CONTENTS Hello,
Readers!
This sizzling issue of
is all about how you can best
enjoy the Twin Cities during Minnesota’s precious few moments of summer. We take a look at the headliners coming to play at the Minnesota State Fair, and all of the classic treats served there. We go to the zoo to bother the bears, and then to the arboretum where there is nothing that can eat you. We learn all about fishing in Lake Minnetonka, because nothing says summer quite like a

Without zoos, we’d have to wait for another biblical flood to take place before we could see so many different animals in one place. Even then, the selection process for those who got to see them would be pretty exclusive. I’d probably be too busy being underwater to get to enjoy the spectacle. But we have zoos -- zoos like the Minnesota Zoo in Apple Valley, an impressive menagerie which makes for the perfect summer outing.

shopdinelive.net I saw the brutish wolverine, the nimble otters, and the little lynx with tufts shooting out of his eartips like Tyrolean hat feathers. There were wolves nearby, whom I understand are not dogs but would like to pet nonetheless. They were dozing in the sunlight, breaking occasionally to look around with their citrine eyes. Finally I saw the bald eagles. If you could explain to them that they’re the symbol of the greatest country on earth, they’d probably not care very much. They seemed more interested in how to acquire squirrels. I next went to see the heartier animals on the Northern Trail. There was the moose, in repose and thought. He’d have been alarmed to learn that there is a model of semi-eaten version of himself in the nearby tiger pen. I did him a kindness and didn’t tell him. I saw a goat-like creature I’d never heard of before -- the takin, a sturdy, furry tank which was bouncing up cairns like it had been inflated with helium. The prairie dogs, my grandfather’s old target practice friends, were putting on a show that day. Every couple of minutes they’d stop their scurry to rise up, raise their tiny paws in the air, and squeal in unison. Is this

ICONIC FOODS OF THE by David Scheller
“A fair is a veritable smorgasbord-orgasbord-orgasbord.” -Goose, Charlotte’s Web Sweet Martha’s Cookie Jar You seldom get to consume an entire bucket of something. There’s occasional movie popcorn, fried chicken, and Miller Lite, of course, but nothing in a bucket tastes quite so good as chocolate chip cookies do. That’s why Sweet Martha’s Cookie Jar deserves its rank as the Minnesota State Fair’s most popular food -- they bake 2,000 cookies every minute just to keep up with demand! Everyone at the fair carries around a bucket of Martha’s cookies. I’ve seen Holsteins in the dairy barn daintily toting buckets in their teeth.
Pronto Pups The Pronto Pup originated in the 1930s in Rockaway Beach, Oregon when a hot dog stand owner got fed up with the rain turning his buns into a soggy mess. In perhaps one of the most American flashes of genius ever, he devised a pancake batter mix that he could deep fry his hot dogs in to keep them perfectly delicious during even the most torrential downpours. Nearly 100 years later, that man’s vision for a weatherproof hot dog lives on with the Pronto Pup, the state fair’s most quintessential food on a stick. Is there a more satisfying feeling than taking the initial bite out of that ambrosial, battered delicacy? Perhaps, but it’s outside the scope of an article about fair foods.

Tom Thumb Donuts Typically, miniature versions of things aren’t as good as their fullsize equivalents. Having a cupcake is never as satisfying as having a cake-cake, sliders are just burgers for elves, and miniature greyhounds pale in comparison to their taller brethren. (I’m not too fond of greyhounds in general -- to pointy.) Tom Thumb Donuts are the exception to this rule. By virtue of their smallness, they have a far greater surface area to dough ratio than your typical big lug donut, meaning there’s that much more golden, sugar-coated crust to enjoy. Watching these mini donuts being made is half of the fun: little rings floated around a spiral of hot oil, lovingly flipped midway by an autonomous spatula, and finally ascended via conveyer belt to you, the people. And that smell!

