According to the American Cancer Society, there were an estimated 310,260 new cases of breast cancer diagnosed among men and women in 2017. Pink It Forward - a local non-profit whose mission is to provide hope and empowerment by enriching the lives of all those affected by breast cancer – is continuing to do what they can to make a difference in the lives of each and every one of those individuals.

by David Scheller When I first reached out to Chuck Deremer of Chuck’s Custom Rods for an interview, I made the mistake of trying to schedule one on a summer weekend. “Not a chance,” said Chuck. “I’ll be fishing then.” We finally managed to speak while it was raining. “You can always build something better than you can buy,” Chuck started. “I’m an avid fisherman, so with that philosophy it was only a matter of time until I started dabbling with making rods. I got serious about it 15 years ago when I took a class, dug in, and started crafting the real deal. Now I teach people how to make their own rods, which is a great way to keep myself busy in my retirement while sharing the art.”

“You couldn’t buy a rod from the store that will be as nice as the one you’ll make in my class, just in terms of quality alone”

“When people come into my class to make a rod, they start with a big, solid piece of graphite composite. The length they will cut it to depends on how they plan to use it. Big fish and long casts demand a longer rod, while a shorter one is better for smaller fish, as well as portability. Like golf clubs, no one rod does everything.” “My class makes their handles out of cork most of the time, but we use foam and wood as well. There is no perfect handle. Cork is both comfortable and durable, but it chips, stains, and is delicious to mice. Foam is resistant to damage, but it’s not the most attractive material. A wood handle is the most beautiful by far, and the most sensitive. Its biggest drawback is that it can get a little slippery, but that’s not a big one. As is usually the case, the handle comes down to personal taste.” “Using quality guides is key. I teach how to identify them, so people who have taken my class can pick the ones that best suit their needs

shopdinelive.net without wasting money. The best advice I can give about guides is never to damage them by reeling in too far. That can chip the front guide’s ceramic insert, which may fray the line as it’s cast. Inattention and beer are the worst enemies of guides.” When you take a class with Chuck’s Custom Rods, you get to spend a Friday evening and all day on Saturday making your very own

DOG FATHER by David Scheller

“You know, once you’ve grown up with a high quality hot dog, you find you can’t stand one of those sorry, limp things from the gas station,” said JP Mansour. “The texture is offensive, the flavor profile doesn’t awaken the senses -- eating one of those is like going from driving a Rolls Royce to a Yugo.”

JP has every right to claim authority on the subject of hot dogs. A Chicagoan born and raised, he spent a great part of his life frequenting the Windy City’s ubiquitous hot dog stands and restaurants. He hadn’t always planned on becoming a hot dog cuisinier, however. In 2000 he began his mission as a firefighter paramedic, which is in a sense an opposite calling, because he was trying to prevent things from getting cooked (namely us). “I had to retire from that in 2008 after I destroyed my shoulder catching someone in a fall,” said JP. “It wasn’t as glamorous a save as you might imagine, but enough to put my firefighting career to an end.” JP’s personal affairs eventually demanded that he and his family relocate to his wife’s native Fargo, where he took a job as an emergency room nurse. “A perfect place to raise a family,” JP noted. “It’s a much safer community than Chicago, the schools are top notch, and there are a lot of great opportunities here.” While celebrating New Year’s Eve with his wife in 2016, JP considered taking one of those opportunities for himself. He had lamented for some time that Fargo, land of milk and honey that it is, simply doesn’t offer the authentic Chicago-style hot dogs he had treasured in his youth. As anyone who works in emergency services would attest, you only live once, so JP decided to make it his mission to bring Fargo the goods. Now he helms The Dog Father, Fargo’s only Chicago-style food truck.

EX P LO RE DOWNTOWN

EXPL O R E DOWN T OW N Back to Table of Contents Centents

E X P LO R E D OW N TOW N

by David Scheller I am a worldly man. I have toured the medieval sandstone caves of Nottingham. I have been kicked out of a Japanese karaoke bar for singing “Livin’ on a Prayer” three times in a row (and I believe nothing else). I once drank Johnny Walker Blue Label from a coffee mug. Worldly as I am, I had thought that I heard of everything. The world constantly conspires to surprise, however, which it very much did to me when I learned that you can have cookie dough for dessert -- and right in Fargo no less. What else could I have been missing out on? Scoop N Dough Candy Co. in downtown Fargo is in nearly every sense just like the old fashioned ice cream parlors we all cherish: the shelves behind the counter lined with classic candies like jawbreakers, salt water taffies, and liquorice wheels; the panes of glass to weigh options for flavors through; heck, they’ve even got locally made gourmet ice cream. The big, new thing about them, however, is that they have delicious edible cookie dough as well. “Everyone snuck a taste of raw cookie dough at some point when they were a kid,” said Josh Ulrich, the founder and owner of Scoop N Dough. “We wanted to tap into that sense of nostalgia, to let people relive that sweet, innocent moment without worrying about their parent walloping them with a wooden spoon.” Fear of mom’s or dad’s rebuke wasn’t the only danger in sneaking a glob of cookie dough, though. Scoop N Dough has done away with the once forbidden treat’s other hazard by making theirs entirely with safe ingredients. “Figuring out how to make each of our flavors from scratch was tricky,” said Josh. “We had to get that special cookie dough consistency just right, because that’s half of the treat’s appeal. A lot of time went into the perfect chunk to dough ratio as well. No one in my family seemed to mind the taste testing part of the job. They’re a selfless bunch.” Scoop N Dough’s flavors satisfy your expectations for what cookie dough should be, and include s’more, peanut butter cup, loaded chocolate chip, loaded M&M, monster cookie, Funfetti, milk and cookies, and chocolate milk and cookies. This treat is versatile -- it can be enjoyed as easily on its own as it can be combined with ice cream, or even as part of a float made with Mexican soda with real sugar. A wonderful, sweet smell wafts out of Scoop N Dough’s doors courtesy of their giant popcorn machines. On top of their frozen delicacies, they offer gourmet popcorn in all of its best flavors, like cheddar, caramel, classic, and more. Scoop N Dough is toying with some pretty ambitious ideas for their gourmet popcorn in the future, such as sriracha and other flavors, developed in collaboration with local Fargo companies to keep them authentic to the area. Scoop N Dough is located downtown at 206 Roberts Alley, just across the street from The Boiler Room. They’ll even come to you if you like -- Scoop N Dough will cater any event to make it special with their unique, delectable desserts. “We can’t wait to see where this thing goes,” said Josh. “Right now we’re thrilled to focus on our new flagship shop, but we see a lot of potential for cookie dough in the future. One day, when you tell someone you’re from Fargo, maybe Scoop N Dough will be the first thing that comes to their mind!” |

