According to the American Cancer Society, there were an estimated 310,260 new cases of breast cancer diagnosed among men and women in 2017. Pink It Forward - a local non-profit whose mission is to provide hope and empowerment by enriching the lives of all those affected by breast cancer – is continuing to do what they can to make a difference in the lives of each and every one of those individuals.

Imi Lichtenfeld was born in Hungary in 1910. His father was a police officer and a former circus acrobat, so he brought Imi up with the self-defense and gymnastic skills that he had honed over the course of his two careers. Imi proved a natural athlete, and would go on to win several boxing and wrestling championships during his young manhood.

Being tough was a good quality to have for a Jew in 1930’s Eastern Europe. In response to the threat posed by violent gangs of National Socialists, Imi led a team of fellow pugilistic Hebrews to defend their neighborhoods. Imi quickly learned that boxing and wrestling were not the soundest fighting styles for use in vicious street fighting, however, so he reevaluated the moves needed to deal with armed assailants out only for blood. Imi invented Krav Maga (Hebrew for “Contact Combat”), a martial art combining natural self-defense movements followed by decisive counterattacks. Imi’s school of fighting proved so effective that the Israel Defense Forces adopted it, and several of its core principles are employed by the United States Marine Corps today. It was in the Marine Corps that Morgan Moberley, the owner and head trainer of North Dakota Krav Maga in Mandan, was first introduced to Krav Maga. “Krava Maga’s greatest strength is that it changes to adapt to modern combat,” explained Morgan. “Other martial arts like tae kwon do, while completely respectable, are rigid and require assailants to come at you in a certain way to remain effective. If you attempt a roundhouse kick tp the head on an MMA fighter, you’ll be on the ground in a second. Since Krav Maga isn’t bogged down by tradition and set moves, it’s always being altered to deal with new types of threats.”

by David Scheller When Stephanie Miller was a little girl, her grandmother would delight her with freshly baked butterhorns. The fluffy pastries were the old Midwestern matriarch’s specialty. Stephanie learned how to make butterhorns just like her grandmother, measuring amounts of butter, kneading dough, and carefully rolling them into their signature crescent shape with her tiny hands until she learned the trick exactly. Butterhorns symbolized family love to Stephanie, and their creation kept her in the kitchen where she continued learning new ways to delight her family herself. Many Midwestern grandmas such as Stephanie’s have seen that their families are well-cared for in a similar fashion, with small protégés under their arms to carry the fire on for them for long to come. Stephanie went on to culinary school where she studied French techniques (she will tell you that using lots of butter is the best technique that they have), work in an Italian restaurant, and serendipitously fall in love with Shane Cornelius, a man versed in running every aspect of the front side of a restaurant. Now married, Stephanie’s and Shane’s potent combination of talent are behind the Butterhorn, downtown Bismarck’s best bastion for gourmet cuisine. “We want our restaurant to truly reflect North Dakota, as well as to serve only the best food,” said Shane. “Fortunately, doing both is as simple as sourcing ingredients as locally as we can. Nearly all of our vegetables come from local farms, so they reflect our terroir and are fresh as can be. You can really taste it when a vegetable has been pulled out of the ground only an hour ago.” Butterhorn combines Stephanie’s culinarian background with their respect for what makes local food great. Their cavatelli with pork sausage, parmesan dust, and fennel pollen was perfected during Stephanie’s Italian restaurant days, and brings neighboring Iowa’s best-known specialty to their tables. Their walleye cakes pay tribute to the area’s most beloved game fish, and honors it by letting its delicious natural flavor shine through with the accompaniment of some remoulade and grilled lemon. In their mission to keep great cuisine accessible, Butterhorn also offers a juicy cheeseburger on a homemade brioche bun with freshly julienned french fries. “We cater to both the formal business luncheon crowd as well as we do the flip flops and pint of beer weekenders,” said Stephanie. “We offer something just right for every occasion and taste.”

Of course, Butterhorn couldn’t very well do without the flaky bread things they’re named for. Although she has tweaked her recipe ever so slightly since childhood, Stephanie makes a fresh batch of butterhorns daily for the restaurant’s bread service. As with everything else she serves, only the butterhorns of the day make it to guests’ tables. The rest are transformed into bread puddings that would curl your toes, or breadcrumbs for the fried delectables. Great food demands great booze. Butterhorn’s eight beers on tap change regularly, and offer North Dakota’s, Minnesota’s, and Shane’s native Montana’s very best brews. Their bar manager is a connoisseur and a mixologist, and uses only freshly squeezed juices in combination with the restaurant’s own triple sec, sour mix, limoncello, and more to create cocktails you’d like to slip into like a warm bath. Their enormous wine cellar stores bottles from France, Australia, Argentina, Italy, and other far away places, providing the next best way to travel the world short of buying a first class plane ticket. Beneath their main dining room, Butterhorn keeps a private banquet hall for guests celebrating special occasions. It’s done up in high 1920s speakeasy style with exposed rafters, stone work, vintage wallpaper, velvet drapes, and an enormous sliding barn door for privacy. This rustic space shares a glass wall with Butterhorn’s wine cellar, so picking the right bottle of red to toast the evening is as satisfying as choosing a puppy in the window. The sense you get while dining at Butterhorn is that it’s a family restaurant -- in more ways than one. The synergy between Stephanie’s kitchen and Shane’s dining room shines through in everything that their restaurant does, from their warm, earnest ambiance to their inspired dishes. The Haunted Fort by David Scheller I’m something of a connoisseur when it comes to haunted attractions. I’ve been to countless schools, ships, ski areas, forests, and farms that have been temporarily turned terrifying in honor of the Halloween season. They provide all the fun of being in a horror movie without actually having to worry about an evil clown, cannibalistic hillbilly, or nigh-invulnerable hockey-masked lunatic doing something dreadful to you. While their pageantry is always enjoyable, most haunted attractions typically lack an actual ghost story behind them to substantiate their spookiness. Not so at the Haunted Fort, which this October will celebrate its 17th year of scaring the bejeezus out of their patrons. It is held at Fort Abraham Lincoln, the site where Lt. Col. George Armstrong Custer lived until his undoing at the Battle of the Little Bighorn. As so many men who once lived there perished alongside Custer, the entire fort is now believed to be haunted. Faint footsteps, sourceless murmurs, and fleeting shadows are normal occurrences at the fort, and the spirit of Custer’s wife reportedly waits there for his return to this day.

