Chef Punchun, one of the most prominent Thai Chefs in the world, is currently working at “Krapood Restaurant” in Maerim, Chiang Mai where he is exploring and finding fresh northern ingredients to supply to Mom Tri’s Kitchen in the South. he Beginning of Phuket’s Iconic Bus
Between 1947 and 1967 Phuket saw major changes in its available modes of transport. During this time, a large number of Phuketians were lucky to have large increases in their incomes as a result of the island’s tin mining industry, and as a result, out went animal drawn carts and in came motorised vehicles. However, these vehicles faced one major problem, a number of the routes used were unsuitable for the new style vehicles. Kosimby Na Ranong, Governor of Phuket at the time, asked for assistance from owners of the island’s tin mining businesses to help develop roads to

help take Phuket’s transportation system into a new era. As a result, the first official road to open in Phuket was Thepkrasattri Road, which was quickly followed by Phuket Road and Vichit Songkram Road. Having seen the development of a road system, the island soon saw a dramatic increase in the number of motorised vehicles using them. Not only were the locals able to use them for their personal cars, and businesses for their trucks, shipments coming from Penang were now able to be brought by medium sized trucks, a vehicle which would soon be modified and used as a mode of public transport. These simple trucks, with a driver’s cabin and low sided flatbed behind, saw the addition of a roof supported by wooden pillars covering the flatbed, and three rows of wooden seating fixed to the floor, two running along the side of the flatbed and one in the centre. A wooden ladder was placed at the rear to allow people to mount and dismount from the vehicle easily, and rolls of plastic sheeting were attached to the roof along the sides of the vehicle which could be rolled down to protect passengers from the rain.
A Song Taew, which basically translates as “two rows”, is a converted pick-up truck or lorry that acts as a taxi. It gets its name “two rows” because there are two fixed benches along the sides on which passengers sit. Song Taews are painted in a bright blue colour and are a cheap and convenient way to travel around the island. A journey on a Song Taew also provides passengers with great viewing opportunities be they of Phuket Town, natural landscapes or local living styles. However, the one downside is that a journey on a Song Taew can sometimes be a little slow, not because of the vehicle, but because along the route the driver will almost always stop to pick up a friend, relative, some kind of good which need delivering along the route, or other passengers going in the same direction. If you are in no rush and don’t mind the fresh air, it’s a great way to get around and an experience that should be tried at least once, or more if you enjoy it that much. Song Taew journeys cover the main routes between all the main beach locations and Phuket Town, but there are no official bus stops, passengers need to wave them down as they see them approach and ring the bell when they need to get off. Fares for most journeys start at only 10 Baht and go up to 40 Baht depending on the distance traveled. It should be noted that Song Taews usually only run from early morning until around 6pm, however some do run until later in the evening. The Song Taews going to the beach destinations leave every 30 minutes from the local bus terminal in front of the Central Market on Ranong Road.

A great, cheap alternative For those staying in Phuket’s beach destinations such as Patong, Kata and Karon, the vast majority of the areas hotels are located in close proximity of the beach, shops, bars, restaurants and shopping centres, and are therefore easily accessible by foot. However, sometimes those staying in such areas want to get out and about and visit other areas of the island. There are also those who choose to stay in Phuket Town but want to visit the beaches. For these people there is a mode of transport that is a great alternative to a taxi or tuk-tuk, and that is the Song Taew.

Song Taew Production Nowadays, garages that make Song Taews are few and far between, but there are still some in operation. Khun Jarun Prasertsittikul is the manager of one such garage, Tammapong Garage Phuket, which has been producing Song Taews for decades. Khun Jarun says there are still a number of people interested in modifying their trucks into Song Taews which would be used to carry private or hotel passengers. Costs start at around 120,000 baht for

