grow in the Podere Matteucci, in a protected and enviable habitat. The products that derive from this environment retain the taste and the flavour of our woods. Our work, and in the past our grandfather's and father's work, only aims to enhance the products of our land. We sell our products fresh or packed in jars, without any other spices, additives or preservatives. The olive oil from our land ensures a perfect conservation of the flavour in the jar and of all the truffle’s characteristics, enhancing all its organoleptic properties.

BLACK TRUFFLE Tuber melanosporum Vitt Common name: black truffle. Harvest period: from November to March. CARPOFORO - mostly round in shape, but sometimes irregularly lobed and if it grows in soils with plenty of skeleton, the size is variable, ranging from a hazelnut to a large potato, and only rarely is greater. PERIDIUM - surface warty, warts with pyramidal apex depressed, of intermediate size (3-5 mm) which adheres strongly to the glebe. the color of the rind is black, sometimes with zoning ferruginous, in immature tends to red-winey. GLEBE - black-brown or purplish red, the veins are whitish thick and thin, with well-defined contours and accompanied by two bands brown, translucent edges. HABITAT - prefers sedimentary soils, generally well drained porosity and cracking of the parent rock and the high content of skeleton. SUMMER TRUFFLE Tuber aestivum Vitt Vulgar names: black summer truffle, scorzone. Harvesting period in May and August. CARPOFORO - can have very variable shapes and sizes, usually rounded, sometimes with a depression, also can reach sizes around the pound. PERIDIUM - warty surface, black, with pyramidal warts, protruding, large, giving it a typical roughness and a certain consistency. GLEBE - usually brown in color, more or less yellowish in the mature truffles, often lighter in color, is furrowed by numerous veins whitish, thin some other larger, much branched and anastomosed variously. SCENT - gentle and pleasant, vaguely reminiscent of the aroma of mushrooms, soft when young, more intense fully matured or in a closed (glass jar). TASTE - similar to mushrooms. ASCHI - peduncolanti first slightly, then globose, of 60-95 x 50-80 microns, containing on average from 1:00 to 4:00 ascospores, sometimes six (Ceruti, 1960). SPORE - yellow-brown rounded or oval, measuring 18-41 x 14-32 microns (Ceruti, 1960), with the outer surface irregular-mesh size; the height of the peaks originating membranous alveoli are systematically lower than about 50% compared to spores of Tuber uncinatum (Chevalier et al., 1978). WHITE TRUFFLE Tuber Magnatum Pico Common name: white truffle. Collection period (LR34/87) from 1 October to 31 December. CARPOFORO - can take very different forms: round, sirloin, with cavities, sinuous, with respect to various types of terrain in which it is formed. Even the size is very variable, but generally it is sized truffles incurred, is not exceptional to find carpophores of 200-300 grams and sometimes even around a kilogram. PERIDIUM - a smooth surface, yellow ocher or greenish yellow, but sometimes greenish gray. GLEBE - white with yellowish brown or brownish tones, various shades of color are related to the degree of maturation, type of soil and forest species with which it is united in harmony. In some specimens grown in symbiosis with the lime can be seen in speckled, white, slender and numerous, which anastomose with each other giving the serfs a degree of marbling. PRODUCTS FOR RESTAURANTS AND CATERING INDUSTRY FROZEN TRUFFLE Thanks to our blast chillers we can ensure the long shelf life of this product, than can maintain all its organoleptic characteristics that make it the jewel of our tables. We prepare the product carefully cleaning it and if necessary we remove the less precious parts. We can pack quantities of black summer truffle, white truffle and black winter truffle, whole, in slices or minced, without adding other ingredients or with our mixture in olive oil, according to our customer’s needs. The packages can be plastic jars, polystyrene trays or vacuum bags, depending on the quantities and on the product type. Minced: trays 500 and 1000gr, jars 100 and 200gr. Whole and in slices: on request

TINS All our products (truffles slices, sauces, minced truffles, gastronomic products) can be requested in can, in several sizes. The tinning grants a perfect preservation of the product even for long periods and moreover tins can be stocked easily than jars in glass.
