Less Waste...
MORE REUSING AND RECYCLING!
Landfill sites are no longer just big holes in the ground which waste is dumped into. They’re gradually being improved, with better management of the sites and gases emitted from waste being used to power wind turbines. However, a lot more can still be done by us in our homes to reduce our waste and start recycling as much as possible.
Fruit & Vegetables We’ve seen oranges displayed in plastic trays, wrapped in cellophane – but is there really any need for this when oranges come with their own natural packaging? When shopping in the supermarket, leave the plastic bags and pop your fruit straight into your basket. Even better, shop at a local fruit and veg shop or farmer’s market. They create minimal waste, and if bags are required, you’ll usually be handed a paper one rather than plastic.
Composting If you enjoy gardening (or have a garden you’d like to plant up) start a compost heap. You can make as much or as little compost as you like using vegetable and fruit waste, used teabags and eggshells, as well as grass cuttings and plant prunings. This means that you really will be using up every piece of the vegetables you prepare for meals, and you get nutrient-rich, natural compost for your garden to thrive. Carrier Bags

We’ve all finally come to terms with paying 5p for carrier bags when we go shopping, and already we can see the difference it’s making. It’s great to see people turning up to the supermarket with their own, re-used bags, and it’s exciting to think about the change this is already making to the environment. We’re sure that ladies will have surprised themselves with the amount of shopping they can fit in their handbags when they try!
Learn more about recycling. Some households don’t recycle enough, while others are very keen and start setting aside packaging that can’t actually be recycled. It also varies councilto-council, so if you’re new to the area or move out of it, check what services are available. There is a long list of things which can be recycled, but some common mistakes are crisp packets, plastic bags, Tetra packs (drinks cartons) and cellophane – none of this can currently be recycled from homes in Plymouth.
If you still find yourself picking up a new carrier bag each time you’re at the till, buy a bunch of fabric tote bags and keep them in convenient places – by the front door, in the car, under your desk at work, etc. You’ll always have one to hand.
Give everything a rinse before placing it into your recycling bin, don’t put anything into plastic bags and remove bottle tops before recycling plastic bottles.
Kids Get the kids involved with recycling so that it becomes normal for them – they’ll continue to recycle for the rest of their lives if you show them how. Teach them what can go into the recycle bin, and also demonstrate how you cut down on waste. Kids tend to leave much of their food on their plate, so only cook what you think they might eat and teach them about food wastage. A useful activity to help little ones understand why it’s important to recycle is to take them on a beach-clean. Next time you go for a walk along the coast, take bags with you and encourage your kids to pick up bits of plastic and rubbish which litter British beaches, causing an eyesore for visitors and locals, and a big problem for our birds and marine life.

DARTMOOR Although Dartmoor is full of campsites and cottages to rent, wild camping is actively encouraged here if you stick to their simple rules and respect the environment. It’s not far from Plymouth so it’s great for kids who aren’t keen on long car journeys and, being such a huge place, you can visit time and time again and keep discovering new, stunning spots.
LOOE Looe is a great spot for a break from the city, and it’s surrounded by campsites where you can pitch up the tent or rent a caravan. Kids will love the beach, which is popular in any weather, and the windy streets are packed with shops which will leave you spoilt for choice. It’s also a great place for foodies, who can choose from a pub lunch, pancakes, fresh seafood and fine dining. Even picky kids will find something they love!
Pack picnics and search for rivers to swim in, waterfalls to listen to, tors to climb and cosy pubs for a refreshing drink. If time is an issue, save the holiday and head here for a day out instead! Approx. 30 min. drive from Plymouth to Princetown

Time also applies to life insurance and many of us question the age at which we should start thinking about it. Most people take out insurance once they’re settled down, perhaps with a house and kids and bigger responsibilities, but this could be expensive if saving money over the long term is important. “I wish I had [set up life insurance] when I was younger and healthier because I would have saved tens of thousands of pounds and I really regret that. When we’re young, fit and healthy everyone thinks they’re immortal so why would you want life cover?”

