Spinach and Ricotta Dumplings Ingredients
Serves 4
• Salt • 1 10-ounce package frozen chopped spinach, thawed and squeezed dry • 1 1/2 cups whole-milk ricotta cheese • 1 cup grated parmesan cheese • 6 tablespoons all-purpose flour, plus more for rolling • 2 large eggs • Freshly ground pepper • Pinch of freshly grated nutmeg • 2 cups prepared marinara sauce • 2 tablespoons unsalted butter, cut into pieces • Crusty garlic bread, for serving
Method 1.
Bring a large, wide pot of salted water to a simmer. Put the spinach in a large bowl and separate it with your hands. Add the ricotta, 3/4 cup parmesan, the flour, eggs, 3/4 teaspoon salt, 1/4 teaspoon pepper and the nutmeg. Mix with a fork to form a slightly sticky dough.

Spread some flour on a plate. Scoop out heaping tablespoonsful of the spinach-ricotta mixture and roll into about 24 loose balls using floured hands. Gently roll the balls into the flour.
3.
Bring the marinara sauce to a simmer in a large skillet over medium heat. Whisk in the butter.
4. Meanwhile, gently lower the dumplings into the simmering water and cook until they rise to the surface and are firm, about 5 minutes. Remove the dumplings with a slotted spoon, letting the water drain off, and add to the sauce. Gently toss to coat, then transfer to plates and sprinkle with the remaining 1/4 cup parmesan. Serve with garlic bread.

New Year Fundraising Is a Piece of Cake ...says St Luke’s Hospice Plymouth Over the last year, hundreds of people in our area have received end-of-life care thanks to coffee, cake and the power of the community, says St Luke’s Hospice Plymouth. The much-loved local charity is again launching its February coffee mornings drive which last year directly connected patients and their community supporters with Plymouth, supporting 626 of its own residents. Events across all areas provided a total of £14,000 in much-needed funds for support at home, at hospital or in the hospice.
Held in people’s homes, village halls, schools, workplaces and more, coffee morning events ask local people to bake, bring or break out the biscuits by inviting friends for a cake and coffee in return for a small donation. Every pound raised from these events provides another 85p to keep St Luke’s nurses on the roads, specialists in local hospitals and the doors open for clinical, social and spiritual support for families in your communities. Community Fundraising Assistant at St Luke's, Rebecca Bristow, said "Previous holders of coffee mornings had loads of fun and were surprised at how much they had raised - so why not put away some of your Christmas extras and hold one in the new year?” “We’ll send you a free fundraising pack with a poster to promote your event, recipes for some scrumptious cakes and fun games to play to ensure your event stands out from the rest."

Keeping your New Year’s Resolutions By Barbara Burgess
Around half of us regularly make New Year’s resolutions but less than half of those were successful in keeping their resolutions. As you can imagine, the most popular resolutions include things like losing weight, stopping smoking, getting fitter or healthier, finding love and getting out of debt. So how can we become more successful at keeping those resolutions? Those people who are successful make their resolutions explicitly instead of coming up with some idea blithely at 5 to midnight which is forgotten by daylight on January 1st. So, if you really want your resolutions to stick, then start by writing them down. While you’re writing them down, try to couch them in positive language; we humans don’t like to lose anything or give up anything, so instead of ‘losing weight’ think about ‘becoming slimmer’, instead of ‘giving up smoking’ think of ‘taking up being a non-smoker’ and instead of ‘getting out of debt’ think of ‘paying off all your debt’. Be specific; if you want to be slimmer, decide what your target is (choose a size rather than a weight because if you work out you will build muscle which is heavier than fat). Be realistic, you don’t want to set yourself up to fail. Now you have a list of positive resolutions, write down why you want them, what will be better about your life if you achieve these outcomes? In what way will it look different and how will it feel different, for instance, if you paid

off all your debt, you would have less money going out each month, what will you do with it and how will you feel? This adds a bit of emotional connection and gives you the opportunity to visualise your life when these changes have been made. Get a plan. How will you achieve your goal? What will you do differently? Again be realistic, in fact, it is often better to be a little conservative so that you can surpass your goals, this will give you a bit of a boost and also allow for the unexpected (such as bill you weren’t expecting or weeks when you don’t achieve your target). If you want social support, tell your friends and family so that they can help you stay on track. Set in place reminders - stickers around the house, notes on your calendar and messages on your computer. If you have a smartphone you can set alarms with reminder names such as ‘Smoke-free’ or ‘Say NO to the cake’. This can be especially useful if you

