S P OTLIGHT

by David Scheller

When people shop for their next apartment, they weigh two considerable factors. Their next home must be in the right place, both for work and recreation, but it must also provide the luxury one needs for a comfortable, satisfying life. The perfect union of these two elements is a rare combination. However, with its downtown placement and nearly every amenity on hand, VUE’s apartment homes are among the finest available in Minneapolis. VUE’s location is one of its chief attractions. It’s just south of Loring Park with all of its beautiful bridges, water, annual festivals like PRIDE and Music in the Park, and prime picnicking spots. Picturesque midcentury mansions sit throughout VUE’s neighborhood.

The Walker

and Sculpture Garden are nearby, giving it an immense sense of grandeur. All of downtown’s liveliness surrounds VUE, so you’re only a walk away from three major league stadiums, and countless live theaters, restaurants, bars, nightlife, and shopping. VUE is only a stone’s throw away from Uptown with even more diverse restaurants and picturesque lakes to walk around. For those who work downtown, doing away with the daily commute entirely is one of the most persuasive cases for living there. Spending your free time pursuing fun rather than stewing on the highway is a miraculous thing! VUE’s commitment to exceptional amenities is evident as soon as you enter its lobby. The aroma of freshly brewed coffee hits you as you walk through the door. Isles Bakery delivers fresh baked goods every Saturday and Sunday, sparing you from ever having to brave the elements for breakfast on your day off. Their cyber cafe is the perfect environment to knock out some work, free from distraction. Even pups get pampered at VUE courtesy of their pet stations and dog trails just outside the building. The concierges know the guests’ dogs by name and always have biscuits ready! The reasons to ever leave become fewer and fewer as you explore VUE. Their rooftop lounge space, Halo, has free events for residents once a month in addition to its splendid view of Minneapolis’ skyline. Halo

boasts pool tables for friendly games between friends, glowing fireplaces, and a fully equipped kitchen for when you want to throw a party without offering up your own private quarters. The secluded courtyard is the perfect spot for grilling with friends sunbathing, and the heated underground parking means a cold car never awaits when you have to make an excursion away from home. Nothing in life matters without good health, of course, which VUE has covered thanks to its fitness center well equipped with elliptical machines, treadmills, cable machines, and a full set of free weights. And what’s the sense in being Minnesotan if you can’t enjoy a great sauna? VUE’s is always toasty and inviting on a cold winter day.

In essence, this is what Guillermo del Toro: At Home with Monsters is: a tour of the great movie maker’s favorite things, displayed to the public at the Minneapolis Institute of Art and continuing until May 28th. (We do not blame Mr. del Toro for not inviting us all over to his home, as kind as it would have been for him to do so.) Now, I’m just a regular guy. I only know who Richard Avedon is because he took famous photos of The Beatles. My only familiarity

Pacific Rim, Mama, Crimson Peak, and many other movies that del Toro directed or at least had a heavy hand in creating, so to get a glimpse at the inspiration behind his work is a great way to bring a philistine like me to art.

The portal to the exhibit sets the perfect mood. The doorway is framed with evil, blinking reptilian eyes, and therein it sits a giant Angel of Death from Hellboy II: The Golden Army. You’re funneled into the first room of the collection, which revolves around childhood, and are greeted by another statue of the Satyr Pan. Eerie, unsettling paintings of creepy children abound in this room, pieces like Gargantua that depicts a hideous, caterwauling baby who dwarfs his caretakers and The Living Room with its two uncomfortable yet ethereal girls reclining by a sofa. Next you enter the Victoriana room.

There are some of del Toro’s

insect collection, obscenely complicated cyberpunk pieces, depictions of mankind’s intelligence dominating over dark and supernatural forces, and three of the elaborate dresses from the wardrobe of the gothic Crimson Peak. Original concept art from old Disney movies and whimsical drawings by Edward Gorey (The Gashlycrumb Tinies) remind us that not everything fantastic has to be unsettling as well. The next room is centered around magic and the occult, fittingly introduced by a scale wax model of the reclusive and enigmatic H.P. Lovecraft, one of America’s founding fathers of science fiction and the inventor of cosmic horror and the Cthulhu mythos. (Del Toro has spent years trying to adapt Lovecraft’s Antarctic adventure At the Mountains of Madness into a Hollywood production.) Here are more movie props, such as Hellboy’s preposterously beefy hand cannon named “Good Samaritan,” original illustrations from Scary Stories to Tell in the Dark, and beautifully undetailed landscapes by Eyvind Earle. Pop culture and comics come next. Two walls display what I imagine are only a fraction of del Toro’s comic book collection, ageing back from when Frankenstein was cutting edge to current interpretations of Alice's Adventures in Wonderland. (One cover displays Alice sitting at the tea table next to John Wayne Gacy in full clown regalia.) The exhibit moves on to body horror, with medical models of cirrhotic livers and birth abnormalities. This room pays homage to one of del Toro’s first loves, the Frankenstein monster, with a massive, perfect recreation of Karloff’s famous portrayal of the abomination.