EX P LO RE DOWNTOWN encountered many cats in need of homes during their work there, and couldn’t help but start taking them in. This presented a real problem -- the charity she was then working with wasn’t a rescue shelter, and couldn’t accommodate the fast-growing clowder. Where would all these cats go? They would go to Cats Cradle Shelter, founded by Gail and her affiliates Carol, Jill, Amber, and Jill in 2011 as Fargo’s first-ever no-kill refuge exclusively for kitties. “Before we opened,” said Gail, “Anywhere between 400 and 700 perfectly healthy and adoptable cats in our area were put to sleep annually. There

was just no other place for them to go. Now, thanks to our volunteers’ and sponsors’ efforts, that number has dropped to zero. We have effectively eliminated feline euthanization in the Fargo-Moorhead area.” The people behind Cats Cradle Shelter believe in giving their guests the most comfortable stays that they’re able, which means free colony accommodations. “Keeping each cat in their own cage has some advantages,” explained Gail, “But not enough to justify the boredom and isolation that would

Like nearly all cat lovers, Gail Ventzke has loved cats since before she could remember. We give them any medical attention that they need on arrival, and give them warmth and comfort. You can tell they’re truly grateful for the care they receive after having had it so hard. That gratitude they show every day makes them the best companions. Every cat knows how to love. Sometimes they just need a little help to show it!

Skydive FARGO by David Scheller

“My greatest jump in the Army? OK,” said Hans Nielsen, board member at Skydive Fargo. “It was an early morning dive, just south of Mount Kenya. Our plane had slowed down to 130 knots, and I and the 62 other men in my unit were all jumping out, one by one. While we were in midair, a herd of about 100 zebra, spooked by our plane’s shadow, all charged across our landing zone. They were long gone by the time we hit the ground, but I’ll never forget the sight of them as we floated down from the sky.”

When Hans transitioned to civilian life after his 12 years of

jumps, and skydiving training to anyone in the greater Fargo

service as a U.S. Army paratrooper, he still loved nothing

more than jumping out of planes, and had to find another way to do it. Fortunately there was Skydive Fargo, a communityrun skydiving club that operates out of West Fargo Municipal Airport. “Skydiving here is a lot easier than for the Army,” Hans explained. “Our planes are going a lot slower when you

jump, and you don’t have to strap about a hundred pounds of gear to yourself before jumping. Jumping without the rifle saves about eight pounds alone.”

“For a first-timer, skydiving is one of the few ways you can confront real fear -- but we’re not pushy. The other day I had someone up for their first dive. He was a smart guy, a

“I have a fairly boring day job,” Hans continued. “But when I jump, I get to live entirely in the moment. Taxes, bills, all of my responsibilities instantly fade away while I’m plummeting to earth at 125 mph, powered by nothing more than gravity and adrenaline. You would need a car or a motorcycle to go that fast otherwise, but when you’re falling you’re totally free. Then you get to save your own life.”

thinker, and extremely anxious about taking the plunge. He couldn’t bring himself to do it. So I closed the door, and we circled the plane around in a big circle while I explained all of his training to him again -- the safety protocols, the things we do if something should happen to go wrong, and how infinitesimally small the chances of anything going wrong really are. He just needed that little bit of extra

shopdinelive.net “We will never push you out. Well…that’s not entirely true. It’s too dangerous to go back in once you’re already leaning outside of the aircraft. In that case you can’t turn back, so if you have second thoughts at that point, we’ll give you what we consider to be a ‘safety nudge’ in the right direction!” Most people choose to take their first dive as a tandem. Having an experienced instructor attached to your back will be far more useful in this situation than, say, the pile of ammunition and MREs that Hans had during

his Army days. After a half hour of instruction, you will be flown up to 10,000 feet. From there you’ll jump out, hurtle back toward Mother Earth for 45 seconds of pure freefall, and then spend the final five to seven minutes delicately dangling from a high tech zero-porosity nylon fabric canopy until you plunk down at the 15’ landing zone.

“We’re here just because we love skydiving, and want to share it with the world.”

After their first jump, many people continue on to take Skydive Fargo’s comprehensive United States Parachute Association classes so they can skydive alone, from higher altitudes, and in a longer freefall. “We’re not a commercial operation,” Hans concluded. “We’re here just because we love skydiving, and want to share it with the world. The world would be a much poorer place without it.”
