It’s early morning in January. The first rays of gray winter light are now piercing the sky, revealing the clean, fresh snow that blanketed the city last night. It dulls the sound of everything, turns all the unbrushed cars on the street into amorphous white blobs, and highlights where every bird and squirrel touched the ground on their way around town. This is winter in Fargo.

A Restaurant Revamp and a Fresh New Concept

popular eatery that was in what was then the Ramada Plaza Fargo Hotel. That hotel was recently transformed to the Marriott Fargo, a change that included a new restaurant. If you were a fan of Basie’s, chances are high that you will enjoy Urban 42 even more.

Head Chef Tom Collins has been with Marriott for over 30 years. Originally from Baltimore, Collins brings an ethic he describes as “learn all you can and have fun doing it.” “I just like to see people smile when they enjoy good food and good company,” he said. The key change to a new restaurant includes a revamped menu. “The inspiration for the new menu was comfortable, modern American style with great flavor and presentation full of bold tastes,” Collins explained. “My personal favorite on the menu is our great crab cakes. They’re made with a lot of love.” General manager Jason Lunblad also brings decades of restaurant experience to Urban 42. “I started working for a private club in town when I was only 15 years old. I loved the fast pace and the customer interaction,” he said. “I knew from a very young age that I would make this my lifelong career.” Like Collins, Lunblad is excited about everything that Urban 42 will bring to Fargo. If you don’t know what I am talking about, then you have obviously never enjoyed a meal prepared by Lush Lola’s. A business that started in 2009 selling organically raised pork and eggs, Lush Lola’s is now a full-service catering company that specializes in creating unique, hand-crafted dishes for special events, festivals, and retail sale. Their most popular dish? The Drunken Pig! Lush Lola’s is the brainchild of Shannon and Jim Malzahn. Shannon began her food career as a child working in her mom’s concession business. If there was a major fair or festival in North Dakota or Minnesota while she was growing up, chances are Shannon worked at it. It makes more sense when you consider Jeff’s childhood, which involved summers spent working in his family’s concession business in Canada. “After having the business for over 20 years, his family sold the business but kept the cotton candy machine,” Kaylie explained. “Jeff took it from his dad in college and used it for a few events.” Although Jeff used the machine here and there over the next couple

After moving to Moorhead, the couple decided that Kaylie’s time would be best spent as a stay-at-home mom, so they started investigating alternate forms of income. Jeff woke up one morning and knew their future was in cotton candy. “We never had dreams of owning a business, but this is something that we can both do at home together and on our own time,” Kaylie explained. “Concessions and small business have been a part of Jeff’s life for so long that it is a natural fit for him.” Both Jeff and Kaylie have a hand in the business. Currently, Jeff spins the cotton candy while Kaylie takes care of design and packaging, which includes colorful tulle on each bag. The candy comes in six flavors: blue raspberry, pink vanilla, purple grape, yellow lemon, red watermelon, and green watermelon. Unlike a typical cotton candy stand’s, however, each bag from Cotton

Candy Co. is personalized. “We allow customers to pick their own flavors of cotton candy and their own tulle color,” Jeff said. “We want to make our product as unique and as special as our customers are.” Sales over the first six months of the business exploded. During their first month of operation, the company sold 60 bags. Six months later, they sold 1,350. The Risbrudts saw nothing but continual growth as their business became more widely known. Jeff would like to expand the company as well. “Future plans are to make a cute cotton candy cart to be able to spin live at company work events and weddings,” he said. The Cotton Candy Co. is the only place in the Fargo/Moorhead metro area that provides fresh cotton candy throughout the year. It is no longer necessary to wait until the fair comes to town or to settle for the boxed variety, and you certainly don’t have to let kids have all the fun. Emerging Prairie is an organization formed in 2013 to “connect and celebrate the entrepreneurial ecosystem in Fargo-Moorhead.” They are responsible for organizing a variety of events that support their mission including Drone Focus, Prairie Den coworking space, and 1 Million Cups Fargo. Drone Focus 2017 was held March 31st and again on June 1st to provide a space for entrepreneurs, business experts, and government officials to gather and discuss the rapidly expanding drone industry.

The common theme running in the speeches was twofold: that the drone industry is changing at an unprecedented rate, and that North Dakota is at the forefront of that evolution.