Minnesota Landscape Arboretum by David Scheller

shopdinelive.net The Minnesota Landscape Arboretum is Minnesota’s attempt at Eden. I can not do it justice in a single article -- you can get married there, learn how to photograph eagles there, see giant origami sculptures there, listen to music there, and do yoga there. The best I could do with the Arboretum in a single day is wander around there. I went with my honey and wrote about it for you. My favorite spot at the Arboretum is Green Heron Pond and the boardwalk that runs alongside it. The birds rule here. We saw a turkey hen pecking at everything her little brain compelled her to, geese and their fluffy goslings forming a tight convoy, and red-winged blackbirds desperately trilling away in their attempts to build respectable harems. Once in a while the green heron himself treated us to his song: a single, guttural creak. He brought Walt Whitman to mind: “I too am not a bit tamed, I too am untranslatable, I sound my barbaric yawp over the roofs of the world.” We walked through the tulips. I once heard that the Dutch had once gone crazy for the things a long time ago, but until now I could never have imagined why. They’re gorgeous things, strikes of white, purple, red, and orange. Some had fringes like a dog’s lips. Others had far too many petals to have classified as tulips, according to my limited understanding of the things. It was all I could do not to pick one and risk being asked to leave. The Japanese garden is a marvel. It has waterfalls and koi. The waterfalls tuck under your feet in one spot. The koi are on constant patrol for things that are good for koi. They mouth the water’s surface and occasionally jump out of it. This area is marked with subtle flora, not strong thrusts of color like in the nearby tulip beds. It is possible that the Japanese have a different take on gardening than the Dutch had.

We went to the shade tree exhibit, dotted with big leafy things. Its two tiny wooden houses piqued our interest, but they were too small for us to go into. They may have been meant for children. We found a much larger wooden thing that would fit us, something supported by four posts that put us up on seats a story high. It was nice to sit there simply because we could. We looked down imperiously upon the other people from our fortress, and listened to the breeze upset the shade trees’ leaves.
The Churchill, located on Marquette Avenue South near the heart of downtown Minneapolis, is an elite address for those with a taste for luxury. A long list of lavish benefits and amenities add up to the easiest, most effortless way of life you can imagine.
We walked into the prairie. The hot summer’s sun bore down on us. My collar was wrinkled with sweat, but because she is a thing that is not bound by nature’s laws, she stayed crisp and clean and beautiful. We stood there for a minute. I drew her in and kissed her. The gophers may have been watching, but they couldn’t have cared. The Minnesota Landscape Arboretum is Eden.

Best of the Minneapolis Institute of Art
by David Scheller
I don’t know very much about art. In freshman year of college I walked out of Introduction to Art History to go to the bathroom and kind of just never went back. I do know that Art Deco is when it looks like it belongs on the cover of an Ayn Rand novel, and Art Nouveau is when it looks like it needs to be pruned. If it’s a cartoon woman saying a non sequitur it’s Roy Lichtenstein, and if it’s a cartoon woman who looks like she belongs on the front window of a nail salon it’s Patrick Nagel. If it’s something you can go inside of, it’s architecture. That about sums up what I could tell you about art.
Nevertheless, even a philistine like me can love the Minneapolis Institute

But my very favorite thing in the museum wasn’t made by the Chinese 4,000 years ago, the Romans 2,000 years ago, or even the Americans recently. It was made by Ghanaians in 1993. Fantasy Coffin is an enormous wooden lobster which you could be buried in, if you were so inclined. No crustacean detail was spared in its carving, from its spindly antennae to its googly eyes to its articulated tail. It combines all the appeal of a coffin along with a giant green lobster and it multiplies that one hundredfold. Finally, I exit through the gift shop.

shopdinelive.net While fish are not known as the most intelligent creatures on earth, they are certainly masters in one area of expertise, and that’s how to be fish. Fish know exactly where they like to be, when they like to be there, and what they like to have for lunch. Few people know fish as well as fish know themselves. When you use a Texas-style tuck, you can deliver the bait right around the weeds without worrying about snags. If you want to strike above or around the weeds, switch to a spinnerbait. They move and flash just like a little fish does, which is what the bass need to see to leave their cover.” “If you want to switch to walleye, bottom bouncers are the way to go, especially on Minnetonka because they cut right through the weeds there. Try trolling a little faster than you feel is natural, between 1 and 1.5 mph. Walleye are predators and use short bursts of speed to take their prey, so it’s good to fish as aggressively as they do. Keep in mind that walleye are most active during the first and last hours of daylight. When they’re too lethargic for a bottom bouncer to do the trick, slow way down and put an ⅛ oz jig and minnow combo right in front of them. They usually won’t object to it.”

