“Nothing is more important to us than being North Dakotan,” said Jeremy Mahany of The Starving Rooster. “We’re all North Dakota boys and girls here, and our families go way back in our state’s farming tradition. From the moment we started planning this restaurant, we knew every aspect of it had to reflect our pride.” Founding The Starving Rooster in the old Altman and Taylor Tractor Company building in downtown Minot was the right start for such an homage to North Dakota. The restaurant’s name is a nod to the old company’s symbol -- they had boasted that their threshing machine was so efficient, it wouldn’t leave even a kernel or two for the poor old rooster. The Starving Rooster has since opened a second location in downtown Bismarck, just north of the Event Center. The Starving Rooster’s decor is fitting for its historic inspiration. Nearly every stick of furniture there is fashioned from rich, glossy barnwood. Corn heads, tillage disks, and other combine apparatuses are happily retired from the farm to this eatery. Old worn steel panels line the walls, still feeling as though they radiate some of the prairie summer’s sun. It’s a cozy, rustic atmosphere. Unlike their emblem, The Starving Rooster’s guests can expect nothing but the best fare North Dakota has to offer. “We only use North Dakotan milk, grain, meat, and produce whenever possible,” said Jeremy. “That’s solely out of our commitment to the community. Of course, we make exceptions when we have to -- North Dakota isn’t known for its olives and shrimp, and will probably stay that way unless we invade California and Louisiana. But when we learn we can get a new ingredient locally, we jump at the opportunity.” The Starving Rooster’s menu would make its namesake lick its beak. They have prime rib Philly paninis, Buffalo chicken sandwiches, pulled pork quesadillas, rotisserie chicken wings, shrimp and crab stuffed mushrooms, chili, salads, bacon macaroni and cheese, and much more. My favorite, however, is their brick oven pizza. “We run our brick oven at 700 degrees, the perfect temperature to make our dough chewy or crispy in the right places,” Jeremy explained. “Better yet, in that heat it only takes two minutes for our pizza to bake. That makes our cooks happy, and our guests even happier -- some can’t believe how quickly we can bake them a whole pizza.” The Starving Rooster’s beer list is another example of their commitment to North Dakota. In addition to the domestics, they serve beers by local breweries including Buffalo Commons Brewing, Laughing Sun Brewing, and Fargo Brewing. These premium beers are poured for only $4 a pint all day on Tuesday and Friday. Tuesday isn’t the only special day to go to The Starving Rooster -- they always have something good going on, like $5 Moscow mule Monday, half price wine (bottle and glass!) Wednesday, and $1 off 22 oz taps Thursday. The crème de la crème, however, happens on the weekend. From 10am to 2pm on Saturday and 11am to 2pm on Sunday you can build your own Bloody Mary or Caesar, starting with The Starving Rooster’s own five pepper, rosemary/ginger, or horseradish infused vodka (or plain if you prefer it), and then on to a selection of garnishes like cheddar cheese cubes, blue cheese stuffed olives, deviled eggs, and smoked ribs. If you’d rather it, bottomless mimosas are available then as well. Either is the perfect accompaniment to the weekend brunch menu including pancakes, cast iron egg scrambles, and eggs Benedict that will curl your toes. From 3pm to 6pm and 9pm until closing The Starving Rooster offers great happy hour specials like $2 off appetizers, $3 domestic pints, $4 rail drinks, and more. If you’re clever and competitive, you’ll love their Wednesday trivia nights, which cover topics like The Office, Game of Thrones, the 90s, and other pop culture lore. The winners get a $25 gift card, while the runners-up gets a couple free beers to numb the sting of defeat. Barbecue is Adam and Kendra Taylor’s passion. The North Dakota natives founded Taylor Made BBQ last year as a way to express their love for America’s finest cuisine. “We love Texas-style barbecue, so that’s what we make,” said Adam. “I love its heavy bark and simple flavoring. When you work with good meat, you want it to be the star of the show. We’re so dedicated to authenticity that we ship it all the way in from Texas -- good smoking woods just don’t grow around here. Because fishing is an attempt to outsmart the fish on its sole area of expertise, it can be very difficult. You can buy a reel that will overpower the fish. You can pick a lure that will trick the fish. But the fish, by virtue of being a fish, knows a very important thing about itself, by David Scheller
and that’s where it is. If you don’t know where the fish is, it will outsmart you every time. Kent Yancey, the expert angler of Big Muddy Guide Service, knows where the fish is. He began fishing with his father since before he could remember, and spent his youth exploring the Missouri River in old boats with his friends. “I’ll always remember those good old days,” Kent reminisced. “We always kept moving, kept checking, kept trying new things. Trying new things is the key to fishing. That’s how we learned to read the river.” I explained to Kent that when I go fishing, I can almost hear the fish laughing at me. He sympathized, and offered me some much needed advice. “River fishing is a lot about seams, where a slower current meets a faster one,” Kent explained. “These areas are where fish most like to feed. Considering factors like depth and cover is important, but you should prioritize fishing in seams if you want to maximize your success.” “Of course, river fishing is a lot different from lake fishing,” he continued. “Whereas the river’s surface offers visible cues for where fish are likely feeding, lakes only give you that information in their shallower areas. That’s why bottom bouncers are great for lake fishing, because they let you control where you place your line in depths where you can’t see it.” “The style of bottom bouncer you use is not as important as its weight. I prefer a much heavier bottom bouncer than most people use, usually two or three ounces. That helps