“I could’ve insured myself for £1 million until my desired retirement age when I was younger and it would have cost me a fraction of what it will today aged 50. Putting money aside to protect our families if the worst happens and for our golden years often means sacrificing a few things. Mike believes he could have retired at the age of 45, had he known at the age of 20 what he knows now simply by going out just a little less and putting away some money a little earlier. So it seems that although we might not consider the need for a Financial Planner until we’re older, Mike has plenty of lessons for those in their twenties. One of his dreams was to write a book – and he’s done it. Mike does occasionally meet clients who have left everything far too late. “It reminds me of a cartoon I once saw where a client tells his adviser that he intends to retire on Monday, but has saved nothing and says to his adviser that this is his opportunity to become a legend!” “Part of what I do sometimes is to tell people things they don’t want to hear. But if I don’t do that I’m not doing my job properly and I’m not telling the truth. Worse than that is that I am giving them false hope. Time goes so quickly and before you know it, it’s gone.” “Some people just exist in retirement, and older people these days sometimes have to choose between heating or eating because not everyone can do both, which is a terrible set of circumstances and a horrible place to be.” Therefore, most of his clients don’t care about various funds and accounts, they just want to know if they’ll be okay when they reach their older years. “Life’s not fair in the way it works because when you leave school you’re as fit as you’re ever going to be in life. You’ve got all the get up and go and the drive to do a million things, but you haven’t got the money to do any of it.” “So you get into a relationship, settle down, get married, have kids, your career’s going in the right direction, you’re now earning more money, but you’re spending more now than you were when you were younger because you’ve got a couple of kids and a mortgage.” “You get into your forties which for many is your best earning bracket and also the peak of your career, and you’ve still got a

Riverford are mad about veg - it’s at the heart of everything they do. Here we have some delicious recipes from our favourite farmers, as we encourage you to join them and live life on the veg. SERVES 4
Lamb Stew with Baby Summer Turnips Lamb stew needn’t be a dark and heavy affair. Summer turnips have a sweet, almost radish-like taste, that’s lighter than their winter cousins. White wine instead of red and the addition of some vibrant green veg and herbs at the end also lighten things. Olive oil 1 onion, finely diced 1 carrot, finely diced 2 celery sticks, finely diced 2 garlic cloves, finely chopped 1kg lamb neck, cut into 3–4cm chunks 1 glass of dry white wine 1 bay leaf 500ml hot chicken stock 4 baby turnips, peeled 100g French beans, topped, tailed & sliced 100g double-podded broad beans 2 tsp Dijon mustard (optional) 1 mint sprig, leaves only, chopped Small bunch of parsley, chopped ½ lemon Salt and pepper
SERVES 2
Heat the oven to 170°C/Gas 3½. Heat a little olive oil in a large casserole pot and gently cook the onion, carrot, celery and garlic over a low heat until beginning to soften and take a little colour, about 15 minutes. Remove from the pan and set to one side. Season the lamb with salt and pepper. Turn the heat up to medium, add some more oil to the pan and brown the lamb on all sides. When nicely golden, add the wine and scrape the base of the pan with a wooden spoon to deglaze. Cook until the wine is reduced by half. Return the veg to the pan, add the bay leaf and pour in the stock so that the lamb is just covered. Season with salt and pepper, cover the casserole and transfer to the oven for 30 minutes. Cut the turnips into thick wedges, add to the casserole and cook for a further hour, or until the lamb is tender. Add the French and broad beans to the pot and simmer on the stove for about 5 minutes to cook them. Just before serving, stir in the mustard, parsley and mint leaves and a squeeze of lemon juice.
New Potato & Chorizo Hash with Asparagus & Egg You can either fry or poach your eggs for this recipe. Use the freshest eggs for making poached eggs, so the white seals around the yolks (adding the vinegar helps with this too). 600g new potatoes, scrubbed & cut in half, or in quarters if larger Sunflower or vegetable oil, for frying & roasting 250g asparagus, trimmed Splash of sherry vinegar or red wine vinegar ½ tsp smoked paprika 1 red onion, finely diced 2 cooking chorizo sausages (200–250g), skinned & meat crumbled Handful of finely chopped parsley Splash of white wine vinegar or cider vinegar, if poaching your eggs 2 eggs Salt and black pepper
Heat the oven to 210˚C/Gas 7 or heat a cast-iron griddle pan over a high heat. Put the potatoes in a pan of salted water, bring to a boil and cook for 12–15 minutes, until tender. Drain and lightly crush with a potato masher or fork. While the potatoes are cooking, if you want to poach your eggs, put another pan of water on to heat to a bare simmer (no bubbles). Toss the asparagus in 1 tablespoon of oil in a baking dish. Add a splash of sherry or red wine vinegar, the smoked paprika and season with salt and pepper. Roast in the oven for 8–12 minutes (depending on the thickness), until tender. Heat 1 tablespoon of oil in a frying pan. Add the onion and cook slowly for 10 minutes to soften without colouring. If it starts to catch, add a splash of water and reduce the heat. Add the chorizo, increase the heat slightly and fry for 4–5 minutes, to cook the chorizo through. Stir in the potatoes and warm through. Stir in the parsley and season to taste. If poaching your eggs, add a good splash of vinegar to the simmering pan of water. Crack the eggs into individual ramekins or small bowls. Use a spoon to swirl the water so it looks like a whirlpool. Gently drop the eggs into the water, one at a time, and poach for 3 minutes. Alternatively, fry the eggs in a little oil to your liking. Sprinkle the eggs with a little extra salt before serving on the potatoes and asparagus.

