A SHINING LIGHT IN TOUGH TIMES

Hats off to the Fresh Living team for putting together an amazing magazine. Since lockdown, changes surrounded our world. We were housebound, restricted, covered up with masks and banned from socialising and venturing out like we usually do. It was tough!

The greatest page from this historical pandemic is that families drew closer, people developed new skills and abilities, and we learnt to live within our boxes and make the most of it. We have a new-found respect for life.

As a newlywed, my routine is made up of working from home, fi tness from home, scheduled TV cooking shows, preparing my shopping list and experimental cooking.

With the latest copy or even just a season-old copy of your magazine, the possibilities are endless. Not only does it feature new products on the market but it also showcases seasonal foods and provides modern recipes that are Insta-worthy. Thank you for putting the fun into staying at home. Plant-based eating is on everyone’s lips these days. But with terms like ‘vegan’, ‘pescatarian’ and ‘lacto-ovo vegetarian’, it can all get a little complicated...

Vegan: Someone who eats no animalbased or animal-derived food. Health vegans follow this diet solely for health reasons, while ethical vegans do so for animal rights and the environment. Plant-based: Any food or diet that does not include animal products. It can be termed “vegan” but “plant-based” can be specifi cally used because it doesn’t carry the same ethical connotations as veganism. It can also refer to meals/diets which are mostly but not entirely vegan. Lacto-ovo vegetarian: Someone who eats dairy products and eggs but no meat. Flexitarian: Someone who is mostly vegetarian but sometimes eats meat. Pescatarian: Someone who is vegetarian except for eating fi sh and seafood.

WITH Veliswa’s Potato salad

INGREDIENTS

(Serves 4)

5 medium potatoes 2 cobs of corn 1 tsp chilli flakes 1 tsp seasoning, to taste 1 cup bacon 1 cup (250ml) Nola

Original Mayonnaise

1 sprinkle of chives, finely sliced

METHOD

Boil medium potatoes until soft but still firm. Grill corn and spice it with some chilli flakes and chicken spice. Grill bacon in the oven until crisp, chop bacon into pieces and add to the diced potatoes.

Add the corn and chives and add the Nola Original

Mayonnaise

Mix all the ingredients. Sprinkle more chives on top for garnish.

Cara’s Chicken and Corn Pasta Salad

INGREDIENTS

(Serves 4)

METHOD

350g penne pasta 200g cooked chicken, sliced 1 can sweet corn kernels, drained 200g baby tomatoes, halved 1 yellow pepper, deseeded and diced 200g fresh or drained canned pineapple pieces 1 stalk celery, finely sliced 1 cup (250ml) Nola Original

Mayonnaise

2 tbsp (30ml) lemon juice 1 tsp paprika ¼ cup chopped parsley or celery leaves Cook the pasta in boiling salted water until al dente, and rinse well. Add the chicken, corn, tomatoes, pepper, pineapple and celery and mix.

To make the dressing, whisk the Nola Original Mayonnaise, lemon juice and paprika together and toss through the pasta. Garnish with the parsley or celery leaves and serve.
