THE EDITOR

November is sometimes a funny month - we’re either still in Halloween, Pumpkin Spiced Latte mode or we’ve already got our trees up and Christmas lights twinkling. This month, we’ve worked harder than Santa’s elves to bring you insight reads, recipes and even a business profile.

It’s hard to believe it’s been two years since we last visited Signs Express when Simon and Tracy Hallett were taking over as the Directors of the business. We catch up with them and the team to see what’s been happening over the last couple of years.

There’s much going on in Plymouth for the month of November, from Remembrance Sunday to Christmas Markets. There’s so much going on, in fact, that Royal William Yard has put together a festive guide to keep you busy.

Our fantastic competition this month is kindly gifted by none other than the China Fleet Barn Spa. It’s National Spa Week from 30th – 5th November and there’s no other place we’d rather go than to celebrate.

As the festive season approaches, excitement may mingles with concern for many of us. Christmas is a time of warmth, togetherness, and joy, but for families facing rising costs of living, the thought of another expensive holiday season can be daunting. The good news? A meaningful Christmas doesn’t have to break the bank. There’s no denying it: the pressure to deliver a “perfect” Christmas seems to grow every year. We’re bombarded with adverts for lavish gifts, expensive decorations, and extravagant feasts. In the South West, we are lucky to live in one of the UK’s most beautiful regions, where nature provides some of the best holiday gifts for free. A winter walk along our stunning coastline or through a local woodland or on Dartmoor can be just as magical as any costly Christmas outing. The key is to focus on experiences rather than things.

One of the biggest sources of Christmas stress is gift-giving. We’ve all felt the panic of finding the “perfect” gift at the last minute. But thoughtful, affordable gifts often mean so much more than a pricey gadget. Homemade presents, from baked goods to hand-crafted items, are heartfelt and personal. In fact, giving a loved one something you’ve put time and effort into can become a cherished tradition in itself.

Local markets are also a treasure trove for affordable, unique finds. Whether it’s a piece of locally made jewellery, artisan food, or handmade homeware, shopping from local traders helps keep money within the community, supporting small businesses during a challenging time.

Don’t underestimate the power of practical gifts either. In recent years, experiences or ‘subscription’ gifts have become more popular, like giving someone a voucher for a meal at their favourite local restaurant or even a National Trust membership to enjoy Cornwall’s and Devon’s historic sites throughout the year.

Let’s talk about the Christmas feast. For many, this is the highlight of the day, but it doesn’t have to cost a fortune. With food prices on the rise, planning ahead is more important than ever. Shopping local, especially at farmers’ markets or butchers, can sometimes be more affordable than supermarkets, and you get the added bonus of supporting local farmers.

Why not consider swapping the traditional turkey for a cheaper cut of meat or even a vegetarian main dish? Some of the best meals come from slow-cooked, hearty recipes that warm the soul without stretching your wallet. Plus, many families across the South West already grow their own vegetables—Christmas could be the time to showcase those home-grown goodies.

When it comes to drinks, while it’s tempting to splash out, there are plenty of affordable options from local breweries, cider houses, and wineries. Supporting your local producers can also add a uniquely South West flavour to your celebration.

It’s hard to believe it’s already been two years since our last visit to the Signs Express workshop, where we first met with Simon and Tracy, as they took on their new role as Directors following Chris’s retirement. Back then, Simon and Tracy were in the midst of a major transition, taking the reins of the well-established business after Chris’s 25 years of dedication. Now, with two years under their belt, we thought it was the perfect time to catch up with them and their team to see how things have progressed. Has the transition gone as smoothly as hoped? What new developments and challenges have they faced? We’re excited to dive back in and find out how Simon and Tracy have shaped the future of Signs Express Plymouth.

although Simon stepped into the role of Director in october 2022, he’s certainly no stranger to Signs express. in fact, he has been part of the team, on and off, for nearly 17 years. With a Fine arts degree and training as a Brush lettering artist, Simon has worn many hats throughout his career. his journey took a life-changing turn at 17,

following a motorbike accident that reshaped his outlook on life. From that moment, Simon adopted a “say yes to every opportunity” mindset, leading him on an eclectic path— from working as part of a hot air balloon crew (logging an impressive 70 flights a year for four years) to running a music venue with his wife tracy, all while balancing his work as a subcontractor for Signs express.

tracy also has a background in the sign industry. Starting her working life as an auto stylist; fitting stripes and graphics to vehicles, to setting up and running a small sign business with Simon, when they were first married. Running the sign business led to tracy’s training as an accounting technician. all while running the business with Simon and looking after their two young daughters. When qualified, Tracy went on to work in the accounts departments of various businesses, including plymouth gin and the alzheimer’s Society. this rich and varied background has given them a unique perspective and a wealth of experience, which they now bring to their leadership role at the plymouth branch.