Wild foraging is fun for kids who get to grow up surrounded by nature, exploring the different flavours which grow around them, and it’s also great for grown-ups who get to stock their cupboards for free. Your local library or bookstore will have plenty of books to help you get started, and, of course, the internet is bursting with information. Learn which parts of a plant are edible, which species to avoid and how to prepare and cook your ingredients, and you may find yourself with a new hobby!
Foraging & The Law According to the Wildlife and Countryside Act 1981, permission is required from the landowner before any plants can be picked. The Act also lists protected species which should never be picked. Therefore, it’s usually considered theft to take something from another’s land, but there is an exception in the case of wild plants and mushrooms under the Theft Act 1968, as long as anything taken will not be exchanged for money or reward. The Countryside and Rights of Way Act 2001 gives people the right to roam on land defined as mountain, moor, heath or registered commons.
The Family Foraging Kitchen The Family Foraging Kitchen is a social enterprise that provides wild food education through foraging walks, cookery classes and courses in traditional countryside craft. A percentage of profit made from their ticketed walks and courses allow them to provide the same service, for free, to those experiencing local food poverty in the community.

THE FAMILY FORAGING KITCHEN What time of year is best for wild foraging? This is one of the most popular questions I’m asked and people are always surprised by the answer: ALL YEAR ROUND. Seriously. From the young tender, nutrient rich greens and wild garlics of spring, edible flowers of early summer that are followed by a hedgerow spice trail of wild seeds, to late summer fruits through to the nuts, roots and fungi of autumn. In the winter we see fresh new greens rising again. Oh – and I’ve yet to touch upon the times of year where one can enjoy the 800 varieties of edible seaweed that we have growing along our British coastline. The more you learn about wild food, the greater it connects you to what is available and at its best seasonally. Get yourself a wild food diary and each month, record what you discover, the stage of its growth and appearance, and record what recipes you create in your kitchen using these new ingredients. Invest money in some good botanical guides and the timeless classic wild food bible: Richard Mabey’s Food for Free (the hardback version). If you can and have one near you, source a reputable wild food teacher to take you through one full year of wild food in your area (we regularly run monthly sessions within our community). This is an educational investment that will allow you to access free food forever, for a lifetime.
Where are the best locations for foraging? Look to public footpaths, common and park lands, coastal paths, beaches, nature trails, woodlands and even graveyards! Find out (if you can) that
your strip of favourite hedgerow is untreated from herbicides or pesticides often used in farmers’ fields, ensuring a safe harvest. Avoid areas beside really busy roads too (small country lanes are generally okay) and look out for dog faeces - the biggest curse to the wild foodie!. Foragers rarely share their best gathering grounds, however for a few hints, the hedgerows, footpaths, woodlands and beaches upon the Rame Peninsula in SE Cornwall is our treasure trove of fabulous wild edibles. There are also a whole host of green spaces in Plymouth available to the urban forager.
The easiest food to find, pick and prepare for the beginner: SPRING: Nettles, dock leaves and wild garlic. We believe that nettles and dock leaves should be the national foods of Britain. They grow abundantly EVERYWHERE and can be used in any recipe that calls for the use of spinach, chard or cabbage and allow you to be wonderfully creative. Nettle and blue cheese tortellini pasta is a must to try! They cannot be confused with anything potentially harmful and are one of the highest nutrient-rich wild foods, especially in iron and vitamin C (not to mention tasty too). All dock leaves are edible and are in the buckwheat family – even their seeds have their uses and are rich in omega oils. Layer the leaves under pasta sheets in a lasagne for a real treat! SUMMER: Elderflowers and then elderberries! The flowers are fantastic dipped into a quick chickpea batter, lightly fried and then dusted in sugar and cinnamon. They make a nice wine, cordial and champagne too. The berries can be baked into pastries, cooked into syrup or dried for later use. Rose petals add a fabulously sweet floral delicacy to summer salads and sweets. All roses are edible, even garden varieties, and can be mild to having a deep, sweet Turkish Delight flavour. Common hogweed seeds (when picked with care) are a wild summer spice that taste akin to cardamom and sweet orange – and are a fabulous addition to Asian-inspired dishes. Blackberries are obvious but are so easily recognisable that they are not to miss a mention for those late days of summer.

