hris and James Tanner are the talented and well-known chefs behind The Barbican Kitchen, which celebrated its 10th anniversary this year. Situated within the Plymouth Gin Distillery, their menu showcases stunning local meats, vegetables and top quality fish. To take the stress off your Christmas food plans, the pair have offered up their top tips and ideas for preparing a festive banquet or organising an unforgettable party. Take note, and you might even find yourself with time to put your feet up and enjoy the festivities!
How to plan a festive party to remember: Barbican Kitchen co-owner and Chef, Chris Tanner shares some quick tips for a fun-filled festive get-together. •
Cut yourself some slack by being prepared. Plan the menu, make sure the different dishes work together, buy and make it ahead of time, accept offers of help – and don’t spend your party stuck in the kitchen!

Balance festive favourites (like mince pies) with other more modern dishes. The trick to a stress-free party is to keep dishes simple, but have plenty for everyone. If in doubt; bulk out your menu with crisps, bread and salad.
•
Consider the style of the party. Is it a sit down meal or a buffet? Will you have an array of canapés positioned round the room or will someone serve them? Deciding the type of party you want to hold and number of guests, will help you plan the right dishes.
•
This is the time of year when local producers pull out all the stops. Specialist meats, cheeses, chutneys, pies and cakes are a great addition to a party – and support local traders too.
•
If you choose a party with finger food, keep canapés small. Either make them easy to hold, or serve on spears or spoons. Have plenty of napkins to hand, scattered around the room!
•
Make serving up even easier and get platters and bowls ready, use Post-Its to indicate what dish goes where. Be creative if you don’t have lots of serve-wear; use small jugs for slices of crudities, canapés on tiered cake stands, fruit bowls for salads, chopping boards of bread.

Don’t forget to ask if guests have dietary requirements. Vegan, vegetarian, gluten-free and dairy-free is easy to plan for, but not much fun for anyone if you discover it at the party. Avoid a sea of beige food! The festive period is a riot of colour and fun, so bring this to your food with vibrant colours, like a beetroot dip sprinkled with goat’s cheese. Generally more savoury options are needed to fill guests, with a couple of sweet options to follow.

Don’t forget the drinks! Warm mulled wine or cider creates an amazing smell and adds to the atmosphere. Chill other drinks in advance and then keep in ice filled buckets. Cold weather means the back doorstep is a good back-up if you run out of space in the fridge!

P
reparing Christmas dinner is no small feat, with multiple family members and tastes to cater for. For many of us, there would be nothing nicer on Christmas Day than enjoying a glass of fizz with friends and family, but instead we are stuck in the kitchen peeling carrots and boiling potatoes, whilst wondering if it is possible to somehow make the oven bigger to fit the sheer amount of food in. All of us have been there, and we silently swear to be ‘better prepared next year’. It doesn’t have to be that way, and with a little preplanning and creative use of freezer space, the chaotic Christmas can be a thing of the past and you don’t need to set your alarm for the crack of dawn. If you are like me and prefer to spend time relaxing with your family on Christmas Day, then start preparing for the big day now.

Order ahead: Most supermarkets and suppliers will soon be, if they aren’t already, promoting their Christmas order times, dishes and produce. To avoid the panic filled aisles the week before Christmas, start making your orders now. This might also give you a choice from the best produce available, and not the last, sad looking turkey or wilted vegetables.

Don’t delay the cooking: There are lots of dishes which can be cooked now, with some even tasting better with the extra time. Your Christmas pudding can be made now, and if kept in a cool, dark place, will mature nicely. Gravy can also be made in advance and frozen, with the juice from the turkey added just before serving. Stuffing also freezes well, and if made in an oven dish, can simply be popped in to cook on the day. Obviously there are some things which taste better if made from fresh, but you can still ensure you have a head start with a few simple tricks. Peeling the potatoes a few days in advance, boiling your sprouts and parsnips the day before, as well as making the Yorkshire pudding batter will significantly lessen the load.

Keep it simple: Don’t tackle too much at once! Remember, Christmas Dinner is just a roast, with a few added extras. Don’t try to make elaborate, new dishes which haven’t been tried and tested. This will give you more time to make sure your dishes are perfect, such as increasing the likelihood of your potatoes being crispy and the turkey being moist. But for those of you who want to be a bit creative, simply put a new twist on traditional favourites. For instance, honey roasted parsnips with pancetta and red onion, sprouts with chestnut and orange, or even garlic buttered savoy cabbage – all involving little effort, with just a few extra ingredients!