a pickup truck to be modified and larger vehicles such as 6 wheel trucks cost somewhat more. For Khun Jarun’s team to complete the modification of one Song Taew takes roughly one and a half months, it’s a job that requires a great deal of expertise and purism. Furthermore, there are now very few Song Taew mechanics still working today and the new generation of mechanics lack the knowledge required to be able to work as a Song Taew mechanic. The History of Phuket’s Mining Industry
A
ccording to the evidence which is available, it appears that Phuket’s tin mining industry began as long ago as 1528 A.D. during the reign of King Ekatossarot of Ayudhya. Prior to this time, the Portuguese had occupied Malacca, which was the trade center for their Asian operations, and in 1583 they opened a tin warehouse in the Thalang district of Phuket. In 1626 the Dutch pretty much took over Java and King Sontham agreed that the Dutch be the sole agents for the tin trade in Thalang. In 1667 the people of Thalang rose to fight the Dutch and subsequently expelled them from the Island.

In 1772, the British Captain, Francis Light, who was also very busy in Penang, came to establish a tin trading station at Baan Tharua. Subsequently he became very good friends with the Governor of Thalang. In 1809 tin minerals were found at the then named Baan Ket-ho, now known as Kathu, leading to more and more Chinese migrating to Phuket to work in the growing number of tin mining operations. At the time tin was panned from the streams using simple tools, but in the Mhuang Lan or Mhuang Khra area, operators with greater capital used powered water hoses to break down the soil and rocks of nearby hills. In addition to the harvesting of ore by the aforementioned

In 1907, when Phraya Radsadanupradit (Khorsimby Na Ranong) was a regional dependant of Phuket, Edward Thomas Miles, an Australian captain established the Tongkah Harbor Company and it began to run the Mhuang Rua Khud mine at Thungkha Bay. It was the first tin mining operation in the world to use marine vessels for dredging ore from the sea bed and later it was ingeniously adapted to be used inland too. The Mhuang Rua Khud mine needed high capital investment and required a large open space; its success eventually attracted other companies and for Mhuang Rua Khud a new mining era was born. In 1930, the “Mhuang Chao Fah” mine was opened. It was the first Mhuang Soob in Thailand. It needed a large plain, a lot of equipment and a variety of vehicles. Therefore, dikes and rail tracks for the movement of mineral ore were built. methods, there was also another method used. This involved digging into the soil, crumbling the rocks and following the visible ore pipe. There were at least 100 workers at the Mhuang Harb mine working over a wide area. The Mhuang Jor-Ngun mine was on flat ground where there was already an exposed rocky mineral line. In 1861, Phuket was promoted as a leading city and was to be answerable directly to Bangkok, and as a result of the expansion in mining Thalang became an important town under the jurisdiction of Phuket. The government began collecting taxes by means of “Mhao Muang’ and in 1876 Chinese workers became unhappy and started rioting and united together to become the “Ung Yee”. They complained about the shortage of water needed for separating soil from ore as well as the decrease in incomes caused by the “Mhao Muang” tax system and further worsened by lowering tin prices.
In 1963, the Thai Sarco Company was founded and implemented the first tin melting plant in Phuket and the tin ore it produced made a lot of people wealthy. In 1967, Temco Company requested government permission to operate deep sea mining, but the Phuket residents protested. In 1973, the Tourism Authority of Thailand announced its plans to develop Phuket into a major center of Tourism. In 1975, the government cancelled all ore mining concessions for Temco Company and allowed the formation of the Phuket Tourism Business Club. In 1988 there was the “Tantalum” case which saw a large number of people from Phuket protest strongly against the building of an ore smelting factory. Kathu Tin Mine Museum The informative Kathu Mine Museum opened its doors in August 2009, and it has quickly become one of Phuket’s most cultural and historical attractions. The museum offers exhibitions both inside and outside of its grand building highlighting the following: • • • • • • •
Understanding the beginning of the world Phuket people’s way of life during the tin mining era The various tin mining processes A smelting demonstration, and products made out of brut tin The journey of Chinese merchants The reconstruction of Kathu during the tin mining era A walk within the tin mining landscape The Kathu Tin Mine museum is a great reminder of the major part tin mining played in the island’s history and represents an important step in Phuket Administration’s ongoing strategy of promoting not only the island’s natural landscapes, but also its cultural and industrial heritage. The museum is open every day from 9am to 4pm and entry costs 100 baht per adult and 50 baht per child under 15 for foreign tourists, and 50 baht per adult and 20 baht per child for Thai visitors. Students in uniform, Thai citizens over 60 years old and disabled people benefit from free access. The museum can be accessed by turning off Thepkrasattree Road (going north) between the bypass road junction and the entrance to the Boat Lagoon, then going past the British International School. The entrance – a rather majestic gateway in the middle of the countryside – is about a mile further on and cannot be missed.