With that knowledge, you can put it right where the fish are biting.” “Try to balance your bottom bouncer’s weight with the lake’s depth and your trolling speed so your line maintains a 45 degree angle to the water. That way when you catch a fish, you will have a pretty accurate idea of how deep it was when it struck. This lets you fine-tune your presentation to get the best results, an especially big advantage to have on Lake Sakakawea with its fast-dropping bottom profile.” “You can’t be afraid to troll at speeds faster than you’re used to,” Kent advised. “Particularly for walleye. They’re predators, so they’re inclined to use sudden bursts of speed to catch prey. I see a lot of people trolling really slow, and that can work well at times. Going between 0.8 to 1.2 mph works better, though, especially around late June through August when fish are most active. I like to switch it up when I’m trolling, even going as fast as 1.5 mph with spinners. The fish will tell you what they want when they bite.” “There are no set in stone rules, of course. Sometimes, just a plain hook will work like a charm. Then a few hours later, they’ll only light up when you use something flashy. Just keep experimenting, and you’ll inevitably figure out what works.” I asked Kent to share his favorite fishing story. “My best fishing story? Man, I don’t know. That’s hard to say. I’ve caught thousands of fish by now, but nothing sticks out as much as when someone else catches one. Just the other day, I had a girl and her family out on the river. She kept saying that she never catches anything, so I told her ‘Well, that seals it. You’ll probably catch more fish than the rest of us.’ Sure enough, she outfished everyone else in the boat three to one that day. The look on her face when she started landing fish...the smiles and laughter I get in my boat are my favorite thing about fishing!”

ABSOLUTE GUN DOGS by David Scheller
Dogs first started palling around with people tens of thousands of years ago. They chose us not because we had bouncy rubber balls to throw to them, or cozy beds for them to sleep on, or Milk Bone biscuits to give them in exchange for doing tricks. They teamed up with us because we shared a mutual goal -- taking wild game. All dogs were once hunting dogs. All of Dan Murray’s dogs have been hunting dogs, too. He spent his boyhood flushing grouse and pheasant on North Dakota’s farms and plains, his jubilant English Springer Spaniels always in tow. His grandfather appreciated Dan’s enthusiasm, so he introduced him to a friend of his, a part-time gun dog trainer. Dan set about cleaning the man’s kennels, tending to his dogs, and learning how to raise them into bird flushing fanatics. Dan would only do this as a side job until he graduated high school. After that, he deviated far from the world of dogs into that of vacuum cleaner sales. (Dogs have a chilly relationship with vacuum cleaners at best.) Dan did well at this, and had built up a successful dealership until something pivotal happened: His wife bought him a dog. That dog turned into two, and then three, until in 2007 Dan reassessed his life and realized that dogs were his calling, not vacuum cleaners. By 2009 Dan had built his own kennel and put Absolute Gun Dogs into fullswing. The operation is devoted to breeding and training English Springer Spaniels, English Cocker Spaniels, and English Labs into the finest hunting companions in the world. Dan now keeps three to four champion dams and sires at any given time, along with a few of their pups who are learning the ropes. “When exactly to begin training depends on the breed, but a puppy always has to have started by three to six months old,” Dan explained. “That’s when you lay the foundation for obedience -- sit, stay, lie down -- just the basics. It’s during this phase when you find out if the puppy will make a good gun dog. Do they love figuring you out? If so, they’ve got the stuff.”