Nowadays

fermentation usually means that our apple juice has gone bad and needs to be dumped down the sink, but some fermented foods and drinks can make great, healthy additions to nearly every diet! Kefir (pronounced kuh-feer, but in American-ese it’s key-fur) and kombucha (pronounced com-boo-cha) are two popular fermented beverages on the health scene right now, and together they could pack a powerful punch of health benefits. Teri Erhardt, a local well-being consultant specializing in worksite wellness, offered some insight into the nature of these two hard to spell and even harder to pronounce beverages.

YOUR EXPERT IN SKIN CANCER EVALUATION, DIAGNOSIS AND TREATMENT

What are some of the benefits of

adding kefir and kombucha to your diet? The majority of your immune system is in your gut. For most of us, eating a standard American diet for much of our lives has left us with a less than perfect gut -- one that’s out of whack with too many bad bacteria and not enough good bacteria. We need both kinds in order to be healthy, but when our guts are out of balance we’re more vulnerable to sickness and disease. Good bacteria from foods like kefir and kombucha can help to restore balance and support a healthy immune system, heal our guts, and eliminate digestive problems. If someone wants to start incorporating more fermented beverages into their diet, how would you recommend they begin? Slowly. Start with a small amount - a tablespoon or so of fermented beverage at meals is right for the first week or so. Then pay close attention to what your body is telling you to determine whether your new diet feels right for it. (These body cues are known as “biofeedback.”) The great thing is that each ferment comes with its own variety of beneficial bacteria. We need a wide variety, not just the two or three strains that you find in yogurt.

Back to Table of Centents

shopdinelive.net Should you buy fermented drinks at the store or make your own? You can buy kefir grains at pretty much any health food store in the metro area to get started. The packaging will come with easy-to-follow instructions, and there are a plethora of food blogs out there to help if you get stuck. Kombucha is more of a secret club -- you either have to know someone to give you a “mother” culture, or you have to go online for one. Thankfully, this movement has gained enough momentum that it’s not too hard to find what you’re looking for on the internet! If you aren’t feeling adventurous enough to try brewing your own drinks at home, delicious kefir and kombucha drinks can be found in grocery and health food stores and co-ops throughout the Twin Cities. Be cautious of sugar levels in some drinks, though. A quick glance at the nutrition label will tell you if your “healthy” drink is not actually at all! There is no health food “magic bullet”, so keep it balanced and reasonable and do go slowly when first starting. Make sure you consult a health professional before making any dietary changes if you have a unique health situation such as autoimmune issues or are pregnant or breastfeeding. We live in an amazing time that combines the wisdom of the past with modern technology. Health foods like kefir and kombucha combine these past and current understandings to give us a bright, healthful future!

Celebrate Spring with

FRESH ASPARAGUS by Anita Dualeh

Asparagus is among the earliest Minnesota-grown spring vegetables you’ll find in markets and stores. Nothing says spring as elegantly as asparagus. This vegetable is related to onions and leeks, though you might never guess based on its appearance or flavor. Asparagus is considered a gourmet produce item due to the

the LOCAVORE

cost of growing and harvesting the perennial vegetable. It’s finicky -- asparagus has to be harvested by hand and can only be harvested in its third year after planting. The gardener is eventually rewarded for her efforts, however, because a wellplanned and maintained asparagus bed can produce asparagus for 20 to 30 years.

Growing up on a dairy farm, Anita Dualeh consumed plenty

shopdinelive.net Cooking Options Try one or all of these easy ways to get asparagus on the table within 20 minutes. Steam it: Fill a saucepan with water until it’s just below the bottom of your steamer basket. Bring water to a boil and place rinsed asparagus in the steamer basket. Cover and steam five to 10 minutes until tender and crisp. Time will vary depending on the thickness of your asparagus spears. Serve with a dash of salt and bit of melted butter or a drizzle of olive oil, if desired. Sauté it: Cut washed asparagus into approximately two-inch pieces. Heat skillet over medium high heat. Add a tablespoon of canola oil and swirl it around in the pan. Toss in asparagus pieces and cook, stirring occasionally for a minute or two. Cover and reduce heat to medium low. Cook until asparagus is tender crisp, about five minutes or so depending on thickness of the spears. Roast it: Place washed asparagus spears in a shallow baking pan.

Turn It into a Frittata Approach this recipe with a can-do attitude. It’s relatively simple, quick, and makes for a tasty and satisfying meal. For years I’d put off trying to make a frittata because I was worried about it sticking, but I’ve found

olive oil and butter over medium heat. Add asparagus and saute for 3 minutes, stirring occasionally. Preheat oven to 350 degrees. Beat eggs with cornstarch in a medium bowl. Add minced garlic, cottage cheese, salt, and pepper to the beaten eggs. Mix well and pour over the asparagus in the skillet. Cover and cook over medium heat for 3 to 5 minutes. Cast iron holds heat extremely well, so you can just turn off the burner and let it coast for that length of time. Transfer the frittata to the oven and continue cooking until the eggs are set and a knife inserted in the center comes out clean, 8 to 12 minutes. Turn onto a serving plate to prevent the frittata from cooking further and becoming too dry. Cut into wedges and serve with Sriracha or your favorite salsa.