“We are advancing UAS operations here in North Dakota unlike anywhere else in the nation,” Hoeven said. “Now that we have secured authorization for beyond-line-of-sight flights, it is vital that federal agencies are able to keep up with the innovations of industry and our state stays on the cutting-edge of UAS applications, including low-altitude beyond-line-of-sight flights and counter UAS operations.” According to Hoeven, North Dakota has been working with UAS since 2005. “I’m excited about the progress we’ve made,” he said. “We’ve made a lot of firsts.” The senator referenced the state’s Northern Plains Test Site, the first site in the nation to fly beyond visual-line-ofsight, as well as the Grand Forks Air Force Base’s work with the Predator and Reaper drones. How Do We Find Room for Everyone? Chao addressed the issues of privacy and the congestion of airspace in particular. More people than ever are traveling by air, and the addition of drones to this already overfilled space is an area of great concern. The use of drones for both commercial and personal use has skyrocketed in a very short time. On December 14th, 2015, The Federal Aviation Administration issued a rule requiring all UAS weighing more than 0.55 pounds and less than 55 pounds to be registered using a new online system. By December 31th, 2016, over 626,000 owner-hobbyists had registered their UAS. Since then, average registration has been between 5,000 and 7,000 new systems per week. The FAA forecasts that the hobbyist fleet will triple in size over the next five years, from an estimated 1.1 million units in 2017 to 3.5 in 2021. On the commercial side of UAS, the fleet currently stands at an estimated 42,000. That number

could rise as much as tenfold by 2021. Of the commercial drones currently registered, 34% are used for aerial photography; 26% for real estate; 26% for construction, industrial, or utility inspections; 21% for agriculture; 8% for emergency management; and 5% for insurance (with some overlap). As new applications of drone technology increase, so too will the number of UAS in the air, which could lead to serious problems. Chao advocated for the continued development of UAS technology “while maintaining the safety the public demands and deserves.”

When Chelsea was a girl, she had a horse named Snowflake, a big, white, gentle creature with a pink streak down her nose and a mane like angel’s hair. Snowflake was Chelsea’s pride and joy, and she loved her horse like every girl who ever had a horse has. Chelsea brushed Snowflake and rode her and fed her peppermint candies and whispered in her ear, which Snowflake liked. The funny thing about life, though, is that when it finds out you love something it can at once conspire to take it away. It was only with good intentions that Chelsea’s mother sold Snowflake, of course.

This was in 2003, when Chelsea and

Snowflake were both teenagers. Snowflake went to live with a man in Northfield, Minnesota and Chelsea and Snowflake didn’t stay in touch after that. Like any great relationship, distance and time would still dull the affair until it faded.

Protosthetics began when Cooper Bierscheid and Josh Teigen combined their mutual passions for design and helping people. Cooper’s interest in prosthetic limbs began in college when he learned that one of his professors had a young grandnephew in need of prosthetic arms. The price tag was over $100,000. Cooper used his senior design project to design affordable arms. After graduation, Cooper gave up his dream job at 3M to pursue his passion for helping others. Josh, a serial entrepreneur and medical device consultant, soon joined the venture and Protosthetics was born. It has since provided visitors with the unique opportunity to tour a distillery in action as well as sample distilled spirits that have been produced from local products. Currently, Proof produces vodka, gin, whiskey, bourbon, and liqueurs made from local produce like potatoes, barley, and corn. Their products can be found at more than 400 locations around the state. Unlike most distilleries, however, Proof is also approved to serve food, something you will find at only a handful of distilleries across the county.

The back of the distillery is where the production takes place. The front is the tasting room, which is where Chef Judd Eskildsen comes in. Judd was hired as executive chef for the tasting room a month before Proof went live. “When the tasting room opened, my job was to keep people in their seats,” he explained. In the summer of 2016, Judd was promoted to general manager, executive chef, and events coordinator. “Basically, anything that happens in the tasting room, except for the cocktail menu, is under my direction.” Judd created a culinary style that he calls “New American Tapas,” fashioned specifically for the way he feels a night at Proof should be. “Basically, it’s the small plate concept, but for a group of four or so.

Large plates tend to quiet guests, but for the most part Midwesterners aren’t really into tiny bits of food.”

Judd has always had an interest in cooking. “My desire to become a chef came around the time I was old enough to stay at home alone in the summer while school was out,”
