7 Tips to Transform Your Child's Diet Teach your child healthy eating habits that they'll adopt for life. Words by Gary Appelsies, MS, CHHC AADP | Photos by Jessica Friend “I try to encourage healthy eating habits for my family, but nutritious choices don’t seem to be appealing.” I hear this time and time again from parents who are trying to get their kids to eat healthier. Yes, it can be a challenge to get your children to eat nutritious foods, but you must not give up. Whether they’re toddlers or teens, children develop a natural preference for the foods they enjoy the most. Our kids aren’t born with a craving for sweets, french fries and pizza nor are they born with an aversion to broccoli, carrots and apples. When we get right down to it, this conditioning happens over time as our kids are exposed to unhealthier food choices. Here’s the good news: it is 100-percent possible to reprogram your children’s food cravings (and your own!) so they crave healthy foods instead of less nutritious foods. The sooner you introduce wholesome, nutritious choices into your kids’ diets, the easier they’ll be able to develop a healthy relationship with food that can last them a lifetime. Now, I know you might jump up and say, “But I’ve tried and tried again and again but my kids still only want to eat cookies and cake.” GARY APPELSIES is the director of healthy eating for the YMCA of Central Florida. A classically trained chef, Gary has a Master of Sciences in Nutrition Science from the University of Bridgeport and is also a boardcertified holistic integrative nutritionist. When he’s not educating people about the healing powers of whole foods, Appelsies loves to spend time cooking for his wife and daughter.

This shift in your children’s dietary preferences isn’t going to happen overnight. In fact, your kids will probably complain that there is no food in the house if you take away their favorite snacks. Trust me—over time, when all that’s available to them is an apple, they WILL eat it. Slowly but surely, their tastes buds will begin to change, and there will be a blissful craving for healthy snacks. Patience and persistence are key to creating healthy habits that will last a lifetime. Try a few of these tips and tricks to get your family started on the right track. 1. Focus on overall diet rather than on specific foods. Try to incorporate more whole food into your kids’ diet and less packaged and processed food. An easy way to think about this is that the food your children eat should be as close to its natural form as possible (e.g., fresh fruit and nuts). 2. Be a role model. The childhood impulse to imitate is strong (even for teens), so don’t ask your child to eat fruits and vegetables while you gorge on potato chips and chocolate cake. 3. Disguise the taste of healthier foods. There are many creative ways to sneak nutrientdense foods into flavorful dishes. You can add vegetables to a beef stew, mash carrots up in your next batch of mashed potatoes or add a sweet dip like honey to slices of apple. 4. Cook more meals at home. Restaurant and takeout meals often have loads of added sugar, sodium and unhealthy fats, so simply cooking at home can have a huge impact on your kids’ health. If you make large batches, cooking just a few dishes can be enough to feed your family for the whole week.

5. Get kids involved. Bring your kids along to the grocery store, and let them help in the kitchen when you’re preparing meals. You can even teach them about different foods and how to read food labels. 6. Make healthy snacks available. Keep plenty of fruit, vegetables and healthy beverages (water, milk, pure fruit juice) on hand so kids avoid unhealthy snacks like soda, chips and cookies.

PANTRY ESSENTIALS Healthy grocery shopping can be a struggle when you just don’t know what to buy. Use this list to stock your pantry with the absolute essentials so you’ll always be ready!

7. Limit portion sizes. Don’t insist your child cleans the plate, and never use food as a reward or bribe.

Ingredients: • 1 head cauliflower, stem removed (or you can buy the pre-riced cauliflower) • 2 cups shredded mozzarella cheese • 1/2 cup grated parmesan cheese • 1/2 teaspoon dried oregano • 1/8 teaspoon sea salt • 1/4 teaspoon garlic powder • 2 large eggs, beaten • 1/2 cup marinara sauce • Your favorite pizza toppings Directions:

Potatoes Carrots Frozen fruits and vegetables (e.g., broccoli, peas, corn, berries) Spices: Salt (kosher, sea, pink) Pepper

Dry Goods:

• Heat the oven to 400 degrees.

Olive oil

• Line a baking sheet with parchment paper.