“Once they’ve gotten the basics down and know how to behave, then it’s time to take them out to the field. First I release some quail and pigeons, and just let them react however they think to. This lets you see a dog’s temperament, personality, and instincts, so you can assess their natural hunting abilities. A dog with a soft mouth, which means they don’t bite down hard on the items they retrieve, will do best. I’ve found that the dogs with the hardest mouths have the hardest heads, too.” “When the dogs have gotten used to the field and the game, it’s time to get them used to hunting by firing some shells. We throw something up in the air for them to focus on, and fire from very far away. Once they’re able to stay focused on their target without getting distracted by the report, we can move the sound closer and closer until it doesn’t faze them at all.” “Of course,” continued Dan, “No matter how much talent a gun dog shows, at the end of the day they’ve got to be a family dog, too. This is your best friend we’re talking about here. re you a connoisseur of country music? Would you love to cheer on piglets as
they race around a track? Do you enjoy all things agriculture, whipping around on rides, or devouring poutine? If so, the North Dakota State Fair is just for you. Beginning on July 20th and going on for nine days straight, the endless string of carnival rides and fried foods will be all yours to enjoy. The North Dakota State Fair is
renowned
for
its
great
concerts, and is a country music fan’s dream destination. With performers including Cole Swindel, Florida Georgia Line, and Kip Moore lined up, this year’s grandstand is bound to be a total sensation. Rock lovers also rejoice: Cheap Trick and Nickelback are both doing their own sets as well.

shopdinelive.net And the food! If you’re planning to pencil a cheat day into your summer diet, schedule it during the North Dakota State Fair. Garlic cheese curds and mini cinnamon rolls are some fan favorites -- but why not go all in and have fair food for every meal? For breakfast, how about some hash browns or a breakfast sandwich from A & M Concessions Burgers? Maybe for lunch you could stop by Little Blue Elephant for crab puffs and pad thai. For dinner, consider walleye on a stick accompanied by the fair’s famous poutine. This dish is a special salute to the Canadians who make the 50 mile long trip to enjoy everything North Dakota has to offer. Now the moment you’ve been waiting for -- yes, dessert! Dippin’ Dots, homemade pies, and mini donuts…lots of mini donuts! Vendors with new dishes can enter the Food Frenzy for a chance to win the People’s Choice Award, which is decided by patrons of the fair every year. Last year’s winner was Minnesota Wing King’s roughneck nachos, made with grilled buffalo chicken, bacon bits, and cheese sauce. One of the fair’s greatest attractions is the Enduro Race. For two of the fair’s nine days you can watch cars race around a giant dirt track, each vying for the fastest finish. If you’re looking for a cuter competition, Daryl’s Racing Pigs will compete every day of the fair at 12:30pm, 3:00pm, and 5:30pm. Agriculture is a great part of North Dakota’s culture, so it’s here at the fair. Pick a breed of livestock, and you’ll likely find it in a contest. The fair is a great place for people of all ages to showcase their animals and participate in events through FFA and 4-H. Last year, 47,000 exhibitors showed everything from livestock to needlework to baking and more. And finally, there’s the rides. With a Mega Ride Pass, you can enjoy the carnival attractions all day, from the Blue Bounce to the Freak Out. Ride them two, three, or ten times if you’d like.

