But for Brian Trinh, there’s only one way to describe Uptown’s iconic shopping center: the best job in the world. As marketing manager of this iconic Uptown shopping destination, Trinh’s job is as varied as it is interesting. With dozens of highly

Tell us a little about you. I’m the marketing manager for Calhoun Square, which is owned and operated by The Ackerberg Group, which basically means I’m responsible for showcasing all the great things happening at Calhoun Square. There’s a lot going on, so it’s a full time job! But it’s really rewarding to work with such an exciting organization.

How did you come to work at Calhoun Square? I graduated from the University of Iowa, so, go Hawks! After a few years working in Marketing, Ackerberg Group offered me this position after purchasing Calhoun Square in 2014. I couldn't resist. Calhoun Square is the epicenter of everything sophisticated and fun in Uptown, and there’s so much history and energy in this neighborhood. And, of course, it’s an iconic place with history and tradition behind it. The whole neighborhood is full of art, and I don’t know of a single other place in the state with as much distinction and character. I couldn’t resist taking the job.

We’re very excited to have Roat Osha opening at Calhoun Square. It’s a Minneapolis classic, and the food is amazing. They’re adding some new options to their menu, including more local craft beers. Restaurants and eating well are so important to the Calhoun Square experience in general, so they’re an awesome addition. We've even launched $2 parking Monday through Thursday from 11 am to 2 pm just so people can come and have a good meal at lunch time. We’re excited to have them join the family! According to the DNR’s Fall Color Finder, the northernmost parts of Minnesota will peak mid - September to early October, the middle region (that’s us!) peaking late September to early October, and the southern parts from late September through late October (If you’re a visual person like myself, the DNR website has a simple illustration). Since we are now into October, heading south might be your best bet for extending your time among the foliage (But don’t let that stop you from heading up to places like Crow Wing State Park, Itasca State Park, or Duluth for a fall getaway!).

It’s not just the Halloween Capital of the World, it’s also the place for some great autumn strolling and shopping. The streets are lined with beautiful trees, populated with old houses and architecture, and a handful of cute little diners and bars (I highly recommend the Reuben sandwich and sweet potato fries at MaGillyCuddy's). It’s easy to forget how blessed we are to live in a state with a great variety of weather. However we choose to enjoy this short and unpredictable season, let’s try to simply do just that.

Potatoes

To the cook, part of the appeal of potatoes is their versatility. You can roast, fry, boil, grill or stew them. They might show up for breakfast as hash browns or home fries, for lunch in a savory soup and for dinner as a creamy side dish. For the consumer, part of the appeal of potatoes is their comfort food status. Potatoes are often associated with hearty home cooking, which we tend to turn to in the fall.

We planted about 25 plants, though, so we have gotten several meals out of our gardening efforts. For our first meal of fresh potatoes, I washed, boiled and then mashed some with a bit of butter, a splash of milk and chopped chives. Those potatoes went from garden to table within an hour, and tasted that fresh. Next I tried Smitten Kitchen’s potato pizza recipe for the first time and found the thin crust laden with thinly sliced potatoes to be surprisingly tasty, thanks in part to the rosemary sprinkled on top. It’s prime time for potatoes at farmer’s markets, and it is also easy to find locally grown potatoes at grocery stores this time of year because Minnesota ranks sixth in the nation for potato production, according to the University of Minnesota Extension office. In your supermarket, look for Red River Valley potatoes, known for their deep red color and robust flavor, which comes from growing in the heavy black soil near Minnesota’s western border. While you’re at it, it’s okay to stock up. Properly stored - in a cool dry place away from light - potatoes will keep for at least six months. You don’t want to put them in the fridge because when they are that cool, the starch in the potatoes begins converting to sugar, which impacts the flavor.

Baked Potato Soup • 4 - 5 medium russet potatoes

• 3 cups vegetable stock

• 10 cloves garlic, peeled

• 1 cup 2% milk

• 1 teaspoon olive oil

• 1 teaspoon salt

• 2 tablespoons butter

• Black pepper to taste

• 1 stalk celery, chopped

• 4 tablespoons minced garlic chives

• ½ medium onion, chopped

Scrub potatoes and bake in 400 degree oven for about 1 hour or until completely cooked. Place garlic in small pan or casserole dish and drizzle with olive oil. Stir to ensure each clove is coated in oil. Place lid on casserole dish and roast garlic while the potatoes are baking, for approximately 25

minutes or until soft, fragrant and lightly golden on the bottom. Melt butter in soup pot and sauté onion and celery until tender. Add stock and bring to a boil. Reduce heat and simmer about ten minutes, until onion and celery are completely cooked. Peel and cube baked potatoes. Add 4½ cups of baked potato cubes to the soup along with the roasted garlic. Simmer five to ten minutes more. Remove from heat and puree soup with an immersion blender until smooth. Season with salt. If the soup seems too thick, add additional stock or milk to reach desired consistency, reheating if needed. Ladle into bowls and garnish with pepper and garlic chives.