Be organised: Nothing is worse than having no freezer or fridge space, make sure you clear enough space for all your food prep in the lead up to the big day.
An age old saying, but one that is still true – ‘preparation is key’. Be organised and start marking lists of things that can be bought in advance, as well as rough timings of when to cook what. Don’t leave it all to the last minute, or you will miss out on the festive fun, and spend the majority time in the kitchen with sauce in your hair, as well as feeling exhausted. A well written list, and a rough schedule will likely mean the difference between a hot lunch, and a host of hungry guests.

Christmas Eve: For those of you not racing round the house trying to put the kids to sleep, make sure you do all the last minute prep the day before. This includes weighing the turkey and working out its cooking time – this will determine when you will eat, so needs to be right! Another tip, if a bit obvious, is to make sure all your frozen food is out of the freezer and defrosting. Then pour yourself a drink! Finally, don’t forget to leave out a mince pie and carrot…

When choosing a tree, pick it up a few inches from the floor and drop it onto its stump. A freshly cut tree should hold onto its needles.

Keep cut trees topped up with water to stop them from drying it. Some trees will need watering daily.

olistic therapy has fast become the sought-after treatment in the UK and is a growing industry around the world. These treatments aim to treat a client as a whole, rather than being separated into different parts which do not interconnect. Bowen Therapy consists of gentle rolling motions on the skin or through light clothing, on precise points of the body, to effectively resolve longstanding problems that a GP might not be able to assist with. Bowen Therapy works on something called fascia, which surrounds and holds our muscles. Until around 2007 it was little known in mainstream medicine. In fact, it was thrown away in the dissection bins, but now it’s been realised that it plays an important part. “In many respects,” Austin explains, “We are at the forefront of medical and anatomical change.”
To help people understand what he does, Austin tends to relate the therapy as,
“Chiropractic without the crunch.” He admits that it’s technically incorrect, but it’s often the easiest way to explain it. Austin specialises in whiplash, frozen shoulder, migraines and back pain - this is because Bowen is particularly good at resolving those issues and it’s considerably gentler than Osteopathy or Chiropractic treatment. People of all ages can benefit from the treatment – Austin’s youngest client was just five weeks old, and his oldest was aged 97. Life before Bowen was indeed very different for Austin. He worked as a professional photographer travelling the world and spending time on cruise ships. Eventually Austin met his wife Sally in Vancouver, and he had hopes of becoming an underwater BBC cameraman. Having already dived around the world, Austin trained to become an industrial diver at Fort William, and he had his first professional underwater diving job working as a rescue diver on Plymouth Sound. One day he was keeping an eye on a group of diving students, when he spotted one of them trapped in a riptide at 120ft. Austin managed to pull the student to safety but he then became trapped in the dangerous current and almost needed rescuing himself. The scare was enough for him to question his hopes of becoming an underwater cameraman - he very nearly died. As a result, he went back to photography which involved a lot of hand colour printing. Austin managed to convert a room in his house into a dark room (back then colour printing required total darkness) but digital printing soon took over and Austin lost interest in his working hobby.

After weighing up all his options Austin took the bold decision to move to Germany with his wife to work with the US military. The couple were considering making it a permanent move when the Iraq war broke out and the bases were all sealed off. Austin and his wife packed up the car and got themselves back to the UK where he started working for a software company, but he soon fell ill. “I had ME for about four years, but this was before ME was acknowledged as a problem, and the NHS couldn’t work out what was wrong with me,” Austin explains. After many tests he was sent a letter from the NHS explaining that they would not conduct any further tests and that perhaps his symptoms didn’t really exist. Extremely frustrated with this outcome, Austin decided not to give up and to try something new, so he gave complementary therapy a go, even

- BOWEN THERAPY DEVON though he had previously admitted that he didn’t believe it would work. “Someone I respected suggested I try something called Kinesiology, which is muscle-testing. For whatever reason, I didn’t care whether it was a placebo or real, this person wiggled my arm for about half an hour and I thought, “You must be joking?” But then he told me that I have mercury poisoning. He gave me some herbs which bind to heavy metals. I was extremely sick for three days and then, to my amazement, I was cured. I didn’t care whether it had evidence behind it or not, the fact is, he managed to find a way of making me better when no-one else could.”

