The Message of Saint Valentine St. Valentine’s Day seems to be focussed evermore each year on couples expressing their love for each other. Old legends, however, tell us that this may not always have been the case...

A

ccording to research, approximately 150 million people exchange Valentine’s Day cards annually (Source: History.com). The tradition is believed to have originated from a mysterious Roman Saint Valentine - and there are many legends that depict who this mystery man may have been. As we know it today, St. Valentine’s Day traces back to both Christian and ancient Roman traditions. Archives show that several different martyrs were named Saint Valentine, or Valentinus, yet several historians also trace the origin of the day back to pagan times in the ancient Roman Empire. One legend speaks of the Roman priest

Valentine secretly arranging marriages of young men and women, defying Emperor Claudius II’s strict policies. When his defiance was discovered by none other than the Emperor himself, he was sentenced to death on February 14th 270 AD, named as a Saint after his death for his martyrdom and dedication to love. Another legend states that Valentine was an early Christian in Rome. During this time, the Roman regime disfavoured Christianity, yet Valentine continued to practise his faith. This enraged the Emperor, and Valentine was thrown into prison.

Silican Style Cauliflower Pasta Ingredients • • • • • • • • • •

Serves 2

200g fusilli or other pasta oil for frying & good olive oil for drizzling 1 small cauliflower, cut into even-sized florets 1 large garlic clove, finely chopped a good pinch of dried chilli flakes 25g pine nuts, toasted a small handful of sultanas zest of 1/2 a lemon, plus the juice, to taste bunch of parsley, chopped a handful of grated parmesan

Method 1. Cook the pasta according to the packet instructions. When cooked, drain, reserving a little of the water, and toss in a little good olive oil. While the pasta cooks, boil the cauliflower in salted water for 3 minutes, then drain. 2. Heat 2 tbsp oil in a frying pan. Add the cauliflower and stir fry for 3 minutes, until it starts to turn golden, then add the garlic and dried chilli to the pan and stir fry for a further 2 minutes. 3. Squeeze in a quarter of the lemon juice, season to taste and toss all together. Remove from the heat, then add the cooked pasta, parsley and half the cheese. 4. Toss to combine and add a splash of cooking water, if you like,

to make more of a sauce. Add more lemon juice to taste, drizzle with a little good olive oil and scatter over the rest of the cheese to serve.

OM reviews a Riverford Recipe Box... Knowing that all ingredients are 100% organic and are grown, made, handpicked and sold by the experts at Riverford, plus their achievement of Zero Landfill Status in 2013, gave us a clear conscience and made the food extra tasty. OM’s account manager Emma, who is a vegan personal trainer and a mighty good cook, made two of the recipes and brought them into work for us to try.

ur good friends over at the Riverford Farm in Devon kindly delivered to us one of their awardwinning, jam-packed vegetarian recipe boxes for us to review. In the box we received Autumn’s seasonal veg which included the likes of kale, fennel, squash, leek and cauliflower, alongside 3 recipe cards to make 3 delicious meals: cauliflower & cocounut laska, penne pasta with a mix of vegetables, and stuffed squashes.

First, we tried the penne pasta with fennel, onions, chopped tomatos, lemon zest and fine breadcrumbs. The mixture of flavours and textures combined perfectly to form a mouth-watering, hearty meal that is suitable for both lunch and dinner. Second of all we tried the cauliflower and coconut laska with kale and rice noodles. This unique dish is one that we will all certainly be trying again!

PLYMOUTH’S BEST BUSINESSES

D

etermination, drive and enthusiasm would be three words OM would use to perfectly capture the essence of Karl Welburn, Managing Director of Print, Copy, Scan. PCS is a Plymouth based company, which, as the name suggests supplies printers, copiers and scanners to hundreds of clients throughout Devon and Cornwall. The firm will shortly celebrate its sixth birthday and its rise has been down to a lot of hard graft by its team of 12. “My family have always been grafters,” explains 37 year old Karl. “If you work

hard then you will do well. If you’ve given it 100% then you will be fine. The team at PCS give it 110%.” His Gran would always tell him that it didn’t matter if he ended up stacking shelves as long as he put 100% effort into doing it. It’s a sentiment which has stood British industry in good stead for years. As Sir Henry Royce, one of the founders of Rolls-Royce once reportedly said, “Whatever is rightly done, however humble, is noble.”

His Dad struck an immediate deal with him: Karl had two weeks to find a job or go to work with him, on a boat, as a fisherman. A suit was duly purchased from Burton’s and the clock started ticking.