huketindex.com recently met with Alessandro to find out the secrets to his success and his plans for the future.
You were a successful chef in a large hotel before investing in Acqua, why did you make the decision and was it an easy decision? For me it was very easy! I believe it’s a dream for every chef to own their own restaurant with their own design and food concept. For me personally, staying at the Sheraton Phuket for 4 years was enough for me. I had reached the level of executive chef so I either moved to a new hotel, into food & beverage management, or started my own restaurant. Being so passionate about being in the kitchen as a chef, the only choice I had was to open Acqua.
Did you ever think starting Acqua was too ambitious? No, when you have a passion for something, you’re still young and want to follow your dream nothing should come in the way. Obviously when you first open your own restaurant you face some difficulties, people don’t know you and in Phuket you’re in a seasonal place, but I was convinced I could make my idea work.
What motivates you to do your best as owner of Acqua? Acqua is my baby, it has been my dream! I’ve grown with Acqua and I’m the face of Acqua so motivation isn’t a problem. We always strive to find new ingredients to use, we continue to create new dishes, and always try to improve the look of the restaurant. We now have our new walk-in wine cellar with over 430 labels, so really my motivation is trying to bring something new to our customers.
What is the best thing you’ve learnt related to Acqua? When we first opened everybody was asking why are you opening a high end restaurant like Acqua in Phuket and saying it was not going to survive. Nearly five years later we are one of the most successful famous restaurants in Thailand. We’ve received every award possible in Asia; we’re in the Miele Guide’s top 5 restaurants in Thailand, the first restaurant in Phuket to be there. So I have learnt to follow my heart and not want people try to tell me.
How important are good employees to your success? I can’t do everything myself so they’ve been very important. I’m lucky to have staff here now that has been here since the beginning, they’re my key players!
What challenges have you faced since opening? I faced some problems during the first year in operation, but I haven’t faced any challenges as such. At Sheraton I was operating eleven outlets, so running just one restaurant is quite simple. However, I am now finding staffing becoming a problem.
If you had the chance to start Acqua again, is there anything you would do differently? I would do everything the same but if anything I would change the location and would choose a non-seasonal one. I’m in Phuket which has 6 good months and 6 not so good months, so I would choose a place that had 12 months of continuous business. But I’m in a place I love and I wouldn’t change that for anything!
How do you find people to bring into Acqua that care about it the way you do? I run my restaurant like it’s my house, I try to stay as close to my staff as possible. If I find something which isn’t right I’ll explain to them immediately how to correct it. The guys here now act like Italians but they’re Thai, we have to appreciate that. If they can’t adapt to the western way in a western restaurant, unfortunately they’re not for Acqua.