Austin began to investigate further into these therapies and soon learnt about other therapies on offer, which is where he came across a technique called ‘Bowen’. At the time there were only two practitioners in the South West, and after a lot of learning and research, Austin became the third in 2004. “In the medical world there was a lot of talk about certain things in anatomy that needed to change, that hadn’t been looked at in about 500 years. The director of the European College of Bowen Studies happened to meet a guy called Gil Hedley in the States, and he was at the forefront
of this. I was one of the first 16 people in Europe to be involved with a totally new way of dissecting the human body at Imperial College London.” Austin has always taken a very practical approach, continuously studying and conducting at least two dissections each year to learn everything he can about the human body. This year he completed his Master’s degree in Athletic Therapy. “When I use the term holistic, it means looking at the body as a whole. It might hurt in one area, but the tension could be elsewhere. We look at the source of the problem, rather than where it hurts. To bring the body back together again, we tweak the entire system. If one part of the body is damaged, the rest of the body will change to accommodate that damage. For example, a painful ankle will make the entire body move differently as the person walks, putting strain on other areas. Our body will distort to compensate. “Everything is connected. The problem with mainstream medicine is that we’ve become so detached with an understanding that everything is separate, we think that somehow our psychology is separate to our emotions or from physical problems, and yet if you’re angry about something you might grit your teeth. You’ve converted an emotion in your head to something physical. If you feel angry for long enough those nerves in your jaw will become inflamed, and you’ll give yourself earache or headache. Everybody can understand that.”
Because of this, Bowen needs to be accompanied by a positive, healthy lifestyle for the best results. This involves looking at what people eat, the job they do, the stresses they are under and the lifestyle they lead, but most of all making sure that they fully understand the therapy they’re going to receive. Austin appreciates the time he gets with his patients to learn more about them, unlike a GP who might only have a few minutes to learn about a problem. “Bowen is not a magic pill,” Austin explains, “If someone sees me I want them to understand that it’s a process that might also involve exercise and better nutrition.” As for the sceptics, the Bowen Technique may not be for everyone, but had one particular sceptic not tried an alternative therapy for his ME, he may still be suffering today. PLYMOUTH’S BEST BUSINESSES We last spoke to Karl Welburn of Print, Copy, Scan in February this year, and a lot has changed since. As 2016 draws to a close, he has a bigger team, a better office, and more drive and determination than ever, as he tells us about his latest accomplishments and goals for the future.
S
eeing deer wander past your office window would, for many people, be a real treat. For the team at Print, Copy, Scan, it’s a daily occurrence. As I drive into the car park of their new offices I see two small deer scamper past me before scurrying up the hill in Dark Lake Park, Darklake View, Estover.
PCS has just opened its new headquarters here and it’s a very impressive building covering two floors. Our photographer, Tom, is quick to describe it as ‘luxurious’ as I settle myself into a ‘comfy’ area in the corner of the main office – complete with an array of cyan, magenta, yellow and black chairs circling a table. A coffee machine nestles in the kitchen area and we’re treated to a very tasty cappuccino.
The new HQ is double the size of their old offices and it’s provided new energy for the team who make the business a success. Before settling down with Karl, I have a quick chat with Jeff Wright who looks after the company’s stores – ensuring any one of a large number of toner cartridges and printers can be quickly dispatched to an awaiting client. Jeff’s role is a crucial one and it quickly becomes clear the key to PCS’ business success is Karl’s ability to choose the perfect mix of people to make the company possess a formidable team of highly motivated professionals.
Karl’s passion for helping other people is a key part of his business.
Chatting with Karl, it becomes clear he is happy to go further afield to find the perfect candidate. He recently employed Stuart King to help the firm with its increasing workload. Stuart hails from London but was the closest person Karl could find who possessed the perfect mixture of talent, drive and technical knowledge to ensure the business could continue to expand and work at its optimum best. My first impression of PCS’ new HQ is, simply, ‘wow.’ The building is certainly impressive with its array of solar panels, LED lighting and, of course, photocopiers and printers. All of them are at the cutting edge of what is being produced and come with strong green credentials – something which is vital in the context of a more environmentally aware world. “It’s all about sustainability,” explains Karl. “All of our Toshiba photocopiers are carbon offset so it makes sense to fit into the ethos

It’s been nearly 12 months since I last met Karl Welburn, director of PCS. It’s been a very eventful time for the company - and for the entrepreneur himself.