know you have times of the day when you falter such as that 11.00am latte and cake that adds around 800 calories to your daily intake or around £5.00 to your outgoings. Plan a treat at intervals during the year when you have stayed on track and again when you have achieved your goal. Don’t make the treat something that breaks your rules, such as a blowout meal when you’re slimming or trying to pay off debts, choose something that is in line with your goal. Finally, if you want someone to hold you accountable, get a coach, almost all the most successful people in the world have a coach, from sports to business or use hypnotherapy to help you to overcome your poor habits, limiting beliefs and your blocks.

History Runs Deep in Devon It may seem hard to believe, but some of the most important and influential figures in the history of Great Britain came from Devon. They have all left their giant marks on the
pages of history and their influences can be seen not only in Devon but all over the world. Here we look at four of the biggest historical figures from Devon and take a look at what made them such important figures in the history of our country. SIR FRANCIS DRAKE (1540

1596)
Drake was born in Tavistock and is perhaps the most famous person from the Plymouth area. A hero to the British and a villain to the Spanish, Drake was instrumental in the defeat of the Spanish Armada in 1588. Drake was also the second ever person to circumnavigate the world from 1577 – 1580. On this expedition, he discovered Elizabeth Island, one of England’s first discoveries in the New World, and later Nova Albion or “New Britain”. A year after he returned, he was knighted aboard his ship The Golden Hind. The same year he became Mayor of Plymouth and was a Member of Parliament in 1583.
Legend has it that upon being warned of the approach of the Armada in 1588, Drake was playing bowls on Plymouth Hoe and decided not to finish his game as he believed that he had plenty of time to finish and still defeat the Armada. Upon his death, Drake was buried at sea in a lead coffin which has still not been found by divers. Drake’s influence in Plymouth can be seen in the naming of several locations in Plymouth such as H.M.S. Drake, Drake Circus, and Drake’s Island. ROBERT FALCON SCOTT 1868

Scott was born in Plymouth and was famous for the fact his name is almost synonymous with Antarctica based on his two expeditions to the Antarctic and their tragic ending. The first expedition, the “Discovery Expedition”, from 1901 – 1904 resulted in Scott becoming the first person to discover the Polar Plateau which is the area containing the South Pole. Following

the success of his first expedition, Scott planned for a second expedition to be the first to reach the South Pole. In addition to the exploration objective, the “Terra Nova Expedition” from 1910 – 1913 was also a scientific expedition. During their voyage, Scott and his team discovered fossils which proved that Antarctica was once forested and joined to other continents, supporting the new claim that the Earth was once one super-continent which gradually split into the seven we now know.

Scott and his team reached the South Pole on 17th January 1912 only to discover that they had lost out to the Norwegians, mainly due to the fact that they utilised dogs who were more accustomed to the harsh environments than the British horses were. On the return journey, a lack of supplies, lack of will, and severe exhaustion led to the unfortunate death of Scott and his men.
Raleigh was born in East Budleigh and was an important figure in the English colonisation of North America. He also popularised tobacco in Great Britain. Twice he attempted to establish settlement on Roanoke Island in what is now North Carolina; both failed after the war with the Armada led to a delay in supplies. This ultimately resulted in the disappearance of the colonists. The fate of the colonists is still unknown, with the only clue being the word CROATOAN carved into a tree suggesting that they fled to Croatoan Island.

Christie was born in Torquay and is the best-selling novelist of all time, boasting the third most publications of any author’s works as well as being the most translated individual author. Often referred to as the “Queen of Crime”, Christie published 66 detective novels and 14 short story collections including such notable works as “Murder on the Orient Express” and “Death on the Nile”. She is also responsible for creating the iconic detective characters Hercule Poirot and Jane Marple. Her play “The Mousetrap” holds the record for the longest initial run on the West End starting in November 1952 and it is still running with over

Raleigh later discovered Guyana in an attempt to locate the legendary “city of gold” also known as “El Dorado” although it is said that he greatly exaggerated his findings. In his second expedition to find “El Dorado”, Raleigh was unsuccessful resulting in his men ransacking the Spanish outpost of San Tomé which violated the peace treaties with Spain. This resulted in his execution in the Old Palace Yard in the Palace of Westminster.