So, what’s been happening over the past two years? Since Simon and Tracy took on the role of Directors, they have placed a strong emphasis on nurturing and developing customer relationships. One of their major clients, Babcock, has seen a significant strengthening of ties, culminating in Signs Express being entrusted with all signage for their recent rebranding earlier this year. This focus on building solid partnerships has also led to an increase in projects with the University of Plymouth, including a successful collaboration on the signage for their Smeaton building.

Within the first 8 months of Simon and tracy taking the reins, they made quite an impression, winning the prestigious “Best newcomer of 2023” award and winner of “Best Vehicle graphics 2023” award. that’s an

incredible way to kick off a new role and a testament to Simon and Tracy’s leadership and vision.

A proud Simon shares that 68% of their business comes from repeat clients, a testament to their exceptional service and quality. Signs Express has become a go-to for commercial customers, largely because they offer the broadest range of capabilities in the area. Being an artist at heart, Simon didn’t just explain why—they showed us. Leading us into their impressive onsite workshop, Simon beamed, calling it, “my happy place.”

What truly sets Signs Express Plymouth apart is their ability to craft everything in-house, rather than outsourcing. With a skilled team and equipment. From CNC cutting and aluminium work to welding, they have the skills, with Sam, their production manager, who’s been working for Signs Express Plymouth for 14 years and is their go-to problem solver. To Steve their in-house design and vehicle graphics expert, who’s also worked there for 14 years. To new recruits, Lorna their daughter, who’s the queen of safety signs, Ian who is the first point of contact for new customers, and Tris who brings a unique skill set with a background in electronics, allowing Tris to handle both the circuit creation and design process. They have the materials, and facilities to handle any project, no matter the size. Their commitment to quality and sustainability is further highlighted by their use of an electric

van for ecofriendly transportation. When it comes to staff, Simon emphasizes that it’s more about skills and creativity than formal qualifications. The ability to visualize projects in 3D and bring an artistic flair to the work is key. For the installation side of the business, Simon looks for individuals with building or carpentry expertise. This further reinforces Simon’s point that Signs Express Plymouth thrives on a foundation of knowledge and experience, enabling them to deliver high-quality, versatile signage solutions.

Now as Director of the franchise, Simon doesn’t get to do as much hands-on work as he used to, but there’s one project he’s currently involved in that has become a personal favorite. A pub in Brixton reached out to Signs Express for new signage, and Simon has loved every moment of it. The client has given the team full creative freedom, which has allowed Simon to truly showcase his skills. Trained as a Brush Lettering Artist, Simon has had the opportunity to hand-paint intricate details on the new 3D sign using liquid gold—a task he’s thoroughly enjoyed. If you ever find yourself in Brixton, make sure to stop by the Fox Hound Inn and admire their beautiful new signs.

So, what is next for Simon, Tracy and the team?

“We’d like to have another three years of business development by bringing in new facilities, machinery and even a premises expansion to further increase what we can offer. Then after we’ve reached those goals, we would then like to take a step back.”

It’s clear that Simon and Tracy have embraced their role as Directors with enthusiasm and drive, taking the business to impressive new heights. With an outstanding 68% repeat business rate and winning major recognition in their first year. Simon and Tracy’s leadership has been nothing short of remarkable.

At OM Magazine, each time we visit Signs Express Plymouth, we’re always blown away by the rapid growth and transformation. Under Simon and Tracy’s direction, the business has seen some of its biggest expansions to date—both in terms of revenue and customer base. The pace of development has been extraordinary, and Simon and Tracy’s impact is felt in every aspect of the franchise’s success.

royal navy memorial, Plymouth hoe 10th november

With the return of the poppy wave, the service will begin with a two-minute silence at the Royal Navy Memorial at 11am. The Lord Mayor, Coucillor Sue Damn and the Lord Mayor’s Consort, Councillor Chris Mavin will be joining by the Deputy Lieutenant of Devon. Members of the public and local organisations will be invited to pay their respects and lay their personal wreaths at the end of the service, on the north side of the memorial, following the departure of the civic dignitaries. Plymouth’s Remembrance Sunday service will be streamed on Plymouth City Council’s YouTube channel.

They’re holding a series of mini markets in the Small Barn. Up to 15 stalls will be set up by local vendors for visitors to peruse and start off their Christmas shopping. The café will be open and a seasonal family trail will be in place along the yellow route.

Head to the Festive Good Food & Craft Market, taking place on Wednesday evenings for shopping under the stars and Sunday daytimes for a leisurely weekend wander. Over 70 stalls will showcase the South West’s best artisans and makers. Taking place inside the Grade I Melville building and outside in its courtyard, sip a mulled wine, buy a real Christmas tree, and stock up on gifts. A free shuttle bus will run during each market, making it even easier to enjoy your visit.