It’s not just Karl who has this philanthropic gene. His sister, Clare Welburn, ran the London Marathon for Alzheimer’s Research and raised a staggering £5,000 for the charity. Locally, Karl and a small team from the Plymouth Round Table, drove across Europe to raise £2,000 for Jeremiah’s Journey. The company also sponsored the Boxing Heroes event at Plymouth Pavilions (which was enjoyed by 600 people).

AND ENTREPRENEURS At the start of 2016, the company employed 12 people but, today, it holds a contingent of 16 (which includes the office dog, Ozzie). The Bichon Frise often happily trotters into work (with what appears to be the intrinsic goal of knocking over bins to try to find tasty titbits)! The team should reach a magic milestone of 500 clients by the end of the year. Sheer hard graft has been behind its phenomenal success since PCS first started in March 2010. “There’s no easy way of doing it,” says Karl. “It’s just a case of knocking on doors to find that needle in the haystack. The more doors you knock on the more clients you find. “It’s our service which sets us apart from the rest, anyone can knock on doors but, compared to our competitors, we have more engineers for the number of machines in offices. It means we have a faster response time than many of our competitors.

high spec copiers in our own office so it gives us all the chance to ensure we’re personally up to date on developments in the industry. “As the company grows and becomes better known we find we are being invited into bigger contracts and tenders - but the important thing to remember is our roots. We always look after all our clients. “In this part of the world, the small firms are heavily involved in ensuring the success of the bigger companies. As such, it’s about the quality of service we provide for these teams and the pride we take in installing and maintaining their equipment.” And it’s the teams pride in their work which wins them the accolades of their customers. They go to the nth degree to make sure their service is outstanding (Karl even worked on Boxing Day one year to fix a copier for a client). With such dedication, the team’s reputation is fast seeing them as the Number One copier supplier in the region - with the aim of signing up a total of 500 clients within sight. “My younger self would be happy with what I have done. It’s all been down to solid hard work and graft but I haven’t lost touch with my inner soul. I bought a caravan three years ago in Newquay and it’s good to go down there with my wife and two children to relax at weekends. It’s a special place as it’s only 45 minutes from home.” Last time we met, Karl talked about the importance of achieving the right worklife-balance for being able to operate successfully in the business world. He explained to me one of the keys for entrepreneurial success is ensuring you’re always fresh and energized. If you’re tired, it means your judgement can become clouded. As such, Karl enjoys cycling and shows me a photograph of a

beautiful red and yellow Klein mountain bike which he has just bought. They stopped making them some 20 years ago and, for Karl, its vintage is the prime attraction. “I’m really into my cycling and love retro mountain bikes as they allow me to remember what it was like to ride them when I was a kid. “It’s good to engage with the old fashioned technology and it reminds me of going all over the Moors when I was younger and it’s great to be able to recapture that adventurous spirit.” It’s perhaps this same adventurous spirit which once served him well as a youngster that now serves him well as one of the city’s leading entrepreneurs.

Makes 8
500g pack shortcrust pastry Plain flour, for dusting 250g/9oz shredded leftover turkey 8 tbsp double cream or crème fraîche 8 tsp cranberry sauce 1 egg, beaten
Method 1. Roll out the pastry on a floured surface so that it’s just thinner than a £1 coin. Cut out 8 x 10cm circles using a pastry cutter or small saucer, then cut 8 x 9cm circles for the lids – you may need to re-roll the trimmings. Push the larger circles into 8 holes of a muffin tin, then divide the turkey, cream and cranberry sauce between them. Season well and brush the edges with a little egg. Place a lid on top of each and pinch the sides together to seal. Chill for 15-20 mins. 2.
Heat oven to 200C/180C fan/gas 6. Brush the tops with more egg, then bake for 25 mins until the pastry is crisp and golden. Serve warm, or leave to cool and enjoy cold.