LU'S SANDWICHES
by David Scheller
“I grew up in Vietnam,” said Quang Pham, the owner of Lu’s Sandwiches. “Every morning my mom used to take me to school on the back of her motorcycle. We’d stop at the farmers’ market on the way there, where I’d go get my banh mi for lunch later.” “
Quang and his family moved to Minnesota when he was 13 years old. His mom upgraded to a sedan, and he continued on through school only to wind up getting ensnared in the world of corporate finance. “My world was full of spreadsheets, and I was wedged in a cubicle every day. That’s no way to live,” said Quang. “I wanted to do something hands-on and meaningful with my business degree.” Fortunately, Quang’s mother Tuyet had a skill set far more valuable than his own: making banh mi sandwiches. They decided to go into business together, with her running the kitchen, and him answering requests to be interviewed by nosy magazine writers. Now they run two Lu’s Sandwiches locations in South and Northeast Minneapolis, as well as a food truck.

E X P LO R E D OW N TOW N “Those mornings at the farmers’ market are a good memory,” said Quang. “I get to share that memory by making amazing banh mis in restaurants decorated with a Vietnamese f lare. My family came here in 2000 with nothing, but with hard work and passion we have created something we love, and a lot of other people love too. We couldn’t be more grateful for that opportunity which America has given us.” “A banh mi is the ultimate fusion of Western and Eastern cuisine,” explained Quang. “We start with a Vietnamese baguette, which is crispier and airier than a French one. Then we slather it in creamy mayonnaise and pâté, add our own homemade chicken, beef, pork, meatballs, cold cuts, tofu, or mock duck, garnish it with things like cilantro, jalapeños, and daikon, and top it off with traditional pickled carrots to give it its signature crunch.” “At first, I was a little worried that Minnesotans might not embrace something so unfamiliar,” Quang confessed. “A lot of people balk when they learn that pâté is made from liver. But it’s still a sandwich, and a damned good one at that. Fortunately, Minnesotans are always game to

Lu’s sandwiches are simply perfect: crunch giving way to fluff giving way to meatiness giving way to crunch yet again. I had delicious cold cuts. My dad had meatballs, because he is from Jersey and believes that they are as requisite to a sandwich’s construction as the bread itself. My gluten allergic girlfriend had a rice bowl, drizzled in lemony, garlicky fish sauce. We rounded the meal out with Vietnamese iced coffees, made with chicory-laced Cafe Du
The beauty of a banh mi is that it shows how well two cultures can intermingle, provided they do so in the form of a sandwich. We may have been able to avoid World War I completely had the British and Germans only collaborated to concoct some kipper-sauerkraut monstrosity, and perhaps North Korea and South Korea could have started getting on the same page a lot sooner had they only married their radically different cuisines between two slices of bread as well.

Go Outside with Hennepin County
David Scheller
Downtown Minneapolis is a blast in the summer. You can go down to the Stone Arch Bridge and feel the restorative spray of St. Anthony Falls blowing up at you. You can go see the Twins massacre those other bums (sometimes). You can go on a toot at all the bars and clubs without having to worry about losing your fingertips to frostbite during the long crawl home. It’s a regular estival festival. The mpls downtown council and Hennepin County partner to make that good thing even better with their Go Outside with Hennepin County initiative, a bunch of events you can enjoy for free right in our fair city. Here are what our friends have in store for us this year -- check out their full schedule at mplsdowntown.com/gooutside for more information!

