Elizabeth Gay + Harrison Cozart Harrison channeled The Notebook vibes, proposing to Elizabeth in a canoe on the pond at her grandparent’s home in Sneads Ferry, North Carolina. Both Tar Heel natives — Elizabeth from Sanford and Harrison from Raleigh — the two grew up visiting the Sandhills for family, tennis and golf. Familiar with the beautiful, historic area, it’s no surprise the couple chose the Village Chapel for their wedding and the Members Club of the Pinehurst Resort for their reception. Though the Cozarts’ original wedding date was in June 2020, they postponed the event to November. But the couple couldn’t have been happier with the change. The weather was still warm, but the church flickered in the fall evening, and the resort’s Christmas decorations were a welcome, magical touch. 12

Relive the Wedding, in Detail, on Video

I

n the haze of excitement intensified by nerves, the bride and groom will certainly miss details of their own wedding: a flower girl’s shy smile, Grandma doing the jitterbug, a friend rolling her eyes over the cake. Capturing these fleeting moments is the videographer’s job: “I love what I do,” says Terry McMillian of Brick Capital Video in Sanford. Perhaps because he does it so well. A trained eye captures these moments best, and McMillian has been behind the camera for decades. This Sanford native served in the Marines as a robotic technician, taught technology courses at Pinecrest and Union Pines, holds

undergraduate and graduate degrees in related fields. He settled on videography in 1985 — holiday parties, business meetings, even funerals. Now, weddings make up 95 percent of McMillian’s bookings. “While you cherish the memories, we’ll preserve the legacy,” he tells couples. Although he works with the wedding planner and from his own checklist, suggestions are welcome. Filming could begin before the ceremony as the bride, her mother and her attendants gather for hairdressing and makeup. Or the florist constructing a bower of white lilies, the caterer setting the tables, special features of the venue PS Bride & Groom

— maybe a cathedral, maybe a meadow. For sure, Brick Capital Video will catch the family dog, bedecked in a frilly white collar, trotting down the aisle. Sometimes, McMillian obtains pre-wedding interviews with bride and groom and another with both sets of parents. How sweet when the bride blows her new husband a kiss. Then, Brick Capital Video’s signature shot: “This is the bride’s day. I like to surround the bottom of her dress with flowers,” McMillian says. At the reception, guests are relaxed, therefore interviews more personal. The finished DVD, about

Samantha Hopp + Peter Fabian Sam and Petey met at Wake Forest University, and, after Petey proposed, the couple planned to marry in Denver, Colorado. But, when the COVID-19 pandemic shelved their plans, they pivoted to a backyard wedding in Pinewild — Petey’s parents live in the area. The ceremony overlooked the lake from a neighbor’s backyard, and the reception took place in Petey’s parents’ backyard. “Obviously, our wedding turned out dramatically different than originally planned, but it was still perfect for us, and we would not change anything in hindsight,” Sam says. The couple replanned their wedding in less than six weeks, and the bride credits her husband and mom for the remarkable pivot. Sam says the theme was timeless and classic, but Petey jokes that it was “marriage and COVID.” 20

hen it comes to choosing your wedding day team, every soon-to-be-bride needs a dedicated florist that’s ready to jump in and help execute her own unique vision. “With DIY weddings, people come in and don’t understand the rules of their venue, the fluctuations of the flower market, or the logistics of making everything work together,” Leslie says. “They have a grand plan, and then there is panic, even with small backyard weddings. “A professional florist is comfortable in every setting and knows how to make it look its best.”

What Does the Timeline Look Like? When Should I Book?

For the sake of your own peace of mind, don’t push flowers to the bottom of your to-do list. According to Leslie, you should book at least three months in advance. The Jack Hadden team handles more than 80 weddings each year; like many local vendors, their calendar fills quickly. Even if you’re not ready to discuss details, you should get on their books. You should also have your venue secured before you book your floral vendor. Should I Have a Floral Budget?

You absolutely should have a budget for flowers.Not much planning can be done without one. Oh, and keep it realistic. “If you’ve been all over Pinterest and you know what you want, that’s great,” Leslie says. “But lots of girls don’t know what flowers cost, and want a look that may not fit in the budget they have set. We can come up with something to fit that budget, and still hit that wow factor.” The bridal party often comprises most of the floral budget, so brides should keep in mind the money fluctuation between having three bridesmaids, or having 14.