With its hard work “can do” attitude, PCS achieved a turnover of just over £1 million last year. An amazing feat by anyone’s standards, but, even more so, when you realise that, back when it started, in March 2010, Karl was pulling shifts as a pizza delivery driver just to make ends meet.

With a wife and a baby to support then it was a case of knocking on doors, delivering leaflets and remaining confident that business would grow. And grow it did. Today it has around 360 clients and it is continuing to expand towards the 500 mark.

That early streak of entrepreneurial determination quickly kicked in and Karl knocked on hundreds of doors in the space of a few days before being offered two jobs: one as a car mechanic and the other as a fixer of photocopiers.

At the age of eight, he saw his cousin at a

“passing out” parade for the Royal Navy. It became his dream to join up and to serve but, during training, he discovered that it wasn’t quite for him; therefore, he left.

His future boss summed up his options with a simple choice: “You can be a car mechanic anytime but when will you next have a chance to fix copiers?” And so the seed was sown. Karl started work within a couple of days and his boss would provide a tank of petrol for him, every week, to help top up his wages. That was back in 1995 and, at the age of 18, he had a company car, a phone card (to call the office from phone boxes having been paged on a bleeper) and a van full of service manuals.

Gone today are the bleepers and the need to carry around manuals as laptops and mobile phones provide instant access to the internet for information. A lot of things may have changed over the past 21 years but the crux of providing a quality service for the client has always remained at the top of Karl’s list of priorities and is still his number one aim. “One of our clients, an hotelier, found their copier had broken at Christmas and so I went to fix it on Boxing Day.” “I even took the family along with me as it’s important to always put the customer first – plus it gave time for the daughter and me to have a walk on the nearby beach. It certainly made Christmas different and fun!” When away from the office, family is a key focus for Karl. That all important work life balance sees him cycling, taking caravan holidays with his family (an important memory from his childhood) and even indulging in making cupcakes.

“There’s more to life than just work,” says Karl. “The key is achieving the right balance, otherwise you get tired and your brain doesn’t work in the same way which then clouds your judgement.”

Karl and the teams’ judgement remains razor sharp with the company doubling its size in a space of 18 months with its total responsibility growing to cover some 600 machines over Devon and Cornwall. The success comes from nurturing clients. He has a desire to look after the small client to help them grow, and so he embraces their entrepreneurial spirit.

“If you can’t do something, then go out and work with someone who can. I believe that’s why we have been doing well. After all, if we were all good at doing everything then it would be a boring world!”

The result has been expansion for PCS and there’s also a lot for the team to plan towards this year as they move into new premises in Estover - which is purpose built for their equipment needs.

“It’s all about having the right people in the right place at the right time.” Supporting local firms as they grow is a key part of Karl’s philosophy and its success means having the right team in place – a group of people who are 100% trustworthy and who are also dedicated to the business. He met one of his account managers, George, when delivering pizzas and Karl’s sister answers phones in the office. “It’s all about having the right people in the right place at the right time. It’s not one person who makes the business but

Listening to Karl, OM is finding much of what he says to be inspirational. Printing may be a far cry from dreams of the Royal Navy or the possibility of working on his Dad’s boat but it’s clear that his decision to opt for printers over mechanics was a winner. Towards the end of the interview, Karl provides a number of snippets which really do give a good snapshot into what it takes to be a successful entrepreneur. A lot of it is down to having that all important positive mental attitude towards life. “If you only put in 50% then you won’t enjoy it but it can be enjoyable if you put in 100% then you make it what you want it to be. A BUSY YEAR AHEAD FOR THE TEAM AT RADIO PLYMOUTH A General Election, a visit from HM the Queen and the debate over the future of Drake’s Island were just some of the major stories covered by the news team in 2015. Between January and April, Plymouth was visited by the Prime Minister and most of the cabinet, including Chancellor George Osborne, Foreign Secretary Philip Hammond and Defence Secretary Michael Fallon. We also met former Labour leader Ed Miliband and leader of UKIP Nigel Farage. The latter had to do his interview in a small caravan next to Plymouth Airport thanks to some rather blustery winds! In March, officers at HMS Ocean welcomed HM the Queen on board after the vessel had undergone a major refit. Radio Plymouth was selected to be part of the small media group

which was allowed to follow HM the Queen at close quarters as she met local personnel. As the end of the year drew nearer, we asked locals what they thought of plans for a hotel on Drake’s Island, as the issue was debated again by councillors. A decision hasn’t been taken as yet and we’ll keep you updated as the story progresses. As Christmas approached, the news team spent several days in court covering the tragic case of Tanis Bhandari, who was murdered in Tamerton Foliot on New Year’s Day 2015.