August 6, 12, 13, & 20 Most Epic Family Day, which in the past has included activities like mini golf, water slides, movies, arts and crafts, face painting, and more, will be held August 12 from noon - 4:00pm. Kids love it! Alchemy 365, the Twin Cities gym that synthesizes yoga, strength, and cardiovascular training into whole body workouts, will host outdoor group fitness classes on three select Mondays from 5:00pm - 6:00pm. Hennepin County Government Center South Plaza Activities
Farmers’ Market | June 1 - August 31 | Tuesdays 9:00am - 3:00pm The farmers’ market moved here during the Nicollet Project, but it proved such a great spot for them that they’re taking charge of it this year as well. Meet friendly local growers and take home Minnesota-grown flowers, vegetables, fruits, and more. The locavore movement is in full-swing, and this is the best way to embrace it.
Yard Games and More | June 1 - August 31 | Wednesdays 11:30am- 1:30pm South Plaza becomes an outdoor recreation room with yard games like bean bags and Connect Four. If connecting four isn’t enough of a spiritual catharsis for your lunch break, enjoy the green’s meditation area with colorful blankets and yoga mats. There you can become one with everything, and then you can have one with everything from a nearby hot dog stand.
Piano Performances | June 1 - August 31 | Thursdays Noon - 1:00pm The South Plaza is home to one of downtown Minneapolis’ Pianos on Parade locations, on which you’re welcome to go belt out some tunes any time you like. On Thursdays, however, you can spend a very special lunch break watching a trained pianist playing anything from jazz to classical to showtunes. There is a new pianist every week, so the concert always changes!

Longboards.” As an avid drummer, skins came before wood for Steve. He used to tour with Hyland, his Christian rock band, which at its peak played 200 shows around the country a year. “Going on tour takes a lot more than musical talent,” Steve said. “You’ve also got to manage the tour, promote your performances, and babysit your bandmates. Granted, Christian rock isn’t really fraught with the same kinds of distractions that plague musicians in other genres, like, say, death metal. Still, you’ve got to make sure everyone stays on track.” “I took two important things away from my rock days. First, I realized I had an entrepreneurial spirit. Second, I knew I had to do something significant -something that would change the world, in some way, no matter how small. I just wasn’t certain of what that would be.” In his downtime after the touring had calmed down, Steve made a skateboard for a friend. It was a simple, sleek board, one which he had enjoyed making very much, but not something he had considered world-changing. He put a photo of his creation on Instagram, gave it away, and then went about business as usual.

When it comes to musicians, Minnesota has blessed the world with more than our fair share. shopdinelive.net The Beach Boys Monday, August 27 More than 50 years after their first concert, The Beach Boys are still going strong under the leadership of original band members Mike Love and Bruce Johnston. Their early popularity rested on surfing and car songs, which epitomized the freewheeling California spirit of the era and united school boys across the country in the desire to be older. The band grew some serious teeth with their 1966 album “Pet Sounds,” which had ethereal harmonies that would inspire The Beatles to produce “Sgt. Pepper’s Lonely Hearts Club Band” the next year. Could there be a better song to roll over the corn dog waggling throngs at a summer fair than “Kokomo?” God only knows. The Righteous Brothers,

“I’m the only stand-up comedian with his own law practice, at least
that I know about,” said Kris Covi of Omaha, Nebraska. “I don’t tell my
audience that I’m a lawyer before I perform for two reasons. First of all, that would make them expect a lot of legal jokes, and nobody likes those. Second, I want them to like me.” “That’s not to say I would never combine comedy with my legal work. I practice real estate law, and I’ve got material on the Nebraska Real Estate Disclosure Act that I think kills. If I ever play a club full of nothing but Nebraskan real estate agents, I’ve got it made. Maybe one day I’ll come up with the perfect joke about filing a quit claim deed that’ll appeal to everyone. Until then, I’ll keep the lawyer talk under wraps when I perform.”

settle on real-life historical figures like Matilda of Flanders and Jonas Salk to idolize. While governing the duchy of Normandy and curing polio are admirable feats, they pale in comparison to willing an ice palace into existence or punching a mutant boar so hard that it creates earthquakes on the other side of the planet. (The Incredible Hulk actually did this.)