Are There Packages I Can Choose From?

When it comes to wedding flowers, Leslie has found that two designs prevail: traditional, with lots of blooms and color; and bohemian, with heavy greenery. Whatever your style or theme, a professional florist will work to accentuate it. “We don’t do packages. Every client is different and every wedding created is different,” Leslie says. “We make

sure to customize your look. If we get something in that we think will complete your look and make it stand out, we’re going to include that for you.”

Allison Auman + Joseph Smith Allison grew up in West End; her family, the Aumans and the Pages, have been in Moore County since the 1800s. Lucky for her, while she was working in Raleigh, Joseph was stationed at Fort Bragg, and the pair fell in love in a modern way, with a right swipe. Because Joseph is in the military, he is away from home for many holidays and birthdays. To make up for his absence, he planned a special “Allison Day” to show his appreciation for his partner and — to Allison’s surprise — propose. The pandemic postponed the Smiths’ wedding a year and slashed the guest list from over 300 to 100 people. But the couple and their guests enjoyed the intimate wedding. Most guests attended the rehearsal dinner, wedding and day-after brunch. Cultural touches completed the day. Joseph is Samoan, so he and his family performed traditional songs and dances, and the couple had leis sent in from Hawaii. 28

nce upon a time, the fresh air, idyllic charm, and wondrous beauty of the longleaf pine captivated the hearts of Pennsylvania railroad tycoon James Boyd and his daughter, Helen, as the pair made their way through Southern Pines, North Carolina. With a little persistence from Helen, James purchased 1,200 acres of the pine-covered land with the purpose of preserving its beauty. The Boyds called it “Weymouth,” after their favorite place in England, and preserved the land for people to enjoy for years to come. When his grandson author James and bride Katharine built Boyd House on the estate in 1921, they opened their doors and grounds to welcome townsfolk and coveted literary prodigies alike. Their legacy continued when, in 1979, the Friends of Weymouth was formed to buy this

Cassidy Benjamin + Michael Asbury, Jr. Golf-and-spa-filled vacations brought Cassidy’s family to Pinehurst, then her parents decided to retire to the area. After graduating from college, Cassidy followed her parents to the Sandhills. Mike moved to the area for his job as a sales manager at the Pine Needles and Mid Pines Golf Clubs, and the two eventually met on a dating app. “Thank goodness for technology,” Cassidy says. In May 2020, Mike proposed after a round of golf on the 18th green of Mid Pines surrounded by their closest friends and family — in person and on Zoom. A year later, the couple married at the Pinehurst Resort. They skipped traditional events like the bouquet toss, so their guests could get right to dancing. 36

n literature, flowers represent life, love, and beauty. Wedding flowers set the tone and mood as well, bringing the bride’s vision and theme to life. The majority of brides will come to an initial consultation with a few inspiration pictures from Pinterest at the very least, with some bringing an entire portfolio of photos and fabric swatches. “Our job as floral designers is to interpret the bride’s ideas for her wedding day into a plan that accomplishes her vision while being mindful of her budget,” says Hollyfield Designs wedding coordinator, Pamela Butterworth. Equally as important, especially during the pandemic, has been the cultivation of relationships with local Sandhills flower growers. and downsizing their fields due to the availability of workers and later, with the ongoing disruption in the supply chain. “We’ve all been forced into being even more creative with our ideas and designs as certain flowers became hard to source and hard goods sat on ships,” Hollyfield explains. “Being able to find fresh product right here at home has become even more important to us and we have been fortunate to find local peonies and dahlias which are wedding favorites, as well as an abundance of sunflowers, zinnias, ranunculi, and more. Of course we also have abundant greenery year-round here in the Sandhills area and many brides want to incorporate our pine and

magnolia, especially if it’s a destination wedding for them.” Since contact with a florist may be a new experience for most brides, communication and trust are key to a good working relationship and a beautiful wedding day. “Since flowers will be in most wedding photos that a bride will keep for a lifetime, it’s important that they help to create memories of her important day,” Hollyfield says. Alejandra Reyes + Walter Monroe Williams Alejandra and Walter grew up in Richmond County and knew of each other in high school — they had friends in common. But they were only “friends” on social media until nearly a decade after high school when they finally connected and went on a date. Alejandra’s final semester of graduate school briefly delayed their relationship, but, after graduation, the couple reconnected for date number two. A month into the pandemic, Walter planned a low-key, intimate proposal. The pair had casual conversation over Mexican takeout and walked around Aberdeen City Lake before Walter popped the question. The Wedding Planner: A Bride’s Best Friend