What has been your most satisfying moment since opening? Seeing Acqua built! I designed it centimeter by centimeter and when it was actually finished it was amazingly satisfying. I was proud not only of myself but what the team had achieved. The entire project was done from a picture in my mind, and when you see the result, the exact picture of your imagination, it’s an amazing feeling.
There are many restaurants on Phuket, what makes Acqua so special? How do you build a successful customer base? We try not to disappoint anyone; of course we make mistakes, but we try to keep mistakes to a minimum. If a dish isn’t 100% perfect, we’ll make a new one. Running a restaurant isn’t just about making money, some restaurants don’t want to throw away a lobster and they’re happy to serve one which isn’t perfect to customers, we won’t do this. The most important thing is to give the right food to the customer, if this is not your mindset you can cause your restaurant many problems. In my opinion, it’s better to keep a customer waiting and prepare a new dish rather than presenting them with a bad dish. A small complaint about waiting a little longer than expected is nowhere near as damaging as receiving a complaint about poor quality food.
How do you generate new ideas for Acqua? As a passionate chef I always look at new books, magazines and TV shows to generate ideas. I also visit Hong Kong, Asia’s top restaurant destination, every year
Acqua never compromises on quality! We are the only restaurant that offers such a wide range of quality ingredients imported from Europe. We have a unique selection of ingredients that even 5 star hotels cannot afford to have.
Do you have further plans to expand your Acqua brand? I’ve just returned from Hong Kong where I was evaluating a proposal to open a restaurant. However, it won’t be branded as Acqua as there is already a one in existence. I am currently working on a different name and it’s possible I might use my name. We’re at the stage where we’re nearly ready to inspect locations for the venue, and I’m hopeful in the next three weeks we’ll have some kind of confirmation.
Where would you like Acqua to be in 5 years time? The main thing is to get our restaurant open in Hong Kong and then if everything goes well to open more concepts. I don’t use the word restaurants as it can be a different concept similar to here in Phuket with our Boccocino Deli Cafe in Surin. In addition, I would also like to start doing the importing of ingredients ourselves so they are exclusive for us. My parents immigrated to Australia from Italy in 1957, so I’m Australian born but of Italian decent. It was actually a strange upbringing for me growing up in Brisbane, my parents didn’t speak English so I was Italian when I was at home, but as soon as I left the house I became Australian as obviously none of my friends spoke Italian. However, it was great experience because I was raised with a completely different culture from the country in which I lived.

I think people who know me well would say that I’m firm but fair. However, before I left my previous role to join Westin Siray Bay, I asked my department heads to answer 3 questions about me; what they thought about me, what they thought I could do better, and what they would recommend my new team. From the replies I received there was an overriding theme that to work with me you need to have a sense of humour, you need to be honest, and that if you make a mistake you should tell me about it, one of my pet hates is when people try to hide something from me. This is something which I brought with me and presented to my new team

What are your main priorities here at Westin Siray Bay?

First and foremost it’s my people, I want to develop my people and build team of core members that are going to want to stay working with me here. I also have to look at the business here and make sure we’re delivering what the owners and customers want.
How do you define success in your job? My personal goalpost is financial success, I’m very goal driven so I want to make sure all targets are reached.
I don’t really care if we’re not the best hotel in the Starwood Group, or the best hotel in Phuket, I just want us to be the way we are supposed to be. I also want to be able to look into the development of our people, people won’t remember me for profit margins, they will remember me for how I have developed the team, which for me is a very rewarding.
What differentiates your property from others in the region? First and foremost, we’re in an area where there aren’t really any other properties, so we can’t be compared to other properties like would be the case if we were in Patong or another main tourist area. We are unique in that we’re in an area which is still very natural and undeveloped; we’re very close to the charming Phuket Town, every room here offers a fantastic view, and many have their own pool. It’s a nice relaxing environmental area to be in; it’s safe, very family friendly and definitely has a place in its market. www.phuketindex.com

When you visit other hotels what do you observe/ judge?
In this particular property there is so much work to do and I’m challenged by it. I can walk around here and get so excited about the amount of things we can do. I also like the fact it’s not an easy property to manage, there are a lot of beautiful differentiators about this property that make it so special and which make it such a great challenge for me.
I’m never one to complain because I understand how hard it is to run a hotel, if things don’t go right I’m not bothered by it. I recently went on a 10 day holiday and where I went had 4 or 5 Starwood hotels and I chose not to stay in any of our hotels because you can’t stop looking and comparing things to your own hotel. However, saying that, it is always good to visit other hotels because it can always help you stimulate ideas.
Which travellers are your main targets? We have a very strong group mix, and by that I mean we have a very good MICE customer base, and we also have those seeking high leisure, and within this group our top markets are Japan, Korea, Thai, and Australia.
What are the main challenges you face here? One of the main challenges is the hotel’s utilities and infrastructure, being built on the side of a mountain doesn’t make it easy to get water and electricity here, but those kinds of issues are out of my hands. The upkeep of the buildings themselves is also a challenge, due to our climate and the fact the property is sea facing means a lot of work has to go into keeping it in reasonable shape. Furthermore, Phuket is a competitive market and we have to fight along with everybody else for our market share and also to keep our associates.
What’s your motto in life? One thing that I’ve always said is “Every effort earns success”, I’m a firm believer that nothing is ever given to you, you have to work for it!
What do you hope to accomplish in your time at Westin Siray Bay? I would like to get this hotel to a level where it’s producing in line with everybody’s expectations, and for it to be known as one of the best Westin resorts in our network. In my regional capacity I hope to be part of developing and opening new hotels that we have in the pipeline for Southern Thailand.
How do you balance your business and private life? I can’t say I’m doing that very well at the moment, but given that I’m only 3 months in I think that’s acceptable. But I do try to exercise most days, and in time I will get some outside interests which I’ve not had time to do yet, otherwise you can become too reliant on being in one area and I don’t think that’s healthy.
How are occupancy levels and forward bookings? September was a little slower than we had expected; we ran at 72% but expected 76%, but this is quite common on the island. But moving forward, our bookings for October, November & December are very strong, we see the PACE as being strong and we are quite confident about our position, but you can never take your eye off the ball!

