is a new international fine dining restaurant and cocktail bar offering a unique style of cooking. Lime’s menu introduces some neglected ingredients from around the world, alongside the best of the better known ingredients and utilises the marinating of meats with a range of spice combinations to give dishes their unique flavour and texture. Direction Preheat oven to 350 degrees (175 C). In Dutch oven over medium-high heat, melt butter or margarine. Cook beef in two batches until browned, stirring often. Remove beef from Dutch oven and set aside. Stir in flour. Add broth, beer, onion, garlic, brown sugar, thyme and bay leaf. Heat to boil. Return beef to dish. Cover and bake at 350 degree F(175 C) for 1 1/2 hours. Add mixed vegetables. Cover and bake for 1 hour, or until beef is done. Remove bay leaf and serve.

Turn the legs over and cook until just done, about 15 minutes longer.
Bloody Mary Cocktail Meatballs Ingredients 1.1/2 pound lean ground beef 2.1/2 pound ground pork 3.1 small tender celery rib with leaves, finely chopped 4. 2 teaspoons prepared horseradish 5. 1 large egg, lightly beaten 6. 1 slice white sandwich bread—soaked in warm water, squeezed dry and crumbled into pieces 7. 1/2 teaspoon hot sauce 8. 1/2 teaspoon salt 9. 1/4 teaspoon freshly ground pepper 10. 1 tablespoon vegetable oil 11. 1/2 cup Three-Pepper Bloody Mary
Directions
1. In a bowl, combine the beef and pork with the celery, horseradish, egg, bread, hot sauce, salt and pepper and knead well. Roll the meat into 1-inch balls.
Add the meatballs and cook over moderately high heat until browned all over, about 5 minutes. Add the Three-Pepper Bloody Mary and simmer over moderate heat until the liquid is reduced by half and the meatballs are glazed, about 2 minutes. Serve hot.

Whisk together brown sugar, salt, and spices in a small bowl. Line a 17- by 12- by 1-inch heavy-duty baking pan with a double layer of foil, then oil foil. Pat ribs dry and arrange in baking pan. Rub ribs all over with spice mixture and marinate, meaty sides up, covered and chilled, 2 1/2 hours. Bring ribs to room temperature, about 30 minutes. Put oven rack in middle position and preheat oven to 350°F. Cover pan tightly with foil; bake 1 1/4 hours. Remove foil.

1/4 cup sunflower oil or canola oil 1 cup chopped green onions 2 garlic cloves, chopped 1 large fresh thyme sprig 1/2 Scotch bonnet chile or habanero chile, seeded, minced 4 cups low-salt chicken broth 2 cups 3/4-inch cubes seeded peeled sugar pumpkin or butternut squash (about 3/4 pound) 1/2 pound smoked ham, cut into 1/2-inch cubes (about 1 1/2 cups) 1 1/2 cups 1/2-inch-thick rounds trimmed okra 1 pound fresh callaloo or 10 ounces spinach, stalks trimmed and discarded, leaves chopped
Directions Dunn’s River Coconut Milk Description: Dunn’s River Coconut Milk is made from pressing the meat of fresh coconuts after the shell, husk and juice have been removed. The juice, whilst making a refreshing drink, is never used for cooking.
Dunn’s River Fish Seasoning Description: “Jerking” is a Jamaican tradition which involves flavouring meat and fish with an exotic combination of herbs and spices. Rub Dunn’s River Jerk Seasoning into chicken, meat or fish and leave to marinate for several hours, then grill on a barbeque for an authentic Jamaican flavour. Alternatively, cook under a medium grill or bake in a moderate oven. Dunn’s River Jerk Seasoning adds flavour to many sauces & dressings and can be mixed with natural yogurt as a marinade for kebabs.

2 tablespoons canola oil 1 onion, finely chopped 2 garlic cloves, minced 2 teaspoons finely grated fresh ginger 2 teaspoons curry powder 1 teaspoon ground turmeric 3/4 teaspoon ground allspice 3 tomatoes—peeled, seeded and coarsely chopped 1/2 teaspoon minced Scotch bonnet or habanero chile 1 teaspoon chopped thyme Salt and freshly ground pepper 2 cups unsweetened coconut milk (from two 14-ounce cans) 1 cup water 1 pound lump crabmeat 3/4 cup chopped cilantro Grilled naan and hot sauce, for serving

In a deep, medium skillet, heat the oil. Add the onion and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the garlic and ginger and cook, stirring, until fragrant, about 2 minutes. Stir in the curry powder, turmeric and allspice and cook, stirring, until fragrant, about 2 minutes. Ecovitch Fish Ingredients
2 lbs. fish cut and cleaned (red snapper, porgies or mullets) 1 lb. onions, thinly sliced 1/2 tsp. salt 1/2 c. cooking oil 1/4 lb. hot green peppers, sliced 1 tsp. ground black pepper 1 c. white vinegar
Directions
Wash and dry fish. Season with black pepper and salt. Heat frying pan (preferably a heavy one) then pour oil into pan and heat very well. When oil is very hot fry fish in it three minutes on each side. DO NOT TURN until each side is done. Remove fish and place in flat casserole dish. Pour the oil from pan over fish. Pour vinegar, onions and pepper into hot pan and bring to boil. Pour this over fish and serve either hot or cold. Makes 4 serving