ccording to tradition the bride should have something old, something new, something borrowed, something blue and a wedding planner. No? Just ask the bride who gave the florist the wrong address. Or assumed mosquitoes wouldn’t be a problem at her backyard nuptials. In truth, the minutiae involved in contemporary weddings are staggering. Missing a single detail can cause a domino effect. Entire movie plots have revolved around blunders attributed to inexperience. Solution: A wedding planner like Nicole Smith, owner of Vision Events Wedding and Event Planning in Sanford. Smith, a certified wedding planner with clients from Raleigh to Pinehurst, displays a cheerful let-me-help attitude backed up by 15 years

experience; she is an encyclopedia of caterers, customs, venues, bands and DJs, florists, entertainers, travel destinations. “A therapist, too,” she says, who faces sticky situations calmly, averting meltdowns. She is as comfortable planning a simple ceremony and dinner for the immediate family as an eight-hour bash for 300. Smith also stays abreast of trends, still affected by COVID-19. Last February when a destination wedding in Colorado was canceled she quickly pulled together a home ceremony in a heated tent with a dance floor. “Our clients are opting for more formal weddings – black tie and a plated dinner, like you’re taking 150 guests out to dinner,” Smith says. However, she has also planned “experience” events with hot dog carts, even bars set up in horse trailers. PS Bride & Groom


Entertainment is possible. “We hired an illusionist for one wedding; he went around the tables doing magic tricks.’ Some brides prefer violin or harp music during dinner, others want a DJ to spin everything from waltzes to a jitterbug. Smith has them all on speed dial. But first, scheduling and price. Ideally, the bride calls Smith the minute after her groom slips the engagement ring on her finger, especially if she wants a spring wedding, or during the busy Christmas season. Ideally, Smith likes a year to plan since popular venues get booked fast. The next topic should be an honest and open budget discussion. “Costs have risen (and supplies decreased) because of COVID,” Smith says, when venues shut

down and weddings scaled back or were postponed. Some brides bring ideas that might fit a budget for 60 guests, but her list tops 100. Smith tactfully negotiates options. Her fee is based on a percentage of the agreed-upon budget and includes on-site supervision, coordination with vendors, even help finding a gown, if needed. As plans progress, Smith gets to know her clients, their whims and tastes. Cate Dahl + Grant Bitzer Cate and Grant, both physical therapists, met on Cate’s first day of work in the rehabilitation department at the University of North Carolina’s hospital when Grant stood up to shake her hand. Now, their physical therapy careers have taken the pair to separate jobs, but they’ll forever be grateful for their serendipitous meeting at UNC. Throughout their relationship, Cate had been asking Grant to go on a picnic. When they finally did, Grant got down on one knee and proposed to Cate in Weymouth’s gardens. Fifteen months later, the pair wed at the church Cate grew up in, Emmanuel Episcopal Church, before heading to their dream reception at Pinehurst’s Fair Barn. 52

And there was the group that left because the photographer took over an hour to capture all the “great spots” to photograph. Making sure that vendors and service partners are on board with the planned time schedule keeps things running smoothly. For instance, we have agreements with photographers specifying when as well as the length of time dedicated to photography. And once a DJ, after setting up his equipment, thought he had time to go shopping and left the venue when he was to provide music for the ceremony and cocktail hour. Organizing and monitoring spaces that service partners use to avoid hazards and provide adequate walking spaces for guests will minimize potential accidents. level we keep the DJ’s music amplification at a safe level. You want to avoid the situation where the bride’s grandfather, who has tinnitus and cannot tolerate overly loud music, must leave his granddaughter’s party. Encouraging brides to assign seating at the reception makes dinner conversation more enjoyable and guests more comfortable. You do not want to be in the situation where all but nine people who want to sit together are not able to. The bride now has nine upset guests, and one is her father’s boss! Assisting the photographer and bride with the cake cutting photograph ensures a smooth transition into dessert time. Where is the cake knife? Did the bride not provide one? To SMASH or not to SMASH ? No one knows! Provide napkins! Keep the party to a reasonable timeframe that does not extend past the ability of guests to enjoy it. Our