• Break the cauliflower into florets and pulse in a food processor until fine.

• Place cauliflower in a steamer basket over boiling water for 5 minutes. Drain and spread on a clean dishtowel to cool slightly. When cool enough to handle, fold the towel and squeeze as much liquid out of the cauliflower as you can.

Vinegars

• In a bowl, combine the cauliflower with the 1/2 cup mozzarella, parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into a circle, resembling a pizza crust about 10 inches in diameter. Bake for 20–25 minutes until it’s golden brown. • Place a thin layer of mozzarella cheese on top of the crust, then add your sauce (this will ensure the crust doesn’t get too soggy). • Top the sauce with more mozzarella and your favorite toppings. • Bake an additional 10–15 minutes. • Carefully lift the parchment paper off the pan. Using a spatula, slide the pizza off the parchment paper onto a cutting board. • Slice and serve. 13 PLAYGROUND Mar / Apr 2018

Landrie’s Nursery: Farmhouse Feminine This soft color palette will make you blush. Words by Kodi Churchill | Photos by Jessica Friend When Kimberly Lummus found out she was having a little girl, Landrie, after five long years of waiting, she was excited to get started on the nursery. “We have an 8-year-old boy, so when we found out it was a girl, I immediately knew I wanted something soft and feminine.” To bring a vintage feel to Landrie’s room, Kim mixed her son’s Pottery Barn crib with a rocking chair from when she was a child. She also reworked her husband’s grandfather’s dresser to give it an updated look. With the help of Randie Vella at Furniture Restoration (407-575-3011), she updated the dresser using whitewash gray chalk paint. To go along with her personal style and keep the room soft, she chose blush and mint as her primary colors, and incorporated them into the drapery, the bedding and accents throughout the room. For artwork, she chose a gold-stamped piece that reads, “Have Faith” (her daughter’s middle name) and a piece that reads, “Some Things Are Worth the Wait.” Both pieces stood for the long road it took to have Landrie and the faith they kept while going through the process. To bring out the farmhouse look, Kim updated the lower half of her walls using a pattern that helped pop the soft blush wall color. Finally, she added a delicate chandelier as the primary light source in the room. When gathering ideas for your nursery, don’t be afraid to incorporate older pieces like Kim did. They can easily be updated to fit the look you’re going for or kept as-is to add more of a vintage feel. Plus, vintage pieces add a personal, comforting touch.

Pressley Meek Speaks Louder Than Words Words by Kodi Churchill | Photos by Jessica Friend

P

ressley Meek is not only taking strides to prove doctors wrong, but she is also teaching her classmates and parents the true meaning of patience, kindness and understanding. At only a few days old, Pressley Meek (now 4) suffered from focal seizures, which mimic a stroke by affecting part of the brain. She was left with 33 stroke lesions on the verbal part of her brain and left-side paralysis. Doctors set expectations with Pressley’s mom, Nicole, and the rest of her family that she may not be able to speak or walk. Now, almost five years later, Pressley is surpassing expectations with a smile on her face and compassion toward others.

“What is incredible about Pressley is she is happy all the time. She has this internal and innate ability to know that her life was almost taken, and she’s just happy to be here,” says Nicole. Pressley has learned to speak using American Sign Language (ASL) and Augmentative and Alternative Communication (AAC), which utilizes an iPad. She is currently enrolled in Orangewood Christian School in Maitland, where she uses her show-and-tell time each week to teach her class three words in ASL. Not only are her classmates retaining what they learn, but they’re going home and expressing to their parents how excited they are to learn new signs. Dedication to caring for others shines through in Pressley’s determination to make other people as happy as she is. At school, she makes sure everyone in her class is participating and has a companion