PRESTIGIOUS AWARD T
he Herald City & Waterfront Awards 2016 were presented at Plymouth Pavilions in October and Radio Plymouth won the Best Professional Services category. Arguably the biggest night of the year for the city’s businesses, it was a glittering night that was hosted by the Herald’s editor Paul Burton and former Apprentice contestant Brett Butler-Smythe. Tim Manns, managing director and drivetime presenter, led the Radio Plymouth team onto the stage to receive their award from sponsor Redrok’s David Williams. For once Tim was lost for words! He soon recovered though and paid tribute to the team of people who work at the Hoe-based commercial radio station.
I firmly believe this group of people is the most talented and hard-working I have known. It is a real privilege to be a part of this radio station and it was an honour to accept the award on behalf of them all.” There were awards for various individual and company categories, all of which were well-deserved and graciously received by the winners, with one category in particular raising the loudest applause. This was for the Lifetime Achievement Award that was given to Walter Combstock. Wally is owner and managing director of the Duke of Cornwall Hotel and a video was shown to those at the awards ceremony explaining how Wally and Jonathan Morcom completed a management buyout back in 2001 with two other Directors at the time.
On the 7th December 2016 they celebrate 15 years of ownership, but Wally’s history with the Duke goes much further back. At just 17yrs old Wally stepped into the hotel for the first time, as an apprentice Electrician, eventually being promoted to Maintenance Manager and then finally Buildings and Refurbishment Manager. Over the years he has played many parts and there is no one who knows the hotel better. Every room, corridor, cellar and lift shaft (!) he knows like the back of his hand and his love of the building runs deep. At the end of the evening Tim and Wally shared a few minutes of mutual congratulation and afterwards Tim said, “I can’t imagine there is a more deserving recipient of a Lifetime Achievement award. I am really thrilled for Wally.”

BUSINESS PROFILE The Reluctant Salesman – Creating the freedom to sell. We speak with Martin Miller about how he’s pulling apart the stereotypical, pushy salesperson image, and how life events and experiences have shaped his career path and the way he works today.
T
he Reluctant Salesman is based on the principle that selling is a life skill, not a business skill. They believe that selling is fundamentally simple, and they hope that with their training, businesses and employees will understand that too. Martin puts it simply: “We deconstruct the thinking behind what it is to be a salesman, unpacking the principle that people love to buy, but hate to be sold to. If a customer is buying and I’m selling, then we both want the same thing. Once you remove some of these preconceptions and preconditioning, we start to work through it.” The Reluctant Salesman was founded by Terry Mullins and Martin is his first franchisee, covering Plymouth and north Cornwall. It’s Martin’s background, personality and life experiences that have shaped his career and got him to where he is today.

Martin started his working life as a hairdresser. He explains, “I was sent to a services boarding school and was expected to go into the Navy, but I didn’t want to, so I did the complete opposite. I studied A-level art at sixth form and was only interested in creative endeavours.” A casual conversation with the family hairdresser offered him an opportunity and Martin started work at a salon, building up his experience and portfolio over the following years.
“I quickly realised if you want to be good at something you have to really push yourself, so I decided to go on the competition circuit. I ended up winning competitions in Cornwall, then regionally before qualifying for the British Nationals.” Despite his success in hairdressing, a trip abroad was the catalyst for change. “So I went back to my salon that I was

managing at the time and handed my notice in. I think I was disillusioned with being an employee. I don’t necessarily think it was the profession, I just knew I had to make a move.” Following that departure Martin’s previous clients approached him, so he then started working freelance. His clientele grew rapidly and he provided a range of services including photography session and wedding work. While this was happening, Martin met Rebecca who would eventually become his wife, mother of his children & business partner. “Then in 1998, I stumbled across an opportunity to capitalise on the deregulated utilities residential market. Early indications was that it was well received, so myself and my wife started building that up and running it alongside my freelance work.” The business was going well for the couple, but in 2001, Martin went through his most painful life experience. His best friend committed suicide, and it was Martin who discovered him. “Now anything in my life, apart from my children passing before me, can’t be as bad what I found that day.” It was his darkest moment, but with so much going on in his life, he used the experience to better himself as a person to create the life he wanted. In 2002 the couple bought their first property for renovation. “I liked the idea of project managing while we were building our business. Then in 2003 we

got married and a year later had our first child, Fraya.” In 2006 Martin and his wife bought their next renovation property and had their son James, and Martin started his NLP journey, becoming qualified as a practitioner that same year. Since that time he has continued to build on that foundation for continual self-learning. It was in 2007 that Martin experienced his first major learning curve in business. “I was approached about a business that I thought looked good – it was to do with a product that went into the licensed trade. I decided to invest but ended up discovering the guy was a con-man. I now know what the word litigation means & what it costs!” Martin learnt from this mistake, regrouped and a few years later in 2013