experience says, “Limit the party to 3 hours or so.” Do not end up with the wedding couple ready for the big “send-off” and there are only five guests left and they are waiting for an Uber. Good Ideas, Good Food, Good Memories

edding guests are more likely to remember the bridal gown and the food than anything else. Alison Hainley and Sophie Baugher nod yes to this industry truism. Hainley and her husband, Brian, operate Genuine Hospitality Catering and Events, which includes Mason’s in Aberdeen — divine shrimp and grits, enormous biscuits — and a soon-to-be pizzeria. Catering director Sophia Baugher plans food worthy of those memories at rehearsal dinners, receptions, showers, morning-after brunches, anything connected to the nuptials. “Buffet or plated, heavy hors d’oeuvres, a grazing table (fruits, nuts, cheese, flatbreads) or carving station, charcuterie, seafood/raw oyster bar and yes, anything from Mason’s menu,” including those famous shrimp and grits, she says, with enthusiasm.

Baugher’s enthusiasm is not only contagious but reassuring: “I love what I do.” As for culinary school graduate Chef Brian: “He can do anything,” Baugher says. As yet, no bride has requested an Asian spread but when it happens the team is ready. Ideally, menu-planning should start about a year in advance, noting preferences and allergies, which can be addressed for specific guests whether attendees number 30 or 250. Creative vegetarian, including vegan, are frequent requests. Baugher gets a “read” on the bride and her family through interviews. Some like the familiar; others dine on the wild side. Sometimes, the couple present a split decision: “I have a couple where the bride wants Mediterranean fusion while the groom prefers PS Bride & Groom


traditional Southern.” Baugher solved the issue with grape leaves, hummus, falafel, couscous salad — and spicy Nashville-style fried chicken. Another time, for trendy appetites she presented a raw tuna poke appetizer with mango and avocado. Industry predictions for 2022 include personalized menus to include places the couple have visited, treasured family recipes, locally sourced ingredients, ethnic and regional cuisine. However, couples expecting a different, perhaps more mature crowd might stick with hand-carved beef, roast chicken, a mashed potato bar, vegetables and dinner rolls. Fine either way. Remember, Chef Brian “can do anything.” Baugher patiently counsels brides who admit, “We have no idea what we want.” Her questions create a

profile that suggests an appropriate menu. Knowing the budget and number of guests early on helps, although she says that Chef Brian is good at both stretching a budget and/or suggesting affordable options. So far, their tactical challenges have been limited to catering a wedding on a farm and in an old building that had no kitchen. Samantha Parkes + Nathaniel Klimek Sam, born and raised in Moore County, and Nathan, who grew up in Raleigh, met at the Pinehurst fireworks at the Fair Barn in July 2018. Nathan then proposed to Sam while they were hiking south of Boone. The pair stopped at an overlook for a drink of water when Nathan handed Sam a cup that read “Future Mrs. Klimek.” After a short and sweet proposal, Sam allegedly said yes so loudly that her response echoed through the canyon. Two hundred twenty-nine days later, the couple tied the knot in their farmhouse rustic wedding at the Country Club of North Carolina on September 25, 2021 — or, if you ask Nathan, the day of the NC State versus Clemson football game. The cake by the Bakehouse featured the couple’s dogs Lucy and Scout, and the altar was greenery with white roses except for one sunflower to honor the bride’s mom, who loved the yellow flower. 60

Tips for the Wedding Day So It Won’t Go Cattywampus!

he wedding day belongs to the bride and groom, yes, yet because it is shared with family and friends, it carries the weight of being a special, once-in-a-lifetime occasion, and with that come pressure points that can take some of the shine out of the build-up to a beautiful day. Since 2017 our full-service team of a photographer/florist/ officiant/cake baker/wedding coordinator at Rubicon Farm has been marrying folks at our countryside location in West End. The heart of our venue is an 1820 farmhouse, the restored 200-year-old home where the brides and grooms get dressed, and where, beginning on the Thursday before a wedding weekend, couples and their families begin bringing things in for the weekend. I call Rubicon’s format the “slow wedding place” because we don’t do more than one wedding per weekend (unless another couple wants to elope), and that fact right there is a huge de-stressor for families. Recognizing that all venues can’t offer such exclusive access to their properties over a wedding weekend, I will structure my few tips so they can be adapted to all venue situations. 62