The No Fault Divorce Bill has reached its second reading in the House of Commons. The Bill seeks “to make provision for the dissolution of a marriage, or a civil partnership when each party has separately made a declaration that the marriage or civil partnership has irretrievably broken down without a requirement by either party to satisfy the Court of any other facts; and for connected purposes”.

For some couples this presents no issue, but for many it is quite important (perhaps for financial reasons) that they conclude their divorce proceedings as quickly as they can. It can also be crucial for emotional reasons to close that chapter of their lives.
Essentially, MP Richard Bacon, who introduced this Bill to Parliament, wants to make an amendment to family law that allows couples to say there is no element of fault in their breakup and that they have, for example, simply grown apart.
Separating couples are sometimes in a position where neither feels that they have behaved unreasonably and adultery is not relevant. Under the current legislation, a couple in this situation has to wait two years from the date of their separation to divorce.
Currently, a divorce in England and Wales requires the Court to be convinced that the marriage has broken down irretrievably. The divorce petition can be based on one of the following five reasons;

through in six to seven months. The Bill proposes that a longer period of time may well be required, possibly a year. The suggestion is that this will give individuals more time to reflect on whether divorce is really what they want for themselves and indeed any children of the family. In my view, in practice this will give parties who are sure they wish to separate time to attempt to reach agreement about dividing their finances and putting in place arrangements for spending time with their children. Once all matters are resolved, these agreements can be tied up with the conclusion of divorce proceedings conducted without paperwork suggesting that either party was more at fault in the breakdown of the marriage than the other. The idea of a “no fault” divorce is not a new one – it inevitably attracts criticism that it will make divorce easier. However, “no fault” divorce may conversely be seen as supporting a dignified end to a marriage and enabling the most positive ongoing relationship between the parties, especially where children are involved.

Avoid the Stress of Tax Returns The deadlines for completing your self-assessment and company tax returns are fast creeping up... It is a stressful time of year that business owners, sole traders and the selfemployed may dread. The deadlines for sending your online Self Assessment tax return to HM Revenue and Customs, and paying any money you owe, falls on Sunday 31st January of this year. You have until 11.59pm on this day to send a completed online self-assessment tax form to HM Revenue & Customs and pay your tax bills. A penalty of £100 will be charged if you miss the deadline for returns. If it is more than 3 months late, or if you pay your tax bill late, you will be charged more and will have to pay interest on what you owe, so it is crucial to never underestimate the importance of sending it in on time. After registering as self-employed, you’ll automatically be sent a self-assessment tax return. If this is your first year filing a
return, you’ll need to register with HMRC to file your returns online if you haven’t already. It is wise to think of tax from day one, so keeping receipts and bank statements throughout the year will help to fill in your tax return correctly when the time comes. You do not have to struggle on your own; consider getting help from HMRC or an accountant. According to HMRC, around 10.9 million people need to submit a self-assessment tax form. You will need to send a tax return if: • • • • • • • • • • •
you’re self-employed you’re a company director your annual income is £100,000 or more you have an income from savings, investment or property you need to claim expenses or relief’s you or your partner receive child benefit and your income is over £50,000 you get income from overseas you have income from trusts, settlements and estates you have capital gains tax to pay you’ve lived or worked abroad or don’t live in the UK permanently you’re a trustee.
Take steps to make filling out your tax return as painless as possible. Collect your financial records for the tax year that has just ended (starting 6th April and ending on 5th April the following

year), including your profit and loss account, business records and business expenses, all in good time before the deadline. The case is slightly different for limited companies which must pay corporate tax. Unlike other types of businesses, you have to calculate the amount of tax you owe yourself. This process is called ‘corporation tax self-assessment’, however it uses different methods and deadlines to the self assessment used by other types of businesses and the selfemployed. Another great way to avoid unnecessary panic and stress is to get your accounts in order throughout the year. Staying on top of your accounts regularly, and not solely at the point of deadline, will aid in the initial preparation of filing your tax return. Spend time carefully reading through both your self-assessment form and help sheets from HMRC to ensure you understand exactly what you must fill out. Make sure you leave time to double check every section of your tax return before you submit it. A simple mistake, such as forgetting to sign and date the form once complete, could result in receiving a penalty. And lastly, the easiest way to ensure less stress is to not leave it to the last minute; to ensure accuracy, hire an accountant. Aim to have it all completed before the Christmas period so you do not have to worry about it in the New Year!