for activities. For example, when Pressley learned that one of her classmates had a peanut allergy, she asked her mother to pack lunches without peanuts so she could still sit with her friend. “What is incredible about Pressley is she is happy all the time. She has this internal and innate ability to know that her life was almost taken, and she’s just happy to be here,” says Nicole. Pressley has also surpassed expectations on her ability to walk. She is not only walking, but she goes to dance class three times per week. Dancing has provided physical therapy to help her left-side paralysis. “She was in lot of physical therapy, and another special needs mom mentioned she had enrolled her child in dance. I was looking for something more organic and natural that she’d find fun. She’s loved it ever since,” says Nicole. Pressley and her family have learned to turn the misunderstandings of others into opportunities to demonstrate love and compassion, and to educate people about children with disabilities. “Life hasn’t always been rainbows and butterflies for her. It was a challenge for me as a parent to know how to deal with that,” says Nicole. “You have to use it as a teaching moment. I’ve learned that we need to teach people and show people. You can’t blame them for not knowing or understanding. If I could go back in time and tell myself something, it would be to worry less; it’s going to be OK somehow. Enjoy every milestone. Celebrate every little thing. It may not be what the norm is, but it is the norm for you and your family.”

Do you have a list of places that you consider classic Winter Park? If so, chances are Tugboat & the Bird is pretty high up there. This Park Avenue gem is owned by Laura Haftel. Almost 20 years ago, Laura was a buyer for Macy’s and later ran 10–15 stores for the Gap. When her husband, Matt, was admitted to Stetson University for law school, they packed up and moved to Orlando. Not long after, Matt and Laura had two children, William and Gracie. When her children were ages 2 and 4, Laura decided the travel for work was just too much. She realized that she needed a schedule that worked better for her family. When she found out that a children’s boutique in Winter Park was for sale. Laura knew she could put all her skills to work. The Haftels purchased Tugboat & the Bird, which they have owned for 15 years. Tugboat & the Bird sells perfectly curated kids clothing, toys and gifts. Through the years, they’ve expanded from just special occasion and traditional clothes to include everyday outfits for little ones. There’s a variety of pricing and styles, but one thing is true for every clothing item in the store: they must pass the touch test. Laura doesn’t purchase anything she hasn’t seen and felt in person to ensure that all the clothes are comfortable for little ones. For Laura, being part of the community is one of the biggest joys of owning the store. “I love working with our customers; they are the heart of our brand, and they’re amazing.”

Though running a business was more work than she expected, it afforded Laura the flexibility she needed to be more present with her family. When her kids were young, Laura would leave every day to pick them up from school. She credits a fantastic sales team with giving her the freedom to leave the shop in their hands each afternoon. Now that they’re older, Laura’s kids are part of the business too. When she was fashion-focused tween, Gracie was the inspiration for Tugboat & the Bird’s sister brand, Pink Oranges, a shop for older kids. Today, Gracie handles all of Tugboat & the Bird’s social media, helps with buying and has a hand in the paperwork and accounting. She’ll be heading to Rollins College after high school. William is a computer engineering major at George Washington University, but he still handles much of the store’s website programming. Laura acknowledges that it’s hard when your kids move away, but also sees it as a positive. “If you raise your kids well — they’re happy, and they find a good environment — then you've done your job.” And of course, Laura’s husband, Matt, is a part of the Tugboat team too. In addition to all he does as a father and lawyer, he can be seen on the weekends at the store unpacking boxes, fixing lights and even plunging a toilet or two. What’s next for Laura? Now that she’s got more time on her hands, Laura plans to write a children’s book about a little tugboat and a bird, of course!

MY WAY THROUGH MENOPAUSE Local mom Amy Nielsen humorously recounts what it was like for her to experience menopause while simultaneously nursing her child.