WHAT IS A WILL DISPUTE AND WHAT, EXACTLY, IS “CONTENTIOUS PROBATE”? If you asked 50 people at random what they consider to be a “Will dispute”, do not be surprised to receive 50 different answers. Whether this results from reading the papers (“estranged daughter gets a share of mother’s estate”), reading Dickens, or hearing of some historic family dispute, the range and variety of problems that can and do arise after someone has died is almost limitless.

trictly speaking, a “Will dispute” is a dispute over the validity or the interpretation of what is believed to be the deceased’s last Will. However, the term is too restrictive to adequately describe the range of issues that may be involved. The definition “contentious probate” is generally used by lawyers to describe the range of disputes that arise after someone has died. However, it’s not an accurate label and is potentially misleading. The word “probate” has, in common use, come to mean “the proving or establishing of the validity of a Will”. The work of a contentious probate lawyer is often to achieve the opposite result and actually dispute the validity of what may appear to be the deceased’s last and true valid Will. In some circumstances, the lawyer will assist a client pursue a claim where there is no Will at all. The task of a contentious probate lawyer can involve involve investigating, proving and then seeking to assist a client (or clients) determine and implement the true wishes of the deceased person. Thereby helping ensure the deceased’s assets and money go to those entitled. The scope of disputes under the banner of contentious probate is endless. For instance, often difficulty is experienced because those tasked with administering and distributing the deceased’s estate fail to do so properly, or in such a way as to

raise suspicion that those entitled may lose out.

Many who pass away leave their money or assets in a trust and disagreements often arise as to ownership or use of property or money in that trust. The trustees may disagree or fail to adhere to the wishes of the deceased resulting in a dispute with those entitled now or in the future. Below are some examples of typical disputes. 1. Challenges over the validity of a Will or Codicil - It may be argued that the Will was not signed or witnessed correctly; that the deceased person did not have the mental capacity to make a valid Will; that they were being coerced, did not know or approve of the contents, or that there is in fact a later valid Will in existence. There are also incidents where fraud is involved and the Will has been forged. 2. Claims under the Inheritance (Provision for Family and Dependants) Act 1975 - This allows the court to exercise discretion and award reasonable financial provision out of a deceased’s estate, e.g. (“estranged daughter gets a share of mother’s estate”). The Act applies whether or not there is a valid Will in existence. 3. Disputes over the administration or distribution of a deceased’s estate - Sometimes those appointed refuse to organise the estate, do it wrongly, take too much time, or seek to use assets and money for their own purposes. 4. Clarification - Sometimes a Will is valid but contains a mistake or a provision is not understood. In certain circumstances a court will allow a Will to be rectified or seek to determine the exact meaning of a clause or gift. 5. Costs - There are often disputes over the costs incurred by those administering the estate, the trustees appointed, or the lawyers assisting them. It may be possible to apply to the court to reduce those costs. Trustees may fail to properly

administer a trust or cause the trust fund to suffer loss and it may be possible to recover those losses. 6. Roles - Replacing executors or trustees who fail to take up their duties or deal with their duties adequately. In recent years there has been a significant increase in disputes over the estate of someone who has passed away. It starts in Liverpool at the end of February, and lastly here in Plymouth on the 11th March. What can the fans expect? Will we see a new fresh Leona? This is my first album and tour since leaving Simon Cowell’s label, Syco. I’ll be performing a lot of songs from the album at my shows that really show my coming through from a vulnerable place in the past. It will be very uplifting and I hope people will enjoy it and can take something from the show. So the tour will finish here in Plymouth on March 11th in the Pavilions. As it’s your last date and it’s here in Plymouth, will you be venturing out to do any shopping or plan to visit any of the sea front restaurants or clubs the City has to offer?

So let’s kick off with your new/current album, I Am. Can you tell us what inspired you to make this album and what it’s all about?

As it’s my last tour date, yes I’m sure I will venture out, let loose and have fun in Plymouth. Myles: So can we expect to see you out and about in the city centre? Leona: (laughing) after the show I’m sure I will go out and celebrate!

I first wrote the song ‘I Am’ as the title track of the album. I was inspired to make this album as it really revealed the ‘real me’; it speaks out about the struggles and obstacles I have got through, and it’s all about strength and self-empowerment.