AUTUMN: Chestnuts are our favourite treat, roasted after a long family walk and are such fun to squash carefully out of their prickly shells with a wellie boot. Rosehips are fat and juicy and can be made into jams, chutneys, sauces and even (from the large Rugsa rose) be used in place of cherry tomatoes! Hawthorn berries also make an amazing substitute for tomatoes in the use of homemade ketchup. WINTER: Bright yellow gorse flowers are rich in protein, are a natural antidepressant and lift up any salad on a winter’s day. They have a delicate coconut taste if picked on a sunny day – and taste like young pea pods if not. Hairy Bittercress is a small member of the cabbage family, but has a mild peppery taste that is similar to rocket and works well as a substitute for basil in home-made pesto, or as a simple salad or garnish. Young alexander shoots are commonly found in coastal hedgerows in winter months, but were originally Mediterranean plants that the Romans used as a forerunner of celery and asparagus. The stalks are great chopped-up and fried in a little butter and topped with parma ham (take care with Umbelifiers though and make sure you have 100% ID, as there are some deadly members in this family).

Carrot Flapjack
There are few better uses for the last couple of carrots in your veg box. These very easy savoury flapjacks are good to make with children – and excellent snack or lunchbox fillers. Add in some sesame or pumpkin seeds, or a little grated apple for sweetness. These also freeze brilliantly, so make a double batch and keep some safe for another day.
Ingredients
Serves 6
• 150g rolled oats • 175g carrots, finely grated • 175g cheese, grated • 1 egg beaten • Pinch of mixed dried or fresh herbs • Small knob butter • Salt & pepper
Method 1.
Preheat oven to 180°C/Gas 4.
2. In a bowl mix the oats, carrots, cheese, egg and herbs well. Season and press into a 20cm square flapjack tin that you have base lined with baking parchment. 3.
Dot the butter on top. Bake for 25 minutes in the oven until set and browned.