Simply brush both the inside and outside of the pumpkin with a bit of vegetable oil, bake for 350 degrees for approximately 30-35 minutes, and bam. You will be the talk of the town. Finally, is homemade pumpkin butter, which just might be the greatest use of a pumpkin.

Nothing elevates flavors like homemade butter. The following recipe can be used to make your own little slice, or tab in this case, of heaven.

Pumpkin Butter Ingredients:

3-4 tbsp. pure maple syrup, to taste

4 – 4.5 cups fresh pumpkin puree

1 tbsp. ground cinnamon

(made from ~3.8 pounds sugar

1/2 tsp ground nutmeg

1 tsp fresh lemon juice

pumpkin) •

1/4 cup sweet apple cider or apple juice, more if needed

1 cup Succinate (or brown sugar, unpacked)

(enhances flavor and helps preserve) •

1 tsp pure vanilla extract

Pinch of fine grain sea salt

Steps: 1. Roast your sugar pumpkins and then cool for 10 minutes on pan before handling. 2. Add pumpkin flesh (without the skin) in a blender. Add juice and blend until smooth, stopping to push down the pumpkin when necessary. It may take a bit to get it going. 3. Add the Succinate (or brown sugar), maple syrup, cinnamon, and nutmeg. Process again until super smooth with no clumps remaining. 4. Spoon mixture into a medium-sized pot. Cover with lid and prop lid ajar with a wooden spoon. Over medium-high heat, bring mixture to a low boil. Reduce heat to low-medium and cook for 10 minutes, or until it’s as thick as you want it. Keep the lid ajar throughout the cooking process – you will find it splatters everywhere so be careful. Remove from heat and stir in vanilla. 5. Cool completely, stir in lemon juice and a pinch of salt, and then store in a sealed jar in the

As if 42 miles of sublime trail winding riverside along postcard-perfect limestone bluffs isn’t enough, the path passes through wonderfully preserved historic towns wedged into folds of verdant valleys, tailor made for relaxing rest stops and post-ride indulgence. Like to share your outings with wild things? Resident critters are plentiful and active. Expect company the likes of wild turkey, white-tailed deer, raptors and songbirds, cottontail rabbits, and an occasional rattlesnake.

Cozy Cooking

for Fall Weather

With the leaves changing color and Fall in the air, it’s time to think about cooking in season. Whether or not you have your own vegetable garden with an overabundance of produce, this a great opportunity to experiment with vegetables that are usually found this time of year at your neighborhood grocery. Check out a few delicious favorites as well as a couple of not so wellknown varieties that are nourishing for both body and soul.

Red Peppers: Red peppers are an extremely versatile vegetable. For fall, try an Italian recipe like Peperonata. Combine the following in pot: 6 cloves of peeled and smashed garlic, 2 large thinly sliced onions, and 8 peppers layered along with 1/3 cup of olive oil. As the pot heats and the veggies start to sizzle, stir for twenty minutes and add a cup of tomato puree. From there you can cook for another 15 minutes while stirring until the peppers are tender. Finish up by adding about 20 Italian basil leaves, 3 tablespoons of red wine vinegar, and 1 teaspoon of hot pepper flakes for added heat. Add salt and pepper to taste and serve warm.

Tomatillos: Like the Jicama, tomatillos are native to Mexico. These mini green tomatoes are technically fruit and are recognized by their husks. Once cleaned, they make a great charred or grilled dish. They can also be used to make a green salsa or a lighter guacamole by using less avocado. For a main dish, you can try adding them to a hearty stew or adding red pepper flakes for added heat if you wish. The possibilities are endless!

Local kids tipped over outhouses, placed wagons on rooftops, soaped windows and released farmers’ cows. The next morning cows were found roaming Main Street, the town jail and the sheriff ’s office. A bull locked in a classroom devoured three history and two algebra books. The townspeople had had enough. Something had to be done. Similar incidents in other cities had people so outraged, they began arming themselves and running down the pranksters with cars. Fortunately, the good citizens of Anoka had a better plan. They decided to have a community get-together to celebrate Halloween. In 1920, George Green, an Anoka civic leader, worked with business people, teachers, parents and students to organize a giant celebration.

Everyone was encouraged to come and support the events. Five hundred people turned out for the first parade. Their plan was a success and Anoka became one of the first cities in the United States to put on a celebration to divert youngsters from causing trouble on Halloween.