Buckstop Junction

I’ve found that one of the many reasons Europeans like to turn their noses up at America is over the relative novelty of our country. Let a French express their opinion of our oldest buildings, and they’ll reflexively point out that theirs are several stories tall, made of stone, and constructed by the Romans. They’ll then move on to blaspheme our cheese, wine, and whatever else is within eyeshot and not obscured by the curling smoke of their Gauloises. Of course, we ought not to concern ourselves with what the French think. Our buildings are marvels, from the most unassuming shack to the Empire State Building itself, because each tells its own part of our great American story. The people behind Buckstop Junction believe just that, so they save the Bismarck area’s most important historical buildings in one spot, forever. They also believe that you had better come and see. Set up just like any little town that the Man with No Name might ride through, Buckstop Junction is a 20 acre selection of classic buildings from the mid 19th to early 20th centuries. Each was carefully selected and moved there for its importance to the area’s history. For example, the Molbert Claim Shack, which is barely larger than a garden shed, was built in 1880 by a Swedish immigrant whose sight was set on creating his own little New World Eden. The Sterling Depot, built in 1885 to service the Northern Pacific Railroad, is an ode to the days before roads threaded our country together like marbling in a ham. The Coal Mine Camp, complete with a realistic 25’ opening into the bowels of the earth, came from Wilton and once served as the area’s singular draw for new inhabitants. The Capital Aviation Hangar, built in the early 30s, once held the first north-south passenger airline in the country. Go and look at that humble building, and then imagine that fewer than 40 years after erecting it we would fly to the moon. “We select each of our buildings to represent a people, an era, a point in time,” said Marlette Pittman of the Missouri Valley Historical Society. “Each home is decorated as it would be if its former residents had just left them, even with their original furniture when possible. By being as faithful as we can to our buildings, we pull our history out of the past and present it to our guests, living and breathing.” “Getting all of our buildings here is quite a feat,” Marlette continued. “We owe that accomplishment to two of our local building movers, who jack up the buildings, load them onto flatbeds, and slowly drive them here through closed roads and under lifted power lines. The hangar was too big even for a road -- for that they had to drive cross country just to get it here!” Buckstop Junction offers more than a walk through time. If you are getting married or celebrating another family affair, consider hosting it at Bethel Lutheran Church or the Lewis Hotel. Both were built in the 1910s and are totally frozen in time, so your special occasion will be like it was pulled from the second act of a Thornton Wilder play. Also, Buckstop Junction hosts its Corn Feed & Flea Market Celebration annually on the third Saturday in August. This traditional festival offers classic fair foods, a parade of vintage vehicles, children’s entertainment, blacksmithing demonstrations, and far more. It’s one of few events at which you wouldn’t look out of place wearing a straw pork pie hat. Go to Buckstop Junction just for their charming vintage shop, located in the visitor center, if you like. They have classic jewelry, books, glassware, dollhouses, and more, as well as toys and games for kids which foster imagination rather than simulate shooting things. Ask them about volunteer opportunities. Many great companies began in a garage: Disney, Apple, Mattel, and even Google were conceived in the same room that you would keep mouse traps and paint stripper in. (Those mouse traps may have even played some part in Disney’s formation.) In the future, however, all of those companies will be seen as massive failures, because they made pointless things instead of beer. Bismarck Brewing, which was founded by stepbrothers Peter Bopp and Jordan Everaert, will be remembered as one of the few enterprises born in a garage that got things right.
Peter and Jordan first started brewing as a way of unwinding after their shifts as restaurant managers. (That job would make you want to ensure you had a never-ending supply of beer.) “Home brewing started out as just a weekend hobby, but the depth of it quickly drew us in,” said Peter. “Jordan and I soon started asking ourselves why each batch we’d made tasted the way it did, and we became absorbed with different tests, playing around with mash timing, and experimenting with certain temperatures and water qualities. Eventually the garage became too small for our science.” Peter’s and Jordan’s friends and family convinced them that it just wouldn’t do to keep their delicious concoctions a secret, and that they ought to go into business together to delight and inebriate first the Bismarck area, and then the world. The two listened and became certified brew masters, bid tearful goodbyes to their restaurant jobs, traded in their ten gallon home brewing system for a 15 barrel Newlands brewing system, and founded Bismarck Brewing. Bismarck Brewing puts the Midwest first. Their base malts come from nearby Two Track Malting, their barley from Goodrich, ND, and many of their specialty ingredients from Shakopee, MN. Even their grain silo was built in Richardton, ND by a company named, fittingly, Amber Waves. As the result, Bismarck Brewing’s beers reflect the very best of our terroir. (Their hops come from Yakima, WA, because they grow best there -at least at the moment. Peter and Jordan are closely keeping track of enterprising horticulturalists who might successfully bring quality hop production home.)

They roasted meat over it, tapping into its nutritious potential. They smelted ore with it, unlocking the secrets of bronze, iron, and steel. They would go on to create Apollo 11 and Little Boy, miracles and horrors, mushing ever onward into the future, courtesy of their faculty of insight. It is thanks to them that we will one day take to the stars. That first type of people are nerds. The second type of people saw fire for the first time and thought “Wouldn’t that look neat if I spun it around over my head?” This type of people are cool guys, such as Ase Anthony, the founder of Insphyre Performance. Ase’s moment of realization came when he saw fire poi for the first time. (Fire poi is essentially two giant, burning pom poms suspended by chains and rhythmically swung around the body so their trails make hypnotic patterns.)
Ase knew that he must have it, so he
delved into the world of fire dancing. He founded a blog, fell into the company of like-minded people, befriended them, started performing professionally with them, and now heads Insphyre Performance, a hundreds strong community of professional entertainers.