rive along any main road on the island and it won’t be long until you see a modified pick-up truck slightly resembling Bigfoot, the original monster truck, but not on such a grand scale.
Unlike other provinces in Thailand where pick-ups are modified in such ways, the monster trucks in Phuket aren’t modified to enable the drivers to have access to palm oil plantations located in uneven, unpredictable, and often near inaccessible terrain, but purely for fun. The drivers of these modified pick-ups have had them modified to go off-roading, an activity which sees these vehicles driven on unsurfaced roads or tracks, made of materials such as sand, gravel, riverbeds, mud, rocks, and other natural terrain, and an activity which is becoming increasingly popular with a number of locals and expats based here in Phuket.

It was a combination of these interests, and also the off-roading possibilities that led Khun Soon to hit his workshop and modify his first vehicle. In time his passion for 4 x 4 modifications grew, as did Phuket 4 x 4 Center, and
today Khun Soon, with his vast years of experience, is the first port of call for any Phuketian, Thai or foreign, looking to modify their 4 x 4 vehicle. As stated previously, the people in Phuket who’ve had their 4 x 4s modified mostly do so for off-roading experiences, and it’s these people’s love of Thailand’s natural scenery, or possibly their fullness of urban life, that make them so passionate about off-roading. To these people there is nothing better than jumping in their modified 4 x 4s and driving through forests, rivers, muddy bogs, mountainsides and over boulders to get as close to Thailand’s nature as possible. n recent years Phuket’s property market has being seeing growth of between 30 & 40 percent per year, and is said to be worth hundreds of billions of baht. It is now not only local property developers who are investing in developments, many new projects are being developed by national developers such as Sansiri, Supalai, Pruksa and land & House to name a few. This is especially the case when it comes to Phuket’s condominium market which has seen significant signs of improvement over the past two years. In the early days of the condominium market, units were aimed at the low-end Thai market, which had a large customer base. These projects were tremendously successful with most, if not all units selling within a couple of days of the development’s launch. The success of these projects led to both local and national developers considering the possibility of developing projects in Phuket similar to projects which had already been successful in areas such as Hua Hin and Pattaya and would appeal to both Thai and foreigner investors.

These new projects have brought significant changes to Phuket’s real estate market, they are projects developed by national developers who are not only reliable, but don’t need to rely on cash flow from sales to start their constructions, meaning their projects can commence immediately. This in turn creates increased buyer confidence than for those projects developed by new or lesser known developers who have limited budgets. These larger companies have also brought a different level of product and expertise to Phuket, and are seen by many as being more professional. From the quality of the sales showrooms through to the actual products, a new standard for the Phuket property market has been created.

AREA is unable to give clear figures until 2014 - 2015 when construction of the condominiums is complete.

Phuket Housing Demand Continues to Grow Sansiri has realised that the demand for residential projects in Phuket is continuing to grow among both locals and foreigners, especially for homes priced between 2 and 5 million baht, and have pretty much taken control of the supply of these properties.