by David Scheller “In trying to become everything, you risk becoming nothing.” This is Ro Shirole’s and Ken Sherman’s succinct approach to running Seven, their massive downtown restaurant that, in fairness, seemingly accomplishes as much of everything as any place successfully could. Churchill Apartments

by David Scheller

Winston Churchill once said “We shape our buildings; thereafter they shape us.” Churchill would have approved how the apartment building in downtown Minneapolis which shares his name shapes its inhabitants. When you provide a luxurious place to live in, one which accommodates in every way imaginable, you’re bound to have tenants who work, play, and live better lives owing to the loveliness of their surroundings. Nestled on 111 Marquette Avenue South just next to the Mississippi rises The Churchill, thirty-three stories of class “where the river meets the

Downtown Sports by David Scheller I never had the makings of a varsity athlete. When I was a kid, my little league coach invented a special position for me: “outer left field.” When I play fetch with my dog, he never winds up more than five feet away from me. I once got shin splints from watching the Olympics. What I’m saying is that I’m bad at sports. Fortunately, just like I can enjoy the plumbing in my house that I’m incapable of installing myself, so too can I enjoy sports by having people with more athletic potential than a wet kitten play them for me while I watch and eat hot dogs. I’m talking about major league stadiums, and downtown Minneapolis is a hotbed of them. When you live downtown, you can enjoy these stadiums within walking distance every night. Target Field Due to my aforementioned amateur career, the softest part of my heart will always be reserved for baseball. Walking past Target Field on my way to work always cheers me up even in the dead of winter. I meet some people who say they don’t like baseball, despite the fact that they have a pulse and presumably lived in America for more than ten minutes. They always change their tunes when I take them to Target Field. Seeing the Twins bringing the thunder, sitting way up there in the nosebleeds on a sapphire sky day, those big, cheery neon guys shaking hands and glowing red, white, and blue at night -- you can’t top it. With tickets as affordable as they are, you can’t excuse yourself from going at least once or twice a summer.

U.S. Bank Stadium I love our newest stadium. Sometimes I do a double take when I see it from the highway because I think an alien mothership landed in East Town, but then I remember I live in the shining light of the Midwest where we just built a majestic year-round gridiron temple. With a 66,655 capacity, U.S. Bank Stadium can fit ten times more people than the biggest ocean liner ever built. (Only five times more when Packers fans visit, though.) What a great feeling Super Bowl LII is going to be when all of America sets its sights on Minneapolis and sees what we’ve made here. With the 2018 Vikings season before us, the chance that our first Super Bowl victory could also be a home game has Minnesota fans on the edges of our seats with hope and anticipation.

Target Center I’m least familiar with basketball, but I can appreciate the excitement and talent that both the Timberwolves and Lynx bring to our city. The Wolves have one of the youngest and most talented rosters in basketball, and the three-time WNBA champion Lynx aren’t done raising banners in the Target Center rafters. I’m glad I can also enjoy Target Center for all the non-hoops related spectacles that go on there. Legendary performers like Elton John, Garth Brooks, and Paul McCartney have all graced our city at the giant multi-purpose arena, and many more are lined up to come. I keep an eye on whichever acts are scheduled to come to downtown, because I’m a pushover for the energy that pulsates from the place on big concert nights. Even if you’re not into whoever is performing there, just go experience downtown after a concert lets out of Target Center. An infectious energy fills every bar and restaurant along with all the amped up music fans fresh from their favorite band’s set!

A provocative aroma of freshly brewed coffee and chain lube greets customers at Angry Catfish Bicycle Shop and Coffee Bar. Mix in the presence of bikes like Northern, Surly, and Niner with a smorgasbord of top-shelf gear and you’ve literally walked into owner Josh Klauck’s childhood dream. His store is one of the city’s most popular bike and bean shops, with a palpable stayawhile vibe. Just try walking past the counter brimming with craft coffees and

shopdinelive.net Make no mistake: the Catfish crew knows their stuff, most notably the presence of Northern, the in-house bike brand named for our heritage here at this end of the compass. Somewhere out of sight, a master frame builder creates sublime custom rides for customers looking for silky smooth miles. Fat bikes, cruisers, allmountain, and single speeds also grace the Catfish floor. The Fish people are also opening a sweet new coffee shop near Mill Ruins Park this spring. Northern Coffeeworks should be brewing it up by the end of May. Check it out then at 1027 Washington Avenue S, Minneapolis.

by Samantha Koshiol

Mother’s Day brings warm, fuzzy feelings of thankfulness and admiration for all mothers around the world. The Mother’s Day tradition my mother and I share brings extra fuzzy feelings courtesy of the Bloody Marys we drink together at our annual brunch! Every May I take her to one of our favorite spots like Gulden’s Restaurant & Bar in Maplewood or Governors Fine Food & Drink on the east side of St Paul. These restaurants host special brunch buffets that include a necessary feature: build-your-own Bloody Mary bars featuring the whole gamut of garnishes like pickles, Tabasco sauce, olives, the all-important celery sticks, and other less