Unfortunately, the work-load and the stress took its toll on the couple, and after 21 years together, they decided to go their separate ways.
A lot of people might describe a salesman as being ‘pushy’, but The Reluctant Salesman teaches that it shouldn’t be this way. “It’s all about timing, when someone is ready to buy, they buy. We talk about making selling simple and creating the freedom to sell.”
Having watched Martin over the years, in the way he handled businesses, people and projects, Terry decided that he would be the perfect franchisee at The Reluctant Salesman. Martin took him up on the offer. After doing some support training with Terry and seeing how his experience and knowledge could help others, he found that he felt so at home in the training & coaching environment, his decision was set in stone. “We mainly focus on in-house consultancy training & coaching work and we occasionally run workshops, but what we’re finding is working really well is working with in house sales & customer service teams. I like working

Sometimes Martin’s asked if working in business is hard, but it’s his life experiences which have helped him to put problems into perspective. He believes business is the best arena to test yourself & to realise your true potential. “It’s not for everyone, but if you don’t try, you’ll never know,” Martin states. Over the years he has challenged himself in his free time – he’s served a four-year term as a governor at his kid’s school, he’s restored a couple of cars and a motorbike, done a season of stock car racing, been in a punk band
(in his youth!) and taken part in two skydives for charity, one of those was for the Ronald McDonald Foundation, which helped put him and his wife up near Bristol Children’s Hospital when their eldest child was rushed into care with pneumonia and septicaemia back in 2004. They were told that she might not make it through the night, and it’s the moments like this that have kept Martin grounded and focused on his priorities in life. It’s time now to look ahead and focus on what’s to come. Martin tells us, “I’ve worked for myself for over 25 years, and I’m hungrier now than I think I’ve ever been. If you’re not moving forward, you’re moving backwards, because life these days is like a conveyer belt.” “We use Ontology, the study of being, and that’s the founding principle of what we do. It focuses on who you’re being rather than what you’re saying. In this more consciously aware world and environment that we’re in, there are a lot of people who want to know the real you, so be honest, be genuine and show up.” Just a simple phone call can start something new and spark ideas, and for Martin, picking up the phone is a sign that someone is receptive and wants to move their business & life forward. He says, “Most moments of change in our life start with a conversation, you don’t know where that conversation’s going to go, but it has to start somewhere.” Martin finishes by saying, “I’ve realised over my years of work that everything I’ve done to date was to challenge what I can do and how I can grow. Why Smart People Make Big Money Mistakes By Mike LeGassick
W
ith Christmas nearly upon us, I thought I would write about some common money mistakes we have all made. These annoying financial faux pas can be costly if we fail to recognise them. Welcome to psychoeconomics. This emerging field is based on the principle that all financial decisions are influenced by seemingly irrational psychological tendencies. Left unchecked, such tendencies can lead even the brightest financial minds to make costly mistakes. Mental accounting refers to the tendency for people to separate their money into separate accounts and put different values to them based on a variety of subjective criteria, like the source of the money and intent for each account.
Imagine you are about to purchase a new lamp for your living room for £100 and as you are about to buy it, you realise that you can buy the very same lamp a mile down the road for £75. Would you walk the mile to make the £25 saving? Now imagine you are buying a new kitchen for £6,000 and, once again, as you are about to purchase, you realise that you can buy the same kitchen a mile down the road for £5,975. Would you still walk down the road to save £25? If you walked the mile to save on the lamp, but couldn’t be bothered to walk to make the same saving for the kitchen, then this is irrational behaviour. You have simply compared a 25% saving on the lamp compared to a fractional saving on the more expensive item, however, it is still a £25 saving on both items. We fear loss more than we should. Imagine you’ve been given a free ticket to a football match. At the last minute, a sudden snowstorm makes getting to the stadium somewhat dangerous. Would you go? Now, assume the same game and snowstorm, except this time you paid handsomely for the ticket. Would you go? Most people are more likely to risk their safety in the snowstorm if they paid for the ticket, but from a strictly economic point of view, that’s irrational. In both scenarios, the choice is the same -- to use the ticket or not. Two human tendencies come into play here. The first is sometimes called the sunk-cost fallacy, meaning that having paid for an item or service can make us overly reluctant to waste it. In the case of the football game, a person who paid for the ticket is more likely to view missing the game as a “waste” than the person who was given the ticket. That’s
irrational because the fact that you spent £100 shouldn’t matter when you decide between the reward of seeing the game and the risk of getting killed. The second tendency is loss aversion, or the idea that people place about twice as much significance (called utility in economics parlance) on a loss as they do on a gain. In other words, people become twice as unhappy about losing £100 as they become pleased about gaining £100. When Do You Use Mental Accounting? How can you know if you are more likely to be affected by mental accounting? Here are some clues: • You don’t think you spend, but you have trouble saving • You have savings in the bank, but your credit cards aren’t always paid off • You spend more with credit cards than with cash • You’re more likely to spend your tax refund than your savings on a new iPad Things You Should Know about Mental Accounting: We have a tendency to value money differently depending on where it comes from. If you win £50 in the lottery – considered “found” money – you’re more likely to spend that spontaneously on garbage than the £50 you earned from your job. If you get a tax refund, you’ll run out and spend it instead of saving.