Plan and buy for the refreshments/bar 2 to 3 weeks ahead: At Rubicon we offer turn-key packages such that couples only coordinate the food and bar for their reception as well as their music. I encourage couples to bring all they can as soon as they want because, fortunately, we have plenty of places at the farm to put things. If you have only day access to your venue, ask a special friend or relative if you can bring items to their house well ahead, and their gift to you can be an early delivery to your location. That is a huge check off! Two important things at the rehearsal: At the farm we always have a wedding rehearsal the day before, but some venues are rented for another event. Make sure you have a rehearsal even if it’s in a quiet area of a hotel because little things come up. To take the pressure off the next day, have all the bridesmaids and groomsmen bring their clothing and shoes to the rehearsal, even if a family member takes it to the dressing site the next day. Doing this provides the opportunity to check for forgotten items that can be easily PS Bride & Groom


retrieved before the wedding day countdown. Check! Taking stock of the ceremony site and reception: At Rubicon we have all the infrastructure in place for the ceremony site and the reception by rehearsal time. This is a major de-stressor for our couples as well as the bride’s and groom’s parents. Everyone can see that the layout is organized, and our team can ask questions and double check some details with the couple before the coming day. I really think this is often the turning point of what makes our weddings go pretty seamlessly at the farm, the evidence that things are coming together! If this is not possible with your venue, try to visit face-to-face with your coordinating team, and make sure you aren’t the only one going over a timeline but also theirs about setting up. Don’t assume their time frame, ask for it! The pleasure and relaxation of seeing the beautiful elements come together: The wedding day at the farm has an old-world charm. The bridal party moves into the master bedroom to get glammed up and dressed, and throughout the day, Carol Dowd of Botanicals comes with her loaded van to unveil the flowers for the ceremony site, centerpieces for the reception, the bouquets, boutonnieres

Jacquelyn + Spencer Spencer proposed to Jackie after they summited Algonquin Peak in the Adirondacks. With the proposal out of the way, the couple planned an October wedding in the Sandhills. They married at St. Anthony of Padua Catholic Church, and the church staff streamed the wedding for family and friends who were unable to attend. After the ceremony, the party moved to the reception at the beautiful, Tudor-style Duncraig Manor and Gardens. The wedding’s inspiration was Hollywood glam. Maple syrup produced and bottled by the bride’s parents’ maple syrup farm in upstate New York was an intimate touch, and the s’mores pit was a guest favorite. The bride and groom ended the night by jumping into the pool to cool off — they highly recommend it. 68

Ashlin Owen + John Adkins Ashlin and John met through a dating app. After their first date, John suggested they go late-night shopping at Target — it was too late for Ashlin, but, from the suggestion, she knew he was special. A year later, John took Ashlin to Rey’s Restaurant in Cary to celebrate their dating anniversary, and he proposed at dessert. Ashlin asked, “Is this real?” several times before saying yes. After recovering from the surprise, Ashlin and John chose the historic Weymouth House as their wedding venue. The bride’s parents live in Pinehurst, and her mom suggested the location. “Oh Happy Day” was the theme of the wedding. A choir sang the song after the ceremony, and the “Oh Happy Daze” custom cocktail was a hit. For a particularly memorable touch, the bride’s mother had an artist paint the duo under the ceremonial arbor during the reception. 76

Alyssa Rocherolle + Reuben Kennedy Alyssa was sitting on the porch swing of a cabin in Boone, watching the sun set on the mountains, when Reuben proposed. Eleven months later, she walked down the aisle at the Southern Pines Chapel in her mother’s veil to the wedding march her grandmother wrote for her parents’ wedding. The couple then drove to their reception in Alyssa’s grandfather’s restored 1950 Citroën, the same car the bride’s parents had driven to their own reception. Alyssa’s family is French, and Reuben is Southern — their wedding theme was “French country with a Southern twist.” Whiskey Pines, the groom and his cousins played country, rock and bluegrass music, and Randy Blue, a family friend, served barbecue. The couple also served French croquembouche pastry towers before guests ended the night with drinks at O’Donnell’s Pub, where the couple first met four years earlier. 84
