While Lux Communities (Lux) would be considered a relatively young property and development company, their impressive list of stylish and wellsituated properties says otherwise. Shop Dine Live sat down with Lux’s Vice President, Donna Block, and Marketing Specialist, Heather Zinger, to get a look inside the company and its mission.

Talk a little bit about that. “We understand that our target market is all going digital. We need to be where those people who want to rent our apartments are going to be, and right now that’s online. For example, Facebook is rapidly becoming the number one lead source for apartments.”

Lux also has several properties located in Grand Forks, North Dakota. What is the mission of Lux Communities? “Lux wants to provide residents with upscale yet affordable living options. We want people who are searching for a home to say specifically ‘I want to live in a Lux apartment.’ We really want to challenge our competitors to build better products. It raises the standard across the board.” How is Lux Communities and its properties unique?

Eric “Fish” Ista, co-owner of Fargo Escape Room, first heard about the activity from a friend. “Before he was even done describing it, I wanted to open my own,” he said. “My business partner Sarah Deutsch and I went to an escape room in Denver, and the rest is history.” Fargo Escape Room opened in September of 2015, and the response has been amazing. “Having the first escape room to open in all of North Dakota was very exciting,” said Ista. “Many people had heard about them from friends in other parts of the country, but hadn’t had the opportunity to try one.”

Southern Soul Food & West Indian Cuisine by Jamee Larson For Darrell and Celena Randle, food is an extension of their compassionate hearts, allowing them to infuse their personalities and beliefs into everything they cook. Thanks to the opening of their restaurant Daran’s Southern Soul Food & West Indian Cuisine, the entire Fargo/Moorhead area is able to enjoy their passion. Darrell and Celena Randle moved to Fargo with their three children (their fourth was born last year) in 2011. Darrell, born and raised in Miami, and Celena, originally from Brooklyn, have always shared a deep connection to food. Whether cooking for their children or enjoying a meal with family and friends, their food has always been a labor of love and a way to express their deep appreciation and gratitude for everything around them. In order to bring that spark to a wider audience, the Randles decided to open their own restaurant. When the Randles moved to Fargo, they could sense that something was missing: There were no restaurants that served authentic soul food or West Indian Cuisine. As the Randles began building a home for their family in the Midwest, they longed for the tastes of home. Together, the couple decided to change that. “The desire to open this restaurant here was to bring the cultural flavors and foods we were accustomed to with us to our new home,” Darrell explained. and kind of learned the ins and outs of running a store from there.” Grindberg has been involved in the industry in one form or another for the past 20 years. “After seeing what gets bought and sold, I decided to switch from bigger furniture pieces to smaller items, one being vinyl,” he explained. “I just decided that records seemed like a great way to go, seeing that I love music.” Phat Kat sells a wide variety of items, including pop culture memorabilia that any new collector can relate to. The walls of Phat Kat are lined with posters from the music and entertainment industry, and an impressive selection of antiques lines the store’s shelves. According to Grindberg, music is still one of his biggest hits. “The experience of listening to vinyl is much more pleasant than digital music,” he said. “I think that, overall, people like antique shops because they have things they don’t need. The things we want make us feel a lot better when we buy them.”

The Concordia Christmas Concert is one of the most popular

holiday events in the area. The concert has a storied history that is as impressive as its music itself. If you have never been to a performance, strongly consider adding it to your holiday itinerary. You will never take it off. The history of the concert can be traced all the way back to 1927, when Cara Duea, Concordia’s piano and organ professor, founded the Concordia Music Club. One of their activities was the Christmas concert, which was performed in Old Main’s chapel.

The concert continued at Concordia or Moorhead’s

Trinity Lutheran Church until 1943, when it was moved to the

Moorhead Armory to accommodate the ever-increasing public demand. By 1946, three performances were held annually. Within six years, five more were required to handle the demand. In 1952, the performances moved to Concordia’s Memorial Auditorium, where they have been held ever since. Over the past decade, the concert has begun taking advantage of society’s technological advances. For instance, the mural that serves as the choir’s backdrop has been digitally designed and printed ever since Paul Johnson first accomplished the feat in

The result is stunning backdrops that help the beautiful Christmas music come to life. Gordon Moe, manager of choral ensembles and executive producer of the Concordia Christmas Concert, managed his first set of concerts in 1989.