Catherine took over management of Flower Fayre three years ago when a new owner bought the building. It made a lot of sense for Catherine to get stuck in – she’d been helping out at the florists since the age of 11, sweeping the floors for her aunt. Catherine once tried to head away from floristry – “I did have a two year gap after a mad moment when I was 18 and wanted to explore what else was out there, and I worked a few temporary jobs.” Her friends and family were convinced that her skills were wasted, and she headed back to Flower Fayre when the management opportunity arose. Shortly after taking over she arranged a complete re-brand. “We had a complete new and fresh look which I believe was an important step to take the business to where it is now.” Her wedding sales hit the roof last year, and PBN helps her to continue growing the business. “PBN has worked fantastically, I joined three years ago and I would never look back. BUSINESS PROFILE Ashley Smith took over H.M. Williams Chartered Accountants last year. We speak to him about how he got to where he is today and his success so far.
Ashley started out working in a petrol station after he completed his A Levels, and found an advert for a trainee accountant in his local paper where he lived in Cornwall. Having helped his self-employed dad with his books growing up, he was already good at maths and thought, “Why not?” “So I found myself just before the really busy tax return season – I joined at the end of November – going to this little village practice. The boss was already playing catch-up during a really busy time due to one of his employees being off work, and there were only two people at the practice.” “I rolled up and he sat me down and explained how it all worked. The role encompassed reception as well as taking bookings for the upstairs practice which was a natural health clinic, which is a little bit different. It was quite useful to head up there the day after the Christmas party!” Although Ashley had done bookkeeping before, he learnt a lot on the job. His first learning curve was to understand the
handwriting of an accountant, which is typically a bumpy scrawl across the page. “It was like learning another language, but after six years there I could read it perfectly.” Being based in Cornwall, the location occasionally proved difficult. “We were at a particular location in Cornwall on a hill, where if there was heavy rain the leaves would clog up the drains in the car park. The neighbours would help to try and unblock the drains whilst I was in the office trying to block the water from coming in!” Over time, Ashley worked on more accounts with more responsibility, and found himself looking elsewhere for a new challenge. “I walked into the office to the same faces and realised that I wanted something more interesting, which is what led me to a bigger firm in Truro. I was there for three years and I dealt with bigger clients and started going out to their premises.” By this point, Ashley had decided that he’d like to run his own firm one day and, not ready to get comfortable, he checked out the commute from his Cornwall home into Plymouth – it would take the same amount of time as his commute to Truro. He started looking into accountancy firms in the city and landed himself a new role in 2007. “I got a job here at H.M. Williams. Hugh [business partner] was in his early sixties and Tim, the other partner, was only a

year younger than Hugh. I took the job with the view that if I was good enough I would step up and go from there.”

Ashley commuted across the Tamar Bridge for a few months, but anyone who regularly makes that journey will know how tiring and mundane it can become. His wife found herself a job in Plymouth and they commuted together for a while before deciding to move into the city. Because Hugh went to Eton, H.M. Williams isn’t your normal ‘run of the

mill’ small firm. As well as dealing with small businesses I have dealt with former cabinet ministers, large landed estates and Lloyds underwriters. Hugh started the firm after buying a farm near Tavistock. He started to help a woman there with her taxes, as well as assisting his family members, and over time learnt enough to enable him to open H.M. Williams in 1973. Much later, his business partner, Tim, retired in 2013 and Ashley took his place as partner with Hugh. Hugh then went on to retirement and Ashley bought the business to take on as his own. He’s proud of the ethos behind the company and plans to continue its growth. “The practice has always been a case of trying to look after the clients – we’ve got a couple of consultants which enable us to deal with cases much bigger than you would find in a normal practice of our size – but it’s trying to be a friendly and approachable bunch of people that build up a relationship with clients.”

Ashley also cares a lot about supporting local charities. Their nominated charity of the year is Jeremiah’s Journey, so they do what they can to raise funds and awareness for them, and he also works with Twelves Company in Plymouth. Ashley is also a trustee of the Plymouth Round Table charity, which has helped a number of local people – for example, a child who had cancer was being looked after at hospital in Bristol, so they offered money to the parents to help them cover their travel from Plymouth. They were incredibly thankful. Ashley also joined the Plymouth Round Table, of which he is the current chairman, after meeting someone involved with

The organisation raises money for local charities and gets members involved with a lot of social events, including two 10K races a year in Plympton and travelling around on the Santa Sleigh at Christmas to collect donations, plus he has also managed to squeeze in a few trips abroad with them, one being the Venice carnival in 2015. For now, Ashley is looking to progress the business further and push the H.M. Williams name. This seems to be going well for him so far, after being listed on this year’s The Times Top 200 Accountants in the UK. This is down to great reviews left by his clients on the website VouchedFor.co.uk. “You build strong relationships and it pays off!” “I think it’s all about raising a profile, although we’re a small firm we do things properly,” Ashley explains. We hope that things continue to move forward for him, in the same way that his career has progressed over the years. He plans to network as much as he can to meet other business owners and potential clients, because, after all, “Plymouth does business with Plymouth.”