You’ve performed with many artists, including rock-legend Jimmy Page from Led Zeppelin, who recently described performing with you as his career high. What was it like to perform with such an iconic legend?

For you, what’s the most emotional song on the album?

I remember being in the production studio and Jimmy turned up. I was so nervous when he was listening to the recording that I nearly started throwing up! But he was one of the nicest people I have ever met inside and outside of the industry. He was such a lovely person to sit and chat too, and it was definitely one of the biggest highlights of my whole career.

I think the most emotional song for me is ‘Thank You’. I wrote it for my parents as they have helped me through my lowest points and they have really been there for me. If something is written about me online or in the papers, they are affected too. People sometimes forget that I’m not ‘just a singer’; I am someone’s daughter! From the album I particularly like ‘Fire Under My Feet’. Do you have a favourite song that you prefer over the rest?

You have had some remarkable highs in your life, including the rise to fame with, of course, your win at the X Factor in 2006. What pushed you to actually enter the show?

My favourite song from the album would have to be ‘Thunder’. It is so raw and real, and when it’s performed live it sounds so different to the recording – it takes a

The best memory of X factor would have to be all the time I got to spend with the mentors. I had the amazing opportunity to get tips from Tony Bennett and Rod Stewart. It was such a beneficial part of the show. Do you find time nowadays to watch the X Factor? Yes, whenever I can - I’m travelling a lot at the moment. When you’re not performing or writing music what do you like to do? I like to sit on the couch and do nothing! I also love spending time with my animals, especially my horse as I am a horse rider. I like spending time with nature; the simple things, really. I’m going to assume you are a big fan of Christmas as you have a Christmas Album ‘Christmas, With Love’! ‘One more sleep’ is becoming an iconic Christmas song and the video looks great; was it fun to make? It was so fun to make as my friends, family and boyfriend took part in the video which just filmed us all being silly. Have you got any plans to visit family over Christmas? I’ll be visiting all my family over Christmas; it’s my little nephew’s first Christmas so we are going to absolutely spoil him! If you could give one piece of advice for anyone wanting to start a music career, what would it be? Always be authentic and true to yourself. Remember you are unique, and your uniqueness is what you have to offer; noone can take that away from you.

Eating Fat is Good for You! By Barbara Burgess

Going around the supermarket, you will find that it’s much easier to find low fat varieties of common foods than it is to find full fat varieties. From low fat spreads to ready-made low fat meals, skimmed and semiskimmed milk to low fat yogurt we have all been sold on the idea that fat is bad for us, and fat makes you fat.

body, it is turned into a variety of different substances to be used in the body, taking longer to be turned into energy, therefore leaving you feeling fuller and satiated for longer.

Our ancestor’s diets were 75% fat, 20% protein and 5% carbs compared to our current diet which is 60% carbs, 20% protein and 20% fat, yet it is we who have an ever increasing obesity problem.

The idea that saturated fat is bad for the heart came from a study in the 1970s which collated data from 7 countries, showing a connection between the intake of saturated fats and heart disease.

Fats have had a very bad press over the last few years but new science is showing that much of what we thought we knew is plain wrong.

Unfortunately it was bad science; the authors had information from 22 countries but excluded those which had high levels of saturated fat consumption and low levels of heart disease and things like smoking, exercise and sugar consumption was not considered.

Studies are beginning to show that it isn’t the fat in our diets which is causing the problem but the easily available carbs and sugars which are the real culprits, causing a spike in blood sugar levels, giving you that high energy followed by a drop when your insulin production kicks in. In fact, fat has to go through a much more convoluted system in the body before anything can be stored in your fat cells. Rather than fat being digested and going straight to fat cells in your

They boost the immune system by helping white blood cells to recognize and destroy invading viruses, bacteria and fungi, especially the kinds found in butter and coconut and are also the lubricant which coats the lining of the lungs, without which the lung function is compromised. Additionally, nutrients like Vitamins A, D, E & K and Calcium are not water soluble so they require fats to transport them to the brain and the bones. The conclusion, it would seem, is that we should be eating more of the saturated fats not the polyunsaturates that we’ve been sold on… more on those another time.

Kodo’s repertoire includes pieces based on the traditional rhythms of regional Japan, pieces composed for the company by contemporary songwriters, and pieces written by company members. Rigorous training and athletic ability is essential; some of the drums weigh hundreds of pounds.