They found oodles of the kinds of things which paranormal investigators like to find, little bloops and bleeps on machines which, depending on your point of view, almost certainly do or do not actually detect ghosts. This October the Haunted Fort will build upon its already chilling reputation with the aid of 50 to 60 costumed actors. This is not an aimless effort on their part -- they have worked together to choreograph just how they can best unsettle their guests, and laid out the historic landmark into four distinctly themed areas. The night begins with the Custer House itself, which is fashioned after a haunted mansion. A charismatic though funereal host beckons people in, whom are then confronted by ghastly Victorian era specters. Things progress afterward to the old grainery, which has been turned into an evil carnival setting complete with maladjusted clowns, black lights, eerie audio effects, and blind corners which breed sweaty anticipation. (The abundance of clowns in haunted houses reminds me of the words of Dan Avidan: “I’m convinced that 98% of the population hates clowns, and the remaining 2% are clowns.”) The barracks, done up in a nightmarish asylum motif, follow. They’re rife with deranged doctors and their lobotomy-crazed patients, all zombified and

It’s so terrifying, however, that you’ll be given the option of bailing out before you have to experience it. Last year it was the “Dark Hood,” an area where participants donned hoods to blind them while they ambled precariously across a walkway designed in every way to disorient and unnerve them. Air cannons, upside down mannequins, and evil noises are bad enough when you can anticipate them -- in the dark, they’re far worse. None of this is very good for kids under 13 years old. The Haunted

Darin Davenport started playing paintball when he was 12 years old. “Playing” might be a bit of a stretch, though -- Darin’s family only had one paintball gun at the time, so his older brother would give him a mask and a head start, and then proceed to hunt him in the woods for a preadolescent version of The Most Dangerous Game.

Aren’t big brothers the best? This exercise made Darin appreciate the running and cover taking aspects of paintball that are so crucial to the game, and when he finally wrested the gun from his brother’s trigger-happy hands, he learned to love the other parts just as much. That’s why Darin now runs Legacy Paintball, a sprawling ten acre course 30 minutes north of Bismarck. “I planned Legacy to offer three radically different types of terrain, so our players can engage in a variety of tactics,” explained Darin. “Our course is shaped like a triangle. One corner has a cityscape, complete with scalable buildings and cars to duck behind. Another has a trench system with old crop dusters painted to look like downed German planes, giving it a WWI feel. The third is a jungle guerilla setting with trees and huts.” This dynamic layout is different than what most other paintball courses offer. Forcing players to adapt to multiple styles of play throughout one session not only makes the experience more realistic, but handicaps those who excel at one style of play but don’t do as well with others. A coverbased specialist may accordingly find himself a big target in open area situations. “That’s not to say some players can’t dominate in every setting,” said Darin. “The other day we had a great-grandpa come along with his group of four generations. Even though he couldn’t run, he was like the Terminator, calmly annihilating everyone else in the arena. He had done something like that before.”

Whereas paintballs have a relatively shorter range and are thus more appropriate for arcade-style shooting, airsoft pellets travel twice as far, permitting more stealthy, militaristic tactics. “We have a lot of police and veterans come for airsoft, because its style is much more in line with their training,” said Darin. “Watching the experts in action is amazing.” “I’m the fourth generation in my family to live on this land,” said Darin. “I’ve been blessed to enjoy it all my life. Mark Hoechst, The Hand Engraver of Bismarck, is no exception to this rule. “I started out working as a mechanic at a car dealership,” Mark recounted. “The funny thing is that every car has an army of engineers behind it, but they all break nonetheless. It was my job to be smarter than all of those engineers and fix that car when it came into my stall, which was no small feat.” Mark already knew a little bit about jewelry back then, and was attracted to the clean, meticulous, deliberate work it involved. He was especially drawn to hand engraving and began studying the art, pouring over his worn copy of The Art of Engraving and practicing as if it was a second job. Just like engraving takes thousands of perfectly placed strokes, so too was Mark’s skill not honed overnight. After moving to Bismarck

When the factory closed its doors, Mark finally decided to turn his second job into his full-time one.