Mental accounting tells you that £500 compared to the cost of the car isn’t that bad, but if you want to buy a washing machine for £250 and they say it’s now £500 do you buy it? No. Mental accounting tells you that’s ridiculous, it’s double the amount and yet it is the same £500 we are talking about. We just perceive it differently and justify our decision mentally. Plastic equals fake money: It sounds like the oldest most overused money trick but it still holds true – people do spend more with credit cards. When the weight of your wallet doesn’t change, you are less likely to think you’ve really spent anything. It hurts handing over £500 cash from your wallet, but doesn’t when you hand over the plastic until the statement comes in with the interest added. So be careful with your spending this Christmas and be mindful of these mistakes. I wish you health, wealth and happiness and a prosperous New Year!

Myth-busting for unmarried couples David Cobern of The Family Law Company considers the law and unmarried couples.
T
here is a myth that people living together in long-term relationships become ‘common law’ spouses with similar rights to married couples. In fact, living with someone, even long term, results in a very different legal situation. Disputes between married couples are dealt with by law prescribed by Parliament. The courts have powers to adjust assets and income to achieve fairness. Lawyers can advise married clients about outcomes with reasonable certainty.
Inheritance: Cohabitees’ claims on death are more limited than spouses. A spouse will inherit from a deceased partner where there is no Will. Unmarried partners do not inherit in this way – and this can have serious implications. Be prepared
Parliament has declined to extend this regime to the unmarried. Instead, unmarried claims are decided using a combination of civil legislation and previous cases, and outcomes are uncertain. For the client, it can be confusing and intimidating. Legal costs and risks are high. With a little foresight and some sensible precautions, much of this uncertainty could be avoided. Common disputes Property: Sometimes property is owned by one partner, but the other believes they have a share in it. If a property is jointly-owned, there may be disagreement about selling and dividing the money. What happens when one party excludes the other - or tries to? Children: Who should make financial provision for children such as maintenance, accommodation and school fees?

Selling has evolved and is no longer a skill solely exercised by a pushy Del Boy at the door or on the phone. Regulations as well as amendments to consumer and customer rights has meant that on a whole, the old style bully boy tactics have gathered dust in the sales industry cupboard. Certain industries, companies and areas of a business may require a particular selling style or tactic. And like any sector, with this comes a whole host of jargon and terminology.