For those evenings when you want something quick on the hob and in just one pan. HBH Woolacotts have a great range to get you started.

Vegetable noodle pancake

Serves - 4

IngredIents

• 100g plain flour

• ½ tsp salt

• 2 free-range eggs

• 300g straight-to-wok noodles

• 200g white or sweetheart cabbage, finely shredded

• 1 carrot, coarsely grated

• bunch spring onions, very thinly sliced

• 2 tbsp vegetable oil

• chilli sauce or fruity brown sauce, to serve (optional)

Place the flour and salt in a large bowl. Add the eggs and 150ml/5fl oz water and whisk to make a fairly smooth batter. Stir in the noodles, cabbage, carrot and most of the spring onions, mixing gently until evenly coated in the batter.

Heat the oil in a 28cm/11in non-stick frying pan. Tip in the pancake mixture and cook over a medium heat for 6–8 minutes until golden. Carefully invert the pancake onto a plate then return to the pan and cook for a further 6–8 minutes, until completely cooked through.

Slide onto a serving plate and drizzle some hot sauce or brown sauce across the top, if preferred. Scatter with the remaining spring onions and slice into wedges to serve.

Heat the oil in a large high-sided frying pan over a medium heat. Squeeze the sausages straight from their skins into the pan, then use the back of a wooden spoon to break the meat up. Sprinkle in the chilli flakes and fennel seeds, if using, then fry until the sausagemeat is crisp around the edges. Remove from the pan with a slotted spoon.

Sausage, kale & gnocchi

one-pot

Serves - 4

IngredIents

• 1 tbsp olive oil

• 6 pork sausages

• 1 tsp chilli flakes

• 1 tsp fennel seeds (optional)

• 500g fresh gnocchi

• 500ml chicken stock (fresh if you can get it)

• 100g chopped kale

• 40g parmesan, finely grated

Tip the gnocchi into the pan, fry for a minute or so, then pour in the chicken stock. Once bubbling, cover the pan with a lid and cook for 3 mins, then stir in the kale. Cook for 2 mins more or until the gnocchi is tender and the kale has wilted. Stir in the parmesan, then season with black pepper and scatter the crisp sausagemeat over the top.

Tip the chicken into a shallow bowl and sprinkle over the flour. Season well. Heat the oil in a large frying pan over a medium-high heat and fry the chicken, shaking off any excess flour first, for 1-2 mins until lightly golden all over. (You may need to do this in batches.)

Smoky mushroom chipotle eggs

Serves - 4

IngredIents

• 2 tsp olive oil

• 1 red onion, thinly sliced

• 300g chestnut mushrooms, sliced

• pinch salt

• 2 garlic cloves, crushed

• ½ tsp ground cumin, plus extra to serve

• ½ tsp chilli flakes

One-pot garlic chicken

Serves - 4

IngredIents

• 4 medium chicken breasts, skin removed, sliced crosswise into thick strips

• 75g plain flour

• 2 tbsp olive or rapeseed oil

• 50g unsalted butter

• 10-15 small garlic cloves, or to taste

• 250ml hot chicken stock

• 100ml double cream

• 30g Parmigiano-Reggiano, finely grated

• small bunch of flat-leaf parsley, finely chopped (optional)

• cooked rice and steamed green beans, to serve (optional)

Reduce the heat to medium and add the butter. Peel as many garlic cloves as you prefer, and drop these into the pan. Cook for 5 mins until the garlic has turned lightly golden, stirring to keep the chicken from burning.

• 1 x 400g tin chopped tomatoes

• 2 tbsp chipotle paste, or to taste

• 4 medium free-range eggs

• 25g feta

• bunch fresh coriander, roughly chopped

• warm buttered toast, to serve

Heat the oil in a large lidded casserole or deep frying pan, add the onion and cook slowly for 8–10 minutes until softened and caramelised. Add the mushrooms and salt and continue cooking for a further 10 minutes until the water has evaporated and the mushrooms start to crisp up.

Once the mushrooms have turned golden, add in the garlic, cumin and chilli flakes and cook for 30 seconds until fragrant. Stir in the tomatoes, 100ml of water (use the water to rinse the tomato tin) and the chipotle paste. Bring to a simmer, then cover and cook for 10 minutes until the sauce has thickened.

Use the back of a spoon or a ladle to make four wells in the sauce, then crack an egg into each. Cover with a lid and cook gently for 3–4 minutes until the whites are set and yolks are still runny.

Pour in the stock and simmer for 10 mins until the garlic is tender. Add the cream and cheese and simmer for a further 5 mins until the sauce thickens slightly. Taste for seasoning and adjust as needed. Scatter with the chopped parsley, if using, and serve hot with rice and green beans, if you like.

Crumble the feta over the eggs and dust with a pinch of ground cumin. Scatter over the coriander and dot some of the pickled onions over the top. Serve with warm buttered toast.