“Hi, my name is Amy. I am, uh, here because I am in menopause.” Saying these words feels like an out of body experience. “Welcome, Amy.” They smile at me, revealing faint laugh lines brought on by years of giggling. I'm standing before a room filled with silver-haired beauties, grandma-types. Most are bundled up in layers of polyester and wool. I should be in spin class, not at a Golden Girls support group! Why am I here? I nervously tousle my freshly colored brunette hair, attempt to furrow my Botoxed-brow and rock awkwardly back and forth on my black Converse. I have a child in diapers! How can I be in menopause? I start to get more anxious. I don’t belong here. I begin to feel heat radiating from my core and racing out to every nerve ending like a fast-spreading brush fire. My entire body is scorching and sticky. My skinny jeans feel like they are melting into my skin. I’ve got to get out of here! Suddenly, I hear the faint cries of my child’s voice. I open my eyes and glance at the baby monitor sitting on my bedside table. Whew! It’s just a dream — kind of. No, I’m not at a menopause support group, but I am going through menopause and have a newborn — so contradictory, right? It seems like yesterday that I went through the IVF process. Getting pregnant at 45 was something my doctor told me was likely impossible without the help of a highly trained fertility specialist. So, I sought out that specialist and came out of it with a beautiful bundle of joy and a slew of changing hormones. The face of menopause isn’t what it used to be. Because of advances in fertility medicine, more and more women are able to have children later in life. This means more and more mothers of young children find themselves just where I am, balancing life with a new baby AND menopause. What years ago may have been an unlikely duo is becoming a more common occurrence.

fluctuate, causing heavy or irregular periods for about six months to a year before menstruation stops all together. Night sweats, thinning of the hair, reduced collagen in the skin, and hormonal imbalances can occur. Pair these lovely gifts of the aging process with sleep training and breast-feeding a new baby, and you can quite possibly have a recipe for emotional disaster. I began to feel the effects of perimenopause about 12 months after my youngest son was born via IVF. The night sweats started waking me up in the middle of the night just in time to feed him. I guess a mother’s biological clock can have some empathy. I didn’t want to believe it, though. I felt too young. How can I be coming to the end of my fertility when I just had a baby? IVF may make us think we are younger than we really are, but the truth is that as a woman ages, the ability to conceive naturally declines. By the time I decided to have my last baby, I had almost zero chance of conceiving on my own. Luckily, with the help of an amazing fertility specialist, like many women who have children after 40, I was able to defy Mother Nature, and science gave me my precious son. I contacted my midwife when the night sweats began to interfere with my sleep more than my waking son was. She did bloodwork and confirmed my suspicion. I had, in fact, entered menopause. The plus side—no need for birth control and no more periods! The downside—well, I guess if I really think about it, there isn’t one. I have four beautiful children ranging in age from 3 to 30, and my heart is full. I may be entering my “golden years” a little earlier than I thought I would, but that doesn’t mean I’ll go down without a fight! Advances in reproductive medicine have helped women like me give birth way past our fertile prime. I am optimistic that advances in anti-aging procedures will keep up the pace and help me avoid looking like my son’s grandmother, even though I am old enough to be! Shh! That can be our little secret!

Women typically go through menopause sometime during their 40s or 50s, being technically in menopause when they haven’t had a period for 12 consecutive months. This pre-menopause stage, called perimenopause, can last months or even years for some women. During that time, a woman’s estrogen and progesterone begin to

So, How Are Your Nights Lately? There are only two worlds where conventional math and the time-space continuum do not apply: dreams and parenthood. Let’s do some math to explain, shall we? • 6 — the number of times I was up last night • 2 — the number of times I was vomited on by a sick (yet adorable) baby • 3 — the number of pairs of pajamas I managed to cycle through as a result of said puke • 2 — the number of children (out of 3) in our house who ended up in different beds than they started in All of that adding up to 2 parents who are, as of this morning, officially feeling like total and utter dog crap, topped off with a dash of ugh … really? Nevertheless, here we are … just like so many other parents out there, trudging through the day and finding ourselves actually laughing about the fact that our new reality is fractured nights of sleep and lots (and I mean lots) of musical beds. It’s the inevitable change that comes with becoming a parent. One of the biggest forms of relief is knowing we’re not alone in this crazy stage of life. Anyone else find strength in knowing — when you’re rocking a slobbering baby at 3 a.m. with no relief in sight — that you’re not alone? Actually, taking it one step further, one of the biggest laughs I get lately is when I get that first “Is this for real?” phone call from friends who have just become parents. Welcome to the club, my friends. See you at the espresso bar. So, that’s how it is in our household lately. We are obviously still on the front end of this whole parenting thing, so anyone out there care to tell us when sleep becomes reliably good again? You know, for everyone in the house? (In the meantime, is there anything better than sleepy baby smiles? This picture kills me every time.)