This is basically a sales methodology which targets the ‘pain’ of a customer. It is largely based on diagnosing a problem and offering proposed services/products to solve this issue. Sometimes the problem may be complex, which means it may take several selling opportunities to solve the entire issue. Good sellers use positioning proof and ROI to reinforce the positive effects a solution can have.
Away from the busy hustle-bustle of the shop floor is the business development team, who focus on company sales strategy and look to utilise growth opportunities going forward. Planning a sales strategy requires an astute awareness of the industry, its future as well as its audience.
It’s not the prettiest or most ethical of techniques but the hard sell still exists. The hard sell is notorious for its aggressive way of selling, where potential buyers are manipulated, backed into a corner or sold lies in order to get a deal done quickly. If practised constantly the hard sell will soon slap a bad reputation onto a business.
Upselling/Cross-Selling This is all about taking advantage of a customer’s interest. It is a way of providing further services or products on top of what was bought beforehand. Upselling is used by a salesperson to try and get the customer to upgrade or buy a higher-priced item. Successful crosssellers are good at getting the customer to visualise the value of changing their mind. Cross-selling is an opportunity for the salesperson to sell more items or services to the customer. These can usually be connected to existing services or products which have previously been bought. Both upselling and cross-selling heavily involves intuition and listening skills, a technique which acts upon the understanding of what your customers may additionally need or value.

Instead of trying to get as many sales through the door as possible, business development considers long-term customer relationships where partnerships are truly valued and a more consultative approach is adopted. The main job of a business development manager would be to maintain key accounts (clients), upselling and cross-selling further services, as well as going out to form new client partnerships for future business.
Telesales This area of sales is entirely carried out over the telephone. Along with door-to-door sales, telesales is widely perceived as a bit of a nuisance. Coldcalling gives telesales a bad name, however, disturbing dinner time is not the only practise because telemarketers often work off ‘warm leads’ – customers who have previously bought goods, shown an interest or are signed up to a membership; people susceptible to upselling or cross-selling.
Other: Analytical – where they present data as evidence to support their selling. Nurturing – where rapport building and developing a relationship is key to eventually securing a deal. The Friend – where they genuinely want to get to know the customer, banter is exchanged and they pay attention to matters outside of business. The Tech – where they know every ounce of the product or service they are promoting. The Genie – where whatever the customer needs, the salesperson will be able to deliver.

All Wrapped Up If you’ve got a pile of Christmas presents but dread the evening you sit down to wrap them, read our tips and ideas to feel better prepared. Don’t forget to pick up selotape! Start wrapping early. Stock up on wrapping paper and wrap each gift as you get it, leaving decorative bows, ribbons and tags until later. At least if anyone goes sneaking about looking for presents they won’t ruin their surprise! Stock up on the supplies you’ll need and keep them all together in a bag or box. As well as wrapping paper, gather together bows, ribbons and tags, plus scissors and selotape, so that whenever you fancy a bit of gift wrapping it’s easy to find everything you need. Try assigning each person in the house a different patterned/coloured wrapping paper. It makes it quite fun when you’re searching through them on Christmas day morning and it saves the need for tags. Plain, brown Kraft paper can be an interesting choice for gift wrapping. It’s great for anyone who loves to decorate their gifts with ribbons, sprigs of holly or beautiful tags, but if this isn’t up your street, stick to patterned paper. The trick to neat wrapping is to use as little paper as required. If you’re trying to wrap something soft and light such as a scarf or shirt, fold it around a flat piece of cardboard to make wrapping easier. When it comes to wrapping paper, it’s usually not worth searching for a bargain. Cheap paper is thin and tears very easily – you’ll have a much better time if you’ve bought something of better quality. It doesn’t need to be expensive – wrapping paper sold by department stores is usually good value for money. Don’t be afraid to put a gift in a box if it’s too difficult to wrap. A box with a beautiful ribbon wrapped around it can look very stylish. Don’t try wrapping gifts on the carpet - it takes longer and creates wrinkles. Move onto a hard floor instead. As an extra gift, decorate your wrapping with a Christmas tree decoration. Tie it on with ribbon or twine, and give your loved one a decoration to keep for next year. If, at the last minute, you decide you’d like to jazz up the presents you’ve already wrapped, take a few clippings from the Christmas tree (a real one, of course!) and tie them underneath the ribbon for a festive touch. Try wrapping a small, light gift in a silky scarf and tie it to keep it secure. It’s a gift, wrapped up in another gift! If you’re making food gifts, such as truffles or shortbread, wrap them in celophane and then tie with a big, beautiful ribbon. Or purchase celophane bags from a craft store and decorate them however you like!