Reasonable needs – what is justifiable?

nne Shears, a Solicitor with The Family Law Company in Plymouth, looks at the way reasonable needs are considered during a divorce. By Anne Shears In a recent judgment, Mrs Justice Roberts awarded £53 million to former supermodel Christina Estrada, who was divorcing her billionaire husband, Saudi businessman Sheikh Walid Juffali, after a 12- year marriage. To date this is the largest ‘needs award’ made by an English Court. The Judge made it clear that this division of the finances was to meet Ms Estrada’s reasonable needs. Taking into account her own resources, Ms Estrada’s settlement is valued in the region of £75 million. A lump sum payment of £53 million may seem incredible to most people. But to give some perspective, it is reported that Ms Estrada’s solicitors were of the view that her former husband is worth £8 billion, although Mr Juffali’s position was that his worth is in the region of £113.8 million. The judge said Ms Estrada described their lifestyle as ‘magical’. The BBC
described how she included within her statement of income needs a requirement in excess of 1m a year for clothing. Her list includes: • £40,000 a year for fur coats • £109,000 a year for haute couture dresses • £21,000 a year for shoes Generic application of the judgement Whilst Ms Estrada’s list may seem extreme and the circumstances of this case are far from standard, such a judgment can be applied to those of us with more moderate finances. In most cases there will only be sufficient financial resources to consider the most basic needs, but this can result in it being justifiable for the Court to depart from a straightforward equal division. In all cases the Court will be looking to divide finances to meet both of the parties’ requirements. Generally these are that they both need suitable accommodation and an income. The needs of children are always the first consideration of the Court. The needs of the parties are not looked at in isolation – the Court will take all the circumstances of the case into consideration including the standard of living enjoyed by the family before the breakdown of the marriage. In looking at each party’s need for accommodation, the Court will also take into account any children including their ages and where they are likely to spend the majority of their time. On occasion there will only be enough money for one parent to house with the children and in those circumstances the housing needs of the children will be considered over those of one of the parents.

Have Fun with the Family on Rainy Days It’s August and we’re hoping for the sun to shine throughout, but of course, we’re prepared for a few days of rain. The kids are off school though and you’re going to need back-up ideas for when the weather is too miserable for them to be running riot outside. Here are a few things to get you started…
National Marine Aquarium
Take a Drive
Head into the depths of the aquarium where the weather outside doesn’t matter. They have plenty of activities on for kids throughout the summer, so even on nicer days it’s worth a visit to keep little ones entertained. Remember that your tickets allow you re-entry for one year, so keep hold of them for the colder months when you may want to visit again!
Bad weather means the roads along the coast will be less busy, so pack up the car with drinks, snacks and sandwiches and head out for a drive. There are lots of places in Cornwall to park up and admire a beautiful view, regardless of the weather, and there’s nothing cosier than sitting in a warm, dry car while the rain comes down. It certainly wastes a few hours!
Home Bake-Off If the weather outside isn’t particularly summery, fill your home with the smell of bread and cakes and get the kids involved. Plymouth City Library has plenty of cookbooks to choose from, or search for recipes online. If you’re feeling confident, aim to make a range of sweet and savoury and throw a picnic on the living room floor afterwards to eat your creations!
Head for a Swim Although the weather might stop you and the family taking a dip in the sea or lido, Plymouth has a few places you can head to if you need a fitness-fix. The Life Centre might surprise you with the amount of activities they have on offer, with a climbing wall and tennis as well as their Olympic-sized pool, and other pools are based at Marjon and in Plympton.
Home Cinema Some planning and prep will get the kids very excited for this. Rent or buy a film and draw up posters (crafty kids can help) for it and pin them up around the house announcing the time of the film showing. Come up with some fun cinema snacks and pop your own popcorn, before switching off the lights in the evening and getting seated on the sofa.
